Matthew Clark embarks on UK tour to showcase premium offering Matthew Clark has been making some serious improvements to its portfolio recently, responding to customer demand by focussing on top-end products. And it’s now hitting the road with these new premium wines, beers, ciders and spirits to showcase them to customers around the country.

The series of events – Uncovered – will feature 500 wines, for example, 190 of which are new to the portfolio. New wines include Casa Ferreirinha from the Douro, Bodegas Salentein from Argentina, and cool-climate Elgin wines from South Africa.

When it comes to spirits, Uncovered features a Gin Garden and Rum Shack, two spirits that are a serious focus for the company. Matthew Clark has seen dark rum sales go up by 14% in the last year to February. It has added 25 rums to its portfolio, including Mezan, Ron Zacapa Centenario and Plantation Original Dark.

Whisky is a feature at Uncovered too, with new additions from Ireland and the US, like Redbreast and Eagle Rare, respectively. Scotland’s not forgotten, with the addition of 24 new products.

Craft Beer Industry Degrees Popular With an explosion in growth in the Craft Beer Industry over the last decade, it’s not enough to simply have a passion for brewing and beer when it comes to starting a brewery or working for one as the industry gets more competitive.

‘A lot of breweries started out five or ten years ago with a focus on beer’ said Gregory Dunkling, Director of the University of Vermont’s new online business of Craft Beer Industry certificate programme, which starts in February.

The program costs about $4,400 for the two courses: one on fundamentals of craft beer and second course of students’ choosing focused on digital marketing, sales or business operations.

Craft Beer Industry officials agree there is need for education and knowledge in the industry and different ways to get it, whether through experience, hiring talent or training, which some breweries provide.

Portland State University in Oregon started an online business of craft brewing programme in 2013, with the first class filling up in the first week with around 40 people. It’s become one of the school’s most successful professional certificate programs, drawing people from around the world, said Scott Gallagher, the University’s

Director of Communications.

“We discovered that there’s a huge need for people who wanted to get a certificate. They didn’t necessarily want to go to college or already had a college degree and wanted to open up a brew pub,” Gallagher said. They needed some basic and more advance knowledge, such as in marketing, he said.

Rolec Launches EV GroupManager System Rolec has recently announced the launch of its new EV GroupManager system, which has been designed to provide full management control of private Electric Vehicle (EV) charging networks.

According to Rolec, the EV GroupManager system has been developed to allow the operator to easily manage their entire private EV charging network from a single central computerised location.

Cloud Based System The system operates by issuing nominated EV drivers with their own secure personal RFID card/fob, containing the driver/vehicle ID. The driver then presents their card/fob to the charging point, which authenticates the card/fob and via GPRS, WiFi or Ethernet communicates with the cloud based back office management system, requesting authorisation to initiate the charging cycle.

Upon authorisation from the management cloud, which takes only seconds, charging will commence with the cloud recording the driver/vehicle ID, charging start time, the kWh used and the charging end time. This charging information is always hosted in the cloud and can be accessed at anytime, from anywhere, by the system operator to

compile management reports, benefit in kind data and billing information.

Kieron Alsop, Rolec’s Managing Director, commented: “EV GroupManager has been designed to enable private enterprises to have full control over their own private EV charging network and is ideally suited to almost any corporate location - or for housing developments, fleet management, staff vehicles, etc.”

“The introduction of EV GroupManager eliminates the necessity to engage with the public facing charging networks, which are heavily subscription based and operated via third parties. In effect EV GroupManager gives the operator complete control over their own EV charging network and provides them with the flexibility to accommodate both their own, and their EV drivers’, charging needs.”

The EV GroupManager system is able to manage and control every type of EV charging solution - from 16 amp (3.6kW) through to 32 amp (22kW) SuperFast charging.

Additional Features A number of additional features have been developed to enhance the EV GroupManager system, including: Electricity Load Management The electrical load management feature enables the system to manage the electrical supplies to the EV charging points when the total potential electrical load exceeds the incoming electricity supply.

Multi-Use RFID Cards/Fobs This feature allows a single card/fob multi-use capability - for example access to EV charging points, as well as gate or door security access to parking areas, etc.

Management Integration EV GroupManager is able to seamlessly integrate its EV charging reports into any third party management system.

Tried and Tested Although EV GroupManager is only now being officially launched, it has already been chosen by a number of household names as their preferred EV charging network management system. Some of these organisations include Jaguar Land Rover, Loughborough University, HM Revenues and Customs, Battersea Power Station, Farnborough Airport, the NHS, Fire & Rescue Services, etc.

Restaurants and pubs have avoided a sharp slowdown in consumer spending, which has dropped to its lowest level in two years according to new figures.

Berclaycard, which processes nearly half of all credit and debit card transactions in the UK, said that consumer spending growth slowed to just 1.6% in March, as consumers reined in purchases in nearly all categories.

The business blamed a wet and windy start to the month for discouraging shoppers from updating their wardrobes for spring, as well as putting a brake on spending in garden centres and on travel.

Despite that, spending growth in both pubs and restaurants was up 11.9%, boosted by Easter and Mother’s Day. The only other sector to perform better was cinema spend which climbed by 12.8%, helped by the release of Batman v. Superman and the continuing popularity of Zoolander No. 2 and Deadpool.

Meanwhile, Barclaycard found that only one in three (34%) Brits feel upbeat about the UK economy, fewer than at any time since Barclaycard began collecting this data in Q3 2014.

This may be why nearly one in two (47%) say they have been more cautious with their spending during the past few months, reflected in Barclaycard data which saw non-essential spending grow at 2% in March – the lowest rate in more than two years.

Subdued wage growth is also having an impact on consumers’ outlook. Average real earnings are about 6% below their 2008 level and just one in four (26%) is confident that their personal spending power will rise during the rest of the year.

Urban Cookhouse in Manchester to expand after £500k first-year turnover Urban Cookhouse, the Manhattan-inspired Manchester restaurant and bar, is to expand following a successful year’s turnover of £500,000.

The group, from entrepreneur Tom Coulston, has confirmed it is seeking three new sites to expand its portfolio, which currently comprises just the one 250-capacity, 85-cover, 4,500 sq ft venue on the city’s Princess Street.

Sheffield and Nottingham are top of the list for expansion, Coulston said, as well as other cities in the North West.

The group’s menu serves dishes from brunch to dinner, as well as carry-out and corporate catering, including options such as ‘Urban Legend’ burgers, ‘Freddy’s ribs’, wings, dogs and ‘disco’ fries. The restaurant, which served its 10,000th burger last month, also has a late license until 2am from Thursday to Saturday and serves a range of New York-inspired cocktails.

Coulston – who also runs the catering company Violet Hospitality – said that the group had also made significant changes to the concept since opening, in a bid to widen its appeal to more people, including office workers, students, and revellers from the city’s nearby gay village.

How Sudden 2016 Copyright Law Affects Businesses and Buyers The UK Government has unexpectedly fast-tracked the deadline for shop owners to stop selling replica furniture. The change, however, will not go without consequences.

The Fight Against Legal Reproductions The UK Government announced the repeal of Section 52 of the Copyright, Designs & Patents Act in 2014: the copyright on furniture designs would be extended from 25 to 70 years after a designer’s death. Businesses were given five years to adjust to the change in law, which meant that most of the designs they were selling would then become illegal. By 2020, they should stop selling replicas altogether or else they could face a fine of up to £50,000, and a custodial sentence of up to ten years.

A New Unexpected Deadline: April 2016 While those five years could have been sufficient for most companies to make changes to their business model, the UK Government, under pressure to comply with the new EU copyright laws, unexpectedly fast tracked the deadline to April 2016. Not only does the sudden decision harm businesses and create further job losses, but customers are affected in the long run too.

It’s unlikely that the change in copyright law will increase the sales of originals as very few people will be able to afford these overpriced originals and this doesn’t just affect the everyday consumer, you will also see a lot of the iconic designs fade away from the high street as bars and restaurants will not be able to afford to pay £400 + each for a dining chair.” — Fiaz Iqbal, CEO of Cult Furniture.

The Next Steps: From Stockist to Design Studio While many businesses struggle to find ways to adapt and innovate within the new timeframe (and possibly need to quit), the most logical step for Cult Furniture was to establish itself as a design studio, instead of being a limited stockist.

After learning about the possible law changes in 2014, Fiaz Iqbal put together his own inhouse product design team to create Cult Designs: furniture inspired by iconic designs but with contemporary twists in the brand’s style, to replace their best selling iconic designs.

They are, in a way, punished for not being able to own an iconic chair design, even though the original designs were meant to be affordable. As Ray and Charles Eames were famously quoted: “We want to make the best for the most for the least.”

The road from stockist to design studio, however, hasn’t been an entirely smooth one. Many of the new designs were work in progress and not due to be released until mid-2017. The sudden April 2016 deadline created a lot of pressure and stress in perfecting the new Cult Design range on time. But, with years of market research, the new designs are anything but a gamble. Knowing exactly what customers are looking for in terms of style, Cult Furniture will launch their new furniture line as an alternative to those who will soon have limited access to iconic furniture.

By abiding by the wishes of the furniture giants to hand over the designs that were initially meant to be affordable, functional and beautiful for everyone, we’re losing more than just a legal battle. We’ll be completely out of touch with the visions of those (designers) before us.

Arkady Novikov is a prolific restaurateur with award winning restaurants across the globe. Novikov being his first London venture meets and exceeds expectation from its beautiful interior design to its excellent waitperson service.

Mayfair known for its extravagance is certainly fitting for the Novikov restaurant. On arrival we were greeted by our waitress who made us feel extremely comfortable and kindly showed us to our seats.

To begin we tried the various fresh breads brought to the table along with a glass of white wine to get the evening started.

Quality was to be seen in the taste and texture of the different varieties available.

As we had opted for the Pinot Grigio in which I would highly recommend the “Sancht Valetin” The Calamari Fritti Paprika con salsa tartara was a must and we were pleasantly surprised with the generosity of this portion and also the quality of the starter we had chosen. This was a fantastic combination and perfect for a light bite.

As the evening continued you felt totally relaxed in your surroundings with a lively yet comfortable ambiance. The mains were brought out and again we were over joyed with the incredible Scarlet Mediterranean prawns that we had chosen each full and juicy as well as brilliantly marinated. This again a fantastic choice and not overwhelming if you then wish to continue down at the Novikov bar.

This was only one of two experience at Novikov as they also host an excellent Asian restaurant which has had rave reviews.

This place really does have it all with then the option to go downstairs for a drink after dinner.

The London Wine to Be Best Yet for This year’s London Wine Fair will play host to the largest and most diverse content to date. There will be more than 100 sessions across the three days, spanning: Industry Briefings; Masterclass tastings; the new Pop-Up Tastings; The View Tastings; and Speakers’ Corner as well as specific events taking place on exhibitor stands. This year, for the first time, visitors will be able to sign up to these sessions via the new Bottlebooks booking system, which also allows attendees to search and download details of specific wines and wineries exhibiting. The full content will be available from mid-April.

The Industry Briefings, which will be hosted in The London Room, include the inaugural London Wine Fair Grapevine Debate, chaired by drinks journalist Richard Siddle. Tony Edwards, author of “The good news about booze” and University College London Pharmacologist, Professor David Colquhoun, will debate “Is drinking good for your health?” Chief Executive of The Wine & Spirit Trade Association, Miles Beale, will update the industry on the growth of English Wine; its future and potential impact on the U.K. wine market. And, there will be a taster preview of the International Cool Climate Wine Symposium 2016, which takes place in Brighton from 26th to 28th May. The Masterclass Theatre (A50, West Hall) will showcase regional and producer-led tastings. These include: “Vineyards of Hampshire”, with Sunday Telegraph wine writer, Susy Atkins, presenting a selection of wines illustrating the distinctive style of the county; and “Tejo: Warm Days – Cold Nights – Cool Wines!” presented by wine writer, Dr Jamie Goode and winemaker Martta Reis Simões from Quinta da Alorna, who will explore the diversity of wines from this upcoming Portuguese region.

Joe Wadsack (wine judge, winemaker and broadcaster), will return to host a daily “Challenge Joe’s Nose” session, in which he will blind taste wines submitted by exhibitors.

Over in the new Pop-Up Tastings, renowned Australian winemaker, Larry Cherubino, will present a tutored tasting: “Great Southern at a glance”, which will include the wines from the Great Southern Wine Region, with its five sub-regions of Denmark, Frankland River, Mount Barker, Porongurup and Albany. The variety of soil types and weather conditions results in distinct characteristics in many of the classic grape varieties and Cherubino will explore these diverse flavours in this tasting of six grape varieties. As more speciality coffee shops offer customers advice on seasonal coffees and beans for home experimentation, it’s time to get those coffeetasting skills up to scratch. The show’s Cupping Zone is hosted by Lynsey Harley from Modern Standard Coffee, qualified Q Grader, World Barista Championships Technical Judge, World Brewers Cup Sensory Judge, UK Barista Championships Head Judge and Cup of Excellence Juror.

Like wine tasting, coffee tasting identifies the characteristics of a particular coffee. ‘Cuppings’ are performed to evaluate coffees objectively, scoring them on aroma, flavour, aftertaste, acidity, body, sweetness, cleanliness, uniformity and balance, using a SCAA scoring system. Those scoring 85+ out of 100 are regarded as ‘speciality’ grade, with a distinct pleasant flavour profile and no defects.

Industry pros use cupping to select which coffee they should be buying, and to identify different attributes – useful for roasters when formulating blends. A set procedure is followed: t 8.25g of coarsely ground coffee is measured into a shallow, purpose-designed cup t 150ml of water heated to 92˚C is added, and left for 4 minutes t A spoon is used to break and remove the ‘crust’, providing the first opportunity to sample the coffee’s aroma t After a further 6 minutes, the cupper begins to taste the coffee t Different attributes are evaluated at intervals as the coffee cools. t In State of the Nation, John Richardson discusses the findings of this year’s Caffè Culture Show Cafeconomy research, exploring the state of the market and consumer views of the coffee shop experience. t In How to avoid growing pains, Artisan Coffee School Founder Edwin Harrison explores the role of training in helping your business grow.

State of the nation

– how’s business for the indie coffee sector?

Confident and optimistic with plans to invest and grow. That’s how owners of the UK’s independent coffee shops and cafés felt this time last year when surveyed by the Caffè Culture Show for its Cafeconomy report. A year on, the show revisited indie operators to gauge the state of the market. Here’s what they found.

No sign of slowdown for UK’s independent coffee shops but profit a challenge It’s full steam ahead for the UK’s thriving independent coffee shop sector with owners confident of continued growth.

Three quarters (74%) of independent coffee shops surveyed by the Caffè Culture Show, the leading annual event for the UK café industry, saw like-for-like turnover increase in 2015 compared to 2014, with nearly a third (31.1%) reporting an improvement of 20% or more. Nine in ten (92.3%) expect growth to continue in 2016 vs. 2015, with a quarter (24.7%) confident that their business will perform at least 20% better than in 2015. Almost a quarter (24.6%) reports an average turnover of £200,000+ per outlet in 2015.

Owner ambitions for the next two years are clear and the focus is growth. Three quarters (75.1%) plan to increase their customer numbers, 72% to improve their profit margins and over a third

(36.5%) to open more outlets. Three in ten (31.2%) plan to invest over £10,000 in their business this year, with equipment (64.5%), interior design and furnishings (50.5%), marketing and staff and training (both 45.1%) the top priorities.

Coffee sales have been the biggest growth area for indie coffee shop owners in the last twelve months (50.5%), followed by lunch (41.9%) and breakfast (26.8%). One in three sells over 500 cups of coffee a week with one in eight (12.9%) selling twice that. Latte is by far the bestselling coffee beverage (60.2%) followed

by Flat White (26.2%). Asked to predict the big consumer trends for the coming twelve months, owners overwhelmingly cited rising demand for healthier options like low sugar and ‘Free From’ food and drink products. Advanced coffee preparations like slow water extraction, cold brew and other chilled coffee drinks were also highlighted.

Providing great customer service (29.0%) and the best quality cup of coffee possible (13.9%) matter deeply to café owners, but understandably it’s profitability that matters most (30.1%).

Some are doing better than others in this respect. 37.6% say making a profit was the biggest challenge facing their business when starting out, and more than half (51.6%) say making a healthy profit is still a major challenge now.

Despite their ambitious investment plans

and confident outlook for growth, over a third of owners (35.4%) admit they have no formal business plan in place for the current stage of their business and less than four in ten (37.6%) have a solid weekly or monthly profit and loss reporting system in place. Two thirds (67.7%) have no clear exit strategy for their business.

Caffè Culture Show Event Director Cheryl Carroll says: “These findings paint a positive picture of the UK’s buoyant independent coffee shop sector, with no sign of consumer appetite waning.

Growing demand for healthy food and drink options is a trend we’re definitely seeing reflected at the Caffè Culture Show with an increasing number of low fat, low sugar, gluten and allergen-free ranges on offer.”

Best-selling author, coffee bar consultant and Caffè Culture Show speaker John Richardson says: “Whilst consumer demand for independent coffee shops is undiminished, profitability remains a real challenge for owners. The dream of opening a coffee shop is attractive but the realities of juggling employment law, financial management, operational and training systems, and long working long hours can bite hard. Sadly there are many owners who have an unsustainable business model and our focus, along with the Caffè Culture Show, is to provide advice and support to help independent coffee shops thrive.”

According to Richardson, three essential tips for success are: 1.

Understand the numbers. Know, to the pence, the costings of every item on the menu and exactly how much money is being made on a weekly or monthly basis.

2.

Focus relentlessly on what the customer wants and give it to them. Use this knowledge to drive average sales up at each of the four key time areas - breakfast, morning, lunch and afternoon. Ensure what the customer sees fundamentally changes during each of these phases.

3.

Build systems as quickly and effectively as possible. When something goes wrong, amend the system, then improve processes and training to make sure it doesn’t happen again. Don’t waste energy getting frustrated or blaming employees.

Consumer opinion is important too so the show asked coffee shop regulars to share their views on the market. Their views were clear!

More independents please!

Despite seemingly unstoppable high street domination by the branded coffee chains, it’s independent coffee shops that consumers crave. More than three in five (62.5%) consumers surveyed prefer to get their out-ofhome caffeine fix at an independent coffee shop than from a chain operator (25.5%). Half (50.9%) want to see the number of independent coffee shops increase while only 3.2% want to see the high street chains expand.

The UK’s discerning taste for speciality coffee shows no sign of waning and

expectations are high. The quality of coffee served is the biggest motivating factor in choosing which coffee shop to visit (81.3%) and 82.5% refuse to return if quality is poor. Location (44.9%), great staff (30.9%) and Wience and atmosphere (29.2%) are the next biggest reasons that customers return.

Poor cleanliness and hygiene (48.5%), bad service (44.2%) and long waiting times (37.6%) are the surest ways to put customers off, after serving poor quality coffee.

The Cafeconomy research highlights the extent to which coffee shops are now an integral part of life for many people. Nearly half (48%) of consumers visit coffee shops several times a week, and one in eight (12.4%) visit every day.

With consumers meeting friends and family (51.5%), taking time out to relax (28.1%) and eating meals and snacks (21.2%) there, coffee shops are clearly an extension of – or substitute for – home.

They provide important work spaces too. Nearly one in five (18.3%) consumers use coffee shops to work on laptops and other devices while one in seven (13.8%) hold work meetings there. 17.6% of respondents said wifi access is the most important factor when choosing a coffee shop and over one in ten (11.3%) think coffee shops should provide more power sockets.

One in twelve (8.5%) wouldn’t return to a coffee shop without wifi.

Coffee shop fans calling for expansion by independent operators will be pleased to know that over a third (36.5%) of those surveyed plan to open more outlets in the next two years.

Their sheer number will always make them a convenient coffee stop, but it’s interesting to see how many are trying to replicate the unique experience and customer service that is synonymous with independent operators. The findings clearly show who is winning the popularity stakes with large numbers wanting to see growth in that part of the market. Getting such a clear consumer vote of confidence is hugely encouraging for the independent coffee shop sector, which the Caffè Culture Show celebrates. ” Best-selling author, coffee bar consultant and Caffè Culture Show speaker John Richardson says: “Once again we see that whilst 30 pubs a week are closing, public appetite for coffee shops continues to grow. This research shows that the key opportunity for independents lies in the fact that only 3% of those surveyed want to see further growth from the chains. Too often I find that independents are worried about chains opening nearby, but the simple fact is that a well run independent coffee shop can easily compete with one of ‘the big three’.

What they must do is offer consistently better coffee, food and service, and very often this isn’t the case. Long waiting times are a critical area for many independents to address and this is a clear irritant to consumers. The chains are very good at only selling products that can be delivered in short periods of time.”

“We needed to reduce costs in our reservations department,” she said.

“Up until using SiteMinder’s Channel Manager, we inputted all rates and availability manually into all the third party sites on a weekly basis – sometimes three times a week during peak season.”
