Sharing Kernels Of Knowledge About Corn BY FRANCINE FULTON

A sweet summertime tradition is enjoying a freshly picked ear of corn. And, thanks to freezing techniques, corn can be enjoyed year-round. Roberta Cosentino, manager of healthy food access programs at the Chester County Food Bank, recently shared information about preparing corn on the cob. ission Trip Birdsboro (MTB) volunteers were out in full force this year helping neighbors in need with projects around their homes. From July 21 to 25, volunteers from local churches worked at 30 different locations in the community painting, completing home repairs and doing landscaping work, which included tree removal and planting flowers. Volunteers also made repairs to the pavilion and picnic tables at Main Bird Park.

Volunteers wore distinctive red shirts bearing the phrase “Build Each Other Up,” which was this year’s MTB theme. In addition, each work site included a sign that read “God’s Hands at Work.” “This year, there were more participants than ever - 130 volunteers,” reported volunteer Stuart Wells, a member of St. Paul’s United Church of Christ (UCC), Birdsboro. “As a nondenominational Christian ministry, MTB gives participants the opportunity to share Christ’s love by striving to exemplify Christ’s teachings to love our

neighbors and to serve others in need with kindness.” Wells quoted James 2:18, which reads, “You have faith and I have works. Show me your faith apart from your works, and I by my works will show you my faith.” “In other words, actions speak louder than words, and during Mission Trip Birdsboro participants strive to demonstrate what it looks like to ‘love your neighbor as yourself,’” Wells stated. One of the youngest volunteers was Sami Blankenbiller, a student at Twin Valley Middle School and

a member of Abundant Life Church in Birdsboro, who spent time painting a deck and a fence. Sami and two of his siblings were encouraged to participate in MTB by their dad. “My dad said we should do this to show our love of neighbors and God’s love,” said Sami. In addition to completing the work, volunteers met daily for prayer and worship at different church locations, and a closing celebration was held at St. Mark’s Evangelical Lutheran Church in Birdsboro.

They can spend all morning going up and down the road.” She noted that yard sales will extend along Route 23 into neighboring communities as well. Beginning at 6 a.m., the Caernarvon Fire Company Ladies Auxiliary will offer a grab-and-go breakfast, featuring egg sandwiches, coffee and juice. Beginning at 9 a.m., the fire company will offer a carryout lunch. The meal will include a barbecued pulled pork sandwich, pickle, applesauce, cookies, chips and a beverage. Pulled pork will also by sold by the quart. The fire company is located at 2145 Main St., Narvon.

Mission Trip Birdsboro from pg 1 practicing social distancing. Wells reported that because of its growth, the MTB leadership team and St. Paul’s UCC decided to have MTB become its own independent ministry as a nonprofit organization. “Next year, the ministry will continue its good works as an interfaith, interdenominational organization called Mission Trip Birdsboro & Beyond,” said Wells. MTB, now in its eighth year, started at St. Paul’s UCC in 2014. In that initial year, about 19 church volunteers worked on four homes and completed three community projects. The number of projects doubled the following year. As more churches began to participate, the ministry continued to grow. The number of volunteers grew to 49 in 2018, followed by 113 in 2019. “Even during last year’s pandemic, Mission Trip Birdsboro had 108 volunteers,” Wells pointed out, noting that last year’s workers completed outdoor tasks only while wearing masks and

For older ears, (make) creamed corn by cutting the top off the kernels. Then turn the knife over and scrape down the cob with the back of knife to squeeze all the corn out, leaving most of the kernel shell behind. Both are delicious but have different texture for different recipes.” Collmann said she has been freezing corn for 40 years. “It has always been my kids’ favorite any time of year,” she said. “Take whatever you need (out of the freezer), put it into bowl, microwave until hot and serve. It’s like eating off a cob.”

When asked if it is true that each corn “hair” represents one kernel of corn, Cosentino replied, “Corn hair or ‘silk’ has the potential to be a kernel of corn if it’s pollinated.” Corn can be frozen for future use by cooking ears in boiling water, cutting the kernels off each cob and then placing the kernels into freezer bags while removing as much air as possible from the bags. To make cutting off the kernels easier, local home cook Cheryl Panik Kerr recommends using a Bundt pan. “Stand (the corn cob) up in the hole in the center of the Bundt pan. As you cut the kernels off, they will fall into the pan and make your cleanup easier,” she noted. According to home cook Patt Collmann, corn on the cob should be boiled for about five to six minutes before freezing. “Put (the boiled corn) into ice water, then cut it off the cob using a Bundt pan,” she explained. “Lay (the corn) on flat cookie sheets and flash freeze. Therapy Dogs Visit Honey Brook Library BY FRANCINE FULTON

In keeping with the Summer Reading Program theme of “Tails and Tales,” the Honey Brook Community Library recently hosted a program featuring therapy dogs Lily and Pansy and their owner, Liz Alakszay. During the event, held outdoors behind the library, the dogs impressed patrons of all ages with their ability to listen to commands and identify colors. Lily demonstrated that she was able to obey simple words written on cards. “Dogs can learn visual cues from different shapes, so the words ‘sit’ and ‘down’ are on shapes and she associates that with a behavior,” Alakszay explained, noting that Lily is an English setter/border collie mix. “They were bred to herd sheep and cattle. They are super smart.” Lily was also able to identify a blue or yellow ring when presented

with rings of those colors. “I make it easier by having (rings) that are two slightly different sizes. The next step would be to have (the objects) be identical,” Alakszay said. Lily’s canine sister, Pansy, is an English setter. “They are bird dogs,” Alakszay said, throwing a stuffed pheasant for Pansy to catch and fetch. “A Labrador will go out in the water and pick up birds. But with an English setter, a (hunter) will point out the bird and tell the dog to go find it.” Pansy was able to stand on a bowl and twirl around using her front paws. “(English setters) have a laidback personality. We do a little bit of work, and we have a lot of fun,” noted Alakszay. “It’s all about fun and games when you are a setter.” Alakszay and the dogs visit nursing homes and offer reading programs at local libraries, providing children with a comfortable

environment to practice their reading skills. “They are nonjudgmental listeners,” Alakszay said. “It boosts confidence, and it also is relaxing to have a dog around.” On one occasion, Lily and Alakszay visited a school to help students who had been bullied and were afraid to come to school. The students spent time with Lily over a period of six weeks, and the youngsters learned to better communicate by interacting with their new canine friend. Therapy dogs are also utilized in businesses and in courtroom settings to help people relax during stressful situations. “(Lily and Pansy) are high-energy dogs. They really need the equivalent of 6 miles of exercise a day,” Alakszay pointed out. “It’s 3 miles in the morning and 3 miles in the evening. Over the course of the Fourth of July weekend, we did a 30-mile hike.”
