Baituti by Sumaiya Kamani
Shahzil Walji, along with his Lebanese partners, Rehab, Wael and Rana brings Lebanese cuisine to his hometown, Karachi, through the newly set-up restaurant, Baituti. Endeavouring to offer authentic taste, the fine dining is importing raw material from Lebanon and has an indigenous Lebanese staff to design the interior and supervise the kitchen as well. We catch up with Walji to know all about the aspirations and enthusiasm behind setting up the eatery
What prompted you to venture into the Lebanese food business? Being a food enthusiast, especially for Lebanese cuisine, we couldn’t find anything similar to what we see in Middle-Eastern countries, which triggered us to set up Baituti in Karachi, in collaboration with our Lebanese partner. Our partners are experienced in FNB [food and beverage] business in Dubai, which pushed us to collaborate with them in order to deliver the same ambience and quality of food that you would find in Lebanon. What are the greatest challenges your restaurant faces? Our greatest challenges were to train our staff to follow the international standards in terms of food quality, hygiene and authenticity, as it isn’t easily available in the market. We consider our customers our valued guests so quality is our priority. Moreover, the Lebanese cuisine isn’t easily available in the market so finding JUNE 23-29 2019

villages of Lebanon, positions us very uniquely in the market. We can proudly say that we are an authentic Lebanese restaurant, as we only serve the original taste. How has the response been from customers? Being the only authentic Lebanese restaurant in Pakistan people are intrigued to visit the eatery and are eager to try the food that we have to offer. We are glad to see repeated visits from elated customers, who consider Baituti as their home.

Why did you have to bring a team specifically from Lebanon? Why not get local chefs trained here instead? Personally we feel that local chefs in Pakistan are not trained enough to operate the Lebanese cuisine. With our Lebanese partners comes the surety of pure and authentic taste, as they are here to supervise the operations first-hand.
How similar is Middle-Eastern food to Pakistani food? One similarity between Middle-East and Pakistan is that the peole are meat lovers therefore lots of meaty dishes are popular items on both the menus.
Do you personalise the dish according to the local taste? Not at all! We make sure that the dishes remain authentic. However, in order to satisfy the Pakistani taste buds, we are serving imported homemade chili paste.

the world and so selecting the dishes wasn’t a challenging aspect for us. In all our categories we made sure that we include the most recognised and familiar dishes of the Lebanese cuisine. One thing on Baituti’s menu everyone must try? Our menu consists of 56 items so it would be injustice to choose one, but the most adored item by our customers is our range of Fatayers. Do you plan on expanding your business to Lahore and Islamabad? Well, our vision is to introduce and familiarise the authentic Lebanese cuisine all around Pakistan.

Aneeqa Naz, a marketer by profession and an aerial yogi by passion who also runs an Instagram blog, ‘Hale & Healed’ (where she talks about everything close to her heart from yoga, healthy lifestyle to mental and physical health) tells us all about her lifefrom juggling work, blogging and practicing yoga, to her inspiration behind joining the fitness industry, things she can’t live without in her diet and so much more
How would you describe your fitness philosophy? Inner strength! I have always focused on building and healing myself from the inside out. I believe yoga is the only form of exercise that brings awareness to the mind and soul. It enlightens you with confidence, brings patience and discipline in your routine which for me is equally important as appearance and physical fitness. What inspired you to join the fitness industry? I started practicing yoga to take out some time for myself and take care of my health. It’s only after I started it, I realised I was missing out on so much. I started seeing results as my body transformed, it gave me strength, flexibility, mobility and my body was able to do things that I never imagined were possible. Not only that, it made me let go all of the insecurities and doubts I had about myself and helped me embrace all my flaws, internal and external. That for me was the biggest reason to join the yoga community and try to be able to help others the way it helped me. Why aerial yoga? Initially the idea of working out on a swing or hammock seemed interesting and fun, and it’s exactly that! I always
used to find working out difficult and boring but aerial yoga brought all the fun back into it. I am also a pilates fan and aerial yoga is a modern yoga practice which is a mix of yoga, pilates and barre- all three of my favourites in one! What’s your typical day like? Well, my day starts with breathing and just 10 to 15 minutes to myself. I set the intention and prepare my mind for the tasks that need to be done for the day. Three things in your diet you can’t go a day without? Water, fruits, eggs and a hot steaming cup of green tea and of course Nutella! What is the most effective exercise/yoga form according to you? I can’t pick one because there isn’t just one effective yoga form or posture; it has to be a mix of postures that focus on strength building, balance and flexibility in one’s routine. Aerial yoga routine itself works on the entire body using all your muscles in one workout!

What are some common fitness misconceptions/questions you are asked by your clients? The biggest misconception that people have is that aerial yoga is not for beginners. Anyone can join this practice as long as they are patient and willing to let go of their fears and insecurities. It’s a safe practice that really helps you gain strength, focus and increases your body’s ability to challenge itself. How is your fitness mantra different from others? I believe mental health is equally important as physical fitness. Without mental peace, relaxation and focus, all diets and exercises fail. My practice focuses on setting the intention, working on the inner strengths and weaknesses and bringing more awareness to the body and eliminating all negative thoughts. Which celebrity would you like to train and why? I would like to train anyone and everyone who is willing to let go and have some fun on the swing!

Tell us briefly about your journey and how you kick started your career? My journey as a hairdresser began while I was doing on screen work as a host/Vj/model. I was always more inclined towards the creative side and hair is something that always intrigued me. I completed courses in hair sculpture and that’s when I decided to switch my careeer and it was the best decision ever. Who is your biggest inspiration and why? Inspiration for me comes from many different places and people and to find that continuous inspiration is very important for one’s growth. I have come across a lot of talented and creative people who have inspired me in so many ways. And the idea is to keep going and learn from one another. What do you like the most about your job? Having the creative freedom to make your clients look and feel beautiful is the best feeling ever. What is the most challenging part about your job?
Running your own space can be a big task. Physically and financially it drains you but the challenge is to keep doing the hard work and stay focused. Define your signature style? Chic and elegant. What are the top hair trends/styles for 2019? The top hair trends for 2019 seem to be buzzing all around the magazines and the internet. You’ll see a lot of sleek and straight hair, you definitely need your hair straighteners and hairspray to achieve this chic look. Shorter lengths are very much around. Hair accessories seem to be making it back to the hair trends this season. What advice would you give to aspiring hair stylists? Be true to your work and stay focused. How do you unwind after a stressful day/ week? The park is very therapeutic. Enjoying the fresh air and nature really gives me peace and is a stress-free zone for me.
