Ingredients
5 pounds beef short ribs 1 large onion sliced in rings 3 garlic cloves 2 tablespoons vegetable oil 2 cups dry red wine 2 cups beef broth 3 tablespoons flour 2 bay leaves 1 sprig of thyme 1 teaspoon salt ½ teaspoon pepper 1 teaspoon garlic powder
Directions
In a large skillet preheat oil over medium high heat. Season short ribs with salt, garlic powder, and pepper. In a large zip lock bag add flour. Season with a little salt and pepper, dredge short ribs in season flour ensuring all sides are covered evenly.
Beef Short Ribs
Place short ribs into large skillet, brown on all sides. (You will need to do this in batches)
Sundays are for feasting, and by feasting I mean southern style beef! This easy recipe will quickly win over your family one short beef rib at a time.
Place short ribs into the bottom of slow cooker. Add onions, garlic cloves, bay leaves, thyme, beef broth, and wine. Cook on low for 7 hours. Serve with rice or mashed potatoes.

Spinach and Mushroom Stuffed Shells Go meatless this Monday with this delicious Italian inspired recipe. The pasta and filling is a major comforter and is exactly what makes this a winning meal every time.
Ingredients
1 box of jumbo pasta shells 2 tablespoons olive oil 2 teaspoons fresh garlic, minced 4 cups spinach leaves 1 cup mushrooms cleaned stemmed and sliced 12 oz whole milk ricotta cheese 2 cups mozzarella cheese ½ cup grated Parmesan reggiano cheese 1 large egg 2 tablespoons basil torn 1 teaspoon salt ½ teaspoon pepper 2 cups marinara sauce
Directtion
Preheat oven to 375 degrees. Cook pasta al dente. Drain and set aside. In a large skillet heat olive oil over medium high heat, add garlic and cook for 1 minute. Add mushrooms and sauté for 2 minutes. Add spinach and sauté for an addition 5 minutes. Remove from heat and let cool In a mixing bowl stir together spinach, mushrooms, 1 cup of mozzarella, Parmesan reggiano, egg, basil, pepper, and salt. Ladle 1 cup of marinara sauce into bottom of baking dish Stuff each pasta shell with spinach and mushroom mixture. Place in baking dish.

Continue until all shells are full. Pour remaining cup of marinara sauce on top of stuffed shells. Cover and bake for 20 minutes. Remove aluminum foil and sprinkle remaining mozzarella cheese and place back into oven for an additional 15 minutes.

(Cilantro Lime Rice) 1 cup long grain rice 2 cups chicken stock 2 tablespoons oil 1 lime, juiced ¼ cup cilantro (Burrito Bowls) 1 pound boneless skinless chicken breast 2 tablespoons vegetable oil 2 teaspoon adobo seasoning 1 packet Goya sazon seasoning 1 can black beans rinsed and drained 1 can corn, drained 2 cups shredded lettuce 1 cup roma tomatoes, diced 1 ½ cups Monterey jack cheese
Directions
In a medium pot bring chicken stock to a boil over high heat. Add oil and rice. Cover and reduce heat to simmer, cook for 20 minutes. Add lime juice and cilantro, mix together. In a large skillet add vegetable oil and heat over medium high heat. Season chicken with salt, pepper, adobo, and sazon. Add chicken breast and cook 5 minutes per side. When cool enough to handle, dice chicken. To assemble place rice at the bottom followed by the chicken, then beans, corn, cheese, lettuce, and tomato. Heat a large pot of water over high heat. Cook the fettuccine noodles. Drain and set aside. Season shrimp with salt and pepper. Over medium high heat add olive oil and butter the pot; when butter is melted add garlic and crushed red pepper. Cook for 1-2 minutes. Cook cherry tomatoes for 1-2 minutes, then add shrimp and let cook for 1 minute. Add wine, lemon juice, chopped parsley then the linguine Toss all ingredients together and serve.

Shredded Beef Shepherds Pie
Who remembers Grandma’s Shepard’s Pie? The tenderness of the shredded beef, those hearty potatoes; everything was just perfect. Just because it’s old fashion doesn’t mean it has to be complicated; my modern take on grandma’s recipe is sure to please your entire family.
Ingredients
1 ½ to 2 lbs of shredded beef from short ribs 6 ounces tomato paste 1 package of frozen mixed vegetables 1 teaspoons salt 1 teaspoon garlic powder ½ teaspoon pepper 4 russet potatoes, peeled and chopped ½ cup milk ¼ cup melted butter
Directions

When the potatoes are cooked through drain the water add milk, butter, salt and mash together until you get a creamy consistency. In a large baking dish pour in shredded beef mixture, top the beef mixture with mashed potatoes spreading evenly to cover beef mixture

2 pounds cod fillet ¼ teaspoon old bay 2 teaspoons salt 1 bottle of your favorite beer 2 cups flour 1 tablespoon baking powder 1 teaspoon salt 4 russet potatoes Vegetable oil for deep-frying

Preheat oven to 200 degrees. Peel and slice potatoes and place into cold water In a small bowl mix together flour, baking powder, old bay, salt, and pepper. Pour in beer slowly while whisking until batter is smooth. Refrigerate for 15 minutes.

Fish & Chips What’s a Friday without a little flavor? Here’s another one of my favorite recipes that has a spin on fast food. British inspired Fish & Chips is an all time classic that should easily bring your family together for a fun night over good food.
Preheat oil over medium high heat. Remove potatoes from water and dry. Place in hot oil and fry for 2 to 3 minutes, then remove. Let cool slightly and place potatoes in hot oil again for another 2 to 3 minutes. Drain on paper towel and immediately salt with 1 teaspoon of salt. Keep fries warm in the oven. Cut cod into pieces. Dip into beer batter and fry for 4 minutes until crispy and golden brown. Drain on paper towel and place in oven until the rest of the fish is cooked.

Chicken Fried Rice Avoid long take out waits or even delivery fees; you can easily make your order out foods at home. Chicken Fried Rice has always been consider an easy pleaser when you’re in a hurry, the same concept can be done at home in your very own kitchen.
Ingredients
3 cups cooked rice 1 boneless skinless chicken breast cut into ½ inch cubes 2 eggs, beaten 1 tablespoon sesame oil 2 teaspoons soy sauce 1 teaspoon oyster sauce ½ teaspoon pepper ½ small onion finely diced ¾ cup chopped vegetables in uniformed size 2 tablespoons scallions, chopped
Directions
Preheat large skillet or wok over medium heat, add sesame oil. Cook chicken breast for 4-5 minutes. Remove from skillet and set aside. Add onion and cook for about 2 minutes. Add veggies to skillet and fry until tender. Move vegetables to the side and pour in beaten eggs. Scramble the eggs. Once cooked mix with vegetables, add the rice. Pour in soy sauce and oyster sauce mix together. Add scallions and serve.
