The brand is rolling out a large-scale international communication campaign with an all-new angle on the hospitality experience. As you will probably remember, Pullman announced its global repositioning strategy a year ago, and one of the big breakthroughs back then was an advertising campaign featuring the brand hotel and resort spirit and design, which we created with the DDB Group. Then, artwork by British photographer Nick Meek and a new tagline - Design Your Journey - enhanced this project's distinctive identity. Design Your Journey, all around the world Today, Pullman is unveiling its new identity worldwide. The advertising campaign is rolling out in top-tier newspapers and upscale magazines across Europe today. The brand is also keen on reaching out to frequent travelers, and therefore stretching its magazines including Air France Magazine and Lufthansa Magazine, as well as billboards in the main international airports including Dubai, Frankfurt, Jakarta, London, New Delhi, Paris, Riyadh and Sydney.

UNWTO and France debate areas of further cooperation UNWTO Secretary-General, Taleb Rifai, and the French Minister of State in charge of Tourism, Fleur Pellerin, met to discuss the new tourism strategy of France as well as how to further strengthen the collaboration with UNWTO. Issues on the agenda included visa facilitation, taxation and the World Committee on Tourism Ethics (Paris, 30 June 2014). Mr. Rifai commended the decision of France to place tourism as a national ‘cause’ and welcomed the 30 measures recently announced by the Government to promote the competitiveness of the sector, in particular the visa facilitation measures. These include, among other, the extension of the ‘visas in 48 hours’ initiative, launched in China in early 2014, to several Gulf countries, South Africa and India. Ms. Pellerin explained that the measure had translated into an exponential growth in the number of visas issued in the Chinese market from 30 to 250%. “The call by President Hollande to place tourism as a national cause clearly shows the value that is awarded to the sector in France as a means to create jobs and improve the balance of payments”, said Mr Rifai. “France is a tourism leader, the most visited destination in the world, and is aware that keeping such position in today’s competitive market requires strong cross-cutting policies that support the sector. At UNWTO we particularly welcome the measures adopted by France to promote visa facilitation, one of our priorities, as we trust that, as our research shows, job creation”, he added.

The palace was divided into two distinct wings: The Iéna wing comprised the family residence and reception halls, accessed from 10 avenue d’Iéna, facing north. The ground level featured a two-storey ceiling and mansard roof with bullseye glass windows to draw in light, and a courtyard entryway and ornate gates ensured a private, residential feel to the expansive palace, a characteristic the building retains even today despite its bustling location. carriages, followed by meticulous reception in one of the three reception salons, which included a fumoir and a billiard room styled in Greco-Roman design. Designed by Ernest Janty and crafted from forged steel and polished brass by the Moreau brothers of the Château of Chantilly fame, the staircase embodies the grandeur of the estate. A bronze statue of a child holding a torch still stands today before the staircase, which leads to the residential salons and the prince’s library on the upper level. Scribbles lights up Elgin’s High Street The UK’s only wireless light-up back gantry - by New Concept - has just

Scribbles, the bar that also serves as pizzeria, coffee house and ice cream parlour, has just reopened after a speedy but extensive refurbishment. It’s 40 year old owner Faith Simpson, bought the restaurant outright in 2010, but decided it needed a revamp four years later. “I don’t think you can expect people to come in your business and spend pennies and pounds if you are not willing to reinvest in that business yourself,” she said. She originally planned to do a minimal facelift, but after meeting Sandro Formisano from New Concept, decided she needed something more far-reaching. “Sandro has a big personality. He’s not just trying to sell you his product, he tries to understand your business and he Maxim Range bar gantry, which sets the place alight with frozen glass shelving and LED alternating lights. She said: “Sandro said the bar has to be the focal point. Everything else will come from there.” The old orange counter was replaced with a black marble bar, capped with a new eye-catching Peroni font. Plastic table are used to zone the space, with pale avocado decor in the front, for the restaurant and black leather in the back for the bar area. Drink sales at the table-service-only restaurant have gone through the roof thanks to the simple trick of placing wine glasses on the tables at 4pm. Several tables of four were replaced with more marketable tables of two at Formisano’s suggestion – and as a result Simpson is taking full advantage of the 95 covers. A week after work began, Simpson reopened her doors to the public and said the place was hardly recognisable. “It’s amazing what was achieved,” she said.”The place doesn’t feel like the same business because it has a completely different look.”

New Concept Sales Director Richard Pearson said: “Scribbles were only looking to change the display cabinet before sitting down with Sandro.

“After the meeting, they decided to change the whole place. Sandro Sat down with Faith and advised on what he felt best for the Restaurant to which Faith took on board leading to a full front of house refurbishment. The Multifunctional Combi Steamer An advanced combi steamer like the Rational SelfCookingCenter® whitefficiency® is a truly multifunctional cooking appliance – it can roast, poach, bake, toast, braise... it can even pan fry fish and cook chips. All at the touch of a button, and all with consistent quality. “The Rational ethos is to be a partner in the kitchen, from giving training and advice to developing programmes and processes to prepare chefs’ signature dishes,” says Lee Norton, managing director of Rational UK. “Our development chefs will go to a hotel and work with the customer’s kitchen team to find the best way to cook a whole variety of recipes. We can then programme the processes into the SelfCookingCenter whitefficiency, so that even untrained staff can duplicate perfect results.” The latest Rational is even simpler to use, because it intelligently adjusts to the way each chef works.

22

Because it is multifunctional, a SelfCookingCenter saves space, replacing 40 to 50% of standard appliances, reducing the kitchen footprint by at least 30%. Options such as the Ultravent condensation hood, which eliminates unwanted cooking fumes and steam, can do away with the need for extra, expensive extraction systems and is ideal for FOH, theatre-style kitchens. The latest Rational SelfCookingCenter whitefficiency has up to 30% more capacity, cuts energy consumption by up to 20% and reduces production times by up to 30%, compared to previous models.

Hotelier & Hotel Design - December 2013

Hotelier & Hotel Design - December 2013

The SelfCookingCenter allows mixed loads of foods to be cooked at the same time. For example, it takes all the juggling out of preparing a full English breakfast. All the chef has to do is load the combi steamer, select the food and how it needs to be cooked and that’s that. The combi does the rest, fully automatically. A full breakfast of toast, eggs, bacon, sausages, tomatoes, hash browns, fried bread and mushrooms can all be cooked perfectly, together - in as little as six minutes.

Rational offers customers a complete package of menu development support. “We also run free demonstrations and training sessions at venues throughout the UK and Ireland, where chefs can learn about the latest combi cooking 22 techniques,” says Lee Norton.

THE BOATHOUSE PURE IMAGINATION

The Cafe/Bar refurbishment was awarded to GIA with a brief to enhance customer experience and to have greater family appeal. GIA were delighted to use their imagination and creativity. Our design originated from a local Mere which is home for wildlife, natural paradise. Functionality is one of GIA strengths and this, overlaid with pure imagination produced a facility strong on family appeal, with custom designed lighting and seating ingeniously linked back to the inspiration of the Mere. The space is a main artery into other facilities and therefore this had to be creatively integrated into the scheme without destroying the comfort and ambience of this imaginative creation. You can visit many times and you will always see something new.

Why choose wood? The most persuasive argument is the fact that people respond so warmly to real natural timber - seeing it as a stamp of comfort and luxury. New Gourmet Lunch Menu at The Ba Renowned brasserie The Balcon has launched a new all-day lunch menu featuring a selection of playful small plates, a dedicated list of croque monsieurs and options of Market Specials. Perfect for foodies tight on time, the new menu will also provide a ‘Tray Rapide’ option - a gourmet threecourse lunch served in less than 45 minutes. Created by Head Chef Vincent Ménager, the new menu utilises the best of seasonal British ingredients from hand-picked suppliers, transforming them into classic dishes with a French twist. Signature dishes include small plates of Grilled squid and Jersey Royal potato salad, with a parsley lemon pesto (£5); and Braised Angus beef short ribs and carrot bourguignon (£7). Main courses include Native lobster, coquillettes pasta, with clams and an asparagus gratin (£21), and brasserie favourites such as the Cheddar cheese Scottish beef burger, with bacon jam, shallots, and mushroom ketchup (£14). Desserts will once again draw on modern classics such as a Baba, made with Dalmore single malt 12 year old whisky instead of rum (£6). The addition of Small Plates to the menu is ideal for those looking for a lighter meal, and dishes such as the Tart Flammekueche (£5/£10) are perfect for sharing. The list of Croque Monsieurs, include Morbier and asparagus rump with aged cheddar and mustard (£11). The restaurant’s Charcuterie Bar greets guests as they enter the dining room and, with bar stools overlooking the action, it is the perfect place to stop in for a quick bite and a glass of champagne. Recently appointed General Manager Nicolas Pesty said: “The Balcon has always been a place where the traditions of Paris are brought to life in the heart of London, and the new menu which Vincent and the team have created delivers this on a whole new level. We have kept the tradition of classic dishes, but tried to have a bit of fun with it all, whilst the addition of small plates and croque monsieurs will accommodate London’s appreciation for great food, in a relaxed atmosphere.” The new menu is available at The Balcon now, served between 11am – 11pm. The ‘Tray Rapide’ lunch menu is available between 11am – 2.30pm, Monday to Friday and priced at £18. The Balcon takes its inspiration from a Parisian brasserie with a
