Now that the clocks have gone back and the winter light is casting long shadows across Cornwall’s dramatic coastline, there’s a palpable sense of festive anticipation in the air. Cornwall Hospice Care celebrates Veteran Aware status
Cornwall Hospice Care is celebrating Veteran Aware status. The Cornish healthcare charity has also achieved a silver standard for the Defence Employer Recognition Scheme that encourages employers to support those who have served. The news has been shared with the charity’s teams at three events.
The first was held at St Julia’s Hospice in Hayle where Helen Hurst RGN QN from the Veteran Covenant Healthcare Alliance said, “We want to reach out to the Armed Forces community to explain what hospice charities do and to encourage collaboration.” At the second event at Mount Edgcumbe Hospice, the status was received by volunteer Trustees Jane Stubberfield and Dominque Roberts.

who now work for the charity received the plaque. They included Chris Starnes Education Lead who was a member of the Royal Army Medical Corp, Kev Rowden from the IT team who was in the Royal Logistic Corp, Neil Rowe Processing and Distribution Assistant who was with the Royal Electrical Mechanical Engineers and volunteer PAT Tester Trevor Skuse who recently came out of the Army.

There is always a sense of excitement when the first Christmas parties are held at the restaurants, which this year will coincide with the Porthleven Christmas market weekend and the big Christmas lights switch on which take place from Friday 29th November to Sunday 1st December. It's a fun event in the local calendar where families come to catch a glimpse of Santa and maybe receive a little sweet treat from the big fella himself. Everybody gets into the Christmas spirit with mugs of hot chocolate, mulled wine, and mulled cider to warm themselves from the wintery weather. It’s a really fabulous night in the village as we all get together to wish each other a bit of Christmas cheer.
At Kota Kai this December, we are really looking forward to hosting our Christmas parties and for the first time we are holding celebration nights each Friday from 29th November, where we will have DJ sets to help get everyone in the party mood. We still have space for some last-minute bookings so don't miss out. We still have space for some last-minute bookings. At Kota, we are introducing a three-course set menu at £37.50 with a few trial nights of our new concept for 2025. As we come into our 20th year of being open, we celebrate with a new style of menu and dining experience, which we have been keeping under wraps for a while, there are very exciting times ahead!
Christmas at home is always a special occasion as we celebrate with the whole family and friends. I love to cook for the big day and we have many courses. We always start with bubbles and canapés while we open our presents. I then love to follow with some seafood courses to make it a bit lighter. We will probably have some oysters as they are wonderful at this time of year, followed by a cured salmon or trout dish, a warming small cup of soup, turkey with all the trimmings, sticky toffee pudding and then finish with some homemade mince pies and cheese. It might sound like a lot, but we like to eat over many hours while we play games, chat, watch the King’s message… and drink wine!
I will do a lot of prep before the big day. Oysters can be shucked and ready to go before
guests arrive. I’ll cure the salmon/trout three days beforehand and slice the day before use so it is ready to be plated. The soup can be made a couple of days before and kept in the fridge until needed. The secret behind my turkey is that I’ll take the legs and debone them four days before, make a stuffing and then reroll the legs into a ballotine and cook. I’ll then just roast them to re-heat and slice.
The turkey crown will then be brined for at least 36 hours which helps the breast to stay moist when you cook it on the big day. I normally make a chicken gravy base four weeks before and freeze it so that it becomes the base of my turkey gravy. I also boil my potatoes for roasties the day before along with the other vegetables and bread sauce. The sticky toffee pudding can be made a month before and frozen. Mince pies are exactly the same, just bake them a few weeks before, freeze and then defrost on the day before warming in the oven and serving with clotted cream. If you do this all before it certainly makes Christmas less stressful and gives the chef more time for celebrating with everyone. I sincerely wish you all a very merry Christmas and a happy New Year!

During the Christmas period, Kota Kai will only be closing on Christmas Day and Boxing Day, and will then be open during the whole period leading up to the last big party of the Year on New Year’s Eve.
Kota is open throughout the festive period for lunch on Christmas Eve and for dinner throughout (closed on Christmas Day and Boxing day). Kota will also be holding a New Year’s Eve extravaganza night with a multi-course dinner for those who are lucky enough to get in. Seats are very limited!
SERVES 6
PREP TIME: 35 minutes
INGREDIENTS
1 side of salmon
For the Yuzu Miso Dressing:
3 tbsp white miso paste
3 tbsp yuzu juice
2 tsp honey
1 tsp ginger, grated
1 tbsp mirin
4 tbsp rice-wine vinegar
125ml cold-pressed rapeseed oil
Salt and cracked pepper
For the curing mix:
350g sea salt
350g caster sugar
50gm dill, chopped
Zest of 1 lime
Zest of 1 lemon
Zest of 1 orange
CURED SALMON WITH YUZU MISO DRESSING
This makes a great party dish because you can cure the salmon a couple of days in advance. It looks impressive, sliced and spread on a big platter. The yuzu dressing can be made the day before, too. That leaves you the next day to decide what to serve it with. I love it with pickled vegetables
METHOD
1 To make the cure, mix all the ingredients together in a small bowl. Using your hands, rub it all over the top and bottom of the salmon, wrap it tightly in cling film and leave it in the fridge overnight.
2 To make the dressing, put all the ingredients except for the oil in a blender and combine.
3 Slowly drizzle in the oil to make an emulsion and then season with salt and pepper to taste.
and either toast, slices of bread, or a salad. The yuzu miso dressing is zingy and light and cuts through the richness of the fish. If you can't find yuzu, replace it with an equally zingy mix of lemon and lime juice. This is a dish you can serve all year round and it even goes with a glass of bubbles.
4 On the day of serving it, scrape the cure off the salmon, rinse it, then pat dry with kitchen roll.
5 Slice it thinly and lay on a platter. Drizzle over with the yuzu dressing and serve with the sides of your choice, alongside that allimportant glass of wine.

This is an opportune time to approach the subject, as the industry is about to enter unchartered territory that will require everyone to be far more diligent vis à vis the forthcoming legislation.
And what better person to talk to than Katie? With over a decade working in the industry and managing some of the finest professionally run holiday properties in the south of the county, her advice is sagacious and tailored to suit your needs, whether you’re just setting out or looking for tips on how to run your property professionally and maximise your return.
Over the coming months, we will be helping you to get your house in order – by talking to Katie about some of the following topics highlighted below.
It is vital to have all your health and safety certifications in order and up to date. This includes annual servicing for gas and oil boilers, an Electrical Installation Condition Report (EICR), chimney sweeps, fire risk assessments, equipment servicing (following the new 2023 guidance), and Portable Appliance Testing (PAT). Soon, there will be a new statutory registration framework that requires all holiday lets to submit paperwork to local authorities, ensuring safety standards are consistent across the board. Failure to
complete this registration form may prevent you from advertising your property on any OTA platform and could lead to fines for noncompliance.
Hire a qualified fire risk assessor to perform a full survey of your property, as this is now a legal requirement. Regardless of whether you complete the recommended work, the holiday home must have a fire risk assessment (FRA). It is advisable to review this annually or whenever there is a change in fire safety legislation.
Meet with your accountant and understand the changes now the abolition of the Furnished Holiday Let tax has been confirmed to kick in from April 2025. Make sure you have claimed any capital allowances that are still outstanding. It may be worth seeking specialist advice on how to do this before the next tax year.

James Bartholomew has been a full member of the Royal Society of Marine Artists since 2002 and his work has received notable awards including the Charles Pears Award and the Kenneth Denton Award. Glass artist Dreya Bennett was a founding member of the Extreme Academy at Watergate Bay in the early 2000s, championing kite surfing and board sports in the bay. She even kicked off an epic kitesurfing world record mission from Watergate, all the way to Ireland. A few years later she was back on her kite racing against a polo pony on the two-mile stretch of beach.
Fitting then, that Dreya was this September’s artist in residence at the Watergate Bay Hotel.
Dreya could be found sketching and working around the hotel, drawing inspiration from the shore and Watergate spaces to make a final glass artwork that embodied Watergate Bay. Channelling her love of the ocean into a different medium, Dreya is now just at home firing a kiln as she is in the water, creating fused glass artworks from her Cornish studio.

’ve finished a cycle around the coast of Britain – all 3,500 miles of it! Why, might you ask? I wanted to do something to raise awareness and start a conversation about suicide and mental health as I lost my dad to suicide when I was 17. I’m 34 now, and it’s taken me a really long time to be able to talk about it. Suicide is the biggest killer of people under the age of 35 and the biggest killer of men under the age of 50. I wanted to do something to help others and reduce this statistic; this was the only way I knew how. Riding in support of Cornwall Mind a local charity, Sport in Mind a charity helping people to get into sport and Papyrus a charity dedicated to the prevention of young suicide, my aim was to raise awareness of a topic that is very important to me. Sometimes people can lose hope if they don’t know what help is out there and they may feel very alone. There is a current mental health crisis with really long waiting lists within the NHS. If I can
help to encourage people to get outdoors, get moving and join a community, these can hopefully be small steps people can take if they are waiting for, or would prefer not to take, medication.
I asked people to join me along the way, to hop on a bike and if they didn’t have a bike, then to join me for a dip as I got in the sea almost every day. I wanted it to be a safe space for people to talk, so they could be open if they had lost someone to suicide, were dealing with their own mental health struggles or simply wanted to spend time outside in nature. I had around 40 people join me on the ride during which I had some of the most profound and beautiful conversations.

CELEBRATION
Cornwall Wildlife Trust’s Wildlife Photography Competition saw nearly 1,000 entries across six categories.
Taking photos of Cornwall’s stunning wildlife and wild places is a great way of connecting ourselves to nature.
The Trust hopes the competition will encourage people young and old to venture outdoors and focus on the incredible biodiversity that surrounds us, whilst being reminded of its fragility and the urgent need to protect and enhance it.
The six winners of the competition were announced during an evening ceremony at Truro Cathedral, which also marked the opening of the photography exhibition to the public.
Over 250 guests attended to learn who the judges had awarded the top honours to, whittling it down from five finalists in each category to one ultimate winner in each. With an incredibly diverse selection of animals, insects, birds and landscapes showcased, the winners on the night were:
