Industry News The beauty of bespoke at Bailbrook House Hotel, Bath Bailbrook House Hotel in Bath, is now adorned with bespoke woven carpet from Wilton Carpets Commercial. Drawing on the updated classic designs of the Virtue collection, nearly 3000 square metres of woven axminster carpet have been fitted throughout the original Grade II Listed Mansion House and adjacent Bailbrook Court accommodation and conference facility. The coordinating design transitions in the galleried walkway and selected areas of the Bailbrook Court building, where a more contemporary design takes over in hospitality suites to coordinate with the modern approach of the interior. A singular damask element is retained with dramatic contrasting purple tones offsetting the pared-back interior. The £10m restoration at the hotel created 13 prestigious feature bedrooms, many with stunning original features, a new fine dining restaurant, three large lounges and a conservatory bar in the Mansion House.

Beaumont Hotel owners choose specialists for decorative lighting In its most recent collaboration with Corbin & King, Dernier & Hamlyn has manufactured beautiful art deco chandeliers for The Beaumont Hotel, Jeremy King and Chris Corbin’s first hotel, which will open in Mayfair this autumn. A statement, grand fitting has been produced for the hotel’s entrance. Cast in brass and finished in antique bonze, it is dressed with custom made glass rods. A smaller version has also been made at Dernier & Hamlyn’s London factory and installed in the main lobby. Throughout the main public areas, including lobbies and stairwells, Dernier & Hamlyn has also produced feature pendants that include handmade cast glass panels that feature chevrons and have been sand blasted to emulate typical art deco styling. Jeremy King says: “We select our suppliers carefully and seek out companies that share our values, which focus on honesty, integrity and continual improvement. Dernier & Hamlyn has a similar approach. Therefore when it comes to bespoke lighting for our properties we choose D&H primarily for its reputation for quality, attention to detail and its business ethics.” Dernier & Hamlyn joint managing director Jeremy Quantrill says: “We have worked on several Corbin & King projects including Brasserie Zedel and Fischer’s. Producing lighting for the Beaumont Hotel was a really interesting project and one which drew on our historical knowledge and archives from the 1930s.”

Profit Growth for U.K. Provinces and West Midlands Hotels; London Hoteliers Bounce Back During Augus With London’s profitability bouncing back with positive year-on-year comparison in August, the UK Provinces go from strength to strength with gross operating profit per available room (GOPPAR) showing a double digit growth, and West Midlands hoteliers recording an 11.1% surge in this metric, according to the latest HotStats.

Simultaneous increases of 8.2% in average room rate (ARR) and of 0.7 percentage points in occupancy for West Midlands hoteliers boosted rooms revenue per available room (RevPAR) by 9.4%. Non-rooms revenues also showed positive movements and total revenue per available room (TRevPAR) grew by 8.2% compared to the same period last year.

Astute operating cost control helped to enhance DOPPAR levels by 10.8%. Despite overheads per available room increasing by 3.9%, payroll dropped by 2.1 percentage points and as a result GOPPAR shot up by 15.0% representing a gross operating conversion of 42.2% for the month.

Hotels in the seaside destination of Brighton recorded a strong month of August with TRevPAR and GOPPAR surging by 8.6% and 15.0% respectively, according to the latest HotStats. A combined growth in occupancy of 4.3 percentage

Southampton hotels also recorded a positive month of August with TRevPAR and GOPPAR rising by 2.0% and 4.9% respectively, according to the latest HotStats. With both occupancy (+2.9 percentage points to 89.9%) and ARR (+2.9%) increasing, Southampton hotels experienced a RevPAR growth of 6.3%. Mixed performances were recorded in ancillary departments and TRevPAR went up by only 2.0%. Efficient cost control further fuelled this revenue gain with DOPPAR increasing by 1.6%, and with payroll and overheads per available room declining by 0.4 percentage points and 2.2% respectively. As a result, GOPPAR went up by 4.9% representing a gross profit conversion of 30.4% for August.

Hoteliers also managed to reduce payroll by 0.4 percentage points to 35.2% as well as operating costs to deliver a departmental operating profit per available room (DOPPAR) growth of 8.6%. Despite overheads per available room climbing by 6.5%, GOPPAR shot up by 11.1% representing a gross operating conversion of 23.5% for the month.

Terry Venables opens Spanish boutique hotel La Escondida Hotel & Restaurant is set in 500 acres of olive and almond groves in a national park in the province of Valencia. Constructed as a hunting lodge in 1881, the property features 10 bedrooms, two lodge suites, and a restaurant run by a Michelin-starred chef.

and an outdoor pool set in manicured gardens. There is also a jogging track around the property’s 500 acres; and activities on offer include horse riding, hiking and mountain biking in the National Park, bird watching, hot air ballooning, shooting, golf and fly fishing.

Owners former England and Barclona manager Terry Venables and his wife and Yvette decided to open the hotel after falling in love with the area after a visit. They have spent the last two years restoring the 500 acre estate, retaining original features such as hand painted tiles to oak wooden beams.

Venables says La Escondida is “incredibly proud” of its cuisine, prepared by a Michelin star trained chef. “We’ve eaten some exceptional food in our lives but the best is always simple cooking beautifully presented using the freshest ingredients,” he said. “Most of the herbs and vegetables are grown on our land by our gardener and the breads and pastries freshly baked in our kitchen. We plan to have a bee hives so guests have fresh honeycomb for breakfast.”

“The beauty of the area was breathtaking. We are always in search of places that are off the beaten track and La Escondida was certainly that, yet such a short distance from the coast,” said Venables. La Escondida is located 35 minutes from the beach in the community of Penaguila, in the Font Roja National Park. It features an indoor swimming heated pool, spa, two terraces,

Investment In Training Affects Hospitality Industry’s Bottom Line Investing in training is important to hospitality organizations and restaurant and lodging companies’ bottom lines, says a new report released by the Council of Hotel and Restaurant Trainers (CHART) and People Report, a TDn2K company. The report, 2014 Trends in Hospitality Training & Development Study, serves as a benchmark for training and development practices. “We’ve known for years that investing in training is a worthwhile expenditure in the hospitality industry. It helps companies reduce turnover, foster a stronger, more skilled workforce, and provide a better customer experience. Now we have yet another report that backs up this essential premise in our industry,” said Patrick Yearout, director of training for Ivar’s Restaurants and CHART president. The report highlights a number of key findings, most notably: t A seat in the C-Suite. One-quarter of training departments report directly to the CEO or president of an organization. t Go online, see results. More organizations are turning to e-learning as part of their training suite, using it for knowledge leveling, validation and testing, and compliance. More than 80 percent of limited service restaurants and 73 percent of hotel and lodging companies report offering e-learning opportunities to employees. t A little bit goes a long way. Restaurants that spend more than four hours on new hire orientation have on average 20 percent lower turnover. t Investing in people matters. Increasing an organization’s budget to train certified trainers can reduce turnover by an average of 25 percent. Phipp Street modern office space by Amin Taha Architects

A creative team from Amin Taha Architects were given a project to transform the 2,800 sq ft of commercial space comprised over a ground and two upper floors at 18 Phipp Street, into modern and stylish office spaces. After consultations with Building Control, they required a clear coating for a staircase to achieve Surface Spread of Flame Protection. Thanks to participation in one of our CPD’s, they knew that Envirograf® would have a product that would meet their criteria.

With the help of Andy Wahts, Envirograf’s representative in London, they chose product QVFR for internal application, which is a clear fire retardant coating, available in satin finish, not requiring any top coat. Works have been carried out by Ecore Construction from London.

During Mr Waht’s visit at the property, a solution was found to provide 60 minutes fire protection to the exposed timber ceiling without the need to cover them with 2 layers of plasterboard, (by using Envirograf® HW Intumescent Coating System) which would make it more cost effective and allow Architects to achieve more desirable look. Envirograf® Intumescent Steel Coating has also been used, to ensure the construction of the building would be well supported even in the case of a fire. It can take just a few minutes for unprotected steelwork in a building to attain temperatures of around 550ºC in a fire. At this temperature, steelwork loses its loadbearing capacity and the structure is likely to collapse, giving little time for people to evacuate and even less time for the fire service to bring the fire under control.

Turning The Tables On Bag Thieves HOTELS, restaurants, pubs, bars and cafes across the UK are offering their customers an ingenious solution to the problem of bag theft. Venues such as The London Bridge Hotel and Sheraton Park Tower Hotel as well as chains such as Park Plaza and Intercontinental are using the Chelsea Clip (www.chelseaclip.co.uk) which can be fitted inconspicuously under tables to guard against bag snatchers. A popular bar in Manchester city centre has had no reported bag theft since customers started using the Clip. The Manchester Bierkellar, a theme bar boasting a wide range of German beers, has had a number of Chelsea Clips fitted in its dining area, which can seat more than 200 customers. The busy venue, which features 4 bar areas, regularly attracts more than 1,500 people on a Saturday night. Bags left unattended on the back of chairs or on the floor are prime targets for bag thieves but the Clip offers customers peace of mind as they relax with a drink or eat a meal with friends. The Chelsea Clip is a unique deterrent, which has a proven track record of preventing opportunist bag theft from public places. Produced by security company Selectamark, it is an injection-moulded nylon hook from which a bag, rucksack or camera case can be suspended by its own strap.

Luxury department store Harrods recently placed a large order for the Chelsea Clip to deter handbag theft and is using them under tables in their dining and bar areas. The Clips are also being used to protect businesses in Fitrovia, London. The area includes an eclectic mix of hotels, pubs and restaurants including the Charlotte Street Hotel and Japanese restaurant Roka.

Suitable posters and other display material such as window and menu stickers should always be used in conjunction with The Chelsea Clip as a deterrent to thieves and as a reminder to both customers and staff that the clips are there to be used. The labels, which carry the wording ‘Secure your bag here’ can be placed around the neck of a wine bottle to advertise the clips. One London council had the labels printed in different languages so that tourists and visitors to cafes and restaurants could be alerted to the risk of bag theft but protected from it at the same time. Lowers Temperature at Gala Dinner As more than 150 guests arrived for the Senior Open Golf Championship Gala Dinner in the banqueting marquee in the grounds of Hensol Castle they were assured of some of the finest food in Wales, set in a stunning historical setting, in an atmosphere where the ambient temperature was precisely controlled by equipment supplied by Andrews Chillers. The organisers and main sponsor wanted to ensure that the Gala Dinner on the eve of the main event would be a joyous and wonderful occasion and act as a perfect backdrop to the tournament that lay ahead. Whilst guests enjoyed this first class dining experience, operating quietly in the background was an Andrews Chillers 50kW fluid chiller heat pump connected to four 15kW fan coil units to keep guests cool. The marquee at Hensol Castle which measures 21m x 12m was to accommodate around 150 invited VIP guests and players.. With so many people in a relatively confined space, plus hot food and unexpected higher than normal summer temperatures they could all contribute to creating a very uncomfortable hot and humid environment. To prevent this occurring at one of the most prestigious events in Wales this year, event organisers insisted that the marquee was equipped with first-class temporary chiller hire solution to control air-temperature; this proved a wise decision as temperatures on the day soared above 30oC.

In the build up to hosting the main event engineers from specialist equipment Hire Company Andrews Chillers appraised the venue’s requirements and drew up a system configuration that could be installed quickly, would operate quietly and automatically adjust to changes in air temperature. One of the key requirements was that the overall system including pipework had to be unobtrusive and not distract from the luxury of the internal dressing of the marquee. Six days before the gala dinner Andrews Chillers delivered and installed an integrated cooling/heating system comprising a robust and extremely reliable 50kW heat pump and four 15kW fan units. The heat pump was positioned outside the marquee with pipe runs to each individual air unit sited virtually in each corner of the marquee. During installation the whole system was filled with fluid to create

a self-contained sealed pressurised installation. The Andrews 50kW heat pump circulates chilled water to each of the four fan coil units which are able to deliver air flow into the marquee as rates of up to 1200m3/h. Warm air from the hospitality marquee is drawn into the lower portion of the air handling units, circulates over the ‘cold’ coils resulting in a drop in temperature, the cooler air is then gently blown back into room from the top vents. Since temperature change will depend on air flow, air temperature and humidity the Andrews Chiller solutions had to adjust automatically to variants. As the warm air passes over the cold coils the water temperature rises, this returns to the chiller as part of the closed loop to be chilled and is then re-circulated to the air handling units. This totally closed loop chiller system supplied for the gala dinner at the Senior Open Golf Championship is typically of the equipment configurations that Andrews Specialist Hire supplies where temporary standalone heating/cooling is required. The Dolder Grand: luxury-class City Resort The Dolder Grand is the perfect environment for people who are looking for pleasure, exclusivity and relaxation: The original “Curhaus” dating from 1899 presents itself anew as the luxury- class City Resort. Renowned London architects Foster and Partners combined the historic Main Building of the Dolder Grand, some of which is listed, with modern architectural accoutrements. All annexes constructed after 1899 were demolished, and two modern wings – the Spa Wing and the Golf Wing – now enclose the Main Building. The Hotel makes use of geothermal energy for efficient energy consumption, with 70 probes having been sunk 150 metres into the ground. Guests value the Hotel’s elevated location between pulsating city and invigorating nature, and the magnificent view of the city of Zurich, the lake and the Alps.
