t's beginning to look a lot like Christmas! As I write, there are only 40 sleeps until the big day, and there is much anticipation and excitement across the Duchy. Lights are being readied for illumination, craft fairs are already in full swing, Christmas trails and grottos are opening up to the excitement of children and adults alike, and a host of amazing Cornish food and drink producers are preparing to supply our Christmas tables with locally sourced festive feasts. We've teamed up with Trewithen Dairy (page 53) and Rodda's (page 57) to bring you some tasty recipes, perfect for the Christmas table and that will bring a smile to everyone's face. We also hear from award-winning chef patron of restaurants Kota and Kota Kai, Jude Kereama, with his top tips for creating the perfect Christmas dinner (from page 54). This issue, Ysy Lees also takes a festive foray into some of our favourite yuletide events; turn to page 17 to really get into the spirit of the season here in Cornwall. From grottos to lantern-lit trails, harbours bedecked with twinkling light displays and halls decked with holly, there is something to get everyone in the spirit of Christmas. If you're looking to spend the holidays in Cornwall, whether that be over Christmas or New Year, then we think there's no finer place to celebrate with family and friends. Over the coming pages we take a look at some luxury stays perfect for a winter retreat. Take Samphire (page 41) for example. Hidden behind the dunes, the sound of the breakers will be the soundtrack to your stay and dog-friendly luxury comes as standard. Or tuck yourself away in the heart of St Ives at St Hilary (page 42), from where you can explore the town's winding streets and its plethora of boutique shops, art galleries and restaurants. As this time of year is the season for gifting, we've been searching out some beautifully bespoke Cornish gifts. Giving big this Christmas After a competitive application process, The Wave Project has been selected to take part in the Big Give’s Christmas Challenge. The Wave Project deliver education programmes, surf therapy and inclusive surf lessons with the aim of improving mental health and wellbeing in children and young people. Record numbers of people are seeking help for their mental health, with 1.4 million referrals to children’s mental health services last year. This is an astonishing 79% increase on pre-pandemic levels in 2019. Since its foundation in 2010, The Wave Project has delivered surf programmes to over 6,000 people to date. An evidence-based intervention, this therapy is recognised by the NHS, local authorities and psychiatric services as an effective tool in improving the wellbeing, outlook, self-esteem and confidence of children and young people.
Big Give is a match funding platform dedicated to making it easy for the public and funders to give to impactful charities. The Wave Project’s participation in the programme means that any donation received via Big Give will be doubled between 28th November and 5th December, and they are aiming high with a £100,000 target. During this time any donation made means double the smiles and double the help. To reach this, and access the match-funding pot, The Wave Project must raise £50,000 through public donations to support many more next year, with the aim of helping over 500 children and young people in Cornwall access the sea in 2024.

Cornish charity Cornwall Hospice Care is challenging you to take part in a fabulous festive fundraiser this Christmas. Be a Soaring Santa on 2nd December and tackle a Zip Wire Safari in the famous red suit. If you fancy something a little bit different to kick start the 2023 festive season, or are looking for a way to help fund your local adult hospice this Christmas, then this is the event for you. It’s taking place at Via Ferrata near Penryn, West Cornwall’s longest zip-wire adventure, and after a course on the training zips with a qualified instructor you will be able to set off around the quarry at a pace that suits you. Channel your inner Santa Claus by soaring through the air on three giant zip wires and scrambling around the quarry. Under the surface with Dive Project Cornwall
Alongside Dive Project Cornwall’s education project, which is available to all secondary schools and can be accessed via its informative website, a base has now been established at Porthkerris in Cornwall, where schools from all over the UK are invited to become familiar with the ocean. This experience opportunity takes the form of a competition which gives 400 teenagers the chance of winning a sixday, life-changing trip to Cornwall to learn to scuba dive. The hope is that the children then go on to be Ocean Influencers, acting positively to engage, inspire and motivate the next generation in a bid to save the planet. The lucky teenagers are put through an immersive ocean-based education programme that they will take out into the world to improve everyone’s understanding of the fragility of the oceans. Head of Diving for Dive Project Cornwall, Darren Sutton
explains further: “We have a superb team here at Porthkerris – many of whom are volunteers – and we’re very fortunate to have a raft of incredible and tirelessly supportive sponsors and partners. he Duchy comes into its own at this time of year, transforming from a coast blanketed in delicate auburn leaves to one bordered with crashing waves, sweeping afternoon sunsets and crisp, biting breezes. In spite of this, at the heart of the colder season’s metamorphosis is warmth; crackling pub fires defrost the toes of heat seekers, flickering candles peek through the drawn curtains of houses and steaming cups of mulled wine wait patiently to be sipped. As festive anticipation builds, journey with us to discover some of the most magical ways to spend your days as we sink deeper into winter and the big day approaches on the frosted horizon. Throw yourself in the festive deep end with a trip to Trevena Cross Nurseries (trevenacross. co.uk), famous for its magical transformation from tropical garden centre to winter wonderland. Pick up a box and fill it with your favourites from traditional twinkling baubles and delicate glass ornaments to contemporary and quirky decorations, accompanied by a large variety of lights, tinsel and gifts. You could easily while away several hours wandering across Fowey Town Quay, Albert Quay and Web Street, delighting in the range of wares for all tastes and budgets, and there is plenty of opportunity to stop in one of Fowey’s fantastic eateries for a well-deserved refuel. Moments before the town band strikes up to begin the Christmas parade, wave hello to Father Christmas as he arrives by tugboat to lead the procession. Finally, experience the switching on of the lights amongst delighted onlookers and become immersed in a world of music and magic where festive cheer exists in abundance. If you prefer Christmas lights without the crowds, take a driving tour of some of Cornwall’s most beautiful spots during the colder season, perhaps stopping for a stroll underneath the moonlight. Travel through Newlyn to take in the view of the arching coast with lights indistinguishable from stars, twinkling in the distance as you make your way to Mousehole (mouseholelights.org. uk), arguably one of the best locations in the Duchy for a dazzling display. Fairy lights hang from bare branches, boats bob in the distance and a mysterious sea creature inhabits the harbour while children delight in the stunning spectacle and run from lapping waves upon the shore. The reflection of illuminated house windows and glimmering paper lanterns glow on the glassy water surface as the excited hubbub and sweet smell of mulled wine from open-door pubs fill the air, pulling you in. For an equally breathtaking view, head to Angarrack where there is a captivating display at every turn. Wander through the streets to spot the twelve days of Christmas, marvel at the seven swans a-swimming on the river and take in the dedicated displays lighting up the local houses. Finally, take a trip to Mevagissey
where the pretty harbour becomes alive with colourful lights and its welcoming pubs and eateries offer a cosy retreat after a walk around its perimeter. While these are just a handful of our favourites, you are bound to find breathtaking illuminations wherever you turn in Cornwall as each community creates its own unique display. Alternatively, escape to Cotehele (nationaltrust.org.uk/visit/cornwall/cotehele), the National Trust-run Tudor house with medieval roots, glorious gardens and an expansive estate where a spectacular 60-foot garland adorns the Great Hall. A tradition since 1956, each year the gardeners at Cotehele build the garland from thousands of flowers grown on the estate. Preparations begin in January when flower seeds are sown in the Cut Flower Garden before being picked in late April and dried over the summer and autumn. After admiring the impressive display, follow the festive lights along the stream to Cotehele Mill, decorated in traditional Victorian style, and take in the sights and smells of the flour mill at Christmas. Wrap up warm to enjoy the performances of choirs and bands just outside the Hall Court before wandering across the frosty estate with a hot chocolate in hand; the Piggery in the farmyard has a selection of flavours and toppings to choose from so you can design your own to keep you toasty. On Saturday 23rd December the estate has its Wassail, an annual procession where visitors are encouraged to arrive at the estate in fancy dress with something noisy in hand and scare away the evil spirits, ensuring a bumper crop the following year. A trip to the Bull Pen Gallery offers a range of unique gifts inspired by Cotehele itself, from Christmas garlands and games to festive tree decorations and luxury Christmas biscuits. Spend the day discovering the festive history that lies within the walls of this grand estate and be part of how it continues to be celebrated today.

f you're thinking about adding a sunroom to your property, you may well be in the market for an orangery as opposed to a conservatory. However, perhaps you’re wondering what the key differences between a conservatory and an orangery actually are? Both of these home extensions promise to bring the outdoors in, flood your space with natural light, and create a seamless connection between your interior and the world outside. But there are subtle yet significant distinctions to consider, ranging from costs to design preferences. Originating from Renaissance Italy to shelter delicate orange and lemon trees during the winter, an orangery is characterized by its glass roof, which typically covers less than 75% of the total roof area, and glass walls that account for less than 50% of the total wall area. An orangery boasts a lantern-shaped roof or a flat roof with a lantern rooflight, complemented by brick pillars in the corners. These structures were traditionally seen as glamorous additions to homes and are particularly suited to a home with a more traditional architectural
style. Often orangeries are designed as a light-filled extension to create an open-plan kitchen/dining area. They tend to add more value to your home, but that shouldn't be the sole factor influencing your decision. t can be difficult to know where to begin as we ease out of the warmth of summer and find ourselves wondering how to warm up the world around us as winter settles over our homes. With a passion for interior design and a keen eye for detail, Owner and Creative Director of Cotton Mills Design House, Helen Grundy-Smith shares with us her top five recommendations for a cosy winter interior.
Layer throws and blankets Throws and blankets are wonderful to wrap up in this winter. Cashmere, wool and fleece are all soft, cosy and inviting materials and add plushness and elegance to sofas and chairs. Fold and store in pretty wicker baskets or chests when not in use over summer months.
darkness creeps in is somewhat of a ritual that I adore, making home feel like a warm, cosy little sanctuary while outside is blustery and cold.
Scatter lamps and candles enthusiastically I am crazy about lamps. Lamps and candles create soft lighting which is incredibly calming and cosy. LED bulbs come in two different tones, the two I use are soft white and warm white. Candles of course add a soft warm glow and using scented candles fill the room with fragrance which lifts the spirits. I use The Cornwall Candle Co. for gorgeous scents as well as Pott Candles for the handy and sustainable refillable options.
Change up bedding for a wintry set Use textured rugs abundantly Hardwood flooring and stone tiles are beautiful but do not lend themselves to a warm and cosy feel. Wool runners, faux sheepskins and woven or chunky loop jute rugs are comfortable and soft underfoot and a decorative detail to any room.
Switching your spring and summer sheets to fabrics such as cotton, flannel or linen means that chilly cool feel you experience as you enter your bed is much less. Nothing is worse than cold toes whilst you’re trying to relax in bed, so a more warming set of sheets will improve your Z’s in no time.

TREWITHEN DAIRY TOPSY-TURVY TIPSY TRIFLES
INGREDIENTS

For the jelly: 350g frozen raspberries 4 tbsp caster sugar 2 leaves gelatine For the trifles: 24 amaretti biscuits 6 tbsp Amaretto 6 canned pear halves, in syrup, drained 36 raspberries 400g canned custard
ade upside down with the jelly on top of the custard, these are a real showstopper and are quick and simple to make. To make it even more decadent, poach your pears in Amaretto or even buy them in Calvados. If making your own custard, make sure it’s thick enough to set, so it can withstand the weight of the jelly on top. Use your favourite fruit for the jelly and filling and ensure you have 300ml of fruit puree and two leaves of gelatine for the jelly.
Leave to cool until just beginning to set but still pourable. 4
For the trifles, crush 3 Amaretti biscuits into the base of 6 wine or water glasses. Pour 1 tbsp of Amaretto into each glass.

Roughly chop the drained pears and divide them evenly between the 6 glasses. Add 6 raspberries to each glass and, using a teaspoon or clean fingers, push the fruit to the sides of the glass so you can see it once you add the custard. Sprinkle 1 crushed Amaretti biscuit into each glass.

Spoon the custard evenly between the 6 glasses, then once the jelly has cooled and is beginning to thicken, pour it over the custard and place the glasses in the fridge.

Chill for at least 1 hour or assemble up to 8 hours ahead and chill until ready to serve.

To serve, spoon a large dollop of clotted cream over the set jelly.
METHOD
200g Trewithen Dairy clotted cream

For the jelly, soak the gelatine leaves in a small bowl of cold water for 5 minutes until soft.

Place the frozen raspberries in a pan with the sugar and cook over a medium heat until defrosted. Bring to the boil while stirring, then remove from the heat.
EXPERIENCE DID YOU KNOW? To make it vegetarian, you can replace the gelatine leaves with agar agar powder or the Amaretto with pear syrup from the can for an alcohol-free version.

Tip the raspberries into a food processor or blender and blitz to a puree, then pass through a sieve to remove the seeds into a heatproof jug. Squeeze any excess liquid out of the gelatine leaves then add to the raspberry puree and stir until dissolved.

With the big day looming as we plan our own Christmas dinners, Jude Kereama shares eight culinary tips to ease us into the main event.
B
y the time Christmas comes around, we all look forward to spending some time with family and friends. Christmas Eve is jammed packed in the restaurants and Porthleven is once again out in force to meet up for a drink and to wish each other a merry Christmas. There is something special about belonging in a village at this time of year, with friends and familiar faces all cheery in anticipation of the big day. It is always handy being a chef when cooking Christmas dinner, and this year looks to be along the lines of cured salmon, oysters, a seafood chowder, the big roast with all the trimmings and a sticky toffee pudding. Cheese is always a must, washed down with some port and red wine, not forgetting the mince pies and plenty of snacking all day. We all know that Christmas dinner is a point in the big day that many of us look forward to, which, unfortunately, puts a lot of pressure on the chef of the day. It seems impossible to get everything done in time and with the turkey taking up most of the space in the oven it can be quite daunting. In light of this, I thought I would share eight of my top tips to help get you ready for the big day.

Make a red-wine chicken gravy a few weeks beforehand, freeze it and add it to the turkey juices on the day. Ask the butcher to take the legs off the turkey and debone them. Marinate the turkey crown (turkey without legs) in a brine overnight. This will make sure when you cook the crown that it will stay moist, and without the legs will also cut down the cooking time. Stuff the legs with forcemeat or stuffing and roll. Cook this the day before and let set. The next day you can slice it and warm in the oven quickly before serving. Rest your turkey for a couple of hours to make sure it is cooked all the way through and beautifully juicy. Cook all your vegetables the day before – steam your carrots and parsnips, boil and fluff up your potatoes ready for roasting, make your cauliflower cheese and stuffing, ready to warm in the oven. Make red cabbage a week before hand and warm on the day, and have your bread-sauce base made a couple of days before. Make your stuffing a couple of days in advance as it will last. I make my sticky toffee and the sauce four weeks in advance and freeze, to then take it out the night before and warm when needed. Try and do a dessert you can prep well in advance. Make a turkey stock with all the bones and make a delicious soup for Boxing Day with all the left-over vegetables. Serve with some turkey, brie, and cranberry toasted sandwiches. Keep it simple.
The festive period between Christmas and New Year in Cornwall is also a very special time. There will be plenty of cliff-top walking and maybe a swim or two. Everyone is still off work and it is just fantastic to be able to spend time with family. It will definitely be a chance to get the cards out and dust off a couple of board games. We also love to pop down to see the Christmas lights in Mousehole which attracts a lot of people every year. A blustery walk to a local pub to catch up with friends is a good way of getting ourselves out of the house before we return to a family movie in front of a roaring fire, another feast, and a glass of red wine. Blissful! Wherever you are in Cornwall, or perhaps further afield, I hope you all have a great Christmas.

INGREDIENTS For the salmon: One side of Salmon fillet deboned and skin on 1 ½ cups Cornish sea salt 1 ½ cups caster sugar Zest of one lime Zest of one lemon
EXPERIENCE
Zest of one orange 100gms chopped dill
METHOD Mix all the cure ingredients together in a bowl. Line a tray big enough to hold the salmon fillet with cling film. Sprinkle half of the cure mix on the tray and lay the salmon fillet skin side down on top. Sprinkle the rest of the cure mix over the salmon and wrap tight with the cling film. Refrigerate overnight. The next day, wash off the cure mix and pat dry. Slice into thin slices and serve with your favourite flavoured mayonnaise, mustard dressing, toast or sliced bread.

CHRISTMAS Once more, the tastemakers at Rodda’s bring us the ultimate Christmas treat, with a festive twist on a recipe made famous here in Cornwall.
JULIET SEAR’S FESTIVE CREAM TEA WITH RODDA’S CORNISH CLOTTED CREAM MAKES 12 – 14 INGREDIENTS For the scones: 350g self-raising flour, plus extra for dusting 1 ½ tsp mixed spice 2 tsp cinnamon 1 tsp ground ginger A pinch of ground cloves

or many of us, the festive period is the perfect excuse for great food, especially with the incredible culinary culture fostered here in the Duchy. This Christmas, professional baker, author and TV personality, Juliet Sear, shares with us her special take on a recipe that lies at the very heart of Cornwall, complete with a touch of indulgence from Rodda’s. So, dig out your apron and have a go at a Cornish cream tea, just made for Christmas.
1 tsp baking powder
METHOD
40g golden caster sugar

90g Rodda’s salted butter, cut into cubes
Line two baking trays with parchment paper and preheat the oven to 180oC fan.

Add the milk and clotted cream to a small saucepan on a gentle heat for about 30 seconds until warm, but not hot. Add the orange juice, then set aside.

Tip the flour into a large bowl with all the spices and baking powder, then mix to distribute all the powders.

Add the cold cubes of butter and rub in with your fingers until the mix looks like fine crumbs. Alternatively, you can blitz the mixture in a food processor. Then stir in the sugar.

Make a well in the dry mix, and add the clotted cream from the saucepan, orange zest, chopped ginger and fruit, combining it quickly with a cutlery knife. It will seem wet at first but don’t worry!
125ml whole milk 75g Rodda’s Cornish clotted cream Orange zest 2 tbsp juice from the zested orange 50g raisins 50g sultanas 40g stem ginger, finely chopped 1 beaten egg, to glaze
To serve: Festive jam of choice Rodda’s Cornish clotted cream or Rodda’s limited-edition brandy clotted cream

Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then knead the dough briefly until it’s a little smoother. Pat or roll the dough gently into a round roughly 2.5cm deep (about an inch).

Use a small round cutter (approximately 5-6 cm) and dip it into some flour. Plunge into the dough, then repeat until you have used up all the space. Bring the scraps lightly together and cut out some more rounds.

Brush the tops of the rounds with beaten egg and bake for around 15 to 18 mins until risen and golden on the top.

Eat just warm or cold on the day of baking and spread them with festive jam first, then top with Rodda’s Cornish clotted cream or Rodda's brandy butter. You can toast them the next day if they are a little hard!
TOP TIP If freezing, freeze once cool. Defrost, then put in a low oven at about 160oC for a few minutes to refresh.

El Camino reaches ten years of celebrating travel through its unique bracelets and necklaces.

l Camino Bracelets are now a decade into producing beautiful, customisable travel jewellery for over 75,000 travel lovers worldwide. In a conversation with Jem Wallis of Escape Swims, we find out just how much we stand to gain from contrast therapy.
E
njoying a sauna alongside a cold swim has been around for thousands of years across multiple cultures throughout the world. The practice is quickly growing in popularity in the UK, and we speak with Escape Swims’ Jem Wallis about the many benefits that accompany this ancient form of therapy.
Tell us about the benefits that can come with combining the sauna with cold-water swimming. As you relax and overcome the cold-water shock that comes with a dip in the sea, your body produces high levels of ‘feel-good’ chemicals that not only make you feel great in the short term, but also have a positive effect on your health in the long term. The heat of the sauna has very similar results, and mixing the two exercises magnifies the effects. This combination is known as contrast therapy, and apart from the amazing long-term health benefits, you’ll feel incredibly relaxed after taking part in it.
Take us through some of the main things to consider when it comes to staying safe whilst taking part. It’s best not to overstay your welcome in the cold. You’ll continue to cool after you get out of the water and the benefits are at their highest when you’ve just overcome the initial cold shock and are feeling relaxed and comfortable. After that, head straight into the sauna and
feel the warmth penetrate through the chill from the water. Pouring some water on the stones to sizzle into steam will pass the heat from the sauna to you more quickly. It’s key not to stay in too long here either, and once your heart rate is up and the heat is beginning to feel like it’s a challenge it’s time to head back into the sea again – this time just for a couple of minutes. Just repeat the process, transferring from hot to cold and back. So long as you don’t overdo it the first time, along with keeping hydrated, you can build up time spent and repetitions from there, gaining the benefits feeling amazing afterwards.

What can you advise to anyone looking to start contrast therapy, but doesn’t know where to start? Firstly, if you’ve got an existing health condition you should talk to your doctor before taking part. You can ask anyone running a sauna for advice and they should be happy to help. If you’d prefer a more structured starting point, you can book into a ‘thermalism’ course with Escape Swims. grey seal pup dubbed ‘Judi Dench’ has managed to meet her namesake on the very same day she was taken in by the Cornish Seal Sanctuary. Dame Judi Dench, one of the country’s most beloved cinematic jewels, was visiting the area in September with her family when she stopped by the sanctuary in Gweek, near Helston. At the time, the charity (which rescues up to 70 seal pups from around Cornwall each winter) also took in a new pup. The threeweek-old pup was admitted to the site’s hospital, after being found dehydrated with several wounds on Millook Haven Beach. “It was like fate,” says the Sanctuary’s Fundraising Manager, Leanne Attwood. “With our actors and actresses naming theme this season, we knew we just had to name her after Judi Dench, who was already on our list of name ideas. Judi was an absolute delight and so gracious about the naming. She was so excited to be able to meet pup Judi and explore behind-the-scenes of our Seal Hospital.”
Today, Judi the pup is well on her way to a successful release back to the wild, but it’s only with your help that the Sanctuary can continue this vital work. On average, it costs the charity £2,000 to rescue, rehabilitate and release a pup, including everything from equipment to vet’s bills and food supplies. Funds from every visit to the Sanctuary go towards this conservation work, ensuring our Cornish grey seal population remains strong and healthy, but if you can’t make it in person, you can donate via sealsanctuary. sealifetrust.com.
