It's beginning to look a lot like Christmas! Lights are turning on, trees are going up, wine is being mulled and there's a sense of anticipation and excitement settling over the county. Christmas in Cornwall is always very special as gardens, attractions, shops and restaurants all get into the spirit of the yuletide period. Rosie Cattrell (from page 21) has been searching for the finest festive events where lanterns and lights illuminate the dark and seasonal traditions celebrate midwinter ahead of the feasting and fun to come.

Christmas is a time for celebrating, and as we welcome family and friends into our homes we want them to be looking their best. If you're anything like me, this time of year heralds something of an interior makeover and is an opportunity to truly deck the halls. Cornwall Hospice Care in action

The team at Cornwall Hospice Care have launched an extraordinary new film and report under the title of This is what we do, aimed at opening the doors to the work of the Cornish healthcare charity. The film was made over a 24-hour period showing what was going on in the hospices, at a bereavement walk, a fundraising event and in the charity’s shops. The supporting report explains how the hospice teams go above and beyond to care for terminally ill patients and how the people of Cornwall ensure the hospices are there when families need them.

Untangle an intriguing triple mystery

This winter, three crimes have taken place at Royal Cornwall Museum, and it’s up to you to solve them! Use a blueprint to help you discover the suspects and weapons hidden around the museum to crack the cases. Taking the plunge

Any winter stay down here in the Duchy would not be complete without a visit to a local town or village that will undoubtedly be celebrating the arrival of the festive season in its own way. At the top of the pile with a light display that draws people from all over the county every year in December, the Mousehole Harbour Christmas Lights switch on is a truly unmissable event. Now a treasured tradition that goes back to the 1960s, when local artist Joan Gillchrest strung coloured bulbs along both quays of the harbours to brighten up the village at Christmas time, the Mousehole lights have come a long way. Taking weird and wonderful forms, the lights depict more than the usual festive symbols; a serpent and a whale can be seen almost floating above the glittering tide, while a stargazy pie shines against the harbour wall. Once more the village will begin the staggered switch-on on the 12th December, with all lights shining bright by the 17th, so you’re sure to catch the event!

If you’re in the area for the festive season and find yourself longing to return to Mousehole, Tom Bawcock’s Eve on the 23rd December is certainly one for the diary. Reminiscent of an old local tale, it is said that the residents of the fishing village were starved during a stormy winter, when eventually fisherman Tom Bawcock set out into the waves, returning with a bountiful haul and saving the village. From then on, in his honour, stargazy pie has been cooked and eaten on this day. Pubs come alive with warm fires and live music draws anyone wandering the streets inside as locals celebrate with an evening of fun in gratitude for the food on their plates, and for men like Tom Bawcock.

If age-old tradition and old Cornish folklore tickles your fancy during your winter visit to a place rich in history, and

you’re within reach of the Penzance area, The Montol Festival is not something you’ll want to miss. Run by the Cornish Culture Association, this six-day arts and community festival celebrates the midwinter solstice, Cornish midwinter traditions of the past, and customs associated with Old Christmas, all culminating in Montol Eve on the 21st December.

costumes. Several fire beacons are lit throughout the town, leading up to the chalking and burning of the Cornish Yule log and the dancing that follows. With a theme of ‘light and darkness’, everyone is encouraged to unite on the longest night of the year in defeating the darkness and celebrating the annual return of the light. Whilst December may bring with it nights that can feel endlessly dark, and frosty days to nip your nose and encourage hibernation, there is also a sort of magic that only comes along at this time of year. You might see it in the glint of a bauble, or the shine of twinkling lights strung over heads in woolly hats, or perhaps in the smiles of those around you, come together to celebrate something special and unique. Wherever it comes from, you’re sure to find magic in Cornwall this Christmas, if you only know where you look…

Ross Phoenix of SeaSaw Designs looks ahead to a sustainable future for his craft, bridging the gap between luxury and eco-friendly.

The lights are twinkling, the smell of freshly cut pine and cinnamon waft through the streets and the yearly slogans of ‘support the economy – buy local’ and ‘zero waste Christmas’ are given their annual airing. After a turbulent few years for the UK, people are keener than ever to do just that, with a reported 60% of Brits buying from local stores, and online crafty platforms seeing growth.

Christmas is traditionally a time where we loosen our purse belts and enjoy all the frivolities of the season with no expense spared, yet many eco campaigns scream of less is more. So, is there a place where luxury and eco-friendly can happily meet? Ross Phoenix of SeaSaw Designs thinks there is, and set up his luxury bespoke furniture and kitchen company with a dream of bridging this gap, noting the link between economy and ecology as more prevalent than ever in the construction industry.

Living and working in the beautiful Cornish countryside, Ross was inspired to work with wood as a time-honoured, sustainable, natural product with endless applications. Yet, he also sees the effect of global concerns first hand in the oceans he surfs and the land he gardens. While SeaSaw Designs has many practises in place to ensure a reduction of waste and the carbon footprint – such as purchasing most of his raw materials from sawmills in Cornwall

– looking at the bigger picture, most of the oak is sourced from France, ply from Europe and other hardwoods from the USA.

While he welcomes the upturn in demand for high quality bespoke homewares, he notes that the price of timber has soared in the past year due to factors beyond the UK’s control.

“We really must press our government to make good on their plans,” says Ross, “to use the perfect growing conditions on our fair isle and make serious moves on the ground (outside Scotland) to produce more of our own timber, and particularly our own highquality plywood which is the material used in all SeaSaw Designs' cabinets and kitchens.”

Optimistic for the future if this happens, Ross continues; “Our economy could reap the rewards of being a more self-reliant island and the reduction in prices on our shores could also cut the demand for mass produced, poorly made furniture, which is not just good news for the pocket, but also the planet, meaning we could really have our Christmas cake – and eat it too!”

As another recession appears on the horizon, it’s time to dig deep and be bold.

As we head into an uncertain fiscal future, those of us old enough to remember previous economic blips are in the position to be able to offer sage advice to those nervous about spending hard earned money. ‘Buy cheap and pay twice’ is a recognised maxim that probably haunts many of us, ‘you only get what you pay for’ or ‘purchase in haste and repent at leisure’ are two others that come to mind. These statements hold true no matter what the financial backdrop is –a poorly constructed thing will always be poorly constructed. So, although everyone seems to be viewing the next few months as a grim product of Brexit, the pandemic or violent conflict, history tells us that it can’t last forever. That’s why we must optimistically forge ahead, otherwise we could find ourselves wallowing in despond far longer than necessary, and subsequently regretting the lack lustre and timid decisions we’ve made under this canopy when better times have returned.

We’re not suggesting a head long dive into a frivolous spending spree, more of a cautious and considered approach when it comes to buying, one that perhaps we have forgone over the past few years. Times are tough, but that doesn’t mean everything should grind to a halt. In fact, by not spending the situation will only get worse.

This is particularly true when it comes to items in and around the home. Some customers are spending less and less often, and they're buying to keep up their home's structure

and appearance often with cheaper and less durable products. However, this is always a false economy.

As April Watson, company director at Carpet Trader says, “We always have a wide range of products to transform any home or space while bearing permanence in mind.” Home furnishings should be viewed as an investment rather than a purchase. Remember that you’re going to have to literally live with these items on a daily basis, so surely you owe it to yourself to go for the best and longest-lived items you can afford? April continues, “Going forward into the next few months, with the fiscal uncertainty faced by so many, we will continue to adapt as a business and to adopt great new products. As a company, we feel that what you put into your home should bring beauty and a feeling of sanctuary, and that value is not represented by the cost of a thing, but by its contribution.”

Icon Landscaping has just designed and secured the creation of the charitablyfunded staff garden at Royal Cornwall Hospital, Treliske as Scott explains: “We were approached by Carl, the Estates Project Manager. We arranged a site visit and fell in love with the project. We always wanted to approach the hospital to offer something, but this was a dream come true for us. Having had to make some recent trips to the hospital with my wife meant this project was very close to my heart and I wanted to give it my all.”

clients, not a hospital accessed by 1000s of people. In order to get the design just right, our first port of call was to speak to some of the NHS staff that we knew who worked in different departments, asking them what they would like to see in the garden and how it would make them feel to have a space like this. We then spent a considerable amount of time building their responses into the design of the space and drawing out ideas.”

The vision was to create a garden, where staff were able to sit down and relax whilst being both social or socially distanced. “I wanted it to be a garden that you could walk around, taking different routes and seeing something new at every turn, before finding a spot to sit and enjoy the garden,” says Scott. A mixture of materials was employed; clay pavers were used to create the paths which meander throughout the garden; hard standing patios complemented the paths and planting; and corrosion-resistant Corten metal was used create a bright orange background to make the planting, paths and timber sing against the striking planting. As a nod to the hard and often difficult work that NHS staff have to endure, Icon included an area in the design where messages of inspiration and thanks from patients could be inscribed on to decorative metal panels.

The garden, which will be funded through a grant to Royal Cornwall Hospitals Charity from NHS Charities Together, has been designed as place where staff can relax while breathing deeply of restorative Cornish air: “The end result will be an area the staff can enjoy and switch off from their stressful environment, somewhere they look forward to going and spending time. We are both proud and honoured to be able to deliver this for such deserving people,” concludes Scott. As a charity funded project, money continues to be raised to enable more established planting and water features, with donations welcomed from other trades and suppliers.

While the original stained-glass windows were more or less intact, with a few cracks and some perished lead work that needed replacing and cleaning up, the windows and doors were nevertheless draughty and cold. With a wealth of knowledge and experience under their belt, the team made light work of replacing all the windows, not to mention two sets of French doors and a back door as well as 28 stained-glass panels that were restored, resized, cleaned, polished and encapsulated, making for a warm and splendid-looking home.

With bespoke, custom-made designs being another specialty for Specialist Glass Co, there was no problem when Perry called from Padstow, who had an original Victorian door with old standard glass. After consulting with Perry, who wanted Leicester City Football Club emblems on each panel, it was decided (with a little help from his wife) that a Victorian design with the house name would look beautiful, while the team made Perry a suncatcher to hang in his window.

In short, as expected, there’s plenty going on at both Kota and Kota Kai for guests who share Jude’s belief that Christmas should be a foodie affair. But what about Jude himself? What plans does he have for Christmas? “As you might expect, it’s me who usually does the cooking on Christmas Day, however this year I’ll be doing so with my family in New Zealand. It’ll be a huge celebration too as I haven’t had the chance to see them since Covid-19 stopped us from visiting three years ago. My son Joe and I are super excited to see them all, and we’re excited for what will be on the menu there. This year, there’ll be plenty of oysters, mussels, crayfish, abalone, salads, and a Maori traditional dinner called Hangi. Hangi is cooked in an ‘Umu’, which is an earth oven in a pit. Everything is cooked over embers, and then steamed in the earth oven, and whatever is cooked in there becomes super tender and smoky. In it, we’ll be cooking beef, pork, lamb, chicken, potatoes, sweet potato, pumpkin, squash, sweetcorn and stuffing. We’ll also be cooking lots of seafood, but not in the Umu. For example, we’ll have seafood salads, pickled mussels, poached crayfish tails, abalone fritters with garlic mayo and ceviche of snapper. In New Zealand there’s an abundance of seafood, and I cannot wait to taste all of the dishes that I used to eat during my childhood. This is all part of the joy of growing up with such a foodie family, and when Joe and I visit this Christmas, I know that we’ll all be laughing and cooking delicious treats together in the family kitchen.”

Of course, Jude is unable to make it to New Zealand for Christmas every year. “When I can't, I love spending Christmas here in Porthleven with my family and friends. If I’m hosting, I normally prepare a long, six-course dinner that takes a whole day to eat, starting at 1pm and finishing in the evening. Each course is served with plenty of time in-between to make sure our guests don’t pop, and also that there’s plenty of time to open presents.”

“Usually, I start with oysters and bubbles –which is a real treat. Next will be a home-cured salmon dish with a crunchy salad and pickles. Course number three is a soup of something warming, like spiced butternut, or a hot and spicy beef broth. Then comes the turkey –along with all the trimmings! The penultimate dish is a sticky toffee pudding with miso caramel sauce – a dish that’s taken me years of practice and tinkering to get just right – and when that’s all been allowed to settle, I bring out the mince pies, cheese and port.”

As a full-time chef, one who has appeared no fewer than four times on BBC’s Great British Menu, preparing a menu as deliciously diverse as this is second nature for Jude, but he understands that it’s not for everybody, which is why you’ll find Jude’s top Christmas dinner tips on the Cornwall Living blog this month (cornwall-living.co.uk/blog). “For some,” says Jude, “the pressure of cooking Christmas dinner can be quite an arduous and daunting task. I, myself, find that doing a lot of prep before the big day really helps. I also find that the old adage ‘many hands make light work’ is very true, and can actually make cooking a Christmas feast fun. I hope my tips might save people some stress on Christmas day, so that we can all have a great time and enjoy the spirit of this most magical day of the year.”

A taste OF MAGIC

This festive season, the Rodda’s team have created something rather special to enjoy over the Christmas period with the ones you love most.

INGREDIENTS

For the sponge:

1 cup (75ml) strong coffee

300g Madeira cake

100ml coffee liqueur

For the custard: 2 eggs

50g caster sugar

100ml Rodda's double cream 150ml Rodda's whole milk

50g Rodda's Cornish clotted cream

1tsp vanilla bean paste

For the cream:

113g Rodda's clotted cream

25ml Rodda's double cream

50g caster sugar

To finish:

125g dark chocolate

Orange zest, chocolate covered coffee beans, edible gold decorations (optional)

Christmas – a festive wonderland for any foodie, with indulgence and exploration as a theme for many around the much-anticipated Christmas dinner table. This year, the team at Rodda's have something a little bit different in mind to add some extra sparkle to the celebrations, in what reminds us of an edible cocktail in the form of a tantalising trifle, and let's not forget the magic ingredient – Rodda's Cornish clotted cream!

METHOD

1 Cut the Madeira sponge into bite size rectangles and then lay onto a tray.

2 Make your espresso martini by combining the cooled coffee and liqueur in a jug or cocktail shaker and combine.

3 Pour the cocktail over the sponge, keeping a little back for the cream (about 3-4 tablespoons) and leave to soak.

4 To make the custard, crack the eggs into a bowl along with the caster sugar and vanilla bean paste. Whisk thoroughly until combined.

5 Warm the Rodda’s Cornish clotted cream, milk and double cream together in a pan until it reaches a gentle simmer.

6 Once it has reached a gentle simmer, slowly add a little of the warm cream mixture to the beaten eggs and sugar, whilst whisking continuously.

7 Once whisked together, pour the mixture back into the pan and return to a medium heat, stirring until it begins to thicken. Be careful the heat isn’t too high to avoid scrambling.

8 When you have reached the desired thickness, remove from the heat and allow to cool.

9 Next, whip together the Rodda’s Cornish clotted cream, double cream and sugar until it is forming soft peaks. Add a little of the coffee cocktail and gently mix again. Now you can build your trifles! Choose nice individual glasses or a trifle bowl. Begin by laying the soaked sponge on the bottom of the bowl/ glasses, then spread some of the cream mixture followed by custard. Repeat this process until you reach the top.

10 You can dress with grated chocolate, edible gold leaf or chocolate covered coffee beans.

Born from the depths of smuggling folklore comes a spiced rum to warm the cockles of any heart.

It's no secret that Cornwall has a rich history of smugglers and pirates, but it’s the legend of a lesser-known figure in Cornish folklore – the wrecker – that provided the inspiration for Cornwall’s first black spiced rum, Crusty Juggler. Linked closely to the smuggling trade, a wrecker was someone who salvaged goods from sunken ships –taking advantage of a law that permitted the looting of stricken vessels provided that no one on board was alive. The practice of wrecking was so lucrative, that wreckers would deliberately direct ships into the rocks and kill any remaining survivors.

As Crusty Juggler co-founder Tom Hanson explains: “The Crusty Juggler character is based on the legend of an infamous Cornish wrecker who would stand near the shore after dark and lure ships to their doom with lengths of flaming driftwood. We tied this in with a line from one of our favourite movies, Hot Fuzz, and the Crusty Juggler character was born.”

Founded by brothers Tom and Sam Hanson, Crusty Juggler spiced rum is made just outside of St Ives from a blend of imported Caribbean rum, black strap molasses and exotic spices. Not only is it Cornwall’s first

black spiced rum, it’s one of the only rums in the UK to be matured in ex-bourbon whiskey casks.

“We wanted to create a versatile spiced rum that worked well in cocktails but could also be drunk neat,” explains Sam. “Finishing the rum in whiskey barrels helps to mellow out the spices and also adds notes of coconut and toasted oak.”

Although the Crusty Juggler character might have been a villain, in creating the brand Tom and Sam wanted to give something back to the local community –which is why for the sale of every bottle they make a donation to Cornish charity Surfer’s Against Sewage. “The Crusty Juggler brand is rooted in the Cornish coast,” explains Tom. “The ocean is the lifeblood of Cornwall and we think it should be protected at all costs.”

In this beautiful piece, the thin layers of glass are carefully cut to create the background image, then crushed glass (called ‘frit’) is added. Course frit adds extra texture, whilst the powdered frit creates the fluffy look of the clouds. This piece is depicted in its unfired state; it will gradually be heated in a specialist glass kiln to around 800 degrees Celsius, in a process that will take around 12 hours.

For many surgical specialties, winter is a time for reflection on the previous year’s work and more importantly – conference season.

Different professional bodies such as BAPRAS (British Association of Plastic, Reconstructive and Aesthetic Surgeons) and BAAPS (British Association of Aesthetic Plastic Surgeons) hold meetings where plastic and aesthetic surgeons can get together with colleagues from the rest of the UK and abroad, gather insights from guest speakers, view emerging technologies on the trade stands and catch up with mentors and older consultants from training days. Mrs Dunlop, Consultant Plastic Surgeon, says; “I love these meetings and always return to Cornwall feeling invigorated, with a renewed commitment to patient care and satisfaction.”

She found this year’s conference had a focus on patient safety and the small technical details of an operation; “It’s these details that give even more polished results to the classic aesthetic surgeries such as abdominoplasty, breast reduction and breast augmentation. No-one wants to go back to surgery for alterations if they can help it, so this attention to detail is so important.”

When thinking about cosmetic surgery, you should always look for a surgeon working out of a reputable hospital, like Duchy, and make sure they are on the GMC specialist register as a plastic surgeon. Aesthetic surgery is not something that should be rushed into and it’s important that you trust your surgeon and you have a good rapport with them, before you commit to becoming their patient.

Mrs Dunlop stated, “It is becoming more common for an aesthetic patient’s surgical team to include a Clinical Psychologist, so that patients are well supported throughout their experience, ensuring they have realistic expectations and a toolkit of coping strategies to manage their surgical journey. Traditionally, surgical training focused on the technical aspects of our job, but communication skills, including listening, are a big part of the Cosmetic Surgery Certification scheme that many UK surgeons have undertaken in recent years.”

The Jackson Foundation is set to donate 100% of the proceeds from the sale of a beautiful limited-edition print, with the aim of raising £30,000 for the benefit of local groups and various projects. Amongst those who will benefit from this funding, will be the provision of an electric minibus for a local school, free art equipment for St Just area schools, supporting the Nancherrow Centre youth club and helping to support a project that supplies and delivers free hot meals to the elderly in Penwith who find themselves alone on Christmas Day.

The Jackson Foundation was set up by leading contemporary artist Kurt Jackson and his wife Caroline. It provides a multi-award winning carbon negative art space which champions the art and the natural world. The ex-industrial building can be found in St Just and it hosts an annual programme of contemporary exhibitions working in partnership with a variety of environmental and non-profit organisations. It is a space that bridges the gap between public and private art centres and as it free to the public, it makes art accessible to all.

of Jackson’s large-scale, ambitious, visceral plein-air paintings that capture the raw power and natural beauty of the landscape, and is an example of nature in all her guises. As a dedicated environmentalist Jackson takes an holistic approach to his subject and his hugely varied body of work is unconstrained by format or scale. Along with this print, The Jackson Foundation Gallery in St Just also offers affordable and desirable Kurt Jackson related items. Books, prints, cards and jewellery make the perfect gift for any art lover, or gift cards are available if it’s too hard to make a choice from the wide range of artrelated items available.

Kurt Jackson’s current exhibition Helford River runs until February 2023 at The Jackson Foundation Gallery and is an exploration of it creeks and tributaries revealing stunning beauty and incredible biodiversity.
