The 2 AA Rosette restaurant is now headed up by Dean Williams, who joins 1907 after four years as executive head chef at Old Thorns Manor Hotel in Liphook. He had also enjoyed roles as head chef of Silvermere Inn on the Lake in Cobham, senior sous chef at Loseley Park in Guildford and chef de partie at Morgans Hotel and Oxwich Bay Hotel in Swansea. “I look forward to continuing the hard work and innovation that has led to an outstanding reputation for 1907, which is so much more than a standard hotel restaurant,” says Williams. “As well as an indulgence for guests staying at the hotel, all the team and I also want to continue to build on the progress of welcoming non-hotel guests at weekends and especially mid-week, as well as continue the creativity and skilled work that go into Brooklands Hotel’s excellent offerings for events, celebrations, business lunches,
weddings and more.” Williams is joined by another new colleague at 1907, Valentino Gentile, newly appointed as sous chef. One of the first tasks Williams has undertaken at the 1930’s inspired restaurant is to revitalise the menu at 1907, to bring in an early taste of autumn. Newly-introduced dishes include nine new starters and mains, as well as an entirely new dessert menu of six sweet treats. The new dishes on the menu at 1907 are joined by new cocktails at the bar, designed by the bar’s team of charismatic mixologists. The 1907 is part of the 131-bedroom Brooklands Hotel which opened in 2010.
Radisson Red Hotel Glasgow to open in 2017 Carlson Rezidor are delighted to announce the signing of Europe’s first new-build Radisson Red hotel. Due to open in 2017, the Radisson Red Hotel Glasgow will feature 176 rooms, a stylish “Redeli” restaurant and a “Oui” bar; a gallery; more than 100sqm of meeting space and a gym. “Following the recent Carlson Rezidor signings of Radisson Red hotels in Asia (Shenyang Hunan; China) and Africa (Cape Town; South Africa), we are proud to announce the first new-build property in Europe. Glasgow is one of the strongest markets in the UK, and Radisson Red will add a vibrant new concept to the city’s hospitality sector. Inspired by the millennial lifestyle trends, the brand addresses
the highly connected and design savvy world traveller”, said Wolfgang M. Neumann, President & CEO of Rezidor. The Radisson Red Hotel Glasgow, once opened, will be located just 300m away from the Scottish Exhibition and Conference Centre (SECC). It will also be 2km and 10km away from the city centre and international airports, respectively. “The Radisson Red Hotel Glasgow will be a flagship and strengthen the brand’s strategic roll-out in Europe, the Middle East & Africa and across the globe. News New GM for Apex hotel City of Glasgow premises on Bath Street this autumn following an extensive £10.5 million refurbishment.
Scottish hotel group Apex Hotels has announced the appointment of Helen Gallagher as the general manager of its new 104 bedroom City of Glasgow hotel – its first venture in the city. Helen has 15 years’ experience in the hospitality industry working for a number of quality hotels. She will lead the opening of the new four star
A Glasgow girl born and bred, the move marks a homecoming for Helen who has previously held roles at The Scotsman, Princes Street Suites, Oban Bay Hotel and Spa and Rocco Forte Hotels among others. Helen holds a degree in Business Studies and an Honours degree in Business Economics from Glasgow Caledonian University. She also completed the General Managers Programme at Cornell University in New York. Helen comments: “The ethos of Apex Hotels really attracted me to the position. It’s a family business and, while it has grown into a successful
hotel group, it hasn’t lost that personal touch. Two more Ultimate Cafes open in partnership with major retailer Independent coffee shop The Interesting Eating Company has launched a further two Ultimate Cafe outlets in partnership with Ultimate Outdoors. As part of the long-term affiliation between the local eatery and the outdoor retail giant owned by JD Sports Fashion plc, the brand provides inhouse coffee shops in the new Dudley and Nottingham Ultimate Outdoors. Similar to the original Preston-based site, Ultimate Cafe is homed on the ground floor of both venues located within Merry Hill (Dudley) and Castle Marina Retail Park (Nottingham), and mirrors The Interesting Eating Company’s ‘great food and service’ ethos.
“As an independent, it’s fantastic to have filled a gap in the market between local SMEs and retail giants.” Ultimate Cafe located within Ultimate Outdoors echoes The Interesting
Eating Company’s signature branding and quirky offerings, which include specialty pancakes and waffles, ‘grab and go’ light bites, cakes and freshly prepared gluten free variations, as well as barista hot beverages. To keep children entertained, the new sites also feature large scale state-ofthe-art indoor soft play areas, which enable youngsters to exercise while having fun. London hotels 85% occupancy in August STR Global’s preliminary August 2015 data for London, England, indicates increases in average daily rate and revenue per available room. Based on daily data from August, London reported: increases in supply (+2.3%) and demand (+0.5%); a 1.8% decrease in occupancy to 85.4%; a 4.2% increase in ADR to GBP141.59; and a 2.4% increase in RevPAR to GBP120.90. London hosted the European Society of Cardiology (ESC) Congress from 29 August through 2 September.
According to STR Global analysts, London hotels have seen consistent growth in transient demand but a decline in group demand with lower rates available outside the capital. In addition, the weakening of the Euro against the British Pound continues to lead to more affordable outbound travel from the market. Even with those factors and an increase in supply, London’s absolute occupancy in August eclipsed 85.0%. STR Global will release August 2015 results during the week of 21 September. Royal Exchange presents refreshed spaces and menus

officially launched on 9th September, boasts a menu featuring sharing plates and a regularly changing, innovative drinks list. Signature cocktails, inspired by 19th Century American mixology include: the John Haig’s Crusta, a mix of Haig Club with Mandarine Imperial, lemon juice, gomme syrup and orange blossom essence shaken and served in a whisky sour glass for a refreshing kick; as well as the Mexican Couperee – a twist on the West India Couperee – made with vanilla liqueur foam, Patron Anejo, Citronge, lime juice and homemade Falernum.

London’s Royal Exchange by Bank has always been a stunning building and, this week, D&D London is reopening its refurbished hospitality offerings. And they look well worth a visit. On the mezzanines, the new Threadneedle Bar and an all-day dining Gallery will be unveiled, alongside Restaurant Sauterelle (pictured above). All three overlook the existing Grand Café and boutiques on the ground floor. At Sauterelle, Executive Chef Stefano Leone will serve a new modern menu drawing inspiration
from the repertoire and flavours of Provence and Liguria, sourcing ingredients from the Mediterranean and Britain, with a focus on sustainable produce. New entries include Marinated Loch Var salmon, sea leaves and fish broth and Tortelli di Zucca Gialla, while meat-loving palates can opt for Rhug Estate organic Aberdeen Angus beef fillet with roasted shallots, blue creamed potatoes and Barolo jus, as well as Gloucester old spot pork, pancetta, espelette chilli and pequillo pepper. For drinks and cocktails the new Threadneedle Bar (above), which

TRAKHUPFER HELPS DELIVER BREAKFAST IN BED FOR RAGDALE HALL GUESTS
Merseyside based TrakHUPFER has supplied four of its ISOBOX® Mobil foodservice trolleys to Ragdale Hall, the award winning residential Health Hydro and Thermal Spa near Melton Mowbray, Leicestershire. Ragdale Hall provides guests with a balanced environment for fitness, well-being and relaxation, which includes pre-ordered breakfast room service for a tranquil start to the day. Breakfast includes a variety of freshly prepared, health conscious menu items including hot pastries, Danish pastries, croissants and wraps. Ragdale’s investment in the TrakHUPFER ISOBOX® Mobil foodservice trolleys was driven by the need to serve breakfast in 93 rooms, over three floors, in a little over an hour, without deterioration in the quality of hot breakfast items. Cooked, freshly prepared food is placed in the pre-heated insulated foodservice trolleys in the kitchen, before the trolleys are transferred to the residential landings by lift. The trolleys, which incorporate modular heating panels, are plugged into an electricity supply at a landing service station, maintaining the unit’s holding temperature above 63oC for food safety and optimum product quality. The foodservice trolleys feature fan assisted heating, eliminating the potential for condensation, which compromises the quality of the pastries.

Ragdale Hall’s Executive Head Chef, David Ross, reported that the ISOBOX® Mobil foodservice trolleys had helped improve and extend the spa’s breakfast offer: “We now have the ability to deliver a much broader breakfast menu, including sweet and savoury hot pastries, with the confidence that product quality will be maintained throughout the breakfast service. We couldn’t have considered extending our breakfast menu before we purchased the TrakHUPFER trolleys.”

The small footprint ISOBOX® Mobil trolleys are castor mounted for ease of manoeuvrability through the narrow lifts and corridors of Ragdale Hall. The units have 12 pan supports to accommodate 1/1 GN stainless steel pans, providing sufficient capacity for one unit to serve breakfast on a complete floor of up to 50 rooms.The stainless steel and aluminium units have bump resistant solid bumper corners and are inherently robust to meet the day-to-day rigours of movement and service. The optional modular heating panels are capable of heating the holding units at up to 100oC, with precise temperature set and maintained via digital controls. David Ross added: “Before we purchased the TrakHUPFER trolleys we were using simple insulated boxes. Adopting the new trolleys has enabled us to provide our guests with a greater breakfast choice, delivered to their rooms, maintaining the high standards people have come to expect at Ragdale.”

Chiller Box Helps Drive Olive Oil & Oregano Expansion in the UK
CEDA members Chiller Box have become the supporting force driving the UK expansion of Greekbased open-kitchen grill restaurant chain Olive Oil & Oregano.

Explaining the growing partnership Chiller Box managing director Marios Poumpouris, comments, “Olive Oil & Oregano is the biggest Mediterranean grill restaurant chain in Greece, also with outlets in Cyprus, Bulgaria, Germany and the UK. They opened new restaurants in the Westfield Stratford City and Westfield Merryhill shopping centres, and we provided some equipment and advice for the Stratford site.

“With their next opening at the Lakeside shopping centre they were looking for a strong local partner that understands their concept, and expansion plans, and one that could handle the obvious challenges of designing, constructing and opening a new restaurant with the timing, access and noise restrictions that busy shopping centre environments have. “Being a CEDA member and offering services from design and equipment specification through to ongoing service and advice, coupled with the fact that we are a business with Greek origins means that we can deliver all they require, and quite literally speak their language.” With a detailed brief in-hand Chiller Box worked closely with Olive Oil & Oregano’s interior design partner to
overcome the space, budget and logistical challenges. Parent company Patafritas S.A had used Greek suppliers for some of the equipment specified in the Westfield projects, but had some hiccups with logistics, compatibility and standards. Marios Poumpouris adds, “After a few headaches with catering equipment brought in directly from Greece Chiller Box was given full charge of designing, specifying and installing what works best for Lakeside. In some cases it was slightly more expensive, but will work out more cost-effective in the long-term, and obviously includes our ongoing service and support. “More than this we have also been asked to support Olive Oil & Oregano as they look for new potential sites in the UK working with property agents on their behalf.” Talking about the latest project for Chiller Box Adam Mason, CEDA director general, notes, “It’s fantastic that Chiller Box has created such a strong working relationship with Olive Oil & Oregano’s UK and Greek management to deliver this project into Lakeside. “It underlines their professional approach and commitment to go the extra mile, something that you would expect from a CEDA member. PANTHEON’S NEW COMBINATIONS OFFER A LITTLE EXTRA!

antheon has launched its first range of steam combination ovens. However, instead of the more usual 6 and 10 grid sizes commonly available, the smallest ovens in Pantheon’s new range are 7 and 11 grid, followed by a more conventional 20 and 40 grid. This decision was primarily down to extensive customer and dealer research that preceded the final designs in which the feedback overwhelmingly supported the notion that size does matter! Intended for a wide variety of applications, field trials have now taken place in establishments ranging from pub kitchens to a Michelin restaurant and results across baking, roasting, grilling, browning, steaming, stewing and low temperature cooking have proven outstanding. Importantly, the ovens all feature their own, internal water heaters which help ensure a very reliable and consistent steam source without the potential problem of rapid scale build-up. The ovens provide 67 fully automated programmes with temperatures ranging from between 20°C and 270° C for steam convection and convection cooking and between 20°C and 100°C for steam only. A food hold facility operating at 50°C can be incorporated into any programme or used in isolation and the ovens can also be operated manually if preferred. What were the main drivers behind working with IMC to manage your waste? Since starting to recycle our food we wanted to further reduce our carbon footprint, we had already become zero to landfill with the help of Compactors Direct.

Compactors Direct approached us with the IMC system as they are distributors of the IMC Waste station. Unfortunately as in most hotels of our size space is a premium in our kitchens. Working with Compactors Direct and IMC we came up with a solution of having the waste station built into our main dishwasher. This enable us to reduce the food waste at the point of source and maximize our food waste recycling as well as reducing our food waste collection and reducing our own carbon footprint.

What results have you seen so far, both in terms of reducing carbon footprint and financial savings? Our food waste has been reduced by up to 80% so our food waste collection have been greatly reduced so we have seen significant savings in this area also as we are not having as many food waste collections our carbon footprint has also been greatly reduced. One of the benefits of dewatering is the removal of the odors associated with waste food which is not only unpleasant but can attract all manner of vermin. On top of technologies like those provided by IMC, how important are small changes within your business to reducing waste? (For example, changing staff culture, training, smaller portions, and so on) Please give some examples of these at your business. With working with Compactors Direct and also IMC we have installed a glass crusher to reduce our glass collections, as baler to reduce our cardboard collections and a bin press to reduce the collections of our DMR. It is very important for Melia Whitehouse to ensure that we are completely zero
to landfill and fully able to recycle to the highest level as well as reducing our carbon footprint. When we first started to recycle we had full training for all of our staff and continue with ongoing training so that new staff and existing staff are kept up to date with the hotels ethos on increasing our recycling rates and the continued reduction of our carbon footprint. Meliå Hotels International is now looking at installing the IMC waste station in our hotels that are currently being built in the UK. In recent years how much have customers’ attitudes changed towards waste reduction? Is it more important for them now that businesses do have an effective strategy in place? In recent years we have found that our customers are more aware of how businesses are dealing with their waste and are interested in finding out how they have taken steps to reduce both their waste and carbon footprint.
