I hope that everyone has had a wonderful holiday season It is unbelievable that 2022 is already in the books Looking back, the events we hosted in 2022 we truly had some great events that will leave lasting memories for Black Diamond Ranch members and staff Thank you to everyone who attended our annual Holiday Dinner at the clubhouse The turnout was great and the performances were spectacular! Our New Years Eve party was also very exciting and everyone had so much fun ringing in the new year

I look forward to another prosperous year of serving our members and community. On behalf of the Black Diamond Ranch team, I would like to thank all who have contributed to the Holiday Fund. As always, thank you for being a Black Diamond Ranch Member.

Steven Pritchard

This month’s member spotlight is Mr Pritchard! During his professional career, Mr Pritchard was an agent and manager for various country music stars. He is currently building new homes in Black Diamond and is looking to sell them to new members! He has a new spec house on Treyburn that is open and available Please reach out to Mr. Pritchard if you have any friends or family looking to move into Black Diamond! There are multiple homes with various options available

FEATURED RECIPIE

Ingredients Needed:

3 tablespoons extra-virgin olive oil

3 teaspoons chopped garlic

4 cups chopped mixed mushrooms, such as button, cremini, portobello, oyster, chanterelle, and shiitake

2 teaspoons sea salt

4 cups stemmed and chopped kale

4 cups of water

2 cups yellow cornmeal

2 teaspoons chopped fresh flat-leaf parsley

1/2 cup shredded vegan mozzarella cheese

1 cup Chunky Marinara Sauce

Preheat oven to 350 degrees Fahrenheit Oil a large casserole dish

POLENTA, MUSHROOM, AND KALE CASSEROLE

Cooking Instructions

Heat 1 tablespoon of the olive oil in a large saute pan over medium heat

Add 1 teaspoon of the garlic and mushrooms then saute until the mushrooms are cooked through for 5 to 8 minutes

Stir in 1 teaspoon of the salt and set aside

Steam the kale until tender for 1 to 2 minutes, drain, finely chop, and set aside

Combine water, the remaining 2 teaspoons of garlic, and the remaining 2 tablespoons of olive oil in a large pot and bring to a boil over medium-high heat

Add the remaining 1 teaspoon of salt and slowly add the cornmeal, while whisking

Cook, stirring often with a whisk until the polenta thickens for about 5 minutes

Add the parsley and mix to combine thoroughly, then set aside

To assemble the casserole, pour half of the polenta into the prepared dish and smooth it out with a spatula or knife

Top with layers of mushrooms, cheese, and kale, then top with the remaining half of polenta

Spoon the tomato sauce over the polenta and bake for 30 minutes Let cool for 10 minutes before serving

GOLF COURSE SUPERINTENDENT

To prepare for a successful 2023 golf season we spend a lot of time behind the scenes working on our equipment The effort is dedicated to reeling maintenance and rebuilding these cutting units We also go through preventatively and repair any necessary items on each machine to make sure they are ready for the season

Pre-emerge: Our applications for pre-emerge will begin this month for spring and summer weeds The product that we will be using will have both pre and post-emergent effects

The post-emergent will take care of any of the lingering winter weeds on the course that is still visible The pre-emerge product will prevent the weeds from emerging from the time of application to early summer These products will need to be watered in so we will need to find a good weather window for application

The entire golf course maintenance team is looking forward to hosting many exciting member events in 2023 and rest assured we will put our very best foot forward in delivering a fun and fair golf course for you and your guest’s enjoyment
