Energy is supplied by 82 rooftop solar panels, while a cutting-edge Building Management System (BMS) enables realtime energy management and monitoring. Specialised software constantly analyses and adjusts heating and cooling, ventilation, and lighting based on current needs and external conditions, thereby preventing energy wastage.
OUTSIDE AND IN
The hotel’s outdoor zones also have a vibrant green heart. A 300m2 vertical garden grows on the façade, kept alive by a computercontrolled irrigation system that reduces water consumption. The Sofitel’s swimming pools incorporate a saline electrolysis system to avoid the need for chlorine.
EVERY LITTLE DETAIL COUNTS
The Hotel also goes to great lengths to lower its carbon footprint through a myriad of efforts, including the elimination of single-use plastic, new eco-friendly dry amenities, and Diptyque toiletries dispensers. The survey, organised by the EBD (European Best Destinations) organisation, collated the results of the voting on over 500 European destinations to list the top-20 results, and for 2024, Marbella not only made it into the top group but actually crowns it as the very best destination, summarising it as: “…a sunny, five-star, natural, sporty, gastronomic destination with everything to please the most demanding travellers.” It was the first time a Spanish destination has topped the list, this time beating Monaco, Malta, Geneva, and Batumi in Georgia to take the award. ›

It comes on the heels of another ranking, which placed Málaga at the top of the list of the Best city in the world to live for expats, so the Costa del Sol is riding high in 2024, topping the world, quite literally. The criteria used to quantify and value the over 500 different destinations included climate, culture, gastronomy, the standard of infrastructure and services, sustainable development, natural environment, sports and leisure options, quality of life, and it also measured such indicators as growth in popularity on social networks and the level of ‘smart tourism’ development that has been achieved. ›

In fact, the Golden Mile Center is at the very epicentre of Marbella’s finest address, just across the road from the Marbella Club Hotel. “The concept is a celebration of the shopping experience. The very antithesis of ordering something from a website or being caught up in a noisy mall,” says Bijan Laufer, the interior designer and boutique retailer who developed the project.

Most of us just get angry and sad when we think about what is happening to the environment - the oceans in particular. We picture tonnes of plastic drifting through the water, choking the seas where there should be schools of fish instead. But most of us don’t do anything about it. Thankfully, most doesn’t mean all.
J
eroen van de Waal is someone with a passion for the oceans that began when he was still a child. “It was the vastness that fascinated me,” says the Dutchman who soon found himself ensnared by the toll of everyday life. “I built a career and raised a family. You could say that I was successful, but it wasn’t until my forties that I realised something was missing, and then it hit me: the career I had built was not the one I
truly desired.”
This epiphany scared him but also animated him enough to quit his job in the oil and gas industry to found OrcaNation, a platform through which he could highlight the gravity of the situation facing the planet’s oceans. “The intention was not just to inform but also to initiate positive change projects and inspire younger generations to care for nature.” It was the beginning of a journey through which his life philosophy would be distilled. ›

Jeroen had made the jump from a career in oil exploration to ocean conservation, and OrcaNation would be just
the beginning. “We now have four distinct companies that complement each other’s work: The Reef Company – dedicated to creating engineered reefs to revitalise the oceans, BluBoxx – which collects big ocean data, and Narwhal Ventures, a blue (aqua-conservation) startup accelerator.”
What he started is not an NGO. These four entities are actual companies dedicated to preserving and regenerating the seas, and besides educating and informing they also apply research, data analysis, and
modern technology to develop practical solutions to preserve the oceans as well as stimulating the development of a so-called ‘blue economy’. “It’s the water equivalent of the green economy we now talk about so much, an economic system that seeks to conserve marine and freshwater environments while using their resources in a sustainable way.”

The data mentioned above is connected into a global network, but Jeroen’s vision has seen him engage in projects around the world, most specifically in South East Asia and Europe. “The degradation issues being faced by the oceans are both across the globe and also very localised. We forget that we depend upon them in very many ways, even if we don’t live by the coast or eat fish or seafood.
The seas are vital for our own existence, so we must begin to restore natural structures such as reefs and coastal mangroves, allow sea life to replenish again, not pollute the water, and also attempt to counter the warming of the oceans.”
The projects of Jeroen van de Waal are certainly ambitious, but he has built an entire structure from the ground up and sees no reason to stop developing it further.

BRUTISH BRITISH SUPERCAR POWER IN A PRACTICAL PACKAGE
UNDER THE SKIN
With SUVs going from the flavour of the week to a genuine step-change in the automotive world over the last several years, it only seemed right that Aston Martin should take a swing at providing absolute performance in a practical four-door form, especially seeing the huge successes from key competition like Bentley, Porsche, and most recently, Ferrari, all dominating in the luxury sports utility space. So how does the Aston Martin DBX stack up against its rivals?
Since the DBX debuted, it now makes up an impressive 50% of all vehicle sales for the famed British automaker – clearly illustrating the market demand for this practical four-door Aston. And now, we welcome the revised DBX 707, aptly named after the 707PS, or 697bhp on tap from its revised twin-turbo 4.0L V-8 engine from AMG. This monster motor made headlines for Aston, as the most powerful SUV on sale, at least until the Ferrari Purosangue was announced with a 715bhp V12. But that’s not to say the Aston isn’t plenty powerful enough for typical SUV duties, like grocery shopping and the school run. Putting that power down to the tarmac is a robust four-wheel-drive system, and nine-speed transmission, which with the help of launch control, will see the DBX 707 scramble to 100km/h in a mere 3.3 seconds in a straight line. Aston boasts the transmission features the first wet plate clutch in any luxury SUV, allowing it to shift gears with greater efficiency, making it up to 30% faster during changes than a typical torque converter setup. ›

If you fancy taking the DBX offroad, perhaps while taking the dog for a walk, then there are several drive modes to be explored. Terrain+ will be of use for anyone brave enough to tackle more than tarmac, which lifts the ride height in all four corners by an impressive 45mm over the standard height. It can even manage a wade into water up to half a meter in depth, thanks to breather lines that feed the differentials. The DBX has proven itself a hugely capable car, even if the vast majority of owners will never use it to its full potential. But I suppose it makes for good bragging rights at the golf course.
FORM AND FUNCTION
Atop all the trick technology helping propel the DBX over all terrains at an impressive pace is a very appealing aesthetic package. The DBX looks good from every angle and even better in person, with Aston’s signature gaping grille in front and centre taking some distinctive styling cues from the sportier siblings of the Aston lineup, including the phenomenal DB12 and Vantage models. Moving down
the flanks, the DBX has a very handsome silhouette, featuring the usual plethora of scoops and aero parts but in a very sleek dynamic – no garish angles to be seen here. It’ll turn heads while retaining a subtle yet sublime look. The rear of the car sports a neat ducktail with integrated lightbar that breaks up the hind. On the DBX, the quad tailpipes are set within the bumper above the more diminished lower diffuser in a flowing finish. ›

The big question for the DBX now though, is how it compares against Ferrari’s formidable familyfriendly Purosangue – the only car in the SUV category that can claim to be more powerful than the brutish Aston. If you caught Dune Part 2 at the cinema, then you may have been captivated by an actor who many say absolutely stole the limelight: Austin Butler, the upcoming star who played Feyd-Rautha – the powerful nemesis of the lead character, Paul Atreides. The Dune books have an immense following, owing in no small part to the universality of its themes. Although in the film, Feyd-Rautha is given a scary appearance that is more akin to Harry Potter’s Voldemort than the actual character in the book, Austin Butler lends the role far more complexity than it might initially seem. Yes, he is violent and brutal… and his eye is definitely on his only rival: Paul Atreides, a man who can see into the future while also housing all the memories of his ancestors. The actor who plays Feyd-Rautha is required
to display a blend of supreme mental and physical agility, searing ambition, and immense self-confidence. And many were surprised when Butler demonstrated all these qualities almost effortlessly, stealing every scene from the film’s protagonist. Fans had initially questioned the choice of this actor, known for his gentle, effortlessly charismatic persona, to play such a dark character. Yet therein lies their answer. It is precisely Butler’s attractive and likeable persona that makes his transformation so appealing and his bald, pale, black-toothed villain one you simply cannot take your eyes off.

He told Variety that even when he had the chance to meet up with friends and family, “the only thing I was ever thinking about was Elvis. I was speaking in his voice the whole time. You can lose touch with who you actually are. And I definitely had that when I finished Elvis — not knowing who I was.”
The character of Feyd-Rautha is a far cry from Austin’s previous breakout role – that of the King himself, Elvis Presley. Butler’s Elvis was hailed worldwide, earning him an Oscar nomination. His quiet charm and captivating smile were identical to Presley’s and his transformation from a young, passionate, ambitious Elvis into the older, tired version who howled his pain onstage, was immensely emotion-packed. Most critics gave the actor rave reviews, and those who panned him
focused on one thing: he didn’t ‘look enough like Elvis’. Yet surely what counts is not that an actor resembles the person they are portraying but rather their ability to evoke that person through gestures, physicality, and voice… and the skill with which Butler evolves Elvis’ journey from youth to maturity is simply spectacular.

In interviews, Butler is friendly but delightfully humble and always quick to comply with the myriad of requests from presenters and journalists –everything from singing to speaking like Elvis. In many ways, he is an actor destined for greatness, plucked out of obscurity by an actors’ management company one unexpected day while he was visiting a county fair. Following this serendipitous meeting, he studied acting and began appearing in a string of roles for Disney and Nickelodeon.
His career changed dramatically in 2018, when he appeared in his first Broadway production, a
revival of Eugene O’Neill’s The Iceman Cometh. His portrayal of teenager, Don Parritt, was highly praised by critics like Hilton Als, who wrote in The New Yorker: “Although there are many performers in George C. Wolfe’s staging of Eugene O’Neill’s phenomenal drama, The Iceman Cometh, there is only one actor, and his name is Austin Butler.” It led him to be noticed by directors of the calibre of Quentin Tarantino, who cast him in the multi-award-winning film, Once Upon a Time in Hollywood. That same year, he was cast as Elvis, and he hasn’t stopped ever since, recently winning a lot of new fans with his performance in

As is to be expected, Austin has many films in the pipeline, including City on Fire (about a young man forced to transform from a street soldier into a ruthless commander to save his loved ones), Eddington (a dark western comedy co-starring Joaquin Phoenix), and Heat 2 (it is rumoured he will play Val Kilmer’s character in the original film). Watch out for this force to be reckoned with! He may seem like ‘the new kid on the block’ but he has been around a while… and if his acting ability is anything to go by, he’ll certainly be around for a long time! e

Though born in Copenhagen towards the end of the 20th century, Thor Pedersen still had the Viking spirit of travel and adventure beating strongly in his heart. So much so, in fact, that he created a modern-day saga in an age when we thought everything had already been discovered and explored.

“I
was born a century too late,” says Thor Pedersen. “Ever since I can remember, I have been drawn by travel, adventure, and exploration, but I had the bad fortune that I lived in an era when everything had already been done and there was little romance in travel left.” His desire to travel hails back to his Viking routes and has more to do with romantic notions of Jules Verne’s 80 Days Around the World than it does with modern package tour holidays or five-star resorts. “I was 34 years old, 12 years into a career in shipping and logistics, and desperate to see the world. Graduating from business school and three years in the military had kept me busy, not to mention my work and the drag of everyday life, but when my father sent me an email with a link to an article about travel early in 2013, I learned that it was possible to visit every country in the world.”
There was even an unofficial club of people who’d done just that but, as Thor found out upon delving into the subject, no-one had yet ever done so without flying. “For me, it was a moment when a light went on and the idea took hold of me. I began to study how you could pull such a thing off, succeed where others had failed.” Instead of being put off by the obviously considerable obstacles, Thor began to feel like an explorer of old, and a sense of Jules Verne adventure surged through him. “As a kid, I was a great fan of Indiana Jones, I just loved the whole romantic notion of travel and adventure in the old style, and here was an opportunity to try it for myself. If it would have been an easy undertaking it would already have been done long ago.” After months of preparation, at 10:10am, on October 10th 2013, Thor Pedersen left behind all he knew and embarked upon a modern day saga. ›

The beginning was easy and Thor zig-zagged his way through Europe, mostly by rail, using ferries whenever he had to cross water. But it wouldn’t take long before logistics and bureaucracy reared their ugly heads, and they would be his main enemies throughout the epic ten-year journey around the world. “I had to obtain visas, arrange invitation letters, cross corrupt checkpoints, secure passage on trains, boats and busses, and hustle my way through incredible travel-unfriendly situations and regions of the world. The original plan was to spend four years circumnavigating the world, but in the end it took ten years and huge
amounts of patience and willpower to see it through. It was the journey of a lifetime, with incredible highs – like when you entered a new country – as well as lows, when you feel alone and vulnerable. Throughout, I met so many wonderful people, many of whom helped me out with such kindness, offering me advice, a ride, food, a valuable contact or even accommodation. I learned more about life in those ten years than I would have done in an entire lifetime at home.”
Above all, Thor learned about how to overcome hurdles, think on his feet, negotiate, persevere, and develop a new level of confidence. “The experience also helped to put things
into perspective, as what we perceive to be huge dramas in our everyday lives all of a sudden seem pretty small and insignificant. Living on the edge, day by day in a strange and changing environment, helps to remind you that things usually don’t turn out as badly as you imagine when you’re stressed and worried. It helps to create a stronger, more resilient, and philosophical mindset.” Thor learned about himself and human nature in general, as well as of course about the world, its countries, nature, cultures, and people. “This was very different from conventional tourism, and far less voyeuristic; I was actually experiencing each place up close and it became a deeply personal process.”

He had left behind a girlfriend and resisted the temptation to give up and fly home on many an occasion, also when his grandmother and a close friend passed away. “It was very difficult to keep our relationship alive but she was fantastic and flew out several times to visit me.” During one of those visits, Thor proposed
and she accepted, during a snowstorm on Mount Kenya. “Having spent months on end in creaky busses and trains, uncomfortable trucks, and half seaworthy boats, he emerged through every country on every continent and in every ocean. “I’d been threatened, held at gunpoint, and terrorised by hostile soldiers, but it was the total of 27 visits
by Le (his partner) and a desire not to quit that kept him going. “We’d set a date to get married in New Zealand, but then Covid hit, and I got stuck in Hong Kong, so we married online (Hong Kong/Denmark), but the marriage wasn’t recognised in Denmark so we remarried again in Vanuatu (a South Pacific country), which not everyone can say.” ›

What would normally have only been possible on a millionaire’s budget was achieved through savings, crowdfunding, and earning as much as possible along the way. Even set at $20/ day to cover transport, accommodation, meals, and visas, it still adds up over ten years. “It was an unforgettable experience; I achieved my dream of being the first at something in the style of the classic explorers and
I’ve evolved as a person to the point where I can’t even remember the guy I was before I set out.”
A documentary film, The Impossible Journey, will be released later this year. Filmed by Mike Douglas who followed Thor’s journey and met up with him whenever possible along the way, it witnesses the incredible 10-year journey and documents Thor’s monumental human achievement. e

When it comes to the top public transport of choice, surveys show that most people in big cities choose subways and trains rather than road-based transport. If you’re familiar with a city like London or Madrid, then you know how fast, cheap, and convenient the underground is. Trains are frequent, connections are optimal, and you can get from one side of the city to another in a flash. Elevated railways offer similar benefits such as a smooth ride, optimal velocity, and the capacity to carry numerous people at once. There is only one problem with rail-based transport: it requires substantial funding and legislative approval to build and is mostly only available in big cities.
For an idea of how expensive subway lines can be, take the most recent line in New York: the Second Avenue subway, which has completed its first phase of construction. Once it’s fully built, it will span 16 stations (from Harlem to the Lower East Side), but it comes at a pretty hefty price – over $17 billion.
“There are other transportation alternatives,” you may think, and that is certainly true. Most cities, for instance, have a complex network of buses. Yet the statistics show that people aren’t too pleased with them.
A very small percentage of commuters rely on them in many major cities, owing mainly to how uncomfortable they are. Buses move, sway, and brake suddenly… and if you have elderly loved ones, then you know this can be unsafe and can lead to falls and injuries.
Subways and trains offer a smoother, safer ride, and often, the step between a subway platform and carriage is considerably lower than that between the road and bus door. It is telling that most people prefer railways, trams, and subways since big cities like New York have almost 10
times as many bus routes as they do rail service lines. There may be another reason for the supremacy of trains and subways: they are faster and they aren’t subject to the same delays and traffic jams that buses are.
What if there was a better alternative? A transport system that was less expensive and complex than the subway system but faster and more appealing than buses? It already exists! It’s called Autonomous Rapid Transit (ART) and it is a fully electric train-bus hybrid developed by CRRC – a Chinese company specialising in mass transit. ›

It’s already being used in three cities in China and is being considered by other cities across the globe to connect larger train or subway systems in suburbs and outskirts. Often, there are big transport gaps between trains, which the electric train-bus hybrid can bridge without the need for major construction work.
VIRTUAL TECHNOLOGY
The ART vehicle, which has rubber wheels, does not run on tracks but on a virtual track painted on roads. Yet it is much more than a typical bus! The ride is far smoother (more akin to riding on a train) since these ‘trackless trams’ are autonomously guided. What’s more, they are fitted with sensors,
cameras, and cutting-edge stabilising technology such as controlled acceleration and active suspension systems, which considerably reduce bumps, jerks, and sudden stops. The vehicle can be taken over by a driver but it generally follows a predetermined route.
Currently, the hybrid system is used in Israel as well as China, and CRCC is planning to expand into global markets. CNBC reports that one ART costs around $2.2 million (around €2 million), which may seem expensive but actually amounts to one-fifth of the price of a traditional tram system for every 1.6km completed. Moreover, it’s fully electric, meaning that it can make a significant
contribution to lowering the carbon footprint of major cities. What’s not to love about it?

It will be embracing an innovative approach to the

As stated by Santiago Pérez, Project Manager of the initiative, “The global antibiotic market will grow to $ 45.3 billion by 2028, and will be bolstered by the need for specific antibiotics to prevent the emergence of new resistances.”
Hifas Biologics has been an incubated project for over a year through the Hifas Innovation Hub (the group’s corporate venture). Following the discovery of various fractions of metabolites and antimicrobial peptides, the company decided to establish itself as an independent entity, and it is already raising capital to make this possible. It hopes to obtain further investment through research funding initiatives offered by the EU, the American
government, and other governments in collaboration with large pharmaceutical companies.

“Modern technology enables us to advance more and more in this, and of course we also apply this know-how to the homes we build. The team form part of this company philosophy, in everything from avoiding throw-away plastic and being an almost print-free office to using recycled paper when we do print. Our fleet of cars consists of Teslas, and we include charging stations in our developments, also studying such factors as local climatic conditions and incorporating this into our designs to optimise layout, orientation and energy-efficiency, as well as comfort.”

HOW INVESTMENT CAPITAL AND INCOME
IS TAXED IN SPAIN
Whether you have bank savings, a large share portfolio, or own investment property, you should be clear on how this capital and income is taxed in Spain. Spanish residents are liable to local tax on worldwide income, gains, and wealth; non-residents are liable on assets owned in Spain.
INTEREST, DIVIDENDS, CAPITAL GAINS, ETC.
For Spanish tax purposes, income is split into two categories with different tax treatments. The savings income category covers:
» interest income
» dividends
» capital gains on the sale/ transfer of assets (property, shares, securities, etc.)
» income from life assurance contracts
» purchased annuity income
All your income for the year that falls into any of these categories is combined and taxed at these progressive rates:
» Up to €6.000 – 19%
» €6.000 to €50.000 - 21%
» €50.000 to €200.000 –23%
» €200.000 to €300.000 –27%
» Over €300.000 – 28%
For residents, gains made on the sale of real estate would be taxed as above, unless it meets the main home criteria in which case it is exempt (investment properties and holiday/ second homes will not be classed as such). Nonresidents pay tax at a flat 19%.
Investment losses can be set off against other savings income gains, with a specific order. For example, income losses from a life assurance policy are initially set off against interest and
dividend income, with no limit. Any balance is offset against capital gains, up to a limit.
LIFE ASSURANCE CONTRACTS
An approved life assurance policy, where you hold investments within its ‘wrapper’, can provide tax advantages in Spain.
Income and capital gains rolled up within the policy are not subject to tax, while only the gain element of withdrawals is taxed.

RENTAL INCOME
Rental income is classed as general income, along with any other income not categorised as savings income and taxed at the scale rates of income tax. In Andalucía these range from 19% for income up to €12.450 to 47% for income over €300,000.
Spanish residents get a 60% reduction against the net (after expenses) rental income before tax is payable, provided the property is used as a main home (short lets don’t benefit). This includes long lets outside Spain.
Non-residents in an EU/EEA country are taxed on net rental income from Spanish property at a flat 19%. Non-EU/EEA residents pay 24% tax on the gross income.
If you own a property that is not your main home, a notional rental income is deemed to arise for periods where the property is not let to a third party and therefore empty and taxed as above.
WEALTH TAX
The value of your worldwide assets is added up on an annual basis and if the total exceeds the available
allowances, you are subject to the wealth tax rules. Andalucía provides a 100% relief for the main wealth tax, so local residents do not have a wealth tax liability.
If, however, your wealth, exceeds €4.000,000, you may be liable for solidarity tax. This cannot be varied or eliminated by regional rules.
SPANISH EXIT TAX
If you have a large investment portfolio and leave Spain to become tax resident elsewhere, you may have to pay Spanish tax on unrealised capital gains arising from your holdings, regardless of location.
This applies if you have been Spanish tax resident for 10 out of the 15 years preceding departure, if the market value of the shares surpasses €4.000,000 or the total shareholdings exceed 25% and the shares market value exceeds €1.000.000.

there are some drawbacks and a key concern for many people is the local tax regime. But you do not necessarily need to fear taxation in Spain – some people even find they improve their tax situation by becoming resident. The event was held to appease the LPA’s fears following an increase in home burglaries along the Coast. Dabiz was born in 1980 in Madrid and was a restless, curious boy who always dreamed of great things. His greatest aspiration was to be a pro footballer, and he played in the juvenile teams of Atlético de Madrid, reaching the second division. His parents were keen diners who often visited chef Abraham García’s iconic restaurant, Viridiana. Dabiz began accompanying them and, at the age of 12, became fascinated by haute cuisine. Very soon, García became his new idol and he began cooking up a storm at home, predicting that he would one day open a restaurant and achieve dizzying heights of success. His father’s response? “When pigs fly.” Today, pigs play a starring role in the design of his arguably most emblematic restaurant,
DiverXO –which has three Michelin stars to its name. DiverXO is populated by cheery sculptures of pigs – and of course, they all have wings!

In 2021, Dabiz launched StreetXO, which once again ruffled feathers, as it sought to offer high cuisine at an affordable price. This restaurant is known for its laid-back, creative, daring style, where good food and flavour take centre stage. Its layout is pretty cool; a dining bar structure is set up around the kitchen, so you can see the chefs at work. Because StreetXo does not take any bookings, it isn’t uncommon to see long lines of customers waiting to enjoy the artistry of the world’s best chefs… StreetXo was so successful that it recently launched another branch in Dubai!
CIRCUSXO
This sexy establishment presents ‘the liquid side of Dabiz`s gastronomic madness’. Located in London, it features cocktails like the amazing Pedroche’s egg, featuring piña colada, Bombay chutney, and English custard! Served in an ultra-realistic, blue ‘cracked egg’, it is named after Dabiz’s wife, TV presenter Cristina Pedroche. Other dishes served at CircuXo include the Tom Khai Kai
(with coconut, lime, chilli, and flying fish eggs) and Drinking Pekin Duck (with Hoisin syrup, cucumber, mezcal, and duck condiment).
GOXO
During the pandemic, Dabiz and his team demonstrated their capacity to adapt to challenges by launching GoXO, which sold gourmet home-delivery meals. Dabiz reinterpreted classic home-cooked dishes with top-quality ingredients. By the end of 2020, demand was such that a second GoXO was opened in Barcelona. In 2021, it evolved into a physical space for diners to enjoy high cuisine with a fast food vibe.
FOOD TRUCKS
In 2021, Dabiz updated the GoXO concept, adding a new element to the XO family: food trucks, strategically located at various points in the city of Madrid. They are the perfect destinations for quick bites and classic delights like hamburgers, hotdogs, and popular desserts. Since then, Muñoz has surprised diners in other cities with this dynamic, affordable concept.

I don’t know about you, but have you noticed that since Breaking Bad, fried chicken and any restaurant title with the word ‘pollo’ in it has become incredibly cool? Even the logo of Pollos Muñoz is a little reminiscent of the series’ Pollos Hermanos restaurant, where Gus Fringe and his posse held sway. Pollos Muñoz, a food truck that tours Spain throughout the year, was born out of Xo’s passion for fried chicken. The chicken here is unbeatable and a must-try if you’re into finger-licking good, deep-fried food.
RAVIOXO
In May 2022, Dabiz launched
RavioXO as part of the El Corte Inglés Gourmet Experience in Madrid’s famous Paseo de la Castellana, seeking to pay homage to pasta. The chef decontextualises this food from any specific culture to create his own language. Just six months after its opening, the restaurant received its first Michelin star, making it the first restaurant within a commercial centre to do so. Dabiz and his XO concept have garnered so many awards that listing them all would take page after page. His inimitable creativity, desire to rebel, and personal aesthetic have all commanded attention from the world’s top publications and critics.
Despite being met with initial scepticism, his boldness in pushing culinary boundaries is now one of his most lauded traits. Whether you’re after a leisurely slow-tasting menu experience or a quick bite of home-cooked fried chicken, he’s got you covered. The XO must go on!

NEW TASTING MENU AT SOLLO
Michelin-starred restaurant, Sollo, located within the Higuerón Resort, is pleased to announce that it has a brand-new tasting menu called Caminho 2024. Chef, Diego Gallegos, has opted for gastronomic delights centred around sustainability, Mediterranean flavours, and traditional zero-kilometre cuisine. This time, he has veered slightly away from past years’ menu, as he will be whipping up dishes made with produce obtained from the sea and taking his inspiration from world cuisine.

The Marbella Club Hotel was a fitting backdrop to a special lunch held at the Clubhouse to celebrate International Women’s Day. Attending the event were female movers and shakers from the world of wine – including Bibi Garcia, winemaker from Cortijo Los Aguilares in Ronda and Victoria Ordoñez, owner of Victoria Ordoñez and Sons. Noelia Calleja, Assistant Head of Wine at Hakkasan, served as guest sommelier alongside the Marbella Club’s sommelier, Ángel González. A lovely meal was prepared for guests by the Executive Chef of the Marbella Club, Santiago Guerrero.

CHEFSFORCHILDREN COOKING WORKSHOP WITH ÁNGEL LEÓN
ChefsForChildren, an initiative that sees top chefs from across Spain teaching kids how to cook for a good cause, recently held a workshop for the kids of Autismo España (Autism Spain) at the Bahia de Cádiz Natural Park. Numerous chefs of renown (including Diego Gallegos of Sollo, Diego del Río of Boho Club, and Benito Gómez of Bardal) also took part in the event. The day started with a bird-watching activity. Kids were invited to fish, source seafood, and select fresh eggs. They used all these newly sourced ingredients during the cooking workshop, enjoying themselves immensely.

WITHOUT THE BULL TORO
Anyone who’s seen the depiction of the gruesome event that is a Spanish bullfight, or has read Hemingway’s Death in the Afternoon, will be familiar with the shouts of Ole’ and Toro. The former is thought to stem from the Arabic word for God, Allah and the latter simply means Bull.
Ever the adventurer, my journey into the hinterland of the less traditional wine world is largely unbounded. Particularly here in Spain, I am driven to seek out less familiar regions and ranges, even those located cheek by joule with more ‘known’ or conventional Goliath’s of viniculture.
One such region is called Toro.
Situated in the province of Zamora, in Spain’s Northwest, it benefits from the appellation of Castilla y Leon and is particularly well regarded for its red wines produced using an idiginous varient of the ubiquitous Tempranillo grape, locally named Tinta de Toro.
About four years ago I found myself with others in an excellent San Pedro de Alcántara restaurant that prides itself on its diverse range of some of the most delicious wines from all corners of, primarily, Spain. I was there tasting unfamiliar wines. The Sommelier was particularly excited by a bottle from the Toro region

and she assured us that it was as good as its neighbour, Ribera del Duero – already a firm favourite of mine. Her machete point was that the Toro brands deliver a largely similar palate but at a cost of around fifty percent less than their better known neighbour.
While this region, and its fruits, may be a comparatively recent discovery for me, it is fair to say that the locals know a thing or two about wine production. The soil is perfect for cultivation and since the 1st century BC local Celtic tribes were instructed by the Ancient Greeks in the art of wine production. With regally sanctioned grape supplies, the region flourished. So much so that when France, in particular, was struck with the phylloxera blight in the mid-19th century, the unaffected vines from Toro were widely exported to substantially replant those affected. My understanding is, due to the sandy nature of Toro’s soil, the phylloxera aphids couldn’t travel via ‘ground tunnels’ which they
needed to pass through in order to infect a wider area.
From its position in the valley of the river Duero close to the Portuguese border, many of the fine characteristics attributable to its easterly neighbour, Ribera del Duero, are also prominent in this region making it ripe for viticultural development.
In 1997, the mighty Vega Sicilia established the Pintia Estate in Toro, thus creating yet more trophy, albeit in my view, expensive wines. Other local wineries arrived in the nineties, including Bodega Numanthia, which is highly recommended.
Toro was awarded the Denominación de Origen Protegida (DOP) in 1987. However, some of the production of the Toro region has been seen as that of
a poorer relative, so much so that my suggestion is to approach with a little caution. Many of the more popular supermarket variants, that are attractively inexpensive, have an overly sweet even slightly clawing quality of which I am not fond.
For those, like me, with more modest pockets, the wines from the Matsu (meaning ‘wait’ in Japanese) range are certain to appeal. Part of the young and growing Vintae Group, Matsu is a bright and modern brand whose wines are made from Tinta de Toro grapes from eighty plus year old vineyards. Their intention is to pay respect to three generations of wine growers who, through their collective inherited wisdom, continue to grow vines in an artisanal way. ›

Z The El Picaro (circa €8,80) has a blackberry jam aroma with liquorice and spicy flavours.
Z The El Recio (circa €14,85) – which is aged in French and European oak barrels for at least 14 months – is deep purple and replete with the aromas of vanilla, red and black fruits, chocolate and spicy pepper.
Z The El Viejo (circa €40,50) – which benefits from 16 months in new French oak barrels – is a yet more serious proposition which has the unmistakeable aroma of black fruits, combined with a slight sweetness from the barrel and a spicy aroma with a distinctly smooth finish.
Z The Matsu range is a perfect pairing for the local Toro gastronomy where wood-roasted lamb (lechazo asado) is a particular favourite.
