While you clean up deep freezers for extra room and your tummy gears up for the serious job coming its way, we bring some delicious and unique recipes for you to try this Eid. Besides the conventional kaleji fry and mutton karahi you offer your family and guests, this eid try a variety of hearty dishes like mutton pulao and mutton qorma and mutton spinach curry. Masala Chops Bursting wonderful flavours, these mutton chops cooked in creamy sauce is a delicious appetizer, with a palatable taste and aromatic scent.
Ingredients
Mutton Chops -6 Red Chilli Powder - 1 Teaspoon Black Pepper Powder - 1 Teaspoon Cumin Powder - 1 Teaspoon Coriander Powder - 1 Teaspoon Garam Masala - 1 Teaspoon Salt To Taste Cumin Seeds - 1 Teaspoon Ginger Garlic Paste -1 Tablespoon Yogurt - 1 Cup Green Chillies - 2 Finely Chopped Lemon Juice - 1 Tablespoon Turmeric Powder - ½ Teaspoon Oil - 2 Tablespoon Oil2 - 3 Tablespoon Fried Onions - ½ Cup Aluminium Foils
Tender and succulent lamb chops marinated in various herbs and spices and grilled to perfection. This is the perfect dish to serve at a special occasion or at your next barbecue.
Ingredients
Rack of Lamb - 500 Grams Coriander Powder - 1 Teaspoon Garam Masala - 1 Teaspoon Red Chilli Powder - 1 Teaspoon Salt To Taste Lemon Juice 1 - 2 Tablespoon Vinegar 1- Tablespoon Ginger Paste - 1 Teaspoon Garlic Paste - 1 Teaspoon Oil 1 - 2 Tablespoon Papaya Paste - 1 Tablespoon Coriander Leaves - ¼ Bunch
Method • Take a rack of lamb, and thoroughly trim the fat until the rib bone is exposed, with a technique known as frenching. • In a bowl, add coriander powder, garam masala, red chilli powder, salt, lemon juice, vinegar, ginger paste, papaya paste, garlic paste, and oil. Mix well. • Stir in coriander leaves and mix well. • Apply this mixture onto the rack of lamb. Rub well all over it. • Grill each side of the lamb chop over a high flame for 3-4 minutes. • Enjoy!
Method • In a mixing bowl add mutton chops, red chilli powder, black pepper powder, cumin powder, coriander powder, garam masala, salt, cumin seeds, ginger-garlic paste, yogurt and mix well. • Then add green chillies, lemon juice, turmeric powder, oil and mix well until oil combines with the chops. Let it sit there for about 20 minutes. • In a large pot add the marinated chops with oil and give it a mix. • Add fried onions and mix well. Let it simmer for 15 to 20 minutes until the meat tenders. • Using the aluminium foil strips, wrap it around the edge of the chops.

This popular dish is found most commonly in North Indian, South Indian, Pakistani, and Turkish cuisine. A meat of choice is cooked with basmati or selarice to make a pulaf .
Shami Kebab is a popular dish from the Pakistani, Indian cuisine. It is a delicious and hearty kebab dish made from grinding the meat along with onion, garlic cloves and khara masala (all-spices). The dish can be served alongside daal chawal , pulao or can be eaten with daal roti , mint chutney .
Ingredients
Mutton Meat - 1 KG Water - 1 Liter Cardamom 4-5 Peppercorn - ½ Teaspoon Black Cardamom 1 – 2 Fennel Seeds - ½ Teaspoon Coriander Seeds - ½ Teaspoon Cumin Seeds - ½ Teaspoon Garlic Cloves 2 – 3 Mace Nutmeg Powder - ½ Teaspoon Salt to Taste For assembling
Oil 1 - 2 Tablespoons Rice - Half Boiled ½ Kg Fried - Onions 2 – 3
For gravy
Oil - 4–5 Tablespoons Onion, Sliced 1 – 2 Star Anise 1 – 2 Cloves - ½ Teaspoon Ginger Garlic Paste - 1 Teaspoon Lemon Juice - 1 Teaspoon Green Chillies - Chopped 1 – 2 Green Chillies - Small, Chopped 1 – 2 Garam Masala - 1 Teaspoon Ground Coriander - 1 Teaspoon Ground Cumin - 1 Teaspoon Water - ¼ Cup Salt To Taste
Method For stock • In a medium-sized pot, add mutton, water, cardamom, peppercorn, black cardamom, fennel seeds, coriander seeds, cumin seeds, garlic cloves, mace nutmeg powder, and salt. Stir. • Bring to a boil, cover the lid, and slow cook for 10 – 15 minutes until the meat is tender. Strain and save the cooked meat and stock for later use. For meat • Heat oil in a pot and sauté sliced onions until soft. • Add star anise cloves and fry until brown. • Add the cooked meat, ginger garlic paste, green chillies, lemon juice, chopped green chillies, small green chillies, garam masala, coriander powder, and cumin powder. Stir. • Add a little bit of water, salt if needed, and mix. Keep it aside. For assembling • In a large pot, add oil, a layer of rice, mutton stock, cooked meat, and fried onions, and repeat the layers. • Add green chillies, cover with a cloth, cover the lid, and simmer for 10 – 15 minutes.

Method • Add water, mutton qeema, cubed onions, garlic cloves, red whole chilli, whole spices, coriander seeds, and pre-soaked split chickpea lentil in a pot. Stir, cover, and cook until water has evaporated. • Grind the mixture along with chopped coriander, green chillies, salt, egg, and bread slices into a dough mixture. • Grease palm and make kebabs, forming a perfectly round shape. • Heat oil in a frying pan over medium heat and fry the kebabs until each side is light brown.
