Often, travelers say their favorite part of their stay at a bed-and-breakfast is the morning meal. If you don’t want to wait for your next trip to a B&B to enjoy a delicious breakfast, here are two tasty recipes to brighten any morning. Try one of these yummy selections while you plan your next getaway.

Lemon-Ricotta Pancakes with Blueberry Sauce From Betty Rosbottom and Susie Cushner's "Sunday Brunch" (Chronicle Books)

Makes 12 pancakes Blueberry Sauce 1 cup cold water 1/2 cup sugar 3 tablespoons fresh lemon juice 2 tablespoons cornstarch 2 cups fresh or frozen unsweetened blueberries (defrosted and patted dry) 1/8 teaspoon ground cinnamon Pancakes 2/3 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 2 eggs, separated 1 cup whole milk ricotta cheese 1/2 cup whole milk 2 tablespoons sugar 2 tablespoons grated lemon zest Canola oil

1. For the Blueberry Sauce: Combine the water, sugar, lemon juice, and cornstarch in a heavy, medium saucepan and stir until blended. Place the pan over low heat and cook, stirring, until the cornstarch dissolves. Add the blueberries and raise the heat to medium. Cook, stirring, until the sauce thickens and coats the back of a spoon, about 5 minutes. Remove and let cool for about 10 minutes.

2. Puree the sauce in a food processor or blender until smooth. Strain the pureed sauce through a fine-meshed sieve back into the saucepan. Return to medium heat and cook at

a simmer until reduced to 1 cup, about 30 minutes. Stir in the cinnamon. (The sauce can be prepared 3 days ahead; cool, cover and refrigerate. Reheat over low heat when needed.)

3. For the pancakes: In a medium bowl, whisk together the flour, baking powder and salt. In a large bowl, whisk together the egg yolks, ricotta, milk, sugar, and lemon zest until well blended. Gradually whisk in the dry ingredients.

4. With an electric mixer on medium-high speed, beat the egg whites until they are just firm. Gently stir one-third of the whites into the batter to lighten it. Then gently fold in the remaining egg whites.

5. Heat a griddle or a large, heavy frying pan set over medium to medium-low heat until hot, and then brush with just enough canola oil to coat the surface. Working in batches, pour generous 1/4 cup measures of the batter onto the hot griddle. Cook until bubbles appear on the tops and the pancakes are golden brown on the bottom, 1 to 2 minutes. Turn and cook until golden brown on the other side, about 2 minutes. Remove to a warm platter, and cover loosely with foil. (Do not stack the pancakes or they will steam and become flabby.) Repeat, adding more oil to the griddle until all of the batter has been used. 6. Arrange three overlapping pancakes on each of four plates, drizzle with some of the warm blueberry sauce and serve.

Serves 4 Mushroom Saute 1 1/4 ounces mixed dried mushrooms 1 1/2 cups boiling water 3 tablespoons olive oil 8 ounces sliced brown mushrooms 2 teaspoons minced garlic 1 teaspoon dried crushed rosemary Kosher salt Freshly ground black pepper Toast and Eggs 4 1/2-inch-thick sourdough slices, halved if the slices are extra large 2 tablespoons unsalted butter 4 eggs Olive oil

For the Mushroom Saute: Place the dried mushrooms in a medium bowl and cover with the boiling water. Let stand until softened, 20 minutes. Strain in a sieve lined with a double thickness of paper towels and reserve the soaking liquid. Coarsely chop the mushrooms.

2. Heat the olive oil in a medium, heavy frying pan set over medium heat. When hot, add the brown mushrooms and saute, stirring often, for 6 minutes. Add the reserved mushrooms, garlic, rosemary, and 1/2 teaspoon salt; stir for 1 minute. Add the mushroom liquid and cook, stirring until it has evaporated, 4 to 7 minutes. Season with salt and several grinds of pepper. Remove the frying pan from the heat and cover with foil to keep warm. (The mushrooms can be prepared 1 day ahead; cool, cover and refrigerate. Reheat, stirring, over medium heat.)

mushrooms. Season with salt and pepper and, if desired, garnish each serving with a rosemary sprig. Serve immediately. Cooking note: If you can't find dried crushed rosemary, crush regular dried rosemary in an electric spice mill, or place it in a self-sealing plastic bag and roll over it with a rolling pin.

3. For the toast and eggs: Brush both sides of the bread slices generously with olive oil. W

ill McQueen, proprietor of the 1825 Inn Bed and Breakfast, 409 S. Lingle Ave., Palmyra, describes himself as shy and quiet. “I leave people alone, because they’re not here to talk to me,” McQueen explained. “I get a lot of honeymooners.” Guests who engage McQueen in conversation, though, find an articulate, thoughtful man. He is well-versed in the area’s attractions, and he has an impressive attention to detail. “I have a spreadsheet with all the breakfasts I’ve served in the past nine years,” McQueen said. “I make sure never to repeat breakfasts for my guests, unless they specifically request it.” McQueen didn’t set out to become an innkeeper. On a whim, he accompanied a friend on a trip to North Carolina, where the friend was checking out a bed-and-breakfast she was considering buying. McQueen was hooked. Although he was living in Maryland and working as a prepress manager for a textbook printing company, McQueen focused his search for a B&B in central Pennsylvania due to his affinity for the area. “As a kid, my family came here,” McQueen said. “Then when my kids were a certain age, we came to Hersheypark all the time.” Within 30 days of his North Carolina jaunt, McQueen had purchased the 1825 Inn, which is located just 4 miles away from the famous amusement park. The Palmyra address can be confusing for visitors. “The inn is located in Lebanon County, but Dauphin County is right outside the back door,” McQueen clarified.

Accessing the Hershey attractions is simple. Guests need only to turn left out of the inn’s driveway, and Chocolatetown Avenue will be ahead in half a mile. Hersheypark Drive is located only 1 mile from the 1825 Inn in the same direction. McQueen maintains an exhaustive list of things to do and places to eat at in the region. Each room in the inn contains a binder full of menus, maps, and more. McQueen has also designed a mobile phone app that allows his guests to easily access similar information and quickly navigate to the attractions’ websites. Although becoming an innkeeper was an unexpected career change, McQueen has discovered a real talent for the role. Every night, he prepares breakfast for the following morning, using recipes he has gathered from other sources or developed on his own. The German apple pancakes and the Amish three-cheese potato bake are popular entrees. Breakfasts are served at 9 a.m. on what was once the inn’s porch and is now an enclosed sunroom. The sunlit room features seating for 24; the occupants of each room may have their own table, with a few chairs left over. When hosting family reunions, McQueen reconfigures the small tables into one large table running the length of the room. Guests who come downstairs before the meal may enjoy coffee and tea on the large outdoor porch that was recently added to the building. McQueen has maintained the inn’s country charm, and while he would like to do some repainting, he is loath to paint over the evidence of the previous owner’s hard work in stenciling borders throughout the inn. two cottage rooms located in a separate building out back. Every room has its own bathroom, and none of the bedrooms share a wall. All but one bed have pillowtop mattresses; the king-size bed in the popular Amish bedroom has a foam mattress. To ensure his guests’ nighttime comfort, McQueen chose microfiber sheets for the beds, which are triplesheeted. After guests raved about the quality of the sheets, McQueen made them available for sale in the onsite gift shop, which also contains work by local artists. The inn is heated by a hot water system that utilizes radiators that are most likely original to the house. Electric fireplaces in the bedrooms allow guests to raise their rooms’ temperatures during colder months. In the summer, guests can set the temperatures they prefer on their respective air-conditioning units. In addition to the gift shop and breakfast room, the inn’s first floor includes a sitting room and what most likely would have been the farmhouse’s parlor. The sitting room features a curio cabinet filled with Hershey Company memorabilia that McQueen has collected from area flea markets and rummage sales. The parlor has a computer available for guests’ use, and it also contains a large cabinet filled with a variety of games and movies for all ages. Guests are welcome to spend all day at the inn, McQueen said, noting that he always sets out some kind of treat in the evening. “I’ve gotten feedback that the inn is warm and inviting,” McQueen said. “Guests just feel at home here.” McQueen noted that the 1825 Inn is popular for businesspeople and others who are traveling by themselves. Guests must be 12 or older to stay at the inn. Everyone who checks in receives a key to the front door and to their room. Other features of the inn include WiFi, Jacuzzi tubs in the cottages, and flat-panel televisions and Blu-Ray

players in every room. The cottages also feature private entrances and parking, and McQueen will serve breakfast in the cottages upon request. Every room at the inn has a name and a theme to match. Check-out is at 11 a.m., and guests may check in at 4 p.m. On a typical day, McQueen runs 14 loads of laundry, shops at several stores for breakfast ingredients, and even fits in a workout at the gym. He employs a housekeeper to help with the cleaning and the laundry. When McQueen takes the rare vacation to visit his grandchildren in Maryland, his sister-in-law, whom he calls “Tee,” fills in as inn-sitter. lthough Dawn Darlington, owner of the Speedwell Forge Bed and Breakfast and president of the Wolf Sanctuary of PA, has had careers in aerospace and as a paralegal in Los Angeles, she always knew she would return to her family’s home in Elizabeth Township. “Ever since I was 3 (years old), I told Grandma this was my house,” said Darlington of the mansion that is one of four buildings that make up the B&B. The original house was built in 1760 by James Oldt, the iron master who founded the property. As the owner of the historical B&B, Darlington uses her skills to make her guests feel welcome and cared for while visiting, and her attention to detail is obvious in the hospitality she offers, from cooking breakfasts for any diet to spending up to 20 minutes orienting guests to their rooms and surroundings when they arrive. The 120-acre wooded property, including the wolf sanctuary, which is located at 465 Speedwell Forge Road, Lititz, offers guests a choice of three rooms in the mansion or three separate outbuildings. The Summer Kitchen is a charming cottage behind the mansion, and the Paymasters Office offers fabulous floor-to-ceiling woodwork and a massive fireplace. The Whyte House is a spacious single-story cottage featuring a kitchen and deck. In the mansion, the Boys’ Room features three-quarter beds with Amish quilts. Bill’s Room provides a corner view from the second floor, and Kathryn’s Room offers a hand-carved corner closet. The property has been in Darlington’s family since 1941, but the big house was vacant for several years after Darlington’s grandmother died. Darlington endeavored to restore each of the buildings with meticulous care following her return to the property in 2005. Just 18 months later, she opened all but the Whyte House. “I am a hard worker,” she said, grinning. Darlington took pains to restore the house to its primary character and period. “All the woodwork is original, and the floors are from 1850,” she said. “The walls are all still horsehair plaster.” Interestingly, the historically inspired colors Darlington chose for many of her rooms are also popular on today’s decorator palette. The dining room is painted a Colonial blue color that is finding its way into many upscale homes. Along with lovely surroundings, Darlington offers guests breakfasts created to fit specific food preferences and requirements. “Our B&B serves (meals to accommodate) dietary restrictions, food allergies, and food lifestyles,” said Darlington, who caters to vegetarians, vegans, and meat eaters, along with those who are gluten intolerant. “I sit up until 2 a.m. reading the chemical composition of different flours,” said Darlington, who has studied up on grain flours and starches and experimented with egg replacers. “I have a flour mix I make crepes (from) that has four flours and three starches,” explained Darlington. “I bake my own breads and muffins.” As with many B&Bs, guests of the Speedwell Forge Bed and Breakfast come to the area to spend time in a

beautiful rural setting where they can leave the cares of everyday life behind. Many come to hike or explore Lancaster County. Darlington recommends that they travel south on Route 501 to nearby Lititz, recently named “America’s Coolest Small Town” in a Budget Travel online competition. “Lititz is a lovely town to wander in,” said Darlington, who cited the Fire and Ice Festival, held in Lititz each February, as an interesting attraction. She also encourages guests to enjoy Lititz Springs Park; to explore the historical nature of the town, which was founded by the Lititz Moravian Church; and to sample the Buds at Wilbur Chocolate. Darlington, who jokes that her culinary skills have been honed by “life,” also recommends a number of area restaurants, including Tomato Pie Café in Lititz, the Brick House Café in Manheim, and the Lincoln House in Lincoln. For guests interested in activities closer to the bed-andbreakfast, there are the Speedwell Forge recreation areas, including the Speedwell Forge County Nature Park. Nearby stables also offer trail rides. A unique must-see attraction for many visitors, however, is the 30-acre wolf sanctuary, which was started by Darlington’s parents in 1980. According to Darlington, the sanctuary grew out of her father’s interest in the animals, noting that the endeavor began with two wolves that were kept as pets. “There were wolves in the house when I was 13 to 14 years old,” said Darlington, who cautioned that owning wolves is not like owning dogs. “They have more of their own mindset,” she explained. “They’re wild animals. They’re pack animals.” When Pennsylvania changed its laws concerning exotic animals, the state required owners of wolves to obtain a license. When the game commission, which was charged with enforcing the permit law, learned of Bill and Barbara Darlington’s wolves, they made a request. “The game commission asked (my father if he) would take (in) some wolves as they (found) them, and he agreed to do that,” explained Darlington. At the same time that Speedwell Forge Bed and Breakfast opened, Darlington became president of the wolf sanctuary. Regular public weekend tours are now held, along with weekday tours that require a reservation. The daytime public tour is complimentary for guests of the B&B. Special events include Full Moon Tours and Music and Art With the Wolves celebrations, which feature music and food. Full Moon Tours are held monthly on the Saturday closest to the full moon, from 7:30 to 10 p.m. “We have a big bonfire down at the sanctuary with cookies, cocoa, and little things like that available. We have entertainment and the wolves and the tour guide,” explained Darlington. Full Moon Tours, which are held rain or shine, have attracted over 300 visitors in a single evening. magine a bed-and-breakfast where guests can stay in one of several renovated rooms or suites, where they can walk the scenic grounds, swim in the pool, go fishing or play tennis, as well as enjoy a homemade gourmet breakfast or afternoon tea. The Inn at Whitewing Farm in West Chester, Chester County, offers all these attractions and more to patrons who would like to stay at a unique bed-and-breakfast. At a typical bed-and-breakfast or inn, the homeowners generally purchase an existing building or open up their own homes for guests. Not so at the Inn at Whitewing Farm, where guests may stay in the Carriage House, Stables and Saddle Barn suites, which are separate from the main house. Suites include fireplaces, and all rooms have private bathrooms and flat-screen televisions. The site is located adjacent to the world-famous Longwood Gardens in Kennett Square, which was formerly the estate of the Du Pont family. The Whitewing Farm property was once a working farm owned by Russell and Bertha Pippen. Russell, who worked for the DuPont Company, had some of the horticulturists from Longwood Gardens plant rare trees and perennials at Whitewing. After the Pippens retired, the buildings and the property were renovated and turned into a B&B by owners Ed and Wanda DeSeta. In 2011, Lance and Sandy Shortt and their two children, Samantha and Julian, took over as the new innkeepers. “We’re only the third owner in 110 years,” Lance said. “Mr. Pippen was the treasurer for DuPont and they (owned the property) for 80 years, and (then) the DeSetas had it, and we bought it from them. We are so lucky. We fell in love with the B&B. We love the property. It makes you feel good.” He said that the family spent three years renovating all the rooms at the site. “Everything has been completely redone – (including) the rooms and the hay barn,” he said. Lance said that guests enjoy having their own rooms in separate buildings, as opposed to occupying a room in someone’s home or sharing bathroom facilities. “Our inn is unique. All the rooms are separate from the main house. Everyone has their own room and bathroom, and there is a common meeting place,” he said. Although the Inn at Whitewing Farm is a romantic gateway for couples like most bed-and-breakfast establishments, families are also encouraged to visit for special events. “When we bought the inn, we wanted to mainly have weddings and retreats where people could bring their families and spend the whole weekend,” Lance said. “Family reunions are really big. (People) can enjoy the pond, the pool and tennis courts.” Since its opening, Lance said, visitors from all over the world have stayed at the bed-and-breakfast. “We’ve had guests from Brazil, China and Africa. A lot of that has to do with Longwood Gardens,” he said. Lance, who has owned an Italian restaurant for close

to 30 years, prepares the breakfast at Whitewing, which is served daily from 8:30 to 9:30 a.m. in the hay barn, where guests can sit by the fireplace or enjoy a book in the library. Afternoon tea is served from 4 to 5 p.m., and refreshments are available 24 hours a day. “I do a gourmet breakfast everyday – everything from French toast soufflé to banana crepes and vanilla Belgian waffles,” Lance said. “(It is served) in the hay barn, which dates back to 1796. The floors are the Lance & Sandy Shortt beams from the original barn.” Lance said that guests have offered nothing but positive feedback after staying at Whitewing Farm. “We are close to 70 percent occupied for the year. The (guests) are nice people. Everyone leaves their (worries) at home and comes (to Whitewing) to be happy,” he said. “We’ve never had a bad guest.” The neighboring Longwood Gardens is a must-see for those who stay at Whitewing Farms. It is located along U.S. Route 1 in the Brandywine Valley. Longwood Gardens hosts a variety of special attractions, including its Fireworks and Fountains display during the summer months.
