Born and raised on Santorini, Asimis, who studied at the Athens School of Fine Arts, attributes his illustrious career to inspiration drawn from the island’s landscape and light. “Santorini is unique in Greece,” he explained in an exclusive interview with Kanava Journey, praising the diverse and eclectic elements that make the island so unique: its extraordinary geology and geomorphology, fascinating ancient history and archaeological sites, traditional architecture that literally merges with the landscape, sophisticated volcanic viticulture and gastronomy, and most important for an artist, the island’s magnificent light. “This light on Santorini, amplified by the juxtaposition of white and blue and the volcanic land all around, is the inspiration for my artistic creations,” he says; “these are elements that have stayed with me and shaped my since childhood.” Today, Asimis has been painting Santorini for over 55 years, studying the island’s light and contours and honing his ability to capture its shapes and colours and interpret the unspoken story of the landscape. His stunning body of work, which has been exhibited and sold in Greece and far beyond the ocean, has won him acclaim far and wide as the painter of Santorini, and while he’s also famous for creating the beautiful frescoes that adorn the walls of the Orthodox
Often referred to as the painter of Santorini, Christoforos Asimis is internationally recognised as one of the country’s foremost landscape artists and lauded for his extraordinary ability to capture Santorini’s sublime essence.
Metropolitan Church of Santorini—a task that took seven years to complete—it is the island’s unique combination of rugged forms and ethereal light that he keeps coming back to. “There’s so much on Santorini that inspires me,” Asimis shares, “from the tiniest detail in the way the light dances on a wall to the panoramic views of the caldera, and most of all the interplay of light and shadow on stairs and steps and architectural elements, the way it alludes to shapes and forms sculpted by nature.” •
TOMATO INDUSTRIAL MUSEUM “D. NOMIKOS”
This impressive museum brings together the business history of Nomikos’ family, but also time and memories from the original tomato farmers of the island.
D. Nomikos is the biggest tomato processing company in Greece, and one of the oldest in the world. It is still family owned and is managed by the third generation of the Nomikos family.

ON THE BEACH of Vlychada in Santorini, with the stunning volcanic rock formations, the Tomato Industrial Museum “D. Nomikos” with its characteristic chimney that dominates the lunar landscape, narrates stories about time, memories and the inhabitants of the island.
The business family history starts in the middle of the 19th century from Dimitris Nomikos with the construction of “Fabrika”, the first motorised flour mill in Fira. The flour, imported from central Greece (Thessaly), was processed and resold in the other islands of the Cyclades. “Fabrica” is one of the most important part of the history of Fira. In 1945, George Nomikos, son of Dimitris, builds the factory at Vlychada, in the center of the most productive tomato area in Santorini, with a production capacity of 3.500 baskets per day. The factory operates the first season without even a roof. The productive season lasts from June to August, with the late tomato coming from the area of Pyrgos. Within the factory he develops a small can making unit that manufactures the cans from tinplate. At the same time the fuel for the steam boiler is initially coal, derived from Kimi, and later fuel oil.

An abstract name with an exotic feel to it. The su x -ya in Japanese when added to a noun means “the place where you can find what you are seeking”.
In Greek “Ya su” is the way to greet someone. The prefi x Kali- is a tribute to kallos, the virtue that once gave its name to Santorini. According to local history, the island was once known as Kalliste, “the most beautiful one”.

Within the factory the visitor can see a full range of the processing machinery dating back to 1890, but also handwritten account books and notebooks, old tools and the first labels used. Below, Vlychada beach.
Arts Factory (SAF) to offer its visitors a flashback to the past, following the procedure of cultivation, processing and production of small-fruited tomatoes. The smallfruited Santorini tomato, a Protected Designation of Origin (PDO) product since 2006, is one of the most famous and traditional products of Santorini. The key feature of the Santorini tomatoes, but also of the wider Thera agricultural products, is the lack of rain water and frequent watering, which is why they are called anhydrous (waterless) tomatoes. The water of the morning and night atmospheric humidity, which comes from the evaporation of the caldera is retained in the pores of the pumice that exists on the island. At the Museum the visitor learns the traditional methods of cultivation followed by the tomato farmers of Santorini, the history of island and its inhabitants and discovers their traditions. The Museum’s exhibition includes processing machines from 1890, old factory manuscripts, old tools, the first labels, as well as audiovisual material with videotaped stories of people who used to work in the factory. The visit includes an audio tour in five languages, a film screening with stories of old workers, a tasting of tomato paste and last but not least a souvenir can that he/she closes in an old sealing machine. • Tomato Industrial Museum “D. Art Space celebrates artistry and craftsmanship.
Works of contemporary painting and sculpture of Greek and foreign artists are presented inside the restored caved areas of a Canava (old winery) from 1861. Besides the exhibition of contemporary art you may also visit the old distillery, the ovens and the presses.
Since 1999 and for almost twenty consecutive years, behind the wooden door of Art Space, in a modern space, built into the shade of the rocks, in a weirdly familiar atmosphere of a silent mystagogy, all those who share the same passion for creativity find a hospitable retreat. Art exhibitions from all over the world, a rare variety of natural wines with mild winemaking, a unique feeling of fellowship that welcomes you to a magical universe: the world of Art Space in Santorini.

DIMITRIS KOLIOUSIS
Meet one of the most talented Modern Greek byzantine Icon painters at his workshop in Oia and indulge in his emotionally evocative figures of saints.
HAVING ESCHEWED city life to come and live on the island of Santorini with his family, hagiographer Dimitris Koliousis is perhaps best known for his works showcased in one of the most beautiful and important churches on the island, namely Panagia Episkopi located in the village of Episkopi Gonia.
Born in Paramythia, Epirus, after traveling the world and settling down in Piraeus, when the time came for him to start a family, Dimitris made the decision to move to the island with his partner Alithini, to live in a caravan amongst the wild, inhospitable rocks of the island and the endless blue of the Aegean Sea. As he sits in front of his huge canvas under the warm gaze of the angels and saints that he paints with unique colors, he humbly admits that he never painted as a child which is why he admires children’s paintings so much. In complete harmony with nature and his spiritual being, the authenticity and uniqueness of both his works and the man himself truly win you over.

OFFERING AN immersive music, art and mythology experience to visitors from around the world, Symposion is housed in a former winery dating back to the turn of the century, in the heart of the traditional village of Megalochori, Santorini. Bringing together music, art and mythology, Symposion stands as an emblematic link between Ancient Greece and the present day. Owned and operated by husband and wife team, Argy Kakissis (Managing Director) and Yannis Pantazis (Musical Director/Musician/Instrument
Artisan) have created an immersive experience of music and mythology leading Symposion to have been featured both in local and worldwide publications for its contribution to preserving and promoting Greece’s unique cultural heritage. Events and workshops take place in the Saliveros chamber, garden courtyard and artisan’s workshop. Other spaces within the former winery include a vintage instrument exhibition, a reading library, a photography exhibition of the winery prior to its renovation, the Muses wine café, a mythological botanical garden and an art shop selling hand-crafted musical instruments and various artifacts. Visitors spend an hour with the master artisan crafting their own ancient Greek pipe from local cane and learning of the instrument’s historical significance.
“Roka” Restaurant is settled in an old building of 1912 with interesting architecture –in an area where you can admire old preserved captain houses. The warm colors of the small courtyard filled with trees and flowers give you the feeling of a relaxing and pleasant welcome escaping from the crowd. Inside there are three small charming rooms to sit ideal for some colder nights near the wooden stove and enjoy delicate flavors. On the backside of the restaurant there is wonderful sea view of the northwest side of the island. Hidden and private but only a few minutes away from the main marble walk way. As for its Venetian heritage, there is a castle at Akrotiri. The capital under the Venetians was Skaros, now an interesting rock projecting outwards from Imerovigli, on the precipice of the cliff. More specifically, this season’s dishes are interconnected in the sense that they are designed as “spondilota“ (satellite) plates and each dish consists of ingredients that harmoniously coexist with the rest of the menu.

Our end goal is to fully appreciate the raw material. There is
one product that particularly caught my attention right away! It is no other than the Santorinian fava, which stands out thanks to its distinctive color, aroma and of course its unique taste. Have you had the chance to meet some of the local suppliers in person - from fishermen to farmers - in order to learn more about their produce?
Meeting the local suppliers is an everyday ritual for me. This way, I personally make sure that we select the best Santorini has to offer. Being involved in the process of selecting fresh products allows you to respect raw materials and build an eco-conscious restaurant.
Which is your favourite place for relaxation on this magic island?
My favorite place for relaxation and at the same time creation is the kitchen. And it always will be regardless of the destination!

Can you think of an element on the island of Santorini that has the power to inspire you in such a way that it influences and even changes your own creative outlook?
Cycladic art has always been a source of inspiration for me, just as it was for artists such as Modigliani or Giacometti, who knew about it and studied it from afar. It would almost be heretical of me not to stress the awe I feel every time I visit Cyclades. The colors, the nature, the history, then of course there’s the love that the producers show in their products that makes me want to cook differently and honor something as special as our Cycladic gastronomy.
How does the cuisine you create differ on the Cyclades islands compared to Athens?
Athens is a megalopolis. Whether we like it or not, we are forced to adapt to its lightning fast every day rhythm. I would say a dish in Athens is sort of like a rock concertit wants intensity accompanied by a quick tempo. On the other hand, the island of Santorini - if I had to think of it in musical terms - would be something more along the lines of a piece of music that would be classic, calm and serene. When you get to the island, what’s the first thing that you want to eat or drink?
In Santorini, it’s definitely tomatokeftedes which are tomato fritters that are an island specialty (I would tell you where to find the best ones, but I’m going to keep that a secret!)

During the next years, he had the opportunity to work with Ralph Lauren, Nieman Marcus, Victoria Secret, Coach, editors like the late André Leon Talley and publications including Travel and Leisure, Harper’s Bazaar, Elle and Marie Claire, among others. But when his daughter was born, he moved to northern California and had the opportunity to work at Esalen Institute in Big Sur. There he met ceramic artist Sharon Virtue who inspired him with her creative mind. “The beauty of ceramics is that I found a new outlet to help me express myself. Honestly, it was
a form of therapy. One must be centered, relaxed and in touch with his breath to create on a wheel. This sense of groundedness is reflected in the ceramics I create and is extremely rewarding”. After taking up ceramics, he had the opportunity to show his work to Donna Karan. “I sold my work in her Urban Zen store for a few years which was the start of my journey as a ceramic artist”. Donna Karan said "When I saw Todd's work, I immediately was connected with the soulfulness of the pieces. I felt like it belonged at Urban Zen, it had found its home." And what about Greece? He visited Antiparos and this island became his summer destination for many years. “Coming from New York city to the Cycladic islands made me feel like I was home. I was relaxed, I was feeling blessed, rejuvenated and creative. Eventually I realized that I needed more than just a few weeks a year and I started looking for a home. That’s when I found Lefkes and fell in love with this village and open my first store in Paros.” •

During an emotional and creative journey, which she considers a work in progress, Angelika Vaxevanidou has produced multiple series of drawings and artworks from her studio in Paros.

ANGELIKA VAXEVANIDOU WAS BORN in Dachau Germany in 1974 and moved with her family to Greece in 1976. After completing her studies in sculptural practice at the Athens School of Fine Arts, she relocated to Paros, establishing her studio in Lefkes, the birthplace of her grandmother.
While her current work is predominantly drawing and watercolour, the sculptor is still present in her technique, philosophy and approach. From miniscule mark-making, Angelika Vaxevanidou brings forms to life in arresting portraits and figure studies that seem sculpturally solid yet precarious: apt to blow away as they appear to be held together with breath and air rather than material. The human figure serves as an important structural element in her art and research and is often the central protagonist in her work.
How demanding is the process of creating a work of art? How many hours can it take to complete in an environment such as Lefkes?
The process of creating an artwork is not easily measured.
An abstract painting might only require a few strokes from the brush, whereas a realistic drawing might take weeks of painstaking work. Although different in approach, both forms of art can require years of practice, developing techniques, and mastering materials before achieving the desired results. In addition, the artist also has to understand their intentions, any context, and what it is they want to express.
The audience the artwork is created for also affects how demanding the process can be. For example, in my personal practice, I also create commissioned portraiture for private clients. This audience has specific expectations and requirements that place unique demands on the creative process.
How many hours it takes to create an artwork is also difficult to answer accurately. My preferred approach is to work intensely on a project at the beginning until I see the qualities I'm aiming to emerge. Depending on the size and complexity of the composition, this can take a few days or a few weeks. Then I slow down and allow the artwork to

lead the way in order to finish. Although not so intense, the work in this second period is more delicate and sensitive, usually taking twice as long. In summer, Lefkes is full of life and many times your studio is open. Is the dialogue with the people who pass by and discover you interesting for an artist who lives permanently on a Greek island?
Having the studio open for people to visit is something I enjoy. It's an opportunity to share my artwork with so many interesting people, and I love the conversations about the art I develop. Very often, the contacts I make with visitors lead to positive effects on my art practice. I think studio visits are also a unique way for people to discover an artist and learn about their artwork. Usually, the first opportunity people get to experience new artworks is when they visit an exhibition space or gallery environment. Visiting the studio, meeting the artist, and being personally exposed to the creative process offers the audience a more intimate experience that allows them to view the art and the artist's practice through a different window of understanding.
The only downside to having an open studio is that I can't work when I have visitors, so I need to limit the opening times. For now, I have the studio open for visitors in August. If anyone wants to visit at a different time, they're welcome, but they should first contact the studio to make an appointment.
You said somewhere that you are trying to make the best art you can. Does your lifestyle in Paros help you or would internal discipline push you on this path wherever you lived?
Wherever I've lived, I've always had a strong internal drive to create art. Living and working as an artist on Paros has made it much easier to access this drive and concentrate on developing my practice and studio.
There are fewer distractions on Paros, than in the busy urban environments, which makes it easier to find space for yourself and focus on your creativity. There's also a peacefulness that encourages you to slow down and notice the transient things that might otherwise get overlooked. Paros is a place where you can experience yourself without the need to respond to the pressures of the outside world. A place where you can breathe your own breath. What are your favorite places in Paros that you hope will not change over time?
It depends on the time of year. In springtime, I love to take long walks in the hills around Lefkes and enjoy the beautiful flowers and wild herbs that carpet the countryside with their colours and scent. During the warm summer my favourite place is the beach, very early in the morning, before it gets busy. Swimming in the fresh, crystal clear sea is the best way to wake up and approach your day. In autumn, wherever you are on the island, it's time to enjoy the famous Aegean light. I can get lost for hours watching the hues and tones as the light reflects across the sky and reacts with the landscape. Winter on Paros is a time to find yourself. Almost empty of people, I like to wander the quiet village streets and visit the calm seaside towns. Hassle-free and unrushed with just time to enjoy.
As for the island evolving, I think it's inevitable. The more popular Paros becomes, the more it will need to change. But as long as we're careful with its evolution and apply any changes with control and thoughtfulness, there's no reason these changes can't have positive effects on the island. Change makes life exciting. Is there a creative inspiration shelter in Paros to which you return at every opportunity?
My studio in Lefkes is my sanctuary. When I walk in and close the door, I feel insulated from the crazy world outside. I leave all my worries and distractions behind and get excited about the peaceful space and freedom inside. Being in the studio is very calming and the perfect place for me to focus and be creative. •

Usually the locals dine around 10pm at the old harbor of Naoussa. An excellent restaurant for dinner is ‘Mario,’ which serves Mediterranean cuisine.
Are there hidden gems of Paros that you would personally recommend?
Lageri Beach is an exotic, secluded beach on the northeastern edge of Naoussa’s bay. The beach has fine, all white sand and crystal waters. It’s not easily accessible or organised, however it is one of the island’s beaches that is worth seeing up close. Where would you recommend for shopping on the island?
A local creative or artist’s studio possibly?
We recommend Yria Ceramics, located at Kostos village, 6km from Paros’ Port. It’s a 45 year-old workshop, that designs and produces handcrafted objects for everyday use and decoration.

Direct us to a beach that doesn’t have many people. Kalogeros beach is popular, especially for the locals. You’ll find it on the eastern coast of the island, precisely next to Molos beach. Due to its position, Kalogeros beach is quiet, pristine and with crystalline waters. It’s unique as while you're there you can reap the beautifying benefits of the clay in the sand. Just cover yourself in the clay while you sunbathe. It's a great experience. Your guests are in the mood for a road trip within the island. Which village would you suggest they visit and what should they do there?
We recommend they visit Lefkes village. It’s the most beautiful, traditional, mountainous village, where time seems to have stood still. Explore the alleyways, its many little churches, have a coffee and spoon sweet at the traditional cafes and shop at Yria interiors where you'll find different ceramics in the workshop’s boutique shop.
Which spot on the island has the best views of the Aegean?
The Frankish Castle never fails to impress visitors thanks to the astounding and panoramic views it offers. Built on the highest point of Paroikia in 1260, the Castle consists of pieces of ancient temples, and protected the island from pirate attacks.

umbrellas, water sports, boat access to an uninhabited islet opposite, scuba diving and wind-surfing schools, food and drink available, and more. In fact, the Professional Windsurfing Association's World Cup has been taking place at the nearby New Golden Beach ever since 1993. Another shore to mention is Pounda, in the west, which is an illustrious global destination for kite-surfers of various skill levels. From beginners to fully-fledged pros, kite-surfing aficionados ride the waves in the strait between Paros and its sister island, Antiparos, where the wind and wave conditions are ideal for this pursuit. Two more beaches to make sure you visit are the tranquil, pristine Kalogeros, with crystal-clear waters and the organized and posh Monastiri beach, or Yannis Detis, with its stunning rocks and several amenities. Even closer to Naoussa is Lageri beach. It has an unusual shape, unforgettable waters and endless nooks and crannies to sunbathe at. A short walk from there, Santa Maria is one to be pampered at as you endlessly watch the surfers with a cocktail or Greek wine in hand. Also worth exploring is Mikri Santa Maria Beach a short walk from there, which is much quieter – and popular with the locals for its fine white sand and laid-back vibe. Finally, lovers of the sea will be enraptured by some other superb beaches as well; Ambelas, Aliki, Molos, Farangas, Lolantonis, Dryos, Piso Livadi, Logaras, Marcelo and Krios.
The labyrinthine alleys of have become a favorite spot for visitors from the world over, who love to get lost amidst the whitewashed cubic buildings with their colorful bursts of bougainvillea and exciting shop windows. Located very close to the Kanava Hotels & Resorts on Paros – a mere 10-minute drive – Naoussa has a little bit of everything, from inspiring art galleries to Mycenaean and Venetian antiquities, and a range of bars and restaurants to suit every mood. Despite the town being a magnet for jet-setters and island hoppers, the vibe here remains relaxed and quintessentially Mediterranean, with many rushing to toast the sunset in the Old Port seafront area. Visit early in the morning, so you can catch the fishermen returning to shore with their catch – and even buy their freshest fare. It is also an excellent time to take pictures of this stunning town and get to know its more authentic side, before the midday sun inspires you to head to the beach.
On the east coast, the island’s modern-day capital and main port, Parikia, overflows with its shops, restaurants, and cafes, and features a main square that overlooks the port. Ancient ruins, like the 13th century Frankish Castle, pepper the town with glimpses of the island’s rich past. The most special moment of the day; watch the monumental sunset from this magnificent castle with the splendid architecture. Several other landmarks worth visiting are found here, including the imposing Panagia Ekatontapiliani church. open when the church of Hagia Sofia in Constantinople will be Orthodox again. The Paros Archaeological Museum is not to be missed, showcasing millennia-old artifacts from the general area, including ancient sarcophagi and the Parian Chronicle, an impressive inscription on marble from the 4th century BC that recounts the history and mythology of Ancient Greece, such as the Trojan War and the Voyage of the Argonauts. Erected far from the sea to hide itself from real-life pirates in centuries gone past, the inland village of Lefkes impresses with its beautiful houses, delightful flowers and 360-degree panoramic views. It is also home to Agia Triada, a distinctive Byzantine church made of the finest white Parian marble. Here, in Paros’ first capital, the island’s history appears frozen in time, with rickety tavernas, leaning houses and winding marble-paved streets and alleys all surviving — and thriving — centuries on. A deep-seated tradition of ceramic production in the town brings to life a number of local workshops and studios; most notably Yria Ceramics and the Lefkes Ceramic Workshop, both of which produce pieces inspired by the area. Marpissa is another settlement to seek out; a study in bright white under the Aegean sun, featuring picturesque churches, traditional painted footpaths, signature Cycladic blue details and colorful floral features around every corner.
UNIQUE LANDMARKS
Yet, the nooks and crannies worth visiting – and experiences worth having – on Paros extend far beyond its beaches and towns. One of the most remarkable things the island was
known for in antiquity was its white marble. In fact, there was a point in time where 70% of high-quality marble used across the Mediterranean came from here. Although they are almost completely depleted, you can still visit the ancient marble quarries in Marathi as part of a hike on foot or an excursion with a tour guide or on your own.
Very close to Parīlio is a protected peninsula called Paros Park with winding walking trails, spectacular rock formations, magnificent views, unique beaches and the Ai Giannis Detis monastery, with its fascinating exhibition of 18th century Paros maps. What’s more, an annual festival takes place in its amphitheater and films are frequently shown in the open-air cinema.
Unexpected and verdant, the Butterfly Valley near Sotires village is a natural reserve that is home to swarms of the Panaxia quadripunctaria tiger moths, who nest on leaves and tree trunks during the day, to fly at night in the hundreds. They each have a set of black and white wings and reveal a secondary set of red wings underneath when they take flight. Just like the butterflies, visitors too appreciate the green nature and cool breeze of this serene valley. Even further off the beaten path is St. Antonios Monastery near Marpissa. Perched on a hill, this small whitewashed monastery is not just typical of Greek island architecture but a spot from which to enjoy marvelous views of the island and the Aegean Sea alike stretching as far as the eye can see, including the nearby popular island of Naxos. Founded in 1597, it is one of the oldest monasteries on the island. It has been inhabited by monks since 1642 but closed in 1834, due to the small number of monks in situ.

A Greek-American living in Athens and Paros, founder Andria Mitsakos is a consummate story teller, an established international publicist, and an accessories designer and collector. While restoring an island cottage on Paros, she started designing and manufactured furniture, textiles, and decorative objects for her home and for friends who owned hotels. As demand grew, but travel stopped during the pandemic, she began selling on Instagram, and Anthologist was born. Today, Anthologist is a luxury brand of soulfully designed, handcrafted, positiveimpact objects that celebrate cultural preservation and slow décor as a means of true, sustainable luxury. Parīlio became Anthologist's first physical outpost because Andria lived there during her farmhouse renovation, and fell in love with its air of Parian simplicity, and views of sun-filled amber fields.

At the heart of these dishes are the freshest, purest of raw ingredients, from the catch of the day from the Aegean Sea to Naxos baby goat and Paros produce.
At the helm of Mr. E Restaurant, Michelin awardwinning Chef Alexandros Tsiotinis puts to use his knowledge, insight and remarkable creativity to create mouthwatering, inspired menus. After studying at the Palmier Academy, he worked under some of the most emblematic names on the culinary pantheon, including Alain Passard, Hélène Darroze, Pascal Barbot and Éric Fréchon, in the kitchens of Noma and Le Bristol, among other impressive milestones on his résumé Utilizing all the insight he eagerly acquired, together with his immense talent, he soon made a name for himself on the national and international stage, earning more than 12 awards for his delectable creations before winning his first Michelin star in 2021.
Endlessly creative, Mr. E Restaurant’s Executive Chef likes to draw parallels between cooking and painting, as he describes the construction of a menu to a series of artworks drawn on the blank canvas. This is evident in the nuanced meals he has invented: locally sourced ingredients chosen for their outstanding quality and simply superb flavor are prepared, cooked and combined with the utmost care and respect, resulting
in memorable dishes that marry local tradition with a healthy dose of creativity and utter precision. The focus is on hand-crafted, organic, seasonal and indigenous ingredients, letting the purity of flavor shine through ingenious combinations that draw from heritage and contemporary culinary trends alike. Among others, the breakfast menu features fresh fruity delights, nutritious yogurt, pastries, and eggs cooked in several ways – including creative takes on pancakes, French toast and omelet. Poké bowls, burratas, salads, burgers, grilled and roasted mains, and a curated selection of desserts are available from the convenient and enticing all-day menu. As for the dinner options, they showcase creative Greek gastronomy at its finest. From spirited appetizers such as the moussaka croquettes, a twist on the iconic Greek dish, to pork in grape must syrup that melts in the mouth, accompanied by crispy polenta, plums cooked in red wine, parsley roots and celeriac purée, and the tantalizing lobster with beetroot, the menu is characterized by Mediterranean passion, alluring pairings and accessible yet elevated flavors. What should we look forward to this year at Mr. E Restaurant?
Just like every year, visitors to Mr. E will get to savor exciting new dishes that embrace tradition, that are refreshed with the aromas and flavors of the local area which testify to the current gastronomic revolution that we’re witnessing right now in Greece generally. Are you in close contact with the local suppliers on the island of Paros?
Yes, of course. The quality of the ingredients represents about 70% of the end result of any dish that we create. At the end of the day, if the ingredients aren’t good, there is no technique or combination of flavors that will create a truly memorable gastronomic experience. When you get to the island, what’s the first thing that you want to eat or drink?
In Paros, I will definitely go somewhere to drink a Suma along with a salad.

Tell us a few words for the philosophy of the menu you have created for this season. My philosophy on gastronomy is an inventive approach to ancient and traditional recipes. The sensibility of Thalassamou has always been to embrace what’s in season, so this year you’ll find a constant evolution of fresh, local ingredients for all of our dishes. We’ve also added a beautiful ‘forno’ to enhance our offering including our signature sourdough bread which is handmade from carefully cultivated strands. How does your cuisine connect with the island; The connection is immediate. In addition to our
own organic farm, we work closely with local farmers which also contributes to the destination’s sustainability. Close partnerships with fishermen ensure that seafood and fish are also brought in daily ensuring fresh, authentic dishes of the day. Which is the first dish you would recommend to someone to try when visiting Paros and your restaurant?
You cannot leave the island without tasting the traditional ‘revithada’ (chickpeas in a ceramic pot, slowly cooked in a wood oven), and our signature dish, which is a mock calamari risotto in its ink with green apple and peppermint—no rice!
