STRAND PALACE HOTEL UNDERGOES GROUND FLOOR REFURBISHMENT The Strand Palace has revealed the plans for its ground floor refurbishment project that will position the hotel at the top of London’s 4-star hotel offering.

Taking place from the New Year to early summer, the ground floor project will see the reception, concierge, restaurant and bar areas transformed into a stylish hub in the heart of London.

The new public spaces are designed as aesthetically intriguing ‘Salons’ – emphasizing the salon concept typical of a palace. Subtle Art Deco influences are integrated into a contemporary design detail and sophisticated colour palette, with bespoke carpets, light fittings and joinery all carefully showcased within a serene, light and uplifting environment, creating a relaxed and tranquil atmosphere. The new public spaces have been designed for guests to enjoy as flexible lifestyle areas, where guests can relax or work wherever they choose. An inviting tea room with rich art deco finishes will see guests while away the afternoon whilst enjoying loose leaf teas and delicate tea pastries in true English style. The restaurant will champion modern British cuisine and the addition of a private dining room, set in a beautiful

rich hue of blue provides a space perfect for celebrations or private meetings. The all day restaurant will serve British grilled meats and small plates in addition to breakfast service. The £1m refurbishment of Hotel Indigo Birmingham is complete. The investment included a huge renovation of all 52 guest rooms including the reception and lobby areas.

he project took six months to totally complete with the design heavily influenced by Birmingham’s canals and city centre landmarks. There might be an air of gloom hanging around the UK economy we edge towards Brexit – but at least predictions for the restaurant trade are fairly upbeat.

Outlets with restaurant technology will benefit from quick ordering by tablet – payments can also be taken at tableside, making the experience swift and seamless.

It’s been estimated that foodservice visits could rise by a huge 93m in 2019 as consumers continue to spend their hard-earned cash on food.

And with UK employment at a record high, and wages rising at the highest rate in a decade while interest rates remain low, diners certainly have cash in their pockets. So what are the 7 trends that are shaping dining this year – and how will restaurant technology feed into them?

1. Feed me now

Signs are that diners are not eating out as much in the evening, and not so formally – but that’s not to say they’ve stopped eating out. Instead, there’s going to be steady growth in sharing breakfast and brunch – and lunch will continue to be a big market, rising by around 2%. For these busy and timeconstrained guests, speed of service will be paramount.

The combination of mobile technology, millennial diners and restaurant technology is making a huge difference in the way restaurants deliver personal interaction. Younger guests can prefer messaging to emails or calls, so many restaurants seeking their business will be exploring chatbots in 2019. The technology is already in place – look at how Open Table integrates with Facebook Messenger. It means people chatting about dinner plans on Messenger can be booked into your restaurant by a helpful bot.

3. Hey, Alexa – deliver more business Thanks to the arrival in homes of Alexa, the Google Home Hub and Facebook’s smart speaker, voice searches are on the up - ComScore reckons that by 2020, they’ll make up 50% of all searches.

The potential for restaurants is enormous; imagine your customer hearing your ad on Spotify at dinnertime and immediately placing an order or booking a table, with restaurant technology available 24/7 to handle the incoming business. The technology will also open up a whole new world of business in 2019 for restaurants who will be able to offer delivery for the first time.

4. Allergy awareness This is the trend no-one wants – but with food allergies on the rise, it’s estimated that around 10 people will die in the UK in 2019 because of a bad reaction to an ingredient. For chefs designing dishes, restaurant technology can be an incredible help. For instance, a technology partnership between NFS’ Aloha restaurant management technology and the Kitchen CUT F&B management platform provides help in areas ranging from cost control to ingredient selection and allergen warnings.

5. Sooo casual… Casual dining has been a huge trend in hospitality for several years, with many customers opting to take no more than 45 minutes over their meal.


Technology 7. The ethical eater Veganism has gained enormous ground in 2018, and will be persuading many UK restaurants to tweak their menus in the coming year. But vegan or not, ethical food production is high on the agenda for both diners and chefs in 2019. Diners will want to know that restaurants are keeping food waste to a minimum – and chefs will know clever stock control is also directly linked to a healthy bottom line. As with labour, restaurant technology reports can create ideal conditions for good stock control, identifying bestselling dishes so stock is correctly ordered, and allowing chefs to control dishes down to ingredient level. So - good luck in 2019! It’s going to be a rollercoaster ride for the UK restaurant industry, we know - but those who make the most of technology to streamline their operations will be wellplaced to survive the ride. The benefits of good software were demonstrated recently when two of our restaurant technology clients, Honest Burgers and Dishoom, won Best Restaurant Operator in a national award scheme. For the fast and casual markets, restaurant technology is providing an incredible tool, integrating with selfservice kiosks and kitchen automation. So diners can order, pay, eat and go – and you’re ready for the next customers.

6. The incredible shrinking labour pool This another one of those trends people aren’t too keen to think about. But there’s no doubt, labour is getting short.

In fact, it’s estimated by analysts KPMG that around 75% of serving staff in the UK are of EU origin.

Where restaurant technology helps is in capturing data that helps restaurateurs match staffing levels to the peaks and troughs of trade, so good customer service is always maintained but costs are kept under control. A productive year for hospitality technology

- Peter Moore from Lolly makes his payments and point of sale predictions for the year ahead GDPR took control in 2018 - just as Peter Moore, CEO of PoS and payments specialist Lolly, predicted 12 months ago. He comments: “The time and financial impact of implementing GDPR compliance has almost certainly delayed the advancement of other areas of hospitality technology.” When it comes to considering his predictions for the year ahead, Peter Moore believes that real progress will be made in the fields of payments and POS; many of which will have a real impact for smaller hospitality providers. Payments - PSD2 Directive Moore considers that the introduction of The Payment Services Directive (PSD2) - designed to promote payments innovation - will have both a positive and negative impact on the sector. The legislation will encourage open banking, which is considered to ‘transform banking into a more flexible network of financial providers and services’. Peter Moore comments: “In 2019 we are expecting that this directive will accelerate the faster payments system in the UK as it reduces the fees for processing PSD2 payments. Hopefully we will see it levelling the field for payments, reducing the cost and allowing hospitality providers to have more choice of how they take payments, as well as encouraging the integration of technology into businesses. “However, there is a lack of communication for both consumers and smaller businesses about how this may benefit them, but also what any associated risks may be. I would advise hospitality businesses to do their research before jumping into any scheme. In addition, loyalty or rewards schemes are currently not as developed as those of major card or payments providers, but this is something we are expecting to change as the market grows stronger and more established over the coming years.”

Pin on Glass (PoG)

A subsequent application will be the introduction of Pin on Glass (PoG). The term describes traditional payment terminals that have evolved from larger models that operate using buttons, to a touch screen interface. PoG is the touch screen, or glass-based capture mechanism (1). Moore believes PoG will become more commonplace during 2019: “PoG-type products will be attractively priced, and we will see increasing numbers of mobile apps being created. Overall this will enable entry level merchants in the sector to start taking payments, which will result in more mobile type transactions direct from a phone, as opposed to needing third-party intervention - creating the coveted ‘frictionless’ payment environment(2).” (1) https://www.paymentssource.com/opinion/pin-onglass-and-pin-on-mobile-have-important-differences

Behavioural biometrics Nearer than many would think is behavioural biometrics - iris, fingerprints, facial movement and voice - all big news in payment technology right now. We are at an early stage but are beginning to see ‘pay by selfie’ or ‘smile to pay’ services - promoting cashless environments and embracing payments at lightning speed. Moore comments: “Biometric payments will revolutionise the payment landscape, and there is a whole new generation ready for this, which will certainly change the buying process. Hospitality businesses need to start planning for this change, and to address their changing customer needs.” Self-serve Moore has previously commented on the potential staff shortages following Brexit. He believes self-serve technology has the ability to support many hospitality providers in delivering high-quality service with reduced staff numbers at front of house. “In certain areas of hospitality we are looking at a revolution of the traditional role of service staff,” he comments. “Higher footfall and faster payments will generate the need for more staff in operational and back office roles to give better service and more product and scope. “As in recent years, 2019 will be all about technology integration and creating best-in-class solutions. The Isle of Sky’s the limit for Uig Hotel and Zonal Six years ago the Harley family uprooted their family of four, plus three dogs from Milton Keynes and turned their back on corporate life to return to their Scottish roots to run an 18 room hotel on the Isle of Skye. For husband and wife team Billy and Anne it was the best decision they made. Their two boys have since left home to study, but life has never been better, and the hotel business continues to grow. Investing in technology has been part of the key to this success. When they moved into Uig, which is an old coaching inn dating back to 1831 and located on the hill above Uig bay offering stunning views, the hotel required a refresh. In addition to location in its favour, Uig also had Zonal EPoS technology, although it wasn’t being been utilised to its full potential. “We were impressed with the intuitive nature of Zonal’s EPoS and could see that it had the potential to offer us the insight we needed, so worked with the team to upgrade the Aztec EPoS solution and get the support that we required to optimise its functionality,” said Billy. For the Harleys it was a question of improving food and drink sales

across its bar and dining areas, while keeping a lid on staffing overheads. Through its integrated business solutions, Zonal had just the answer with its handheld ordering system, iServe. A reliable replacement to the traditional order pad, iServe can be installed on any iPod or iPad to create a mobile EPoS terminal, providing teams with full access to Aztec functionality from anywhere in the venue. Billy explained: “We pride ourselves on our quality home cooked food and work hard to source as much local produce as we can from Isle of Skye red deer to scallops, washed down with a local ale, Misty Isle gin or one of a range of Talisker single malts. “With this focus on excellence, we needed to make sure that our teams had the tools available to deliver an equally outstanding service. Since we introduced iServe it has proved to be a win, win for everyone. “We have increased the number of people we can serve by up to 40%

without having to recruit more serving staff, as the process of taking an order is so much simpler and more efficient. iServe also improves accuracy as we take the order and send it straight from the table to the kitchen and bar without re-keying, which offers our customers a sleeker more professional service.” For Uig the service from Zonal has also been appreciated. Despite its remoteness – a six hour drive from Glasgow – Zonal has been on hand 24/7 with remote support. “We enjoy a good relationship with Zonal, they understand our business and have the range of solutions in place to help us grow our business, while managing tight margins,” concluded Billy. The UK is enjoying another great year of cider where the interest in the diversity of the many ciders available continues to grow. ach year global textiles giant, Vision Support Services host this annual awards incentive aimed at discovering exceptional interior design of hotels, restaurants, spas and bars around the world.

The 2018 Awards were launched back in May with brand new categories, judges and venues; all hoping to recognise the effort, style and flair from across the globe with seven categories; open to any hospitality establishment from around the world. The design competition, which began as the Hilden Style Awards back in 2013 originally aimed at independent bed and breakfasts around the UK, has seen over 100 entries this year featuring locations as far and wide as Rwanda, Tanzania, Bali and New Zealand.

Submissions were judged by a panel of hospitality and travel experts and the final three in each category were then whittled down to one overall winner in each category.

Bluestem Hotel Joins Choice’s Ascend Collection The Bluestem Hotel is the latest property to join the Ascend Hotel Collection by Choice Hotels International. The 58-room property is the first boutique hotel to open in Torrance, California. The hotel is owned by the Chanani family, who has operated hotels in the area for more than 20 years. Many of our clients wish to work with solid fuel cooking appliances. To reduce the excessive heat and additional air contaminants produced by this equipment we have developed our state-of-the-art Water Mist Canopy. The solid filter bank has an extraction slot at the base whereby air is passed through, and then sprayed with a controlled volume of water, extinguishing any embers. We also solidify a large percentage of grease at this point. This is deposited into the waste trough and taken to drain. The water mist process, reduces the heat and particulate build-up up stream in the system reducing filter changes and duct cleaning in the duct system. Where external duct work is not possible our revolutionary Recirculation Canopy comes into play, extracting fumes, grease and odour into our bespoke filtration tower.

Extracted air passes through 8 forms of filtration, then exits through the front of the canopy back into the kitchen space, fully filtered. We can even site the filtration tower remotely if space is limited on the cook line. The Heat Recovery System has been designed to utilise the waste heat from the cook line. Its panel contain a refrigerant liquid with a starting temperature of -22oC. As the refrigerant liquid moves around, extracted air passes over the panel - raising the temperature of and ultimately vaporizing the liquid. This gas is now taken into your water cylinder where it is compressed to create heat energy.

THE GRAHAMSTON OPENS ITS DOORS FOLLOWING £1.2 MILLION TRANSFORMATION INSPIRED BY GLASGOW’S FORGOTTEN VILLAGE…

The Grahamston, a new restaurant and bar located in the heart of Glasgow city centre, has opened its doors today following a £1.2 million transformation. Located within Radisson Blu on Argyle Street, the new dining and drinking experience is inspired by Grahamston, once a bustling village in the heart of the city, now a forgotten part of Glasgow’s history, buried deep below Glasgow Central station.

Through subtle visual, written and spoken cues, the story of the mysterious eighteenth-century village is brought to life. The interior has an opulent yet industrial feel, with the décor, the menu and the people each revealing small elements of the Grahamston story, while retaining the intrigue and mystery at the heart of the urban legend. A new piece of artwork inspired by the characters and buildings from Grahamston dominates the feature wall overlooking the bar.

The Grahamston Kitchen will feature a specially designed menu, featuring produce sourced from around Scotland. Developed by Executive Chef Stephen MacNiven, it will serve traditional Scottish food with an artisan twist. The new menu features an array of dishes celebrating Scottish cuisine such as the “Cock a Leekie” Terrine, Twice-Baked Isle of Mull Cheddar Soufflé and Apple and Cinnamon Cheesecake. As well as a large selection of beers, wines and spirits, the 82-metre

square bar will serve its own locally brewed craft beer, The Grahamston Ale, on draught, also boasts a whisky menu featuring 40 different expressions. The Grahamston snug will be available for private hire for parties of up to 36 people. Radisson Blu’s new General Manager, Hina Rubbani, said: “The Grahamston is perfect for anything from a working lunch to an evening cocktail, and provides the ideal place for our guests, locals and visitors to the city to come and discover more about one of Glasgow’s best kept secrets.

Whether enjoying a drink with colleagues, or a catch up with friends, it’s the ideal place to relax and unwind while taking in the very special character of this historic city.” The mysterious village of Grahamston lies beneath Glasgow Central station and has remained untouched since the 19th century. But as the industrial revolution took hold in the 1870s, the fate of Grahamston was sealed when work began on Glasgow Central station. Nearly one hundred and fifty years later, The Grahamston bar and kitchen is paying homage to this enigma from Glasgow’s forgotten past.

Radisson Blu worked closely with local historian Norrie Gilliland on the project, author of the only book written on the history of Grahamston; Glasgow’s Forgotten Village. He commented: “The story of Grahamston is undoubtedly a microcosm of Glasgow’s growth into a diverse, multi-cultural and internationally renowned city of the 21st century. Grahamston was first noted on maps of Glasgow around 1680 and grew over the next two hundred years from a row of thatched cottages to a commercial and industrial hub right at the heart of Victorian Glasgow. “Sadly, the village vanished beneath the foundations of Glasgow Central Station well over a century ago. No records of it exist in city archives and only a small glimpse of the mysterious pathways and tunnels can be seen from Hope Street. Now, the story of Grahamston has been brought to life, and I hope that locals and visitors to the city enjoy discovering more about this fascinating local legend.”

Partnering with Feast-it, there will be an ever-changing line-up of food, drink and music, delivering some of London’s best creative talent to create a truly dynamic venue, brought to you by Rory Graham, ex-actor and previously part of the Kricket management team.

Open Monday to Saturday and with a capacity of 450, W12 Studios will consist of large sharing tables and communal seating. It will be a space to give emerging creatives an opportunity to express themselves, from the kitchen, to the drinks and music programme. Food

Partnering with Feast-it, the two rotating kitchens will ensure a constant supply of the best chefs, restaurants, street-food operators and emerging culinary talent that London has to offer. Changing on an ongoing basis, W12 Studios plans to bring in new operators each month. First on the line-up for the month of February is Cue Point, a multi-sensory barbecue experience founded by previous Head Chef of Pitt Cue, Joshua Moroney, and The Piadina Project, offering handmade street food straight from Romagnola via Lincolnshire. Think thin Italian ‘Piadina’ flatbreads packed with fried chicken and

other fillings such as crispy hash browns, pancetta, Italian soft cheeses and pesto mayo to name a few. In March Zoe’s Ghana Kitchen, serving West African cuisine, will be taking over alongside another secret food trader – to be announced! Music The music programme is centred on providing the finest emerging artists, live acoustic sessions, resident DJs and carefully curated playlists. Expect soulful sessions, live gigs, club nights, disco brunches and open mic nights on a rolling basis – all on the doorstep of the BBC and ITV Studios. Confirmed acts include Max Rad, Quiet Man, Tommy Gold, Finn Foxell and P-rallel. Drink The drinks menu will focus on innovative and emerging brands, and consistently change. W12 Studios will work with some of London’s finest distilleries, craft breweries, and wine merchants – including The East London Liquor Company – to bring the finest cocktails, beers and wines.

Shaun Rankin to open finedining restaurant at North Yorkshire’s Grantley Hall

Aramark Northern Europe and Jamie Oliver open first in-company restaurant

Chef Shaun Rankin is to return to his Yorkshire roots to open a finedining restaurant at Grantley Hall, the new luxury hotel and wellness retreat in North Yorkshire which is due to open in the spring.

Aramark Northern Europe, the global food and facilities service provider, and Jamie Oliver Restaurant Group have opened the first incompany restaurant at J.P. Morgan in Dublin.

Located within one of the original public rooms in the Grade II*-listed, 47-bedroom property near Fountains Abbey, the restaurant will feature a chef’s table for up to six guests and serve a menu using produce from the hotel’s kitchen garden. Signature dishes will include Yorkshire rhubarb crumble soufflé with rosehip and iced clotted cream. The restaurant will feature bespoke handmade furniture, crockery and glassware. Originally from Yorkshire, Rankin has spent much of his career in Jersey, as well as enjoying stints in France, Australia and Chicago (where he worked for the late Charlie Trotter). He first went to Jersey 24 years ago as demi chef de partie at Longueville Manor, before departing on his international travels. On returning to Jersey in 2003, Rankin joined Bohemia restaurant as head chef and gained a Michelin star two years later, when he also won the Menu of the Year Catey. He went on to open Ormer on the island in 2013, with the restaurant winning a Michelin star four months later. Rankin took over the restaurant at members’ club 12 Hay Hill in London in 2015 and launched the 85-cover Ormer Mayfair restaurant in 2016 following the £15m refurbishment of Flemings, which he ran alongside the Jersey restaurant. However, 14 months later he ended his connection with the island. In addition to Rankin’s restaurant, Grantly Hall will also feature a Pan-Asian restaurant; an all-day dining restaurant; the Drawing Room, which will serve afternoon tea; and a spa lounge offering light meals and snacks. Located on a private island with a lake and listed Japanese garden, Grantley Hall is nearing the end of a multimillion-pound restoration and extension. It is owned by the Yorkshire-based Sykes family. General manager Andrew McPherson, who previously held the same role at Lucknam Park in Colerne, Wiltshire, is overseeing the transformation of the 17th century building into a hotel.

Aramark was appointed food service provider by J.P. Morgan at its new building in Dublin’s Capital Dock campus. Working with J.P. Morgan, Aramark and Jamie Oliver Group identified Jamie Oliver’s Deli as the offering most appropriate social dining experience for J.P. Morgan’s workforce. Customers will be able to enjoy a dedicated all-day Jamie Oliver food offer including breakfast, lunch and snacks, with a focus on healthy and balanced food made with local and sustainably sourced ingredients. The emphasis will be on giving the customer a constantly changing variety of dishes and recipes, including DIY porridge and salad bars. Throughout the rest of the day, customers can enjoy everything from hand-stretched pizzas to signature Jamie sandwiches, comforting seasonal soups and more. There will also be a full grab ‘n’ go offer available for busy customers, including fresh fruit and protein pots. Jamie’s Deli and the coffee dock are situated on the ground floor. With a nod to the glass factory that was once located in Ringsend, special themed lighting has been installed. An executive hospitality experience with roof garden will also be operated by Aramark on site.
