Les Dames D’Escoffier International Les Dames D’Escoffier International was formed in 1985 in New York as a philanthropic society of professional leaders in the fields of culinary arts, fine beverages and hospitality. The invitation-only membership, originally made up of 30 chapters across the United States and Canada, is highly diversified and reflects the multifaceted fields of contemporary gastronomy and hospitality. Les Dames d’Escoffier organization takes its inspiration from Auguste Escoffier, a legendary chef and culinary innovator in his time, as well as a philanthropist who marshaled his culinary resources and connections to do good things. It is believed that he was the first chef in the world to proactively enlist food and wine as fundraising vehicles. Escoffier organized programs to help the underprivileged culinary students and financially assisted retired chefs.

Les Dames d’Escoffier Miami Les Dames d’Escoffier Miami chapter was founded in 2000. It follows the same philosophy as International and is made up of professional women leaders in food, wine, hospitality and related fields. The members create a supportive culture by sharing knowledge, goods, services, and provide leadership, educational opportunities, career mentorship and scholarships. Through various signature fundraising events, the Miami chapter sponsors agricultural programs in South Florida classrooms and schoolyards, awards scholarship to local collegebound young women pursuing careers in the culinary field and agriculture and provides kitchen equipment and counseling services to women and children in need.

Additionally, the chapter members teach nutritional and culinary

life-lessons as part of their community services as volunteers. Through the support of our patrons, donors and sponsors, the chapter is able to accomplish its mission and undertake this very important work throughout the year.


Auguste Escoffier Auguste Escoffier is the father of modern Cuisine. He brought the culinary arts into the modern era by encouraging the use of seasonal and locally grown food. He restructured the kitchen to operate as a single integrated unit, a system that prevails today.

Chef Escoffier became the Chef at the Ritz of Paris, which provided him the elegant settings and clientele that stamped his changes as fashionable and correct. He continued his association with the Ritz and went to open London and New York. Together with CÊsar Ritz , he presided over several Hotel kitchens, inventing famous dishes, such as peach Melba and bombe Nero, reforming the hideous physical conditions in which professional cooks then worked on their coal-fired ranges, rationalizing the kitchen workforce, codifying haute cuisine and raising the social status of chefs to a level that anticipated today’s celebrity chefs. Today, the cooking style of Escoffier is the standard for farm-to–table cuisine, sophistication, elegance and simplicity.


Michelle Bernstein Since drawing the national spotlight in the mid 1990’s, Chef Michelle Bernstein has remained one of the region’s most well-respected and iconic chefs/restaurateurs. A Miami native, she has earned accolades from top critics across the country for her innovative cuisine and a personality as warm and vibrant as the Florida sun. “My food is about amazing ingredients, layered flavors and straight forward techniques. I cook the food I love and I think that love translates to the diners,” says Bernstein, a James Beard Award winner (Best Chef South 2008) and author of Cuisine a Latina (Houghton Mifflin Harcourt 2008). These days, Bernstein is busier than ever. With her husband and partner David Martinez, she owns and operates two highly successful restaurants in Miami. The eponymous Michy’s, opened in 2005, serving delicious, haute cuisine with tropical Latin touches, was dubbed one of the “Top 50 Restaurants in the Country” by Gourmet and “Best New Restaurant 2006” by Food and Wine and has evolved into a local hotspot and a must-experience dining destination on every gourmet’s dining agenda. Chef Bernstein and her husband also own the more casual Crumb on Parchment, and operate MBC Michelle Bernstein Catering Company, a fullservice catering company. Next on tap: Chef Bernstein will open Seagrape, a 267seat Florida brasserie at the Thompson Hotel, the newest outpost of the New York City icon, slated to open on Miami Beach this fall. Bernstein is also a community activist. After falling in love with the organization while visiting Chicago, Bernstein launched the Miami chapter of Common Threads, an after-school program created by Chef Art Smith dedicated to teaching underprivileged kids to socialize, and eat healthy. Bernstein regularly appears on an array of national TV shows, from Top Chef to Good Morning America and hosts the PBS weekly television series, Check, Please! South Florida. She consults for Delta Airlines, Nespresso and Ruinart. In addition, she is part of the Lexus Culinary Masters, a member of the Macy’s Culinary Council and recently joined IMUSA’s panel of chef

This evening will honor Chef Michelle Bernstein with the LDEM Achievement Award, for her exceptional commitment to providing the South Florida community with fresh, locally grown food, supporting the people who grow food through his farm-to-table philosophy and nurturing a new generation of knowledgeable consumers. This evening is been emceed by Emmy Award winning journalist Lisa Petrillo. Lisa received two Emmy Awards for writing and on-camera performance for her behind-the-scenes series and her third Emmy for her CBS4 report on the “Chefs Challenge” in 2005. Lisa is active in the American Cancer Society, St. Jude’s Children’s Hospital, Miami Children’s Hospital and the Diabetes Research Institute, among others. Lisa is a true Floridian celebrity. She received her Bachelor of Science in Broadcast Journalism and a minor in Marketing at the University of Miami. Lisa’s professional career began in 1986 as the Communications Manager for the Greater Miami Convention and Visitors Bureau. Later that same year, she began her television career at WPLG as a producer and was named the station’s entertainment reporter in 1988. Following WPLG, Lisa became a national correspondent on the NBC show “Real Life” Lisa joined WFOR/ CBS4 in 2001 as Entertainment Reporter. Les Dames Favorite Auctioneer Manny Rosa joined Lisa Petrillo this evening. Dr. Manuel Rosa earned a BA Degree in Psychology and Puerto Rican and Hispanic Caribbean Studies from Rutgers University, a MS Degree in Student Personnel Administration from New York University and an Ed. D. degree in Education Administration from Florida International University. He has worked in private and public sectors of higher education and is currently a Graduate Professor and Advisor for the Keiser University Graduate School in both the Master of Science in Education and the Doctorate in Education programs. In addition to teaching, Dr. Rosa is a quality assurance consultant for throughout the hospitality industry to help companies identify areas of opportunity for training and development of employees in the areas of leadership, customer service, teamwork and ethical decision making. He is also an active volunteer with the United Way and a Volunteer extraordinaire with Les Dames Miami.

To do this LDEI members:
