BecauseNew Year’s Day will fall on a Sunday in 2023, the Kinzer Fire Company, 3521 Lincoln Highway, Kinzers, will hold its annual New Year’s Day dinner on New Year’s Eve.
“Technically, we’re having two dinners in one year,” noted organizer Dwight Groff, referring to the Jan. 1, 2022, event as the first of the two. The 41st dinner will be held at the fire station from 10 a.m. to 5 p.m. on Saturday, Dec. 31. Both individual takeout meals and sit-down, family-style meals will be available.
According to Groff, fire company volunteers will plan to serve about 2,000 meals consisting of fresh pork, homemade sauerkraut, buttered carrots, mashed potatoes, gravy, applesauce, chow-chow, and assorted desserts. Those who choose to eat in the fire hall may enjoy coffee, tea, iced tea, and lemonade beverages with their meal.
Kinzer Fire Company prepares its own sauerkraut on-site each year, and the cabbages for the upcoming meal were chopped and put to bed to ferment on Oct. 10. Sauerkraut from the station will be available by the pound through Friday, Dec. 30. Those wishing to purchase sauerkraut may do so by appointment by calling 717-442-4170.
Pork and sauerkraut meals will be sold at a per-person price on a first-come firstserved basis, with discounts for children age 4 through 12. Children age 3 and under may eat for free. Takeout delivery is available within 5 miles of the station. Those wishing to purchase takeout may call 717-442-4121, beginning at 10 a.m., to order. Thursday, Jan. 5, 2023, at 2 p.m. at The Factory. Phase two will include addressing the need for Americans With Disabilities Act (ADA) compliant bathrooms, repositioning the stairs that lead from the entry to the loft, and raising the ceiling height in the kitchen.
Phases two and three of the project will be funded by separate Redevelopment Authority Community Development Block Grants (CDBG). Nagle explained that the winning contractor will need to comply with prevailing wage requirements and be familiar with paperwork and regula-
tions included with that qualification. Depending on the bid received, alternate items the contractor might bid on include a separate ADA-compliant bathroom and a chairlift to make the gymnatorium stage more accessible. Bids must be received by Thursday, Jan. 26, 2023, with work completed by May of 2023.
According to Nagle, phase three will focus on the front entryway of the 1927 building, which features white columns associated with schools constructed in that time period. Although the building has been recognized for its historical significance, it has false windows in the front. “(Phase three) will clean up the front entry to make it accessible and safe,” said Nagle, who added that a bricked-in archway on the east side of the building will be reopened to create an ADA-accessible entrance.
Nagle said that there is an identical bricked-in entrance on the west side and that he has been told originally one entrance was for boys and the other was for girls.
After working with CityScapes Commercial Roofing of New Holland on a previous contract, Nagle said the organization is hoping to work once again with an area contractor. “We had a phenomenal relationship with CityScapes,” reported Nagle. “We were able to do some cool things with CityScapes because they captured the heart of our mission and what we’re about.”

Museum Sets Ramble, Simple Machines Program
Friends of the Railroad Museum of Pennsylvania will host a Buckeye Ramble to the neighboring state of Ohio from Tuesday, June 13, through Friday, June 16. The registration deadline is Wednesday, March 1.
The Buckeye Ramble will include rides on Pittsburgh’s Monongahela Incline, a vintage trolley, the Lorain and West Virginia Railroad, and the Cuyahoga Valley Scenic Railroad. The trip will also feature tours of the Age of Steam Roundhouse, the B&O Round-
house, the Mad River & NKP Railroad Museum, the Ernest Warther Museum & Gardens, the Dennison Railroad Depot Museum, and the Pennsylvania Trolley Museum.

will learn about six simple machines and how they make up larger machines on the railroad. Through demonstration and active participation, they will discover how each simple machine makes a task easier through design. Children will be encouraged to find examples in their home and in their everyday lives. There will be time for questions at the end of the program. Rough Riders 4-H Club Plans Meeting

Runners and hikers are invited to participate in the Lancaster Group of the Sierra Club’s 13th annual Polar Bear 5K Trail Run/Hike at 10 a.m. on Sunday, Jan. 15, 2023, in Lancaster County Central Park, Rockford Road, Lancaster. Participants also may bring their leashed dogs to run or walk with them. This will be the first in-person Polar Bear 5K in two years.
The 5K features numerous unique prizes and colorful ribbons. Honored will be the overall top three male and female finishers; the first-, second-, and thirdplace winners in numerous categories; and the first three finishers who race
with their dogs. Special door and dog prizes will also be presented.
The 5K (3.1-mile) route will be the same as it was for the last in-person race, winding through the park on wellmaintained trails with some hills. Participants should

New Year’s Day Brunch Option
The late-night revelry of New Year’s Eve has made New Year’s Day brunch a go-to tradition for millions of people, as staying up until midnight on Dec. 31 can make it harder to get out of bed on Jan. 1. Many restaurants offer brunch specials on New Year’s Day, but people need not leave home to ensure their first meal of the new year is delicious. Readers may try the following recipe for Pan-Fried Eggs and Mixed Mushroom Sauté on Toasted Sourdough Slices, from “Sunday Brunch” by Betty Rosbottom.
Pan-Fried Eggs and Mixed Mushroom Sauté on Toasted Sourdough Slices (Serves 4)
Mushroom Sauté
1 1/4 ounces mixed dried mushrooms
1 1/2 cups boiling water 3 tablespoons olive oil 8 ounces sliced brown mushrooms
2 teaspoons minced garlic 1 teaspoon dried, crushed rosemary (see tip)
Kosher salt
Freshly ground black pepper
Toast and Eggs
4 1/2-inch-thick sourdough slices
Olive oil 2 tablespoons unsalted butter 4 eggs Kosher salt
Freshly ground black pepper Rosemary sprigs for garnish (optional)
Directions:
1. For the Mushroom Sauté: Place the dried mushrooms in a medium bowl and cover with boiling water. Let stand until softened, 20 minutes. Strain in a sieve lined with a double thickness of paper towels and reserve the soaking liquid. Coarsely chop the mushrooms.
2. Heat the olive oil in a medium-size, heavy frying pan set over medium heat. When
hot, add the brown mushrooms and sauté, stirring often, for 6 minutes. Add the reserved mushrooms, garlic, rosemary, and 1/2 teaspoon salt; stir for 1 minute. Add the mushroom liquid and cook, stirring, until it has evaporated, 4 to 7 minutes. Season with salt and several grinds of pepper. Remove the frying pan from the heat and cover with foil to keep warm. (The mushrooms can be prepared one day ahead; cool, cover and refrigerate. Reheat, stirring, over medium heat.)
3. For the toast and eggs: Brush both sides of the bread slices generously with olive oil. Set a 10- to 11-inch nonstick frying pan over mediumhigh heat, and when hot, add the bread and cook until lightly browned, about 2 minutes per side. Remove the toast and cover loosely with foil. When pan is cool enough to handle, wipe it out with clean paper towels.

Cooking foods at home is one way people may gain greater control over personal health. When people cook at home, they can know precisely what they are putting into their body each day. Cooking one’s own meals also enables individuals to customize recipes so they align with any dietary restrictions or person-
al preferences they may have.
Increased creativity and confidence in the kitchen, as well as the fact that cooking at home helps to save money and enables one to heat healthier, is driving the ongoing increase in dining in.
When cooking at home, cooks can consider various tips to make meals that much healthier. Small dietary changes can add up to big health benefits.
Increasing fiber intake makes meals healthier. Fiber improves bowel regularity and helps a person feel full between meals. High-fiber foods also help stabilize blood sugar levels. Two servings of fibrous foods at each meal and an additional fiber-rich snack
each day can ensure the body is getting the fiber it needs.
Individuals should strive to slow the pace at which they eat. The pace at which a person eats a meal can affect his or her overall health. Healthline reports that fast eaters are more likely to eat more and have higher body mass indexes than slow eaters.
Whenever possible, individuals should choose whole grains. Choosing whole grain breads or cereals over refined grains can make for a more nutritious diet. Whole grains are linked to a reduced risk for Type 2 diabetes, heart disease, and cancer.
As a healthier option, Greek yogurt should be swapped for other varieties. Greek yogurt

Immediately reduce the heat to low and cook, basting the eggs with some of the butter in the pan frequently, until the whites are firm and the yolks are still soft and runny, 3 minutes.
5. While the eggs are cooking, arrange a toasted bread slice on each of four plates. Mound the mushrooms evenly over the toast.
6. Remove each egg with a spatula and arrange on top of the mushrooms. Season with salt and pepper and, if desired, garnish each serving with a rosemary sprig. Serve immediately.
Tip: If dried, crushed rosemary is unavailable, crush regular dried rosemary in an electric spice mill or place it in a self-sealing plastic bag and roll over it with a rolling pin.

Olive oil is a monounsaturated fat that is packed with antioxidant polyphenols. It is considered a heart-healthy oil, and it may promote a healthy brain and memory function.
Cutting out sweetened beverages is another strategy for healthier eating. Sodas and other sweetened drinks are leading sources of added sugar in diets. Opting for water or naturally sweetened fruit juices can improve overall health.
