NOVEMBER IS the month when

we take time to give thanks for all of our blessings, and we celebrate Thanksgiving Day to reflect on those blessings with family and friends. I remember back to my childhood Thanksgiving Day celebrations when spending time with family meant everything to me. We all helped with the food preparation, and the turkey was the focal point of that dinner. Special recipes were prepared to enhance the dinner, and my grandmother was always delighting us with a new dessert. I can almost smell those wonderful aromas coming from the kitchen and see the elegantly set table. These memories of family being together are the blessings I will always treasure. 4

In this issue, we interview Synergy Auto Wash founder and owner, Brian Davis, to discover the success behind his true passion to deliver 100% clean vehicles to his clients, 100% of the time. EK: Nearly three years after opening, how would you describe your experience thus far? Brian: It’s been an incredible journey. The overwhelming, positive response from our customers has exceeded even my most optimistic expectations. As with any new business, the inevitable learning curve pointed out a few areas where we needed to improve, but through the patience and understanding of our clients, we addressed and overcame those few challenges. We also continue to evaluate ways we can get even better in order to remain the best. EK: What would you say has been the biggest challenge you’ve encountered? Brian: I’d have to say perception. Most car owners don’t know there is an alternative, because that’s all they’ve ever known. I’m always afraid when I explain to someone that we hand wash, they think of us as a few guys hand washing their car and cleaning the interior all in one place, which is a slow process. We have a conveyor, arches to apply chemicals, and blowers to dry the vehicle just like all the other car washes in town. The difference is that we have employees in our tunnel that hand wash a customer’s vehicle while it is going down the conveyor opposed to automated machines like all the other car washes in town. E K : What has been your greatest disappointment? Brian: I’d say the frustration that comes from trying to understand why car owners are willing to pay the same price, and often more, for an inferior wash. EK: So you’re really convinced that a hand car wash is superior? Brian: There’s no doubt about it. All automated car washes have soft cloths that are going back and forth and spinning along your vehicle. When these cloths are wet, the dirt and grime from the dirty vehicles in front of yours sticks to this material. Just imagine the soft cloth reaching into a dirty truck bed, picking up dirt and debris, then running across the hood of your vehicle. At Synergy, we hand wash each vehicle just like some people wash their own vehicle in their driveway. Every few

seconds we clean the mitts to remove any dirt or grime from not only your vehicle, but the vehicles in front of yours. EK: How is Synergy different from other area hand washes? Brian: Assuming they take the same care in selecting and training their car care team and use the finest car care products, I’d say we both deliver a 100% clean car. The major difference is how we at Synergy have combined technology and superior customer care to create a level of efficiency and quality that sets us apart from the competition. What’s in a Title? SOMETIMES

T I T L E S and certifications are important to us, and sometimes they’re less important. When selecting a physician to treat our family, we like to see MD after the doctor’s name. I want to be sure that the pilot in control of the aircraft I’m about to depart on is certified for that particular piece of equipment. Sometimes in life we place a high value on titles and certifications. At other times, we ignore them. Perhaps we value those titles and certifications that appear to be the most important to our personal health and welfare. Let me tell you about a certification that should be important to you as it can have a significant impact on your family’s health and well-being. It’s called the ACAC, or the American Council for Accredited Certification. So why should this organization be important to you and your family? Living in East Tennessee has been a blessing for me, my husband, and our 10-month-old daughter. But as you no doubt already know yourself, our warm and humid summers and mild winters can also present their own challenges. These conditions represent the

perfect conditions for mold to flourish both inside and outside your home. Mold is the source of a variety of health conditions within our home for family members that often go undiagnosed or even misdiagnosed. Often confused for allergies or even asthma, mold and mold spores, which often go undetected and left untreated, can

noxville Children’s Theatre will present Sherlock Holmes and the Hound of The Baskervilles, a new adaptation for the stage of the classic mystery by Sir Arthur Conan Doyle. The play is being performed now through November 9, Thursdays and Fridays at 7 pm, Saturdays at 1 and 5 pm, and Sundays at 3 pm. KCT’s 62nd full-scale production features 14 young actors in the cast. Sherlock Holmes, the world’s greatest consulting detective, takes on his most puzzling mystery ever. The legend of a ghostly, diabolical hound, which roams the moors and stalks the Baskerville family, has been whispered about for years. But when Sir Charles Baskerville is found dead with enormous paw prints nearby, the case grabs the attention of Sherlock Holmes and Dr. John Watson. Can they solve the mystery of the phantom hound before another Baskerville falls victim to the legend? KCT is East Tennessee’s leading producer of stage plays for children. The Hound of The Baskervilles is the 62nd play to be produced by Knoxville Children’s Theatre. The company has produced 22

popular Cranberry Hollow, which was launched in Lenoir City in 2003 by husband and wife team, John and Sue Boling. It was their passion. They just loved their customers and considered them their extended family. So their decision to create a gathering place within Cranberry Hollow called the Buttercup Restaurant & Tea Room one year later was a welcomed decision that was featured in Southern Living magazine and earned them a nationwide award as retail store of the year. Unfortunately, the recession took its toll on both the retail store and restaurant, and along with too many other businesses, was forced to close in 2008. And tragically, John, a former Vietnam veteran, lost his ongoing battle with cancer several years later. But in true Boling fashion, my mother, Sue, and I reopened Cranberry Hollow in West Knoxville in late 2013, and this month we are celebrating our first anniversary in our new location. Since online donations are processed instantly, you may want to consider making last-minute donations by credit card. AVOID GIVING CASH : In order to deduct charitable gifts on your taxes, all donations must be substantiated by a receipt, cancelled check, or written acknowledgement by the charity. If you frequently give cash to organizations that solicit in front of supermarkets, malls, or local stores, you may be losing out on a major deduction. Consider supporting these organizations by writing a single check. DONATE APPRECIATED STOCK: Many investors have stocks and funds with major unrealized gains in taxable accounts. If you have owned stock (or other appreciated assets) for more than a year, you can donate that stock to charity and take a deduction equal to its fair market value while avoiding the capital gains tax you would incur by selling it. Consult your tax advisor. GIVE LOCALLY: One of the best ways that you can make an impact in your area is to donate to local organizations or community foundations. In Praise of Root Vegetables

AS THE LAST vestiges of summer and backyard gardens

fade away, those fresh, leafy, or fleshy vegetables seem to fade away with them. Of course Americans today can still have an abundance of these vitamin and mineral rich victuals due to modern transportation from warmer climates, but in olden days, the preservation of roots in root cellars or pickling or drying were used to get through the winter. Root vegetables such as carrots, parsnips, radishes, turnips, rutabaga, burdock, and lotus all provide an abundance of vitamins, minerals, and antioxidants. Moreover, the ratio of these antioxidants to less healthful elements found in the food is generally greater than in most other fare. The heavier cooking of fall and winter lends itself to make use of delicious stews, soups, and baked dishes made with root vegetables. While enjoying these, you can also rejoice in the knowledge that they are helping to alkalize your entire body, but especially the lower digestive tract. Traditionally our intestines have been compared to the roots of plants, where nourishment is taken up into the bloodstream and distributed throughout the body. The villi of the small intestine are comparable to the tiny hairs found on roots. Whole grains are known as a source of fiber, which helps to scrub the walls of the large intestine, but the outer portions of root vegetables can provide the same benefits while providing a higher ratio of antioxidants as well. Carrots, of course, provide beta-carotene, which is thought to provide protection against such wide ranging ailments as cancer and cataracts. Burdock, often growing wild in temperate climates, is known to help restore vitality for weakened conditions. One of the most useful of all root vegetables is a long white radish known as daikon, thought to be useful in helping to remove excess fats from the body. Fresh, it can be cooked into stews or soups. It can be served dried, marinated, or grated as a complement to offset the effects of other fatty foods. Lotus root is traditionally known as a beneficial vegetable for the lungs. Ginger is a marvelous vegetable that can be used to add a warming component to soups and stews. Root vegetables are loaded with vitamins and minerals, but they are normally most abundant in the peeling and outer portions of the vegetable, so resist peeling those carrots or parsnips. You can just remove any imperfections without peeling the whole root, so you will get the maximum benefit from one of the most healthful foods you can eat. Root Vegetable Recipes BY MICHELLE SAMPLES

Parsnip Rutabaga Soup 4 Tbsp olive oil 1 leek, sliced 1/2 cup chopped onion 2 cloves garlic, diced 4 parsnips, sliced 2 rutabaga, cubed 4 cups vegetable broth 2 cups rice milk 1 cup coconut milk 1 sprig fresh rosemary 2 tsp coriander 2 tsp sea salt 1/2 cup chopped parsley To pan add olive oil, leek, and onion. SautĂŠ for 8 min or until soft. Add parsnip, rutabaga, broth, and rosemary. Cover and simmer 20 min or until soft. Cool. Remove rosemary and blend vegetables until smooth. Return to pot and add rice milk, coconut milk, salt, and coriander. Simmer 3 min. Serve warm with parsley garnish. Note: If a thicker consistency is desired, then thicken with arrowroot, kuzu, or cornstarch.

Parsnip Au Gratin 4 Tbsp toasted sesame oil 4 parsnips, sliced diagonally 1/4 inch thick 1/2 cup flour (whole wheat pastry, corn meal, or gluten free flour) 4 Tbsp arrowroot or cornstarch in 1/2 cup water 1 cup onion, sliced 2 cups coconut milk 1 tsp sea salt 2 cups vegan cheese (or grated mochi may be substituted) 1 tsp black pepper Heat oil in pan. Dip parsnips in arrowroot and water and then in flour. Pan fry on both sides. Layer parsnips, onion, and cheese in casserole dish, alternating each. To bowl add coconut milk, salt, and pepper. Mix and pour on top of layers. Cover. Bake at 350 for 40 min or until soft.

Roasted Vegetables To baking dish add the following vegetables: 2 sweet potatoes, chunked 1 rutabaga, cubed 4 turnips, cubed 1 onion, sliced 2 cloves of garlic 2 carrots, sliced 3 Tbsp olive oil 2 tsp sea salt 1/4 cup water 1 sprig rosemary 1 tsp turmeric Place all vegetables in pan with olive oil, salt, and turmeric. Mix together with hands. Add water and rosemary and cover. Cook at 350 for 30 min covered and then remove cover. Toss and continue to bake for another 20 min or until browned. Toss and serve as side dish or in pita pockets.

The Mohs technique differs from other treatments, because the microscopic examination of the removed tissues occurs during, rather than after, the surgery. This allows the surgeon to remove all of the cancer cells while sparing as much normal tissue as possible. During a Mohs procedure, the surgeon removes one thin layer of tissue at a time; as each layer is removed, it is frozen, and the surgeon then studies the margins under a microscope to determine if all of the cancer cells have been removed. If the margins are not cancer-free, the Mohs surgeon removes another layer of tissue, and the process is repeated until the final tissue sample is clear of cancer. In this way, Mohs surgery eliminates the guesswork in skin cancer removal, producing the best results, both therapeutically and cosmetically. The Mohs technique allows for the removal of all cancer cells, while minimizing the effect on the surrounding healthy tissue. In addition, because Mohs surgery minimizes the risk of recurrence, it reduces and frequently eliminates the need for more serious surgeries. According to Dr. Paul Unkefer, the only Mohs surgeon in Blount County, being able to send a patient home with the knowledge that their cancer is completely removed is very gratifying. “I feel blessed to be able to tell the patient and their family members that the cancer cells are totally gone,” said Dr. Unkefer. “I enjoy seeing the relief on their faces when they leave my office knowing that they are cancer free!”

Just like people, not all dogs like the same food. There is no one food that is best for every dog. There are many well formulated dog foods, and it’s fine to try several to determine the right one for your dog. Start with the stage of your dog: puppy, adult, or geriatric. A puppy eating adult food won’t get the higher amount of calories, protein, vitamins, and minerals needed for growth. An adult dog eating puppy food will become overweight. A geriatric dog may need food that is easy to digest. One size does not fit all when discussing nutrition. Always read the ingredient list! By law, pet food labels must list ingredients by weight. Look for meat, fish, eggs, or some type of meat or fish meal as the first and second ingredients. Ingredients three and four should be vegetables or a whole grain source like brown rice. You do not want to see corn as a main ingredient. Corn is a cheap filler ingredient, non-nutritious, and a known allergenic. On the farm, we fatten little pigs on corn. Our dogs don’t need to be fattened. You often must feed a larger amount of low quality food to provide the same nutritional value as a smaller amount of premium food, so in the long run, lower quality food costs more. Decorating for the Holidays

VERY YEAR in early

January, Diane and I head down to Atlanta to our annual Christmas Market. This is the time when we shop already for the next season and clients who want us to decorate their home (or business) for the holidays. When a new client approaches us to help them with their seasonal decorating, we love to take a good look at what they have and then possibly add to it or develop a completely new color scheme and design for them. One great example of different color schemes that we developed can be seen this year on Jewelry Television. We are excited to be decorating their studios this year and adding to the sparkle and glamour of all their beautiful gemstones. Usually when decorating a tree or garland, the fullness and volume starts by fluffing the branches. We then add ribbons to the tree (usually a combination of two or more with a complementing color scheme). Our next step is to continue working outward out from the trunk of the tree. Adding oversized balls, as well as large floral sprays, helps to fill in the holes.

For sprays, we prefer poinsettias, as well as silver/gold glitter sprays. If you are planning on creating a more traditional tree, we prefer to add magnolia leaves and branches, as well as gold ornaments. Usually a tree design works best when focusing on three colors and when using different size balls within the color schemes. The finishing touch will be the tree topper, which can also add another foot or two to the overall height of the tree. Delivering Flowers and Special Moments During the Holidays S THE seasons change and

the holidays approach, many people dedicate their time and resources to those in need. For Random Acts of Flowers (RAF), the holiday season leads to the 6th annual Christmas Delivery initiative. Since the charity’s founding, dedicated volunteers have brought extra cheer to patients in area healthcare facilities during this time. In 2013, RAF delivered more than 600 poinsettias to patients in local healthcare facilities such as Parkwest Medical Center, Patricia Neal Rehabilitation Center, Fort Sanders Regional Medical Center, UT Medical Center, Tennova Physicians Regional Medical Center, Renaissance Terrace, Atria Senior Living, and Williamsburg Villas. Volunteers and staff gather on Christmas Eve and Christmas Day to deliver smiles and special joy for the holidays. Local nurseries, greenhouses, grocery stores, and garden centers contribute to the Christmas Deliveries. “It’s the one time of the year that the community really comes together to deliver cheer and comfort to others in the community,” said Lorraine Burns, Director of Mission Fulfillment. “It’s a great way to connect the poinsettia donors with patients in local healthcare facilities. You Did What? THIS IS a busy season for our company.

While I am busy homeschooling and shuttling children around town, my husband, John, and his crew are often pulling 12-hour days. Occasionally John arrives home earlier than expected due to unforeseen weather or a change in plans, but sometimes it’s simply because John has taught the homeowner how to clean an area themselves. November in the Garden WHAT AN interesting fall we

have had! September was the driest on record, and October started out with a very early frost (Oct 4th versus the normal Oct 17th) and quite a bit of rain. Rumor has it that we will have a colder and wetter winter than normal, but who really knows? While I can’t predict what the future will hold, I can tell you things that you can do in your yard this month. » You can continue to plant trees and shrubs right up until the ground freezes, and that is usually not until January or February. Some years it never freezes at all! You will get better results if you plant before the ground gets really cold, however. Plants don’t like to send roots out into cold soil. » Your annuals are probably mush by now, so pull them up and add them to the compost heap. There is still time to plant both pansies and violas. A flower bed or a couple of containers full of happy flower faces will make your day better when you come home.

» Since I mentioned containers, keep your house welcoming during fall and winter holidays by keeping those containers showy! Fall pansies can transition on into the winter if you pull out the faded plants and add fresh material. Make sure your containers are frost and freeze proof! Foams, heavy plastic, composite, and good quality ceramics are safe if placed on pot feet or risers to allow air flow. Terra cotta and lower quality ceramics will not survive freezing temperatures and should be cleaned and stored. If you need some help coming up with ideas for your containers, give us a call or stop by for ideas. » Weeds will continue to rear their annoying little heads throughout the fall and winter. Keep pulling or spraying, and continue applying pre-emergent herbicides. Make sure you read the directions on the package, because most herbicides are ineffective below specific temperatures. » If you haven’t cleaned out your

perennial beds, you can do that now. If your plants had fungus or insect problems, get the dead leaves up, and do not add them to your compost. Most stalks can be cut back, but leave verbena and salvia stalks alone. They have hollow stems that rain can enter, causing the roots to freeze. Perennials with nice seed heads can also be left for the birds to eat. » I highly recommend that you apply mulch if you haven’t this year. Mulch protects plants from the winter freeze/thaw cycles and insulates the roots against the cold. Don’t get carried away though! Do not stack it more than three inches deep, and do not pile it around the base of the plant. If you are not applying new mulch, fluff your old mulch with a rake or hoe. » Have you cleaned up your leaves yet? If you don’t have many trees, just mow over the leaves, and the clippings will help fertilize and protect your lawn. You should still be able to see the blades of grass, however, or your lawn can suffocate. If you have lots of trees, you will need to get the leaves up by raking, sucking, or blowing them. » If your houseplants are having a temper tantrum, you may need to move them to a sunnier spot or invest in a lamp. You should also keep an eye out for any insects that hitchhiked on plants that were brought inside for the winter. » How are your garden tools holding up? This is a good time to clean, sharpen, or replace them if needed. » Don’t forget about the birds. Keep your feeders filled and clean. Birdhouses can be cleaned out now, and birdbaths will also need to be cleaned and stored unless they are metal or plastic. There are birdbath heaters to keep yearround baths from freezing. » Ready or not, the countdown to the holidays has begun! Don’t forget that Meadow View is a great source for poinsettias, cut Frasier firs, wreaths, and greenery, as well as ornaments and gifts. All our poinsettias are grown on the family farm in Fentress County, and Rodney and I go to West Jefferson, NC, to get the trees and greenery. We know our stock is fresh and healthy! Your generosity made a difference. Ijams Public Programs The inventive education staff at Ijams has several special programs planned for November. But, business before pleasure – we’re having a yard sale! Our closets are stuffed, and the education staff has cleaned them out. Plus we have some donated items that we need to clear out at bargain prices. The Ijams Yard Sale is Saturday, November 8. Also, I will host another “Birding Brunch,” this time at Cove Lake, on Saturday, November 1. I’ll be looking for wintering waterfowl like gadwalls, mergansers, and coots. In addition, green thumb Peg Beute will host a gardening workshop in November,

and on select Saturday mornings, Peg or Jill will be serving breakfast for visitors, while Dr. Louise Conrad, the Ijams veterinarian, will lead another Wag n’ Walk doggie outing on Saturday, November 15. The Saturday after Thanksgiving, Sabrina DeVault will host a Shop and Drop Camp for parents who need someone to look after their young ones while they shop. Creature Feature animal programs are also regular happenings on Saturdays. Nature Almanac Look for the bird species that only spend their winters at Ijams and the Tennessee Valley: Yellow-bellied sapsucker, brown

Many of the shrubs and forbs are still holding on to their colorful berries, like the sumacs and pokeweed around the Visitor Center and Universal Trail, the hyacinth bean at Alice’s Greenhouse, and the dogwood, holly, beautyberry, and black haw viburnum around the Visitor Center. All bring a splash of red, magenta, and purple to the nature center. As always, Ijams welcomes you in all seasons, 12 months of the year. storage. Today’s pantries, whether a walk- or reach-in, are designed to be used as a multipurpose area for food prep, a morning coffee station or selfserve beverage bar, and wine storage. If you’re developing the layout for a new home or renovating an older one, there are several important ideas to keep in mind: » Design Doors that Open Out – A door that opens into the pantry greatly minimizes valuable storage space. Opt for a door that swings out. » Allow for Walking Space – The temptation is to design for minimum aisle space and maximum storage. This is always a mistake. Unloading groceries in too narrow of a space may make you feel like a contortionist. The minimum walkway width should be 34”. » Include Electrical Outlets – There are a number of small appliances used in today’s pantry. UT Gardens Plant of the Month: Cyclamen dominant theme of autumn, a diminutive little gem of a plant, cyclamen, is also having its moment of glory. In late September to early October, small white and pink flowers arise magically from the woodland floor, while there is no other evidence of the corm below the ground. The nodding flowers have dramatically flaring reflexed petals, like dainty rockets. The beautiful leaves begin to emerge weeks later and stay for the winter, disappearing in late spring. While there are many species of cyclamen, the one most often found in American gardens is Cyclamen hederifolium and is often just called hardy cyclamen. It can naturalize, forming colorful colonies in a happy spot, by dropping seed that will germinate close to the parent plant. That happy spot is dry shade, which would be considered a challenging site for most plants. This late-emerging foliage is evergreen, and each leaf is exquisitely beautiful, with dark green centers bordered with lighter green and silver patterns, reminiscent of fancy begonias. Each seedling will have its own distinctive and delightfully designed leaf. Hardy cyclamen is durable and can be extremely long lived in Hardiness zone 5-7.

Its corms can eventually grow to the size of saucers, producing many blooms each fall. Put this little joy of a plant where you can appreciate its dainty details during the fall and winter months and where it will not be in competition with aggressive neighbors. While it is not common in garden centers, many of the more sophisticated bulb catalogs will carry it. Carol Reese is the Western Region Ornamental Horticulture Specialist for University of Tennessee Extension. Her office is located in the West Tennessee AgResearch and Education Center in Jackson. The UT Gardens include plant collections located in Knoxville, Jackson, and Crossville. Designated as the official botanical garden for the State of Tennessee, the collections are part of the University of Tennessee Institute of Agriculture. Delbert McClinton DELBERT MCCLINTON has been

making music professionally for more than 50 years. He’s had songs that have broken into the Billboard Hot 100 several times throughout the years. My personal favorite is his 1981 hit, “I’m Giving It Up for Your Love.” He’s had both solo and duet hits and has been inducted into the Texas Heritage Songwriters Hall of Fame. One might think that, after being in the business as long as he has, Delbert would be ready to retire. That’s far from the case. He’s still recording, touring, and performing for fans all across America and is as fresh and relevant as ever. In a recent phone interview, Delbert talked about recent events in his life, his current tour, the music business, and his plans for the future. “Well, I had a triple by-pass in April,” said Delbert. “It was successful. I didn’t have any heart damage. I knew something was wrong, so I listened to my body and they caught it. I had a 95% blockage in the main artery. He told me that I was just a breath away from being dead. So, that happened and that’s great. I’m back and totally recovered and ready for another 50 years.” Naturally, this all begged the question as to whether or not this experience changed Delbert’s perspective on life, relationships, career, content of songs, or anything else. “Yeah, it’s a life-changing event regardless of how it goes down,” he said. “Like I said, I was very lucky. I was already in the process of recovery before I really even knew what I had. I mean, it happened so quick! Heart surgery these days, they make it seem like it’s no more difficult than changing a tire on a little girl’s bicycle. And, yes, it did change my perspective on an awful lot of things. First of all, you realize that it doesn’t always happen to someone else. That’s a pretty big game-changer when you have to face the fact that you almost died from it. It gets your attention. But, at the same time, I feel – I don’t feel 20 years younger, but I feel a whole lot better! My voice is better than it’s been since I was a teenager. I feel more at ease now, because I know I’ve had something done and that I corrected a major mess. Other than that, I’m relatively healthy. Life is good, and I’m moving on.” Delbert is scheduled to perform in Knoxville on December 5th at the Bijou Theatre. When he was asked if he had played the venue before, what fans can expect at 62

EVERYTHING KNOXVILLE November 2014

that show, and if his surgery affected his performances, he replied, “Oh, yeah, I’ve played at the Bijou before – several times! I love old theaters, and that’s a good one! And as for my performances, they have changed, but as far as trying to describe that, I don’t know how I would do that. I can’t not be different because something major occurred! I can breathe deeper than I’ve been able to breathe in years. So, with that in mind, I’m having a lot of fun, because I nearly wasn’t here! Ha! Ha! I don’t want to ride on that, because I’m not the only one in the world who’s ever had heart surgery, but you asked me what’s going on, and that has occupied my every thought for the last several months. I’m just a very fortunate guy. I’ve got a lot more music in me. I’m making preparations now for another record. I’ve almost got enough songs to do a double album. We’re in the process of putting that together.” Delbert has 28 studio albums under his belt. His latest CD is “Blind, Crippled and Crazy” and was a joint effort with his old friend, Glen Clark, with the song “Just When I Need You the Most” being the most amazing cut, to which Delbert said, “I agree. It got a lot of great reviews. I think it was a great record. It was a lot of fun. Glen and I always have so much fun singing together. When we went back to do this, it was like we’d never stopped. We do it so naturally, it’s just like falling off a log. We don’t even have to try to sing together.

We don’t really sing harmonies together. We just sing different parts together. Because of it, it makes everything go up on two wheels every once in a while, which I think is exhilarating.” Delbert will be performing songs from that album, as well as hits from his extensive catalog (and up on those two wheels and all that new found energy), on December 5th at the Bijou Theatre. Heights Elementary School, Roy Miller seeks input and influence from teachers, students, and parents around him. This inclusive style has contributed to his receiving the Outstanding Collaborator Award from the University of Tennessee Department of Theory and Practice in Teacher Education. “Receiving the Outstanding Collaborator Award means that obviously I’ve listened to others and others have listened to me,” said Roy. “The award means that there are people around me that made this award possible. I’m only half of the recipient. It takes two to collaborate. I can’t overcome one problem without the support of those that have agreed to help me in solving the problems at hand. No one person can go alone at anything and be as successful as if he/she took others with him/her.” Roy has been at Mooreland Heights Elementary for 11 years. He earned his bachelor’s, masters, and educational specialist degrees from the University of Tennessee

No one person can go alone at anything and be as successful as if he/she took others with him/her.” then earned his doctorate in education from Lincoln Memorial University. “It was after I graduated high school and before I began at the University of Tennessee that I wanted to be a teacher,” said Roy. “I always thought about my seventh grade teacher, Emily Ball, and the impact she made on my life.” As a principal, Roy’s days are very full and busy. “I usually get to school around 7:20,” he said. “I hit the ground running with our school’s live broadcast. I’m usually in and out of the office most of the day with meetings and walking the halls and classrooms. I normally have meetings after school. When I leave the school, I normally have a meeting somewhere else dealing with my job.” Roy says one of the biggest challenges he faces is making sure his school meets every student’s needs. “We have children who come to school who

aren’t prepared,” he said. “The children aren’t prepared academically, emotionally, socially, or nutritionally. We believe it is imperative to prepare the ‘whole child.’ Our faculty has taken on a service of Servant Leaders. We believe it is our responsibility to do our best to bring happiness in the lives of the children we have been entrusted to teach. Education is important; however, it involves more than just academics.” Although the job can be difficult, it’s easy for Roy to see the rewards it brings. “I enjoy being with my children,” he said. “It is a joy to be around them. Also, the faculty and I have been together most of their careers. I have hired almost all the teachers in the building, and most of them began their teaching careers at Mooreland Heights. Finally, I enjoy working with our parents. The parents are very supportive of the direction our school is taking. We always communicate with our parents, and the input they give is very crucial in our mission.”

an article in Science News written by mathematician Steven Strogatz. The article explained the subject of synchronized flashing of fireflies known to exist in Southeast Asia. Lynn was somewhat disappointed that the fireflies at Elkmont near her summer cabin had not been mentioned, so she wrote a letter to Strogatz. In the letter, she detailed the location and time of the phenomenon. After reading the letter, Strogatz put Faust in contact with neuroethologist Jonathan Copeland of Georgia Southern University, who decided to be present in Elkmont the following June to verify if this was real. Much to his surprise, it was all very real, right down to the detailed timing described in Faust’s letter. He was proud to announce to the science world that synchronous fireflies did indeed exist in the Western Hemisphere at Elkmont in the Great Smoky Mountains. Today the three sections of Elkmont that comprise the Appalachian Club are often called Daisy Town, Society Hill, and Millionaire’s Row. The Daisy Town and Society Hill cabins are located along Jake’s Creek, and Millionaire’s Row is near the banks of Little River. Of the three, Millionaire’s Row was the last to be established when the Little River Railroad and Lumber Company moved their logging operation from there and sold the property between Little River and Bearwallow Branch. In 1927, Alice Morier purchased about 60 acres and began building an estate which she named Happy Landings. She married Col. W. B Townsend, the owner of Little River Railroad and Lumber Company, in 1934. In addition 64

to her residence, Alice Townsend built a substantial stable and several cabins to lease. Dr. William H. Schuerman, Dean of Engineering at Vanderbilt University, bought a lot beside the river in 1928 and built a cabin which he and his family used as their summer residence. Dr. Schuerman drowned in Little River on August 11, 1932, and his heirs later sold the property to Joseph Murphy, superintendent of Little River Company. One of the cabins built by Mrs. Townsend is River Lodge. Painted a unique shade of salmon, the handsome cabin is the only structure on Millionaire’s Row that has been restored by the national park. Built beside the river directly behind Happy Landings, the cabin was leased by Franklin Handly. After Handly died in 1962, the lease was passed to Shirley Spence. Therefore, the property is now called Spence cabin. Next door to Spence cabin is the Brandau cabin. Henry Brandau, Sr., a Knoxville real estate executive, built a cabin on property he purchased from Little River Lumber Company. Possibly before Joseph Murphy bought the Schuerman cabin, a lot between there and the Brandau place was purchased by Paul Parrot, owner of Paul Parrot Shoe Company, who manufactured children’s shoes under

Lindsey Young’s bridge the name Poll Parrott Shoes. He built a summer home on the lot. Happy Landings was completely destroyed by fire after being struck by lightning in 1968. On the opposite side of the road, Alice Townsend’s stable was converted into an aesthetic cabin with living quarters on the second level. Around 1963, Loye Miller, editor of the Knoxville News Sentinel, bought out the lease. The cabin was given the name Spindle Top. Next door to Spindle Top is Spring House. The cabin was owned by the Faust family. Hugh D. Faust, Jr. was a University of Tennessee assistant football coach under General Robert Neyland. His wife, Emily Mahan Faust, was the owner of Emily Mahan School of Drama. Canyon Cottage is located beside Spring House. Lindsay Young was the last occupant of the picturesque cabin with its quaint stone bridge crossing Bearwallow Branch. Young was a Knoxville attorney and coal company executive. The last cabin built on Millionaire’s Row is known as Cambier cabin. Park Service officials allowed Alice Townsend to build the cabin in 1940 to use as a caretaker’s cottage. The last occupants of Millionaire’s Row reluctantly moved out in 1992 when their leases expired. With the exception of Spence cabin, the once gracious mountain cabins are deteriorating, with no plans to save them. Each structure has a rich history that future generations will know only from written and digital documents. Carroll McMahan is an author and serves as Sevier County Historian.

NOWN AS one of the Southeast’s most beloved and storied holiday vacation destinations, Christmas at Biltmore daytime tours begin on November 7 and will run through January 11, 2015. Candlelight Christmas Evenings, offering evening candlelight tours of Biltmore House, take place November 7 through January 3, 2015. This year’s Christmas displays throughout the estate will draw inspiration from the theme “A Vanderbilt Christmas Celebration.” Décor will trend toward the opulent to create a sense of the Gilded Age, while incorporating elements that nod to George Vanderbilt’s legacy in Western North Carolina. Having made an impression on the locals upon his arrival to the area in the 1880s, Vanderbilt hosted his first family Christmas celebration in Biltmore House in 1895. The event attracted media attention. According to the Asheville News and Hotel Reporter, “Tastefully draped garlands of evergreen and mistletoe, interspersed with the shining leaves and red berries of holly, created a scene beautiful to look upon.” Biltmore’s modern-day Christmas celebration is modeled on that first Christmas – and this year, that newspaper description influenced the design scheme. The Banquet Hall’s look will mix vintage and opulent accents with burgundy, red, gold, and blue ornaments tucked into the centerpiece 34-foot tall Fraser fir Christmas tree. Two 14-foot trees will flank the triple fireplace, each bestowing the same colors for uniform effect. A deep red velvet runner edged with holly and red berries will accent the Hall’s dining table, with potted poinsettias and fresh cut flower arrangements completing the look. Guests will see 60 trees throughout Biltmore House, each intricately designed and decorated by members of Biltmore’s floral team. Miles of fresh garland and wreaths draped throughout the house yield a nostalgic yuletide scent.

One Hour for Caregivers, Inc. Brings New Hope to Family Caregivers in East Tennessee SUPPOSE THE life you’ve become

You’ve just joined the 40 million adult Americans who are unpaid caregivers for a loved one. You’re now totally responsible for their welfare and well-being, as well as carrying alone the responsibilities you formerly shared with them. November is National Caregivers Month, a time to recognize the selfless, loving duties that caregivers perform every day. Unfortunately, these duties sometimes can become overwhelming. Too often the role of caregivers is lost in the shadow of their patient’s treatments, doctor visits, and just caring for the patient’s day-to-day activities and functions. Judith Glass is a Licensed Massage Therapist, and while also working in an oncology office, became friends with many of the patients and their full-time, unpaid family caregivers. It was apparent that while the patient was receiving medical and personal attention, the caregivers often neglected their own needs and health. They frequently feel isolated from their friends, neighbors, and even their church community. “This is typical of the life of a caregiver, because they completely focus on the needs of their patient,” said Judith, who is founder and executive director of One Hour for Caregivers, Inc. “The doctor’s role is to prolong life, and the caregiver’s role is to enhance the quality of life for their patient.” Judith, along with Mary Beth Hooker, RN, OCN, discovered that the available help, at least tangible help, for these caregivers seemed limited. As a massage therapist, Judith knows the therapeutic and emotional value of touch, as well as how well massage therapy can reduce stress. Because stress is the number one reason caregivers get sick, the mission of One Hour for Caregivers is to provide, one hour at a time, massage therapy and stress reduction education at no cost to the fulltime, unpaid caregivers of loved ones. “We ask only for referrals from the patients’ physicians, clergy, or social workers who are familiar with that particular caregiver’s role and stress,” said Mary Beth. Everyone in this community already is a caregiver, knows a caregiver, or will 70

A One Hour for Caregivers board member has a personal reason to be a part of this organization: She neglected her own health while caring for her husband and wants to be sure other caregivers are aware of these risks. One Hour for Caregivers, Inc. received a 501(c)(3) determination from the IRS in 2014 and is preparing to broaden their services. “We have been doing only brief, individual sessions at caregiver support groups and are ready to expand to the full One Hour service in medical offices, churches, and hospitals,” said Judith. “We need support from the community to achieve this. It’s Easy to Supercharge Your Charitable Giving AS I work with my financial planning clients

to structure their lifetime income and make sure their estate planning is complete, the idea of charitable giving often comes up. Many people say they would like to leave money to their church or favorite charity but don’t want to shortchange their kids or grandkids. Understandably so! But there are great ways to set up charitable giving plans, while you are still living, that will not only benefit your charity, but still provide your family members a tax-free inheritance. If you’re like most people in, or near, retirement, most of your money is probably in 401k’s, IRA’s, and other pre-tax investment accounts. Once you start taking money out of those accounts, it’s fully taxable, and the IRS requires withdrawals to begin no later than age 70 1/2. I call it “the tax time bomb.” What to do? Here’s one real-life example: A 70-year-old client donates $200,000 of IRA money to a Charitable Remainder Trust. He receives an immediate tax deduction for $76,000, and the trust is set up to pay him $14,000/year for 10 years. He uses the $14,000 annually to purchase a 10 year paid-up life insurance policy. At the end of 10 years, his charity is projected to receive $150,000, plus his wife has a $500,000 tax-free life policy. He took a $200,000 fully taxable IRA and turned it into $650,000 of tax-free assets. Pretty powerful tax planning! Because he wants to teach his kids and grandkids the importance of charitable giving, he is going to have the $150,000 paid out to a donor-advised fund, which he and his family will control and decide annually what bequests they will make. That fund will last for future generations to continue the tradition he started. WHEN ALI Swofford decided to get

involved in volunteer work, she focused on what she’s most passionate about: Helping animals, seniors, and kids. “I think those three groups can’t champion their needs or causes for themselves,” said Ali, owner of Swofford Financial in Knoxville. “Animals don’t have a voice, seniors may be alone, and kids are young and aren’t always heard by parents or people in authority. So there are three segments of our culture that I would love to do something to make a positive difference.” Ali volunteers with Human Animal Bond in Tennessee (HABIT), a program provided by the University of Tennessee’s College of Veterinary Medicine that fosters pet visitations to nursing homes, hospitals, schools, and anywhere else that a four-legged friend can help someone in need. “It’s a fantastic program, and it’s expanding all across East Tennessee,” said Ali. “Therapy animals, which are really great pets, and their two-legged owners go into elementary schools, and children who won’t read out loud

or are troubled will talk to a dog or cat when they won’t talk to other kids or teachers.” Ali believes animals are beneficial to those in need because they’re totally accepting. “If someone’s going through a really tough time, an animal will sit their head right on your lap and let you pet them,” she said. “It brings people comfort and joy.” On March 31, 2015, KMA will be the venue for the annual “Barbeque, Bidding and Bluegrass” HABIT fundraiser. Guests meet some of the four-legged HABIT animals, learn about the program, eat, listen to music, and have fun. A silent auction – the brainchild of two of Ali’s clients, Craig and Claudia Michalski – features items ranging from painted metal animal yard art to weekend getaways. Individuals and businesses are always needed to sponsor the event and donate items. The last event raised $20,000 for HABIT, and the committee aims to raise $25,000 at the next one. “Like all programs, it costs money to operate,” said Ali. “The dogs, cats, and rabbits have to have behavioral evaluations before they can make visits to hospitals, therapy centers,

or schools. Being a financial planner, I knew I could help raise some money for such a worthwhile program.” Ali believes in the therapeutic value of animals so much that she brings her own dog, Eli, into work with her every day. “He greets everyone who comes through the door – clients, friends, the UPS guy,” said Ali. “When we’re talking about financial planning and retirement, those can be some heavy-duty issues. Eli helps folks relax and remember that planning is figuring out how to create the experiences you want with the people (and animals) you love.” Swofford Financial is located at 251 N. Brittany, a florist, is the owner of Posh Petal Designs, which has been open for a little more than a month. “My sophomore year in college I decided to take a few advanced design classes in the floral management department,” said Brittany. “I ended up working with the florist on campus right before Valentine’s Day because they needed extra help. The rest is history. I finished my degree and came to Knoxville for my internship at a local wholesale florist.” After earning her bachelor’s degree in horticulture with a concentration in floral management from Mississippi State University, Brittany moved to Knoxville to open her own floral shop. “Every day is different,” she said. “Some days I start off getting orders delivered. Other days I start off meeting different clients about events or weddings they have coming up. Once or twice a week I get in fresh flowers and have to process them to put away in the cooler for future orders. I try to order different products each week to change things up. Most of 72

virtual roller coaster ride for most small business owners. As a business owner for more than three decades, business has always been tumultuous, but this most recent recession has certainly served to accentuate these common marketplace swings. But innovative, forward thinking entrepreneurs have taken advantage of today’s marketplace conditions while other small business owners have chosen instead to become victims of our recession. One innovative entrepreneur, the owner of a retail printing store, introduced a new technology that resulted in a while-you-wait printing advantage that allowed its retail customers the opportunity to wait five to 10 minutes for their printing order rather than to have to return days later. Customers loved the convenience. In fact, only months later, sales from this new technology eclipsed existing

There is nothing wrong with being the boss and taking charge, but often the best way to lead others is to know when it’s time to trade in the title for a towel and join the team. Preparing for Houseguests During the Holidays ARE HOUSEGUESTS coming to your

home this holiday season? If so, don’t panic. Here’s a checklist so you can have your home, yourself, and your children ready for guests and all the busyness they bring. Preparing the Guestroom and Bathroom If you have a guestroom and bath, it will be easy to get them ready for your company. If you don’t have either, you’ll have to either evict a child from their bedroom or make a bedroom in a den or office. Whichever route you take, here are some things to do to accommodate your guests: » Keep extra blankets and pillows on hand for a guest who may like extra warmth at night. » Make sure the room has a lamp, alarm clock, radio or TV, and magazines. » Keep towels and washcloths stocked, and show your guests where to locate them. » Keep fresh soap in the shower and on the sink. Provide shampoo, conditioner, and a hair dryer. Keep toothpaste and a new, wrapped toothbrush for each guest in the bathroom drawer. » Keep a clean water glass in the bathroom. » Put a box of tissues and a wastebasket in the bathroom. Keep extra toilet paper under the sink.

Preparing Yourself for Houseguests With a little planning, you can be relaxed and ready to visit when your guests arrive. Here are steps you can take to prepare yourself for houseguests: » Don’t wait until the last minute to food shop. If possible, cook a few things in advance and freeze them. This will save time when your guests arrive. It will also enable you to visit instead of being locked in the kitchen. » Try to have something planned for you and your guests to do. Nothing is more uncomfortable than having bored guests and no plan of action. » If you have to work while your guests are visiting, create a list of local places they may be interested in visiting, including places to sightsee, cultural activities, and even restaurants or bars. » Don’t plan on doing everything for your guests. When they offer to clean up or run an errand for you, let them. Preparing Your Children for Houseguests Prepare your children for houseguests before they arrive. Here are some tips to help them make it through a lengthy guest visit: » Give your children the information they need to know – who will be coming, when

they’ll be coming, and how long they’ll be staying. » Tell your children where everyone will be sleeping, especially if they’re being displaced from their rooms. » Protect your children’s possessions. This is especially important if your houseguests are bringing children of their own to visit. Allow your children to put away a few things they don’t want played with. Children shouldn’t be expected to share absolutely everything they own. » Have snacks on hand if meals are running late. Hungry kids can turn into whiners very fast. Having houseguests during the holidays is a great way to make family memories. A little preparation can go a long way to ensure that everyone’s experience is as positive as possible. Memorial/Funeral Service Etiquette I UNDERSTAND this isn’t going to be our

favorite topic, but it’s really necessary. Allow me to give an example of why. Recently I attended a memorial service for someone. There were many in attendance, which I’m sure was so appreciated by the family. When I arrived, the line was quite long to visit with the family to give condolences. Typically a long receiving line at a memorial service shouldn’t be a matter of concern, as it should move very quickly. However, this line moved extremely slow. I soon realized that visitors were spending five to eight minutes with the bereaved. This was entirely too long. Why? Because it’s exhausting, both physically and emotionally, for the family to greet so many people. This isn’t the appropriate time to catch up on the latest news regarding your family. It’s a time to simply give a smile, hug, or handshake and express with brief but sincere words your condolences. For instance, “Martha, I am so very sorry for your loss. I love you and your family, and know that my thoughts and prayers will be with you during this difficult time.” Then move on. If you have a more intimate relationship 74

with the bereaved, then perhaps you can offer your condolences in a more familiar manner, but it should still be very brief. Due to the length everyone was taking with this family, funeral attendants had to get a chair for the wife of the deceased because her legs were giving out, and the service started one hour late. Perhaps in the coming weeks after a passing, you could reach out to the bereaved and visit them in their home for a more lengthy visit. Here are a few other things to remember: » Your dress should reflect your feelings for the deceased. Flip flops, revealing attire, t-shirts, baseball caps, etc. are not appropriate. » Be on time. If there’s a service immediately following the receiving of friends, then plan on arriving at least 45 minutes prior to the time of the service starting. Oftentimes family is removed from the room to rest and have a break up to 30 minutes prior to the service, so if you wait too long, you may miss them. » Bringing children to a funeral or memorial service is appropriate if they can sit quietly for extended periods of time. It’s very inappropriate to allow children to roam around the room unattended. They should stay at the

side of their parent or other adult family member. » Speak reverently at all times within the walls of the service area. Sometimes it’s difficult to remain quiet, because we often see people we haven’t seen in years, and there’s a bit of excitement over these sweet reunions. However, we must remain respectful and reverent for those who are in mourning. As with all things, let’s teach our children these important etiquette considerations so they, like us, can send a message to those around them that we care and we value them.
