Industry News MERCHANT FINANCIAL CYBER PARTNERSHIP ANNOUNCES NEXT STEPS FOR SECURING THE PAYMENTS SYSTEM

Holiday Inn Darlington Refurbishment Round Two

The Merchant Financial Cyber Partnership announced the next steps for the two industries to continue working together to strengthen the security of the payments system. Launched in February, the Partnership has succeeded in its goal to work collaboratively across the payments system to enhance security in order to protect customers and their data from cyber threats. Strong and productive relationships have been formed across the merchant and financial industries throughout the course of the Partnership’s work and both industries will continue to maintain these relationships.

The second stage of refurbishment at the Holiday Inn Darlington North is now under way with work focusing on the remaining 56 guest rooms, public areas and décor at the Holiday Inn Darlington North due. A project set to complete midDecember 2014.

“This Partnership has been invaluable in ensuring the entire payments system and key stakeholders are working together to combat cyber attacks,” said Sandy Kennedy, Co-Chair of the Partnership and President of the Retail Industry Leaders Association (RILA). “The threat posed by cyber criminals is increasingly sophisticated and is not unique to any one business, institution, industry or government. It is imperative that our two industries continue to learn from each other in this fight and work together in order to maintain the trust of our customers and collaboratively improve overall security.” “Collaboration between our industries and with law enforcement will help protect consumers from cyber criminals,” said Co-Chair of the Partnership and CEO of the Financial Services Roundtable (FSR) Tim Pawlenty. “This Partnership has formed key links between our industries and we are hopeful these relationships will improve the entire payment system.” The Partnership released eight next steps for ongoing collaboration by Partnership participants in key areas including threat information sharing, cyber risk mitigation, advanced card present & card not present security technology and cyber security legislation. One of the major steps is a joint effort between the two industries to urge Congress to pass cyber threat information sharing legislation. Today, the Partnership sent a letter to Congress outlining joint principles for legislation to enhance cyber security across both the merchant and financial industries. Both industries recognize better information sharing between and among industry and government is important in preventing cyber attacks. In the letter, the merchant and financial services communities expressed support for a set of principles for federal legislation that would increase the current level of voluntary cyber security information sharing, while recognizing key privacy concerns.

The Partnership brought together executives from the financial services and merchant industries, government and other stakeholders to work together on key public policy issues impacting the entire payment ecosystem. Since February, the Partnership’s 250 participating senior executives from financial services and merchant companies have met nearly 50 times, heard from over 45 experts and participated in numerous outreach events including the 2014 Merchant-Financial Services Cyber Security Summit on Sept 10, and sought consensus on critical policy issues.

The menu provides a great choice to the diner and caters for all tastes from their take on the Classic Burger to up class dishes, with great speedy service and mouth-watering presentation the food is a must whether it’s part of a stay of an evening bite. Bath & Spa The BLOC hotel chain is a new concept in affordable accommodation, offering a high-end look and luxurious experience at prices that won’t break the bank. Applying a design-ethic which its owner, Colin Graham, describes as ‘pared-down chic’, the very best materials are used but in a way that’s focused on utilising space to the maximum. This approach allows BLOC hotels to be stylish and comfortable, in prime city-centre locations, but at room rates more akin with budget competitors.

Luxury for the masses

BLOC’s latest incarnation in Gatwick airport features bathrooms with fixtures and fittings courtesy of Roca. With products ranging from functional to high-end, and everything in between, the bathroom manufacturer offered the ideal levels of versatility Colin needed to create usable, yet luxurious washrooms. Sanitaryware and furniture was chosen to meet the individual needs of each space – BLOC’s rooms are priced on three levels; basic, executive and luxury. The elegant matching taps are fitted with 7 litres/minute flow limiters, helping to save both energy and water. Colin explained why Armani/Roca was a must for his hotel. “The inclusion of Armani/Roca has enabled me to lift the level of the special rooms, while enjoying the kudos of being associated with a major luxury brand. There are about 10,000 reasonable sized hotels in the UK. And whilst hotel chains tend to create similar looking hostelries, in the main every hotel is different. Visitor registration open for Casual Dining 2015 With exhibition space filling up fast and the free Keynote theatre programme now confirmed, Casual Dining is all set for a successful second edition on the 25-26 February at the Business Design Centre in London. The UK’s first dedicated trade event for the eating and drinking out sector (including hotel restaurants and bars), Casual Dining has enjoyed strong industry support from the outset. Its launch event in 2014 attracted 3,655 industry professionals and went on to win a Best Trade Show award at the Association of Event Organisers’ hotly contested Excellence Awards (the only launch to do so in over five years). ast year, the UK’s interiors buying calendar changed forever: UBM, the world’s leading organiser of interiors trade events, announced that INTERIORS UK was doomed to decline and would close its doors after the 2014 edition.

Following a massive fall in visitors who did not see January as the time or Birmingham as the place, and in response to overwhelming demand from extensive international market research, UBM revealed the industry’s new primary buying opportunity: May Design Series, which would take place in London and form the finale of the European show circuit. A creative team from Amin Taha Architects were given a project to transform the 2,800 sq ft of commercial space comprised over a ground and two upper floors at 18 Phipp Street, into modern and stylish office spaces. After consultations with Building Control, they required a clear coating for a staircase to achieve Surface Spread of Flame Protection. Thanks to participation in one of our CPD’s, they knew that Envirograf® would have a product that would meet their criteria. With the help of Andy Wahts, Envirograf’s representative in London, they chose product QVFR for internal application, which is a clear fire retardant coating, available in satin finish, not requiring any top coat. Works have been carried out by Ecore Construction from London. During Mr Waht’s visit at the property, a solution was found to provide 60 minutes fire protection to the exposed timber ceiling without the need to cover them with 2 layers of plasterboard, (by using Envirograf® HW Intumescent Coating System) which would make it more cost effective and allow Architects to achieve more desirable look. Envirograf® Intumescent Steel Coating has also been used, to ensure the construction of the building would be well supported even in the case of a fire.

It can take just a few minutes for unprotected steelwork in a building to attain temperatures of around 550ºC in a fire. At this temperature, steelwork loses its loadbearing capacity and the structure is likely to collapse, giving little time for people to evacuate and even less time for the fire service to bring the fire under control.

project Infinity Hotel Rome is a beautiful hotel in the heart of central Rome. Located close to the ancient buildings of Via della Vite, this hotel is great place for you to go and explore the city’s top attractions, like the Spanish Steps and Trevi Fountain. Infinity Hotel Rome’s rooms and suites have been designed with great attention in order to satisfy the needs of their guests of peace and tranquillity.

To make this happen, the hotel enlisted the help of furniture supplier UHS Group. They provided all the furniture for this project. Of the highest quality, with hand carved scroll details and a light traditional finish to create an eighteenth century Italian atmosphere.

A high luxury effect was created with the use of the Imperial chairs. This classic fine dining chair was designed with traditional hand carved detail. Manufactured from beech wood, they have also been upholstered with a dark pink fabric to match the colours of the other custom made furniture featured in this project. This includes the bedside and desk tables. All of the furniture displayed in this hotel has been produced according to the designer’s specifications, all carefully handled by the UHS manufacturing team.

One Hotel Bar Manager believes the foundation of a successful hotel bar is atmosphere. ”A good hotel bar should be a place where you can go to relax in warm surroundings, enjoy quality food and drink with great service, all at good value. It is important to offer a variety of food and drinks to keep things interesting, which is why we serve our popular cocktail tasters paired with mini Borough Market-inspired bites.”

One general manager in Scotland emphasises the importance of interior design in helping to make a bar offering stand out. He explains that his hotel’s bar is “so heavily styled and designed, it doesn’t look like a stereotypical hotel bar”. He adds: “And as the hotel has a separate bar and reception, the customer arrives, checks in and can go straight to the bar to plan their route and visit.”

Another Manager of a bar in a country club confirms the same view that “The success of a good hotel bar is primarily about creating a great atmosphere and ensuring that you can cater for the inevitable diverse range of guests you’ll be welcoming. “It’s also important to make sure it stands out for overnight visitors and they get a sense of where they are, which is why we ensure that not only do we have an extensive drinks selection but we also offer ranges of local produce. We provide Durham gin and vodka along with beers created in the North East, such as those from Camerons and Castle Eden brewery. We find this is all really appreciated by regulars and hotel guests.”

It’s important to encourage a family friendly environment within the hotel. This can be achieved with a good selection of soft drinks and snacks, children’s menu, child-friendly facilities and games to keep children entertained while parents and grandparents can relax.”

Keeping up with the latest bar trends is also essential. One Manager observes: “People’s tastes are more refined when it comes to drinks, and we have found that customers are more willing to spend time and money if quality drinks and excellent service are on offer. Cocktails have also become king and we’ve responded to this. We believe that one of the latest trends for hotel bars is to offer a versatile menu combining both cocktails and food, such as our mini cocktail taster menu.”

One expert believes creating public awareness is essential. “Hoteliers can encourage custom from non-guests as well as guests by effectively using PR and social media, keeping your target audience in the loop. Social media and ensuring a constant connection with our customers is paramount to building a presence and ensuring we are in the hearts and minds of our existing and potential customers. We work hard to keep our content relevant and issued in a timely fashion to keep our customers interested in our offering and what we have to say.”

Another Manager in the field has also seen a real growth in the number of cocktails sold in the bar, as well as demand for named spirits. He comments: “People no longer just ask for a gin and tonic – they want a specific gin and it’s because people are better educated about spirits, I think. Along with a wider range of spirits, craft beers are leading the way. He says: “An influx of micro-breweries have facilitated this growth in recent years. Schooner measures allow customers to sample a range of different draft products which can, in turn, be paired with different items on the menu.” One thing’s for sure: hoteliers can’t afford to underestimate their bar clientele. There’s definitely a lot more knowledge out there and hotels need to ensure they have a big enough range on offer for these discerning customers, who are definitely growing in numbers.”

Jamie Oliver and Malmaison hauled up over unpaid Aberdeen fees Celebrity Chef Jamie Oliver’s restaurant and luxury hotel Malmaison are among 42 businesses in Aberdeen facing a hearing over late or unpaid licensing fees. Councillors have requested that representatives of all of the businesses – which include bars, restaurants, hotels and shops – appear on December 10 to explain why the annual payments have not been made on time.

It is understood that 11 of the 42 premises named also failed to pay on time last year. Members of the licensing board agreed on Thursday to call the companies to account, but a full list was not made public until yesterday. Letters had been sent out advising that fees had to be paid by October 1.

In the case of non payment, the board has a list of options to consider including a warning, suspension or, in the most serious cases, revoking of a premises licence. Under the Licensing (Scotland) Act 2005, anyone selling alcohol must pay an annual fee, calculated on the rateable value of the business. Aberdeen solicitor Tony Dawson said unpaid fees caused a lot of unnecessary work for local licensing boards. He said: “Every year, there are many licensed premises which don’t pay in time. “This costs the licensing board a great deal of extra administration work and nowadays a lot of the boards are off the same view which is, if people have been reminded to pay and they haven’t, they will

be called before the board to explain themselves. “The procedure is perfectly fair and reasonable. “It usually turns out that the vast majority of the license holders pay up. “In the past there have been a couple of good reasons put forward like someone being abroad, but in general it is just an oversight.” Other venues named on the list include the Malt Mill bar on Holburn Street, Viva Brazil restaurant at Golden Square, the Hilton Treetops on Springfield Road and the Marriott at Overton Circle in Dyce.

Planning a Bar the Servaclean Way

he team at ServaClean are masters at making the most of behind-the-bar space in both fixed and mobile bars. Here are some of the main points from their bar planning checklist.

Glasswashing

Consider whether glasses will be washed in the bar counter or somewhere else. Will you use a cabinet machine or a twin bowl sink for a manual wash & rinse method. Glasswashing needs more than just the machine: you require a sink for ‘slops’, somewhere to set down and somewhere else to drain glasses. You may need a secondary glasswash in case your machine breaks down – a second machine or a twin bowl sink. Also, handwashing is essential to meet health and safety requirements so you must have soap and hand-drying facilities accessible close by.

Glass storage and Serving Ensure that you have enough glasses to serve all your customers at your busiest trading time – the times you make most of your profit ! Choose the best method of glass storage (either on shelves or in glasswasher baskets) to suit your particular operation. Remember that correct storage is just as important as efficient washing if you want to serve a clean glass every time.

Cash Tills How many cash points will you need, and will they be in the counter or on the backfitting? Make sure you take into account the operating height of key pad and cash drawer – can you adjust the height if the till type is changed later? Also consider a receipt printer, card swipe machine and cash float security.

Bottle Cooling and Display Make sure you balance bottle storage capacity with other products on tap. There’s a huge selection of chiller cabinets to choose from – left or right hinged door, sliding door, seethrough, pass-through, etc – so choose what’s best for your operation. Position power points to be easily accessible for service without moving cabinets.

Coffee and Tea Choose a coffee machine carefully and position it for best effect in customer’s view and for convenience of serving. A water treatment unit is normally required, plus fridge space for milk or cream, a coffee grinder and grounds knock-out drawer for espresso machines and a water boiler plus tea pot storage for volume tea sales. You’ll also need a work surface with storage for sugar packs, crockery, cutlery, etc.

Draught Beers & Soft Drinks Position these to face customers approaching the bar and choose dispensers which provide convenient operating heights. Avoid obstructing under-bar work space with dispenser clamps and drip trays and allow space to serve drinks between or around dispenser positions. Remember that good ventilation is essential for beer line cooling whether in a cellar or under the counter.

Counter Design Your counter height must suit the style of operation and undercounter equipment to be accommodated. Location of mains services and beer line connections is very important, as is access to under-bar service ducts from the server’s side of bar to facilitate emergency maintenance without disturbing customers on the other side.

Empties Disposal Do you use disposable or returnable bottles or both? And how will you separate them? When considering the position of your bottle skips or crates remember to make sure the contents are not in the customer’s view.

Drinks Mixing & Cocktails You will require insulated and hygienic storage for ice and fruit slices, conveniently located mixer and liquor bottles, rinsing facilities for shakers and blender cups, counter storage for condiments and accessories and, perhaps, controlled storage for reserve liquors and spirits. Ice is probably your most profitable drink so choose a machine large enough – remembering that it needs water supply and drainage facility and try to locate it away from the servery. Some ice machines are noisy and they all emit a lot of warm air.

Don’t Let Bag Thieves Spoil Your Christmas AS THE festive season gets into full swing, and people get ready to go out and enjoy themselves, it’s important to keep a closer eye on personal belongings. Bag theft traditionally increases on the run up to Christmas, so many bars, hotels, restaurants, pubs and cafes across the UK are offering customers a clever and inexpensive solution to the problem. Venues such as The London Bridge Hotel and Sheraton Park Tower Hotel as well as chains such as Park Plaza and Intercontinental are using the Chelsea Clip in bar and dining areas where they can be fitted inconspicuously under tables to guard against bag snatchers. The Chelsea Clip is a unique deterrent, which has a proven track record of preventing opportunist bag theft from public places. Virtually any public place offers rich pickings for bag thieves with research from retailer John Lewis showing that a woman’s handbag could contain over £1,000 worth of valuable goods including cash, beauty products, an iPad mini, an iPod and a mobile phone. Luxury department store Harrods uses the Chelsea Clip to deter handbag theft and has placed them under tables in their bar and dining areas. The Clips are also being used to protect customers at the Charlotte Street Hotel in Fitzrovia, London.
