SHINE brings lasagna to locals

Afew years ago, Crystal Smeltzer and Brian French, Lighthouse Vocational Services’ (LVS) senior management, were brainstorming ideas to get LVS participants out into the community in a way that would give back to local residents. LVS is located at 144 Orlan Road, New Holland, and the organization provides vocational services for individuals with disabilities.

“They were thinking, ‘Everybody loves to eat, and Lancaster County is famous for food,’” said Michelle Coblentz, donor relations advocate with LVS. The co-workers hit on the idea of making and delivering lasagna to area residents who were struggling in some way. The effort came to be known as SHINE, which Coblentz said stands for “Sharing Hope In Neighborly Encounters.”

Until June 2023, two meals were being delivered each Wednesday, but as of June, two meals go out on Tuesdays as well. Each meal consists of a tray of lasagna to feed up to 20, along with a freshly made salad for

each person at the home where the meal is being delivered. “Meals go to people who are needing encouragement - maybe going through some kind of rough patch … whether it’s an illness, hospitalization, death of a spouse, or (they) just don’t have a lot of food,” explained Coblentz.

Denise Johnston, community participation services coordinator with LVS, explained that three participants and an LVS coach work out of two area churches that have partnered with the organization, switching back and forth between using the Trinity Lutheran Church kitchen and the kitchen at Bethany Grace Christian Fellowship. “The same group that purchases the groceries goes to the church and prepares the meal, and then they deliver the meal,” she stated.

At first, word of mouth was the best way to find meal recipients, but as the program has grown, Johnston requested names from sites where LVS participants volunteer in the community. More recently flyers See SHINE pg 4

When Risa Paskoff’s children were small, she almost never got to read

the Sunday paper, but on one Sunday in early 1989, Risa noticed an article about Janiece Seldomridge, who was raising her autistic son, Aaron. “I

said to the kids, ‘Give me a second to read this story,’” recalled Risa, who specifically remembered one line from the article that read, See Aaron’s Acres pg 2

ASSETS was started by the

Mennonite Economic Development Associates (MEDA) in an effort to create stateside opportunities for entrepreneurs. “We are a CDFI (community development financial institution),” said Nofziger, who noted the organization plans to expand beyond Lancaster County. ASSETS can offer loans from $1,000 to $50,000. Three main lending products are available: a small business loan of up to $10,000; an impact loan of up to $30,000; and a special Reimagining Our Community loan of up to $10,000 for one year at 1%, accompanied by a 30% matching grant.

“(Seldomridge) and a group of parents want to start a camp program (for their children with disabilities).” “I needed to find out about that,” Risa said. “That was my dream.”

Risa met with the group of parents several times and eventually became the director of Aaron’s Acres, an organization that bears the name of Seldomridge’s son and provides socialization and recreation for children and young adults with special needs. That first summer camp in 1989 welcomed children ages 5 to 9. Aaron’s Acres now offers both summer camp and school year programs for those ages 5 to 21.

On Saturday, Aug. 26, starting at 1 p.m., the organization will hold Aaron’s Acres’ 25th anniversary cele-

bration at Mickey’s Black Box, 101 Rock Lititz Blvd., Lititz. “It will be a celebration of the community,” said Risa. “We are where we are because of the support that we get from everyone in the community.”

The celebration will be divided into two parts, with a carnival-themed family fun event happening from 1 to 4 p.m. featuring inflatables, bounce houses, games, food trucks, face painting, and popcorn. “All (area) families are invited. It’s open to everyone,” said Risa.

For the evening event, doors open at 5:30 p.m., and the celebration for guests age 18 and older will be held from 6 to 9 p.m. The Mama Tried Band will play and a mentalist from Philadelphia will stroll through the gathering interacting with guests. Food

will include heavy appetizers and beverages by Cracked Pepper Catering. Risa noted that silent auctions will be held during the afternoon and evening events, along with a Fund-a-Need opportunity. “Two parents will speak, and there will be a brief presentation (in the evening),” said Risa, who added that attire will be dressy casual. Tickets, which are necessary to attend either event, may be purchased at www.aarons acres.org by Monday, Aug. 14.

Risa recalled identifying her first career choice at an early age. “When I was 9, I volunteered to help in the classroom for students with disabilities instead of going out to recess,” she stated. “When I was 16, I worked at a (Young Men’s Hebrew Association (YMHA)) day camp for kids with disabilities in New York.” In that

position, Risa recognized the possibilities a camp atmosphere could offer. “I saw the power of focusing on therapy, communication, and socialization but in a fun setting,” she said.

After earning her master’s degree in social work, Risa worked in a hospital setting. At age 24, she contacted the camp where she had been previously employed and learned the organizaton was looking for a program director. She filled that position, but resigned later when her husband, Jack, a rabbi, began leading a synagogue in New Jersey. Not long after, she was rehired and commuted from her new home to the YMHA until her first child was born. When her family moved to Lancaster, she had her own therapy practice for children until after becoming the director for Aaron’s Acres.

Free community meal posted

The community is invited to a free hot meal, to be served from 5:30 to

6:30 p.m. on Thursday, July 27, at Leacock Presbyterian Church, 3183

Lincoln Highway East, Paradise. The meal will be hosted by the church’s mission committee.

The mission committee will serve subs, chips, pickles, baked beans and applesauce, along with desserts. The meal will be served in the handicappedaccessible Smith Fellowship Hall.

Entrepreneurial training programs and boot camps, which run from six to 10 weeks, include the Business Validator and Incubator classes, housed in the Women’s Business Center. ASSETS marketing coordinator Kirsten McWilliams said the Incubator offers entrepreneurs the opportunity to “fine tune strategies within their business and tell (their) story.”

“At the end, they have this business model to take out to the world,” she said. Impact consulting is also available.

ASSETS CEO Jamie Arroyo called the organization a “one-stop shop for starting and growing a business.”

“Entrepreneurs can come to us to develop a business plan and get in-depth information on financing,” he said. “Our biggest strength is that we pair education with training and lending.” Arroyo added, “We are going to walk alongside the entrepreneur on their journey.”

UDS plans golf tournament

United Disabilities Services (UDS) will host its fourth annual golf tournament supporting its service dogs on Friday, Aug. 18, from 7 a.m. to 2 p.m. at Crossgates Golf Club, 1 Crossland Pass, Millersville.

Golfers can play in groups of up to four and enjoy activities like a hole-inone contest to win a cash prize, longest drive and putting contests, a silent auction and giveaway drawings.

All proceeds will benefit the UDS Service Dogs program to help train dogs to be partnered with people who have a mobility disability, autism or post-traumatic stress disorder to help them live fuller lives.

The organization is now working with The Factory Ministries in Paradise to provide meals to some clients, as well as looking to bring meals to people in retirement communities who could benefit from the interaction. Teams have also delivered meals to Revelations of Freedom Ministries in Blue Ball and to the Good Samaritan homeless shelter in Ephrata from December of 2022 through March.

“We tried a couple other

recipes, not just lasagna (for the homeless shelter),” noted Johnston.

Johnston estimated that more than 200 lasagna meals have been delivered by SHINE since the program began. She pointed out that the LVS participants benefit from the opportunity to serve. “The participants make a connection,” she said. “They get so excited knowing they are blessing someone else, so when they get to see the person they made the lasagna for and visit with them it’s really r ewarding.”

Giving Trail to benefit nonprofits

The inaugural Giving Trail will take place from 10 a.m. to 6 p.m. on Friday, July 28, and Saturday, July 29. It will begin at Lancaster Gift Box, 317 N. Topics on Aug. 31 will include the uses, trade and cultural importance of American ginseng; its identification, biology, and ecology; its side effects; wild population stewardship and forest farming approaches; and research updates and educational opportunities.
