udy’s Neapolitan Pizza is set to open it’s doors on 9-10 Bennitts Hill, Birmingham on July 15th. The 100 cover restaurant will be a walk in restaurant only, similar to its sister venues in Ancoats and Peter Street, Manchester.

For Rudy’s it’s all about the pizza, the dough is made on site daily by the pizzaolos using 00 Caputo flour, it takes 24 hours to double ferment and then just 60 seconds to cook, which makes Rudy’s pizzas soft and light. Only the best fresh Italian ingredients are used to make the Pizza’s. The bases are San Marzano tomatoes, which are grown next to Mount Vesuvuis, along with ingredients local to the Province of Naples.

Schlosshotel Berlin by Patrick Hellmann (Berlin, Germany) An opulent mansion set in one of West Berlin’s most exclusive neighbourhoods, Schlosshotel Berlin by Patrick Hellmann is tucked away on a leafy street in close proximity to the city centre and surrounded by woodland. Built in the early 20thcentury, the property was recently restored by German fashion designer Patrick Hellmann and is one of Berlin’s only independently owned five-star hotels.

Decadent interiors complement the historic grand façade with each of the 53 unique contemporary guestrooms individually styled by Hellmann to reflect his favourite destinations including London and Marbella. Set steps away from the white sands of Waikiki Beach, Halepuna Waikiki by Halekulani is slated to provide a new, oneof-a-kind refined tropical experience in the heart of Honolulu. As the former Waikiki Parc Hotel, the property closed in October 2018 to complete a $60 million renovation and will reopen to guests for stays beginning October 25, 2019. The revamped haven will feature 288 rooms, light and airy interiors, teak finishes, vaulted ceilings, expansive windows, and works of art supported by the Honolulu Museum of Art. It’s one thing to read about the plastic that’s being dumped in our oceans, quite another to find yourself swimming in a sea of the stuff. I had an amazing diving holiday in the Maldives at the end of last year and fulfilled a life-long dream to swim with Manta Rays. I was lucky enough to experience an astonishingly diverse array of marine life, yet my joyous trip-of-alifetime also brought me face-to-face with the devastating effect plastic waste is having on our delicate marine ecosystems. Exploring the atolls today requires navigating the plastic chairs and other human-made debris that floats in this most beautiful region of the planet. Back at the villa, swathes of rubbish drifting past, was not an uncommon sight. The locals informed me that much of the waste plastic comes from Far Eastern recycling centres, where it is taken to be burnt. A significant amount of the plastic arriving there originates from the UK, as an increasingly our recycling is sent to the East. Due to open storage, huge quantities get blown out to sea in the process, I was told.

My ocean experience was enough to convince me unequivocally that sustainability is no longer just a desirable option, it’s essential. And at SEBO, it’s something we prioritise and plan for. Where commercial vacuum cleaners are concerned, although perhaps not to the same extent as the domestic market, the trend has been towards disposal. This is especially the case where they have been bought on price, rather than performance. For the environment, and the long term, this is actually an expensive way to operate, particularly where the poor performance of low-quality vacuum cleaners

can reduce the life expectancy of floor coverings leading to them being replaced more often. It can also lead to them being in a poor condition for much of the time they are in situ, with a negative effect on customers perception of cleanliness and giving an impression of low standards. The most successful hotels recognise the crucial importance of clean and well-presented premises. It is a major part of their continued success. It could be argued that the belief that products can be easily recycled has made people feel less guilty about throwing them away. But how many of these realise where their discarded appliances end up, and how much actually end up as landfill?

Black Ivy hotel transforms guest experience with integrated technology solution Black Ivy is a stylish neighbourhood bar and boutique hotel, located in the leafy Edinburgh suburb of Bruntsfield.

The hotel boasts 22 uniquely designed bedrooms and two busy bars and a popular food offer, dishing up classics with a twist, averaging 1,000 covers a week.

Having undergone a significant investment by Caledonia Inns two years ago, Revenue Manager, John Mustard also wanted to upgrade Black Ivy’s outdated technology to support the hotel’s focus on delivering exceptional customer service.

The Drafthouse, specialises in offering a range of lagers, craft creations and guest taps on rotation and is renowned for its Tank Beer. Also featuring a stage area, regular live entertainment is a big hit. Outside, there is a 60-seater al fresco Terrace, which overlooks Bruntsfield Links Park. Featuring fire pits, customers enjoy a campfire vibe outside and with two full-size table tennis tables inside, the venue is a great place to mix business with pleasure.

Zonal was the only solution to go for according to John. Zonal’s EPoS system connects with the hotel’s property management system (PMS), Rezlynx, so residential guests can bill any drinks and food directly to their room tab. “For us this is a big plus of Zonal; its technology is incredibly flexible so can integrate with other technology solutions that we may have, such as Rezlynx.” This means that Black Ivy's Zonal EPoS is the single reporting vehicles for its account team, giving them real-time data that allows them to keep a handle on sales and overheads.

But it’s not just about operations, the customer journey is also key to Black Ivy’s success. Zonal’s kitchen management system, Kitchen iQ, has been a game changer along with iServe, a handheld electronic order pad that offers access to EPoS functionality on an iPod or iPad from anywhere in the venue. “With two bars, including our popular Terrace, switching to iServe has been a winner for our team. They no longer have to run back and forth to the bar to process orders, giving them more time to focus on our customers. Food orders are also fed directly into the EPoS system and sent through to the kitchen, again saving time and the risk of mistakes. “Our chefs really liked Kitchen iQ as the system makes their lives easier and less stressful. Now if you ask them would they go back to paper, the answer is a resounding no!”

What’s the biggest challenge facing today’s restaurateurs? Costs? Labour? Customer loyalty? Maybe… Or maybe the biggest challenge of all – the one that arches over everything – is this:

How can I make sure I’m building a restaurant that’s ready for the future? Look at how the pace of change is speeding up. When electricity was introduced, it took 30 years to reach 10% of homes – but smartphones had 40% adoption within a decade.

Online big spenders

Our Aloha restaurant management technology already goes far beyond the old definition of POS, as thousands of contented customers around the world have already found out, 140,000 to be exact!

Online ordering for delivery is also a modern-day phenomenon – analysts Deloitte say 40% of customers prefer to order online, and when they do, they are likely to spend up to 15% more.

It enables customers to find and reserve a table at your restaurant online or via an app, then reduces their wait once they arrive with graphic seating plans.

Each en suite echoes the décor, with detailed wallpaper and vintage mirrors combined with stylish baths and spacious walk in showers. The family suite features a snug reading corner, fully stocked with bed time stories and bean bags for little ones, plus bunk beds with reading lights to keep them entertained. With attention to detail at every turn, the bedrooms also come equipped with fully-integrated smart LED television, as well as fast fibre WiFi connection, for uninterrupted FaceTime, Skype and online browsing. The rooms also use a keyless entry system, so guests only need their mobile to gain access.

Breakfast was a slightly more informal affair, Showcasing a modern outlook on classic British dishes with a commitment to quality ingredients and depth of flavour, the breakfast menu consisted of a variety of cooked and continental options with a selection of pastries and fruit juices. I was lucky enough to be given a classic cosy room during my stay. The room was an excellent size, with double, twin or king beds all available, as-well as suites. The room had character and came with its very own en-suite bathroom, work desk and satellite TV. I found the hotel room extremely clean and tidy and the views were simply stunning. Each room offers complimentary Wi-fi to their guest, so a perfect destination for people on their travels or working away from home.

Focus, France’s premier fireplace company exhibits for the first time at 100% Design, London Stand No. C19B Focus has come a long way since its founder Dominique Imbert created a fireplace design like no other: the first 360 degree pivoting fireplace made from a dramatic forged steel hearth with an extended flue, that has become the trademark of the company. The story starts in the foothills of the Cevennes in the medieval fortress town of Viols Le Fort, where it still has its HQ today. The company has grown from one man beating metal to a growing workforce of nearly 100 in the South of France. Its reputation for its handcrafted fireplaces has gone global, with Focus being specified by some of the world’s leading architects on projects ranging from houses to hotels. Focus has built its reputation on research and development and now includes 17 gas models in its catalogue. Focus gas fires emulate flames and the play of a real wood fire to an astonishingly authentic degree, whilst eliminating its disadvantages. All the gas fires in the Focus range are equipped with a CE-certified gas burner that can operate with either natural gas or propane. The state-of-the-art combustion system in Focus gas fires guarantees both ease of use and high performance.

Recently Focus has designed Slimfocus, a DEFRA approved fire which is ideal for urban areas where there are restrictions on wood burning fires and stoves. The Slimfocus is a periscope of flames. Its hearth is either suspended (in which case it can pivot) or supported by a base and fixed in place. Its streamlined shape takes up little space, whether it is positioned centrally in a room, near a wall or in a corner. Its exceptionally fluid lines make it one of Focus’s most stylistically revolutionary fireplaces.

Focus has also recently launched a range of white metal fires. In a bold move Focus has selected classic models - the award-winning Gyrofocus,Domofocus and Bathyscafocus - from its extensive collection and transformed them into the white knights of interior design. Offering a lighter touch to interior schemes, the whiteness shines out and provides a delicate contrast to the roaring flames within. Founded almost 30 years ago by Lisbon-born Alexandra Champalimaud, the studio is now run by five Partners who are all specialists in their respective fields. In addition to Alexandra Champalimaud, Partners include CEO Ed Bakos, Jon Kastl, Winston Kong, and most recently, Anna Beeber.

As a national monument, special attention was paid to the preservation of the original colonial architecture throughout the renovation. All of the public areas are re-planned to increase social engagement and create an ease of flow between spaces. With a sensibility that is much more contemporary than its previous design iterations, there’s an emphasis on maximising scale through the careful curation of custom furniture in sumptuous shapes, ornate screens, locally sourced heritage antiques, and impactful lighting. The new reception and lobby lounge - once iconic places frequently visited by dignitaries and diplomats - is transformed into an elegant reception with a curated dining menu and now serves as the gateway to the hotel’s alluring spaces for dining and imbibing: Tiffin Room, Writer’s Bar, La Dame de Pic, Long Bar, and Butcher’s Block. The palate is composed of the original black and white contrasts juxtaposed with caramel, shades of green, and creamy neutrals. Light floral references and gilded trimming along with a bejewelled chandelier add a layer of refinement to the overall vision.

Known for creating luxury environments for a global client list which includes the likes of The Plaza New York, the legendary Troutbeck hotel in Upstate New York and The Gainsborough Bath Spa, Champalimaud Design was approached in 2013 by Raffles Singapore and tasked with the monumental goal of a complete redesign of Singapore’s oldest and most iconic hotel. The studio was presented with a unique challenge of maintaining an ambience intrinsically tied to the hotel’s unique 130 year long history, whilst at the same time taking the hotel in a renewed design direction through a meticulous update and refresh. One of the most recent projects undertaken by Milk is a bespoke sauna and steam room installation at Broughton Hall Estate, creating the design and fabrication of a truly unique project. From an initial customer brief we delivered the design concept through to detailed production and fabrication drawings, material sourcing and fabrication. All in-house processes that led to the creation of a truly unique thermal experience. The sauna created for this installation was manufactured within Milks workshop and was created as a result of the complicated assembly of laminated timber elements. These elements were then CNC’d to form the 148 individual components required to form this unique sauna cabin. The prime grade Hemlock Timber used for this installation was sealed and protected against the rigors of operation by applying 3 coats of Supi Sauna Wax, a product by Tikkurila. A Milk designed circular feature ceiling light was installed mirroring the corporate image of the wellness facility, casting a wonderful light across the curved interior of this sauna. The fluid interior space is complimented by the installation of a Harvia Globe sauna heater. The steam room installation was created in partnership with Wedi Systems UK Ltd, made up of 28 individually formed segments, these were bonded together, sealed and vapour-proofed, ensuring a durable substrate for the Christian Botteganove mosaic tiling. As ever for Milk these mosaics were installed by the uniquely talented Sharon Taylor of Viva Tiling. The hand crafted ceiling light to match that of the sauna but to cater for the specific thermal requirements of the steam cabin, again reflecting the Avalons corporate symbol, compliments the lustrous lines of the steam room interior and that of the sauna heater.

Literally raising the roof:

At Hilton’s brand new Tower of London bar What do you do when you want to create the latest destination rooftop bar in London, but don’t want your vision to be hampered by the elements? You turn your outdoor bar into an indoor bar – or an indoor, outdoor bar, if you’re the DoubleTree by Hilton Hotel London – Tower of London. Jason Eastwood, Managing Director of Canopies UK, reveals how the sky really was the limit when it came to making sure guests can enjoy the iconic views of London from Hilton’s Savage Garden bar, whether it’s day or night, raining or sunny. Canopies UK were contacted by the hotel’s owner to help transform the former Sky Lounge site on the 12th floor into a 8,870 sq ft, 400 capacity lounge bar, including a feature bar, cocktail lounge, dining areas, private spaces, as well as two large outdoor north and south-facing terraces.

Essentially, the project involved making a real statement, which Canopies UK enabled the Hilton to do by helping the hotel make the most of every single square inch of space that was available to them – both inside and out.

“The north Wildside terrace is a dedicated events space that can be hired for private events and functions, such as weddings, and looks out over many of London’s landmarks, including Tower Bridge, The Gherkin and St Paul’s Cathedral,” explains Jason. “Being up on the roof, meant that the new bar, particularly the Wildside terrace, was at the mercy of the weather, so we were called upon to install one our Cantabria canopies, which features not one, but six retractable roofs that can be opened and closed independently of each other at the touch of a button. From a design perspective, it’s a real head-turning feature, and from a practical perspective, it enables the terrace

to be quickly and easily transformed from an al fresco summer hotspot into a winter events space for private hire and seasonal pop-ups.” In addition to the highly stylish and unique retractable waterproof roofs, the canopy also features integrated guttering, LED lighting, heating and a combination of fixed and vertical sliding glass screens that can be retracted in the finer weather and partially or fully closed in cooler, wetter and more changeable weather. Meanwhile, the overall structure has been painted grey so that it seamlessly blends in with the surroundings and the inside is white, which helps make the space feel bright and spacious.

A tall order Working at such a height – 12 storeys up meant that Canopies UK had to overcome several logistical and practical challenges in order to install the canopy, which spans 37 metres in length and stands at almost six metres tall. A total of 18 crane lifts were used to move the 20,000kg of materials that were needed to build the canopy, from the ground to the top floor within extremely tight parameters. Due to the site’s central London location, there was limited space for the materials on both the ground level and up on the roof. “Thanks to our careful planning and logistics and working closely with the hotel and other contractors, we were able to work around these space restrictions,” adds Jason.


Testing times Canopies UK also had to overcome several other challenges that really put their skills to the test during the four-month project, which included increasing the overall height of the 36 metre-long canopy so that it incorporated the terrace steps. This was achieved through a combination of clever design and joining systems and by creating a Perspex-filled arc feature. And because the building wasn’t totally square with the canopy, Canopies UK made a bespoke GRP system that linked the building and the system neatly together. While state-of-the-art Hilti scanning tools and bespoke structural calculations were used to fix the actual structure to the existing roof.

The sky’s the limit “Our extensive experience and tried-and-tested processes, particularly our site-specific calculations, all really came into play for this installation,” adds Jason.

“For instance, by scanning the concrete, we were able to create a bespoke fixing method that would cause minimal disruption to the structure. It’s innovative ways of working like this, that also meant the hotel was able to stay fully open and all nearby guest and conference rooms and bar areas could still be used as the Cantabria canopy took shape. “This project really does prove that the sky’s the limit when it comes to installing one of our canopy systems. We’re extremely proud of this installation, which is testimony to the fact it’s possible to transform your outdoor space into indoor space, no matter how tight space gets or how high up you may be!” The hotel’s General Manager, Bernadette Gilligan, said: “The canopy on Wildside has been flawlessly designed to accommodate events throughout the year. “Come rain or shine, guests can enjoy everything from drinks to private events in the space as the retractable canopy - designed and built as bespoke for Savage Garden – means that the terrace can be cosy and covered during winter, and the perfect suntrap come summer.”
