All things Pennsylvania
BY FRANCINE FULTON
Community members are invited to discover or rediscover many of the events, museums, attractions and getaways that Pennsylvania has to offer at the fifth annual PA Family Travel Fair, to be held on Saturday, April 15, from 9 a.m. to 4 p.m. at Calvary Church in Lancaster. The event, hosted by Where & When Pennsylvania, will also feature children’s activities, entertainment and food.
Those who visit the travel fair will also have opportunities to win prizes, including vacation packages. “The first 500 (attendees) will get a goodie bag to collect all of their swag from all of the vendors,” said Rachel Stebbins, marketing director at Engle Printing & Publishing Co., Inc., one
Freedom Life Church sets Easter Eggstravaganzas
BY FRANCINE FULTON
In addition to holding its Easter Eggstravaganza at its main campus in Christiana, Freedom Life Church has added a second location this year at Muddy Run Park, 172 Bethesda Church Road West, Holtwood. Both events will take place on Saturday, April 8, at 10 a.m.
Organized by the FL Kids Team, the second event was added this year because of the growing congregation at Freedom Life’s Quarryville campus. “It’s one of our favorite days of the year, and we’re excited to expand it,” said FL Kids director Gina Turk. “Any time we can bring a community together and put smiles on kids’ faces is a good day.”
of the event organizers. “There is a lot of opportunity throughout the event to register for prizes. Almost all of the vendors are bringing prizes to give away.” The grand prize will be a family getaway provided by the Endless Mountains Visitors Bureau.
The event focuses on providing information about family-friendly activities that are available throughout the entire state, including locally in Lancaster County and as far away as the northern tier of Pennsylvania.
“When you are talking to vendors, they are not trying to sell you things. They are just providing information,” Stebbins emphasized. “The visitor’s bureaus will represent a lot of the (sites) in their areas, but we also have (representatives of) specific attractions that are coming to talk specifically about their places.”
Entertainment will include a magic show at noon by Papa Tater Magical Family Entertainment and a live show at 2 p.m. by Clyde Peeling’s Reptiland. Echo the Bat from Lincoln Caverns and Chipper from Herr Foods Inc. will greet visitors, and the Kids Cookie Break radio show will be on-site doing live interviews. Visitors will also be able to meet friendly service dogs from Keystone Pet Enhanced Therapy Services (KPETS).
Food trucks will be available offering breakfast and lunch, as well as snacks and ice cream. New this year will be Joe on the GO Coffee Co., which will offer coffee, tea and breakfast selections.
Stebbins hopes that people will attend the event to learn about local attractions they may not even
be aware of. “It’s nice to have options with what you can do without having to travel really far,” she stated. “You can have a nice, long weekend or you can go out and do some of these activities and be home at night because it’s just that close. People often don’t realize what is right around them.”
Calvary Church is located at 1051 Landis Valley Road, Lancaster. Admission to and parking at the PA Family Travel Fair are free. The event will be held rain or shine. For more information, including a complete list of exhibitors, food trucks, activities and giveaways, visit www.pafamilytravel.com. More information is also available at www.facebook.com/PAFamily TravelFair and www.instagram.com /pafamilytravelfair
During the Easter Eggstravaganza, children will be able to meet the Easter Bunny and enjoy free activities, including inflatables, face painting, a petting zoo, games and an egg hunt. “Eggs will be filled with candy,” said Turk, noting that there will be separate egg hunts for preschoolers and elementary-age children. “Kids who find the golden eggs will have the opportunity to exchange them for prizes like small, ageappropriate toys.”
A variety of food concessions will distribute items free of charge, including cotton candy, popcorn, pretzels, chips and water.

The Penn Rock
The Penn Rock in Gap
Submitted by Leona Baker, Historical Society of Salisbury Township
Imagine Salisbury Township’s countryside when the first Europeans traveled west on the ancient Minqua Trail used by indigenous people for centuries. Cresting what is now called Gap Hill on that wooded trail, the pioneers could glimpse lush meadows in the valley, as well as forests that stretched for miles.
Imagine the area around what is now the Turkey Hill convenience store, the Gap Post Office, the Gap Town Clock and McDonald’s still covered with trees and dotted with temporary Native American and English campfires. For whatever reason, Penn decided to sign the treaty right there that night. Perhaps he recognized the building animosity of the Susquehannock warriors over pioneer violations of the original treaty and wanted to ensure a safe journey onward. Whatever the reason, sheepskin copies of the treaty were opened on a flat rock for signatures to rededicate both sides to peaceful coexistence. That rock has been recognized for centuries as the one at the sharp bend of the south end of Chestnut Street in Gap. Today, a sign hangs at the location designating that significant event.
By 1701, the situation was beginning to test the original treaty. Promises to the Native Americans were not being kept by settlers in this southcentral part of Pennsylvania. To reestablish good relations with the Susquehannocks, Penn himself traveled to meet the chiefs of that tribe to reaffirm the old Treaty of Peace. The area now known as Gap was a day’s horseback ride from Philadelphia. Gap was thus the obvious place for chiefs to meet Penn before escorting his party to their campgrounds on the Susquehanna River. Greetings and
Of course, a celebration accompanied this reaffirmation of intended good relations among the two civilizations. Feasting, dancing and general partying presumably lasted into the night. Before venturing farther with his Native escorts, Penn is reported to have rested in a nearby cave and had a breakfast of produce from the gardens that the Natives maintained near today’s Gap Post Office.
Local residents are encouraged to view the flat rock, which once felt the hand of William Penn in his attempt at joining two diverse cultures. Take a moment to imagine what Penn and those chiefs would think of our little corner of the world were they to join us today.

In 1681, Britain’s King Charles II granted William Penn the huge territory later known as Pennsylvania. History class taught us that he aimed for a “Peaceable Kingdom,” where the original inhabitants of the area and newly arrived Europeans could live together side by side. However, many of the new settlers found it hard to comply with Penn’s ideals. Their culture believed in land ownership, while to the Native Americans, the land belonged to God. Cultivating a particular plot for which they had set limits defined by a deed meant a lot to the English, German and Welsh settlers but contradicted indigenous beliefs.

Dealing with farm waste
Waste is a byproduct of every industry, including those that produce food. Farm waste management is a practice that endeavors to remove waste in ways that are affordable, sustainable, and effective.
Agricultural waste includes manure, animal bedding, leaves, clippings, and even scraps from the kitchen. Farm waste may be natural, chemical-based, animal-based, medical-based, or plant-based. If it is not managed, the waste can pollute water and air and also disrupt the process of farming.
A variety of methods are available for disposing of farm waste.
Kitchen waste or crop wastage can be turned into fertilizer and bioenergy through composting. Composting uses natural bacteria and other microorganisms to naturally break down refuse into a safer, more usable form. Compost can be spread over fields and used to feed plants without the need to supplement much with chemical fertilizers.
Feeding livestock animals directly with kitchen leftovers is one way to cut down on waste. Pigs are good consumers of leftovers, as they are omnivorous animals that tend to eat anything. The United States
Environmental Protection Agency urges anyone who wants to participate in recycling food waste for animal feed to contact a local solid waste public health agency or county agricultural extension agency for more information. This way, the food waste can be easily handled and safely controlled.
Cow and horse manure can be added to traditional compost piles, but swine and other omnivores’ waste may contain bacteria not suited to such composting. According to the resource ManureToFertilizer.com, pig manure stored in a cesspool needs to be pumped into a solid liquid separator to remove extra water. Solids can be mixed with straw or sawdust to adjust the carbon-to-nitrogen ratio and spread out in rows to dry. Farmers also can look to products like Microbe-Lift, which breaks down waste and reduces toxic gases to enhance manure management.
Waste from farms can be turned into other products. For example, corn cobs, bagasse, rice straw, and husks can be turned into silica, a nonmetallic element that is great for the skin, hair, nails, and bones. Fats from animals can be made into soaps, as can cocoa pods.
Non-organic material, such as
Impact Church
chemical waste, will need to be managed according to local regulations. Broken equipment can be taken to recycling facilities to ensure it does not end up in landfills.
Farm waste management is just another piece of any agricultural operation.

Consumers can never let their guard down when it comes to identity theft, as personal information is much more accessible in an increasingly digital world.
According to the Federal Trade Commission (FTC), identity theft is when someone uses an individual’s personal or financial information without his or her consent. Commonly stolen data includes addresses, credit card numbers, bank account information, Social Security numbers, and medical insurance numbers. Although thieves can gather information by intercepting it
through digital channels or simply by stealing mail or going through trash, many times people inadvertently share personal information with scammers themselves.
Common scams include phone scams, text links, phishing emails, Medicare card verification scams, and data breaches.
Phone scams may involve telemarketers trying to sell something in exchange for personal information given over the phone, as well as people impersonating government agencies or credit card companies. “Please confirm account information” or
“We’ll need your financial information to process” are some of the phrases these scams use. Personal information should never be given over the phone unless a person has confirmed that the individual he or she is speaking to is legitimate.
Scammers utilize text messages to try to gain information. The text includes a link to a site that will request personal information. Individuals should not respond to such texts, and they should avoid clicking on the links.
Phishing emails look like they come from legitimate sources, but they often contain malware that can infiltrate computers and other devices to steal identity data. Phishing increased during the COVID-19 lockdowns, as more people were working from home, according to the Identity Theft Research Center (ITRC).
Older individuals have long been targets of criminals. Seniors are now being called, emailed, or even visited in
person by scammers claiming to represent Medicare. Perpetrators of this scam offer new services or new, chipped Medicare cards in exchange for verification of Medicare identification numbers. Medicare numbers should be carefully guarded, and seniors should keep in mind it is highly unlikely Medicare representatives will contact them in these ways.
Individuals do not have to be concerned with just a home computer or phone breach. Security experts indicate many major companies are being breached. By the time the companies discover that data was stolen, personal information, which usually includes credit card numbers, email addresses, and home addresses, may have been circulating for some time. While it is impossible for private citizens to prevent this type of data breach, a credit monitoring service can alert consumers if their information shows up where it does not belong.
The Pennsylvania Department of Military and Veterans Affairs (DMVA) announced its Mobile Veterans Outreach vans are available throughout the state to assist veterans in obtaining information and initiating benefit claim paperwork through the assistance of DMVA accredited veteran service officers. The outreach vans are available to be booked for community events through the DMVA website and can be set up at convenient locations such as shopping centers, sporting events, county fairs, parades, festivals, and other events throughout Pennsylvania, at no cost.
Each outreach van is wheelchair accessible. The vans are equipped with technology to assist veterans applying for their benefits on the spot and are staffed by accredited veteran service officers, who are available to assist veterans at no cost.
A wide range of federal, state, and county benefits are available to qualified veterans
and their families. Benefits may include service-connected disability compensation, pensions, VA health care benefits, burial benefits, education benefits, vocational rehabilitation, active service bonuses and long-term care homes for veterans.
DMVA’s outreach staff also coordinates each event with VA county directors, veteran service organizations, and local and state officials to maximize awareness and attendance. For more details on how to request a van for a community event, visit www.dmva.pa.gov and search for Mobile Veterans Outreach Vans.

Octorara PTO sets family bingo, continues shoe collection
BY FRANCINE FULTON
A family bingo night, which is open to the community, will be presented by the Octorara Parent-Teacher Organization (PTO) on Friday, April 14, at the Octorara Primary Learning Center (PLC), 87 Highland Road, Atglen. Doors will open at 5:45 p.m., and games will start at 6 p.m.
The event will feature 10 rounds of bingo, and there
will be prizes for both adults and children. There will also be an opportunity to win gift baskets.
Tickets will only be sold at the door for a nominal fee, with separate prices for adults and for children. Pizza, snacks and water will be available for purchase throughout the evening.
There will also be a collection of shoes on April 14 as part of a shoe drive fundraiser
being held by the PTO in partnership with the Leo Club at Octorara Junior-Senior High School. The community is invited to donate gently worn and new shoes, including sneakers, boots, dress shoes, sandals, athletic shoes and casual footwear.
A shoe drive kickoff event was held last month at the Octorara PLC. “We had a very successful shoe drive (on March 25) and collected 425
(pairs of) shoes, which gets us 17% of the way to our goal of 2,500 (pairs of shoes),” said Leo Club adviser Marcia Rapone.
All donated shoes will be given to Funds2Orgs, a nonprofit organization that repurposes them.
In addition to donating shoes at the bingo event, members of the public may place shoes in the drop-off boxes located in the lobby of each of Octorara’s school buildings. The fundraiser will conclude on Saturday, May 20, at the OABEST Expo at the high school. Shoes will be collected that day from 9:30 a.m. to 1:30 p.m.
For more information about PTO activities, visit www.face book.com/octorarak6pto.

Roasted lamb with asparagus
Easter is steeped in traditions, including family meals, and roasted lamb is an Easter Sunday classic. This recipe for Roasted Lamb with Roasted Asparagus from “Feast of the Seven Fishes: A Brooklyn Italian’s Recipes Celebrating Food & Family” by Daniel Paterna can serve as an Easter entrée.
Roasted Lamb with Roasted Asparagus (Serves 8 to 10)
Lamb:
1 leg of lamb or loin of lamb, about 4 to 5 pounds
5 garlic cloves, sliced
2 tablespoons olive oil
4 cups dry white wine
1 fresh bay leaf
4 sprigs fresh rosemary
4 to 5 sprigs fresh thyme
Directions:
1 - Cut small slits in the meat of the lamb with a sharp paring knife. Insert a slice of the garlic into each slit. Place the lamb in a large, sealable plastic bag, and add the olive oil, 2 cups white wine, the bay leaf, the rosemary, the thyme, salt, and pepper. Seal the bag tightly and place in the refrigerator to marinate for 12 hours.
2 - Remove the lamb from the fridge the next day, at least 4 hours before roasting. Keep the lamb sealed in the marinade bag and allow it to come to room temperature.
3 - Heat the oven to 400 degrees Fahrenheit. Remove the lamb from the bag with marinade. Place it on a rack in a roasting pan. Add 2 cups
of wine. Roast for 1 1/2 hours or until the thermometer reads 150 to 160 degrees. Baste with drippings while roasting. Serve warm.
Asparagus:
4 pounds of asparagus, remove woody ends
2 cups coarse bread crumbs
1 cup grated Romano cheese
2 tablespoons garlic powder
Freshly ground black pepper, to taste
4 large eggs
Sea salt, to taste
Directions:
1 - Preheat the oven to 400 degrees.
2 - Place the bread crumbs, cheese, garlic powder, and black pepper in a dish or bowl wide enough to hold
the asparagus. Mix well to combine thoroughly.
3 - Put the eggs in another dish or bowl of similar size and beat well. Working in batches, dip the spears into the egg, making sure they are coated well. Immediately place them in the bread crumb mixture and toss until each spear is fully coated. Transfer the breaded asparagus to a large baking sheet.
4 - Place the asparagus in the preheated oven and bake for 30 minutes or until the breading is browned and crispy. Serve with wedges of fresh lemon. Add sea salt if desired.
Springtime salad recipe
Easter is a religious holiday, but for millions of people, it is also synonymous with the start of spring. What better way to celebrate the warmer temperatures and brighter days than with light and tasty foods like salad to serve at Easter brunches or dinners?
For a twist on the traditional lettuce-based salad, opt for greens that have a little bite. “Arugula and Artichokes” pairs two nutritious and delicious offerings in one salad. The recipe is courtesy of “The Mediterranean Diet Cookbook.”
Arugula and Artichokes (Serves 6)
Ingredients:
4 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
6 cups baby arugula leaves
6 oil-packed artichoke hearts, sliced
6 low-salt olives, pitted and chopped
1 cup cherry tomatoes, sliced in half
4 fresh basil leaves, thinly sliced
Directions:
1 - Make the dressing by whisking together the olive oil, vinegar, Dijon mustard, and garlic until there is a smooth emulsion. Set aside. Toss the arugula, artichokes, olives, and tomatoes together.
2 - Drizzle the salad with the dressing, garnish with the fresh basil, and serve.

The Pennsylvania Lions Beacon Lodge Camp has opened registration for the upcoming camp season.
Situated on 583 acres along the Juniata River in Mount Union, Beacon Lodge Camp was organized in 1948 to meet the needs of Pennsylvania residents with vision impairments. Beacon Lodge has grown into an inclusive summer camp for both children and adults with blindness or vision impairments, as well as individuals with other special needs, including intellectual disabilities, autism, mobility issues, deafness and hearing impairments, and ADHD.
The camp is funded primarily by donations, and it has been sponsored by the Pennsylvania Lions for 75 years as a state project. During the camping season, Beacon Lodge operates as a full-service summer camp for children and adults with a variety of special needs.
The camp’s mission is to provide all individuals with special needs the opportuni-
ty to enjoy a camping experience. Special emphasis is placed on stimulating interests and appreciation for recreation and learning, as well as encouraging campers to take on new challenges.
Beacon Lodge offers several different camping sessions based on camper abilities. Activities focus on campers’ strengths, not their weaknesses. Activities range from bingo and arts and crafts to the climbing tower and zip line.
The camp also offers special sessions and programming for military veterans who have become disabled. Camp Project New Hope offers camping experiences for veterans and their families.
For information on the 2023 camping season, visit www.beaconlodge.org.
Many campers can receive assistance with funding from their local Lions Club. For information on local Lions Clubs in Lancaster and Lebanon counties, contact District 14-D Beacon Lodge board

Giant to offer virtual cooking classes
April is the start of spring, and the Giant Company’s team of dietitians is ready with fun and informative ideas to inspire all month long with free virtual classes for families and chefs of all ages.
Produce Spotlight will be presented by the dietitians every Monday at noon. Participants will learn how to use spring produce to create easy and delicious dishes, including how to turn unfamiliar vegetables into new favorites.
During Wellbeing Workshops on Mondays at 7 p.m., the dietitians will discuss how to improve one’s emotional, physical and financial well-being.
Star Studded Salads will be presented on Tuesdays at noon. Attendees will discover new ways to make their salad the star of the meal. Recipes designed to be quick, easy and affordable, and featuring various proteins and ingredients, will be showcased each week.
Giant’s dietitians will present Family Meals at 5 on Tuesdays at 5 p.m. Home cooks will learn to build easy, quick, and balanced meals in under 30 minutes.
Table Talk, to be offered on Wednesdays at noon, will be held in conjunction with Earth Day on Saturday, April 22. The dietitians will engage with vendors and community partners throughout the month about ways everyone can reduce food waste and heal the planet.
Better for You Baking, where home cooks will learn how they can make small substitutions and swaps to their favorite desserts, will be offered every Thursday at noon. Each week, the dietitians will highlight new recipes and ideas that satisfy the sweet tooth with less of the guilt.
Visit www.giantfoodstores .com/wellness or www.martins foods.com/wellness for recipe inspiration and resources. There is also a link to preregister for all virtual classes, including a complete listing of classes and ingredients needed for each class. In addition, customers can earn 50 Choice Rewards points when they register, provide their card number and state and attend the entire class.
