Welcome to our seventh edition of the Stoke Park magazine and my first forward as President of the Club. 2017 has been a wonderful year so far at Stoke Park. We have continued to receive wonderful awards and accolades, and were delighted to be recently named the 'Best Gourmet Golf Resort in the World' by Great Golf Magazine and also our Executive Chef Chris Wheeler won the Oscar of the hospitality industry - the prestigious 'Hotel Chef of the Year' award at the Hotel Cateys. Already in 2017 Stoke Park has been named as one of the ‘Best Spa Hotels in Britain’ by The Times and ‘Best Luxury Spas in the UK’ by The Independent.

PRESIDENT In 2017 we welcomed a new Club President, former England Cricket Captain and current Director of Cricket England, Andrew Strauss OBE. Nick Downie catches up with Andrew and talks all things cricket, tennis and golf…


The golf industry keeps being told it needs to find its own version of Twenty20 cricket – hence the recent introduction of Golf Sixes. So what significant advantages have you seen since the advent of Twenty20 cricket – and how can golf learn from them?

How has tennis filled the competitive void in your life since retiring from playing cricket? The hardest thing to come to terms with when you retire from playing a professional sport is that whatever you do in your life, it is unlikely to replace the incredible adrenalin highs that you get from playing at the highest level. While playing tennis at Stoke Park doesn't quite match walking out to bat in an Ashes Test match at Lords, it still gets the competitive juices flowing, and keeps me vaguely fit at the same time! What advantages are there in being a batsman playing tennis? None that I can think of! Perhaps you could argue that my reactions are pretty good, having spent 20 odd years fending off 90 miles per hour bowlers! Are there any similarities between being a member of Stoke Park Club and the M.C.C.? What I love about the MCC is that they manage to keep Lords up to date and are not afraid to embrace new technology (think the media centre), but they do not lose what is special about Lords in the process - the tradition and history. Stoke Park is very similar in that respect. You walk through the door, and you know that everything has been restored and modernised, but it has all been done in keeping with the ethos of the place.

T20 has without doubt been the most significant development that the game of cricket has ever seen. It has made the sport much more appealing to the sports fan, rather than just the cricket fan, it has created a huge buzz and energy, and has catapulted some of the best cricketers in the world into Superstar status, especially in India. Golf clearly has a challenge as people are increasingly time poor, and any new format has to strike a fine balance between feeling authentic and yet still being genuinely innovative. If it were up to me, I would start by banning practice swings, and developing balls with tracking sensors - there is a lot that we can do to quicken up play.


Having captained England to Ashes success, would you swap that for a chance to captain a Ryder Cup or Davis Cup team, and why? And what are the differences in the two roles? The hardest thing about captaining in the Ryder Cup and the Davis Cup is that you aren't actually competing yourself. Your job is to prepare the players as well as possible, apply the tactics, and create an environment that allows the players to play their best - then you have to sit and wait. At least in Cricket you have an opportunity to lead by example with the bat in your hands. I’ve read that you find a six foot putt more terrifying than facing an Australian fast bowler. Is this true? Well... it depends what bowler. I would prefer a downhill left to righter to facing Shane Warne on a turning wicket! Which is your favourite hole at Stoke Park, and why? I think the 17th is an excellent hole - tough drive with bunkers on the left, followed by a tricky 2nd shot over water to a small green. I'm definitely happy every time I walk off that hole with a par! And finally, for you and your family, what attracted you to become a member at Stoke Park? It has something for all the family, it isn't stuffy, and the facilities are genuinely first rate.

Playing in the

Sand A

s entrances go, the drive from the main gate to the clubhouse at Stoke Park has always been impressive. It’s the golfing equivalent of a debutante coming out into society by parading down a grand flowing staircase. But, following the renovation work undertaken during the winter on the Alison course at Stoke Park, that ‘staircase’ has taken on a whole new look. However, instead of silver-plated balusters, gleaming solid brass railings or decorative oak reliefs, one’s eye is drawn towards striking new bunkers and extended water features. The finished product has already started to delight and frustrate in equal measure. Aesthetically the changes are, quite simply, stunning. Not only are they easy on the eye, but they also shape the course far better. In terms of playability, several holes which, previously, would not live long in the memory now stand out as a real challenge.


The frustration comes, though, on occasions where, before, those who like to open their shoulders would simply reach for the driver and give it a good ‘whack’. Now, that is not always an option. Well-placed hazards are designed to frustrate the careless driver and encourage the strategic thinker – and that is how golf should be. Frustration, in this sense, is not a bad thing: find a bunker, grimace, and take your punishment. The work on the Harry Colt-designed course began in the winter of 15/16 with construction specialist John Greasley Ltd undertaking the changes on holes one to nine under the auspices of estate manager Alex Millar and director of golf Stuart Collier. Over the winter just gone, attention turned to the Alison course – with the Lane Jackson nine to

And it wasn’t just the ladies who were eulogising. Boyd Smith, who plays off a handicap of two, added: “I think the positioning of the bunkers is a lot better than in previous years. And bringing the water round to the left-hand side on 17 is very similar to the par-three seventh now; the green’s smaller so it’s a bit more of a target area rather than a run-off. “It’s a hell of a lot more of a challenge and the bunkers frame it more now. It was a little bit bland before, but now you know what hole you’re on rather than it all blending into one. I’m a happy man ... because I’m a member!” The need to think one’s way around the golf course was not lost on 10-handicapper Michael Jacobs. He said: “It’s excellent, very good. Where the bunkers are now, for the bigger hitters, you really

have to think about where you’re going to put the ball. It’s more of a strategic challenge. You definitely can’t just take your driver. “It’s lovely – it looks really good. And, taken together with the front nine, it’s definitely going to sort the men from the boys...” But let’s leave the final word on the new layout to 83-year-old Norman Chalmers, the club’s oldest former captain, who was honorary starter for the day the course opened to its members. Norman’s membership stretches way back before the King family took control of Stoke Park and he is an unabashed admirer of the improvements they have made. So, when it comes to commenting on a refurbishment, he’s probably better placed than most to offer a considered opinion. “The new layout is very good indeed, brilliant,”

he smiled. “For us it’s a grand course. Obviously, all the dry weather has been against poor old Alex. But it’s going to be superb. The greens are absolutely wonderful. The shaping of the bunkers is very good. I walk up here a lot so I’ve seen them build it and I’m very impressed. I rate it very highly.” It’s a heavy responsibility to work on land created by nature, enhanced by ‘Capability’ Brown and shaped by Harry Colt. But it’s a responsibility Alex Millar, Stuart Collier and the team from John Greasley have borne very well.

When you walk around Stoke Park, one of the first things you notice are the magnificent floral displays which never fail to wow. Our in-house florist is Rebecca Ellis of Lily’s Flowers, who, alongside her fabulous team, creates stunning floral creations every week. They also create flowers for a whole host of events including weddings. We caught up with Rebecca who explains the latest in wedding floral trends.

t Lily’s Flowers we are always being asked what is hot this year for wedding flowers and I guess we are led by what our super-fashionable brides are asking for! However, if we delve deeper we could definitely find some common trends. Whether or not it is coincidence that Pantone announced their colour of the year as green it must have some kind of steer to think that we are being asked for a lot of foliage led decorating! I cannot say that this saves our brides and grooms any money as foliage is just as important and often just as expensive but it is certainly making an impact. Bringing the outside in is also big and the meadow and prairie planting that we all saw at Chelsea is making its way into our celebrations and our homes. Glamour is back with rich golds and mixed metals combined with the juxtaposition of the meadow flowers gives us a really whimsical but fabulous image. Another very popular request is hanging flowers. Either hanging them above the top table, down long guest tables or above as a flower chandelier as long as they are hanging they are cool! This leads us on to the statement entrance which seems to be very popular. Entering your ceremony through a beautiful archway or walking into your wedding breakfast through an amazingly decorated door is the way to go! With regards to your bouquet, romance is the way forward. We are seeing a lot of oversized bouquets which seem to be very popular but be careful and make sure you don’t leave yourself open to a dated look in years to come. Oversized can look great but it is the bride who should stand out on her wedding day and not the bouquet. In terms of blooms I think the most popular of all this year is the hydrangea with its bountiful blooms giving us the most romantic and classic look of all.

Country Club Living WATG Unveil 8 New Luxury Residences in the Heart of Stoke Park’s Historic Estate

Stoke Park has teamed up with world leading design firm, WATG, to create eight, first of their kind residences set within its historic grounds. ‘The 8’ will offer a once in a lifetime opportunity to live amongst 300 acres of spectacular parkland with access to all of the club’s award-winning facilities. Drawing on 70 years’ expertise designing some of the world’s most beautiful resorts, WATG’s collaboration with Stoke Park continues a tradition of artistic achievement unbroken at Stoke Park for over 1,000 years.


1,000 Years of Inspiration “If you look at Stoke Park you immediately recognise the heritage in the club house and the historic landscape” comments Nick Carrier, Associate Vice President at WATG, “But we wanted to create villas that represented contemporary and cutting-edge design that stood apart from the traditional manor house but framed the landscape perfectly.” The timeless design draws inspiration from the existing architecture but with a contemporary touch and modern twist. The original concept for the residences, was sketched by WATG’s Edouard Gillon, Associate and Lead Designer, on his first visit to the estate. The hand drawn sketches are so intricate and evocative that they would not look out of place framed and hanging on the wall of one of the living spaces.

Seamless Design Edouard comments “Our design flows seamlessly from the past to the present. The idea was that the architecture would be subservient to the landscape allowing it to lift the buildings up and flow underneath.” Each residence will be transparent to allow the surroundings to flow visually into the space and green roofs will be used to empower the continuity of the landscape above the ground. “The villas sit in the lower part of a landscape design wave, with existing memorial gardens to the rear and the Capability Brown designed landscapes to the front, so we worked with the existing greenery to ensure there were no visual barriers for potential occupants,” adds Edouard. The orientation of the residences follows the path of the sun throughout the day allowing for a variety of experiences: morning breakfast on the 26

Our designs are sleek and hidden in the landscape, so much so, they could be Doctor Evil lairs.” With privacy at the forefront of the design, ‘The 8’ can only be accessed through the primary 18th century entrance, which is not open to any other residents, members or guests and then via their own exclusive gated private road, Park Lane. Each residence has spectacular views over parkland, the golf course, lakes and gardens created over the past 265 years by some of the world’s most famous designers. With due consideration, the design was not just made with the occupants in mind but also for the avid golfers outside, who roam Stoke Park’s iconic sprawling course. After all, the landing area of the 12th hole is nestled right in front of the villas themselves.

ur Executive Chef, Chris Wheeler never ceases to amaze us with his award-winning success and extremely busy lifestyle. Wondering how he was going to follow his magnificent 2016, this year Chris has found new food ventures to participate in and had more award triumph.

Having appeared on BBC2’s Great British Menu and winning Best Fine Dining Restaurant at the Buckinghamshire Food and Drink Awards 2016 and Chef of the Year at the Berkshire and Buckinghamshire Life Food and Drink Awards 2016, we didn’t think the 2016 could get much better for our very own Chef at Stoke Park…However, we were wrong! In November, Chris was awarded with The Caterer’s Hotel Chef of the Year (over 250 covers) award at the prestigious Hotel Cateys 2016. Considered the Oscars of the Hotel Industry, the Hotel Cateys took place on Friday 25th November at a glittering ceremony at the Park Plaza Westminster Bridge. Since their launch in 2007, the Hotel Cateys have celebrated the most successful hotels, hoteliers and hotel employees across the UK. They were created to recognise and reward those individuals and teams

A New Ambassador It’s no secret that Executive Chef, Chris Wheeler leads a busy schedule and is always up for a new challenge and to show his support to the food industry. When not in the kitchen cooking up divine dishes for Humphry’s, Chris might be found back in education, teaching children in schools about healthy eating or spending time with students from East Berkshire College where he is a proud Patron. This year, to add to his repertoire Chris was appointed by AHDB Beef and Lamb as their new UK Ambassador as they announced a revamp in their Quality Standard Mark (QSM) Scheme. The scheme aims to drive growth in the QSM Beef and Lamb retail market as well as to increase engagement and reassurance within the supply-chain, catering butchers and independent retailers. On Wednesday 8th March, to celebrate the QSM scheme revamp and Chris’ new position an ambassador, an event was held by AHDB Beef and Lamb at Stoke Park. Trade journalists were educated on the scheme, participated in interactive cooking and butchery masterclasses and treated to a QSM-themed three-course lunch, cooked by none other than our Executive Chef and QSM ambassador, Chris Wheeler. One of the highlights of the event was watching Chris teach how to make his ‘Ashes Over and Down Under’ cricket pitch dish which featured on BBC2’s Great British Menu in September 2016.

Competition is fierce so it’s great to have something that adds value and differentiates your offer.” With the arrival of the summer season,

Executive Chef Chris Wheeler has been out and about at wonderful food festivals. On Thursday 15th June Chris made a return to the Belazu Ingredient Company stand at Taste of London where he cooked up a storm creating his own Fillet of Beef Salad creation for the crowds. The Boodles is back for its 16th Anniversary at Stoke Park, and as always Chris has been ready and waiting to prepare gourmet lunches and afternoon teas for the lucky hospitality guests at the event. Always enthusiastic to embrace the tennis ambience, we can expect to see more tennis-themed dishes and petit fours on the menu this year! And we can’t forget the typically British afternoon tea served up as a perfect break from watching the world-class tennis action on court. Freshlybaked scones, jam and cream - we can’t wait! Last year Chris made a return to Sardinia for a second year to cook for the guests in the Forte Village Restaurant. This year he’s taking his abroad adventures elsewhere, this time to France where Chris will be participating in Big in France [biginfrance.com]. Looking ahead to later this year, Chris will be back at Thame Food Festival (Saturday 30th September – Sunday 1st October) once again taking to the stage for a demonstration. Showcasing his culinary skills ranging from serving up mouth-watering main dishes at the event's banquet to scrumptious delicate pastries. Look out for him baking on the main stage on the Sunday.


Classic with a twist… Beef Wellington Ingredients (6 portions) 1 x Small/medium Beef Wellington 2 x Pancakes 250g x Cooked spinach 100g x Cooked mixed wild mushrooms 1 x Sheet of puff pastry Salt & Pepper 1 x Egg Dried herbs, poppy seeds and sesame seeds for garnish 200ml x Red wine sauce 250g x Cooked green beans 6 x Portions of mash potatoes Chicken Mousse 100g x Skin off chicken breast 100ml x Double cream 1 x Egg Salt & Pepper Mixed chopped fresh herbs (basil, parsley & tarragon)

Method 1. Place the chicken breast into a blender, season and blend for two minutes, add the egg and then slowly add the double cream 2. Place into a bowl and add some freshly chopped herbs and cooked wild mushrooms 3. Season and seal the beef fillet 4. Lay the puff pastry on a clean surface 5. Place the pancakes on top, followed by the dry cooked spinach 6. Spread the chicken mousse to cover the spinach 7. Place the sealed beef fillet in the middle and carefully roll 8. Seal the two ends and egg wash 9. Garnish your beef with puff pastry leaves etc 10. Season and sprinkle over the dried herbs and seeds 11. Place on a tray which has been lined with baking paper 12. Bake at 180°C for approximately 30 minutes (if the puff starts to become too dark cover with foil) 13. The temperature in the middle of your Beef Wellington should be 34°C for medium rare 14. Remove from the oven and leave to rest for 15 minutes 15. Carefully slice your Beef Wellington into 6 thin slices 16. Place a spoonful of mash at the top of the plate, followed by the green beans 17. Place the Beef Wellington next to the mash, pour your red wine sauce around and serve

e all strive for success in our careers: a happy family, beautiful home, nice car and sufficient income to live comfortably. It is natural, too, that we should want this for our children’s future, certainly from the age of about four or five when we start considering a choice of school, whether it be in the state-run system or the private sector. Often this can be daunting: are you living in the right catchment area for your school of choice, what are the chances of getting on the waiting list, what are your circumstances? There are some excellent state-run schools but the quest can sometimes lead to families considering an independent school, even though the cost involved can be high for day pupils, and even higher for boarders (especially if there is more than one child under consideration). Many independent schools offer scholarships, based on academic, sporting or artistic merit, and it might be worthwhile seeking advice from a wealth-management company, such as Redmayne Wealth. They can help advise on the best way to manage your finances, when planning your children’s education and future. When you have reached a decision on the route you wish to take for your child’s primary education, further consideration will need to be made as the child approaches the ages of eleven and thirteen. There are some excellent independent schools near Stoke Park Club: Caldicott School, Buckinghamshire is a boys-only preparatory school (7-13 years old). All boys in years 7 and 8 have to board. The school’s aim is to encourage boys to live and work together, resulting in life-long friendships. Many of the boys go to Eton College after leaving Caldicott. Gayhurst School (based in Gerrards Cross) is a co-educational preparatory school for girls and boys aged 3-11 years. Berkhamsted School, Hertfordshire has over 475 years of experience and tradition and offers day-and-boarding for both girls and boys between the ages of 11 and 16, and co-educational teaching between 3 and 18 years. The choices of school are wide and varied, and you may need to look at all options before making an informed choice for your child.

oodles is delighted to unveil its latest collection of Exceptional Creations; ‘The Poetry of Landscape’. Inspired by aspects of Britain’s natural landscape, climatic conditions and seasonal change, these creations bring together the main sources of Boodles design aesthetic and the ways in which it has developed since Head of Design Rebecca Hawkins joined the company 25 years ago. The collection aspires to capture a sense of the natural scenery that defines Britain and is poised between being a direct representation of the subject matter and an expressive, abstract interpretation. Hawkins states ‘inspiration comes from our environment as seen first-hand and also through the eyes of some of Britain’s greatest artists, who have been chosen for their modern sensibilities, their feeling for atmosphere and their ability to identify with the spirit of a place.’ The various suites of jewellery that make up this collection weave together new themes and insights alongside influences from Boodles past creations. Enticing gemstones ranging from pale pink opals to moonstones, peridots, pink diamonds, green tourmalines, soft blue aquamarines and yellow beryls hint at pale sunlight, celebrate the beauty of cool misty greys and the vivacity of new green foliage; characteristics that make up the very essence of British landscape and inspirations which are integral to Boodles design aesthetic. The muse is a poetic convention and for this collection that role is performed by the British landscape itself. In order to fully illustrate the sources of Rebecca’s inspiration, Boodles has commissioned British photographer Martin Morrell to capture a range of these scenes around the United Kingdom. ‘The Poetry of Landscape’ will launch with an accompanying coffee-table book, including these specially commissioned fine art photographs.

Smooth Sailing at the Hamilton Princess Christina Raptis visits Bermuda, host of the 2017 America’s Cup, and enjoys the splendour of the Hamilton Princess Bermuda.

T

he mystery of Bermuda begins with its location – it is often erroneously mistaken for an island in the Caribbean, but is actually in the Atlantic Ocean, east of North Carolina – surround by the bluest waters, and offering a holiday quite different to that of the Caribbean. Famed for its mysterious ‘Triangle’ and Bermuda shorts with knee-length socks – the island should rather be known for its pristine pink-sand beaches, luxury accommodation, old heritage towns and locally sourced cuisine. Pastel-coloured houses and stately mansions covered in fragrant bougainvillea line the lush green landscape, Bermuda is an island unlike any other. One of the islands’ most historic properties, The Hamilton Princess and Beach Club, has gone through a transformation and is now looking more luxurious than ever after its 100 million dollar restoration. First opened in 1885, the oldest hotel in Bermuda is now a contemporary, yet sophisticated resort, maintaining its classic Bermudian feel. Owners and brothers Andrew and Alexander Green spared no expense in upgrading the hotel; new guest suites, restaurant upgrades, an infinity pool, a new spa, and boutique fitness studio, are just the start. Walking through the grand reception, the walls are adorned with original modern art pieces from world renowned artists such as Andy Warhol, Damien Hirst, KAWS, Ai Weiwei, Nelson Mandela, Tom Sachs and Banksy, to name but a few. The original artwork is displayed throughout the property and forms part of Andrew and Alexander’s private collection. The hotel also recently developed property on the South Shore of the island into a private Beach Club. The pristine beach, bar and restaurant create this oasis – secluded from the world around you, it feels like you’re on your own private island. Also, the addition of the hotel’s new state-of-the-art marina made it the official host hotel for the America’s Cup 2017, which brought more tourism and revenue to the already wealthy island. It is the first and only full-service marina in Bermuda and houses up to 60 berths, ranging in size to accommodate vessels, tournament fishing boats, as well as super yachts. A water sports facility outfits guests to tour the island by Jet Ski, pontoon, kayak, paddle board, or private boat. One of the best and most thrilling ways to explore the island is by taking a Jet Ski

Speeding around the island on a Jet Ski crashing into wave after wave and getting completely soaked at the same time was truly an experience I will never forget. Our guide led us around to every corner of the island where we came across sea turtles and fed piranha-like fish whilst unknowingly being drifted away into the Bermuda Triangle – yes that’s right – we entered the triangle and survived to tell the tale.

My Spa day! As Chief Editor Christina Raptis took a much-deserved break to experience all that our glorious Stoke Park Spa has to offer.

F

rom the heart of London (Piccadilly Circus) to Stoke Park is 26.1 miles – which also happens to be the distance I had recently endured. Having just knocked off something from my bucket list – completing the 2017 London Marathon for the first time - my body was desperately in need of some relaxation and rejuvenation. There was only one remedy that would cure my ills – none other than to enjoy the luxurious spa amenities offered right here at Stoke Park. The award-winning Spa, situated within The Pavilion, offers a beautiful modern fusion of energy and serenity – just what my aching body needed! Amongst everything else you would desire from a world-class spa, they offer eleven treatment rooms, an indoor heated swimming pool, a private atrium with a stunning tropical aquarium, and an outdoor Scandinavian sauna and my poor muscles intended to utilise each and every one of them! After perusing their extensive range of treatments, I opted for the full body Swedish massage in the hopes of relieving the aches and pains I had endured. Upon arrival I was cordially greeted by the friendly team and was shown to the sophisticated changing area before settling down in the atrium with a refreshing cup of tea, admiring the tropical fish swimming about before my therapist escorted me to my private dimly-lit therapy room. Summer Fitness Summer is nearly upon us and the rush for a toned body is in full swing. But despite the ‘fad diets’ and ‘quick fixes’ floating around online and in glossy magazines, they’re not the most effective – or safe – way to lose weight. Perhaps you’ve left exercising for the summer months to the last minute and you’re after that desired ‘summer body’ as quickly as possible? Jules Baker is here to help you work out safely and efficiently to tone your body and aid with healthy eating.

E

xercise. It may seem like a silly point to make when trying to lose weight or tone up, but exercising is often the key theme that people leave out. Time and again, people think that just dieting will help them to drop the pounds, but that is simply not the case. No matter whether you’re looking to drop a stone or a pound or two, exercise will be the key to weight loss. But don’t overdo it as this can lead to injury, causing you more pain than should be felt when you work out. You must remember to listen to your own body, there’s no point in working to a plan that is meant for someone who lives in the gym when you’re a fitness novice. You have got to work out to your body’s ability then slowly build up your endurance and strength whilst listening to what your body has to say. The best workouts you can do to help lose weight as fast and as safely as possible, is with multi-joint movements. This means you need to be moving every joint at the same time when working out, rather than just focusing on one part of your body at a time. Lifting weights for your arms isn’t going to help you to lose weight quickly, but squats and burpees will ease the process along as you exercise your whole body. Our personal trainers are the ideal way to help you create a fitness plan designed to fit you; they will walk you through each exercise, instructing you on how to improve your technique and work to the best of your ability.


But whilst you can work hard with your fitness plan, don’t expect to see improvements straight away. Realistically, for the ‘average Joe’, you wouldn’t expect to see changes for at least six weeks. If you work consistently, with the correct exercise plan, diet and rest, within six weeks your body should start to change and improve in fitness. However, you won’t be able to do this if you don’t rest.

• Indulging in good fats helps in lowering your cholesterol and boosting your Omega-3 intake with foods such as fish oils, avocados, nuts and seeds. • If you are a vegetarian, make sure to increase your intake of beans, pulses and lentils for a good source of protein, fibre, and vitamins and minerals.

Rest is key in your fitness plan, as this period allows your body to recover and recuperate ready for your next day in the gym. If you don’t rest, you could end up with an injury. Rest days prevent overuse of your muscles and help improve your strength training. When you lift weights, you’re essentially tearing muscle fibres, but with a proper rest you’ll allow your muscles to repair and regrow. Too much exercise can make you restless and result in sleepless nights, and without that much needed sleep, your body will be unable to relax properly. Rest days help bring down your alertness and your heart rate which will enable you to get that much needed good night’s sleep.

With a balanced diet that fills up your recommended calorie intake for the day, and by staying away from processed and sugary food, your diet will help aid your recovery from your workout. Make sure to lower your calorie intake when on your rest days and boost it up to the recommended daily amount on workout days.

By consuming smaller calories for two days and then enjoying the daily calorie intake with a balanced diet on the other five days, your body can comfortably absorb the calorie restrictions without going hungry. When cutting down the calories on the two ‘diet days’, it allows your body time to fast, aiding in digestion and giving your system time to clear and absorb the nutrients it needs. But remember not to binge on your regular calorie days and to balance out the 5:2 diet with a healthy workout plan designed for your body. The key to weight loss is balance. A balanced diet and a balanced workout helps you to lose weight safely and efficiently, allowing you to see results as quickly as possible. People often slip up when it comes to alcohol, and this is one factor that needs to be consumed in moderation. With the recommended unit figures for males and females being easily

Creating a Masterpiece Stoke Park has 13 tennis courts (six Wimbledon specification grass, three recently refurbished indoor with PlaySight technology and four floodlit artificial clay) and a thriving tennis and health membership. Every year we host The Boodles, our summer garden party with world class tennis, and our grass courts welcome the world’s top tennis stars, including; Novak Djokovic, Rafa Nadal, Juan Martin del Potro and Alexander Zverev.

What are the processes you do to create the grass courts?

Are there any techniques used to create the perfect grass court which might surprise us?

We use a machine which is called a Fraise mower - it rips up all of the old grass, then we oversow with seed, top dress with a clay-based tennis loam then laser-level all of the court and basically leave it until we get a covering of grass - the routine cutting will then start around mid-August.

Consistency is key – spec and technique is down to the regular mowing and rolling, I promise we don’t get the nail scissors out, but attention to detail is paramount.

We caught up with Stoke Park’s Head Greenkeeper, Matt Parker, on how he and the team create the perfect grass court.

It’s actually the way we prep the courts - we prepare them in exactly the same way that they do at Wimbledon, and therefore the quality of the court is the same. We also cut to the same length which is 8mm. The courts at Queens Club are cut to 7mm which means the ball plays slightly faster than at Wimbledon, and that is one of the many reasons you get a lot of the top players down to Stoke Park post Queens to prep on our courts, as they are a similar pace to the Wimbledon courts.

Matt, our Championship Court is looking the best it has ever looked, when do you start prepping the Championship and Grass courts? We start prepping the Championship court for next year as soon as the stadium comes down after The Boodles - this year work will start the 2nd week in July.

Do You Suffer From a Sporting Injury? M

up of slaloms and hairpins. The RS 3 relishes being flung around the cones, its quattro allwheel-drive system offering up huge levels of grip. At the end of each run, our instructor, Karl, offers words of advice on how to build speed and get the best from the car’s chassis. Before lunch we head out onto the circuit to learn how to tackle Thruxton’s first chicane in the mighty RS 6 performance. It’s an immensely satisfying feeling to nail the perfect line and hear ‘that was perfect’ from the instructor over the in-car radio.

I

f you’ve ever taken part in one of the generic driving experiences that can be found at race circuits across the country, you’ll know how they usually work. You get to drive three or maybe four laps in a car that feels slightly past its best, sitting next to an overbearing instructor who keeps telling you to slow down. Thankfully, the latest Audi Sport Experience follows a different path – maximising the time customers get to spend in each car. This is achieved by limiting numbers and splitting drivers into three groups, meaning you’ll have plenty of time at the wheel of one of the three cars – Audi’s R8 Coupe V10 plus, RS 6 performance or RS 3 Sportback. I arrive at Thruxton feeling a little apprehensive. The 2.4-mile Hampshire circuit is one of the most intimidating in the country, featuring a handful of fearsomely fast corners – namely the right-hander, Church, which can be taken at over 110mph in the R8.

The day kicks off with a briefing from the team of expert instructors (known as Audi driving consultants). Unlike most events of this nature, customers don’t have an instructor next to them in the passenger seat, sharing a car with a fellow customer instead. I start off in the R8 Coupe V10 plus, in a drill that showcases the immense stopping power of the car’s ceramic brakes. The premise is straightforward: accelerate as hard as you can towards a cone chicane, brake as late as possible and swerve round the cones. Simple in theory, but it’s initially difficult to persuade yourself the car will stop in time and not jump on the brakes far too early. Once you learn to trust the car, the braking power is eye-widening, decelerating from 60mph to a stop in what feels like the blink of an eye. Next up is an autotest in the deeply impressive RS 3 Sportback – essentially a tight course made

The R8 feels absolutely electric when let loose around Thruxton, hitting over 150mph before braking into the final corner. I thought I had wrung every ounce of performance from the car, but jumping into the passenger seat with one of the instructors to finish the day showed what Audi’s RS models are really capable of. Mix 25ml of strawberry purée with 25ml of Beefeater Gin before combining with 15ml of freshly squeezed lemon juice and 10ml of elderflower cordial. Shake together before pouring into a champagne glass. Top up with Perrier-Jouët Champagne and garnish with half a strawberry.

You may choose between Beefeater Gin or Martell VS Cognac as the base for this cocktail. Measure 25ml of the chosen liquor and mix this with 15ml of freshly squeezed lemon juice and 15ml of sugar syrup. Shake the three ingredients together and pour into a champagne glass. Top this up with Perrier-Jouët Champagne. Garnish with a lemon twist.

Soak a brown sugar cube with Angostura Bitters. Once soaked, drop the cube into a champagne glass and pour over 20ml of Martell VS Cognac. Top up with PerrierJouët Champagne. Cut a small piece of orange skin, sprinkle the orange oil into the drink and let the peel sit on the top of the cocktail.

Measure 50ml of lavender infused gin, mix with 25ml of hibiscus syrup and 25ml of freshly squeezed lemon juice. Shake all three of the ingredients with ice, and then pour into a coupe glass. Top up the cocktail with Perrier-Jouët Champagne and garnish with a sprinkle of dry lavender.

He explained: “SWIPE supports local children with a recording studio. They provide the instruments, the studio, and everything else. And over the near 20 years they’ve been in existence they’ve won tons of awards and have branched out. “They’ve now got a rowing centre on the relief channel and, when I spoke to them recently, they said they had 600 children go through there in one week. They teach rowing, paddle boarding, canoeing, and water safety. They also have a police cadet unit at the centre now with about 35 kids involved in that. “The money we’re looking to raise this year will be for a minibus, a trailer and a stage – because they support a lot of other local charities by putting on musical events at fetes etc. To do everything, we’d need to raise around £30,000. It’s such a local charity – you drive out of the gates here and it’s right there.”

CAPTAINS’ LOG: Christine Connelly & Vince Murphy The responsibilities of a club captain are manifold. And all with no remuneration… save for a car-parking space. But, with a bit of ingenuity, even that can be used to raise valuable charitable funds, as the current lady captain at Stoke Park, Christine Connelly explained. “One of the first things I did when I became captain was to auction off my car park space,” smiled Christine. “So the lady captain’s parking space is now used by a man who won it in the raffle, which raised £1,500 for my chosen charity, Target Ovarian Cancer.

“My sister has ovarian cancer and, quite stubbornly, it won’t go away. It’s a cancer that affects one in 50 women in the UK and the five-year survival statistic is 46 per cent. That’s abysmal. If we were only to match European survival rates then we would save 500 lives every year. “There are 7,000 women diagnosed annually and 4,300 die of it every year. It’s just way too much.” Her contemporary in the men’s section, Vince Murphy, who has been a member for 20 years has chosen a local organisation for his charity. So local, in fact, that a decent three-wood would find its way to the charity’s headquarters.

Both captains feel privileged to be in their role and feel that, in addition to the sumptuous surroundings and a historic and beautiful parkland golf course, it is the members who ensure Stoke Park’s warm and enviable ambience. Christine added: “Some people might come here, look at the clubhouse and think ‘oh my goodness, this’ll be a stuffy place’. But it’s the complete opposite. This is a very relaxed and friendly environment. The golf course is obviously fabulous and each time I come here it makes me smile. If that’s what you’re doing with your time that can only be good.” And Vince added: “I think one of the reasons people enjoy it here so much is down to the membership itself – it’s a very friendly, yet competitive membership. And, really importantly, it is an inclusive golf club. Plus, it’s a challenging golf course and it has really good and friendly staff – people set you at ease straight away. “It is, without doubt, the best club in Berks and Bucks. I don’t think there’s another club to touch this.”
