s we make the last turn of the page for 2023, here at Cornwall Living we are looking forward to a New Year that is filled with health and happiness. With the indulgences of the festive season behind us, now is the time to treat our body and mind to some restorative practices. While January can sometimes feel a little of an anti-climax, by adopting some mindful moments and making some intentional resolutions this can be a time of exciting new beginnings. Last year I was introduced to the benefits of cold-water immersion and managed to continue my icy dips throughout the winter. This year, I've not been as regimented and so my resolution for 2024 is to get back into cold calming Cornish waters on a regular basis. With that in mind, I have been reading this month's cover feature with interest as Rosie Cattrell takes us on a journey of elemental wellbeing from page 17. If cold-water immersion is not your thing, fear not, as alongside cold-water swimming and being drenched with ice buckets, Rosie also explores the gentle warmth of some luxury Cornish spa experiences and the nourishment that yoga can bring to our bodies. Nourishment, as we know, also comes in the form of food and although we may have had our fill of rich, roasted treats during December, now is the time to take a fresh approach to spring menus. Kota Kai (page 49) heads up this issue's special foodie section, serving Asian-inspired small plates that are bursting with flavour and goodness, while nutritious, spice-infused mains are veritable hugs in a bowl. The Park, Cornwall (page 50) is another example of where you can sample seasonal treats and indulge in the local catch of the day. The Kitchen On The Beach has a laid-back vibe with dishes to suit every taste. St Michaels Resort (page 54) is also no stranger to culinary excellence. Choose ocean-facing dining at the Brasserie On The Bay or a more relaxed lunch at the Garden Kitchen – the onus here is on locally sourced produce which heralds from nearby farms, fields and fishermen for a true taste of Cornwall. While January is often thought of as a time of austerity, this year I think we should turn this on its head and make this one of boundless experience. Dive Project Cornwall launches for 2024 In 2023, Dive Project Cornwall taught over 350 young people to dive here in the Duchy. It was an experience that changed the lives of many, and just as importantly, raised awareness of the importance of our oceans, encouraging the next generation of Ocean Influencers to go out into the world and enact the positive change that’s needed in order to safeguard the future of the marine environment. As well as learning to dive, the youngsters were educated about the importance of the ocean with activities led by Marine Conservation Society, activities that also taught them valuable life skills for use in their everyday lives.

A key part of those options will be a Lithuanian style of sauna – a ‘Pirtis’ – an option that has rarely been available in the UK. Filling the sauna with scents of the forest through ‘whisking’, this Lithuanian sauna tradition is all about creating a connection with nature. A ‘Pirtis’ involves guests entering the sauna and steam mixed environment and being massaged with a mild whisking technique, using fresh birch and oak leaves bound together to create a tool. Breathwork, alongside intention setting, ensures the guests begin to feel aligned as they drift towards a state of tranquillity. A

s we remain in the depths of winter, it’s more important than ever that we keep our homes warm and cosy. Air-source heat pumps have quickly become the UK’s leading renewable heating solution and the most popular alternative to traditional heating. At GreenGenUK, the friendly team helps dozens of homes each week to upgrade their homes and move away from more expensive and harmful oil and gas systems. This makes GreenGenUK the largest provider of air-source heat pumps in Cornwall, providing more MCS-certified systems throughout the Duchy than any other company; this doesn’t come as a surprise when you combine the host of benefits of installing air source heat pumps with GreenGen's decade of experience. With the recent grant increase and the prospect of a cold winter ahead, there has never been a better time to switch to a carbon friendly air-source heat pump. ut of Wood has been providing full design and installation services for more than 30 years; understanding clients’ needs and crafting effective solutions are its lifeblood and a few recent examples show why the business comes highly recommended. Earlier this year, the team worked on a hi-spec renovation project in St Mawes, where highlights included contemporary slab kitchen doors with brass strip edging for a touch of luxury. Alongside this were slatted oak units with hidden push latches to avoid disruption of the crisp lines while bespoke, extra-tall wardrobes maximised the use of space in the bedrooms. In contrast to this project, Out of Wood also recently completed a traditional kitchen and utility room in a property overlooking Falmouth harbour. This period property needed a timeless style; think in-frame doors with cockbeading accompanied by pilasters and tongue-and-groove cladding. Three-metrehigh ceilings called for made-to-measure wall cabinets, complete with ladder-rail for access in this distinctive property. Closer to Truro, the team installed a classic shaker-style kitchen in a rural country house. The craftsmen created a bespoke double larder with solid oak drawers and spice racks, providing plenty of space to keep clutter at bay. A farmhouse sink with a Quooker tap was

included in one of their signature sink units, all with stylish detailing. In-frame doors can also be used in contemporary kitchens to give an architecturally designed feel, like the installation of an in-frame slab door paired with an extra-large island to meet the client’s need for food preparation, together with a family eating area in their Truro home. Topped off with a Caesarstone quartz worktop, the result is a stunning, modern centrepiece. The latest project completed by the team, working with local architects and designers, was on The Roseland Peninsula, a collaboration that created a cohesive feel throughout. As ever, the secret was in the detail when it came to this unique drinks cabinet crafted in the workshop; oak wine glass holders, stadium shelving for bottles, internal LED strip lighting and a drinks chiller expertly combine aesthetic and function, meaning everything needed is close at hand.

We are becoming increasingly appreciative of the little things in life, and the team at Charlestown Woodburners are finding that more and more of us are seeking out ways in which to warm our toes that brings us a little joy while doing so. For Charlestown Woodburners, it all began when owner and founder, Geoff Bate, found that many customers were requiring his help as a gas and heating engineer with the removal of a gas fire in favour of a woodburner. Taking stock of an ever-increasing demand for a more traditional way to heat the home, Geoff laid plans to open his own showroom in St Austell with his wife, Mandy. Having opened its doors on 4th July 2015, Charlestown Woodburners has been the main port of call for many, whether that be for advice, finding the right product and the all-important fitting and installation process. While Mandy man’s the helm in the showroom, Geoff uses his extensive knowledge and expertise to oversee the installation of both gas fires and woodburners, alongside Geoff and Mandy’s son, Ryan – a family business through and through! One thing Charlestown Woodburners are proud to offer is variety. With an extensive collection of woodburners available to view

FOODIE BAKED CHICKEN THIGHS WITH CIDER, WHOLEGRAIN MUSTARD AND RODDA’S CORNISH CLOTTED CREAM

SERVES 3 – 4 Preparation time: 15 minutes Cooking time: 1 hour

INGREDIENTS 6 organic or free-range chicken thighs 2 tbsp olive oil 6 rashers streaky bacon, cut into small pieces 1 onion, finely chopped 2 cloves garlic, thinly sliced 2 small to medium leeks, trimmed, rinsed and cut into 1 – 2 cm rounds 2 sprigs rosemary A handful of sage leaves, roughly ribboned 450ml medium dry cider 227g Rodda’s Cornish clotted cream 1 tbsp wholegrain mustard ½ bunch flat-leaf parsley, leaves picked and chopped Sea salt and freshly ground black pepper

Chef and food writer, Gill Meller has partnered with Rodda’s to create an exclusive recipe which showcases their award-winning Cornish clotted cream.

G

ill’s mouth-watering recipe for baked chicken thighs with cider, wholegrain mustard, and Rodda’s Cornish clotted cream is the perfect comfort food recipe, suitable for any time of year when only a spoonful of wonderful will do. Rodda’s Cornish clotted cream is not just the perfect topping for a cream tea but can also be used as a rich, silky addition to savoury dishes, as Gill explains: “I’d serve this with something like celeriac and potato mash (you can add a spoonful of Rodda’s Cornish clotted cream to this too) and buttered tenderstem broccoli for the ultimate comfort food."

METHOD 1

Preheat the oven to 190 °C /170 °C fan/gas mark 5. Season the chicken thighs all over with salt and pepper. Place a large heavy casserole or roasting dish on medium/high heat. Add the olive oil, and when it’s hot, carefully place the seasoned chicken thighs, skin side down, into the dish. Fry them for 4 – 5 minutes on each side or until nice and golden. Lift the chicken out of the dish onto a plate but leave the dish on the heat. 2

cider and bring to a gentle simmer. Place the dish, uncovered, into the middle of the preheated oven and cook for 45 – 50 minutes.

Remove the dish from the oven and set it back on the stove over medium heat. Lift the chicken out onto a plate and cover it with foil while you turn your attention back to the sauce. Stir in the Rodda’s Cornish clotted cream and the mustard and bring the pan back up to a simmer. Cook, stirring once or twice until the sauce has thickened slightly and looks lovely and rich. Stir in the parsley, return the chicken to the pan, warm through and bring to the table.

Prepare the other ingredients Add the bacon pieces to the dish and fry for a few minutes until they are just beginning to crisp a little around the edges. Now scatter in the chopped onion and garlic along with the sage and rosemary sprigs, and stir well. Cook the onions for 4 – 5 minutes or until they are nice and soft, and smell lovely and sweet. Add the leeks and stir well. Now nestle the chicken thighs, skin side up, back into the pan. Pour in the

he food offering at St Michaels Resort is headed up by Executive Head Chef Darren Millgate. His culinary experience is venerable and includes training under Michelin-starred chef Ben Tunnicliffe before honing his kitchen craft in kitchens across the south of France. His attention to detail can be seen in each and every dish across a three-day rolling menu at the Brasserie on the Bay, which takes diners on a culinary tour of Cornish farms, field and seas. Drawing on the Duchy’s abundant local larder, Darren comments: “Whatever time you visit us, our local food heroes (and their produce) will be firmly in the spotlight, and you can be sure that even if there isn’t space to say it on the menu, pretty-well everything on your plate comes with a local story.” A huge proportion of all fresh produce used in the kitchens is local and this is reflected in the Brasserie on the Bay’s rolling three-night

menu. The ‘catch of the day’ is landed by local boats and comes fresh from Fish For Thought and Cornwall Fish Direct each morning; accompanied by the provenance of the very name of the boat which landed it. “One of my earliest memories was going out with my dad on our boat at Portholland to pull up the net and see what we had for dinner. Sometimes it was mackerel, or fiddly spider crabs, occasionally bass – the excitement of not knowing what would be in the net, that still guides me today,” adds Darren. The Real Cornish Crab Company is Darren’s supplier of choice for this true taste of the deep. A family-owned business where all of the crab is picked by hand, landed at nearby Newlyn from fishing grounds off the coast of Land’s End, Pendeen, Zennor, Isles of Scilly and the Longships lighthouse. It's not just the local ocean larder that is celebrated at St Michaels. Slow-reared pork from

award-winning Primrose Herd comes from the hills of west Cornwall. The herd of rare and native-breed pigs are reared slowly and non-intensively, with the pigs spending lots of time outdoors. Primrose Herd also has long-standing relationships with other farmers and smallholders who share their values of natural, slow growth and plenty of space and freedom to roam. These traditional farming methods give both excellent marbling in the meat and a rich flavour. Westcountry Farms supply fresh salad and vegetables, giving Darren exclusive access to local producers such as Canara Farm that experiment with growing heritage varieties and micro leaves. Under the watchful eye of the chefs, St Michaels take pride in presenting dishes that not only satisfy the palate but also reflect the rich culinary heritage of Cornwall, with an emphasis on quality, flavour and creativity. The winter menu for Brasserie on the Bay includes a deeply warming braised venison ragout, Marsh Farm duck breast with a festive spiced-plum compote and, of course, the catch of the day served with a refreshing caper and gherkin salad, seaweed and herb butter and Cornish potatoes. The Garden Kitchen offers lighter lunches and tapas plates,

perfect for enjoying post spa with a treat glass of bubbles. G

iven where the country is economically and politically, it was always going to be a difficult Autumn Statement for Jeremy Hunt. There is little headroom to do anything given the poor state of the public finances and growth outlooks make for pretty grim reading. However, in what many in his party feel is a high-tax environment (and it is high when looked at in the round for the UK historically – albeit maybe not high when compared to other jurisdictions) this is increasing due to the impact of higher inflation rates than previously anticipated. We are also still experiencing a headwind of poor public service standards with some saying the plans for spending are not reliable and further spending will be required. The proximity to the next general election was the large elephant in the room meaning that it felt like the commencement of the election process. It was an Autumn Statement trying to appeal to specific pockets of the electorate and give a little away now whilst

there was a small opportunity to do so. This opportunity may not be there in the Spring Statement which on its own, has prompted some rumours of a spring general election. One of the headline tax announcements for Cornish businesses was the further extension of the business rates Retail, Hospitality and Leisure (RHL) scheme for another year, providing eligible properties with 75% relief, up to a cap of £110,000 per business. The capital allowances 'full expensing' for limited companies, announced in the Spring Budget as a temporary measure (from 1 April 2023 – 31 March 2026), has also been made permanent. This was a welcome change for the more sizeable limited company’s clients that regularly spend amounts on new plant and equipment in excess of the available £1 million Annual Investment Allowance (AIA) because the qualifying spend is high or because the AIA has been reduced significantly due to the number of ‘associated companies’ a company has. This measure

is obviously welcomed and required for the incentivisation for the private sector to invest and increase productivity. The rate of class 1 NIC for employees will reduce from 12% to 10% from 6th January 2024, and the class 4 NIC rate for the selfemployed will reduce from 9% to 8% from 6th April 2024. This is welcome but falls in the shadow of the frozen income tax thresholds and the impact of “fiscal drag.” The abolishment of class 2 NIC (£3.45 per week) is minor for the self-employed but welcome from a point of view of simplification for those taxpayers. Where there is a decrease, there is also an increase in the minimum wage from £10.42 to £11.44 for 21+ year olds from 6th April 2024. This will be something all businesses need to consider and budget for. The planned merger of the current two Research & Development (R&D) tax relief schemes, broadly that for larger companies and that for smaller companies – the small and medium-sized enterprise (SME) scheme and the R&D expenditure credit (RDEC) will be merged from 1 April 2024. Overall, for many SMEs, the changes will not be favourable. This coupled with the additional administration around R&D tax relief claims and the aggressive stance taken by HMRC to all claims, means a difficult landscape for SMEs and R&D tax relief. Current turnover restrictions on the use of the accounting cash basis will be removed so that sole-traders and partnerships of any size

can use the basis, and the current position will be upended so that an election into the accrual’s basis will be required, as opposed to the current position of electing into the cash basis. This is clearly a measure with a view to the implementation of Making Tax Digital (MTD). We’d recommend speaking to your accountant here. ISA limits will remain unchanged in 2024/25 and while some further clarifications around the implementation of MTD were announced, a glaring omission was the heavily rumoured inheritance tax scrappage or reduction in that rate. Any such changes would likely only be temporary, and the more likely event is that a new Labour government would restrict or abolish favourable reliefs, namely Business Property Relief. Anyone currently benefitting from this relief should seek experienced tax advice as to how the impact of such potential changes could be mitigated.

Boconnoc Estate is delighted to be hosting a fundraising dinner and auction this February, in support of Dive Project Cornwall.

A

fter a resounding success in its first year, introducing young people from around the UK to the incredible marine environment and instilling in them a desire to cherish and champion its vitality for generations to come, last year alone Dive Project Cornwall trained over 350 school students from around the UK, reaching and educating over 500,000 young people via its education programme on the importance of the ocean. It’s an achievement that the whole team is immensely proud of and, as we embark on a new year, Dive Project Cornwall seeks to make this one even bigger than the last. But it needs support in order to do so, which is where the amazing house and grounds of Boconnoc Estate come in. Steeped in history, Boconnoc Estate has been home and host to some of our country’s greatest luminaries. It is believed to have welcomed King Charles I, who stayed in what is now known as the King’s Bedroom, and home to William Wyndham, Lord Grenville, who married Anne Pitt and later became Prime Minister. Wyndham was also famous for abolishing the slave trade. In 1864, on Lady Grenville’s death, the estate was bequeathed to George Matthew Fortescue, younger son of Lord Grenville’s sister, Hester, who married the first Earl Fortescue of Castle Hill, Devon. It has remained in the Fortescue family ever since.

Today, Boconnoc Estate is only open to the public for private events, most of which are weddings, which makes this upcoming fundraiser a fantastic opportunity to visit the amazing house and grounds whilst supporting one of Cornwall’s finest not-for-profits. Taking place from 7pm on 8th February, the evening will begin with welcome drinks, before a four-course dinner and complimentary wine. At around 9.30pm, a presentation will unveil the extent of the work of Dive Project Cornwall, along with its plans for the future, and at 9.45pm, an auction of more than seven amazing lots will take place, with proceeds going towards helping Dive Project Cornwall achieve its goals. The evening will be hosted by Dive Project Cornwall, with food prepared by a team of renowned chefs, some yet to be named, others including ex-Executive Chef for Rick Stein, Stephane Delourme. It’s shaping up to be an incredible evening for the social calendar, with the best part being that it’s all in support of a cause that is key to a stable future for our planet.
