STUDENTS COOK UP TASTY DISHES FOR YOUNG CHEF COMPETITION

Eighteen students at Roding Valley High School, Loughton, recently took part in the Rotary International Young Chef competition. Each had 90 minutes to prepare a main dish for two people. Technology technician Heidi Collings said: “We had a fantastic turnout and as always the food was amazing. Each student showed great skill in the dishes that they served.” This year the school’s judges were head of art Dave Tisdale, English teacher Shannon McEvoy Georgia Maginn and learning support assistant Grace Cutts. After sampling each of the dishes the judges decided on joint winners – Year 8 student Georgia Maginn, who cooked chicken and chorizo with chilli, feta and rice, and Year 10 student Miles Ahmed who prepared pan fried cod with stuffed peppers. MARRIOTT HOTEL SUPPORTS THE DREAM FACTORY

The Waltham Abbey Marriott Hotel has chosen The Dream Factory as their charity for the year and will be hosting in-house fund-raising events and supporting the charity with moneyraising ventures over the coming months. The Marriott chain has already offered to provide two night’s accommodation for a young girl and her family at the London Marriott in Park Lane, when The Dream Factory makes her dream come true to visit the Winter Wonderland attraction in Hyde Park before Christmas. Hotel general manager Ross Paton said: “The Dream Factory is a lovely

charity which does a tremendous amount for young people. We want to support it as much as possible.” The Dream Factory was founded by Epping mother Avril Mills after her son, Oliver, died from leukaemia at the age of nine. ‘Allo ‘Allo actress Vicki Michelle, who is a patron of The Dream Factory, said: “The involvement of the Marriott is wonderful news for The Dream Factory. Celebrating 40 years

his iconic Ilford venue will celebrate it‘s 40th anniversary in 2014, and looks forward to many more years of great entertainment. Over the years the theatre has played host to thousands of plays featuring many household names such as: Barbara Windsor, Danny La Rue and Downtown Abbey star Michelle Dockery. We caught up with managers Steve and Sally who told us more, “We really love working here, as it’s such a great venue. People can hire it out for various events and we have some really good ideas for next year. We are looking at a cinema screen inside the theatre showing some ‘Silver Screening films’ for the older audience, as well as baby friendly viewings and some film club classics amongst other things.” As a registered charity the theatre survives on public donations and also

raise funds through their ‘Theatre Club’ membership scheme which gives people discounts on shows throughout the year for just £10. They continued, “We want to increase our disabled access with further funding and donations, we already have some but we do need more and that’s where public donations and help become so important. We want to provide for all members of the local community for another 40 years!” The theatre will be showing the classic pantomime ‘Aladdin’ over the festive period, which will be a fantastic Christmas spectacle for the whole family, running from December 12th until mid-January. Why not pay them a visit and also become a member? It’s vitally important to preserve these local venues for future generations and it’s also a great, fun and affordable family day out.

his magical little shop on Ongar High Street dates back to the 1600’s. In the 1800’s the dwelling was transformed into a sweetshop and has been providing treats to young and old ever since. Carlos and his team have been running the show for the past five years and on my visit I ask about the shop’s name, “Well, Mr Grumpy is meant to be me” says Carlos chuckling with a big smile, “and the tea room is named after my daughter Tilly. We wanted to offer the locals something more than just sweets, and so now we do breakfast and lunch with cream teas, pie ‘n’ mash, as well as salt beef”. His team are very friendly and Carlos acknowledges their part “the five girls are great at making the customers feel at home” he says. Everything in the shop is original and it’s more of an experience than just a café. Ducking under the old wooden beams as you enter, you are greeted by the colourful jars of sweets and walls adorned with memorabilia from the shops past. t the age of 30 I found myself to be incredibly out of shape and about 4 stone over weight. I decided to do something about my health & fitness and take up running. I also gave up my bad habits of excessive smoking, and started to eat and drink correctly. My first run lasted about 30 seconds before collapsing. But with time and perseverance I pushed myself to such a level that I lost 4 stone and have now run 3 London Marathons and then took up the crazy sport of Triathlon. I now teach people to do the same and thanks to running I am able to see others have purpose about their health and fitness as I journey with them. Although running may take you outside your comfort zone at first, almost anyone can put on a pair of trainers and become a regular runner. You will probably need to start with walking, and build up your speed and distance gradually. Running is practical, cheap and easy. Running can be achieved almost anywhere and you don’t need a lot of expensive equipment (just a decent pair of trainers). Put a dab of your normal top coat onto some foil. Pick up your brush and dab your brush into the top coat. 5. Let your creativity lose by doing any design you like. You can do swirls, or you can do just the tip of the nail, or even polka dots! For dot designs you are best to use your dotting tool rather than the brush. 6. Let your nails dry and there you have it!

elcome to my winter gardening guide. A wide variety of plants can be grown during winter, and gardeners that take advantage of selecting the correct plants can create an amazing display. If you are new to gardening or are an experienced gardener the most important thing to remember is to choose

plants at this time of year accordingly. There are many flowers, berries, coloured stems and foliage to choose from. Transform small areas of your garden to help add colour and interest during winter months, as some days can be quite dull and dreary. Simply adding a fresh coat of paint to your fence or shed can make a big difference to your

Forking over not only helps prepare your soil for next year, it helps reduce pests by exposing them to hungry birds. f Rake and compost leaves that are free of diseases and insects. f Cut back and remove any diseased or infested foliage.

f Protect fragile plants by putting a 3-6 inch layer of mulch around them to help protect the roots. Container plants are especially susceptible to freezing, bubble wrap is an excellent insulating material to place around your pots and containers. Add some mulch on top of your pots to further insulate too. Do this before the first threat

Voles feed throughout the winter. They look to gnaw and feed on the bark of newly planted treeâ&#x20AC;&#x2122;s and shrubs. Protect them by using cylinders made from hardware cloth or a heavy plastic that surround the trunk. Make sure they are wide enough to allow for growth. Bury the bottom of the protective device below the soil surface to prevent voles from digging beneath it. You can cut out both ends of plastic milk cartons and fit them over smaller plants to help protect them too.

WILDLIFE WATCH

Robins eat berries, fruits, and seeds that they find naturally on trees, shrubs and vines in your garden. If you spot a robin in your garden and berries and fruits appear to be running low you can help feed them by putting out some cut up fresh fruit such as apple slices, raisins or blueberries. 7. Wrap chipolatas in streaky bacon and cook. Whilst potatoes are cooking, boil two saucepans of water and add Brussels and carrots. Cook adenté. 8. To make gravy, on the hob heat roasting tin with turkey juices; add flour and whisk, as juices thicken add the water from the cooked Brussels. Allow to simmer and then season to taste. 9. Put cooked vegetables into warm serving dish. Carve turkey and place on warm plate with cooked chipolatas. Surround with roast potatoes, parsnips and cooked stuffing balls. 10. Strain gravy through a sieve and put into gravy boat. Serve straight to the table. Don’t forget the Christmas crackers!

TIPS FOR A STRESS FREE CHRISTMAS DINNER

Make a list including cooking times and a reasonable timetable. Don’t leave food 2 shopping until the last minute. Order online if you do not have time to go out. Choose a starter 3 that can be made ahead and served cold to save time and cooking space. Use Christmas 4 Eve to prepare as much as you can. Peel vegetables, make stuffing and wrap sausages in bacon. Get your family 5 to help. Delegate jobs such as peeling spuds, setting the table and washing up.

METHOD 1. Heat 300ml of red wine and 300ml water in a saucepan. Add 1 cinnamon stick and 1tbsp of castor sugar. 2. Add peeled, whole conference pears and poach until soft in the simmering liquid (1 pear

CHRISTMAS PUDDING i

This recipe has been handed down through my mother’s Irish side of the family. I have very fond memories of my mum making it when I was little, and we all took a turn stirring the i mix for good luck. Enjoy! f e TTS T INTGRTEDTIENfru it

454g dried mixed 75g mixed peel

2 tbsp/30mls brandy 150g dark brown sugar Stork 75g margarine - I prefer 2 medium eggs crumbs 190g wholemeal bread

1 tbsp treacle 1 tsp mixed spice 1 tsp ground nutmeg 5

n 1 tsp ground cinnamo 150 ml Guinness am 2 tbsp Baileys Irish Cre x 110gms pro Plain flour to bind, ap

METHOD 1. Put the dried fruit and mixed peel in a bowl and pour the brandy and half the Guinness over it. Stir well. Cover with cling film and leave overnight (can also be used straightaway). 2. Lightly grease a 2 pint pudding bowl with margarine or butter. 3. If using a tin of treacle, remove the lid and place in a saucepan of warm water on a very low heat for a couple of minutes to ensure it is runny enough to pour and stir. 4. Cream the margarine and brown sugar together in a bowl until smooth. It helps if you have a handheld electric or freestanding mixer but it can be done just as well with a wooden spoon and some elbow grease, just like my Granny used to do.

5. Add the eggs one at a time, mixing well each time. 6. Add the mixed spice, nutmeg and cinnamon. Stir well. 7. Add the treacle, making sure it’s all mixed in. 8. Stir in the fruit and peel, then add the breadcrumbs and mix well. 9. Add the rest of the Guinness and the Baileys and stir. Don’t worry if the mixture looks too liquid at this stage just add the flour a bit at a time until you have a thick consistency that drops slowly off the spoon. 10. Place the mixture into the bowl, leaving about 2cms clear at the top. Grease the centre of a large piece of tinfoil and make a 1 inch fold in it, to allow the pudding to rise. Secure over the top of the bowl with string. 11. Place the bowl in a large saucepan and add enough water to come 3 quarters of the way up the side of the bowl. Place the lid on top and bring to a boil. Reduce the heat and simmer for 4½ hours, making sure to regularly top up the water. 12. Carefully remove the bowl from the saucepan, remove the foil and pierce pudding with a skewer. The skewer should come out clean, but if it doesn’t, replace the foil and put the bowl back in the saucepan for another 20-30 mins. 13. Let the pudding cool slightly, remove foil and turn out onto a plate. If keeping for a future date, cool completely before wrapping in greaseproof paper. 14. I see the task of an independent wine merchant as not to attempt to compete with the supermarkets on the narrow criteria of price, but to offer a carefully chosen selection of wines which are made by individuals who are striving to create the clearest possible expression of their unique vineyard site. Our suppliers are without exception small, artisan scale grower, passionate about what they do. My specialist region is the most traditional, I have worked in, and travelled around, the myriad wine producing regions of France for 30 years, and can say that I know at least some of it moderately well. The range of styles on offer is far richer than from the vast majority of countries. So I shall recommend only French wines.

CHAMPAGNE A stubborn obsession with brands is working categorically against the consumer here. It’s no longer the case that the greatest are made by the big ‘negociant-eleveurs’, for there are increasing numbers of grower-bottlers who are making Champagnes that can easily outrun many of the big names in both quality and originality. Veuve Fourny is a family run house that owns vineyards on the 1er Cru rated slopes of Vertus. Using organic techniques in the vineyard they craft a range of superbly elegant Champagnes. The Veuve Fourny Blanc de Blancs NV (£27.90) is the model of refinement and quiet complexity.

TALKING TURKEY Roast turkey provides a background against which a wide range of wines are comfortable. One of the best remains Pinot Noir, and none better than a red Burgundy. Paul Jacqueson’s wines are redolent of cherries and autumn fires and the soft landscape of Burgundy. His 2011 Rully 1er Cru Les Cloux is a treat at £21.20.

CRISP & REFRESHING Our consumption of the bright, zesty Sauvignon Blancs of New Zealand continues apace, but we shouldn’t forget where it all started. The 2012 vintage in the Loire was excellent, more subtle, intriguing and often complex than their Kiwi counterparts, they work better at our traditional Christmas table. 2012 Pouilly-Fumé ‘Les Cris’ (£16.85) from Alain Cailbourdin is transcendently lovely, combining a rich minerality with ripeness and drive.

Amazon have launched Kindle Direct Publishing, which enables independent authors to compete on a level playing field with traditional authors. This is also good for readers because they get lower prices, and access to more diverse content. Self-publishing continues to grow in popularity because of its success. Almost 100 authors have sold more than 50,000 copies of their books on Amazon.co.uk via Kindle

Direct Publishing, and 500 KDP Select books have reached the top 100 Kindle best seller lists globally. Essex resident, Tim Ellis, has become a bestselling author through self-publishing, he says, “I remember writing stories and poems as a teenager, but it was only in 2006 that I decided I was going to write my first novel. I tried to publish the books in the normal way by sending my manuscript to a number of literary agencies, but I just received the standard rejection letters.” It was only when the Kindle Direct Publishing platform launched in the UK that Tim decided to try publishing them independently. “I didn’t really have a clue to begin with. I learnt through experience; finding out what was working and what wasn’t and taking part in discussions on forums to find out more.” He experimented with his prices and put more books onsite and the more he put

up, the more they sold. “My sales were growing every month and at the end of 2011 I sold tens of thousands of copies in one month, and four books made the top 100. One even reached the top 10.” Now Tim has over 30 books available on Amazon Kindle, and the sales have enabled him to write full time. o, when I spoke to you last we had just found the start of a first tooth, he’s now 6 months old and stacked to the gills with 8 of the devilish porcelain gnashers (and has a thicker beard than me!). This is making things tricky for him and us, of course the little lad is in quite some pain but thankfully he allows us to share this with him by chomping through our fingers each time we apply a numbing gel to his gums. My fingers have become so battered that I’ve had to cancel my piano lessons and purchased a shoe rack of Velcro footwear. The new teeth mean he’s also starting to dribble, a lot, so much so that I’ve taken to holding him over the plants once a week (and they’re coming up a treat!). He now sleeps in his own room and we’re starting to get into a bit of a bedtime routine. The plan is always bath, bottle then put him to sleep in the cot, but very rarely does this happen so smoothly. First up, bath time – where we get more drenched than him. Watching his arms pounding up and down on the water whilst we’re close enough to catch him if he falls back, just results in gargles of laughter from him and us looking like we’ve spent a week in a monsoon. Next up it’s a quick towel dry off then ‘talcum powder’ time, we’ve had a couple of classic ‘powder bum blasts’ but luckily we’ve been at the other end! Then comes the final feed, this can often be a tricky one if the teeth are playing up but once those eyelids start to droop

you can let out a little ‘whoop’. As I start climbing the stairs with him draped across my arms, snoozing loudly and farting gently, it would seem he would not wake up for hours. Of course this isn’t the case, because as soon as you lower him down and the first limb touches the mattress his body decides to spasm like a greased eel at a 70’s roller disco. Trying to hold a screaming baby as they backflip and wail in your arms should be an Olympic sport on prime time TV.

his body decides to spasm like a greased eel at a 70’s roller disc o We are now looking forward to his first Christmas and aside from the Gillette Mach 3 and shaving foam, we are thinking of getting him some hiking boots as the little fella is crawling at speed, standing unaided and climbing the stairs. Hopefully when we speak next he won’t be running and writing, otherwise the next diary might be from him! The crawling and standing actually happened on the same day, we watched, smiling, as he coordinated his legs and arms to get across the floor like a drunk after closing time making their way home, but then upon reaching the TV cabinet he didn’t stop, instead he climbed up and stabled himself, we almost expected him to turn round, start clicking his fingers and swagger across the floor swinging a cane

like Fred Astaire! In the last month we have started the weaning process so his auntie bought him a ‘food dummy’ type contraption whereby you fill a small net with soft fruit or veg then screw this onto a handle for him to hold, he then bites on the ‘dummy’ and the food comes out through the net, all very simple we thought. After filling the net we handed it over and the sparks began to fly as he launched at it wide mouthed and teeth gleaming. He gobbled the food with such ferocity I genuinely feared he may eat his own hands if we didn’t stop him in time. Suffice to say he loved it, so much so that on a recent visit to the zoo he started to get quite jealous when he saw the monkeys being fed. He now loves to do his best sword swallower impression with a whole banana, but currently turns his back on my option of kebab, although I’m sure the little lad will see the light shortly. Aside from bananas he is also having a fruity porridge for breakfast and I have found myself doing the classic aeroplane sounds and motion. I’m not sure if he appreciates the time it takes me to go through my routine about the aeroplane exits and seatbelts, but you can’t put a price on safety. Well that’s all for now, we’re off to watch MTV so the little man can learn to breakdance. I wish you all a stress free Christmas (especially the parents out there!) and look forward to seeing you next year. ...TO BE CONTINUED

AFC LEXUS THE MIGHTY LEMONS! AFC

Lexus are a Sunday League football team from Woodford. Their home ground is Low Hall Farm and they currently compete in the Essex Sunday Football Combination league. It all began seven years ago outside the Horse and Well pub, a conversation between 4 men: Kevin Jameson, Vincent D’Abbro, Daniel French & Andy Pearce, resulted in them putting a pub football team together, but as the name Horse & Well was already being used by another team, they went for AFC Lexus (as the Lexus garage was next door!). Kevin was the first manager of the club, Dan was the first Captain, John Kelly was the Chairman, he paid for kits and pitches for the season. Current manager Gary Simm began as a fan, watching his mates play, then after the first season became secretary, six seasons later he became manager as Kevin passed him the reins! Gary recalls some memorable games, “We got to a cup final in our first season, but lost 5-1 to Plaistow, excellent football team and a good set of lads. Memorable victories I would say were beating Collier Row 4-3 in a cup game about 4 years ago, the best game I have witnessed so far, and the cup final vs. Eva Hart, was a great day as we won our first

ever trophy two years ago. I’d like to see Lexus go on & reach 10 years as a Sunday football team, which would be an achievement in my eyes, as you see so many teams fold season after season”. The squad enjoy a rich bond which has strengthened in the close season with an intake of new players, from the current squad, only 4 players have played every single season for Lexus, that’s Vincent D’Abbro, Tony Simm, Chris Leckie & Warren Williams. Up front the mighty Lemons currently have the ‘double Dazza’ strike force with Darren Perry and Darren French knocking in the goals alongside Warren Williams. Flying down the wings are Tony and Phabian, whilst in the middle Ben, Leckie and Jamie (The Animal) do battle. At the back Vinny, Adam (The Ginger Prince) Jack, Jordon, and Simon aim to keep a clean sheet along with Adam (Gard Dog) Gard between the sticks, and sometimes the happiest man in the world, Ryan takes over the gloves! It’s a great team and the lads are often to be found at Red Mantra for some post match drinks every Sunday. We wish them every success and hope they can add to their silverware in this season’s league and cup challenges!
