The T-Bespoke Multi Layer has been produced to provide a super low profile intercom. At just 26mm deep, this surface mount panel will fit into any environment. The downward facing microphone stops any possible water ingress which can occur with front facing microphones and the internal I/O board can be mounted externally offering safe side security. Simply insert a SIM card; think of the Telguard as a computerised telephone. Your home or mobile phone number is then added to the auto dial memory, just like adding a number to your own mobile. When a visitor presses the number of your property on the intercom a call is made to your phone. When you answer the call you can speak to your visitor and let them in by pressing ‘#’ on your phone. Simple! If you are out the unit can divert the call to a mobile or your work phone so that you are still able to communicate with your visitor and let them in if you wish; it could be an important delivery!
Hotelier & Hospitality Design
The call can be diverted to your mobile phone which will also show the identity of the caller (ie ‘Front Door’) so you can still talk to your visitor even when you’re out. The system is installer programmed by SMS or remotely via a modem. Local programming can be carried out via a USB programming lead. There is also an activity log built into the unit which allows an audit trail of users and their subsequent actions to be extracted, either remotely or locally using the above methods.

Industry News Soho House and Sydell Group reveal plans for The Ned London-based Soho House & Co and New York’s Sydell Group have joined forces to create The Ned, a hotel, club and collection of restaurants in the former Midland Bank building. The building takes its name from architect Sir Edwin ‘Ned’ Lutyens, who designed the property in 1924. The Ned will open in spring 2017, hosting nine restaurants, 252 bedrooms, a range of men’s and women’s grooming services and Ned’s Club, a members’ club independent from Soho House.
Devoy family sell on Queens Hotel to Northern Powerhouse Developments for £3m
Ned’s Club will offer a range of rooms and facilities for members including a rooftop with a pool, Canopy Bar & Restaurants, plus Princes Street and Poultry Domes, the Vault Room lounge bar.
The Queens Hotel in Llandudno, which was owned by Devoy Hotels for the past 36 years, has been sold to Northern Powerhouse Developments, as the company steps up its growth plans across Wales. The 83-bed hotel, which was under the Devoy family ownership for the past 36 years, has been acquired by Northern Powerhouse Developments for off the guide price of £3m and joins the company’s already impressive portfolio. Northern Powerhouse Developments (NPD) oversaw the £6m refurbishment of the neighbouring Llandudno Bay Hotel last year and has also secured ownership of two other hotels in North Wales alongside The Queens, Caer Rhun Hall and the Belmont Hotel. The Queens Hotel consists of two ballrooms, two restaurants, a bar plus a car park alongside its 83 bedrooms.

Lesley Watmough from Fleurets commented: “The Devoy family have operated the hotel for over 36 years and have built up a very successful business.”

Gavin Woodhouse, chairman of Northern Powerhouse Developments said: “We are delighted to have secured ownership of this iconic hotel and are looking forward to continuing the success the Devoy family have enjoyed for nearly 40 years. The Queens enjoys an enviable position in the heart of this famous seaside town and together with our hotel management group Giant Hospitality, we plan to invest even further in the hotel to ensure it attracts the next generation of holidaymakers.” He added: “It is our intention to build upon the success the Llandudno Bay Hotel has enjoyed, and while The Queens will attract a different type of guest we want to make it the ultimate destination for families to come and stay and enjoy all that Llandudno has to offer.”
Ned’s Club Active will feature cardio, strength and training equipment, a boxing gym, Pilates, yoga and spinning. At Ned’s Club Relax there will be a swimming pool, hamam, sauna and steam room, plus Cowshed Spa, with eight treatment rooms open to the public. Staying at The Ned entitles guests to a temporary membershipof Ned’s Club. Seven restaurants in the former Grand Banking Hall will serve “food that spans the globe, from Britain to Northern Italy, North America to Japan. The offering includes Cecconi’s City of London, serving handmade pasta, pizza, seafood and and Italian inspired dishes, as well as Pen Yen, a Japanese grill serving sashimi, tataki ramen and robata dishes, with sake”.

ed manufacturer, Sealy, supported those taking part in the annual Furniture Maker’s Football Tournament at the Powerleague Centre in Derby last week, with its very own team of former professionals, the Vintage Clarets competing on the day.
Hosted in aid of the Furniture Makers’ Company, the charity for the furnishing industry, the tournament has become a key date in the bed industry calendar and Sealy was the main sponsor for the fourth year running. The Clarets performed well, and helped to create an atmosphere of fun on the day, sharing tips and advice with those competing. However, despite a strong performance, the final consisted of retailer, BrightHouse, versus supplier, Welcom Furniture, with the latter claiming the trophy after a hard-fought game. Andy Lunt, goalkeeper for BrightHouse, was awarded ‘Player of the Tournament.’ All proceeds raised will go to the Furniture Makers’ Company which fosters the craft of furniture making,
marketing and retailing in the UK. The charity also helps to encourage new talent into the industry with its extensive education programme working with young professionals to create a powerful workforce for the future. Holly Venning, Brand Marketing Manager at Sealy said: “The tournament was certainly the best one yet! It’s always a great day and it’s fantastic to see so many people from across the industry getting involved. We’re delighted that the Clarets took part again this year, they definitely had a lot of fun! We’re as ever, extremely pleased to support such a worthwhile charity which does a lot for the industry.” John Deary from the Vintage Clarets said: “It was great to be invited back to the five-a-side tournament again this year and we certainly had a blast! We’re always keen to support our shirt sponsor, Sealy and of course, help to raise money for a worthy cause. We’re looking forward to competing again next year.”

The Michelin Guide Great Britain and Ireland 2017 new stars are to be announced at a live event for the first time since arriving in Britain in 1911. Scheduled for 3 October, the announcement event will take place at the Institution of Engineering and Technology (IET) at Savoy Place in London. The location has been chosen in homage to the Guide’s historic motoring background. Michael Ellis, international director of the Michelin Guides, will announce the new stars. Last year, The Guide appeared in September, and contained 15 new one stars, two new two stars, and no new three stars. In a statement on the Michelin website, Ellis commented: “We’re very excited about this inaugural event and I’m very much looking forward to celebrating with so many talented people. “The Michelin Guide was introduced in France in 1900 to let motorists know where they could find good food and accommodation, where the most scenic driving routes were and where to buy driving essentials like tyres. “If anything, [The Guide] is even more relevant today because it is independent and it is consistent – which is why the Michelin Star is seen as a benchmark across the world.” Editor of the Michelin Guide Great Britain and Ireland Rebecca Burr said: “The last 10 years have seen the emergence of a host of different types of restaurant producing excellent food under the guidance of extremely talented young chefs.” Michelin inspectors make anonymous visits and pay their own bills. As well as the stars, the Guide also lists hundreds of Bib Gourmands – restaurants serving “exceptional good food at moderate prices” ‒ and named after Bibendum, the original name for the 1898-created mascot the Michelin Man.
How to understand energy wastage for lower bills in hospitality sector Inprova Energy has published a new eGuide to show how the hospitality industry can reduce energy costs via better monitoring and targeting of consumption management. The free e-guide details four steps managers can take to understand and profile their organisation’s energy use. This will help inform their energy strategy and lead to lower bills. “If you think your energy bill is a fixed cost that’s out of your control, think again”, said Kerry Hamilton, Head of Energy & Environment for Inprova Energy. “By monitoring, analysing and understanding how you use energy, you can then understand where wastage may be occurring. It’s then possible to take action to reduce both the waste and the cost.” She added: “Understanding energy consumption patterns is invaluable in developing strategic energy plans and forecasting demand, as well as informing contract renewal choices and improving bill validation. It can also help businesses move their energy load away from peak charging hours, as well as potentially generate revenue for entering the capacity market. All options will reduce energy costs.”

Sleep Set designers reveal their visions for hotel tribes
T
Hotelier & Hospitality Design
his year, Sleep has pioneered a collaboration of international design talent and social scientists that will transform the way hotels and designers think about the spaces they create. Now, the first intriguing glimpses into the initial work have been revealed, hinting at what visitors can expect to experience for real at Sleep in November. Inspired by a ‘Science of Tribes’ theme, the five design firms participating in the 2016 Sleep Set competition – Sleep’s annual guestroom feature that is widely recognised for challenging convention - are Aukett Swanke, Gensler, Mitsui Designtec, Studio Proof and WOW Architects, and each is designing a room for a different tribe.
14
Designing for the “Milieu” of creative and individualistic global nomads, Gensler will create a guestroom experience to celebrate the experimental habitat and chameleon nature of the ‘Digital Avant-garde’ tribe. “Like a paper aeroplane when thrown, not knowing how far it will go or where it will land, perhaps picked up and thrown again, our guests seek an instinctive, unscripted journey which continues to shape and influence their lives.” Designing for ‘Performers’ who are high-achieving individuals and the economic elite of all the tribes, Studio Proof has created a fictitious member of the tribe, a driven professional who’s also a pleasure seeker and early adopter. The designers have imagined her story.
Events
“This is a room in which to retreat and come together, offering an escape to real life, not from it. It could be anywhere, but while you are in it, you can only be here. A bivouac where guests create their own reality.” This year’s ‘Science of Tribes’ theme is drawn from the Sinus Institute social model which identifies social groups based on the shared values, lifestyles and aesthetic preferences of their members, giving participants and visitors the opportunity to explore the science of hotel design. The Sleep Sets will once again be located on the Gallery level of the “Other Hall” in London’s Business Design Centre. Visitors will be able to hear the designers make their case before a panel of judges in a conference session on Day Two, followed by the announcement of the winner of The Science of Tribes Sleep Set competition. Register for a complimentary pass to Sleep and find out more about the conference and exhibition as well as Sleep Set at www.thesleepevent.com. Sleep will take place on Tuesday 22nd and Wednesday 23rd November at the Business Design Centre in London.
“Jo Anderson is at the peak of her career and expects the best from life, including her hotels. Hotel Confidential offers exclusivity, intimacy, modernity - and unexpected delights. She lies back on the chaise-longue, reflecting on sea and sky…” Designing for ‘Intellectuals’, a tribe of culture-seekers and responsible connoisseurs, WOW Architects will create a space in which the guest can make the most of the luxury of time, where it is possible to connect to the many layers of life.
Designing for the status-conscious ‘Established’ tribe, Mitsui Designtec will create a guestroom experience offering everything money can’t buy, fulfilling emotional satisfaction, creating a family environment and addressing all five senses. “Our journey aligns heritage and connoisseurship with all the senses. Flowing water, wavering lights, a breath of air, the rhythms of life. The destination is internal fulfilment and emotional connection.” Designing for experience-driven individuals who reject traditional social conventions, Aukett Swanke will create a completely immersive environment for the ‘Sensation Oriented’ tribe.
Hotelier & Hospitality Design
“A retreat for uncertain times, the room as a haven of safety and comfort where guests select their preferred reality from a menu of options. The bath tub is elevated to the central character, stimulating a re-appraisal of the place of every element throughout the room.”

A SHOW BUILT ON SUCCESS
C&C Catering Equipment Ltd achieves double shortlisting in CI Powerlist 2016 Following a victorious evening at the annual CEDA Grand Prix awards, C&C Catering Equipment Ltd is pleased to continue its success. Two members of the C&C team have been shortlisted to feature in this year’s Catering Insight Powerlist, an achievement of which all at the Chester-based business are very proud. Managing Director Peter Kitchin and Sales Director Peter Farrell have both secured a spot in the prestigious Powerlist, with Peter K nominated in the Business Leaders category and Peter F as an Industry Innovator.

The business’ Managing Director was shortlisted after the successful incorporation of C&C Catering Engineers Ltd as a subsidiary company, and the launch of second subsidiary company C&C Catering Fabrications Ltd. Additionally, the company was pleased to enjoy its most successful year to date.

Sales Director Peter Farrell’s nomination in the Industry Innovators category comes due to the dedication he puts into each scheme, which reflect his passion for the industry, and his constant strive for excellence and professional development. Managing Director Peter Kitchin commented, “I’m delighted that our team has been recognised for C&C’s dedication to the industry. Pete and I are pleased to feature in the Business Leaders and Industry Innovators categories, and congratulate the other individuals who have also been nominated.”
“The kit n is p fect. It’s ng” The impressive Ynyshir Hall Hotel, part of the Relais & Châteaux group, recently added to its many awards when its Michelin-starred restaurant received a new design and installation by C&C Catering Equipment Ltd. The scheme was awarded the Overall Winner Grand Prix trophy at the 2016 CEDA Awards, and our team at C&C couldn’t be more delighted. Not only did we work closely with their Michelin-starred Head Chef Gareth Ward and the late co-owner of the hotel Mrs Joan Reen, we also worked hand in hand with many of our trusted supplier partners. The result: An installation that completely eclipsed the existing catering facilities. An award winning installation no less. Sometimes we feel it’s better to let our customers do the talking though. So, in the words of Joan Reen, “The kitchen is perfect. It’s stunning, and you can’t get better than that”. We couldn’t have put it better ourselves. To find out more about the project, visit us online. Together, we make it happen.

This system allows for greater energy efficiency, while also providing enhanced well-being for hotel staff and guests. There are solutions from single rooms, to multiply rooms to full building control which integrates into the links into the Building Management System (BMS).
Hotelier & Hospitality Design
Features on the single room solution, suited for small guesthouses, include Bluetooth® enabled DALI push button interface, and the ability to completely switch off the electronic ballasts to increase energy savings. In the multi-room solution, designed for large or medium-sized hotels, with open plan, multi floor areas and stairways set up is completed by downloading the free PC Microsoft Windows® commissioning tool via the DALI power supply and USB interface. This allows up to 16 groups and scenes to be created. A ‘Guided Light Function’ can also be enabled to provide hotel staff and guests with more comfort and security. Such as when a room is occupied the neighbouring hotel corridor can be set at a dimmed light level. In the building solution, the multi-room is combined with DALI routers, so that commissioning is easily set up via the LAN/Ethernet, while allowing central management of all the lighting control, including the emergency lighting. Even lamp errors can be sent by email. The new Guided Light Function is an occupancy-dependent control which
22 synchronises across groups so if motion is registered in one group the
surrounding groups can react, for example with dimmed light. Hotel facilities and building managers have the option of programming the occupancy sensor, via the software, to select between switching mode (light 100 per cent on/off) and dimming mode (mixed light regulation, dimmed only as much as necessary), or to completely deactivate occupancy detection for use as a photoelectric switch. For example, a DALI system can work perfectly in less demanding areas without occupancy sensors. For stairways in hotels where no sensors are installed - the special stairway function can be activated. A time delay can be defined controlling how long the light should remain on after it is switched on by activating a push button. Once the time is over, the light switches off for a short time, and then on again for 30 seconds. This gives anyone in the stairway the chance to restart the follow-up time, if light is required for longer. B.E.G. Director for UK & Ireland, Paul Jones, said: “The new B.E.G. DALI system offers a scalable system for balanced and co-ordinated lighting management for any size of project and is ideal for the hotel and hospitality industry. As well as the sensors, B.E.G. supply all the equipment required for a comprehensive and effective lighting control system for any size of hotel or guestroom.
“The many functions and set-up options mean that planners can achieve greater efficiency in the planning process and installers benefit from reduced installation costs. We can truly call ourselves the lighting control professionals as B.E.G. offers solutions for all areas and environments, allowing our customers to fully compose their light.”

The Future for American Hardwoods
24
This year’s American Hardwood European Conference (20 th – 21 st October at the Marriott Hotel, Copenhagen) will provide a platform for American hardwood exporters and the European trade to discuss and debate the challenges and opportunities both industries face, by addressing current issues and future developments.
The installation is due to be unveiled to the public outside Chelsea College of Arts, London on Saturday 17 th September and will be open until 10 th October.
On Thursday 20 th October, the conference will open with an overview of how AHEC Europe is working to create a bright and promising future for U.S. hardwoods by inspiring decision makers and creating new products for the built environment. This will include a session on the globalisation of the hardwood trade focussing on the U.S. domestic market, Europe, and of course China.
Thursday rounds off with an informal and relaxing Gala Dinner at the historic Moltkes Palace with plenty of networking opportunities. This is a great chance for European delegates to cement relationships with U.S. hardwood exporters and also meet fellow hardwood players from other countries.
The AHEC Europe team led by David Venables, AHEC European Director, will look to the future markets for American hardwoods and showcase AHEC Europe’s creation of promotional tools and messages aimed at accessing these markets. This includes the promotion of underutilised species, targeting of specific markets and increasing species options and new applications as well as the redeveloped website, new publications and a refreshed format of the American Hardwood Environmental Profile (AHEP). AHEC Europe and Andrew Lawrence, Arup Engineers, will discuss new markets for American hardwoods in construction. This will include the story behind “The Smile” project, the impressive timber installation created for the London Design Festival using for the first time, industrial sized panels of American tulipwood cross-laminated timber (CLT), a project that will represent a huge step forward for the use of hardwood in structural applications.
The issue of sustainability will be raised in the afternoon with presentations and a panel discussion: It’s all about the trees: new approaches for demonstrating sustainability. This will be chaired by Rupert Oliver, AHEC Europe’s environmental consultant who will be joined by Jakob Rygg Klaumann, Danish Timber Trade Federation and David Hopkins, UK Timber Trade Federation, amongst others. Their discussion will include preliminary results from the updated Seneca Creek study and data from satellite forest monitoring by NASA. The last session of the day will be a U.S. industry panel discussion and open Q&A led by AHEC’s Chairman, Dave Bramlage, offering delegates a chance to instigate discussion with a panel of U.S. exporters around topics that matter to them most. There will be further opportunities to mix with industry representatives at the industry showcase and networking reception following this panel discussion.
The focus on Friday 21 st October will be an educational seminar for buyers and users of American hardwood. Rupert Oliver will start by presenting an overview of the American hardwood resource: where it grows, how it’s managed and why it is both a legal and sustainable resource. He will also tackle the challenge buyers face in satisfying EUTR due diligence requirements. The focus will then switch to market developments driving new demand. Neil Summers, Timber Dimension, will share the latest information on the growing markets for thermally modified hardwoods and the opportunities they present for U.S. hardwoods. Friday will come to a close with a technical workshop on grading lumber to the NHLA standard led by Chief Inspector, Dana Spessert. This session will include practical demonstrations on how to determine grades within various American hardwood species. The full programme and registration details can be found at the American Hardwood website. There is no registration fee but places are limited. The conference is specifically aimed at the major players in the market. AHEC welcomes American hardwood exporters, hardwood agents, European importers and larger manufacturers. AHEC are promoting Friday morning’s technical seminar to the wider Danish trade through local associations. The special AHEC conference room rate expires on 23 rd September 2016; we encourage you to book soon.

An interior design service especially for independent hotels and small chains Do you ever wonder why some hotels and restaurants are always full whilst others struggle for bookings? Mainly this comes down to two factors – service and ambience. Both should ensure customer satisfaction and therefore hopefully repeat bookings and referrals. You will want to ensure that your hotel and/or restaurants falls within the former, that your staff are trained, courteous and efficient. Equally the decor, furniture and furnishings need to provide comfort and ‘the look’ that you wish to achieve whether that be for city, countryside, coastal and whether your guests are professional or leisure or a mixture of both, classic or contemporary. As an independent hotel or small chain you will want to ensure: •
Rooms are smart and easy to market and that occupancy rates increase
•
Guests have a pleasurable and comfortable stay, will return and recommend you
•
You receive positive reviews on feedback sites, as even one negative review on comparison sites can have a harmful effect on your business
•
Your costs and time are reduced in a refurbishment or new-build project
• Your hotel is differentiated from your competitors. You can now find help with this whether you require a full interior design and fit-out service or whether you just
want to add a ‘touch of sparkle’ to a few rooms, with no minimum order or deposits to pay and all at an affordable price. How much time would it save you to have furniture, curtains and artwork co-ordinated, with mood boards and computer-aided design (CAD ) images prepared for you, so you can see how the room will look, and all without spending a fortune? We believe that little things can make a big difference but at minimal cost. We offer a very flexible service ranging from full interior design with furniture curtains etc down to a little bit of extra help and guidance on options if you prefer to make your own selections. Our fabrics are sourced from a wide range of suppliers, all fire-retardant and are available in a number of styles and finishes offering options of tracking, poles (chrome, brass or wooden finishes), tiebacks or holdbacks, blinds and voiles. Furniture ranges are contract quality and are available in a range of styles and wood finishes whether you are looking for contemporary or more classic ranges. Led Lighting – Offering a Brighter Future for Hotels Installing LED lights could help hotels cut their energy and maintenance bills, enhance their environmental credentials, and differentiate their design; according to LED lighting entrepreneur David Kennedy and founder of Light Rabbit Ltd.
Hotelier & Hospitality Design
With 25% of a hotel’s electricity costs coming from lighting, organisations looking to cut their energy bills should ensure that appliances are as energy efficient as possible. Switching to low energy lighting technology such as LEDs is just one way in which hotels can save money, reduce their carbon footprint and improve the working conditions for staff and guests. Hoteliers should also note that LED bulbs can last for up to five years, drastically reducing maintenance budgets; and that because LED bulbs stay cool to the touch, further savings on energy bills can be achieved through reduced reliance on air conditioning.
28
Recent advances in LED technology mean that an extremely wide variety of bulbs and fittings is now available. LEDs can be used as direct replacements in existing overhead fittings (including dimmers), as well as to provide state-of-the-art ambient and task lighting. Specialist products for bathrooms, kitchens, bars and restaurants and outdoor areas are also available. Design-led hoteliers can experiment with soft and warm shades, coloured lighting – or even waterproof LED lights installed in a bath or shower. Switching to LED can also enhance hotel’s environmental credentials. Not only are energy
bills reduced; their quality and longevity means less waste, and there are no ‘dirty’ chemicals involved in the production of LED bulbs – which can be safely disposed of. “LED lighting is an excellent choice for design-led hoteliers’’, commented David Kennedy, CEO of lighting brands LightRabbit.co.uk and LEDlights.co.uk. “It gives design teams greater flexibility and allows them to use lighting as a creative tool – creating an extra special ambiance in hotel rooms, bars, restaurants and outdoor areas. Plus LED lights can help hoteliers save on power bills – allowing for additional expenditure in other areas of the hotel.”

Compose your light DALISYS ® – multi-room lighting control If you thought that a building automation system meant a large effort and infinitely many components, you should get to know the DALI system. A system for intelligent lighting control across many rooms can be implemented with a small number of different components. As well as DALI electronic ballasts, you will need multisensors, relay modules, switch interfaces, a power supply with USB interface and suitable DALI software for setup. A maximum of 64 components can be connected to one line. A sample allocation for a multiroom solution would be: 4 rooms, each with 8 DALI electronic ballasts, 2 multisensors, 1 switch module and 1 relay module (HVAC), plus one more relay module with cut-off function (complete switch-off of electronic ballasts instead of standby at 0 % illumination). With these few components and suitable DALI electronic ballasts, a DALI line can be set up across several rooms, coordinated with each other.

Interior Design & Lighting A SPECIALIST furniture business is preparing to move into new premises four times the size of its original base after a rapid increase in orders.
Top Brass Continues to Expand Top Brass has built up a multi-million pound turnover making furnishings for some of the UK’s biggest hotel chains, providing everything from blinds to beds to complete furnished rooms. As well as relocating, the business will also double its workforce to reflect the growth. Director John Harrington, who is relocating to Hartlepool with his family from London where the business has a head office, said Top Brass had “outgrown” its premises on Longhill Industrial Estate and hopes the move will take it to a new level. The business will move into its new 30,000sq ft premises on Oaksway Industrial Estate in September, a former cake factory, which is undergoing extensive redevelopment to house not only manufacturing capabilities but a design studio and office space.
Hotelier & Hospitality Design
He said: “Or growth has been a real success story so far and has been aided by the decision to locate in Hartlepool where we find the myriad of skills and talents we need, but we are fully aware that if we stand still then we go backwards. We have some very talented people with us, and there is a need that we are constantly creative and inventive.
34
“Over the last or 15 years we have developed into commercial refurbishment, and 80 per cent of our work is for hotels and the commercial sector. We won our first major contract in 2012 with an international hotel chain, and it has grown from there.” With backing from Hartlepool Borough Council and the Regional Growth Fund’s Let’s Grow initiative, John and the management team at Top
Brass have invested heavily in both machinery and staff and have seen the order book flourish as a result. John added: “When we started off with just two of us, we relied on word of mouth to raise our profile. But then we won two £2m orders for beds with a big hotel chain, and that led to other contracts coming in from franchises. “We can fit out refurbs or new build hotels from scratch. If you think about it the bed is the most important aspect for any hotel. You can have the facilities and the views and everything else that we all like in a hotel, but if someone has a poor night’s sleep because the bed isn’t right then they won’t go back.
John Harrington of Top Brass
“We pride ourselves on providing that quality, and everything else we do to furnish the rooms is of an equally high standard.
Top Brass operates with a team of designers and project managers, and everyone in the workforce can have an input when it comes to creating new products.
“”We have invested not just in our workforce, but in our machinery as well. We service a service industry, so everything has to be spot on. You can’t invest in staff without the right tools, and vice versa.”
“We can turn our hand to anything really, even the most bizarre requests. We were asked to make some stools for a hotel in the south which were like spacehoppers, so that was a fun project to work on.
In previous years Top Brass would outsource various components to create pieces of furniture, but now everything is done at the Hartlepool base and John added: “The hotel will have a concept for a design, we will look at it and advise how we can alter it to make it more cost-effective.
“We created a table and chair set for children centred around the Rubik’s Cube, and we’ve provided seating for schools shaped like a caterpillar for story-telling.
“We can then provide every single item, from the bed to the headboard to the bedside tables and other pieces. The client appreciates the fact we are effectively a one-stop shop who can provide everything they need, and we get a lot of repeat business from that.”
“We’ve also created a sofabed which pulls out into a bunkbed, there are lots of examples of things like that. We have a lot of talented people in our team, and that is reflected in the products we produce.” To find out more about Top Brass, visit www.topbrasscontracts.com or email enquiries@topbrasscontracts.com

Trio of Underlays Unveiled for Every Environment Luxury vinyl flooring manufacturer, Moduleo, is thrilled to unveil its brand-new range of Xtrafloor underlays to suit just about any environment.

trafloor Base, for residential use, Xtrafloor Silent, for excellent sound insulation, and Xtrafloor Flex Pro, an underlay with self-adhesive to ensure faster and easier installation, have been designed to offer a full-rounded solution.
David Bigland, managing director at Moduleo UK and Eire, comments: “These three brand-new types of underlay have been specially designed with our customers in mind.
XTRAFLOOR Base Roll
“We know that each and every one of our clients has a truly unique requirement, which is why we have designed these new products to ensure there is something for everybody. Whether it be for a residential setting, a hotel lounge, or a gym, we wanted to make sure that we offered the right underlay to meet every type of brief, and also to complement our existing catalogue of products.” Purposely designed for residential use, Xtrafloor Base is made from up to 90 per cent natural raw materials and is 100 per cent recyclable, making it one of the most environmentally-friendly underlays currently on the market. Featuring a lightly tackified surface to prevent any movement of the LVT Click laid above it, the product is easy to install and is also an excellent insulator of heat and sound.
Xtrafloor Flex Pro offers a quick, clean and simple solution when installing Moduleo’s Click or dryback LVT in commercial environments, as well as conservatories. Featuring a selfadhesive side to ensure maximum convenience, it also cuts down the installation time significantly. Unlike other standard adhesive installations, Xtrafloor Flex Pro allows for the dryback floor to be walked on immediately after it’s fitted, saving a significant amount of time. David concludes: “This new collection of underlays bolsters our existing product portfolio further, and will work hand-in-hand in ensuring that our customers get the best finish possible for their flooring.” As a global top three manufacturer selling 100 million m2 of vinyl flooring every year since 1997, Moduleo has a strong heritage. The company handles every stage of the design and manufacture process from start to finish at its state-of-the-art, eco-friendly facility in Belgium.

The product has been extensively tested and officially certified to confirm its outstanding impact sound reduction values of ΔLw=21dB and ΔLlin=10dB (when used with 4.5mm Moduleo Click flooring). This makes it one of the best performing sound-insulating underlays on the market. The Xtrafloor Silent underlay is also compatible with underfloor heating.

BHA calls for Seaside Tsar to revive UK coastal towns The British Hospitality Association has called for the government to appoint a seaside tsar to help Britain’s failing seaside towns. The BHA has commissioned a report which says that people living in seaside towns are more likely to be poorly educated, unemployed, unemployable, lacking in ambition, claiming benefits and living in multiple occupation housing. A separate survey, conducted by the owners of Butlin’s, found that more than half of the British public have not visited the British seaside in the past three years, and 65% believe that the British seaside is run down and in need of investment. Nine out of the 10 most deprived neighbourhoods in the UK are seaside communities, according to the Department for Communities and Local Government 2015 Index of Multiple Deprivation. The collapse of shipbuilding and fishing, the decline of the traditional annual holiday by the seaside, growing drug use, and cutbacks in budgets affecting maintenance of public places, street cleaning, tourism promotion and the providing of education have all contributed to the situation, says the report.

The British Hospitality Association report, Creating Coastal Powerhouses, says that businesses in seaside towns are more likely to fail - especially if they provide accommodation, and calls on the government to create Coastal Enterprise Zones to encourage businesses to move to and invest in the coast.

20 hotels including Marriott and Hyatt hit by data stealing malware A data breach at 20 U.S. hotels operated by HEI Hotels & Resorts for Starwood, Marriott, Hyatt and Intercontinental may have divulged payment card data from tens of thousands of food, drink and other transactions, HEI said on Sunday. The breach follows similar attacks at Hyatt Hotels Corp and Starwood Hotels & Resorts Worldwide Inc in recent months. Norwalk, Connecticut-based HEI, which is privately held, said malware designed to collect card data was found on HEI’s systems. The malware was discovered in early to mid-June on payment systems used at restaurants, bars, spas, lobby shops and other facilities at the properties, Chris Daly, a spokesman for HEI, said in emails and phone calls. The number of customers affected is difficult to calculate because they might have used their cards multiple times, Daly said. About 8,000 transactions occurred during the affected period at the Hyatt Centric Santa Barbara hotel in California, and about 12,800 at the IHG Intercontinental in Tampa, Florida, Daly said. The malware affected 12 Starwood hotels, six Marriott International Inc properties, one Hyatt hotel and one InterContinental Hotels Group PLC hotel. It was active from March 1, 2015 to June 21, 2016, with 14 of the hotels affected after Dec. 2, 2015, HEI said on its website on Friday. Marriott and IHG declined to comment. Representatives from the other hotel groups did not respond to requests for comment. HEI said outside experts investigated the breach and determined that hackers might have stolen customer names, account numbers, payment card expiration dates and verification codes. The hackers did not appear to have gained PIN codes, since those are not collected by its system, it added. The company has informed federal authorities and has installed a new payment processing system that is separate from other parts of its computer network. Among the properties affected were Starwood’s Westin hotels in Minneapolis; Pasadena, California; Philadelphia; Snowmass, Colorado; Washington, D.C.; and Fort Lauderdale, Florida. Also affected were Starwood properties in Arlington, Virginia; Manchester Village, Vermont; San Francisco; Miami; and Nashville, Tennessee. The Marriott properties affected were in Boca Raton, Florida; Dallas-Fort Worth, Texas; Chicago; San Diego, California; and Minneapolis.

3 Hospitality Top Display Tips There are many factors that drive your sales and inspire the loyalty of your customers. Beside your service, one of the main factors is the way your space looks and its finishing touches. Here are 3 top display tips from The Display Centre experts. 1: Draw them in Before you can show off your gorgeous food and wonderful service, you have to draw your customers inside. There are many ways to do this with displays. Your method should depend on the style and atmosphere that you wish to create. For some, a simple chalkboard A-board or a letter board in a window may be all that is needed. For many, something more imaginative will be more impactful. Light boxes are a great way to be more impactful. They make great reservation signs and double up as excellent window promotion signs. Whether you opt for a small cinematic style box or a larger branded one is completely up to you and the effect that you wish to create. Both make interesting and easy ways to draw people in.
2: Comfort Customers find comfort in knowing what to expect. This is a good reason to keep your atmosphere and theme consistent throughout your space. Your display basics should be comforting and consistent but the extra details should inject personality and interest.
Your customers know whether to expect a bar or a reception desk and they will know that somewhere you will have toilet facilities. But you can comfort your visitors by clearly sign posting where things are and telling them how things work. This sign posting should neither be too prominent nor too subtle. A great way to do this is to use a stylish way of telling them that adds to your atmosphere while also serving a useful function.
3: Ask and Observe It is important to get the personality injecting details right. This requires a little care so as to avoid creating a space that is too cluttered, cliché or gimmicky. With a little finesse, innovation and quirk, your hospitality space can inspire your customers’ loyalty. The smaller touches that are unusual and unique to your space, can be the ones that cement your business’s name into your customers’ “must visit” list. Our experts can help you do this. For over 26 years our team of experts have been providing high quality display equipment to the hospitality industry. We work closely with you to identify the items you need to drive your sales. Luxury epitomized! This is only one of the customer review phrases used to describe this luxurious 6 bedroomed 5 star boutique B&B. The 25 Boutique B&B was awarded an AA Gold Award for the 2016 B&B category and is situated in Torquay, Devon and has recently undergone a major six figure sum refurbishment, now boasting six very different individually styled luxurious bedrooms.
46
Currently rated as the number one B&B in England on TripAdvisor and credited as 2016 Devon Boutique B&B winner of the Luxury Travel Guide, Julian and Andy have spent the last eighteen months renovating all of the bedrooms to an extremely high standard. When it came to creating a luxurious bedroom, it’s not just the décor or furnishings they had to consider, but right down to the type of bedding sourced. They formerly stocked a variety of bedding from different manufacturers and ages and having experienced softness and high quality of The Fine Bedding Company Hotel Division’s luxurious bedding during a recent stay in another guest house, they knew exactly where they were going to go to source their own bedding!
Situated on the South Coast of England, or English Riviera as it is commonly referred to, The 25 Boutique B&B opted for The Fine Bedding Company Hotel Division’s Boutique Silk range of synthetic pillows and duvets. Thanks to its ability to be washed in house, and at 60oC, the temperature that kills dust mites, this range of bedding was ideal, thus creating a more allergy friendly sleep environment for its guests. Andy Banner-Price, Owner, The 25 Boutique B&B comments, “We are thrilled with the quality of the bedding and continuously receive feedback from our guests that they had the best night’s sleep specifically citing the luxurious feel of the bedding. Some have even purchased the duvets directly. Having spent the past seven years running a successful award-winning country house hotel in North Wales, we embraced this renovation and specifically decided to create a luxurious B&B for the young professionals to escape the hustle and bustle of city life”. Boutique Silk duvets and pillows contain Smartfil®, a unique, non-
allergenic, multi layered fibre filling which is manufactured in house and available exclusively from The Fine Bedding Company. Smartfil®’s special silicone coating allows the duvets and pillows to revive and recover their form like new every day after plumping up and also after regular and repeated washing. Products are also ultra-light for faster room turnover and quick drying so freshly laundered duvets can be returned to a bed within a matter of hours. Launches Ground-breaking
Alcohol-free Beer
A
lcohol sales in the UK have declined by 24% since 2000 and with drink driving laws set to be tightened, Government advice on alcohol consumption changing and rural pubs going out of business, the launch of St Peter’s Without® is particularly timely.
Without® taps into the growing demand for alcohol-free drinks and gives those who are looking to cut down on alcohol, or who don’t drink, an excellent-tasting beer that is as good as the real thing. Three years in the making, St Peter’s Without® is a real, bona fide choice even for the most ardent beer drinker. It is brewed to the exact same standards as craft ales, but without the alcohol. It is completely different to and hugely better than other alcoholfree and low alcohol drinks on the market, contains less alcohol than a glass of orange juice and is at least 25% lower in calories than standard beer. “The time is right to launch St Peter’s Without®,” says Steve Magnall, CEO of St Peter’s Brewery. “Pubs and bars are crying out for an excellent quality, full-bodied alcohol-free beer that drinkers will take seriously. Without® really is a fantastic alternative. “We want to be at the forefront of this growing sector, which we believe will form 10% of the UK beer market within 10 years. We’ve made a big investment, but we know that Without® is unquestionably the right product to lead the way,” adds Steve. St Peter’s Without® is available nationwide on draft and in bottle from the middle of August. For more information visit www.stpetersbrewery.co.uk or call 01986 782322.

They both run for 1 full week (35 Hours approximately) and the objective is to equip professional alumni with the level of mixology needed for a career progression or simply for a desire of expanding horizon in cocktail making. A professional diploma is provided at the end of every level and because The Spirit Lab are an approved partner of WSET, students can decide to take a further exam in order to gain the Level 1 Award in Spirit which is recognized in 60 countries globally.
The Spirit Lab has been set up in order to raise bar standards throughout the world and get it back to the glorious past image of bartending by leveraging on a neverending fundamental component: THE BARTENDER!
In terms of consultancy for spirit brands or bars they adopt a bespoke service on case by case project. This can go from a simple menu design to a full in-house training to staff recruitment to push a product to market etc.
When asked why he opened the Spirit Lab Emanuele says “I saw a gap in the market due to the fact that nowadays bar staff are either not given the necessary know how to start a career in the industry or are kept isolated and limited in terms of the knowledge they can learn in a specific venue. This is not because owner/managers are not passionate or knowledgeable enough, but because there is always less time to allocate to this kind of task and always more compelling things to do.”
The Spirit Lab head office is located in a brand new building right in Piccadilly Circus in which they sometimes host the theoretical aspect of the course, however the practicing facility is located
The Spirit Lab is a Professional bartending school in London which offers Basic and Advanced courses, bar and brand consultancy, job placement
in the heart of the cool and Hipster east London at Old Street. In this prestigious location, their state of the art bar has 4 stations equipped with all the necessary tools, glassware, top shelf spirits and machinery required by the industry today. All these elements aim to mould professional bartenders with the skills and confidence to work in the best establishments in the world. Who is the Spirit Lab ideally for? Emanuele says “I pretty much aim the course towards people who want to start working in a bar for several reasons (earning money while they are at university or to sustain the gap year travelling, choosing this as a career path and want to build up foundations etc) or people who are already bartenders and want to expand knowledge and horizon of bars who haven’t got time and resources to do full training and need a 3rd party to carry out the work.” He continues “I believe we are special because we do provide a very familiar and consultative approach from start to finish. We look after every single student and we make classes of maximum 8 in order to spend time with every single one of them.” And with a string of alumni who have gone on to secure jobs in leading bars and hotels, the Spirit Lab is increasingly becoming the choice for hiring managers to pick staff from, which is why at Restaurant Update we are actively promoting the work The Spirit Lab have done and are continuing to do so.

Rum vs Rhum:
The Battle of the Bottles “I pity them greatly, but I must be mum, for how could we do without sugar and rum”
- William Cowper, English Poet
Since then, rhum (and rum) has evolved to become one of the most popular liquors on the shelf. With the correct spelling causing cup-full’s of confusion, we have investigated the difference between Rhum and Rum to save your boozy blushes. Today the spirit falls definitively into two categories: Demerara Rum and Rhum Agricole. Demerara Rum: Demerara Rum (rum made from molasses) is produced from fermenting molasses, resulting in a sweeter, rounder, and usually darker rum. Demerara Rum is also commonly referred to as Rum Industriel or Rum Traditionnel.
Rhum Agricole: Rhum Agricole is made from pressed sugarcane juice and yields a much lighter final product. Interestingly, a bottle of Rhum Agricole is usually priced higher than Demerara rum brands. Wyatt Peabody, writer for Punch online drinks magazine says, “You might be paying a little bit more but I might argue that what you get for that dollar is tremendously more than you get from molasses-based rum”. Chris Singam, Founder of Cottons Caribbean Restaurant and Rhum Shack, says, “Rum and Rhum are often mistaken for each other, but once people are explained the difference they can understand and appreciate each spirit’s unique qualities. Those who don’t enjoy drinking Rum may find they
absolutely love Rhum! At Cottons we will have over 300 different varieties of the spirit so there are plenty of options for our guests to choose from”. With over 30 years’ experience of serving authentic Caribbean cuisine, Cottons Restaurant and Rhum Shacks in Camden, Shoreditch and the newly opened Notting Hill offer a real buzz. The bars stock the largest rum collection in the UK, with over 300 varieties available. From Reggae Rum Punch to Killer Doppis to Piña Coladas, the Rhum Shacks shake up both classic and innovative cocktails using their own signature style and recipes. Rhu the Day… That’s right, Radnor Hills have been busy again concocting brand new flavour combinations, and have recently launched a delicious new Apple and Rhubarb Heartsease Farm – and they have really cracked it this time! This fresh tasting thirst quencher seems to be the most popular in the range yet and is made with all natural and best available ingredients which have been blended with their own spring water from their farm in Wales. Getting the fresh sweet taste of the apple to blend with the sharp twang of the rhubarb wasn’t easy, but they are particularly thrilled with this one!
The Watkins family have farmed at Heartsease, in Mid Wales since 1903. It was soon after joining the family firm that William Watkins discovered that he had a source of delicious spring water on their land, and this was the trigger to diversify the business into bottled water based products. Radnor Hills Limited produces a whole range of soft drinks including pure water, flavoured waters, school compliant drinks, fruit juices and the Heartsease Farm range of premium pressé drinks. “Provenance of our ingredients is key”, says William Watkins, whose pure blackcurrant juice and raspberries will arrive from a farm down the road in Herefordshire. “Our Heartsease Farm range of drinks reflects the heritage of the farm and our passion for great flavours’’ Heartsease Farm Premium Pressés feature some timeless traditionally British flavours including Traditional Lemonade, Raspberry Lemonade, Fiery Ginger Beer, Apple and Rhubarb, Blackcurrant Crush and Elderflower Pressé. Premium Vodka Will Be the Next Big Thing, Say Top Bar Managers According to the country’s top bar managers, gin’s success has reached its peak and now it’s time for vodka to have its day. Despite gin’s massive gains in recent years, vodka is still the biggest spirits category in the UK and according to recent Nielsen research (year to April 23, 2016), it is in 1.9% growth, which is being driven by flavoured vodka and premium vodka. “Premium vodka continues to grow in double digits, up 19.6%, and now accounts for 7.9% of total vodka and 67% of total vodka growth,” explain analyst Marika Pratico, senior client insight manager at Nielsen. “I compare vodka these days to lager. No one wants weak lager anymore, even if they are lager drinkers they don’t want Fosters they want a lager with flavour and depth, and vodkas are now going the same way,” said Kyle Wilkinson, head bartender at The Beaufort Bar at The Savoy in a recent tasting in BarlifeUK.

“I think bartenders are looking at vodka differently now with the likes of Gaz Evans and Rico giving it a lot more kudos. It’s cool now to be the anti-cool which is bringing vodka back into the fore,” adds Jamie Jones, group bars executive at The Social Company, Jason Atherton.

“The general interest in vodka is increasing and our customers are definitely ordering more of it,” says Paul Richardson, assistant general manager at the two rosette Tuddenham Mill Hotel and Restaurant in Suffolk. “People are starting to want different styles of premium vodka and are coming to us expecting to find it,” he continues. “We are seeing a lot of interest in Wild Knight Ultra-Premium English Vodka from Norfolk, it is single-
distilled and made using Norfolk barley, which is quite unusual. It also has a really unique aroma and taste, which you wouldn’t expect from vodka. My customers like it a lot and I think it’s that top end of the vodka market that will explode in the years to come.” Paul Forsyth from Thunder Road Emporium and Bootleggers Bar is a big advocate of Wild Knight Vodka and feels sure it will be a huge success. “Wild Knight is very different because it has its own botanicals. It’s very unique.” he explains. “I just did Imbibe live, and I found that generally people say they know about vodka until they try wild Knight. We tout it as an unaged whisky, because it’s produced in the same way. From a selling point for view it
is exceptional and stands out from all others I’ve ever tried during my 20 years in spirits industry.” “We knew when we launched that the time for vodka to shine was definitely on its way and at the recent Imbibe drinks show we were overwhelmed by the interest in our vodka,” says Matt Brown, co-founder of Wild Knight English Vodka. “Bar managers were definitely on the lookout for something new and there seemed to be a renewed interest in premium vodka. We are very excited to be at the forefront, leading the way with what we feel is the best vodka you can buy in the UK.” Wild Knight Ultra-Premium English Vodka is made from a single distillation using Norfolk barley. The Synergy Grill is a pioneering chargrill that uses 52% less gas. This gas saving equates to an average of £12,238 every five years, helping cultivate a carbon neutral kitchen. It also uniquely has no fat tray to clean. These benefits have been adopted by top chefs and snagged top prize for innovation at The Commercial Kitchen Show where the judges were “Wowed by a British-made design that is a true innovation for chargrilling.” The greatest benefit, however, is flavour. Synergy Grills get hotter than average chargrills. Heat ‘atomises’ the natural fats that are released during cooking which are misted back into food making it incredibly succulent.
