News Hotel website for the ‘philanderer’ secures £11m funding A French website that offers hotel rooms by the hour during the day – and which is rapidly gaining ground in the UK – yesterday secured a €15m (£11m) investment deal to boost its expansion objectives. Dayuse.com has gone from strength to strength since it was founded five years ago, targeting business people needing a room to work in and travellers with time to kill between flights. It is also reportedly a hit with ‘philanders’ requiring a hotel room for discreet afternoon encounters. Dayuse.com claims it has been able to challenge the traditional hospitality business without threatening its sustainability by allowing hotels to monetise empty rooms during the day at lowered rates. 70% of hotel rooms are unoccupied during the day, it says. With over 320,000 rooms rented in 14 countries since inception, the online booking platform has proven attractive for both consumers and hospitality professionals. “This financing round is a key step for Dayuse.com,” said David Lebée, CEO of Dayuse.com. “This hyper-growth phase is part of a sustainable development project that includes the recruitment of new talents and the conquest of new territories. We aim at institutionalising Daysuse.com on an international level with the support of our partners.” Dayuse.com will use the investment to recruit new staff, strengthen its business in countries where it already operates and expand the offer in Singapore, Hong Kong, Dubai, Australia, and Argentina. The financing was completed as part of a deal involving Partech Ventures and IDinvest Partners.

Expansion at iconic Buxton boutique hotel given green light Permission has been granted by planning chiefs for an additional 13 bedrooms at Buxton’s Palace Hotel.

Privately-owned UK chain Britannia Hotels bought the 122-bedroom, Grade II-listed property in the town in mid-2015. It was put up for sale by The Hotel Collection in November, 2014, with a £7m price tag. In June, Alex Langsam, managing director of Britannia Hotels, expressed his delight at the purchase of the Palace Hotel. “We look forward to lavishing time and attention on the Palace Hotel to restore it to its true former glory,” Langsam said. “I am proud of Britannia’s track record in sympathetically restoring heritage properties across the UK and providing hospitality to our guests.” The Palace Hotel was built in the 1860s and has since been an iconic feature of Buxton over the years.

St James’ Court Hotel Relaxation in the heart of the city

W

estminster is known for many historic landmarks, one notably is the home to the Queen of the United Kingdom. Another breath taking architectural structure is the St James’ Court hotel located far enough away from the crowds but close enough to the excitement London has to offer. On Arrival you will be greeted by the extremely welcoming staff, the first thing you will notice is the extravagant interior design of the building. With a real sense of diversity you can detect a modern and cultural feel to the hotel. The St James’ court hotel opened its doors in 1902, the spacious feel to the building really resonates with the design of time in which it was constructed. As you make your way up the elevator you sense that every aspect of this hotel is true to the photographs seen online. A very high attention to detail has been paid throughout the entire hotel. All staff members on your way are very helpful and at hand if you require any assistance.

Hotelier & Hospitality Design

The Executive suite was tremendously easy on the eye from the modern wash room en suite to the lounge area and generously sized bedroom. This I must say is one the largest rooms I have seen in the capital of London.

12

After a chance to relax and take a moment out of the fast paced London lifestyle, a gentle nap was in order before preparing myself for a night of dining at the Bistro attached to the hotel. On offer was a fantastically infused Indian & European cuisine the Sea bass fillet was a divine option which I highly recommend. When I awoke the next morning after a great evenings sleep, I headed down for breakfast and was delighted by the quality of what was available. This made for a very enjoyable visit from start to finish. If you are looking for a sophisticated stay in the heart of England’s capital I would encourage you to visit St James’ Court hotel 4 Buckingham Gate, London SW1E for either pleasure or business purposes.

Taj Hotels Resorts and Palaces, London

launches new Around The World in 80 Tastes Dine-Around experience Inspired by Jules Verne’s classic account of intrepid traveller and English explorer Phileas Fogg’s journey from London, through India, circumnavigating the late Victorian world in 80 days - Taj Hotels Resorts and Palaces, London have curated a progressive dining experience - ‘Around The World in 80 Tastes’, showcasing the diversity of gastronomic influences across four of the Taj’s restaurants on Buckingham Gate, less than a mile across St. James’ Park from where Fogg culminated his journey. This unique culinary journey commences, as all adventures should, with a champagne flight of Laurent-Perrier’s finest, and paired canapés, by the cherub-adorned fountain in the Victorian St. James’ Courtyard, an idyllic outdoor dining space surrounded by the world’s longest Shakespeare’s sylvan frieze. Culinary travellers are then whisked off for an exemplary trio of starters at Bistro at St. James’ Court, A Taj Hotel. The menu at Bistro celebrates the diversity of cosmopolitan London, featuring signature dishes, under the stewardship of the hotel’s Executive Chef David Tilly. The gastronomic journey continues to the South West coast of India at Michelin-starred Quilon. Here, culinary explorers will indulge in the signature Quilon Fish Curry and the Fisherman’s catch with Malabar paratha. Whilst seafood is at the heart of this establishment, Quilon is also heralded for Executive Chef Sriram Aylur’s interpretation of ethnic and progressive game, poultry and vegetarian cuisine reflecting a real understanding of the cultural and ethnic diversity of the region accompanied by award-winning wine and beer lists. Kona at the luxury 5-star Taj 51 Buckingham Gate Suites and Residences, marks the fourth and final stopover of this adventure and the latest feather in Taj’s illustrious

culinary cap. Flemings Mayfair Hotel The Jewel In The Crown

When only the most indulgent of weekends will do, where best in London to stay than Mayfair? Surrounded by the shopping meccas such as Burlington Arcade, Bond Street & Harrods, indulgent restaurants, luxurious Spas and the glittering lights of the big name hotels of the UK.

Hotelier & Hospitality Design

However, just a few hundred yards from Green Park, yet already away from the noise, lies a treasure of Mayfair. In a 150 year old building, with 129 luxurious rooms, is Fleming’s Mayfair Hotel.

16

Upon walking into the venue you are greeted by a large foyer, draped in class and met with the fantastic staff that elevate the hotel to an unrivalled level. To have such a personal service at the all too often snobbish 5 star rating is a very welcome breath of fresh air. One can feel intimidated at times in such venues but Fleming’s have a concept of speaking to each and every guest with a friendly, extremely polite and knowledgeable manner which makes you feel welcome, relaxed and confident in asking any questions you may have. With the rooms ranging from a classic single for the lone guest to a 7 bedroom townhouse, everyone can be accommodated and all budgets suited. The rooms are

designed to a very high standard, with light tones underlying the strong, bold colours and beautiful material chosen for the furnishings. Technology leads the way with choice of large screens in the bigger rooms plus a Tivoli radio with Bluetooth functionality, playing songs direct from your iPhone. Over 60 channels are available on the TV’s plus a huge array of movies, to pass the night or afternoon away.

Fleming’s are currently undergoing a makeover, this will include an update to the restaurant situated in the bottom floor. The new Executive Chef will be Michelin starred Shaun Rankin, who began his career around the corner at The Mayfair Hotel and gained notoriety in his Jersey restaurant Ormer, returning to the area to bring a whole new menu.

Secondly, our room had a garden. Yes, a garden. In Mayfair, in a hotel, I had the option to take the gin and tonic, with a hint of cucumber, out into my very own oasis, with rattan furniture and green trees. I can’t stress how magical a summers evening would be, relaxing with your drink and company, under the stars of Mayfair.

Overall, there is simply no faults with Fleming’s Mayfair, in every single section they have surpassed all expectations and are setting heights for their competition. We would not hesitate in recommending them as the number one place to stay in London, let alone Mayfair.

Hotelier & Hospitality Design

All of the above is a standard trait in the higher level of hotel but there are two stand out points for Flemings. Firstly, we had a complimentary gin bar, which are a feature in their Studio Suites. A delightful, wooden drinks cabinet, dropped down to reveal some of the top names in the gin world, Sipsmith, Hendricks and Monkey 47 to name a few, along with crystal tumblers, a cocktail shaker, mixers and an ice bucket. The gin bar is provided on an honesty basis and you are even provided with a cocktail recipe book from the creators, Joel Harris and Neil Ridley, to give you some inspiration.

I would strongly suggest that before you think of leaving the Hotel that you make sure that Afternoon Tea is taken in the Drawing Room. With the look of an Alice in Wonderland scene, tall, aqua seating, flamboyant marble fireplace and large panoramas of 18th century India, you settle in and enjoy a vast range of teas from the East India Company that include the Flemings own blend. Sandwiches, cakes and scones aplenty with the option of more to boot. Again the staff couldn’t be more helpful and engaging. It’s such a pleasure to have enjoyed the tea without having to feel too formal, being free to relax and take your time with a good conversation and great food and drink.

Be Ed From 9-11 February, Light School will be hosted within Surface Design Show 2016 at the Business Design Centre in London. Surface Design Show has been running for over 10 years and is the only event in the UK that focuses solely on interior and exterior surfaces, connecting innovative and exciting materials with a specifying audience of architects and designers. Light and Surface are inseparable partners – Light School attendees leave the show having learnt more about lighting trends and how light can affect the appearance of a surface. Now in its third year Light School, presented by Light Collective and supported by the Institution of Lighting Professionals, has established itself as the destination to explore and learn about the relationship between light and surfaces. Light School consists of three parts: The School Room, Product School and the School Newspaper all of which are designed to inspire visitors about the latest in lighting design and lighting products.

Hotelier & Hospitality Design

The School Room

20

The School Room will have more than 2 days of lessons from leading members of the lighting design community. Many of the ‘teachers’ will be returning for the second or third year along with new teachers allowing for more presentations in 2016. Inspirational speakers confirmed for 2016 include Sally Story of Lighting Design International and John Cullen Lighting, Rebecca Weir, Creative Director of Light IQ, David Atkinson of David Atkinson Lighting Design and Mark Ridler of BDP. The Schoolroom is sponsored by iGuzzini and welcomes mondo*arc as its media partner. The feature is always a huge hit, attracting over 400 architects and designers – leading to standing room only. Sally Storey said of her 2015 lecture: “Every seat was full, people standing outside the door – great turnout! Interesting questions showing the audience benefited and were engaged”.

Product School Product School provides architects and designers with a comprehensive review of lighting innovation and interesting technology. This is where architects and designers can come to touch, compare and learn about products and services. Product School is made up of contributions from the Friends of Light School. As well as supporting the education programme, the Friends of Light School will be setting up their own demo spaces in this dedicated section of the show to ensure that everyone can experience the unique and ground breaking differences that their lighting products can bring to your projects. Confirmed Friends of Light School include the Institution of Lighting Professionals, IGuzzini, Xicato, Applelec, Optelma, Trilux, Concord, LED Linear and Spectral. Spectral has teamed up with Ravensbourne College of Design creating a new lighting module. Students, as part of their course, will be asked to design a luminaire for the manufacturer. The aim is to work with young designers to produce a new free thinking lighting product concept using latest LED technology. The top three designs will be showcased on the Spectral Surface Design Show stand with the winning design becoming the centerpiece.

School Newspaper The School Newspaper sponsored by Xicato is a free newspaper sent out to around 70,000 architects, designers and specifiers as well as being given to every attendee of Light School. It contains articles on lighting design to help ‘students’ remember what they have learnt in the School Room and from the Friends of Light School. There is also contact information for the School Room ‘teachers’. Light School is very proud of its School Motto: Inspired by Light. The ambition is for ‘students’ to leave Light School full of inspiration and ideas of how to use light within spaces and buildings. The educational journey begins here. Swab tests carried out found that more than one in three (35%) bags harboured coliform bacteria on the handle. These bacteria are typical indicators of poor hygiene and, outside the body are predominantly found in faecal matter. Any presence of coliform bacteria carries a significant threat of illness and cross contamination, yet the dirtiest bag within the test contained seven times the acceptable level of coliform counts. Bags made of leather were found to hold more bacteria than those made of canvas or nylon - the spongy surface texture of leather providing the perfect conditions for bacteria to live and grow. With bags designed to be carried and handled by their owners, and research estimating that 80% of all infections are transmitted by hands, thorough washing and hygiene practices are crucial in combatting the spread of bacteria. This is especially true in busy gym environments, which typically have high footfall, multiple touch-points and warm conditions.

Hotelier & Hospitality Design

Interestingly, tests also revealed that bags belonging to females were just as likely to have high levels of bacteria as those belonging to males (64% vs. 61% respectively).

22

Dr Peter Barratt, technical manager, Initial Washroom Hygiene, said: “Gym bags are portable - we take them with us into our homes, places of work, in our cars, and on public transport. If they become contaminated, their potential for accumulating and transferring bacteria and virus particles is significant. Our study demonstrates how relevant the provision of easily accessible hand washing facilities and hand sanitisers is in gyms, to help prevent cross contamination between members. It’s also down to individuals to take responsibility for their own hand hygiene by following correct handwashing guidelines: between 20 and 30 seconds is the recommended time for thorough hand washing. This is one of the tips we give school children because if we can make hand washing and sanitising a habit at an early age, we’ll all be a little better off. As well as keeping yourself fit in the gym, it’s important to remember to stay healthy at the same time.” *‘High levels’ are defined as any sample containing an ATP (adenosine triphosphate) reading of 500 Relative Light Units or above using the Hygiena SystemSure process on either the handle or inside of the bag.

You’ll be able to network with suppliers, expert industry advisers and 5,000 like-minded visitors at what is the UK’s only national event for the café industry.

Returning on a much bigger scale, the village champions independent home-grown roasters from across the UK. Here you’ll see some of the best roasters in the country demonstrating the fruits of their roasting talent and serving delicious coffee throughout the show. For operators looking to improve their coffee offer, there is simply no other place like the Caffè Culture Show. Over 220 suppliers are on hand to discuss and demonstrate the very latest coffee, food, drink and equipment innovations, and you’ll find everything you need under one roof. Also back for Caffè Culture 2016 is the fantastic Artisan Food Market. Recognising that many independent café operators want to support small, local food and drink producers, this vibrant feature of the show is a celebration of craft enterprise laid out in a farmers’ market style. From baked goods to craft beers, healthy snacks to indulgent treats, visitors will enjoy an array of scrumptious samples as they meet the award-winning independent producers behind them.

Caffè Culture Show Event Director Cheryl Carroll says: “In 2015, we celebrated Caffè Culture’s tenth anniversary with a bigger show, new halls and a fresh new look and feel that put coffee right at the heart of things. We achieved our vision of giving the show renewed energy and were thrilled with the positive reaction we got from visitors and exhibitors alike. The 2016 show is set to be even better and we can’t wait to announce more details about the show’s exciting new features in coming months.” The Caffè Culture Show 2016 takes place at London’s Olympia on 10-11 May 2016. The awards are a hard-fought contest and have proved to be a launch pad for success for many exhibitors at previous year’s shows.

To keep things fresh, the organisers of Caffè Culture 2016 are delighted to announce an exciting range of new show features too. The popular Business Theatre programme is expanding into two theatres this year, each providing tailored and relevant seminars, advice sessions and workshops for coffee businesses at different stages of their growth. A new masterclass programme will offer interactive demonstrations on how to create signature drinks as well as blind tasting sessions. There will also be a new cupping area for visitors to hone their coffee-tasting skills. Research by the Caffè Culture Show in 2015 revealed that nearly six in ten (59.2%) owners of independent coffee shops and cafés saw business performance improve in recent years. What to cook for Valentine’s Day Tips from Michelin Star Chef Steve Smith

You’ve got the outfit and the gift sorted, but on one of the busiest nights of the year in the restaurant calendar it can often be difficult to get a table for two. Why not treat your loved one to an intimate home cooked meal this Valentine’s Day? Stuck on what to cook? Don’t worry as Head Chef of Michelin starred Bohemia restaurant, Steve Smith, shares his tips on arranging the perfect Valentine’s dinner date.

• Drink pink At Bohemia Bar we serve a variety of Lanique based cocktails. It’s the perfect drink for Valentine’s due to its pink colour and rich and floral taste as it’s made from a secret recipe that uses Attar of Rose! Try a signature serve of Lanique over crushed ice with fresh lime juice, or add it to Champagne or Prosecco for a twist to your fizz. • Create ambience We like to create a sense of occasion at Bohemia so have low-hanging pendant lights suspended over the dining tables, perfectly illuminating our exquisite plates of food. Create ambience with dim lighting,

background music playing and using your best cutlery!

Remember - presentation is always important.

• Don’t forget the nibbles Plan ahead and don’t forget appetisers to begin the evening. You don’t want to make yourselves too full, but it’s always nice to have a few nibbles on offer.

• Indulge in chocolate For Valentine’s, chocolate is a must on a menu as it makes the perfect elegant dinner dessert, especially when served with dessert wine. Simply go with a nice box of chocolates or try your hand at making chocolate mousse or a Black Forest gateau.

• Aphrodisiac dishes Try to include aphrodisiac dishes such as oysters which are very popular on Valentine’s menus and they pair really well with Champagne. February is the perfect time to serve oysters. • Sweet and savoury Lobsters and chocolate are two items which are instantly thought of when it comes to a Valentine’s dinner so why not try combining the two? At Bohemia we serve Butter Poached Lobster, Cauliflower and White Chocolate, with Sorrel & Caviar. • Don’t stress After a fancy starter try to keep the main course simple but also impressive. Go for pan-fried fish or steak served with a colourful side dish.

Bohemia is the only restaurant in the Channel Islands to be listed in The Sunday Times Top 100 Restaurants and is ranked at number 49. Bohemia also recently received the highest score in the Channel Islands in the Good Food Guide 2016 with a glowing score of 7, its highest score yet, and was listed as the best restaurant in Jersey in the guide’s ‘Top 50 Restaurants in the UK’. Speaking about the exclusive Valentine’s pop-up, Charley Taylor Smith, head of hospitality events and commercial business development at The Deck, says, “We created our first pop-up restaurant for Valentine’s Day last year and it was a huge success, with couples commenting on how the stunning views really added to the romantic atmosphere. EPOS Feature

What is EPoS? What EPoS is will depend on who you talk to. EPoS (Electroinc Point of Sale) was the next level of progression from ECR’s (Electronic Cash Registers). Lots of clients within a range of industries still use their EPoS till system in the same way as they would an ECR but most EPoS systems can do so much more. Depending on the supplier of software and the level clients want to take loading their stock and products in to the system it can become a very powerful business tool. EPoS systems with the hospitality market can deal with on-line orders, deal with multiple methods of payment, process orders from a range of input methods and deliver business owners detailed reports and business critical information at the touch of a button.

EPoS SYSTEMS for Hospitality Pubs, Restaurants & Hotels

36

Emperium EPoS sells a world class, industry specific software across 21 different countries, and by working with other industry partners and its subsidiary EPoS Direct it can supply a range of hardware solutions to support the varied demands of its clients. Emperium Software recognise that different business’s need different solutions. From its internal software dashboard it can tailor the functions of the software to meet the needs of its client and adapt as the clients business

model evolves and develops over time. The Hospitality software has evolved and moved forward with the industry and allows for a customers business to change and develop. Many pubs now offer a food or tab service, rather than just drinks served over the bar. For this reason they need to be able to track table orders, merge tables, and change table plans to accommodate different client events. The Emperium Epos software can deal with this. Tracking staff working hours is important as well. Traditionally this has been done with clocking in machines, this can all be done through touch screen tills, either by log in codes and passwords or ‘biometric scanning’ (finger print recognition). Restaurants may offer a table service so will need functionality to support this like the pubs, but many are now offering a take away service as well. By altering the configuration of the software setup the software can be programmed to give the very different requirements of the service through the same terminal. Hotels, particularly large hotels need additional functionality, and although Emperium Software is used in a number of smaller hotels, the demands of larger hotels are not catered for at its current level of development. This may change in the future. Emperium pride its self on providing and solid solution for its core business, which is restaurants, pubs, take away food establishments and businesses who have any combination of those three.

The Future of EPoS For Emperium EPoS, development is an ever evolving task. Over our 16 year history new functions are always being included. For the take away industry our route planning and mapping for deliveries was seen as cutting edge 1 year ago. Looking to the future integration with other systems; multichannel systems are moving fast with clients and consumers wanting enhanced shopping facilities, so orders can be tracked through websites, text messaging and email. Payment systems are changing with new forms of payment systems coming through. Emperium programmers will remain at the fore front of development and continue to work with its client to ensure what we are developing is in-line with the industries requirements and customer’s needs. As a software company that works only with Windows as an operating system, we will continue to work on this platform so that the operating system is stable and supported ensuring the EPoS is reliable and will be as integrated and compatible with other systems that business’s use on a day to day basis, this is not just the Microsoft Office Suite, but Sage & SAP.
