Thanks to a grant from the KTA Funding Hope Foundation, Trinity Assembly of God (AG) has been given a helping hand with its mission to serve hungry people in the community through its Joseph’s Closet food bank, part of the church’s Trinity Compassion Ministries (TCM) program. Dave Kovach, president of KTA Funding Hope Foundation, recently visited Trinity AG in West Chester to present the church with a check for $14,000. The funds were used to purchase a 2016 Dodge Ram that is helping to transport food that is donated by local restaurants, fast-food establishments, grocery stores and convenience stores. “The whole back of the van is used for storage. We pick up food every single day,” explained Caleb Gudgeon, TCM director. “We distribute 2,500

pounds of food a week. We literally feed thousands of people in the greater Philadelphia area every single week.” Trinity AG and KTA Foundation logos will eventually be added to the van. Gudgeon explained that he filled out a grant application at www.kta fundinghope.org, hoping to receive at least part of the money to finance the cost of the van. “I told them that whatever they could do would be helpful,” he explained. “They got back to me in a couple weeks, and they said that they wanted to pay for it in full to help out our ministry.” Kovach, a managing partner at Kistler-Tiffany Advisors, explained that the foundation has a mission to provide financial support to individuals and charitable organizations in the community, as well as those that help animals. “ We’re a financial planning company, and we created a charitable See Van pg 5

The Chester County Opportunities Industrialization Center (OIC) is currently seeking people from the community who would like to make the difference in the lives of adult learners by becoming volunteer tutors. No experience is necessary, but volunteers must have a minimum of a bachelor’s degree. According to Felice Burstein, adult tutoring assistant program coordinator, there is a current waiting list of 38 people located throughout Chester County who are in need of volunteer tutors to help them improve their English language skills. “We currently have students from 30 countries who want to learn English, as well as U.S.born students who want to get their GED,” she said. the 39 years encompassed in the study, rectal cancer rates grew 3.2 percent annually for adults ages 20 to 39. Colon and rectal cancer have, historically, affected older men and women. But the most recent research shows an increase in the number of adults in their 20s and 30s who are being diagnosed with these cancers, particularly rectal cancer. Individuals already at an increased risk for colorectal cancer as a result of their lifestyle or family history may need to begin screenings at an earlier age. Individuals should talk to their health care provider about risk factors and what age they should begin screenings. People who are at high or increased risk for colorectal cancer can include those with a family or personal history of colon or rectal cancer or colorectal polyps; a family or personal his-

tory of other cancers, including ovarian, uterine, gastric, and breast; a history of inflammatory bowel disease; and a personal history of radiation to the abdomen or pelvic area as a result of cancer treatment. The ACS’ new guidelines also issue recommendations about colorectal cancer screening methods. While colonoscopy remains the gold standard for both the detection and treatment of colorectal cancer and precancerous polyps, other options are available. In its new guidelines, the ACS recommends choosing from six different types of screening tests. Screenings include a highly sensitive fecal immunochemical test, a highly sensitive guaiac-based fecal occult blood test, multi-targeted stool DNA tests every three years, a colonoscopy every 10 years, a virtual colonoscopy (CT colonography) every five years,

and flexible sigmoidoscopy every five years. These screening recommendations are for every patient, and it does not matter which method they choose. However, if a test is positive, people should make sure to follow up with their health care provider, as they will then require a colonoscopy. A colonoscopy can detect potentially cancerous polyps and lesions before they develop into cancer or a more progressive form of cancer. If individuals notice any of the symptoms of colorectal cancer, regardless of their age or health status, they should call their health care provider. Symptoms include a change in bowel habits, like diarrhea or constipation; rectal bleeding; blood in the stool; abdominal pain or cramping; weakness and fatigue; and unintended weight loss. Timely treatment can affect the choice of treatment options and survival.

The American Cancer Society (ACS) has released new recommendations for colorectal cancer screening guidelines, including the age screenings should begin for colorectal cancer. Previously, the screening age for a person at average risk was 50. The new guidelines have reduced that age to 45. By lowering the screening age, the goal is to detect colorectal cancer earlier in patients who are at an increased risk for the disease. Even with advances in detection and treatment, colorectal cancer is the number one abdominal malignancy that affects both men and women. Roughly 1 in 20 Americans will develop this cancer, and getting a colonoscopy can help in the detection and treatment of it. Last year, the Journal of the National Cancer Institute found that colon cancer rates increased from 1 percent to 2.4 percent annually since the mid-1980s among adults ages 20 to 39. For

Aging is associated with a host of mental and physical side effects. For example, many adults expect their vision to deteriorate as they grow older. Such a side effect can be combatted with routine eye examinations that may indicate a need for a stronger eyeglass prescription, a relatively simple solution that will not impact adults’ daily lives much at all. While physical side effects like diminished vision might not strike much fear in the hearts of aging men and women, those same people may be concerned and/or frightened by the notion of age-related cognitive decline.

Some immediately associate such decline with Alzheimer’s disease, an irreversible, progressive brain disorder that gradually destroys memory and cognitive skills, ultimately compromising a person’s ability to perform even the simplest of tasks.

But age-related cognitive decline is not always symptomatic of Alzheimer’s disease. Learning about Alzheimer’s and how to maintain mental acuity can help aging men and women better understand the changes their brains might be undergoing as

they near or pass retirement age. The National Institute on Aging notes that only a very rare form of Alzheimer’s disease is inherited. Early-onset familial Alzheimer’s disease, or FAD, is caused by mutations in certain genes. If these genes are passed See Alzheimer’s pg 7

The seventh annual Lanchester Fiddlers’ Picnic is set for Saturday, Aug. 18, from 10 a.m. to 5 p.m. at the Landis Woodland Preserve, 610 Zion Hill Road, Atglen. This year’s event will feature a wider variety of performers and musical styles than ever before. “I wanted to make it a variety this year - country, folk, bluegrass and old-time (music), and I’m pretty much on the way to doing that,” musical organizer and master of ceremonies Dave Armstrong said. The main stage at the Fiddlers’ Picnic will open at 10 a.m. with young performers from the Cab Calloway School of the Arts in Wilmington, Del. Other performing groups that have already indicated they plan to attend include returning favorite the Orpheus Supertones, a group that is well-known in old-time music and has performed internationally. Progressive bluegrass band Acoustic Turnpike is scheduled to play, as well as traditional bluegrass band Short Notise. Another bluegrass group on the schedule, J-Tyme, is composed of members of the Horst family. “It’s a nice up-and-coming family playing bluegrass,” Armstrong noted. A somewhat different sound will be provided by autoharp artist David Kilby of Oxford. “He played for me early on in the second year (of the event), and I was pretty much blown away by his talent,” Armstrong said, adding, “I’m hoping to have a gospel singer at the end who has a good repertoire of music and has written songs.” The work of organizing the event is a team effort between Armstrong, event organizer Jim Groff and West Sadsbury Township. “I always wanted to have something like this happen in Christiana,” Groff said. “When (former West Sadsbury Township supervisor) Jim Landis had approached me about using their park, I didn’t know anything about the park. We walked almost the whole property and I thought, ‘This is perfect for what I want to do.’” While the main stage will be the center of activities, there will be many opportunities to venture

into the woods for impromptu jam sessions. Those who would like to perform for the larger audience may sign up for stage time as it is available. All bluegrass, oldtime and country styles are welcome in the all-acoustic format. “I’ll have plenty of spots open for stage time,” Armstrong said. “I’d like to encourage (everyone) - especially the young people - to come out and play music.” In addition to the music, there will be a free hayride around the grounds, a violin vendor and lots of food. Mount Zion African Methodist Episcopal (AME) Church members are scheduled to return this year with their popular fish fry. “We try to keep it a community affair. All of the food vendors are local nonprofits,” West Sadsbury Township supervisor Barry Edwards said. “The park is almost a hidden gem; people don’t know what’s back there. Once you get up there, I think everybody’s pleasantly surprised with what they find.” Handicapped-accessible parking and musician parking will be available on-site during the event. Others should follow the signs to offsite parking. There will be shuttles running from the park to the parking lots all day, plus there will be golf carts on the grounds for anyone who needs assistance getting around the park. There is full shade around the main stage, which will help to provide relief from summer temperatures. Attendees should bring their own blankets or lawn chairs for seating. No alcohol is permitted on the grounds. Admission is free, but a parking fee will be collected. There is no rain date for the event. In the case of severe weather, readers may check www.westsadsbury twp.org for updates. Information in advance of the event is available by calling the West Sadsbury Township office at 610-857-5969. Pictured on front: Organizer Jim Groff (left), musical organizer and master of ceremonies Dave Armstrong (center) and West Sadsbury Township supervisor Barry Edwards invite the community to the seventh annual Lanchester Fiddlers’ Picnic, set for Aug. 18 at the Landis Woodland Preserve.

StarFest from pg 1 prizes. Admission and parking will be free, but donations will be accepted. Attendees are welcome to bring lawn chairs or blankets for seating. A food vendor will be on-site. This year marks the 20th anniversary of StarFest, which was first held at Warwick County Park. “We moved to Hopewell in 2010,” noted Rob Cordivari, who is event co-chair along with Mary Howe. “This event will cover all aspects of astronomy for beginners all the way to advanced amateurs,” said CAS club president Josh Wright. “We will have a full spread of presentations, astronomers available and telescopes available. There will be multiple things going on throughout the evening.” StarFest will open at 5:30 p.m. for solar observing and telescope setup. A Kids’ Corner featuring educational activities will be available from 6 to 7 p.m. Opening remarks will be offered by Wright, who will talk about the evening’s events and provide a short history of CAS and StarFest. Special guest speaker James Aguirre, associate professor of physics and astronomy at the University of Pennsylvania, will present a program at 7:30 p.m. Aguirre’s topic will be radio

astronomy, which is study of celestial objects that give off radio waves. The keynote speaker for StarFest 2018 will be Derrick Pitts, chief astronomer at the Franklin Institute Science Museum in Philadelphia. Attendees will be given free tickets to win door prizes, such as small telescopes, binoculars and other prizes, which will be awarded throughout the evening. The grand prize of a high-powered telescope will be awarded at approximately 9:15 p.m. Public stargazing will begin at 9:30 p.m. Approximately 30 telescopes will be available to attendees, who will be able to view Jupiter, Saturn and Mars throughout the course of the evening. “This is as close as Mars will be to Earth in our lifetime,” Wright pointed out. Another highlight of the evening will be 10 Object Row, when 10 members’ telescopes will each be focused on a different deep sky object. This will allow viewers to see a variety of astronomical objects such as a nebula, a supernova remnant and a galaxy. CAS is a nonprofit amateur astronomy club devoted to raising awareness of astronomy and to educating the general public about light pollution and

preserving the night sky. CAS meets monthly on the Sunday nearest the full moon starting at 7 p.m. at the Crow’s Nest Preserve, 201 Piersol Road, Elverson. The guest speaker for the meeting on Sunday, Aug. 26, will be Bob Button, NASA’s ambassador during the Mercury, Gemini and Apollo missions. The club also holds Star Parties at French Creek and Marsh Creek state parks. The next scheduled Star Party will be on Saturday, Sept. 15, from 6:30 to 11 p.m. at Marsh Creek State Park, 675 Park Road, Downingtown. The public is welcome to participate in either or both events. The rain/cloud date for StarFest 2018 is Sunday, Aug. 12. For more information, readers may visit www.chesmontastro.org or search for “ChesMont Astronomical Society observing+” on Facebook. The items are then delivered to partner organizations for distribution in Coatesville, Philadelphia and Wilmington, Del., among other areas. “One of the vans totally broke down. People may donate canned food at any time by placing donations in the waterproof food collection bin located outside the church. Items that the food bank is especially

in need of include soup, canned fruit and vegetables, peanut butter and jelly. The church is also in need of volunteer drivers to pick up and deliver food. A driver’s license and a clean driving record are required. Trinity AG is located at 1022 Pottstown Pike, West Chester. For more information, including volunteer opportunities, readers may contact Gudgeon at 610-692-1897 or caleb gudgeon@trinityag.org. Those in need of food are also asked to contact Gudgeon. foundation,” Kovach explained. “ We do not give to general funds. We want to know that our money is doing something. Buying the van is exactly what we are looking to do. We debated as a board if we were going to give (part) of the money, and we just decided to finance the whole thing.” In addition to the grant to Trinity AG, the foundation recently donated educational materials to Big Brothers Big Sisters of Bucks County and provided a grant to Surrey Services for Seniors. Trinity AG pastor Jimmy Smuda said the van donation was a blessing to the church and the ministry, noting that

GriefShare from pg 1 Trace. “Again, if you don’t want to talk, you don’t have to.” Following the breakout sessions, the group comes together for closing comments and a prayer before the meeting ends. GriefShare is open to people of all ages, including those who have experienced a recent loss and those who have been grieving for years. “We end up getting different ways of looking at things because people react differently and everyone is at a different point in their journey,” said Trace. “Everyone is in the same boat, and there is so much support. It’s a big, big help.” People can attend GriefShare at any time because each meeting is self-contained; participants do not have to attend in sequence. “I got something out of each session,” Trace commented. She pointed out that at times, friendship groups have formed outside of GriefShare. “Over the summer, we had little potluck dinners once a month, so we could still support each other throughout the summer,” she said. “You can make some nice friends.” Some people repeat the entire course or just the sessions that deal with a particular topic. Also, people who have a recent loss are welcome to attend the program again after some time has passed. “I wanted to go through it again to see where I was and to see how far I’ve come from the first time,” Trace said, explaining why she participated in the course a second time. “You get little workbooks, and I could see the difference from the first time I went to the class to the second time. I’ve come further than I thought.” For more information about the GriefShare session at Gateway Church or to register, readers may visit www.gcwired.com/griefshare or email griefshare@gateway onechurch.com. More information about the GriefShare program can be found at www.griefshare.org. Alzheimer’s from pg 2 down from parent to child, then the child is likely, but not certain, to get FAD. So while many adults may be concerned about Alzheimer’s because one of their parents had the disease, the NIA notes that the majority of Alzheimer’s cases are late-onset, which has no obvious family pattern. Studies of Alzheimer’s disease are ongoing, but to date there is no definitive way to prevent the onset of the disease. Although researchers have not yet determined a way to prevent Alzheimer’s disease, adults can take certain steps to maintain their mental acuity into retirement. Routine exercise may be most associated with physical benefits, but the NIA notes that such activity has been linked to benefits for the brain as well. For example, a 2011 study published in the journal “Proceedings of the National Academy of Sciences of the United States of America” found that aerobic exercise training increases the size of the hippocampus, leading to improvements in spatial memory. The NIA also notes that one study indicated exercise stimulated the brain’s

ability to maintain old network connections and make new ones vital to cognitive health. Avid readers may be happy to learn that one of their favorite pastimes can improve the efficiency of their cognitive systems while delaying such systems’ decline. A 2013 study published in the journal “Neurology” by researchers at Chicago’s Rush University Medical Center found that mentally active lifestyles may not prevent the formations of plaques and tangles associated with Alzheimer’s disease, but such lifestyles decreases the likelihood that the presence of plaques or tangles will impair cognitive function. Maintaining social connections with family, friends, and community members also can help women prevent cognitive decline. Epidemiologist Bryan James of the Rush Alzheimer’s Disease Center studied how social activity affected cognitive decline, ultimately noting that the rate of cognitive decline was considerably lower among men and women who maintained social contact than it was among those with low levels of social activity.

“It turned out to be one of the best things I have ever done for myself,” said Donna Trace when recalling her decision to attend GriefShare, a support group for those dealing with the death of a loved one. “It is something we all have in common. We all lose people, and we all need help.” The fall session of GriefShare will begin on Tuesday, Aug. 14, at Gateway Church, 160 Cowan Road, Parkesburg. Meetings will be held every Tuesday through Oct. 23 from 7 to 9 p.m. The meetings are facilitated by Paul and Twila Ranck. GriefShare is a nondenominational group that features biblical teaching on grief and recovery topics. Session topics include “Challenges of Grief,” “The Journey of Grief” and “Heaven.” The topic for the opening meeting will be “Is This Normal?” Trace, who lost her husband, attended the complete GriefShare session both times it has been held at Gateway Church. Prior to that, the sessions took place at FAMILIES in Gap. “I was at church and I heard them say they were going to have (GriefShare) here, and I thought I could use that. So I signed up that day,” Trace recalled. “A friend went with me to be my support. I wasn’t sure how I was going to react and what it was going to be like.” Each session, which is held in The Venue meeting area in the church, begins with light snacks and beverages, including coffee and tea. Each person is then asked to introduce himself or herself and to share which loved one they have lost. “We usually go around and say our first names, but if you don’t want to talk, you don’t have to,” said Trace. “You just say, ‘Pass.’” Attendees then watch a DVD that features real-life stories of people who have experienced loss. Each participant receives a workbook that features a section for taking notes on each video as well as daily Scripture readings. “After the video, if there is a large group, we break up into smaller groups and discuss what we got out of the video,” said

Roasted Wild Alaskan Black Cod Fish can provide a host of flavors and make for a healthy addition to one’s diet. Alaskan cod, for example, is easy to find and, because it is high in certain omega-3 fatty acids, packs quite a heart-healthy punch. In fact, the U.S. Department of Agriculture notes that wild Alaskan cod contains the same levels of the beneficial omega-3 fatty acids eicosapentaenoic acid, or EPA, and docosahexaenoic acid, or DHA, as salmon. Men and women who want to improve their diets but not sacrifice flavor can try the recipe for Roasted Wild Alaskan Black Cod with Kambu Dashi, Kale and Sage, courtesy of Jill Lightner’s “Edible Seattle: The Cookbook” (Sterling Epicure). Roasted Wild Alaskan Black Cod with Kambu Dashi, Kale and Sage (Serves 4) 1 tablespoon plus 2 teaspoons kosher salt 5 dried porcini mushrooms 2 tablespoons extra-virgin olive oil 1 yellow onion, thinly sliced 2 cloves garlic, smashed 2 inches peeled fresh ginger, thinly sliced 1 stalk celery, thinly sliced 2 bay leaves 3 lbs. fish bones and scraps 4 sheets dry kombu or 1 pound fresh Pacific kelp 1/2 cup dry white wine 4 6-ounce Wild Alaskan Black Cod fillets 2 tablespoons butter 1 tablespoon finely chopped shallots 1 leek, roughly chopped 1 teaspoon kosher salt 1 cup stemmed, thinly sliced kale 1 tablespoon chopped

fresh sage Instructions: 1. In a spice or coffee grinder, grind 1 tablespoon of the salt and the porcini mushrooms together until very fine (roughly 1 minute); then sift the mixture through a fine-mesh sieve. Cover and set aside. 2. Heat the olive oil in a large soup pot over medium-high heat. Add the onion, garlic, ginger, celery, bay leaves, and 1 teaspoon salt and cook until the vegetables are fragrant and sweating, about 5 minutes. Add the fish bones and scraps, kombu, and wine and simmer for 10 minutes. Add 3 quarts water and simmer slowly over medium heat for 1 1/4 hours, skimming off any impurities, gray matter, and excess ingredients that float to the surface of the broth. Strain the broth through a fine-mesh strainer, discard the solids and simmer the broth again for 15 minutes. Remove from the heat and keep warm. 3. Preheat the oven to 185 F. Line a sheet pan with parchment paper. Place the cod fillets on the pan and season liberally with the porcini salt. Place the pan in the oven for 38 minutes. 4. While the fish is baking, place a sauté pan over medium heat and add the butter, shallots, leek, and remaining 1 tsp salt. Sauté until tender but not browned. If the vegetables start to brown, add a couple of tablespoons of the broth. When the leek is tender, add the kale and sage and sauté until the kale is soft. 5. Divide the kale among 4 serving bowls. Using a spatula, place the black cod on the kale, pour the broth on and around the fish, and serve.

Symptoms of a heat stroke include a high body temperature (above 103 F); red, hot, and dry skin, but no sweating; a rapid, strong pulse; throbbing headache; dizziness; nausea; confusion; and unconsciousness. If someone is having a heat stroke, it is important to first call 9-1-1. After calling for help, the person should be taken to a shady area and cooled down quickly by putting them in a tub of cool water or spraying them with a garden hose. The victim should not be given any fluids, including water, to drink. Symptoms of heat exhaustion include heavy sweating, paleness, muscle cramps, tiredness, weakness, dizziness, headache, fainting, and nausea or vomiting. The person should be assisted in cooling off and seek medical attention if symptoms are severe, symptoms last more than one hour, or the victim has heart problems or high blood pressure. During extreme heat waves, cooling centers are opened in cities across Pennsylvania for individuals without air conditioning. To find a cooling center, readers may contact the local municipality or county office. Additional information on how to prepare for summer weather can be found at www.health.pa.gov.

People should remember to wear lightweight, loose-fitting, lightcolored clothing; a hat or visor; sunglasses; and SPF 15 or higher sunscreen and reapply as necessary. To stay hydrated, people should drink plenty of water throughout the day and not wait until they are thirsty; outdoor workers should drink between two and four cups of water every hour; avoid consuming caffeinated, alcoholic, or sugary beverages; and replace salt lost from sweating by drinking fruit juice or sports drinks. To safely exercise during the summer, people should limit outdoor exercise and stay indoors in air conditioning on hot days; exercise early in the morning or later in the evening to avoid the hottest part of the day from 11 a.m. to 3 p.m.; and pace oneself when running, walking, or otherwise exerting one’s body. To protect others, children, older adults, or pets should never be left behind in a vehicle. We do some one-on-one training,” Burstein said. “It is not required, but we encourage them to attend the (formal) training.” Tutors are asked to meet with a student for a minimum of three hours a week for at least one year. “They have to meet at a public location; most meet at libraries,” Burstein noted. “Three hours is a long time, so most tutors meet twice a week for an hour-and-a-half session.” Tutors are matched with students based on their preferences and geographical location. “Some people want someone from Latin America or someone who is finetuning their grammar,” noted Burstein. “Some people want (to tutor) someone who barely speaks English. It is really challenging, but this (volunteer experience can be) the most rewarding.” Burstein explained that students’ skills are tested when entering the program, and they are asked what goals they have. All the information is given to the tutors before they meet the students. In addition to studying to receive their high school

equivalency diploma, some students are studying to become United States citizens, while others have goals such as improving their reading, writing and spelling. “Some students want to go the doctor with their kids and not have their kids translate, or they want to go to the store (and be able to read the signs and prices),” Burstein noted. She said tutors must be kind and patient and be willing to stay with the program. “I think the main quality of tutors is commitment - willing to work and a desire to help another adult for 12 hours a month,” said Burstein. “The (tutors who) do the best are the ones who are committed to it. The pairs that are successful develop relationships.” She said that the results of the tutoring provide tangible proof of the program’s success. “We’ve had tutors help people get their citizenship or get a new job,” said Burstein. “We had one student who worked on a landscape crew. Because his English was better, he became a foreman.” Burstein is also a tutor, and her student, who is from China, is learning to improve her pronunciation skills. “I learned a lot about her culture,” Burstein said, noting that she also had to brush up on her own grammar skills in order to be a successful tutor. “Tutors get a lot out of (the experience). Tutors find it rewarding. You can see the rewards because you feel like you’ve helped someone.” For more information about becoming a volunteer tutor or to register for the training session, readers may contact Burstein at fburstein@cc-oic.org or 610-2802618. Sensenig Family Reunion Scheduled A Sensenig reunion and genealogy research day is planned for Saturday, Aug. 18, at the Hahnstown Mennonite School, 255 Hahnstown Road, Ephrata. Sensenig (Sensenich, Senseny, Senseney, Sensiney) is a Swiss name found especially among the Mennonites of Lancaster County. Attendees will be able to view their Sensenig genealogy and update their family information starting at 10:30 a.m. Attendees should also bring a hot and cold dish if they plan to stay for the meal at noon. A donation will be accepted to cover expenses. The guest speaker, Mark Hostetter, will share about the “Beliefs and Practice of the Mennonite Immigrants.” There will be a committee meeting following the reunion for anyone who is interested in attending. Volunteers are welcome to help update their family’s genealogy.

The committee has compiled information on the descendants of Jacob and Maria Krey Sensenig, who immigrated from Switzerland around 1717. The committee will not add births, deaths, and marriages that occur after Dec. 31, but organizers will continue to update events occurring prior to Dec. 31. The work will be offered on a computer disc for a fee. Plans to publish a Sensenig Encyclopedia are under discussion. Maps will be available to visit the Sensenig Farm Cemetery located off of White Oak Road. Anyone who thinks they may be a Sensenig descendent or wants to find out is encouraged to attend the reunion. For more information, readers may call Sally Shirk at 717464-1614 or email imashirk@ comcast.net with subject line: Sensenig Genealogy.

Charred Green Beans Recipe Vegetables are more versatile than people may know. Steaming or sautéing vegetables might be among the most popular ways to cook veggies, but grill masters know that it is not just main dishes that taste great when cooked over an open flame. As the following recipe for Charred Green Beans with Lemon Verbena Pesto from Karen Adler and Judith Fertig’s “The Gardener and The Grill” (Running Press) can attest, grilled vegetables make for simple yet satisfying side dishes. Charred Green Beans with Lemon Verbena Pesto (Serves 2 to 4) Green Beans 1 1/2 lbs. slender green beans 2 teaspoons olive oil Lemon Verbena Pesto 1 cup fresh lemon verbena leaves (substitute fresh lemon balm leaves) 2 garlic cloves 1/4 cup grated Parmesan cheese 1/4 cup pine nuts or English walnuts

1/2 cup olive oil Fine kosher or sea salt and freshly ground black pepper to taste Instructions: 1 - Prepare a hot fire in the grill. 2 - Toss the beans with olive oil and place in a perforated grill basket or wok set on a baking sheet. 3 - For the pesto, combine the lemon verbena, garlic, cheese, and nuts in a food processor and pulse to puree. Slowly add the olive oil with the processor running until the mixture thickens and emulsifies, about 1 minute. Season to taste with salt and pepper. The pesto will keep in the refrigerator for 7 to 10 days or it may be frozen for up to 3 months. 4 - Place the grill wok or basket directly over the fire and stirgrill, tossing the beans with wooden paddles or grill spatulas until crisp-tender, about 5 to 8 minutes. Transfer the grilled beans to a large bowl and toss with about 1/4 cup of the pesto or to taste.

Church Receives Recognition

State Sen. Andy Dinniman (center) shared a laugh with the Rt. Rev. Daniel G. P. Gutiérrez (left), XVI bishop of the Episcopal Diocese of Pennsylvania during the 175th anniversary celebration of Saint James Episcopal Church in Downingtown. State Sen. Andy Dinniman recently recognized Saint James Episcopal Church on its 175th anniversary. The senator visited the church on July 25 to congratulate the congregation during its anniversary celebration, which coincided with the Feast Day of Saint James the Apostle. He also presented the Rt.

Rev. Daniel G. P. Gutiérrez, XVI bishop of the Episcopal Diocese of Pennsylvania, and the Rev. John Symonds, rector of Saint James Episcopal Church, with an official senate citation in honor of the milestone anniversary. In addition, Dinniman invited Symonds to serve as official senate chaplain for a day in Harrisburg this fall.

Grilling is many people’s preferred method of cooking, perhaps because it combines the great outdoors with delicious food. When grilling, many people are comfortable sticking with traditional backyard barbecue fare, such as hot dogs and hamburgers. Those who want to expand their grilling horizons can try the simple recipe for Grilled Chicken and Onion Skewers from Amy Kaneko’s “Let’s Cook Japanese Food!” (Chronicle Books). Grilled Chicken and Onion Skewers (Makes 10 to 12 skewers) Basting Sauce (optional) 1/2 cup soy sauce 1/4 cup mirin 2 tablespoons sugar

1/2 pound boneless, skinless chicken thighs, excess fat removed and cut into bite-size pieces 1 yellow onion, cut into 2inch wedges, and/or baby leeks, white part only, cut into 1-inch lengths 1 tablespoon canola or other neutral oil Salt (optional) Instructions: 1 - Place 10 to 12 bamboo skewers in water to cover at least 30 minutes before grilling. Prepare a medium-hot fire in a charcoal grill or preheat a gas grill to medium-high. 2 - If using the basting sauce, in a small saucepan, combine the soy sauce, mirin, and sugar over medium-low heat and

cook, stirring until the sugar has completely dissolved and the liquid just begins to turn syrupy, 5 to 8 minutes. Remove from the heat and set aside in a small bowl. 3 - Drain the skewers. Thread the chicken pieces alternately with the onion pieces onto the skewers, using about 3 pieces of chicken and 2 pieces of onion for each skewer. As each skewer is ready, place on a plate. Brush the chicken and onion pieces lightly on all sides with the oil. 4 - The grilling goes quickly, so set up a workstation next to the grill before beginning: the plate holding the skewers, the bowl of sauce and a basting brush and/or the salt, and tongs for turning the skewers. If using the basting sauce,

either dip each skewer in the sauce or brush the sauce on the skewers and then place directly over the heat. Grill the skewers, turning 3 or 4 times and basting with additional sauce, until the chicken is cooked through and the onions are scorched around the edges, about 5 minutes total. If the sauce appears to be burning at any point, move the skewers to a cooler part of the grill, or reduce the heat if using a gas grill. If using salt instead of the basting sauce, place the skewers directly over the heat and grill, turning 3 or 4 times, until cooked through, about 5 minutes total. Sprinkle both sides of each skewer with salt and remove from the grill. Serve the skewers piping hot.

Precautions For Summer Posted Pennsylvania residents and visitors are urged to take precautions to avoid ticks and mosquitoes when spending time outdoors this summer. Spending time outdoors and participating in physical activity is a key part of living a healthy life; however, people need to be aware of ticks and mosquitoes and the serious diseases they carry. As Lyme disease and West Nile virus become more prevalent in Pennsylvania, it is important for people to protect themselves when spending time outdoors. This year, funding was bolstered to protect Pennsylvani-

ans from Lyme disease, Zika virus, and West Nile virus through increases to improve mosquito and tick surveillance and provide education about the diseases associated with these insects. Through simple means like wearing insect repellent and avoiding peak mosquito activity times, Pennsylvanians can reduce their risks of mosquito bites and possibly being exposed to West Nile Virus. In 2017, there were 11,900 cases of Lyme disease recorded in Pennsylvania. Throughout the last several years, the state has consistently recorded one

of the highest counts of suspected Lyme disease cases in the United States. Blacklegged ticks, also known as deer ticks, are the most common carrier of Lyme disease. Ticks typically thrive in tall grass, brush, and wooded areas, but deer ticks have been found in every county in the state and can live in any habitat. Ticks can infect humans year-round, but are most likely to do so from late spring through the summer months. W hether visiting one of Pennsylvania’s 121 state parks or hiking through more than 2.2

million acres of state forestland, outdoors enthusiasts must be aware of their surroundings. The first line of defense against Lyme disease and any other tick-borne illness is to avoid tick-infested habitats, such as areas dense with shrubbery or tall grass. Proper use of personal protective measures such as repellents and protective clothing are also essential when enjoying public lands. Before heading outdoors, it is important to cover exposed skin, wear lightweight and light-colored clothing to aid in insect detection, and use an insect repellent containing 20 percent or more DEET. Once returning home, people should

immediately check themselves, children, and pets for ticks. Then, individuals should take a shower to remove any ticks that may be attached to their skin. Clothing and gear should be checked carefully and put in the dryer on high to kill any ticks. Symptoms of Lyme disease can include a bull’s-eye rash, fever, chills, headache, fatigue, muscle and joint aches, and swollen lymph nodes. It is important to know that someone bit by a tick carrying Lyme disease may not always get a bull’s-eye rash. Anyone who believes they have been bitten by a tick should speak to a doctor immediately. Antibiotic treatment during the early stages of Lyme disease can help prevent the onset of more severe symptoms. If not treated promptly, Lyme disease may lead to severe health concerns affecting the heart, joints, and nervous system. West Nile virus is spread by mosquitoes that breed in areas with standing and stagnant water. These areas include urban

catch basins, clogged gutters, discarded tires, poorly maintained swimming pools, flower pots, roof gutters, and other containers that hold water. The Department of Environmental Protection surveys communities affected by West Nile virus each year and monitors cases of the virus in humans, mosquitoes, birds, and horses. In 2017, there were 20 human cases of West Nile virus reported in Pennsylvania. So far in 2018, no positive human cases have been reported. Symptoms of West Nile virus are often flulike and can include a fever, headache, body aches, rash, and swollen lymph nodes, and typically only last a few days. However, West Nile virus can cause a serious neurological infection, including encephalitis and meningitis. Symptoms of these infections include a severe headache, high fever, muscle weakness, neck stiffness, paralysis, possible confusion and disorientation, tremors, and even a coma.
