The Hotel offers guests something very few others in the city do: a fantastic café experience at Arte Sano – a coffee shop located in the lobby that was created in alliance with Granier – one of Spain’s bestloved coffee, bread, and pastry shops. It’s going to be another summer of sport to savour, kicking off with 24 countries competing at Europe’s festival of football – Euro 2024. The host is Germany, meaning that the organisation should be smooth and the stadiums large and filled to the brim. In other words, a summer festival of football, which we all hope will bring many unforgettable moments. Germany was awarded the tournament ahead of challenger Turkey, and the home of Europe’s best attended football league, the Bundesliga, has fantastic venues to

offer in cities such as Berlin, Hamburg, Munich, Stüttgart, Frankfurt, Cologne, Dortmund, Düsseldorf, Gelsenkirchen, and Leipzig. This, together with an excellent transport network, lots of hotels, campsites, hospitality venues, and of course a rich beer culture, spells classic Euro conditions.

As per tradition, there will be lots of controversial moments, not least caused by refereeing decisions that will be hotly debated by both sides – benefactors and those who feel they have lost out due to a bad call. Refereeing is a delicate issue in most sports, but there are few where it

is as contentious as in football, where the sideline ‘polemics’ surrounding the game sometimes even overshadow the action itself. And if you thought technology could solve that age-old problem, you’re sadly mistaken, as VAR (Video Assistant Referee) has not proved as successful as its tennis counterpart, the HawkEye electronic line judge, which seems to simply get it right pretty much all of the time. Then again, the mêlée that makes up much of football action makes getting a clear picture of the ball that little more complicated, so expect the usual controversies. ›

Messi will of course not be on show (he’s Argentinean), and with Ronaldo now a veteran, the stage is set for someone else to take on the role of superstar, and potentially player of the tournament. For many that position has already been taken by Mbappé, whose performance at the last World Cup was inspiring, to say the least. It is generally accepted that the young star has taken over the mantle of best player in Europe, and quite possibly best in the world, but all eyes will be on

him to confirm that status. As to other pretenders to the throne, there are many up and coming young stars, including England’s Jude Bellingham, who has been on fire for Spanish champions Real Madrid this season.

Don’t forget about England’s other class act, Harry Kane, who spurred on Tottenham for years before doing the same for Bayern Munich. If this is Robert Lewandowski’s moment, Poland could go far, and of course the same is true of Kevin de Bruyne, who

like Lewandowski will be looking to emulate his club successes with national silverware. Spain will be seeking glory through a solid team performance, but perhaps the go-to man right now is Mikel Oyarzabal, while Scotland will be looking to Liverpool star Andy Robertson and Italy to Ciro Immobile for inspiration. It will be interesting to see if it’s the established stars or new talent that shines during this championship. ›

WHO WILL GET THROUGH

The first hurdle is always the group stage, where the home team opens the tournament at the impressive Allianz Arena in Munich against Scotland. The Scots will be hoping for an upset in a match that could set them up favourably against the other teams in Group A, Hungary and Switzerland. The football world will be turned upside down if Germany doesn’t qualify, but the remaining three teams are so evenly

matched that it would be hard to make a convincing prediction. The Swiss have the upper hand, but all bets are on.

In Group B, Spain are favourites to emerge to the next round, with Italy the most likely team to join them. However, though the Azzurri are the defending champions, their form has been a little erratic in recent years, which means that Croatia (2018 World Cup finalists) could cause an upset – not to mention Albania, the kind of minnow

team that has potential giant killer written all over it. England’s Group C is not a stroll in the park either but certainly not the toughest teams Gareth Southgate’s squad could have faced, so the 2020 finalists should be reasonably certain of getting through to the Second Round. The question is who will accompany them, and here Denmark seems to have the edge over Serbia and Slovenia, the latter not quite the force it was some years ago.

This is where it tends to really warm up, and Spain could face Scotland, Hungary, Poland, Ukraine or the Czech Republic, and would be expected to make it on to the Quarter Finals, where they are likely to meet…Germany. Who could predict that one? The winner of this match will be edging towards the final. Portugal could face Scotland, Hungary, Croatia or Serbia, and should squeeze through to meet The Netherlands in the Quarter Finals, if they emerge victorious

from a probably encounter with Slovakia or Ukraine. The Dutch may now have a slight edge, which would see them line up against Spain or hosts Germany in the semi-finals, quite a fixture indeed. France could play the Czechs or Turks, and then meet the Belgians in the quarters, where, you guessed it, they could be a possible challenge for England’s hopes of success.

of the Euro 2020 final. Who will come out of that to face France is anyone’s guess, but possible semi-final lineups include mouthwatering fixtures such as Germany/Spain vs The Netherlands and France vs England or Italy. Anything can happen, but the odds would then go to a Germany-France final – a pairing of two classic teams that we haven’t seen face each other in a major tournament yet.

And yet, even though true upsets are few and far between, things also don’t tend to go exactly according to the betting averages, and for this reason alone the final is likely to produce a different set of teams – we’ll just have to see.

MARBELLA RESPONDS TO THE DROUGHT

For many tourists, the picture postcard view of Marbella is that of a pristine villa with an azure blue swimming pool shimmering with enticing water. For some time, the image for long term residents of the Costa del Sol has been somewhat different.

Over the last year, with the culmination of several years of insufficient rain and very hot summers, the stock of ‘liquid gold’ in our local reservoir has depleted.

Several edicts from the Junta de Andalucía (Andalusian Regional Government) have sought to address the impact of the ‘sequía’ (the drought) and these have variously resulted in bans on the refilling of private swimming pools, the use of high-pressure water hoses, the washing of vehicles, and the irrigation of private gardens. Contravention exposed the offender to fines of up to €3.000, so quite an incentive not to transgress, however tempting it may be to save your cherished fruit trees or hibiscus bushes.

Over the months there have also been various attempts to limit consumption, resulting in nighttime pressure reductions and, in April, the Junta sought to limit daily use to a maximum of 200 litres per inhabitant.

Realising that part of the solution lay in improving Marbella’s desalination operation, various initiatives were undertaken in early 2024.

The Planta Desaladora

(Desalination Plant) on the Istán Road was inaugurated in 1996, under the ‘colourful’ Jesús Gil y Gil era of Marbella’s administration, as a direct response to the drought of 1995. It started operating in 2005 during another period of drought. At the time it was the largest in Europe. Located 2.5 km inland, it takes its supply of sea water from the Río Verde – adjacent to Puerto Banús – and using the process known as ‘reverse osmosis’ it converts to fresh water for human consumption and industrial uses. It was originally scaled to deliver over 56,000m3 daily and already supplies around 50% of the drinking water to those located between Torremolinos and Manilva. However, due to neglect it was largely under-maintained. Through a €3M Junta funded renovation plan, Acosol, the publicly owned water supply company, was able to confirm by February 2024 that the capacity had doubled to 12 cubic hectometres per annum. By March, Acosol announced that the Junta had given the green light to an investment of €35M, with work being estimated to take twenty months, to increase the currently improved supply to 4300 litres per second. ›

This, we are told, is sufficient to satisfy the needs of a population of around 2M people. By way of comparison, it has been reported that the usual summertime (July and August) requirement of the region is around 3000 litres per second.

However, this is only part of an ongoing solution, as the impact of desalination on the local environment is not without cost.

Nature has a remarkable way of reminding us of our own insignificance. As experienced over the years, Easter Week, for many in Spain the pinnacle of the religious calendar, can be very wet. Reliably, the weather intervened. Over the course of a particularly rainy week, the Embalse de la Concepción (Marbella’s reservoir) which supplies much of the western Costa del Sol with its fresh water supply, rose from a capacity on Easter Sunday (31.03) of 47% to an amazing 56%, by the 1st April. The ‘run off’ of rainwater from the rivers into the reservoir has continued since and by the first week of May, circa 75% of full capacity

was achieved.

The result has meant that the Junta has passed into the hands of local Town Halls the capacity to relax the bans on the topping up of private and community swimming pools. In so doing, to the relief of many, there’s a belief that the summer season has been ‘saved’.

Many local families in Marbella, in a collective effort to use scarce resources more sustainably, have sought to conserve water by syphoning bath and shower water – known as ‘grey water’ – for toilet flushing and garden irrigation, despite caution that some soaps and shampoos may be harmful to plants.

WHICH REGULATIONS COVER THESE VEHICLES IN SPAIN?

The norms and regulations covering motorhomes in Spain vary depending on the comunidad autónoma (independent community) or town hall concerned, which is why doing your research before buying one is advisable. Each city and municipality can also have rules governing how long vehicles can be parked in specific zones. For instance, although motorhomes can be parked in any parking spot, they are usually not

allowed to remain there for more than seven to 15 consecutive days. There are also specific rules restricting parking in residential areas and spending the night in public places.

Specific speed limits are imposed depending on the vehicle’s weight. Explicitly, motorhomes weighing 3,500kg or less can travel at 120km/h on a highway or freeway, but those weighing over 3,500kg have a speed limit of 90km/h.

The Directorate General of Traffic (DGT) in Spain

also details speed limits according to the numerical classification of vehicles: those classified as ‘code 3148’ can travel at 100km/h on highways and freeways, while ‘code 3300’ vehicles can only travel at 90km/h. Licensing requirements also vary. Those with a B licence can drive motorhomes weighing less than 3,500kg. Anything heavier, and you’ll need a C1 or superior permit. Finally, your RV will need to be inspected biannually if it is older than four years and annually if they are over 10 years old.

HOW LONG CAN YOU STAY IN A CAMPSITE?

Most campsites in Spain allow you to stay for a maximum of 180 days (or six months) consecutively, though some sites have reduced limits (30 or 60 days). During high season (July and August) some may require minimum visits of one or more weeks. If you want to extend your stay for longer than 180 days, talk to the campsite and local authorities, as they may issue you a special authorisation.

WHERE CAN YOU CAMP OR STAY OVERNIGHT?

In Spain, you can only park overnight in dedicated campsites and service areas. Staying overnight at a public car park or on a road is prohibited. In some areas, there are specific zones that allow recreational vehicles to park for a maximum of 48 hours. If you plan on staying at a natural park, consult the regulations set up by the National Park Network and Red Natura 2000. These rules have been established to minimise the impact of vehicles on natural areas.

REGISTERING YOUR PLACE OF RESIDENCE

If you wish to live in your motorhome, there are also special regulations that apply. If you are a resident of Spain, you are required

by law to register your place of residence (this process is known as empadronamiento). Your government requires an official address so they can send notifications and so you can access different services offered by Social Security. Motorhomes are considered an infravivienda (or infra-home), just as caves and makeshift homes are. Even those living in a roofless area are considered

capable of registration, which means that technically, you can legally live in your motorhome. One option is to park your vehicle on land you own – in this case, Social Security services will have to agree that your residence is ‘habitable’. In reality, many RV owners get around the red tape by registering themselves at the address of a friend or family member. ›

From as early as the mid1960s, Porsche began to develop a race-ready version of the 911 inside its Stuttgart headquarters. First, the superlight 911 R made its debut – the godfather of Porsche’s last super special homage from 2016 – swiftly followed by the 911 S. Once the interior specs from the already FIA-approved 911 T were applied to the homologated chassis of the road-going S, the prototype was aptly dubbed by Porsche engineers, the 911 ST. The key to competition with strict homologation rules of the era was weight saving, anywhere and everywhere

possible. Powered by a peppy 2.2-litre flat-six, the original ST boasted some extreme weight saving thanks to Plexiglas windows, and a plethora of aluminium and glass-fibre-reinforced plastics used for key body panels. This latest, and most hardcore track variant of the 911 soared to victory, first in 1970 at the Monte Carlo Rally, and later at Acropolis, Nürburgring, East African Safari Rally and even taking podium finishes in endurance racing at Le Mans and Daytona, all within just a three-year period. It was thanks to the unparalleled success of the 911 ST, that the recipe was

written for some of the most legendary cars in motoring history to be born; including its successor, the 911 Carrera RS 2.7 and subsequently the entire Porsche GT programme, that to this day continues to deliver some of the most awe-inspiring vehicles – according to anyone with good taste. So, what exactly is the new 911 ST? Simply put, imagine a 911 GT3 RS, but shave off the wings and trim the ducts and raceinspired aero parts. The exterior is timeless with smooth curves, the interior is plush with soft leathers, the exhaust note is a throaty rasp, and a PDK transmission is not an option. You’ll shift slower to 100 km/h than in an RS, but you won’t care. Even for a second.

The ST is powered by a 4-litre normally aspirated flat-six motor, the same

powerplant found in the full-fat GT3 RS variant, this time, mated to a short ratio six-speed manual transmission, a lightweight clutch and single-mass flywheel, providing maximum engagement all of the time. The cherry on top of this combination is the stripped-back nature of the ST, with a profusion of panels – including the roof, hood, front wings, and doors – all being made with carbon-fibre reinforced plastic, plus a huge quantity of sound deadening removed. Ray Dolby, an engineer at heart and soul

Ray Dolby created an empire built on understanding sound. A gifted engineer, he used his talents to forge a new direction in recording techniques and open up an era of development in the fields of music and film studio fidelity. He started very young, working on the first of various groundbreaking new technological inventions well before he even left university.

As it turns out, the apple didn’t fall very far from the tree. Ray’s father was an inventor too, so he was raised in an environment of technical innovation that would set the tone for his later career. Having grown up in the California

of the pre-war years, the young man whose surname would later become synonymous with sound quality attended first San Jose State College and later the prestigious Stanford University before opting for a career in acoustic engineering. While still a high school student, Dolby took parttime and summer jobs with technical companies in order to advance his technical skills. It was during one of these stints, with a company called Ampex, that the budding young engineer took part in what would be a historic development project. In fact, back in the 1940s, when still a teenager, he participated in the development of the audio tape recorder. ›

EARLY SIGNS OF BRILLIANCE

Ray Dolby was still so young that he was designated a non-degree holding ‘consultant’ in recognition of his contribution to the work. Using the experience gained on this project, he would not much later continue to work with Ampex on the development of the video tape recorder as an undergraduate student. The technology thus created would soon after find its way into professional studio recording facilities before hitting the consumer market some years later. By then, Ray Dolby had

graduated as an electrical engineer from Stanford University and won a prized Marshall Scholarship for a PhD in Physics from the University of Cambridge. He departed for England in 1961 to become a Research Fellow at Pembroke College, already having contributed to a significant body of research and product development. Upon being promoted, he was appointed as technical advisor to the United Nations, spending several years in India before returning to England to found Dolby Laboratories in London.

The original team consisted of four people,

but over time the company grew into a major specialist engineering firm and today has almost 2,500 employees in several countries. Much of this success, and Dolby’s international reputation, is built upon the invention by its founder of the iconic Dolby Noise Reduction System. Developed in 1965, the year of the company’s founding, it made a sensational breakthrough in sound quality improvement by processing and compressing (filtering) out background noise. The result was a far higher level of sound fidelity achieved in recording studios, cinemas, and stereo equipment. ›

A NAME SYNONYMOUS WITH SOUND

Patented in 1969, the system opened up a huge international market, most notably in the music recording and movie industries, where Dolby was to become synonymous with a new era of sound quality. To this day you cannot separate the name from sound, stereo, music, and film, as it didn’t take long for the movie sector to come knocking. The first film that featured Dolby sound was A Clockwork Orange, where producer and director Stanley Kubrick was quick to spot the potential of the system.

More followed, including A Star is Born in 1976, whose soundtrack was the first to be featured in LCRS (LeftCenter-Right-Surround), making Dolby the effective pioneer of surround sound as well. Within the first

decade of its existence, Dolby Stereo Sound had been fitted in over 6,000 cinemas around the world. The company continued to evolve, developing digital surround sound compression and releasing it for the first time in the movie Batman Returns in 1992. The technology since found its way into satellite and cable receivers, DVD players, and contemporary systems.

Ray Dolby passed away in 2013 at the age of 80, having received many awards and lifetime achievement accolades. He bequeathed over €90 million to his alma mater

at Cambridge, Pembroke College, to which has since been added another €180 million for the creation of research scholarships and the Ray Dolby Centre, which opened last year. To many around the world, the name Dolby simply means sound – quality of sound. They may not even the know the man behind its technology, but the true legacy of one of the greatest engineers of his generation is the fact that the music and films we enjoy are so much more captivating for the purity of sound that Ray Dolby pioneered and continued to develop throughout his groundbreaking career. e

Iwas watching an interview with Amy Winehouse the other day and when asked what made her different as an artist, she answered that she wrote her own music and lyrics, essentially having full control of her entire musical process. She was one-ofa-kind in many ways and when she passed away, millions of fans across the globe lamented not only the loss of someone so young but also of a musician who was shaking up an entire genre – jazz. Rosalía, the singer born and raised in Catalunya – is doing something similar, but this time it’s flamenco that’s being revolutionised. The difference, perhaps, lies in the fact that while Amy Winehouse very much embraced nostalgia and traditional sounds and fashion, Rosalía has deconstructed flamenco music, fusing it with numerous styles ranging from pop to reggaeton. Amy stood out from her contemporaries and was arguably the defining global artist of her time and there is no doubt that Rosalía, too, is much more than a pop star

or composer. Her manager, Rebeca León (who also manages J Balvin and Juanes) said that she agreed to manage Rosalía because she is “a once-in-50-years kind of artist.”

Rosalía has worked with the best of the best, including Travis Scott, Billie Eilish, and J Balvin. Ironically, many fans came across her name for the first time when Kourtney Kardashian and Dua Lipa began signing her praises after hearing the first single of her album, Malamente, in 2018. The video for the song, directed by Canada, went viral online, and Pitchfork named it Video of the Year. Malamente was nominated for five Latino Grammys and won two (Best Alternative Song and Best Fusion/Urban Interpretation).

Of course, Rosalía has won many prestigious prizes since. She has a total of 11 Latin Grammys, two Grammys, four MTV Video Music Awards, and an MTV Europe Music Award. Plenty of hard work led to the rise of Rosalía the sensation, and it all stemmed from her authentic passion for a specific musical genre: flamenco. ›

Rosalía was 13 years old when one day after school she went to the park. Some of her friends were older and they were at the park that day with their tuned-up cars, listening to Camarón de la Isla. For Rosalía, the sound she heard was groundbreaking. She told El Mundo, “I couldn’t stop listening to it and immediately set myself to researching, studying, singing it.” At home, she had always sung along to the music her parents listened to – The Beatles, Bob Marley, and Bruce Springsteen. Yet, that day at the park, she saw the light and decided that she would become a cantaora. And like other artists who have become obsessed with music, she succeeded. She started

by visiting flamenco tablaos. Despite living in Barcelona, she was never short of inspiration, as she compares Andalusian culture in Catalunya to Mexican culture in Los Angeles – wherever you go, it’s there. She also found a maestro – José Miguel Vizcaya (‘El Chiqui’) who, she says, taught her “everything.”

Rosalía also commenced what would become a lifelong study of music. She studied modern music, lyrical technique, and interpretation of flamenco cante at the Escuela Superior de Música de Cataluña. As such, she shrugs off critiques that say that her use of flamenco amounts to ‘cultural appropriation’. ›

She often reminds the media that she has been following flamenco intensely since she was 13 and that this genre was the focus of her tertiary studies. In her point of view, “Flamenco isn’t the property of the Gitanos. It’s nobody’s property, and there is nothing wrong with experimenting with it. In fact, doing so is healthy.” She points out that flamenco is the fruit of a blend of ethnicities and a fusion of gitano, black, Hebrew, Arabian, and Spanish music.

She also began recording her own music while she was still a student. She graduated from her conservatory

with honours, after recording an album with Raül Refree called Los Ángeles (2017) and creating an incredible end-of-course project, her album, El Mal Querer (2018) – a reimagination of pop and urban music fused with flamenco and co-produced by El Guincho. She continued to belt out hit after hit. One of her earliest chart-topping songs was Con Altura, the fruit of a collaboration with J Balvin. Selling over two million copies, it was named one of the best songs of the year by Billboard. Later, Rosalía began collaborating with other big stars, including Bad Bunny, Travis Scott, and Ozuna.

In 2022,

she released an album that broke many records and received immense critical acclaim: Motomami, which adds a myriad of cultural influences into the flamenco mix – including bachata, reggaeton, Japanese, and Korean music. For instance, the song Chicken Teriyaki is a bold cross-over that marries Japan’s obsession with cuteness (kawaii) with New York’s motorbiking culture. She has an intuitive ability to meld influences from different cultures, and her excellent videos match the innovative nature of her music. One must-see video is Hentai (inspired by Japanese ‘sexy manga’ comics). The song, co-written by Pharrell Williams (the singer and producer behind hits like Blurred Lines and Get Lucky) contains overtly sexual lyrics. In the video, Rosalía climbs on top of a mechanical bull in the middle of a field as she sings. The song now has 23M views and counting, and it is just one of many gorgeously artistic videos that are hard to keep your eyes off. Her videos and fashion choices bear the indelible stamp of Andalusian culture, with stunning sound, cinematic quality, and artistry added to the mix.

Many say that if one artist picked up the baton after a long hiatus following Amy Winehouse’s death, it was Rosalía. Despite her immense success, there is no doubt that controversy will always follow her name owing to the presence of the flamenco genre in nearly everything she does. Without immersing ourselves in this debate, it pays to listen to the words of cantaor, Juan Peña: “If we want to save flamenco, if we want to take flamenco to the masses, we’ll have to find a new way. A new style. We have to create.” e

In March this year, Clara Chizoba Kronborg set a new world record with a 55-hour, 24-second marathon of 90 interviews. The venue was Puerto Banús, and the purpose behind the exercise far more than merely shattering the previous record.

For over two days and nights solid, Clara Chizoba Kronborg interviewed a total of 90 people, setting a new world record as part of a greater ambition. The presenter, talk show host, and media entrepreneur is on something of a mission, you see, and it centres upon giving people the courage to chase dreams regardless of who or where they are. “I grew up in a poor part of Onitsha, Anambra State in Nigeria, and know first-hand what a life trap it can be to be born into the wrong address,” says the businesswoman with a strong sense of social responsibility.

“As a child, I wondered why it is that some live in comfort while others struggle, and this set in motion a series of philosophical thoughts and a curiosity to understand the world that has materialised into a practical plan.”

Intelligent and driven, Clara found her way out of the ghetto and now encourages others to do the same. “We live in a world where we’re so obsessed with celebrity and societal concepts of fame and success that we don’t appreciate the fact that the world is full of

fascinating, untold stories and experiences.”

Clara believes everyone possesses a unique narrative and has the power to write their own story, if they believe enough. “If you always remember your ‘why’, it will yield you ‘will’, and this will see you through to realise your goals.” As she embarked upon her journey, she found fulfilment in empowering others to shape their own paths. “Perhaps its not surprising that I became a media entrepreneur, as it is through communication that you can reach people, help to form ideas and try to make a difference in the furthest reaches of the world.”

THE PLAN BEHIND THE RECORD

So why put yourself through a gruelling 55-hour marathon of 90 interviews? “Because I wanted to create a platform through which to give a voice to hardworking people of all nature and backgrounds, and the Guinness Book of Records is a great way to do it.” It wasn’t easy, though, as she had to fight off overwhelming bouts of fatigue and ended up with a sore throat and hoarse voice. “It was tough at times, but also fascinating and well

worth the discomfort. I am committed to amplifying voices and believe in the transformative power of storytelling to inspire others facing similar challenges in life.”

This was the aim, but in the process Clara was also more than willing to challenge herself and show others that things can be achieved if you’re willing to break out of your comfort zone. “I guess my ultimate goal is to bring people together. I believe in individual and cultural unity. I support hardworking women but men too, and believe that anyone, regardless of the circumstances into which they were born, should have a chance to be heard and an opportunity to succeed. The ultimate way to achieve this is not to divide and accuse but unite by emphasising our shared human experiences and feelings.”

The people chosen for the interviews had inspiring stories to share. They came from a very diverse background and helped Clara to contribute to a piece of empowerment that serves to remind one that passion and perseverance lead to purpose, and it to chasing your dreams. ›

“I specifically want to inspire people who live in difficult conditions that can even seem hopeless. This applies to those who are underprivileged and/or from remote parts of the world that are not so easily connected to opportunities, but also to groups such as women in diaspora communities. Their circumstances are often very difficult, and they need a sense of hope.”

A WAY OUT

A way out is something that people in impoverished societies dream of, and Clara is offering them suggestions as to how to realise it. “During the interviews, we drew from the experiences of actors, real estate professionals, celebrities, CEOs, a senator, and entrepreneurs in the fields of tech, beauty, and the media. They told us what they have achieved, the challenges they faced, and what it took to succeed. Naturally, each story is different, but there are

certain elements common to all, and we hope that the people viewing the show will be able to draw parallels and associate themselves with those stories that resonated with them.”

Sitting on a yacht on Puerto Banús interviewing interesting people sounds like a nice job, but less so when you do it for 55 straight hours amid heavy rainstorms. “We were worried that we’d have technical problems or that I would simply succumb to fatigue, but I persevered and my team were fantastic, keeping the equipment running and helping me out with cups of water and back rubs to keep me functioning.”

Clara is rightly proud of her achievement, but all the more if it realises its real objective, to reach people and inspire them. “To do this, you must stay focused, stop trying to please everyone, and believe in yourself. You’ll be amazed what can be done.”

It’s pretty safe to say that the era of cash payments is coming to a close. The market for payment cards has grown at lightning speed, with contactless cards expected to have up to a 95 per cent global penetration by 2026. Original chip and pin cards, introduced in the 1980s, took almost two decades to reach a billion in number. Contactless payment, introduced in 2007, took just eight years to reach the same milestone. The next logical step is biometric payment – a far more convenient way for consumers to authenticate their identities. What great news for those wanting a total guarantee that no payment made slips by their radar!

WHAT IS BIOMETRIC PAYMENT?

Biometric payment is a point-ofsale technology that uses biometric authentication based on physical characteristics to identify a user and authorise payment with funds from their bank account. The most common method used is finger scanning, though other potential methods include iris, retina, face, signature, and voice recognition. Vein patterns and DNA matching are also used in specific instances. Currently, face recognition is growing in prominence. For example, Apple Pay users with newer models can pay using facial recognition and their PIN. Many systems have a two-factor authentication system that requires the use of a PIN number, in an effort to boost safety and security.

HOW DOES IT WORK?

Biometric payment systems are already facilitated by some stores in the U.S. –including grocery stores, convenience stores, and petrol stations. They can also be used to make a one-click payment on online stores like Amazon. Feedback thus far is positive, with over 70 per cent of people surveyed seeing biometric payment as more convenient than traditional payment systems. As such, studies by Kenneth Research show that the biometric payment market will enjoy a CAGR of 49 per cent and will be worth approximately $15.59 trillion in 2027.

WHY DO PEOPLE PREFER BIOMETRIC PAYMENT?

The benefits of biometric payment systems include improved security, a faster payment experience, the ease of paying without a card, and lower costs per transaction for the seller. Another big advantage is the removal of payment caps. Currently, the user experience varies greatly across regions, countries, and banks. By bringing biometrics into the equation, uniformity can be achieved. Its

disadvantages, meanwhile, include privacy. Fingerprints have traditionally been linked to law enforcement. However, the developers of their technology point out that the databases do not actually keep the fingerprints themselves, but rather, encrypted numbers obtained from the prints. However, this still means that a user’s privacy depends on the quality of the databases and transactions linked to their print.

WHAT IS THE FUTURE OF BIOMETRIC PAYMENT SYSTEMS IN EUROPE?

A recent report from the ECB indicates that an increasing number of consumers in the EU prefer biometric payment. Amazon, MasterCard, and other major organisations have announced that they plan to adopt this system in Europe, and a slew of European fintech companies

Vertical gardens are becoming a key component in contemporary urban design owing to shrinking land spaces and the influence of climate change. Green, cool, and undoubtedly eye-catching, they are relatively low-cost tools that can be harnessed to enhance air quality, reduce heat problems in urban zones, and improve mental health. WHEN AND WHERE DID VERTICAL GARDENS BEGIN?

Vertical gardening can be traced back to 3000BC, when Mediterranean dwellers grew grape vines as a food source and as a means to embellish their homes and gardens and provide shade in places where trees could not be planted. There are few references in historical texts to vertical gardens. However, the Hanging Gardens of Babylon, one of the Seven Wonders of the Ancient World, are thought to have been designed and planted around 600BC in the ancient city of Babylon, close to the present-day Babil province in Iraq.

Legend has it that King Nebuchadnezzar II built

these stunning gardens for his wife because she missed the verdant hills and valleys of her homeland. The historian, Diodorus Siculus, described the gardens as being tiered and watered through a clever irrigation system that connected them to the Euphrates River.

Vertical gardens continued to fascinate human beings throughout history. In medieval Europe, monasteries and castles often had espaliered fruit trees that grew flat against walls, thus providing their inhabitants with easy access to fruit. In the Renaissance era, a resurgence of interest in gardens saw the reintroduction of espalier

techniques and trellises, which involved ‘training’ plants to grow against walls. The Victorian era also defied gravity in their landscaping, with climbing roses, ivy, and many more vines encouraged to climb up trellises and structures and add picturesque beauty to homes and gardens.

The 20th century saw a big shift in the ethos behind vertical gardening, with the lack of space in densely populated cities leading innovators like Patrick Blanc (a French botanist) to popularise the idea of green walls. Today, ‘living walls’ are used in a myriad of home and city settings to battle global warming and pollution and to give citizens a mental health boost. ›

HOW ARE VERTICAL GARDENS GROWN?

There are many different options for growing vertical gardens, depending on the size, type of plants, and area selected. Typically, vertical gardens that are attached to walls (i.e. those that do not grow in pots or soil) are fixed to a substrate wall. The substrates are either organic or inert. Organic substrates do not require much fertiliser, but they degrade and need replacement in time. Inert substrates, on the other hand, do require continuous fertiliser, but they are more stable chemically and therefore longer-lasting. Vertical gardens grown indoors are typically grown over a moss substrate, which is antibacterial and has a protective effect against rot, pests, and diseases. Aficionados who wish to bypass professional landscaping services can simply grow their vertical gardens on wooden palettes, affix pots to a wall at different heights, or embellish trellises, bannisters, archways, and more.

THE SECRETS OF LONGEVITY

Have you ever noticed people in their later years say their body has aged and yet they still feel young inside? Let’s take a look back in time through ancient myths and legends. They talk about a golden age, a time when humans lived much longer and experienced much better health. I remember reading the Guinness Book Of World Records in my 20s about a man called Methuselah who was considered the longest lived human at 969 years old. In fact, the world’s top longevity expert, Dr. David Sinclair has stated that, in his opinion, humans could live to around 1,000 years old but something seems to prevent that.

Forwarding to the present day, let’s see firstly what the so-called Blue Zones have to offer us, where people typically live to over a 100 years old in good physical health. What’s their secret? If we look at just one aspect from each zone we learn that in Okinawa, Japan, they consume a lot of purple

sweet potatoes which contain a very powerful antioxidant called anthocyanins. If we fly to Ikaria Greece, we discern that their red wine contains high amounts of resveratrol that slows ageing by tricking the body into believing it’s in a semi fasting state. So beginning with the right types of exercise could be one of the most powerful longevity drugs you could invest into. Most people are unaware that from the age of 30 onwards, the body begins to cannibalise muscle tissue, the very thing it needs to support you and your mobility let alone effectively metabolise calories for you. ›

Let’s have some fun and start by testing your cognitive functions because your balance is one of your most important assets. Stand upright with arms by your side and raise one leg: how long can you balance for? Top marks for one minute! Now try it with your eyes closed – top marks if you made it to 10 seconds. Next is grip strength which determines how long you will live: hang from a pull up bar for more than two minutes and you get top marks or walk for one minute with two dumbbells with half your bodyweight in each hand. Can you do it? Next is to develop your VO2 max. Can you ride a stationary exercise bike at your highest level of discomfort for between two to four minutes at

maximum pace? Do this once or twice a week to ‘tell’ your body it still needs to stay young in case a sabre tooth tiger attacks! Top marks if you’re doing strength training as this protects your white muscle fibres from sarcopenia, the body’s destruction of the white muscle fibres that give you strength and power.

THE GROWING POPULARITY OF

PET CLONING

They say that the only negative thing about dogs and cats is how short their lives are, and many people who become attached to their special ‘heart pet’ grieve deeply when a pet passes away. For most pet owners, pets are family, and a tiny but fervent minority choose a unique way to always have them (or something connected to them) in their lives: cloning.

HOW DOES PET CLONING WORK?

Pet cloning begins by obtaining a tissue sample from a pet. Genetic material is obtained to create an identical twin and this material is transferred into an egg cell to form embryos. More than one embryo is then implanted into a surrogate mum who has a typical pregnancy and labour, caring for the puppy, kitten, or other pet once it is born. Sometimes, one surrogate mum has more than one embryo implanted, typically, with genetic material from different pets. That is, one cat could bear kitten clones whose genetic material is obtained from more than one cat. As such, one pregnancy could result in more than one client having one or more clones of their pets.

HOW MUCH DOES CLONING COST?

Cloning currently costs around $50,000 for dogs and $ 40,000 for cats. The main companies carrying out this procedure are ViaGen Pets in Texas and Sinogene in China. Earlier in 2024, a woman called Kris Stewart received two cloned kittens, whose genetic material was obtained from her Ragdoll cat, Bear. Their names are Bear Bear and Honey Bear.

WHY DO PEOPLE RESORT TO CLONING?

To understand people’s motivations, it helps to turn to those who have actually cloned a pet. One of these is a Texan woman who cloned her cat, Chai, after the latter died during surgery for impaction. She was devastated, as Chai was only five years old and the kitty had overcome a host of health issues caused by a substandard breeder.

DO CLONES LOOK THE SAME AND BEHAVE IDENTICALLY TO THEIR ORIGINAL?

Interestingly, although they do look alike, clones and originals are not totally identical! Their phenotype (the result of the interaction of their genotype with the environment) is different. Cats are especially unique in their coat colouration genetics. For instance, ViaGen cloned a calico cat and a tortoiseshell cat. The calico clone looked almost identical to its donor, but the two tortoiseshell cats had different colours from each other. Another difference is size. If the donor was the runt of the litter, then the clone would typically be bigger. Clones can

also have very different personalities from their donor. CloneKitty’s owner notes that the clone, Belle, has some aspects of her personality that are similar to Chai’s and others that are completely different.

WHY CLONING IS SO POLEMIC?

The hefty price tag is one reason why cloning is such a debated issue. You are, essentially, not getting the same pet twice over. The pets can look and behave very differently. As such, critics argue that it makes little sense to spend €40.000 for a pet when you could adopt a perfectly healthy pet you could connect with deeply from a shelter. Another issue is that clones inherit any genetic health issues their donor has. Last but certainly not least, cloning puts the lives of surrogate animals at risk. Female surrogate mothers are put through various

invasive procedures for the implantation of embryos and the removal of the foetuses. Some are concerned that cloned pets could have reduced lifespans or health problems. Meanwhile, millions of pets across the globe are being killed in shelters. Pro-cloners defend themselves by saying that the clone “is not an extension of the donor’s life.” CloneKitty’s human says, “I just wanted to carry on a piece of her, not bring her back to life, and in that way, I’m honouring the memory of my late cat…I’m not dropping all memories of Chai and starting where she left off; I’m forming new memories and experiences with Belle…” For many, this argument has more holes than a sieve. It is worth noting that companies that clone pets are also cloning and saving endangered species… of course, that is a whole different kettle of fish! e

La Zambra Receives Its First Michelin Key

The Michelin Guide has introduced its new distinction, Michelin Keys, to highlight top hotels and accommodations worldwide. FAMILY ESTATES AND THE ‘SOCIMI’ IN SPAIN

The main objective for the owners of large family estates is to preserve them over time through successive generations. This is not an easy task considering the different variables that may be involved: the entry into the ownership of various family members with different interests that can sometimes be opposed; the social and economic circumstances through time that are increasingly interconnected by the phenomenon of globalisation; or the need to find professionals specialised in the field who are trustworthy.

In recent years, taxation has been gaining greater prominence both due to this changing nature and its greater degree of pressure on the different assets in which this type of family invest. It should be noted that the introduction of new taxes, such as the Temporary

Solidarity Tax on Large Fortunes (in Spanish, Impuesto Temporal de Solidaridad sobre Grandes Fortunas), presents a new framework in which it is even more essential to arrange financial tax investments, as well as to review decisions to move or relocate family groups and their members.

In view of the complexity of the assets in the family offices, it is usually necessary to make increasingly sophisticated decisions on management, administration, finance, investment strategies, and generational planning, which are crucial at a preventive level to ensure the permanence of the assets and to obtain the highest possible return in an effective way. Focusing on the investment vehicles, the Listed Corporations for Investment in the Real Estate Market (in Spanish, Sociedades Anónimas Cotizadas de Inversión del Mercado Inmobiliario, hereinafter SOCIMI) are nowadays gaining in prominence in respect of family assets. Certain legal requirements must be met by the SOCIMI, such as a minimum share capital of five million euros; shares should be traded on a regulated market; their activity must be related to the acquisition and development of urban real estate for lease activities or holding shares in certain entities (such as other SOCIMIs), or the possibility to benefit from a special tax regime.

Pursuant to Spanish law, the

SOCIMI investment must fulfil several requirements:

1. At least 80% of the assets must be urban real estate for lease; land for the development of real estate to be used for such purpose provided that the development is commenced within three years from the acquisition; as well as shares or assets of other entities set out in the applicable law.

2. At least 80% of the income for the tax period corresponding to each financial year, excluding that derived from the transfer of the shares and the real estate assets both of which are assigned to the fulfilment of the main corporate purpose, once a period of at least 3 years has elapsed, must come from:

» The lease of real estate; and/ or

» Dividends or profit participation deriving from shares assigned to the fulfilment of its main corporate purpose.

SOCIMIs and their shareholders are subject to a special tax regime. These companies are taxed at zero (0) per cent for corporate income tax purposes, with certain exceptions. Thus,

Our review visit to Isola last autumn, the classy Italian restaurant at the METT Hotel & Beach Resort Marbella – Estepona, is such a fond memory that we were eagerly looking forward with anticipation to trying out the hotels newest dining venue, AMMOS, following its exodus in Dubai and Ibiza, with Doha coming soon, and our expectations were more than fulfilled.

COASTAL STYLE

Located on the beachfront of the hotel, the restaurant comprises a lovely enclosed garden with tall graceful palms, white shade sails and umbrellas, comfortable wooden chairs interwoven with rope, and surrounding sofas lining walls with alcoves displaying pottery and ornaments. The setting evokes a Greek village permeated with a Mediterranean vibe, with white and blue touches everywhere in evidence,

from the tablecloths to the cushions, the uniforms sported by the staff, and even to the menu itself.

It is idyllic and instantly transports you to another reality, reinforced by the music being created by a DJ in the middle of the terrace, which is interspersed with live artists on weekend days.

AMMOS is in the very capable hands of Giannis Toman, an amiable Greek chef who has more than 20 years experience honing

his craft in top restaurants across Europe. He is also the resort’s Executive Chef, overseeing the Azure Beach Club, Bar de Lola, and Isola Ristorante. We received a warm welcome from both him and the Manager, Ignacio Aparicio, at our table under a bamboo roof with bougainvillea, and he went on to explain the philosophy of his menu, founded on the simplistic basis of sharing tasty dips, snacks, and Greek specials.›

It was a lovely sunny Sunday lunchtime as we settled into the comfortable chairs, enjoying refreshing drinks served by the friendly staff while we perused the menu. We decided that sharing was the order of the day, selecting the Greek Mezze Tray which proved to be an inspired choice, really piquing our palates for the treats to come. We could have already stopped here, but being the intrepid adventurers that we are, we sampled the Josper Meat Platter for 2, with Lamb Chops, Beef Soutzoukakia, Baby Chicken, Roasted Potatoes, and Grilled Tomatoes, alongside a scrumptious Linguini With Lobster, and Seafood Orzo, another medley with Prawns, Mussels, Clams, Calamari, Chilli Flakes, Seafood Bisque and Tomato Sauce. Mmmm! Seafood lovers can also inspect their impressive ‘Fish Market’ on ice, to choose what they would like to be prepared by the chef.

conversation which flows naturally in a superlative setting like this, we did succumb to dessert and a warning here: you will too if you as much as look at the Dessert Menu. For us it was too late and we ended a most pleasant afternoon once again sharing portions of Tarta de Limón Griega, AMMOS Baklava, Loukoumades (Small Greek dough balls), and Portocalopita – an amazing Orange Cake with Citrus Cream, Candied Bergamot, and Mandarin Sorbet. Mediterranean, the five-star hotel SO/ Sotogrande Spa & Golf Resort has reopened the doors of its renowned MarXa beach bar. The Grill Bar reopened its doors last month, debuting a new space that will permit it to extend its season.

For main dishes, the principal proponents are the fish and cuts of Argentine meat, grilled with oak charcoal that is combined with local firewood from orange and lemon trees. Within this selection, there is no shortage of Angus meat cuts such as Sirloin, Rib Eye (High Loin), Simmental Tomahawk, or Suckling Lamb Rib. For the fish of the day, how about grilled turbot with sautéed garlic, chilli, and sherry vinegar, Almadraba tuna loin, or sea bass ‘a la espalda’? These dishes can be accompanied with garnishes such as caramelised piquillo peppers, creamed potatoes with goat cheese, or creamed spinach.

The menu is completed with signature desserts such as Roasted Mango and yogurt ice cream, Roasted Pineapple, Crème Brûleé, or After-Eight.

The meal is complemented by an extensive drink’s offering comprising more than 40 cocktails, beers, freshly squeezed lemonades, and a varied selection of national and international wines.

Ocean Club has officially opened its doors, with a busy season lined up for locals and international travellers. As Marbella’s premier beach frontline club, it plays host to a wide array of discerning clients from across the globe, who are used to indulging their sense of taste at some of the world’s finest establishments. They come to Ocean Club to relax, imbibe the salty sea air, and enjoy excellent food. Indeed, for many visitors, the cuisine is the heart of the Ocean Club experience. Thankfully, the reins of its restaurant, AMAÏ by OC, are in the capable hands of Andreas Nygren – the Creative Food Director who is also in charge of the Ocean Club’s other beach restaurant, Dune, and who provides advice and support to the group’s third restaurant, Zozoï.

Andreas is a Swedish chef who has immersed himself in international cuisine from the start of his career. He helped launch the Purobeach brand in Mallorca and has worked in top-of-the-line restaurants in Paris and Sweden. “One of my chefs was part of the Swedish Olympic team,” he says with pride. He

was also part of the team

Mårten Trotzig restaurant in Stockholm, which received a Bib Gourmand rating from the Michelin Guide, and he formed part of the implementation team of Thomas Keller restaurants and menus onboard Seabourn ships. Indeed, one of the most defining experiences of his earlier career was working on luxury cruise ships for both Seabourn and Silversea. He

recalls the challenges of pleasing diners from dozens of countries, all of whom expected the very best… Andreas delivered, turning this challenge into one of his core values as a chef: fulfilling diners’ expectations.

Despite having the undoubtedly challenging task of running three restaurants, Andreas is characteristically calm, despite his busy schedule. ›

I ask him what he has lined up for Ocean Club this season and he answers, “At Ocean Club, we are once again serving the dishes clients demand the most of a beach club, such as pizza, pasta, sushi, and dishes from all over the world. We adjust and fine-tune the menu every season so that there are always new, exciting varieties of international dishes.” There are many enticing dishes to look forward to this year, including the lobster ravioli with golden caviar and seafood broth, the Almadraba tuna tataki marinated in cucumber, wakame, chilli, sesame, ponzu and mango, and the tempting dessert trio called Delicious. The latter comprises an apple and vanilla liquor crumble, Baileys tiramisu, and frozen Amaretto sour.

Exciting things are also going on at Zozoï, primarily the incorporation of a new Chef de Cuisine, Anthony Van Wesemael. “I would like to highlight the work of the Chefs de Cuisine of each of the three establishments. Anthony is doing fabulously at Zozoï, as are Vasilka Petrova in Dune and Luke Otterburn at Ocean Club.” As a Creative Food Director, Andreas needs to have a team he can count on, and he beams with pride at the work ethic and passion of this talented group of professionals.

I ask Andreas what we can expect at Zozoï this season and he answers, “Zozoï serves predominantly Belgian cuisine with a slight French influence. It is a classic in the Old Town and the owners want to maintain its ethos, while consistently aiming to improve its product. As for new dishes, one that stands out is the brown shrimp coquette, which is a Belgian classic.” With respect to Dune, he explains, “The entire menu has changed. We have moved in a more international direction this year. As is the case in all three establishments, we are focusing on a

shared dining experience. For instance, the menu at Dune now has dishes like the prawn taco, ceviche, and salads, which are ideal for sharing.”

Andreas stays at the top of his game by travelling, a pastime shared by Ocean Club’s owners. “I’ve travelled extensively over my years as a chef, which has led me to appreciate authentic food from all over the world – when I worked in the luxury cruise industry, I travelled north to south and east to west. I would try regional dishes and come back home and recreate them using authentic ingredients and techniques while also aiming to add my creative touch.” ›

His love of great food is matched by his interest in building a happy, motivated team. “Everyone on the team contributes. I aim to promote a sense of togetherness. Rather than hiring external candidates, we promote candidates from within the company, giving each of our employees the chance to grow. › It requires energy as we need to train them, but it is also fulfilling because through teaching, I continue to

learn. Promoting inhouse ensures that the staff remains inspired and motivated and remain with us for the long term.” After a hectic season at Ocean Club, some staff take a much-merited break, while others decide to hone their craft at Zozoï or Dune. “Working at another establishment allows them to learn new things and see different ways of service.”

Andreas is, as always, infinitely grateful to his employers. “We are very lucky because we have owners who supply us with the tools we need to be successful. Firstly, they are open to communication and feedback. They travel

the world and frequent the very best venues, bringing back their experiences and asking us for specific things. They trust that we have the company’s best interest at heart, which creates a bond that grows stronger as the years go by. The second factor that makes work so fulfilling is autonomy; the freedom to make decisions. They don’t impose any limits, so long as we produce quality. This gives us an opportunity to stand out not only for the food but for the dining experience as a whole.”

This year’s event kicked off with the participation of Kiko Moya (of two-Michelin-starred restaurant, L’Escaleta) and Laura Larrubia (Commercial Director of Almazara Terraverne). This year also sees the launch of La Oficina – Gallegos’ research and development laboratory, which will be centred on aquaponics. The lab fuses tradition and innovation, aiming to keep sustainability at the forefront of the hospitality and agro-food industries.

SO MUCH TO SOMONTANO

Virtually equidistant between the French and Basque Coasts to the Northwest and the shores of the Mediterranean to the East, lies the wine region of Somontano. Situated in the Aragonese province of Huesca, in the foothills of the Pyrenees, a 450 km long mountain range that separates the Iberian Peninsula from the rest of Europe. Its name derives from a Latin root, literally meaning ‘beneath the mountain’.

One of the smaller regions of Spanish wines, its Denominación de Origen Protegida (DOP), which was granted in 1984, includes just 43 municipalities where 31 wineries make a wide variety of red wine from eight authorised varieties including Cabernet Sauvignon, Merlot, and Tempranillo.

Wine cultivation is in the blood of the locals who farm the four thousand hectares of vineyards that comprise Somontano. The local soil is dark sandy-clay, rich in lime and alluvial matter. Records show that grape cultivation

was first recorded in the 2nd century BC and assisted by Romans, who settled locally and introduced the local Celts to their more advanced techniques.

Wine production is centered on the town of Barbastro that sits at the confluence of two rivers, the Cinca and the Vero. Barbastro is home to a powerful force in the origins of the DOP and one of the most historic vineyards in the region, Bodega Pirineos (the Spanish name for the mountain range).

Created in 1993, Bodega Pirineos has deep roots in the local economy and provides essential social support in Somontano. A pioneer in the

fusion of both indigenous and international grape varieties, the Bodega takes its supply of grapes from the local cooperatives comprising more than 200 growers. Their philosophy is based on values including respect for the past, tradition, commitment to the future, and constant innovation.

The wines of Bodega Pirineos are raised in a region noted for its Atlantic-induced microclimate, with a wide variety of day and nighttime temperatures, and equally diverse weather conditions between summer and winter. Their produce is that of dependable wines with great balance. ›

» 3404 TUCA D’ANETO

CRIANZA (circa €9,50): A fusion of Cabernet Sauvignon, Merlot, and the native Moristel grape. It has an aromatic intensity born from its natural environment but it offers a fresh take on the typical wines of Somontano. A modest level of production ensures that this wine really delivers, even for the most demanding of palates. 3404 is the height

in metres of Pico Aneto, the highest peak in the Pyrenees Steeped in wonderful deepred tones this fresh and fruity wine is full of intense flavours of ripe apricots, chocolate, oak wood, and spice. Its palate is both mature and stimulating. It goes well with meat stews and casseroles.

citrus fruits, and coffee. It is full of flavour, smooth and very round. A perfect accompaniment to roast lamb and cured cheeses.

RESERVA (circa €11,50): This Tinto Reserva is produced from Cabernet-Sauvignon, Merlot, and Moristel grape varieties that are grown on the slopes of the Sierra de la Candelera and a small mountain called Lazán named after the First Marquis of Lazán, whose sons became national heroes during the Peninsular War against France. This was the first Reserva of the DOP Somontano.

The wine is matured in American and French oak barrels for 14 months and then bottled and stored for a further 24 months until well rounded. Brickred with a nose of relative complexity and aromatic diversity featuring flavours of bergamot oil, white pepper, cayenne, cloves, blackcurrent,

» MARBORÉ CUVÉE (circa €20,30): Named after one of the Pyrenees most beautiful peaks, this ruby red wine, the colour of mature cherries, thrills the tastebuds with the essences of blackcurrent jam, ripe apricots, and spice.

It comprises Tempranillo, Cabernet-Sauvignon, Merlot, Moristel, and Parraleta grapes from 50 hectares of selected vineyards that are between 15 and 50 years old and is produced by each grape variety being harvested and processed separately, following carefully timed harvesting. Each receives a short macerations of no more than seven days. The wine is then aged in French oak barrels for 16 months before being bottled. The result is a delicious aromatic diversity, soft and creamy on the palate.

2017, 2019 and 2020 are deemed to be excellent vintages. It’s a perfect pairing with game or red meats, especially lamb. e
