As our first digital issue of 2013, we’d like to begin by wishing you all a very happy New Year. If you’re suffering from the post-Christmas blues then hopefully our balance of wonderful hotels, stunning restaurants and delectable drinks will be the ultimate remedy. Our drinks features this month encompass the joys of grower champagne at Champagne + Fromage, the award-winning lager of Chang Beer and the exceptionally crafted non-alcoholic – and adults only – drinks from Peter Spanton Beverages. Plenty, then, to keep you warm throughout January.

Despite the horrific weather, we’ve been on our travels to bring you exclusive reviews on three of the UK’s finest hotels. Beginning our journey in Marylebone Village, London, our visit to The Mandeville Hotel reminded us of the value that location can have in dictating a luxury break away. Set in the heart of London and literally a stone’s throw away from the world-class shopping of Selfridges, The Mandeville delivers chic accommodation and a sublime oasis from the crowds of Oxford Street.

Next up, fans of the quintessential country house hotel will be delighted to read our review of Lower Slaughter Manor. Located in the extraordinarily pretty surroundings of Lower Slaughter village, the property has 19 exquisite rooms and is the ultimate treat for a weekend or mid-week break away. Lastly, we returned to the capital to explore Grosvenor House Apartments by Jumeirah Living. Since opening in April 2012, the residence has become the goto destination for discerning travellers looking for all the service of a five star hotel with the convenience and security of a private Mayfair address.

Our standards for eating out are particularly high and it takes a lot for us to be lost for words. However, towards the end of 2012, we had the pleasure of visiting Launceston Place in Kensington where we experienced a truly spectacular meal that didn’t miss a beat. Under Head Chef, Tim Allen, the restaurant has recently (and quite rightly) been awarded its first Michelin star and the food is testament to the mastery of Tim’s nuanced and beautifully crafted menus. Speaking of beauty, savvy dinners will have long-been aware of Giuliano Lotto’s restaurant empire, which has been augmented with his latest venture in Mayfair, Banca. Having quickly established itself as one of the most popular restaurants in Mayfair, Banca has perfected the knack of light lunches and long, relaxing dinners so germane to the Milanese lifestyle. Last but not least, we also visited Pillars at the University of West London’s School of Hospitality and Tourism to sample the future of British cuisine. If our experience was anything to go by, it won’t be too long before there’s a few more Michelin stars awarded around the UK! DRINK Bowmore 1957 Sold Islay, Scotland Bowmore, the first Islay Single Malt whisky (read our exclusive feature here), is delighted to announce that the No. 1 bottle of its oldest ever expression, the exceptionally rare Bowmore 1957, 54 Years Old has been sold for £100,000 at the Bowmore Distillery on Islay. This bottle is not only the oldest whisky the distillery has ever released, it is also the oldest Islay Single Malt ever released. As promised by Morrison Bowmore Distillers, owners of Bowmore, all the net proceeds will be donated to five Scottish charities.

The owner, a resident of the United States, would like to remain anonymous.

Distilled in 1957 and bottled in 2011, this 54-year-old marvel has been maturing in the finest oak in Bowmore’s legendary

No. 1 Vaults, the oldest maturation warehouse in Scotland. Only 12 bottles exist in the world, two of which are kept in the Morrison Bowmore archives and nine now remain for sale at the Bowmore Distillery.

A collection of 1957 casks were bottled in 1995 but one in particular was held back because it was more exceptional than the rest. Since 1995, the whisky in that cask has been examined every six months to check the quality, the taste, the developments and changes the spirit was taking on its ageing voyage. The Lost & Found Birmingham, England A Victorian hideaway located in the heart of Birmingham dating back to 1869 has been transformed into a decadent drinking den and restaurant, with a playful sense of fun courtesy of explorer and professor, Hettie. G. Watson. Hettie travelled the world in search of botanicals, capturing samples of plants and flowers, which she kept hidden in her secret hideaway and is the inspiration for The Lost & Found.

An array of carefully crafted concoctions, mixed and muddled using only the freshest ingredients, homemade bitters and infused spirits, will appeal to the city’s discerning drinkers and cocktail connoisseurs. A collection of tipples from the 19th century, the ‘Lost’ cocktails, include the Winter Cup – Kraken Black Spiced Rum, Lillet Rouge, The King’s Ginger liqueur, lemon juice, vanilla and ginger ale and the Gingerbread Milk Punch – raisin infused Appleton Rum, gingerbread liqueur, orgeat syrup, milk and cream.

At £123.00 per person including wine, Launceston Place offers a truly remarkable dining experience, perfectly complimented by beautiful wines from around the world.

The first course of Warm Cauliflower Mouse with Curried Lentil Puree was the ideal warm-up for what was to follow.

Beautifully smooth and rich, the exotic charm of the Lentils worked well with the Cauliflower to give a unique taste match between British and Indian flavours.

Next up, we were treated to a perfectly cooked Slow Duck Egg with Braised White Beans and Puree, Duck Confit, Cured Foie Gras and Aged Sherry Vinegar Caramel. Refreshingly, the Foie Gras was not overpowering and the Sherry Vinegar Caramel was an excellent

pairing with the White Beans and Duck Confit. Seemingly a universal staple on tasting menus across the region, a Roasted Scallop with Textures of Apple and Celeriac with Butterfly Sorrel was presented next. Sweet, succulent and cooked with tenderness, the Scallop was faultless, whilst the ‘Textures’ of Apple and Celeriac added that critical bite to offset the melting goodness of the Scallop.

The so-called ‘Main Course’ of the tasting menu was much awaited and came in the form of Iberico Pork Tenderloin served with Sprouting Broccoli, Heritage Tomatoes, Baked Figs and Fig Water Honey. Cooked to utter perfection, this was truly the pièce de résistance and was paired with a beautiful Rioja. The Fig Water Honey was a particularly successful addition to the dish

and worked to highlight the exquisitely delicate flavours of the Baked Figs and Sprouting Broccoli, which, alongside the wonderful hearty flavours of the Pork, was an absolute triumph.

Sweet but not saccharine After a lovely selection of English and French Cheeses, we enjoyed a Lemon and Rosemary Cream comprised of a Confit Lemon and Rosemary Granita, which was a very welcome palette cleanser with a delightful citrusy-fresh flavour. Concluding the tasting menu was a Fromage Frais Cream with Scottish Strawberries, Iced Lemon Curd and Meringues, Chocolate and a Pistachio Crisp. Again prepared to perfection and showcasing the finest British Strawberries, the Fromage Frais Cream was a playful >>

>> dish executed with great confidence and finesse. Indeed, the harmony of flavours was a theme developed through the tasting menu and demonstrated Tim’s awareness of the seasonal ingredients working in unison with one-another.

On this note, we were particularly impressed with the consistency of the tasting menu – something that is often overshadowed by a few duff notes or, contrarily, one standalone dish that completely overpowers the rest of the experience. At Launceston Place, we could find nothing to criticise. From the muted chocolate interiors to the comfortable table settings (we were pleased to be seated at least one table away from another couple and thus free to talk at ease without the fear of eavesdropping), and from the beautifully crafted savoury dishes through to the quirky-yet-expertly created desserts, everything just worked. For those designated drivers and non-drinkers,

the six courses can be enjoyed for the bargain price of £65.00, which, given Launceston Place’s competition, represents exceptional value.

Furthermore, diners shouldn’t waste a single moment in taking advantage of the frankly outrageous value offered during lunch, with three courses for just £25.00 from Tuesday to Saturday. For non-carnivores, Tim has also created a Vegetarian Tasting Menu for £65.00 (£123.00 with wine), which also promises exceptional quality at great value.

If it wasn’t clear enough that we are big fans of Launceston Place, we should also clarify that each dish is served by a bevy of knowledgeable waiters who are more than qualified to talk you through every dish. If you opt for the wine pairings, do ask for Agustin Trapero’s selections, which champion lesser-known appellations and family winemakers.

You’ll also be treated to his passion for Burgundy, having spent a summer working

in the Domaine Mongeard-Mugneret vineyard.

Ultimately, Launceston Place is that rare specimen; a restaurant that combines classical awareness with modern and quirky execution served at a highly competitive price point. The Mandeville Hotel originally consisted of five individual townhouses and the current site of the hotel’s restaurant – the Reform Social and Grill – was formerly the home of Sir Paulo Tosti, a Musician and singing master to the Italian Royal Family in 1880. The building was later converted into a hospital during the Second World War and finally into a hotel in 1939, owned by the Grand Metropolitan Group. Then, in 2005 under private family ownership, The Mandeville Hotel reopened following a multimillion pound refurbishment as a leading contemporary four star deluxe boutique property. Ever since, guests have flocked to the hotel for its fine location, chic interiors and general air of sophistication.

A retail oasis As Karine begins by highlighting, The Mandeville offers something for just about every guest, but it is perhaps its location just a stone’s throw away from the world-class shopping of Selfridges and New Bond Street that continues to wow visitors. “We are obviously the ideal choice for all lovers of retail therapy,” she affirms. “The highly fashionable Marylebone Village is on the doorstep, offering an array of designer shops, gourmet restaurants and wonderful museums. London’s fabulous parks, including Regents Park and Hyde Park, are within easy walking distance but as soon as you arrive at The Mandeville Hotel, it is a complete oasis. We are in a

wonderful location between Marylebone and Mayfair, which is ideal for guests wanting to see these two fashionable and renowned districts of London”.

In addition to its prime location, The Mandeville boasts one of London’s finest hotel bars, which oozes style at every corner, as Karine continues by describing.

“Our bar team provide excellent service and great cocktails, such as the Vintage Whisky Old Fashioned, which is our twist on the Old Fashioned Cocktail, with gentle tea flavours, sweetness and woody aromas of whisky. The thinking behind the Reform Social & Grill was to create a space that reflected the area, so ‘full of heritage and quality’. Ultimately, we wanted to provide a home away from home from the early morning until late at night”.

Indeed, from the moment one enters The Mandeville, the busy crowds just a few steps down the road instantly disappear and one is left with a tranquil and uber-stylish retreat in the heart of one of London’s most densely populated areas. Service, too, is a key attribute that defines the hotel in what is a highly competitive market – a fact that Karine is understandably eager to underline.

“I’m often asked why our guests return so frequently and for me the answer is simple: it is down to the level of service we provide. When you visit a four star deluxe property, you expect a certain amount of luxury and comfort but it is in the service offering that we really define >>

Ideal experiences Given The Mandeville’s prominent position, it will come as little surprise to learn that the hotel’s Terrace Suite is one of the most coveted of its kind anywhere in London – something that Karine defines by describing what her perfect trip would entail at the property. “If I was staying here I would most definitely book the Terrace Suite, which overlooks Marylebone. The view is wonderful and there is a terrace big enough for a breakfast outside or a glass of champagne

in the evening before going out. I would take the time during the day to walk around the little streets of Marylebone and then come back for a well-deserved afternoon tea at Reform Social & Grill”.

At the Reform Social & Grill, guests can expect a quintessentially

British experience, which acts as a fitting extension of the hotel itself.

Taking inspiration from classic British gentlemen’s clubs, it offers an informal yet sophisticated experience with quality at the fore. Serving breakfast, weekend brunch, lunch and afternoon tea as well as dinner, the Reform prides itself on using the finest ingredients sourced from the British Isles. By far the highlight on our recent visit to the restaurant was the Double Rib Eye 800g, cooked on the bone with roasted bone marrow. Sized for two people to share and priced at £57.00, steak doesn’t come much better or more indulgent than this and whilst we tried to add a touch of restraint to proceedings with a Garden Salad £7.00 (Bib Lettuce, Chestnuts, Red Chard and Tewksbury Dressing), frankly, we couldn’t drag ourselves away from the beautifully cooked, tender steak.

The restaurant also serves a number of excellent British artisanal cheeses, including Keen’s Cheddar from Somerset,

Barborough Brie also from Somerset and Wealdway Ashed Goat Log from East Sussex. Four cheeses from the menu are available for £12.00 and come with English Quince and Honeycomb, making it the perfect end to a meal or simply a great snack with a pre-theatre drink.

Taking a load off Throughout the hotel, guests will find a range of rooms suitable for all budgets, from the comfortable Superior rooms through to the stylish luxury of the Suites and Terrace Suite, which is an understandably popular choice with celebrities and guests looking for their own slice of rooftop accommodation in London. Imported from Thailand, Chang Beer is a premium lager with a sparkling gold appearance and a smooth, crisp taste. We spoke to Geoff Tirrell, General Manager at Chang Beer UK, to find out more behind Chang Beer’s expansion in the UK and genuine appeal to a growing number of beer connoisseurs.

Since its launch in 1995, Chang Beer has developed an increasing international presence throughout Asia and the rest of the world.

Alongside this impressive growth, the brand has won numerous awards for quality, including two gold medals in 2008 at the USA World Beer Championship and Monde Selection in 2009, not to mention a gold medal from the 2010 World Beers and Drinks Selection. Created as a symbol of Thailand’s culture, heritage and cuisine, Chang Beer is recognised the world over for its unique and refreshing taste and nowhere more so than in the UK, where the brand is enjoying considerable success as an ideal complement to Asian cuisine.

The Chang story The original idea behind Chang Beer was to create a product that champions Thailand’s bountiful resources.

“Great care and attention is given to creating the right blend of ingredients to produce the premium quality, golden honey-coloured Chang Beer,” Geoff affirms. “As one of the leading South East Asian brands, Chang Beer shot to the top spot as number one selling beer brand in Thailand just four years after its launch, achieving a market share of more than 50 per

cent. The branding communicates the essence of the beer and what the product stands for; the team has worked hard to ensure that the branding reflects the key things that Chang Beer evokes.

Perhaps the most evocative thing being travelling experiences people have enjoyed in Thailand. Indeed, this is just one of the aspects that drives Chang’s motto of ‘Live Like You Mean It’ through which the brand appeals to consumers’ adventurous side.

“The literal translation of Chang is elephant – an animal renowned for its superior strength and mental capacity,” Geoff highlights. “Elephants played a major role in Thailand’s history, taking warriors into battle against invaders, as well as being used in royal or religious ceremonies. In particular, a white elephant was a venerable creature, worthy of use by royalty and all those of noble birth. Therefore, the two white elephants on the Chang Beer logo symbolise happiness, harmony and prosperity”.

Closer to home Having been well received throughout the UK since its launch in 2003, Chang Beer has proved a hit with both men and women, owing to its lighter flavour profile, as Geoff explains.

“Chang Beer’s presence in the UK is further strengthened by its high profile sponsorship of Everton Football Club. As such, Chang Beer is the longest-standing football club sponsor in the Barclays Premier League, which is now into its fifth season. The current partnership will run until 2014 and has also seen >>

projects, including the Everton-Chang village in Thailand. This consists of 50 houses and a football field and any promising Thai footballers are invited to Liverpool to trial with the club”.

Chang Beer is also reaching out to consumers in the UK by promoting its authentic Thai roots, including raising awareness of Songkran in April, Thailand’s traditional New Year. “This particular event was supported through PR and social media activity, as well as on-trade promotions,” she tells us. “There is a growing consumer trend for discovery and this is something that Chang Beer is really benefiting from. The premium lager category is booming, with people on the hunt for different taste profiles and product offerings that lie outside of the mainstream. Generally speaking, premium lagers add further depth and variety to consumer choice and brands with a strong heritage and unique taste, like Chang Beer, are keeping consumers on their toes and driving the category forwards,” Geoff affirms.

Brewing up a storm Despite Chang Beer’s impressive growth, meticulous quality control and quality ingredients remain the most important part of the brand – a fact that Geoff is understandably keen to underline.

“Our dedicated team is made up of brew masters who have been trained to a world class standard, ensuring that the highest quality product makes it into each and every bottle. From the outset we have used the finest quality malt, made from 100 per cent barley, while our varieties of hop are selected to create the Chang Beer character, providing a clean and delicious aroma.

Deep well water from Thailand is also used in the production of Chang Beer as water supplied from a natural source has the best quality in mineral consumption for brewing beer. The well water is so pure that it is also bottled and sold as mineral water in Thailand”.

The brand’s commitment to quality has resulted in a raft of industry awards, the most recent being the award for Asia’s best premium lager in the World Beer Awards. This kind of accolade is rich reward for Chang Beer and comes at a key time. “Christmas is a critical time for the sale of alcoholic drinks and we expect to see an increase in sales over this period,” he explains. “There was

much to celebrate in 2012, with the Queen’s Jubilee and the Olympics, and we’re sure that this celebratory feeling will carry on through to 2013”.

Bubbling ambitions “With its light, balanced flavour, Chang Beer is the perfect accompaniment to food, which we hope will drive purchases in the on-trade over the festive period too,” Geoff tells us.

“Chang Beer is best served cold and, due to the unique blend of ingredients during the brewing process, it’s an ideal match to the spicy flavours of traditional Thai cuisine”.

On the nose, there are aromas of smokey, peaty green apples and vanilla and a full-bodied flavour with light citrus notes, which do compliment the exotic flavours so germane to South East Asian cuisine.

Indeed, Chang Beer is so successful when matched with Asian cuisine that it even has its own Thai Good Food Guide, which includes many innovative recipes such as Chang

Banking on Success Opened this summer in Mayfair, Banca embodies the distinguished Milanese flair of veteran restaurateur Giuliano Lotto. We visited Banca and caught up with the man himself to find out the story behind his latest London venture and taste the authentic Milanese cuisine for ourselves.

Created and designed to reflect the very best of Milanese culture, Banca communicates much of Giuliano’s Italian heritage balanced with his current lifestyle in London. Originally a bank branch, Banca is a restaurant that is social, glamorous and architecturally stunning, with its blend of elegant textures accentuated with hints of gold and bronze. The striking black and white marble floor is illuminated by statement pendant lighting, which casts a flattering glow on the oodles of beautiful people enjoying the restaurant’s authentic Milanese cuisine.

Founded by Giuliano and the Waney brothers (Peter and Arjun), Banca has already established itself as a culinary theatre synonymous with style and substance. Furthermore, it is the first restaurant of its kind to embrace the aperitivo concept and has thus perfected the knack of light lunches and long, relaxing dinners so germane to the Milanese lifestyle.

Loyal clientele Given their previous ventures in London – La Petite Maison, Zuma, Roka, il Baretto, Aurelia – it should perhaps come as little surprise that Banca has achieved such success in such a short space of time, as Giuliano begins by telling us the history behind the restaurant. “My first workplace was the major Italian Bank Banca Commerciale Italiana. In the 1980s

and 1990s, Banca Commerciale Italiana was based in Milan in Piazza Della Sala, opposite Galleria Vittorio Emanuele (the first shopping mall in the world built in 1865) and next to the Teatro Deta Scala, the most famous opera house in the world. I was working at an exciting time where Milan was the centre of culture, money, fashion and food. Milan seemed to blend these four elements effortlessly

and it is this experience that I have tried to emulate at Banca. It is, in that sense, an homage to Milan.

“My approach to the design flowed organically and I drew inspiration from the decor of some of my favourite places in Milan,” he affirms. “I wanted the interior to be sophisticated, traditional and timeless in order to emulate Milanese glamour with classic elegance.

As a restaurant, Banca is a venture founded by myself and the Waney brothers. Between the three of us, we have accumulated a very loyal clientele from our previous ventures. Even before we opened, there had been demand for a restaurant like Banca by our peers and the public of Mayfair. Owing to this, when we finally did open, the reception was everything we could have hoped and has only got better from there.

“Banca is simply the best of Milanese culture and there is nothing else like it in London,” Giuliano tells us. “It is perfectly suited to Mayfair’s clientele who would otherwise have to travel to Milan itself to experience this type of authentic glamour and sophistication. First and foremost, Banca is a restaurant, so if the

food is not perfect then nothing else really matters. Following on from the food, the central location, combined with the easy, timeless decor, friendly staff and beautiful private dining room creates a unique ambience”.

As well as the stunning dining space, there is also an impressive long bar, which spans the entire length of the restaurant and adds further cache to the aperitivo concept that stretches from 5pm to 7:30pm on Tuesday through to Friday. For the uninitiated, aperitivo is a relaxing preamble to dinner where guests can enjoy an early evening drink served with a range of complimentary snacks at the bar. Indeed, on our recent lunchtime visit, the restaurant was heaving and positively buzzing with guests clearly embracing Banca’s inimitable Italian flair and cuisine.

Beautifully authentic As one would expect from such a proudly authentic Milanese restaurant, the Italian influence is evident in every dish, with particular signatures being the Polpo alla Piastra con Borlotti (Seared Octopus with a Salad of Borlotti Beans

On our visit, we enjoyed starters of Carpaccio di Capesante (Sea Scallop Carpaccio with Clementine and Fennel Dressing - £16.00) and the Polpo alla Piastra con Patate (Seared Octopus with Potatoes, Ligurian Olives and Paprika Oil - £15.00). Typically Italian in style, the Octopus was a particular highlight and is quite rightly a popular favourite among the restaurant’s loyal clientele.

Moving onto the main event, entrees of Filetto di Manzo alla Brace con Trevisano (Chargrilled Fillet of Cumbrian Beef with Glazed Trevisano and Marsala Sauce - £34.00) and Sella di Cervo con Polenta e Zucca (Roast Venison Loin with Chargrilled Polenta, Pumpkin Puree and Red Wine Sauce - £31.00) were both excellent and washed down with a bottle of excellent Chianti Classico Riserva di Fizzano, Rocca delle Macie 2006 at £56.00. “The menu design is a collaboration between the Waney brothers and my vision, combined with Gabrielle Milani’s expertise. Gabriele is our Head Chef and has worked in

Michelin starred restaurants and is known for his combination of the best Italian and the best British seasonal produce,” Giuliano confirms.

Eating with family “The Banca team is like a family,” he admits, “where every person is the best in their field – from the chefs to the receptionists; this makes Banca the experience that it is. Having a competent team behind the scenes makes people feel welcome and at ease, which leads to a fantastic time and thus, our diners

come back repeatedly. Indeed, when dining with us, it is a must to come in a bit early and start with our aperitivo.

For the ladies, a Bellini and for the gentlemen an Aperol Spritz, both made to perfection by our excellent bar staff.

After whetting the appetite with some of our complimentary small plates (displayed across the bar in aperitivo hours), I am always comfortable being seated at any table, or, I’m by myself, at either the hot or cold bar.

“Whenever I am entertaining a group I make sure that the following starters are always on the table: Vitello Tonnato (Thinly Sliced Roasted Veal with Tuna Sauce); Carpaccio di Capesante (Sea Scallop Carpaccio with Amalfi Lemon and Sicilian Cucumber Dressing) and Polpo alla Piastra con Borlotti (Seared Octopus with a Salad of Borlotto Beans and Paprika Oil). For me, the perfect way to end the meal is with two desserts, the Crostina con Fragole a Creama Pasticcera (Strawberry Shortbread and Pastry Cream) alongside a Caprese al Limone (Lemon Capri Sponge Cake with Crunchy Lemon Zest and Limoncello Foam)”.

As Giuliano told us, the appeal of Banca is multifaceted. On the one hand,

there is the authentic Milanese credo of culture, money, fashion and food and, on the other, there is a real sense that you are eating among friends. One gets the impression that some of the guests only leave to change their (immaculate) clothes – it is that kind of place and quite frankly, we wouldn’t want it any other way. n Dinner for two, including wine, £150.

Widely considered to be one of the prettiest villages in England, Lower Slaughter is a popular tourist destination all year round for guests wishing to escape to the countryside. Quintessential English Luxury “Research shows that a manor house has stood on the site for more than 1,000 years and the village is named after a

Norman Knight, Philip de Sloitre, who was granted the land by William the Conqueror,” Abbi begins by explaining.

“Evidently, Sloitre was too much of a tongue-twister for the Saxon villagers who corrupted it to Slaughter! In 1443 the manor became a convent, housing nuns from the order of Syon and the dovecote, still standing in the grounds today, is said to have supplied the nuns with nourishment. In the early 1600s, the manor was granted to George Whitmore, High Sheriff of Gloucestershire, whose son later

commissioned Valentine Strong to build the house as you see it today. Some of the original features remain, such as the 1658 fireplace and the ceilings in the Drawing Room and Panel Room.

“Lower Slaughter Manor remained in the Whitmore family for over 300 years, until crippling death duties saw the house sold to a hotelier in the mid-1960s, before becoming the Von Essen Group in the 1990s,” Abbi recalls. “In 2011, Andrew and Christina Brownsword purchased the property and 2012 has seen it go from strength-to-strength. Today, the

hotel is defined by simple yet luxurious surroundings with seamless service,” she affirms. “In terms of our major strengths, I would say the location in the charming village of Lower Slaughter; the high quality accommodation; a fantastic chef; and the level of personal service from the team as a whole”.

On our recent visit to the hotel, we were particularly excited to sample Head Chef Jamie Raftery’s Seven Course Tasting Menu (£85.00 per person including Coffee and Petit Fours), as Abbi continues by explaining the hotel’s emphasis on top quality cuisine. “Jamie uses the best quality seasonal produce and whenever possible from local suppliers. He has worked in some fabulous places, including under Michael Caines at Gidleigh Park and Thomas Keller at French Laundry in California and his menus are a reflection of these notable influences. Fred Marti, our Head Sommelier, is currently researching biodynamic wines and has sourced a great English sparkling wine that is undergoing taste tests before being added to the wine list!”

Having enjoyed an excellent glass of the house Champagne before dinner, we were served the first course of Goats Cheese Mousse with Beetroot, Apple and Candied Walnuts and Celery Salad.

Perfectly presented and judged the Goats Cheese was partnered with its classic bedfellow of Beetroot, which made for a simple but delicious introduction to Jamie Raftery’s cuisine. Next came a course of deliciously juicy Scottish Scallops, Jerusalem Artichokes, Pine Nuts and Beech Mushrooms. Whilst the third course of Duck Liver Parfait, Cumberland Glaze, 5 Spice Genoise, Green Bean and Truffle

Salad was a little too rich for our taste the fourth course of Confit Cod Loin with Lemon Purée, Samphire and Dorset Crab Shellfish Bisque was exquisitely cooked and packed an exceptionally delicate flavour.

Moving onto the fifth and so-called ‘main course’ of the Tasting Menu, we were pleased to see local Cotswold Lamb served with Fondant Potato, Fennel and Roast Garlic with a Tapenade Jus. The Lamb melted in the mouth and the

Fondant Potato with Roast Garlic was the perfect antidote to the bitterly cold weather outside. After devouring this, we were served a fine selection of British and French Cheeses with Homemade Biscuits and Celery. With the final course still to come we were reluctant to indulge ourselves too much on the cheese and this proved a wise decision. Indeed, the dessert of Valrhona Dark Chocolate Tart with Confit Orange Sorbet and Roast Hazelnuts was spectacular and clearly utilised a very high cocoa chocolate to great effect.

If our experience is anything to go by we’re predicting that Jamie and his team will soon be seeing the much coveted Michelin star in their skyline, so if you can, we’d highly recommend a visit to Restaurant Sixteen58 while you can still get a table.

Feeling at ease Perhaps the most striking thing about Lower Slaughter Manor is the ease and comfort one feels upon arrival. On our visit, we arrived during a horrendous downpour and the warmth of the welcome was just the thing to silence the howling winds and frankly disgusting weather outside. Yet despite the far from

kind conditions outside, the staff ensured that all of the guests were warm enough and wanted for nothing – a feature of the hotel that Abbi is understandably proud to confirm. “Our guests return time and time again because they feel at home with us. There are no stuffy rules and the staff are encouraged to be themselves and interact with the guests as they would a guest staying in their own home.

“If it was up to me, my ideal experience would either be in the Antoinette Room, with its fabulous fourposter bed, or for more subtle luxury, the Longborough in the Coach House, which has muted tones and is a real favourite with families,” she concludes by telling us. “I love the quiet of the Drawing Room, sitting by the fire and listening to the Grandfather clock ticking away, or perhaps on the window seat at the front door, which is a great place to sit and watch the world go by, both inside and out. As for the view, well there are so many! My personal favourite is the view of the back garden from the Gallery or, indeed, any of the views looking up the house from the lawns”.

With a fantastic location in the heart of Covent Garden, Champagne + Fromage sells grower champagne from five different family-run Houses, all served with wonderful cheese and charcuterie. We visited the bistro and spoke with Stefano Frigerio, CoOwner, to find out more about this most refreshing of concepts.

Today, the majority of people have heard of champagnes like Bollinger, Veuve Cliquot, MoĂŤt et Chandon and Laurent Perrier but if you ask them to name a grower champagne House you will most likely be met with vacant stares.

After arriving in London, Maud Fierobe and her husband Stefano Frigerio were dismayed by the absence of good grower champagne so decided to take a gamble and establish Champagne + Fromage, with their sister company French Bubbles

doing the importing and sourcing. In recent years, supermarkets have played their part in diluting the brand value of some of these larger houses, which has opened the doors for a handful of lesser known Houses to gain a foothold in the market.

Reassuringly fizzy The UK is the world’s largest champagne market. We drink more of the fizz than anywhere else, which is a reassuring

statistic for Stefano. “The idea in the very beginning came from our lifelong dream to work in the champagne industry with artisan products. We soon realised it was difficult to find quality, reasonably priced champagne in London and after some market research discovered a niche in the market to distribute and sell champagne from small, independent producers. The business (French Bubbles) grew rapidly and now supplies many top hotels and restaurants in London, with

Champagne + Fromage providing the space for customers to pair a champagne with traditional French fare, as well as tastings and masterclasses. Ultimately, we aim to provide an alternative to the common British misconception that champagne should only be enjoyed on special occasions and can in fact be the perfect accompaniment to a normal meal.

“Two key things happened to us and helped to launch the business. Firstly, we met our cheese supplier, Une Normande a Londres, which is run by Franck Leblais and his family,” Stefano recalls. “It was the perfect match for us – fantastic cheese and charcuterie from small producers in France and a shared passion for pairing cheese and champagne. Secondly, an estate agent approached us in November 2001 and proposed we set up a pop-up shop for three months in our current Covent Garden location. They had found us on the internet and wanted us there to boost the area and increase the number of interesting, independent shops.

It took two weeks to create the popup and people seemed to love it. It was so popular that we decided to make it permanent and the rest is history!”

Perfectly chilled Given the unique concept behind

Champagne + Fromage, we were keen to ask Stefano about the bistro’s major selling point. “It is a brand new concept that doesn’t exist anywhere else in London – grower champagne from small, independent producers. We sell at a reasonable price point in a central location in Covent Garden, so perfect for pre- and post-theatre diners. We are passionate about our product and enjoy chatting to customers, which means they tend to come back time and time again. We have an extensive calendar of tasting events, which cut through the jargon, educating them on champagne and explaining the flavours and pairings.

In addition to this, we also offer a delivery service, so people working and living in central London can have bottles of perfectly chilled champagne and French fare delivered straight to their home or office.

“We are surrounded by theatres, so we’ve offered a unique and affordable alternative to pre- or post-theatre dinner and we have found that people really enjoy a glass of champagne and tartine before or after a show,” he affirms. “We’ve teamed up with theatre companies to provide special offers to ticket holders.

Furthermore, we target all the local businesses surrounding us by offering a

quick lunch and a takeaway and delivery service, so they can have a tartine or salad at their desk – it’s a great alternative to the usual high street sandwiches”.

Being centrally located means that Champagne + Fromage can deliver a bottle of chilled champagne or fine French food to the majority of the capital within the hour, as Stefano continues by explaining the tourist appeal of the bistro.

“We get a lot of business from tourists and people passing by – we made sure the front of the shop is attractive and inviting, which obviously entices people in. We offer a calendar of masterclasses and events, which we find are popular with local workers looking for something different and fun to do after work”.

The personal touch Having formed incredibly strong relationships with its family-owned suppliers, Stefano was keen to clarify just how important these relationships are to the success of the business. “We personally choose all of our suppliers after a long process and have built a strong relationship with all of them, for both champagne and food. We only buy from small, family-owned champagne producers and exclusively stock the champagnes in the UK, so you can’t find the products

We regularly go out and visit them and spend a lot of time exploring the region to find interesting new suppliers – it’s a hard job!

“In terms of our most popular champagnes, I would say the Pinot Noirproduced champagnes are the most popular as they are the perfect match with cheese and charcuterie. Among these, the Furdyna La Reserve (£28.00), Lacroix Reserve (£30.00) and Furdyna La Loge Vintage 2002 (£45.00) are particularly popular. In terms of cheese, I’d say the Comté, Chèvre, San Felicien and Roquefort are the favourites”.

Because Champagne + Fromage import directly from the producers, their prices are extremely competitive, particularly when you compare their champagnes to the larger Houses, which are highly inflated in the capital.

Indeed, at present, French Bubbles sells champagne from five different family-run grower Houses (Pertois-Moriset, Waris-

Larmandier, Lacroix, Colin and Furdyna) which amounts to 25 different cuvées, carefully selected by Maud to bring a slightly different flavour to its customers.

The most expensive vintages range from £45 to £55, whilst the non-vintages start from as little as £25. Similarly refreshing is the easy-to-approach descriptions. For instance, the Pertois-Moriset Rose n/v is described as: ‘a wine that will give you a big hug!’

Subtle and sublime As Stefano concludes by telling us, much of Champagne + Fromage’s draw is down to a simple formula of competitive pricing and approachable champagnes that equates to a welcoming and enjoyable experience. “The venue in Covent Garden is a big draw – it has a great location and an intimate and relaxing atmosphere.

Also, the majority of our products aren’t available anywhere else in London and many people try them, love them and

come back again to stock up. We offer a very friendly, personable service and love chatting to our customers and getting to know them, which means they often return”.

On our recent visit, the two highlights were a 2004 Blanc de Blancs with a goat’s cheese and a Rosé with a cheddar, both of which worked wonderfully well together. The fruit and complexity of the champagne was magnified by the cheese and confirmed Stefano and Maud’s philosophy that champagne is most definitely more than just a celebratory drink. Another misconception is that champagne should be served very cold.

However, by doing this you will rid the champagne of its subtleties, so it should be served no colder than 10 degrees – any colder and you can’t appreciate it at its best.

The Chefs of Tomorrow With the increasing number of top quality restaurants in and around London you wonder where all of these budding chefs and hospitality experts are coming from. Cordelia Rosa discovered ‘Pillars’ at the University of West London to get a taste of the future for herself.

‘Pillars’ is a replica Michelin star-esque training restaurant set up by the University’s School of Hospitality and Tourism. The restaurant opens its doors to the public for lunch four days a week and every Thursday evening during term time. The students do the cooking, serving and help run the front-ofhouse alongside their hospitality and chef lecturers. The experience is quite unique, you are offered an exquisite 3 course menu, attentive service and a lovely setting all for £15.95, excluding wine. The wine list is comprehensive and extremely reasonable. The menu changes from week to week and the students are made to alternate between the kitchen and the floor, giving them the broad spectrum of practice they

need to flourish in such a competitive industry.

This specially designed educational environment had a hushed air of excitement about it. As we entered in through the big double doors we were not met by a bland university building hallway with neon strip lights that make everyone look ill, but with a cheery, enthusiastic waitress waiting to take our names and show us to our table.

The interior of the restaurant is simply decorated with white walls and low lighting; it has a pleasant sereneness about it that lends itself to overall experience of enjoyment. This is all tactical we’re sure as studies have shown that people feel hungrier in a calm setting. There are just enough tables in the room for the

waiters to be able to look after everyone adequately without lingering around you, being too attentive. An added touch was the pianist, who was, we imagine, a music student rewarded at the end of the evening with the delicious three course meal for his efforts.

The menu is chosen by the students and the chef lecturers, it changes each week and occasionally, depending on the time of year, has a theme. We went the day after Halloween so had a choice of autumnal dishes, one of which was the obligatory Halloween roasted pumpkin soup.

in regularly to share his pearls of wisdom with the students. This, combined with the hands on experience that ‘Pillars’ offers, provides students with a wealth of experience unmatched by any book.

The students graduate fully prepared for the fast paced, thrilling and demanding restaurant industry that awaits them outside.

We really enjoyed the whole experience and particularly liked the sense of camaraderie between the chefs and the waiters. Refreshingly, there were no egos in the room, which is sadly the case in

many top restaurants. As we were the last to put on our coats we managed to get a little insight in to the teamwork involved, listening in on the debrief at the end of the evening. The students were given feedback from their lecturers on what they did well and how they could improve after which the students were given a chance to express how they thought the evening went as whole. As if we needed further confirmation, this proved that the restaurant is run by the students and not by their lecturers. No wonder that with hospitality students like these that there

A rich heritage “The site of Grosvenor House was originally a residence owned by Lord Chetwynd, before becoming the home of the Duke of Cumberland, followed by the Duke of Gloucester,” Astrid begins by telling us. “The site was then purchased in 1805 by Robert Grosvenor, the 1st Marquess of Westminster. In 1808 the Grosvenor family moved in and the property became known as Grosvenor House. Over the course of

the 19th century the house was extended considerably in the Neo-classical style, becoming ever grander in line with the Grosvenor family’s position as one of London society’s wealthiest and most prominent landowners”.

Building on this rich heritage, the celebrated British architect Edwin Lutyens designed the building as seen today between 1912 and 1918, as Astrid continues by affirming. “It was considered an icon of early 20th Century luxury in London and served as the London home of the Dukes of Westminster and their family until it was requisitioned by the

government during the Great War. In the 1920s, Grosvenor House was sold by the family to William Lever, 1st Viscount Leverhulme, the soap entrepreneur and arts benefactor. Following his death, the house was transformed into ‘Apartment Hotels’. The tower was added in 1927 using a French stone called Salamandre, which contrasted with the Portland Stone traditionally used in the neighbourhood. As a result, the building became increasingly synonymous with luxury and style.

“More recently, the property underwent a £75 million heritage conversion refurbishment in 2011, with

the first guests of Grosvenor House Apartments by Jumeirah Living welcomed in April 2012. The 2011 refurbishment maintained the historic facade and was led by architects Woods Bagot with Anouska Hempel as a lead design consultant for the stylish interiors,” she tells us. “Many of the hotel’s residences overlook Hyde Park or Mayfair, while others feature colonial-style shutters opening onto a seven-storey vaulted Atrium and its striking and contemporary chandelier.

The central Atrium provides continuity with the building’s fascinating heritage, echoing the grand staircase, which once stood at the heart of the storied home.

It is often referred to as catharsis, that moment when one realises a change has to be made. For Peter, this moment of clarity happened in 2005 when the Christmas party season was in full swing.

Assessing the scene of Vic Naylor’s, he saw a mass of drunk businessmen and even drunker women with mascara running down their faces. Then and there, he decided that he couldn’t run the bar he had set-up any longer. The rest, as they say, is history. Peter Spanton Beverages is the manifestation of his career in the drinks business – a non-alcoholic range of drinks exclusively for adults and with the same kind of cache that Vic Naylor’s once reflected.

Word of mouth From the beginning, Peter Spanton made a point of never advertising Vic Naylor’s.

Much like the dimly-lit backstreet bars of L.A, he wanted to create something built entirely on word of mouth. “The late eighties in Clerkenwell were a far cry from today’s loft spaces and boutique coffee shops and many of the YBAs were just out of college,” Peter recalls. “Indeed, the likes of Tracey Emin, Sarah Lucas, the Chapman Brothers, Stella McCartney and Sam TaylorWood were all regulars and are still friends

to this day. Before long, word of mouth grew and on many nights the entire crew from the Groucho Club would make a mass exodus across east London to keep the party going at Vic Naylor’s. In the early days, at least, if you came across us, it felt like you had found a private members club – one that you had access to just by nature of finding it”.

As Clerkenwell’s mass appeal grew, the fun began to dissipate, as Peter confirms.

“It became all about accountants, bankers and money. Pissed female lawyers were the worst – they would come in, get slaughtered and tell me the service was crap and that they weren’t going to pay their bill, then threaten to close me down, which was disgusting. During this time, I had developed a pretty serious drinking problem and, in 1999, I checked myself into the Priory. It was the toughest thing I had ever done. When you’re drinking, you become the conductor of your own orchestra, so losing that was incredibly difficult, particularly when you’re running a bar,” he admits.

When he came out, he soon slipped back into the old routine, with the only difference being that he was no longer drinking. Now a non-drinker, Peter noticed a massive dearth in sophisticated options for those on the wagon.

“I was part of a nuisance market that nobody bothered to cater for. I either had the choice of Coke, water or, if I was really lucky, something like an elderflower fizz. To combat this, I started drinking tonnes of tonic water with lemon and I soon realised that there was a space for an ‘adults only’ range of soft drinks aimed at a discerning audience that didn’t drink, whether for religious or personal reasons”.

Mixing up a storm “The thing about not drinking is that you’re still the same person, but when I went out, there was nothing for me to drink without feeling like a child,” Peter admits.

“All the time, it felt like I was being treated like a second-class citizen, so I started experimenting in my own kitchen with different ingredients. It cost me an absolute fortune but I began playing around with the acai berry, which is a Brazilian superfood, enormously

high in antioxidants. While being extremely good for you, it is also notoriously difficult to work with with and I found myself trying to turn this thick gloopy liquid into a sophisticated drink for adults.

“After ruining a lot of pans and trying an extraordinary amount of techniques, I dumped it all into a muslin bag and when I returned to it two days later the elusive liquid had finally drained through,” he affirms. “This was a turning point as I finally had the acai in a workable form. Acai has a very strange and difficult flavour, which is slightly metallic with chocolate overtones.

After three years working on the right recipe and using only natural products, I ultimately hit on a recipe that used the aromatic Concord grape to sweeten it”.

Unsuprisingly, Peter is coy about his recipe and he christened it Beverage Number 7. “I drove my friends and

my other half (Janet Street-Porter) mad getting them to taste my various concoctions,” he tells us. “I wanted it to have the characteristics of a good red wine and ultimately I had to trust my own taste buds”. The drink itself is a deep purple liquid, which contains 55 per cent pure acai and comes in a eponymouslystyled glass bottle that is just calling out to be stocked in the coolest bars and at the homes of the discerning. Indeed, like a fine wine, it is a drink to be savoured in small sips rather than large gulps, making it the ideal solution for a non-alcoholic beverage or as a mixer. “Like Marmite, I think people will either love it or hate it; I actively hope children will dislike it”.

Enigmatic Exclusivity The design for the brand reflects the very same kind of muted cool that Vic

Naylor’s had in the late eighties and early nineties; that is to say, a sort of enigmatic exclusivity that whispers sophistication.

“I came up with the concept and Ralph (famed Creative Director, Ralph Robinson) designed it. I had the idea for the logo to be this bunny rabbit, a sort of David Lynchian figure. It’s not about the Playboy bunny, it’s more about the faceless, Lynchian coolness of the logo, which I hope reflects the discerning nature of the drinks”.

As well as the No.7 Acai Blend, Peter has also perfected four more discerning drinks that are perfect as mixers or own their own. They are the No.3 Cardamom; No.4 Mint & Bitters with Bitter Chocolate; The No.5 Lemongrass; and the No.1 London Tonic. of the capital’s top bartenders. Indeed, already the signs are encouraging for Peter Spanton Beverages. Selfridges and Mark Hix immediately snapped them up, whilst Brown’s Hotel, St. John Hotel and Quo Vadis soon followed suit.

In many ways, the Peter Spanton journey is one mapped by the bar trade, both good and bad. Since being clean, Peter has also spent the last few years training to be a counsellor for addicts and alcoholics and has started teaching

cookery to children with emotional and behavioural problems at Aylands school in Enfield, where he grew up. “I teach these difficult kids how to cook – it’s been an amazing experience. Here you have these lads with lots of problems and they just love cooking; they’re now making gorgeous pastries and baking bread. I think that all the things I’m doing are moving in the same direction. The bar trade is fantastic for people skills, which is really what business is about. But I’ve moved on from that now and hopefully the drinks sum the journey up.
