Fusing ocean and art
Born in Africa, Dreya Bennett came to Cornwall when she was nine years old, and her love for the sea grew into a passion that would shape her future in many ways. A keen kitesurfer, she spent much of her time in the water, so much so that she once ranked third in the world for kite surfing. The changeable nature of the Cornish sea would inspire Dreya even after her kite surfing days were over, and one day she discovered glass by accident, going on to study Architectural Stained Glass at Swansea. ts colour, its reflections and translucent quality instantly captured my heart,” she explains. “To me it has a similar quality to water. Following the disappointment of last year’s restrictions, we are ready to embrace the festive period with open arms and here at Cornwall Living there is already much excitement as we look forward to some festive fun.

When it comes to feeling festive there is nothing quite like a woodland walk, with leaves crunching underfoot and the prospect of a hot coffee and a mince pie at the end. dd to that, the Christmas spirit you ll find inside some of Cornwall’s grandest houses and a day out with the National Trust (nationaltrust.org.uk) ticks all the yuletide boxes. Trelissick, near Truro, will be playing host to Father Christmas who will be telling a festive tale, after which children can enjoy a Christmas trail, while adults partake in some seasonal shopping and a warming glass of mulled wine. Head further north, and Cotehele will once again be upholding its 60-year-old garland tradition, which sees the Great Hall bedecked with the most beautiful swathes of foliage and flowers. dmire this incredible spectacle before enjoying a frosty walk around the grounds, stopping to listen to some seasonal music from one of the choirs or performers who will be entertaining visitors by the bowling green.
Let there be light When it comes to feeling festive, there’s nothing quite like some Christmas lights to bring joy to the faces of both young and old. There’s always a pretty display in our hometown of orthleven, as the lights reflect over the water with the iconic clocktower silhouetted in the distance – best enjoyed from a ringside seat at the Mussel Shoal, where you can warm up in front of a log
burner with a hot toddy to hand. Head west, and Mousehole’s famous display of harbour lights is back for 2021. There’s even a webcam (mouseholelights.org. uk), so no-one has to miss out. Cornwall’s capital, Truro, will be hosting a sparkling display above its city streets this winter, or for something quite unique, watch Santa arrive by boat into St Ives harbour (stivesindecember.co.uk).

Deck the halls with boughs of holly
Beach strolls for the soul Whether it’s a Christmas Eve tradition with the family, or you need to walk off all that turkey and Christmas pudding, a walk along one of Cornwall’s beaches really is the best way to embrace the elements at this time of year. One of our favourites has to be the three-mile stretch of sand from Godrevy to Hayle Estuary, or if you prefer something a little more tranquil, then the paths that follow the waters of the Helford offer some prefect peace before the big day. Further north, and the wild waves of Watergate Bay offer a bracing backdrop while Widemouth Bay’s expanse of beach is the ultimate winter playground. Whichever stretch of sand you find yourself on, it s a great way for children (and dogs) to expend some of that festive energy! We love nothing better than to wrap up warm and embrace the elements before returning home to a roaring fire and some Christmas cheer.

The magic of Christmas is really brought to life by some of Cornwall s finest theatre companies. Rogue Theatre’s Winter Wood (rogueotherworld.co.uk) is a festival of wonder like no other. Journey through the woods, meeting magical creatures and Old Man Winter in this incredible immersive experience. Cousin Jack’s also returns to the stage this winter, with Cornwall’s classic tale of The Mousehole Cat (cousinjacks. org). Combing puppetry with live action, the performance takes place in the heart of Mousehole and is brilliant for both the young and the young at heart.
Twas the night beforeChristmas Cornwall has a plethora of attractions across the county where festive fun can be had. Eden Project (edenproject.com) is a very special place at this time of year. From twinkling biomes and enchanting light displays, to the much-loved Eden ice rink, a visit here always makes us feel festive. This year Newquay Zoo (newquayzoo.org.uk) will be welcoming Santa to its grotto, before he hot-foots it on his sleigh to Dairyland (dairylandfarmpark.com). The man himself will also be boarding the Bodmin and Wenford Railway (bodminrailway. co.uk) in his own special Victorian coach.

s 2021 draws to a close, Tom Stringer and Johnny Pearce, Directors of Oltco, look set to end the year with 15 new franchises, taking the UK total to 41! That’s an impressive achievement within a mere 12 months, and excellent news for homeowners up and down the UK looking for resin bound solutions from a company that places sustainability and a brighter environmental future at the top of its list of priorities. With Oltco's base in Cornwall, Tom and Johnny also took the decision to move to a brand new headquarters in Newquay, aptly named ‘The Feel Good Building’. The decision was taken, in part, to facilitate the brand’s continued growth and its aim to create more jobs in the local area. The building provides a collaborative space for hot-desking, as well as small business premises for other like-minded Cornish companies, proof of Oltco’s determination to develop opportunities in Cornwall, for Cornwall. In fact, it was only a few months ago that we heard from Kris – Oltco Cornwall’s new Sales Support Manager and one of a list of new recruits – whose multi-faceted skill base saw him offer Cornwall Living readers his top garden tips in time for the summer season. The site crew has grown too, as has the accounts team, with the addition of two new Franchise Account Managers, Jenni Cullis and Rosie Dowen. You’d have thought that all of the above would be enough to keep the team busy, but it hasn’t prevented Tom, Johnny and the crew here in Cornwall from continuing to innovate. In fact, after the successful 2019 launch of ecycle ound a world first, sustainable resin bound driveway solution that’s made utilising waste plastic currently in circulation – Oltco
once again broke new ground this year with the release of yet another new product. It’s called Recycle Base, and provides a ground reinforcement system that’s made using stone and low-grade waste plastic, including ocean plastic supplied by Odyssey Innovation, through its Marine Regeneration Scheme. Having found that the size of the average resin bound installation is 70m2, by using Recycle Base, this would utilise the equivalent of a tonne of waste ocean plastic, or approximately 175 million plastic straws! This waste plastic would otherwise be incinerated, which means that by using this product, Oltco clients will actually be carbon offsetting, planting the equivalent of six trees. “Recycle Base works perfectly with both our resin bound and Recycle Bound solutions,” explains Johnny, “and I’m really proud that we can now also offer our customers a sustainable base solution.” It’s fair to say then that 2021 has been a tour-de-force for Oltco. As the brand continues to deliver a growing portfolio of sustainable, resin bound products to more UK clients than ever before, whilst at the same time growing opportunities here in Cornwall for locals to join a brand whose reach is expanding by the day, it seems there’s no end to what it can achieve. It’ll certainly be interesting to see how the Oltco story unfolds over the course of another year!

peaking to business founders, Tim Simpson and Tom Jubb, we learn that 90% of the raw material used by Post & Beam is oak, sourced from the sustainably managed forests of northern France. “French commercial oak forests are so well managed and have been for more than 300 years,” says Tom. “In partnership with the forestry management in France, we replant the equivalent of all the trees that we use in our projects.” Timber is a fantastic building material as it stores C02 for the life of the building. However, says Tom: “We also feel that it is our responsibility to encourage and promote non-commercial rewilding and native woodland creation here in Cornwall. We do it because we recognise the long-lasting effects of re-wilding, and the importance of carbon offsetting in securing a stable, green environment for future generations.” Did you know that Britain was once a wooded isle with over 98% of the land covered in trees, and that now, only 2% of that ancient wild wood survives? This startling statistic lies at the core of Plant One Cornwall, a registered Community Interest Company solely focused on putting trees in the ground for the benefit of us all. Working with private landowners and the community,
as well as partnering with businesses like Post & Beam, Plant One Cornwall aims to restore and revitalise the ever-shrinking temperate rainforest – a habitat found here in the UK that is thought, by many, to be more endangered than its tropical counterparts. Led by Carl Rowlinson and Rai Lewis, Plant One understand that management of new woodland is as, if not more important than physically planting trees. Tom continues: “Because of the high value of land in the UK, this becomes di cult to address with private landowners. If a woodland fails, then so does the carbon offset sold with it. Plant One can pinpoint the exact planting location of the trees we purchase,” says Tom, and when you consider that a typical Post & Beam client is indirectly planting approximately 10 to 20 trees via Plant One Cornwall, this partnership is a significant force for good, supporting the rewilding of our countryside and the revitalising of the Celtic rainforest which has, perhaps, never been more important.

INDULGENCE This Christmas, Rodda’s is adding a spoonful of wonderful to the festive celebrations – with a series of exclusive recipes created by Cornwallbased chef and restaurateur Emily Scott.

mily loves nothing more than bringing friends and family together through food, using her recipes to create memorable moments, intertwined with fond feelings of nostalgia. Her passion for food is reflected in her ingredients, cooking within the seasons and keeping things simple to create rustic dishes which you can easily recreate at home. “In a year that’s all about bringing people together again, we wanted to make Christmas ay extra special, says Nicholas odda, anaging irector of odda s. 25g Rodda’s classic churned butter 1 medium onion, chopped 6 sage leaves, roughly chopped, plus extra to finish 1 small garlic clove, finely chopped 1 litre vegetable stock 0g cooked, peeled chestnuts 100ml crème fraîche 113g Rodda’s Cornish Clotted Cream Cornish Sea Salt and freshly ground black pepper
METHOD 1
Heat a tablespoon of the olive oil and the butter in a saucepan over a medium heat and sweat the onion for about 10 minutes, until soft and translucent.

Add the sage and garlic, and sauté for a minute.

Remove from the heat and cool slightly, then purée until very smooth in a blender or food processor.

Slice the reserved chestnuts.

Heat the rest of the olive oil in a small frying pan over a medium heat and fry the sage leaves until crisp, then drain on kitchen paper.

In a small pan warm through the Rodda’s Clotted Cream until smooth and creamy.

Ladle the soup into bowls, scatter on the chestnuts and sage leaves, swirl in the Rodda’s Clotted Cream with a teaspoon and add a trickle of olive oil.

Eat with slices of sourdough and odda s classic churned butter.

FILLET OF BEEF WITH RODDA’S CLOTTED HORSERADISH CREAM, PUMPKIN & RED ONIONS SERVES 6 INGREDIENTS: For the Beef . kg piece of beef fillet, trimmed 4 tbsp olive oil 100g Rodda’s classic churned butter
For the Pumpkin and Red Onions 2 large red onions, skinned and quartered 2 tbsp vegetable oil 6 sprigs of rosemary
6 garlic cloves, skin on
6 juniper berries
6-8 sprigs of rosemary
1 large butternut squash or small pumpkin
Cornish sea salt and freshly ground pepper For the Horseradish Clotted Cream 170g horseradish sauce 227g Rodda’s Cornish Clotted Cream
1 tbsp plain flour 500ml vegetable stock 100ml of white wine and a glass for the cook few sprigs of flat leaf parsley, finely chopped Cornish Sea Salt and freshly ground pepper
METHOD To make the Beef 1

To make the orseradish Clotted Cream, in a small bowl mix 2- tbsp of horseradish sauce into the odda s Clotted Cream.
For the Pumpkin and Red Onions 1
Peel and slice the onions into quarters then let them soften in the vegetable oil over a low heat.

Finely chop the rosemary needles, crush the juniper berries and add to the softened onions.

Never rush an onion, give them time to soften and sweeten. eanwhile, peel, seed and slice the pumpkins into rustic small pieces.

Remove the beef from the oven and remove and discard the cling film. To finish, heat a frying pan until hot, add 2 tbsp of olive oil.

ow quickly a year can pass, but no one in the Bluebird Care team is complaining as their favourite time of year is finally here. Christmas is a time to be together, to enjoy the festive spirit and sing carols, taking photos to capture new Christmas memories and enjoy the delicious food. This year, the luebird team are getting crafty, and are relishing the excuse to enjoy doing something fun with their customers. Their recent craft session involved making Christmas cards! “From red sparkly glitter to candy cane stickers, we had everything we needed to allow our team to be as creative as they wanted,” explains Carol, who began luebird Care in Cornwall nine years ago. With a Christmas film on in the background and hot chocolate and pasties being served, everyone had a great time. ow lovely it is to send a handmade card to a loved one.
