Four Decades Of Fish Frying BY CATHY MOLITORIS
On Friday evenings from March 4 through April 8, the Parish Center of St. Peter Roman Catholic Church, Second and Union streets, Columbia, will be buzzing with activity. Teams of volunteers will be
dishing up the church’s Lenten Fish Fry, a tradition that dates back four decades. Last year’s fish fry was takeout only due to the pandemic, but this year will mark a return to dine-in, with takeout also available. Food will be served from 4 to 6:30 p.m. See Fish pg 2

or almost 100 years, Holy Trinity Catholic Church members have been serving up “a little bite of heaven.” That’s how they describe their homemade fastnachts, which will be sold at the church beginning on Monday, Feb. 28. Sales will continue Tuesday, March 1, and Wednesday, March 2, followed by Mondays and Wednesdays through March 23. Preparing the fastnachts - which volunteer Jim Knapp said number 620 dozen each day - requires a full battalion of workers. “We make the dough at night, and it rises overnight,” explained volunteer Karen Sahd, noting that the dough rises in special cupboards set

up in Our Lady of the Angels School across the street from the church. “The next day, it gets rolled out and rises more, and then it’s fried.” The rolling process is an all-day job that begins at 4 a.m., and it includes exact steps, said volunteer Betty Mahan. “There is a specific way you have to roll them, and you never turn the dough,” she remarked. “You release the dough up from the table before you cut them. It’s a specific process.” Knapp, who has been volunteering with the fastnacht bake for about 15 years, is in the charge of the frying room and the glazing room. The fastnachts are available by the dozen either plain or glazed, and Knapp said the latter is the most popular choice. “Sixty-seven
percent of what we sell are the glazed ones,” he noted, adding that the fastnachts are dunked fully in the glaze. Knapp explained that Holy Trinity’s fastnachts are nothing like a doughnut, although both have a hole in the middle. “A doughnut is cake-based, and these use yeast dough,” he said. “Ours have a unique taste you won’t find anywhere else.” Fastnachts were traditionally made on Shrove Tuesday to use up lard before Lent, which runs from Ash Wednesday to Easter. “ We don’t use lard in ours, and we don’t stop making them the day before Lent,” Sahd said. “We actually go three weeks into Lent.” As Knapp joked, “We’re slow eaters.”

Outside the home, that healing can continue in the Serenity Gardens, situated on the 7.4-acre grounds of Riverview Tower, home of The GateHouse’s Residential Extended Care for women. gardens, and he’s excited about that. “ We want to invite the community in to see what we’re all about here,” he said. “We want the women here to get involved in volunteer work in the community as well. We’re doing everything we can to reduce the stigma associated with people in recovery.” And he’s looking for additional donors for everything from purchasing an engraved brick to planting a tree or sponsoring a bench. When The GateHouse opened Riverview Tower in 2019, it transformed a late 19th-century house into a home for up to 30 women, who can live in the house for up to 90 days before moving to transitional housing. With
headquarters in downtown Lancaster, The GateHouse operates a behavioral health outpatient center and other extended-care residences as well as transitional living homes in Lancaster County. Stoudt said the organization may use the Serenity Gardens as a model for similar projects at its other locations. “We are hoping the women will use the gardens as a place to relax and reflect,” Stoudt said. “It’s another tool on their recovery journey.” A grand opening of the Serenity Gardens is planned for the spring, but a date has not been set yet. Augustine Joseph noted that people ask about the fish fry and look forward to it every year. “It’s a community event,” he stated, adding that it offers a nice alternative to cooking dinner on a Friday night. “It’s about building community, supporting Columbia and the surrounding towns. It’s open for everyone.” Sahd-Havrilla, who wears her grandmother’s apron while working at the fish fry, said it’s been a tradition in her family for years. “I remember my grandma used to help with this,” she recalled. “She was super
involved in the church, and this is a way for me to honor her and hold her in my memory since she passed away.” The fish fry is sponsored by the Parish Council of Catholic Women with assistance from men of the parish. Proceeds are used to fund various activities in the parish. Dayna Wickenheiser, who has also been volunteering with the fish fry for about nine years, encouraged people to make plans to come out for a meal. “It’s a really nice time,” she stated, noting that a nun in the parish often plays the banjo and entertains the crowd. “There’s a lot of laughter, fun and fellowship.” Parking for the fish fry is available adjacent to the Parish Center, and the Parish Center is handicapped-accessible. Reservations are not needed for the meal. Dine-in customers will be asked to wear masks when not eating and to practice social distancing.

Stoudt knows what he’s talking about. A recovering addict who got clean in 2005, he said he personally benefited from being outside in nature. “I know that in your recovery journey, you can get so much out of a place that provides a quiet space to reflect, recharge and center yourself,” he stated. “For me, I do a lot of meditation and prayer. I need that spiritual connection. That’s what we’re hoping the gardens will provide for the women here.” While the gardens are started, there is still work to be done. Plans include expanding the brick paths down to bus stops on the main road to provide the women with easy access to transportation. A greenhouse will be added onsite, offering hands-on gardening opportunities for the residents, and Stoudt said plans are in the works to create walking trails throughout the woods on the property. He noted he’s already received calls from local churches and organizations that want to volunteer in the

Law enforcement also maintains the boxes and secures medications that are received until they can be destroyed. The YCSWA’s waste-toenergy facility is equipped with state-of-the-art combustion technology and air emission controls. The facility’s operator, Covanta York Renewable Energy, also supports this method at the York County Resource Recovery Center.

The York County Solid Waste Authority (YCSWA) disposed of a total of 1.64 tons of unused and expired residential medications in 2021. The medications were collected via the YCSWA’s secure medication take-back box program and community drug takeback events, along with illegal drugs delivered by law enforcement for destruction. The secure medication take-back box program provides a secure disposal option for unwanted medications from residential sources at no cost to the public or to law enforcement agencies. All York County police departments have been invited to participate. Illegal drugs captured by law enforcement are also destroyed at no cost. The medication take-back boxes, purchased by YCSWA from MedReturn, work like a

The Keystone Chapter of Associated Builders & Contractors (ABC) recently announced that Keith Eldredge, a partner at RKL in Mechanicsburg, has been named chair of the board for 2022. Eldredge grew up with several construction workers in his family, spent time on job sites and worked on several construction projects. A certified public accountant (CPA), he has provided audit and tax services for construction companies for more than 36 years. He is an active member of ABC Keystone, most recently serving as first vice chair of the board and chair of the Budget and Finance Committee. He has also served on both the legislative and membership committees and on the Keystone Chapter’s education committee and was the chair in 2014. Eldredge has been a member of the Construction
Financial Management Association since 1994 and earned his Certified Construction Industry Financial Person designation in 2014. Young noted that if she doesn’t have enough funding to treat the animals, she takes money out of her own pocket. As a result of participating in the Extraordinary Give in November 2021, RRWC received nearly $35,000 with the stretch pool. “We have great supporters,” said Young. “We can’t do it without the support of our community. And the volunteers here are amazing. They believe in what we do, they believe in our mission, and they’re fantastic. Lord knows I couldn’t do it all myself.” Some of the nonreleasable animals at RRWC serve as educational ambassadors in its programs. RRWC offers off-site programs for birthday parties, schools, camps, clubs, and more. The programs are suitable for people of all ages and can be tailored to fit the groups’ needs. Most people do not have the knowledge to take care of injured wildlife, which is why Young encourages members of the public to call RRWC if they come across wildlife in need of assistance. “It is our job to keep the public safe and educate, educate, educate,” stated Young. Due to the COVID-19 pandemic, RRWC had to cancel all of its 2020 programs and is still trying to financially recover. Until March 2021, Washington Boro resident Tracie Young had spent six years working a full-time job in addition to running Raven Ridge Wildlife Center (RRWC). As the need for services, outreach programs, and wildlife emergencies grew exponentially, Young knew she had to make a decision, so she quit her fulltime job to dedicate more time and attention to RRWC. Young had opened RRWC in 2015 after receiving permits from the Pennsylvania Game Commission, the Pennsylvania Fish and Boat Commission, and the U.S. Fish and Wildlife Service. Although located in Washington Boro, RRWC treats animals from roughly 17 counties in Pennsylvania and rehabilitates nearly 2,000 animals every year. RRWC specializes in treating birds of prey, such as vultures, eagles, hawks, and owls, as well as rabies vector species, such as bats, skunks, and groundhogs. “This center is important,” Young explained. “It’s giving wildlife a second chance, which is so important because they need to be here for the next generation.”

Maria and the von Trapp family face a moral decision. Featuring well-known songs such as “Climb Ev’ry Mountain,” “My Favorite Things,” “Do Re Mi,” “Sixteen Going on Seventeen” and the title number, “The Sound of Music” earned five Tony Awards and five Oscars. The original story is based on “The Trapp Family Singers” by Maria Augusta Trapp. This production holds special significance for the Fulton as many cast members, designers, and crew members were part of previous Fulton productions of “The Sound of Music.” The cast features Hanley Smith as Maria, Will Ray as Captain von Trapp, Daniella Dalli as the Mother Abbess, Taylor Quick as Liesl, Austin Phillips as Rolf, Blake Hammond as Max Detweiler, and Katie Sina as Elsa Schraeder. The other members of the von Trapp family are played by local young actors Ariana Stambaugh, Jack Packer, Carly Geiter, Charlie Carroccio, and Lucy Trout as well as Penelope Schulz, whose mother and grandmother were in the 1992 Fulton production as Marta and Maria, respectively. The creative team includes Marc Robin, Ben McNaboe, Sam Groisser, Anthony Lascoskie Jr., Paul Black, Michael Schweikardt, Josh Allamon, Rebekah Church, Domingo Mancuello, Katelin Walsko, and Joey Abramowicz.
