DoubleTree by Hilton Increases UK presence with 12 hotels opened in 12 months £16M investment programme for eight conversions brings total to more than 30 DoubleTree by Hilton properties in the UK

D

oubleTree by Hilton, one of Hilton’s (NYSE: HLT) 14 market-leading brands, has introduced an additional 12 properties to its UK portfolio in the past 12 months and now welcomes guests at more than 30 hotels throughout the country.

Eight of the 12 hotel openings were part of a £16 million conversion programme, providing unique, contemporary accommodations and full-service facilities to guests in Aberdeen Treetops, Bristol North, Coventry, Dartford Bridge, Edinburgh Airport, Newbury North, Southampton and Strathclyde.

Hotelier & Hospitality Design

Dianna Vaughan, senior vice president and global brand head, DoubleTree by Hilton, said, “The addition of 12 UK hotels in 2016 - from Aberdeen in Scotland to Southampton on the South Coast - took us past 30 properties and significantly strengthened our position in the market. Within each of these hotels, guests can expect the DoubleTree by Hilton signature welcome, complete with the warm DoubleTree Cookie - always delivered with a smile.”

4

Since launching in the UK in 2008, DoubleTree by Hilton has expanded rapidly across the country, opening an average of four new hotels each year. The brand offers a consistent, upscale standard of accommodation within a varied portfolio which has grown to incorporate many long-established hotels, such as DoubleTree by Hilton Hotel London - Ealing and DoubleTree by Hilton Hotel London - Hyde Park. Each hotel in the conversion programme has been refurbished, now showcases individual design and F&B concepts, reflecting the location of each property and newly renovated meeting spaces, commencing with DoubleTree by Hilton Hotel Strathclyde in October and completing with DoubleTree by Hilton Hotel Edinburgh Airport in December. Beyond the iconic warm DoubleTree Cookie welcome, each hotel provides guests with a full complement of services and DoubleTree by Hilton brand amenities, including the Wake up DoubleTree Breakfast™. Each of the hotels is also part of Hilton Honors, the awardwinning guest-loyalty program for Hilton’s 14 distinct hotel brands. Hilton Honors members who book directly through preferred Hilton channels save time and money and gain instant access to the benefits they care about most, such as an exclusive member discount, free Wi-Fi and a flexible payment slider that allows members to choose nearly any combination of Points and money to book a stay. Members can also redeem their Points for free nights, to gain access to unique events through the Hilton Honors auction platform. Somerset’s Blackdown Shepherd Huts business flourishes in 2017 for the glamping industry

B Hotelier & Hospitality Design

lackdown Shepherd Huts, based in Somerset, which make luxury outdoor living solutions in the form of bespoke and self build shepherd huts, has become a business to be reckoned with in the South West during the past five years. As they move in to the orders for huts in 2017, Will Vickery, who runs the hand-crafted shepherd huts business, is seeing an increase in the number of requests for huts for both commercial and residential use.

6

Will explains: ‘Blackdown Shepherd Huts started off as a small business and now are responding to a global market, with customers are contacting Blackdown from throughout the UK and beyond. Whilst our huts continue to be bought by customers in the UK and overseas for both commercial and residential purposes, we are keen to continue to focus on design, quality, and customer service. We’re all about quality and each bespoke hut takes about 8 months to produce. We know that our customers appreciate that our efforts are focused on them and their requirements, rather than mass producing shepherd’s huts that are not bespoke or unique. With glamping on the increase, our huts are really in demand. ‘Blackdown is a luxury brand and highly innovative company; we’re always thinking of new ideas to further improve our products, meaning that customers will always be buying a shepherd hut that has been built by expert craftsmen and women in our own workshops. We respond to individual needs - and glamping huts are increasingly popular.’ Blackdown also offers customers self build options with their huts for those who enjoy the DIY aspect of

putting their own shepherd’s hut together. Will adds: ‘We continue to offer our self build options for those who enjoy the hands on experience of creating their own hut, and all of the huts will have highest possible quality of craftsmanship applied to them. We are meticulous about attention to detail in every aspect of our service, from design to personal delivery. The foundation of our shepherd huts is our signature piece exquisite solid oak chassis and we love to create these. Our metal hut chassis have been specifically designed to form a solid basis for our huts - so whichever choice customers make, they are assured a sound investment. ‘We also use local businesses in Somerset or Devon where possible. For example, our metal work is second to none. The cast iron wheels and turntable are cast at a small local foundry using time-honoured techniques. Our handmade stub axles and draw bar are lovingly fabricated by our team of traditional craftsmen. ‘For our interiors, Blackdown always uses the highest quality materials and fittings as standard - we do not skimp on things you cannot see. We would much rather explain the price of quality than have to apologise for anything less. We look forward to 2017 and creating our next 48 huts for our commercial and residential customers.’ Will Vickery started Blackdown Shepherd Huts to create an innovative product and over the past five years he has designed them as luxury living spaces that include uses as glamping retreats, bedrooms, bathrooms, kitchens, catering huts, and offices. www.blackdownshepherdhuts.co.uk

S&T UK WORK COMPLETED ON

A Hotelier & Hospitality Design

After two years working on the £30m renovation and refurbishment of the former St Olave’s Grammar School, S&T(UK) Ltd recently completed work in transforming this architecturally significant Victorian building into the stunning 70 room The LaLit Hotel in London’s Queen Elizabeth Street. The boutique hotel and spa, which combines the finest Victorian architecture with Indian overtones and will have a school theme throughout, is due to open later this month.

8

Jeff Watts CEO, S&T UK Ltd commented: “S&T was delighted to work with the LaLit Suri Hospitality Group, which has a portfolio of 11 luxury hotels throughout India, on this, its first overseas property. We had a team of over 380 working on the project which included the groundwork, the M&E and total fit- out”. Working with EPR Architects the Suri Group and Archer Humphryes on the interiors, the grade II listed building has been painstakingly restored by S&T using the best in British craftsmanship. From its original oak panelling, cornicing, and striking arched windows to skirting boards, mouldings, chimneys and distinctive bricks, all have been carefully repaired or replaced with like-for-like.

THE SITE HISTORY

The striking red brick building near the Thames was originally designed for St Olave’s school by Edward Mountford, the architect of the Old Bailey, and built in the 1890s. It was most recently used by Lambeth College. Archaeologists were invited in for 14 weeks to dig the historic ground whilst construction was taking place and found the paths and foundations of the 18th century houses that had lined Tooley Street that were demolished to make way for the original school building in 1855. There had been low level occupancy around the site between the 15th and 17th centuries when the area became a sand and gravel quarry. THE CONSTRUCTION As with any listed building, this project had its challenges, particularly as the building was left empty for nearly ten years and had substantial water damage through dilapidated roofs. The emphasis was always to maintain as much of the original fabric as possible whilst supporting the new loads and layouts. The project progressed in three areas; a new third floor and roof, internals and basements. We inserted a new mezzanine floor between

the existing second floor and roof whilst strengthening the existing roof trusses to support a new replacement. The excavation was nearly nine meters below street level at the deepest point, so we needed a substantial sheet piling ground support system. The basement under the new building, which houses the spa, was formed by a controlled sequence of deep underpins so we could excavate to form new basement levels. Monitors were used to warn us of any excessive movement which could damage the old structure. The site footprint was restricted, so all the excavated materials had to be brought to a central collection point through a series of conveyor belts below ground.’ RETAINING THE KEY HISTORICAL ELEMENTS

‘Working on a listed building is all about discovery. You open something up and find structural problems or dry rot. We’ve worked on many restoration projects; it’s all about restoring what you find with all due care and attention to return it to its former glory,’ says Nick Viscusi, S&T Operations Manager. ‘There isn’t one room out of the 70 that is the same and we’ve replicated original features throughout the project. Every new element was bespoke and had to be site measured to ensure it fitted exactly.

We created a new Westmorland slate roof and at the centerpiece is an outstanding clock-tower that was falling to pieces. We restored all the original timber moldings and were able to commission Smith of Derby, the specialists that made the original bell and clock for St Olave’s, to carry out the clock restoration.’ Even the parquet floors have been restored. ‘The majority of the original floors have been taken up, re-machined and re-laid, sanded and stained to look like it would have done,’ says Hamish Anderson of flooring experts Campbell Contract Flooring. The stonework used throughout the project has also been carefully selected to complement the original. ‘We used two types, Scotch Buff York stone from Yorkshire and white Portland Stone from Devon,’ says stonemason Dave O’Donoghue from Drive Edgware Beautifully restored timber panelling and intricate carved plaster ceilings and cornicing are features throughout the building. The hotel’s centerpiece, the pan Asian Baluchi restaurant located in what was the Great Hall, boasts a vaulted cerulean blue ceiling, wood panelling and a gallery and the former Governors’ Room, which will be the cocktail bar, also has paneled walls and a plaster ceiling.

The Cleaning Show

Hotelier & Hospitality Design

If you asked the General Manager of a large hotel what takes up the majority of their time, they would likely say housekeeping management, as this is at the core of their operation and its success or failure will have a direct impact on profitability. At the top of their list would be ensuring the cleanliness and orderliness of the rooms, and ensuring they are sufficiently stocked with supplies.

16

A key activity for any General Manager is the planning of daily work schedules and the assignment of housekeepers to different tasks. From the plan, there is then the supervision of housekeeping staff to ensure that they perform their duties to the exacting hotel standards. This will include a range of activity such as room checks, cleaning and reordering of rooms once guests leave, scheduled deep cleans and checking public areas, all of which can be very challenging in a busy hotel. Gathering information from the housekeeping staff on maintenance issues and utilisation of supplies is often paper-based or by word of mouth, so in practice, some things fall down the cracks which can lead to customer complaints. If you do receive a complaint, how can you check if housekeeping performed against the expected plan? What evidence do you have to aid with performance reviews of housekeeping staff?

What you need is a cost-effective, easyto-use, cloud-based software solution that can be easily deployed across a single hotel or a complete group. This should include a simple scheduling system, which can capture daily work routines and simplify the staff assignment process. In addition, integrated time and attendance recording will ensure you have a complete record of when and where housekeeping staff attended work, while a simple drag and drop tool will help you plan the daily activities and communicate them to your housekeeping staff on their Smartphones.

rapid return on investment by saving many hours of management time and ensuring improved customer service. Once implemented such a system can deliver “push of the button visibility of housekeeping staffs performance against planned activities, providing management data for employee performance reviews, along with trend analysis of key activity such as room turnaround time, cleaning duration and room checks.

What is more, there should be a simple means of gathering evidence that the tasks were performed as planned, along with additional capabilities to electronically notify the maintenance team of any remedial work required; monitor utilisation and procurement of supplies; and manage potentially chargeable damage. The consumer world is awash with technology advances such as AI, voice assistants, big data and self-driving cars, so why are hotel managers in many cases still using paper for much of the above? Well, you no longer have to, by using a Facilities Workforce Management solutions like SmartTask you can automate much of the above which will provide a

Now, the more aptly-named Peppermill Interiors is a go-to place for contemporary furniture and unique vintage pieces, selling a huge range of products to both domestic and commercial clients all over the world.

Hotelier & Hospitality Design

Peppermill supplies furniture to several high-profile customers, with Starbucks, Marriott Hotels, Nando’s and Harrods being among its list of clients. As well as chains and big-name companies, Peppermill also supplies furniture to a huge number of independent hotels, bars and pubs, and countless domestic clients, who return time and time again.

20

The company has been at its new premises in Staffordshire for almost a year now, and the larger space has allowed Peppermill to suitably showcase its ever-expanding range of products. However, it is still a work in progress according to director Scott Humphreys: “We’ve still got a lot of exciting ideas to put into practice in our showroom. We’re currently building room sets, which will hopefully help our clients to envisage how our furniture can fit into their interiors, and we’re always thinking of fresh new ways to exhibit our stock and keep people engaged.” Early 2017 alone is an exceptionally busy time for the company as it prepares to launch a number of new product lines, including a range of outdoor furniture – a new venture for Peppermill who, until now, have focused mainly on indoor dining.

Scott Humphreys said: “Outdoor furniture is something we haven’t really stocked much of in the past, except for a few galvanised tables and chairs here and there. We’re really excited about this new line of furniture, which will be with us just in time for pubs, cafes and hotels to take advantage of when remodelling their outdoor seating areas for summer.” A large on-site warehouse allows most reproduction items to be kept in stock in large quantities, this means a quick turnaround and shorter lead times for customers – something the company takes great pride in. You can see the full collection of new, vintage and bespoke furniture across two floors at Peppermill Interiors’ large showroom in Burntwood, Staffordshire. The showroom is open to the public six days a week: Monday-Friday 9am-5.30pm and Saturday 10am-5pm. New products will be appearing gradually over the next four to six weeks; see the latest arrivals at www.peppermillinteriors.com or subscribe to the mailing list for news and updates.

The Coravin Wine System is the only tool in the world that lets you pour wine without ever removing the cork using Coravin’s proprietary technology. Now wine enthusiasts can expand their palates by exploring, comparing and contrasting regions, varietals, producers, styles and vintages without exposing entire bottles to oxidation. Restaurants and wine bars can use the Coravin System to expand their wine programs by offering better wines by the glass, without the risk of oxidization if a bottle is not sold that night, while wineries and wine stores can offer customers a taste of fine wines before they buy.

The Synergy Grill is a pioneering chargrill that uses 52% less gas. This gas saving equates to an average of £12,238 every five years, helping cultivate a carbon neutral kitchen. It also uniquely has no fat tray to clean. These benefits have been adopted by top chefs and snagged top prize for innovation at The Commercial Kitchen Show where the judges were “Wowed by a British-made design that is a true innovation for chargrilling.”

The greatest benefit, however, is flavour. Synergy Grills get hotter than average chargrills. Heat ‘atomises’ the natural fats that are released during cooking which are misted back into food making it incredibly succulent.

Bring Your Own Device from hotel’s perspective

Hotelier & Hospitality Design

You can’t live without your phone? And your tablet is always with you on your travels? It is because you can’t imagine yourself without having access to your favourite content? You’re probably not the only one. And most likely that’s why hotels started to invest in the new trend allowing its guests to enjoy a home-like experience in their interiors.

26

Bring Your Own Device (BYOD) – this term excites many guests. It means you can bring any type of smart accessory, mostly it refers to phones and tablets (at least for now), and bring it to a totally new environment, such as hotel room, but still receive similar, if not the same, experience as in your own home. For a simpler explanation we need an example. Let’s say you’re a big fan of this new Netflix series and you can’t go to bed without watching the latest episode. Unfortunately your boss sent you out on a long business trip and you dread

the thought of watching it on the screen of your phone or tablet as the size matters. Luckily for you the future is here and your hotel invested in smart TVs allowing content mirroring. What’s content mirroring? Most new generation TVs have a built in box that enables HDMI connection over WiFi. This way you can easily connect any of your smart devices to the TV and share its screen. From there it is not a long way to play Netflix on peer-topeer basis or YouTube channels, or even browse news on bigger screen, if that’s your liking. Add to this room service and you have a movie night just like at your cosy apartment.

Screen Mirroring

So why not meet their expectations and invest in this technology now?

Hoist Group offers screen mirroring within their Fusion TV solution. It’s an interactive platform that enables connecting guest room TV sets to IP network – without any extra cabling. If you wish to see how it works, visit their BYOD is an upcoming trend. MITRE’S EXPERT GUIDE TO CHOOSING THE BEST FILLING FOR YOUR DUVETS AND PILLOWS With so many fillings and togs options available today, selecting the right duvets and pillows for your guests can be bewildering.

Hotelier & Hospitality Design

To help hoteliers and housekeepers, Mitre Linen, the trusted hospitality provider, has created a quick reference guide that decrypts the composition of each individual pillow and duvet filling.

30

We have compiled some of their useful tips to help you choose the most suitable pillows and duvets and ensure your guests get a perfect night’s sleep.

Natural Fill Natural fill is feather, down or a combination of both. Down is the fluffy insulation under the feathers that keeps ducks and geese warm and protected from outdoor elements. Natural fills are best for conforming to the head, neck and body.

Microfibre

Hollowfibre

An excellent synthetic alternative to feather and down, Microfibre is a supremely soft fibre that drapes wonderfully around the body and offers rich, soft, comfortable support for guests. A perfect solution if you are looking to offer a synthetic alternative to down.

This is an excellent value, plump fibre filling that offer a firm, lasting support for duvets. Mitre’s Bounceback and Simply Soft duvets both come with a durable hollowfibre filling and offer excellent warmth and comfort. The complementary Super Bounce, Simply Soft and Annabel pillows are all made from hollowfibre.

Tencel Extracted from eucalyptus wood, Tencel naturally absorbs moisture and quickly releases it again. This property guarantees a pleasantly dry sleeping climate. Mitre’s Tencel Luxury duvets are soft to touch with a Tog rating of 10.5. Tencel pillows, which come with a luxurious quilted cover for added comfort, are available as soft or firm.

Siliconised ball This is a type of synthetic fill in which polyester clusters are coated with silicone to look and feel more like down. It gives the softness and appeal of a true down duvet. Similar to a microfibre fill, it is great for allergy sufferers who prefer a synthetic fill but want down-like comfort.

Bedding and Linens

• Make sure your pillow complies with legal requirements. All Mitre’s pillows are flame retardant. • Use a pillow protector to protect your pillows from moisture, dust mites, oil and dirt. • Ensure your pillows have dried properly to get rid of any moisture. • Check the wash and care labels on your pillows before you wash them. • Change your pillows regularly to ensure they keep their plumpness.

Top tips for your duvets • For improved hygiene and a longer life, invest in a duvet protector. Try a soft spun polypropylene protector with a zip.

• For those suffering with asthma and breathing difficulties, consider a duvet with antimicrobial agents or special Estlon fibre to reduce fungal levels. • Fluff the duvet up after use and give it a good shake. • On average we sweat half a pint a night so regular duvet replacement is recommended. Need some help to choose the right filling for your establishment? Chat to Mitre’s expert team on 01685 353456. Established in 1946, Mitre Linen is a proud holder of the Queen’s Royal Warrant. Its products can be spotted around the world as well as in prestigious British hotels such as The Ritz, The Grosvenor House Hotel and The Wellesley.

Fresh from the Farm

From Heartsease Farm to your shelves, this range of premium pressés boast flavour, heritage and prestige.

Hotelier & Hospitality Design

Using its very own fresh spring water as the foundation for its beverages, Heartsease Farm pays keen attention to the ingredients that are used to make its range of sparkling premium pressés.

34

“We try to source the best available ingredients,” says William Watkins, managing director. “From the finest Sicilian lemons to traditional British blackcurrants that arrive from a farm just down the road in Herefordshire. Provenance of our ingredients is key to each flavour.” With concoctions like Apple & Rhubarb and Raspberry Lemonade, the company errs on the side of sophisticated flavours, and even has smartly-designed bottles to suit the theme. This was a conscious decision, admits William. “Central to our business belief is to create products that look and particularly taste better than those of our competitors. With that central core value in mind, we have assembled a team of

experts in developing and producing delicious products. This is where some great ideas turn into reality.” The pressés are available in both 750ml and 330ml glass bottles, as well as 425ml premium PET bottles. These creative flavours can be found in local delis, food halls, farm shops, garden centres, pubs and cafés across the country.

Flavour heritage Named after the Welsh farm that has been in the family since 1903, the company began producing bottled mineral water in the nineties as part of the Radnor Hills brand. William’s family wanted to create a drinks range that reflected the heritage of their beloved farm, thus Heartsease Farm was born. It wasn’t long before the brand started catching the attention of drinks buyers. “There was a clear gap in the market for a really premium range

of sparkling pressés that are bottled in both glass and plastic,” says William. “Many outlets can’t stock glass and this gives them the chance to sell a super-premium pressé range in plastic bottles. It’s because of this, and many other reasons, that Heartsease Farm is performing extremely well.” Constantly with their eyes set on producing exciting flavours, the team at Heartsease Farms has a new guest flavour being released in the coming months. “Our new Strawberry and Mint tastes amazing,” says William. “It’s like summer in a glass.” William also believes that the Heartsease Farm pressés complement Radnor Hills’ other range of beverages. “We have become a one-stop shop when it comes to soft drinks,” he says. “Buyers can order mineral water, flavoured water, healthy school compliant drinks, fruit juices and premium adult pressés all from under one roof!”

Heartsease has been our family farm since 1903. We love great flavours and using our own spring water, we have blended these delicious drinks for you. I hope you enjoy them!

Ketel One Vodka is celebrating after being crowned ‘Best Selling’ Vodka and ‘Most Trending’ Vodka by the Drinks International Bar Report 2017. The much-anticipated report showcases the top selected spirits by bartenders in many of the best bars around the world and today named Ketel One as the number one vodka in two categories. For the fifth year in a row Ketel One has been awarded the ‘Best Selling’ vodka title and for the third year the ‘Most Trending’ in the vodka category.

KETEL ONE VODKA SWEEPS THE coveted industry awards showcase the BOARD AT GLOBAL The most popular spirits chosen by bartenders preparing cocktail-classics. Ketel AWARDS when One is celebrated all over the world for its quality and the excellence of the liquid has now been recognised as the perfect base for a Bloody Mary, Moscow Mule and Espresso Martini cocktail.

Bob Nolet, 11th generation distiller of the Nolet Distillery, whose father Carolus Nolet Sr., created Ketel One Vodka, said: “This is such a proud moment for the Nolet family. We pride ourselves on going the extra mile to demonstrate our dedication to creating vodka of remarkable quality – we call this the Ketel One way. We’re obsessive perfectionists when it comes to making

vodka and we’re proud to receive this recognition from the bartenders and Drinks International Bar Report. We also understand that while we can produce the best tasting vodka possible, it is the bartender who is the expert who brings the magic of this liquid to life. That’s why we thank the bartenders worldwide, who’s passion and dedication to the craft of cocktail making helps to share the distinctive crisp and smooth taste of Ketel One Vodka with new audiences across the globe every day.” Hamish Smith, Deputy Editor of Drinks International Magazine said: “Ketel One has taken the top vodka spot in our poll of top bars five years in a row. Highlevel bartenders are not known to be big vodka fans, with one notable exception: Ketel One. It is the vodka to stock in the world’s best bars and that doesn’t look like changing any time soon.” Ketel One Vodka is inspired by over 325 years of traditional distilling expertise, which has been passed from father to son for over 11 generations in the Nolet family – all driven by a relentless pursuit of excellence and quest for perfection. www.ketelone.com
