As part of Lititz’s monthly Second Friday observance, United Zion Retirement Community (UZRC) will hold regular artist receptions to celebrate the 12 or more artists whose work will be exhibited in the community’s art gallery during 2020. “We’d like more people to come in and see us,” said Megan Weiss, director of marketing and development with UZRC. “It is a way to give back to the community, and let (area residents) know this art gallery is here for them,” said Weiss, who added that it is also a way to inform UZRC residents about United Zion Retirement Community CEO local artists. Lynette Morales, the Everence church relations representative who coordinates Stewardship University, wants Lancaster County residents to know that the yearly event is not just about money. “It is a day of holistic stewardship,” said Morales, who noted that the workshops offered are designed to answer questions like: What does it mean to be a good steward of the Gospel? Or of the gifts God has given me? Stewardship University 2020 will be held on Saturday, March 7,

Benefit Square Dance Planned Stewardship University from pg 1 The annual Heart Fund Square Dance, to benefit the American Heart Association (AHA), will be held on Sunday, Feb. 16, from 2 to 5 p.m. at Lititz Area Mennonite School, 1050 E. Newport Road, Lititz. Pre-rounds will take place from 1:30 to 2 p.m. The dance is being sponsored by DoPasO Square Dance Club, and it is open to the public. No experience is necessary, and novice and experienced dancers are welcome. The event will feature three dancing areas with no carpeting. Novice Dancer, Mainstream, Plus, Advanced and DBD tips, as well as Rounds, will be available.
There will also be giveaway drawings, a silent auction, refreshments and more. Minimum donation amounts have been set for adults and for people under age 20. A family maximum has been set as well. Individuals who purchase tickets before Friday, Feb. 14, will be entered into special door prize drawings. All proceeds from the dance will be donated to AHA. Johnson of Harrisburg Brethren in Christ Church will speak on “Being the Body of Christ.” The opening will be followed by more than 30 workshops divided into 12 tracks, with three workshops per track. “We have a millennials track, a mental health track, a Bible and stewardship track, family and community, 55 and older, (and more),” said Morales. “This year the workshops are incredible,” she added. Among this year’s workshop titles are “Missions in Your Own Backyard,” “Combatting Human Trafficking,” “55 and Counting,” “Elevate
Your Nutrition,” “Kingdom Entrepreneurship,” “Make Medicare an Easy Step,” and “Overcoming Burnout and Disappointment.” Morales pointed out that experts in specific fields will teach the workshops. “We have one called ‘ModernDay Lepers,’” she said, noting that the workshop will focus on integrating sex offenders who have come out of incarceration into a church community. Another workshop that Morales elaborated on will work to teach churches and families the best ways to respond to children with autism, ADHD, and developmental differ-
ences. She pointed out that one workshop will focus on the serious problem of depression and suicide among teenagers. Jazmine Rivera, administrative assistant/centennial coordinator with Mennonite Central Committee (MCC), one of the sponsors of the event, attended in 2018. “I was interested in seeing financial plans and how to map myself, and my goal was to learn as much as I could,” said Rivera. “Some of the classes were really helpful and meaningful. It was really great to listen to the thoughts and ideas.” Attending the event spurred Rivera to have a few ideas of her own, which she shared with Morales. “(Rivera) said, ‘This is awesome, but where are the young people?’” recalled Morales. Not only did Rivera have suggestions for attracting millennials, she also thought MCC could aid the event in a variety of ways. “MCC has
been instrumental in developing workshops,” said Morales, who said a larger number of young people are attending the event and that there is more diversity among the more than 400 who attend and the presenters. “(Rivera) said (things) I had been thinking, and she had connections that were instrumental,” said Morales, who added that Eastern Mennonite Missions and Landis Communities are among the local organizations that support Stewardship University’s mission. involving those methods of transportation. In February, the artwork of UZRC team members Shelly and Chris Eby is featured in the gallery. Shelly, who has been a receptionist at UZRC for 40 years, is exhibiting paintings done in the fluid art style. Eby, who works in environmental services, is exhibiting illustrations and drawings. The reception will be held on Friday, Feb. 14. The Friday, March 13, reception is scheduled to feature the fine art of Chris Gold, known for her landscapes, botanical wildlife, and paintings that include a surreal twist. On Friday, April 10, the art of Mary Kopola and the photography of Dave Adams will be displayed. The Friday, May 8, reception will be held for fine artist David Gibson, and on Friday, June 12, for returning artist Lillie Fernbeck. On Friday, July 10, the work of Jeremy Miller, liturgical artist, who draws inspiration from historic Christian symbolism, will be featured. On Friday, Aug. 14, the photography of Jennifer Cavalcante, whose work is so vividly hued that it sometimes resembles a painting, will be displayed. On Friday, Nov. 13, Catherine Herbert, who likes to express the beauty of nature through art, will exhibit, and on Friday, Dec. 11, photographer Nick Wetzel, who is dedicated to capturing the beauty of animals in their natural habitats, will bring his work to display. The works of each artist will be in the UZRC gallery, which is open daily from 8 a.m. to 8 p.m., throughout the designated month. Weiss noted that she hopes those who visit the receptions and the gallery will see how the facility has been updated recently. “ We have been here 115 years, and we had so many changes last year with the renovations in our common spaces for residential living and personal care,” she said, noting that an upcoming construction project is due to begin on Wednesday, April 1. “ We want people to know where we are and see how much we’ve changed,” shared Weiss, who noted that UZRC will hold its annual Chocolate Stroll on Saturday, Feb. 22, and an open house in the fall. Gretna Theatre is producing and touring “No Easy Road to Freedom,” a one-hour play that celebrates the importance of diversity and inclusion in America’s history. During February, the educational show is being performed at local schools and retirement communities. Gretna Theatre is known for its summer productions, but it concentrates on educational outreach efforts during the offseason. Gretna Theatre tours four different social and curriculumbased productions each year. “No Easy Road to Freedom” is an educational show that uses poetry, drama and song to illustrate individual bravery and determination in the face of oppression. The story travels through American history with scenes on immigration, women’s rights, the Civil Rights Movement and more. Professional actors perform roles such as Martin Luther King Jr. and Rosa Parks. The playwright is Tom Quinn, the play is directed by Renee Krizan, and the production is considered suitable for sixth-graders to adults. Woods’ goal is to give hunters proven strategies, food plot techniques, and practical advice for common hunting problems and management issues. In addition to Woods’ talk, the event will include auction items going up for bids. A Chinese auction will also be held. According to Santiago, tens of thousands of dollars worth of door prizes will be given away. Santiago noted that a number of auction and door prize items have been gathered for the event. “ We will have a muzzleloader, compound bows, trail cameras, tree stands, blinds, hunting backpacks, and clothing,” said Santiago. “There will be prizes for anglers and hunters, so bring your family,” he added, noting that some prizes will appeal to youths and women. The grand prize will be a Ravin R29 Crossbow. RTCM strives to help men who have been traumatized and who have turned to abusing chemicals or developed other kinds of addictions. The organization supports clients in finding healing and developing healthy coping mechanisms. Santiago
noted that by bringing a relationship with God into the students’ lives, the program aims to restore the men to their families. The current RTCM facility can accommodate 12 students. Tickets are required for individuals to attend the banquet. Seating is limited. Tickets purchased by Friday, March 6, will be discounted. Youth programs will engage preschoolers through high schoolers. Toddlers may be active on Fridays during morning open gym times. Preschool sports will be offered in the mornings and evenings to introduce young children to developmental skills, following directions and playing in small groups. Elementary-age children may play tennis on Thursday nights, volleyball on Tuesday nights, or indoor soccer on Wednesday nights. Fitness, dance and tumbling programs will also be offered throughout the week. Lititz recCenter will close out the youth basketball season with a three-on-three tournament for third grade through high school. Boys’ or girls’ teams of three to five players may register to compete. The team sign-up deadline is Sunday, March 1. New for adults seeking action and adventure in the outdoors are spring recTrek Outings. On select Saturday mornings in
March and April, a guide will lead groups to Middle Creek Wildlife Management Area for educational and recreational birdwatching, wildflower and mushroom searches and more. Pickleball will continue in the spring with open play times every morning of the week and evening open play on select days. Lessons and play time for beginners to get started in pickleball will be offered, as will an advanced league. New swim classes will begin in March and again at the end of April to introduce and build skills in time for summer swimming. Lessons will be offered at a variety of times throughout the week. Pre-competitive lessons for children and youths ages 5 through 14 will be offered two evenings per week, providing preparation for summer swim teams and challenges for more advanced swimmers. Swimming is a year-round activity for Lititz recCenter, and this spring will mark the re-opening of the newly reconstructed Lititz Springs Pools. Summer season pass sales will begin March 1 for the 2020 outdoor pool season, slated to kick off on the weekend of Memorial Day, Monday, May 25. Members of the center are now able to register for spring programs, with nonmember registration starting on Monday, Feb. 17. 4-H Benefit Auction Planned The Lancaster County 4-H program will hold the 34th annual Lancaster County 4-H Benefit Auction on Saturday, Feb. 15, at 9 a.m. at the Farm and Home Center, 1383 Arcadia Road, Lancaster. Specialty items to be sold include a handcrafted tack box, a Quaker-style chicken coop, and certificates to the Fulton Theatre, Morr Range, Cherry Crest Adventure Farm, Rhoadstar Tire Center, and other businesses. United Way of Lancaster County’s VITA Program is one of more than 12,000 Volunteer Income Tax Assistance (VITA) programs across the country that the IRS relies on to help people file their taxes every year, completely free of charge. This year, VITA opened a new location, VITA Central, at 1380 Harrisburg Pike, Lancaster. This site will replace the Janet Avenue site and will be open yearround to assist clients with tax services. VITA provides free tax preparation services for federal, state, and local tax returns to taxpayers who make less than $62,000
and live, work, or go to school in Lancaster County. Last year, United Way’s IRS certified volunteers assisted more than 11,000 individuals and families in Lancaster County complete their tax returns and receive in excess of $14 million in refunds. The volunteer tax preparers at United Way’s free tax preparation sites go through at least 40 hours of tax law training and are certified by the IRS. Volunteers are equipped to identify tax refund opportunities for customers. Seventeen VITA sites opened on Jan. 21
to ensure that clients receive their refund as quickly as possible. To schedule an appointment at one of VITA’s tax preparation sites around Lancaster County, taxpayers should call 211. Tax payers may also schedule an appointment or obtain more information about VITA locations, eligibility requirements, and more by visiting www.freetaxpreplancaster.org. Warriors Top Solanco In Regular Season Finale by Vaughn Brown
With its Section Two title firmly in hand, the Warwick boys’ basketball team hit the road last Tuesday to visit Solanco for a non-league matchup that wrapped up the regular season for both teams. Outscoring the Mules through three quarters of the game, the Warriors easily handled the hosts for a 71-46 victory. Conor Adams tallied a game high 19 points and was 5-8 from the line while Kai Cipalla followed with 12 to pace Warwick which remained red hot from long distance, draining a total of 12 three pointers on the night. After going on a 23-13 run to start the game, the Warriors widened the gap by halftime, and went into the locker room with a 36-23 lead. A blanketing Warrior defense practically nullified Solanco’s offense in the third as Warwick outpointed them 21-6 before conceding a 17-14 advantage to the Mules in the fourth. With the win, Warwick headed into this week’s L-L League Championships with a full head of steam, matching up with Columbia in Monday’s quarterfinal round where a win would have advanced them into today’s semifinals. All results will be reported on next week. GIRLS’ BASKETBALL Meanwhile, the lady Warriors began their League Championship
quest on Thursday with a play-in game versus Northern Lebanon which proved too much for Warwick to handle. Despite trailing 39-7 after three quarters of play, Warwick came out ferocious in the fourth and outscored the Vikings 25-14, but it was too little, too late as Northern Lebanon held on for the 43-32 win. Coming off a 40-point explosion versus Donegal, the Viking’s Zara Zerman scored a game high 24, totaling more than Warwick’s Lailani Batty (11) and Lauren Pyle (10) combined. Next up for the ladies is a trip to the PIAA District Three playoffs where they qualified as the 12th and final seed in Class 6A. They will play fifth seeded Red Lion on the road on February 17th. SWIMMING Hannah Greenway stood as the lone Warwick swimmer to earn a gold medal this past weekend in the Lancaster-Lebanon League Championships which were held in the Roy Snyder Natatorium at Wilson High School in West Lawn. The lady Warriors finished third overall in the team standings with 64 points and landed a total of 10 medals in the competition which stretched from Friday into Saturday. Greenway led the girls in the individual events by winning two medals and swam on one of Warwick’s two relay teams which also placed. Her
first place finish came in Friday’s 50 freestyle where she engaged in a fierce battle with Hempfield’s Katelyn Wigglesworth whom she bested by a slim .24 margin by finishing in 24.65 for the win. Swimming in the very next event, Greenway wrapped up the fourth place spot in the 100 butterfly with a time of 59.75 and finished in a pack of three swimmers that included Hempfield’s Maggie Shaffer (59.50) and Ashley Parry (59.77) from Garden Spot that were separated by a mere .27. Izzy Miller (1:00.81) and Morgan Stuhltrager (1:02.40) also competed in the event finishing seventh and eighth, respectively. Teaming with Melanie Hahn, Kendall Eby, and Miller in Saturday’s 400 freestyle, Greenway helped the squad to a third place finish with a time of 3:44.26 and the school’s second relay medal of the weekend. The first came in Friday’s 200 medley in which Eby, Stuhltrager, Miller and Katie Jeanes swam to a fifth place finish in 1:54.58. Eby also placed twice in individual events with her highest coming in the 500 freestyle where she logged a time of 5:26.36 for fourth place ahead of teammate Jenna Ober who took eighth in 5:31.93. She also ended up seventh in the 200 IM with a time of 2:17.81, edging out another familiar face in fellow Warrior, Hahn whose 2:17.94 landed her in eighth place.
While none of the boys recorded first place wins in the individuals, two of them doubled down on medals as James Moll and Theo Lance both snapped up a second and third place finish while two relay teams also garnered medals. Moll’s individual accomplishments came in the form of a second place finish in the 100 backstroke (54.60) and third in the 200 IM (2:01.62) while Lance scored a silver in the 200 freestyle (1:46.43) and bronze in the 500 freestyle (4:53.77). Stuhltrager’s time of 54.55 in the 100 butterfly landed him in sixth place. St. Peter’s Lutheran Church, 10 Delp Road, Lancaster, will feature its own musicians in a hymn festival titled “No Darkness At All� on Saturday, Feb. 22, at 7 p.m. The event is the next concert in the 2019-20 Musical Arts Concert Series. Lisa Ericson, a Manheim Township resident, recently wrote a book, “Against All Odds: An Incredible Journey of Hope and Healing,� telling the true story of Shannon Kerr. Kerr, a young woman who lives near Minneapolis, Minn., endured an experience in 2015 where she almost died. Because the circumstances surrounding the event were unusual, mysterious, and infused with hope, people suggested that she put the story into print. She asked Ericson to author the book. Ericson met with Kerr for two
days in her home in Minnesota to get an overview of the story. Back in Pennsylvania, Ericson took on the project, conducting research and doing phone interviews with family, friends, eyewitnesses, and authorities associated with the story. Ericson wrote a complete manuscript, which she delivered to Kerr seven months later. As Kerr’s ghostwriter, Ericson decided to write the entire story from Kerr’s perspective. Food and Beverage The Importance Of Food Safety Certification By Dayna M. Reidenouer
Working in food service involves much more than asking “Would you like fries with that?” Food service workers may be employed in grocery stores, retirement communities, schools, office building cafeterias, restaurants, and anywhere else that qualifies as a retail food establishment as defined by law. One of the top priorities of all food service workers is to keep consumers safe. The United States Food and Drug Administration (FDA) has created a model food code, which is updated every four years, and states can create their own based on the model. According to Penn State Extension, the FDA Food Code provides updated sciencebased guidance and recommendations on how to handle food safely in order to reduce or prevent foodborne illnesses. Until recently, the FDA Food Code required that one person within a food service operation be a Certified Food Protection Manager. The new update, announced in February 2018, now requires that the person in charge of a facility be certified. The Pennsylvania Department of Agriculture (PDA), which oversees the state’s food code and the Food Employee Certification Act, adopted the update and declared the change in certified managers to go into effect in 2020. “We have research from the Center for Disease Control and Prevention that shows when we have a (certified) person on duty
at all times, the risk of foodborne illness is reduced,” said Stacy Reed, senior extension educator with Penn State Extension. “Prevention of foodborne illness is a big deal. About 48 million people get sick (from a foodborne illness) each year, and that leads to over 128,000 being hospitalized. That means one out of every six people will get sick from a foodborne illness (annually). An estimated 3,000 people pass away from a foodborne illness every year.” Until the latest change, retail food facilities were required to have a Certified Food Protection Manager available during inspection, even if it was just someone who could go to the facility when called. With the new requirement that the person in charge - for example, a shift manager - be certified, more people will need to have their certifications. “We’re trying to be proactive and making people aware of these amendments so that we have plenty of people that are certified,” Reed said. Certification must be renewed every five years. PDA recognizes manager certification programs offered by five organizations. Penn State Extension offers local classes for the PDA-approved ServSafe program from the National Restaurant Association (NRA). The classes are typically held in groups of two, with one week separating them. A proctored exam is offered at the end of the second day, and a score of 75% or higher is required to receive a certificate. Exams may be

We have advanced professional knowledge and experience; we are professional educators.” The ServSafe course is also available online and may be completed at an individual’s convenience. The exam must be taken in person, however. Accommodations for people with disabilities are available through the NRA. Sometimes accommodations might include having more time to complete an exam or having the exam read aloud by someone without a food safety background. “There are ways (we) will work with individuals to help them succeed,” Reed said. Exams are available in English as well as Spanish, Chinese, Korean, Japanese, French Canadian, and large-print English. Classes taught in Spanish are available in Kennett Square, although Reed noted that she has a bilingual program assistant who can teach the class in Spanish in Lancaster. Anyone who is interested in food safety is welcome to take a ServSafe course. “We have a lot of individuals who take the class
