wanted to write and congratulate you on the first edition of Essex Central which I have read with interest recently! I think it’s a great idea to showcase local businesses and events in order to make people aware of what is on their doorstep and encourage them to get to know their environment better. On the strength of your recommended Top 5 local Beer Gardens, I went, yesterday, with three friends to The Woodman just outside Ongar for lunch. The pub has a lot of character and the staff were pleasant and helpful. I enjoyed one of their ‘Specials’ which was a delicious dressed crab salad! I recommend the pub and would certainly return on another occasion. I must admit I was hoping to find a ‘What’s On’ page advertising local events. WOODLAND DAY SHOWCASES LOCAL GROUPS On Saturday 17th August GreenAcres Woodland Burials in Epping hosted their third annual Working Woodland Day. The free family event attracted over a thousand people and showcased over thirty local groups and organisations, including; Harlow Badger Group, Epping Forest Conservation Volunteers, Essex Amphibian & Reptile Group and West Essex Ramblers. Popular activities included archery, den building, horse and carriage rides, and the opportunity to stroke an owl! Demonstrations by a traditional blacksmith, and chainsaw carving, where felled trees were turned into beautiful pieces of art also drew crowds. The event, which aimed to educate people about how the woodland

Marc Linch said, “The first week was a roller coaster. The brilliant weather coupled with the school holidays meant we attracted a really large crowd from day one. We have created a tranquil garden area at the back of the café and that’s proved really useful during the hottest days. ENJOY GUILT FREE CAKE WITH NEW CHARITY APPEAL

People in Essex are being encouraged to raise funds to support disabled people in their local community – by eating cake. It’s all part of disability charity Papworth Trust’s new fundraising appeal, Care for Cake. The Trust is looking for cake lovers to host or take part in their own cake themed fundraising event during National Cake Week (7-13 October 2013). All proceeds raised through Care for Cake will help Papworth Trust to offer essential care and support to disabled people in the local community. For example, youth clubs for disabled young people to make new friends and have fun, and learning and leisure centres that support disabled people to learn important life and work skills. “All proceeds you raise will go towards supporting our services, which provide essential care and support to older and disabled people. It’s a guilt free way to indulge in eating cake! By fundraising for Papworth Trust you will be helping us to care for more people in your local community,” said Fundraising Manager Annette Angell. Haven House patron and local actress, Vicki Michelle, is launching Haven House’s inaugural Make a Will Week (7-11th October) encouraging local residents to consider Haven House when writing their Will. During the week, a number of local solicitors have generously agreed to give up their time and provide a free standard Will-writing and updating service in support of Haven House. This is on the understanding that a donation is made to the hospice and that local residents might consider leaving a gift to the hospice in their will. Vicki, a long-term supporter of the charity, said of her support: “I think this plan is a great idea. 1NE CHANGING LOCAL LIVES

Giving a helping hand to the community for over 25 years

1NE

based at Woodford Broadway, is a charity that has been running for over 25 years. They focus on changing the lives of people who have fallen into dependency on drink and/or drugs and gives them new hope and direction in getting their lives back on track. They do this life saving work through their award winning ‘abstinence based treatment’ which has a huge 70% success rate. We caught up with managers Fiona Dunwoodie & Jo Blackledge who explained more… Fiona “I originally got involved back in 1987, as my mother was running the organisation. As time went on we (Jo & I) became more hands on with the management side of the charity, and took over complete control in 2005 when my mum retired”. Jo continues “We run 3 main services here, the free ‘NE Teen’ side which helps youngsters come through their problems with onsite counselling. Our ‘day programme’, which runs Monday to Friday 9am until 4:30pm, consists of group therapy based on abstinence, education and support. Finally, since 1992 we have also been

running a ‘Relatives Service’, which is another free service for families and friends of addicts. This can greatly improve the recovery of an addict when you also help to educate and support their family”. It’s clear from the short time spent with Fiona & Jo that they are incredibly dedicated to help save the lives of so many local people, who through one way or another have found themselves asking for help. One of their recent participants explained how 1NE has helped to change their lives, saying, “1NE has opened my eyes, to how ill I was, how much time and effort recovery takes, but more importantly 1 NE has given me myself back. I will be eternally grateful for the opportunity 1NE has given me to begin to recover from a potentially lethal disease in a robust and meaningful way and equip me with the tools I need to be safe and well for as long as possible. Thank You” Finally, I ask what the future holds for 1NE… “In truth, we really need funding and support, or the future is not good. We try to do as much fundraising as possible but we do need help.”

or over 15 years Donna & Debra have run Venus flowers in Theydon Bois. They stock flowers for every occasion and have built up an enviable reputation amongst other florists in surrounding areas. The small seating area outside the front serves as a little community area where the ladies will sit and have a good old chat with the locals whilst the passing traffic comes and goes. Donna explains a little about their business, “we deliver for free in the local area, but we have seen some changes in the past few years as more businesses do their trade online. his local bakery founded over 100 years ago is steeped in history. The original Shepherds bakery company were recently looking to sell this last remaining outlet, as they now concentrate solely on production and distribution. The site would have been lost forever, were it not for one customer, a local milkman called Mick, who felt that he couldn’t let the shop and its staff go the way of so many other traditional businesses. Mick said, “It was a shock when I got the chance to own the place, I came here every day and now I was going to be in charge. I really didn’t want to see the place go under and become another fast food shop, which was the plan.” Since taking over Mick has worked with his dedicated team to implement several much needed changes. The interior has recently had a make-over, and a new shop front will soon be installed. As well as their baked goods, sandwiches and breakfasts, Shepherds now serve a delicious ‘real East End’ pie, mash & liquor from Thursday to Saturday. Their great food, friendly service and very reasonable prices (especially when compared to other eateries in the area) has earned them a steady lunch time trade. Personal Trainer Danny Cohen uncovers 12 common training myths that could be stopping you from reaching your goals

MYTH Sit ups and crunches will get you Abs. TRUTH In part, but it is more effective to do core exercise like the plank and exercises that require the core to work harder, targeting a larger number of abdominal muscles!

MYTH Cardio is the only way to burn fat. TRUTH Heat burns calories not exercise. Doing weights will keep the muscles burning longer way after your workout is finished, look at it like the more muscle fibres worked, the more calories burned.

MYTH You MUST stretch before working out. TRUTH While it won’t hurt, studies show that your neuromuscular system can be benefitted more by doing a good warm up instead, improving blood flow, lubricating the body preventing injury. So leave the static stretching for the end of your workout.

MYTH Women who lift weights will bulk up. TRUTH Women who use weights will generally tone up quicker and burn body fat faster than those who don’t. Using weights can be used to bulk up if that’s the goal, but will take a lot of heavy weight, a long time and the correct diet in order to do so. In conclusion, weights for women is a must in my opinion!

MYTH Starting exercising when your older can be harmful or dangerous. TRUTH Light exercise has many benefits for all ages. As with anything, start gradually then work to challenge yourself when you’re ready. Exercise has proven benefits for muscles, bones and the cardio vascular system, so get a good tailor made program from your trainer and enjoy it!

MYTH Drinking lots of water is a necessity. TRUTH Drink only enough water for clear urine. If you’re not thirsty, don’t force it. We also get a lot of water from our food which people are unaware of! Although water has many benefits, too much of a good thing can become a bad thing too!

MYTH No pain no gain. TRUTH You need to know the difference between a dull ache or tightness, and a sharp shooting pain. Avoid all pain that feels like it shouldn’t be there. Sharp shooting pain is usually bad, rest, move to a different exercise or stop full stop.

MYTH You have to train for long periods to burn body fat. TRUTH Your body will use fat as energy as soon as you start training, yes it will burn better the longer you go for but it also will require a steady pace. If you can’t do the recommended 30 minutes a day for adults, then a shorter more intense workout is better than none at all!

MYTH You only get an efficient workout from a gym. TRUTH I train some people only using their body weight and they will tell you it can be just as hard. Just change up the things you do, add bands, and or a chair for equipment, but overall adding tempo’s and multidirectional movements can change your workout dramatically!

It is better to eat smaller meals more often, which will keep your metabolism fired up, give you energy, and keep you feeling fuller

MYTH “I want to burn body fat in one area” so I can train only that part to do so TRUTH Unfortunately you can’t spot place reduce any specific area. In order to reduce body fat in one area, it has to be lost all over! So there is no quick fix, it really is calories in vs. calories out otherwise known as Thermodynamics. In plain simple terms, if you eat more calories than you expel then you will put on weight.

MYTH You need to train every day to see results TRUTH Training every day will eventually burn you out, lower your immune system and could make you catabolic (you will lose muscle instead of build it). Swim instructor, Jez Godlonton explains why swimming could be the sport for you.

wimming is excellent for many health and fitness goals from competing in local and national swimming and triathlon events to using as a warm down after a cardio or resistance workout. Regular swimming builds endurance, muscle strength and toning and cardiovascular fitness. The health benefits of swimming can be continued for a lifetime, although not everyone has the ability to be able to swim naturally and feel comfortable within the water. If you were fortunate enough to be taught from a very early age, you probably will find that getting into a pool and going for a swim is not such a big deal. However, if you lack confidence while swimming, then taking lessons at any age will help you learn techniques so swimming can be no different than going for a run or bike ride. When I first started many years ago I could barely swim a length and had fears of deep water. After training with a swim coach I soon learnt to relax and find rhythm in my stroke and now have no issues with jumping in a freezing cold lake for a 4km open water swim. There are 4 main strokes in swimming: Front crawl, Breaststroke, Backstroke and Butterfly. If your goal is to just swim lengths at an easy pace or as part of a

warm down then breaststroke would be a preferable stroke. But if you would like to enhance and push your cardio fitness and build good endurance using swimming then front crawl would be the most beneficial stroke for this exercise. Losing weight swimming is also possible but will depend what level you can swim at. If you can swim 1 mile in 30 minutes then you can burn up to 900 calories if you swim nonstop for 1 hour. However not everyone can swim at that pace so for those people another form of gym or outdoor exercise would be suited if you’re on a weight loss programme. Also as you are supported in the water the whole time, then swimming does not offer great bone density benefits, but that’s about the only thing that’s missing from swimming. With my experience over the years I have witnessed many different types of swimmers. From young children just cruising up and down in the pool like it’s just a game of football, to some of the fittest people in the gym that get in the pool and just about manage one length without being totally out of breath. So if you’re not a natural swimmer you have to bear in mind that swimming is not like running or getting on a bike, its about 70 to 90% technique with a bit of fitness thrown in for good measure. WHAT YOU NEED ★ 2 colours of nail varnish, you can

choose 2 bold colours that clash or 2 colours that complement each other. A sponge Topcoat Tin foil – small section

1. Make sure you have everything you need and that you are comfortable. 2. Cut off a small section of the sponge. You can use an ordinary kitchen sponge or a make-up sponge. 3. Using your lightest colour apply a coat to the whole of the nail and allow it to dry. 4. Apply your second coat of the same colour

and allow to dry completely. 5. Put a dab of your darker colour varnish onto some tin foil. 6. Dab your little cut out section of sponge into the varnish on the foil. 7. Dab onto the nail, starting from the top of the nail and work your way down to the centre, allow it to dry. 8. Repeat step 7 but this time don’t go all the way down to the centre, stay at the top to create the effect of the colour being darker at the top. 9. Once you are happy that the blend looks even, let it dry and then apply a layer of your topcoat to create a shiny finish. And there you have it, your very own ombre manicure!

A seasonal guide to help you get the most out of your garden.

’m pleased to introduce my new gardening column to the magazine. I’ve been a passionate gardener since I was five years old and devote lots of my spare time to different gardening preservation projects. I’m a volunteer gardener at Copped hall and love introducing new ideas during open days to help inspire younger growers; after all they are our future gardeners. The autumn season is on its way! The darker cooler autumn evenings are now drawing near and plants no longer need to be watered as much as they did before. While the plants in your garden take a rest there

are plenty more things for you to be getting on with.

PLANTING BULBS September is the best time to plant your spring bulbs, such as Daffodils, Tulips and Grape Hyacinths. Bulbs grow better when the soil is prepared well, which can take some time, but is well worth the effort. They are best planted in a sunny location but some, such as the woodland varieties, will thrive in more shady spots within your garden too. As most bulbs require a certain amount of sunlight per day, select an area in your garden that is not in the complete shade. Remove any perennial

weeds and fold in a little peat moss, compost and bone meal to the soil, to improve drainage and add nutrients. They can also be planted in pots and containers. For this, drainage is important and can be achieved by mixing coarse sand into your peat compost. Dig holes two to three times as deep as the bulbs are wide and plant with the pointed side up. Come spring you will have a colourful flower display to enjoy. Look out for Webworms and Caterpillars growing within your ornamental trees. They emerge from web-like egg sacs to feed on the foliage. Use a couple simple steps to get rid of them organically. Wear gloves to remove the webworm formations as soon as you see them appear. You can use a broom or rake to lightly brush them away too. Try to remove as many of the nests as possible to disrupt their life cycle.

WILDLIFE WATCH

Look out for Goldfinches during these months; they have plenty of charm and beauty. They are strikingly colourful with a mixture of red, white and black on the head, golden brown body and bright yellow wing bars. If you have a bird feeder try to include plenty of sunflower heart seeds as these are among some of the goldfinches favourites. ESSEX CENTRAL

The Black Lion regularly showcases some of the best live music acts from in and around Essex. Steve and the team have a superb converted barn at the rear of the pub, known as The Black Room, which plays host to some fantastic live tribute bands most Saturday nights throughout the year. Warm up over Winter with this hearty fish dish

FISH PIE WITH SMOKED HADDOCK, COD & KING PRAWNS

Head chef Marcin Furmanski, from King William IV in Chigwell, shows us how to make this classic dish with a twist. METHOD 1. Preheat oven to 180°C. 2. Peel 200g of potatoes, cut into chunks and boil until soft. Drain and mash with 15g butter and a spoonful of milk. Add 25g of Applewood Cheddar, then season with a pinch of salt and white pepper. 3. Heat 125ml milk in a large pan; add 75g smoked haddock, 75g cod and a bay leaf. Place half an onion into the pan. Bring the milk up to the boil. Reduce the heat and simmer gently for 6 minutes. 4. Meanwhile, finely chop the remaining half

onion, 1 small leek & 5g garlic. Heat 15g butter with 1 tbsp olive oil in a small frying pan and gently fry the onion and the leeks for 4-5 minutes until soft, but not brown. 5. Remove the fish from the pan, and set aside to cool slightly. Keep the milk in the pan. 6. Add 1 tbsp flour to the leeks and stir well to combine. Fry for one minute, stirring frequently. Gradually spoon in the milk from poaching the fish, stirring well each time. Add all the milk in this way, and heat gently until the

sauce has thickened. 7. Taste the sauce for seasoning, and add more salt or pepper if necessary. 8. Break the fish into chunks then fold into the sauce. 9. Add 40g raw king prawns and 15g frozen peas to the mixture. 10. Spoon the fish mixture into the bottom of an ovenproof dish. Sprinkle fresh chopped parsley and grated lemon zest over the top. 11. Carefully top with the cooled mashed potato and place in the oven for 12-16 minutes, or until goldenbrown and bubbling.

This classic fish pie recipe, with its rich texture and subtly combined flavours, calls for a wine that will envelop and lift, but without asserting too aromatic a personality. Acidity is essential to provide the lift, whilst a full ripeness will complement the flavours. Jean-Paul Brun is a grower in the Beaujolais region and distains the use of the modern techniques which mask the unique terroirs of this beautiful area. A superb white wine is his Beaujolais Blanc, from the Chardonnay vines which grow on his limestone slopes. Raised in stainless steel without any oak contact, it is a perfect foil to our dish. The polar opposite of the heavy, oaky, headache-inducing Aussie Chardonnay. This is at once beguiling and familiar, pale in colour with hints of butter, white flowers and citrus on the nose. It has just enough round, ripe fruit in the middle palate to give weight to the clean, crisp minerality which is always the hallmark of this wine. F

irstly, big thanks for your letters and emails… but where were you when I needed a babysitter at 3am?? So, to pick up from where we left off… little man had arrived and after a visit from the family we drove home the following evening. Now, I normally drive at a speed to make Hamilton wince, people have been known to take a ride with me instead of spending money on a facelift, yet something magical had happened. I drove slow… not just slow, but fist shaking as ‘maniacs’ hurtled past me at 58mph on the motorway. Yes, I crept down the slow lane at 43mph the whole way home and didn’t realise I hadn’t actually taken a breath until we pulled up outside our house and my lungs burst into life. We were so happy that our smiles were starting to make our faces ache, luckily our son would relax those aching muscles over the coming weeks with his night time screaming, but for now… we’re beaming. We laid him down in front of us, a big wrinkly body and head, with little arms and legs coming off from it, like someone had blu-tacked some limbs to a testicle. The first night we hardly slept because of: the excitement, the fear, but mainly the noise. He was waking up like a cheerleader, around 2-4-6-8… although we did not appreciate. This is easily the biggest life change for new parents - the complete lack of sleep. Your convinced every sound they make is a painful gasp for air, or a choke, so you leap over to the Moses basket,

just to find them staring back bemused. The second you do actually fall asleep they yell at the top of their little (but annoyingly powerful) lungs. I’ve lost count of the times I try to change him into a new baby grow whilst I’m still half asleep, only to frantically yell at the Mrs “Good lord, he’s got 3 arms and 1 leg!?” before realising I’ve buttoned him up wrong, yet again. I’m proud to report he has also quickly mastered the art of bladder control, and can successfully ‘hold on’ until the

Shortly afterwards our baby took up the crying like a successful relay baton change, and I went to the Moses basket by the side of our bed.’ Feed or nappy change?’ is often the question. You hope for the former but it’s generally the

He genuinely looked as surprised as me, when finally the fourth appeared, I kid you not! It’s a foul anecdote and I apologise unreservedly for sharing it, but I feel new dads need to be clued up on these events, as they can (and do) happen. All the excitement seemed to wear him out, and eventually he fell back to sleep. Like a very poor, amateur mime artist I slowly tip-toed away from him, breath held and buttocks clenched, fearing that a creaking floorboard or escaping noise could mean another 3 hours of crying, feeding and salmon catching. All told, I feel we’re getting the hang of this now, he’s 10 weeks old & doing great on the health charts, he’s giggling and always happy… hang on, hold everything…what are those two white shiny things growing out of his bottom gum?? … Oh no… TEETH! ...TO BE CONTINUED

ounded in 1865, Epping Cricket Club enjoys a rich history and currently has 3 teams playing in the Shepherd Neame Essex League and has done since 1994. Although the club was established in 1865, there has been cricket in Epping for much longer. The first reported match played by an Epping team dates back to 1768. There was also an ‘Epping Cricket Club’ playing on a pitch on Epping Plain in 1850, with two outstanding under-arm fast bowlers, one who always played in a white top hat, and another who performed in a black “topper”! The present ground in Lower Bury Lane is leased from the Copped Hall Estate. The pavilion was officially opened on 7th May 1896 and is still used to this day, and, although it has had some alterations, remains essentially the same as when it was first built.
