from the publisher’s desk Al Asghar WOW, I cannot believe that this year is almost over! This year went so fast, I could not believe it. This means that the holiday season is here as well. All across the county, our local cities are doing their annual “light up.” This month we have some great stories including some awesome recipes from Chef Del Rio down at Eaton’s Beach Bar & Grill. We also have some interviews with the Tavares High School Girls Cross Country Team who finished 5th in the state compionships. Congrats to the girls! I am also working on something that is going to take Everything Lake to the next level as it pertains to new. This is going to come together in a few months, so watch out for it!

Author to visit Lost Lake Elementary with stories of real-life heroes TAVARES — Author Valerie Pfundstein will visit Lost Lake Elementary School on Thursday, Nov. 19, to speak to students about reading, writing and real-life heroes. Ms. Pfundstein is the author of Veterans: Heroes in Our Neighborhood and Lucky Him: He’s the Fireman. She is an enthusiastic speaker who excites students about identifying veterans in their lives and encourages students to write stories about these heroes. She explains to students the importance of writing stories that will touch hearts. Her two books were honored as a Gold Award Winners for Moms Choice Awards. She was also featured on Fox and Friends in 2012 when her debut book, Veterans: Heroes in Our Neighborhood, was released. Her books incorporate her love of storytelling with love for country. Ms. Pfundstein publishes with Pfun-omenal Stories, which in 2016 will release “Kids Who Serve,” a resource for schools offering strategies to identify and address the needs of children of our military. Beauty queen, anti-bullying crusader to visit Tavares High TAVARES — Today, Brittany Pierce competes in beauty pageants. But as a teen, she didn’t feel beautiful and was often the victim of bullying. It all started with a negative comment about her appearance when she was in the 6th grade. It escalated to become daily incidents on the bus and in the cafeteria with students calling her a dog and barking at her while others laughed. In

Age: 14 What is your biggest accomplishment in your sports?  My biggest accomplishment is my sport is having a successful cross-country season and breaking the 19 minutes for a 5k. What would be your ultimate achievement?  My ultimate achievement would be to get top 10 to 5 at state, and our team overall get 1-3rd place at state. Also another ultimate achievement would be to get a full scholarship on a cross-country scholarship. What is your biggest challenge, and what do you do to manage this challenge?  My biggest challenge is my mental ability and having a weak mind, I always psych myself out. Something I do to control this is trying not to think too much about a big race until the day before and not think too badly about it. hard at every practice.

Age: 15 I first began running my 7th grade year in middle school. I joined cross country to make new friends and because my sisters ran when they were in high school but I never thought that it would later become such a big part of my life. What is your biggest accomplishment in your sports? My biggest accomplishment in running is winning districts in 8th grade. What would be your ultimate achievement? My ultimate achievement is to win state as a team by my senior year in high school How do you set your goals? When setting goals, I always make sure that they are realistic and specific. I then list them according to when I want to achieve them and I include a time frame to when I want to reach each goal by.

Though, my biggest accomplishment, as a team, was winning districts because we were put in a difficult district and weren’t expected to win. Though we pushed past the doubts of others, and took home the trophy. What would be your ultimate achievement? My ultimate achievement would to run 19:59 or faster by my senior year.

 Age: 14 What is your biggest accomplishment in your sports? My biggest accomplishment in cross country is going from running a 27 minute 5k to running a 23 minute 5k in the past season. What one or two things do you currently do in your training that are keys to your success? The track work we do is a key factor to my success because it helps strengthen me mentally, and physically. What would be your ultimate achievement? My ultimate achievement would have to be getting a scholarship for Cross Country. How do you set your goals? When I set my goals I write them down and read over them everyday to make sure that I keep them in mind and keep working towards them.

Age: 17 What is your biggest accomplishment in your sports? My biggest accomplishment would be my time of 20:58 that I ran when I was a junior. Also, I placed 9th and qualified for regionals individually. Finally, leading an extremely focused and successful group of amazing ladies. What would be your ultimate achievement? Breaking 20 minutes in a 5k race and winning state. How do you set your goals? I set my goals by using a whiteboard in my bedroom and writing weekly goals and motivational quotes. It gives me hope and reminds me of what I strive to do.

My biggest accomplishment in cross-country is helping my team win the District Championship, Runners-Up at Regionals and 5th Place at State Championships. What would be your ultimate achievement? I set my goals so that they are not impossible to achieve but, they are hard enough that I challenge myself.

The National Retail Federation predicts a 4.1 percent increase in sales this year, with the average American set to spend an estimated $786 in the following categories: * $459.87 on gifts for family * $80.00 on gifts for friends * $26.03 on colleagues * $30.43 on the other people in their lives Whether shopping online or in-store, there’s often a temptation to spend too much on gifts, leading to a case of buyer’s remorse come January. Regions Bank, one of the largest U.S. banks with 1,630 branches across 16 states, has advice for consumers on how to prepare financially for the holiday shopping season. 1. Begin with the golden rule. Spending on gifts shouldn’t exceed more than 1.5 percent of your annual income. Use this rule as a guide to determine how much you should set aside to spend on gifts for your friends and family - and stick to it. 2. Separate and delegate. Consider creating a separate account to fund gift purchases and make regular contributions from your primary checking account in a weekly, bi-weekly or monthly basis. 3. Good Eats end of the instructions, for making gravy. Remember to remove all the ‘goodies’ inside the turkey, both cavities ! An 18 lb turkey will feed approx. 12 people and if prepared by these directions, will take about 2&1/2 to 3 hours to cook. Important! Allow 30 minutes of ‘rest’ time in your dinner schedule, for the bird to sit before carving. No basting needed! The meat will not absorb the juice and it will only take longer to cook, from the heat loss every time you open the door.

Brine

The Perfect Holiday Dinner By Chef Del Rio At Eaton’s Beach Bar And Grill The Perfect Turkey Items needed: Morton’s Kosher salt, Brown Sugar, Low Sodium Chicken Broth, Cornstarch, Kitchen Bouquet (small bottle), Un-salted Butter, Foil, Pan release spray (Pam), Onion, Celery, Carrots, Fresh Thyme, Sage and Rosemary, Digital Thermometer with cord. ( This will be the best 20$ Investment you will make ) Notes and suggestions: Never stuff the Turkey! Prepare the stuffing in a separate casserole dish with Chicken Broth in place of water and bake. It is not safe and exposes the turkey to extra unnecessary heat. The excess mass within the turkey (the stuffing) will add extra cooking time to the bird, exposing extraunnecessary heat to the meat causing it to overcook needlessly. Make the brine two days before you plan to cook the turkey, so it will be nice and cold. The drippings will be too salty for gravy, so make separate gravy from stock. If you are Hell-bent on using the pan drippings, I will give you a ‘fix’ at the 18 everythinglake.com

❑ Mix 1gal + 1 qt of water with 8 oz of brown sugar and ½ lb( 8oz ) Morton’s Kosher salt. Stir to dissolve. You will have to stir this several times to completely dissolve the salt and sugar. Chill this mixture well! ❑ Place thawed turkey in a container large enough to be able to submerge it when the brine is added. Pour in enough brine to cover. Place in refrigerator for 12 to 24 hours. ❑ If turkey floats, place a gallon bag filled with water on top to keep it submerged. Don’t worry, if it won’t completely submerge, put as much brine as possible and just flip it over several times during the process.

To Cook

Set oven temp to 500 Place oven rack to its next to lowest setting in the oven. Rinse turkey well (we need to remove the excess brine) Rough chop 1 medium onion, 1 head of celery, and 1 or 2 carrots. Reserve. Make a sheath of foil (breast plate) to fit the breast of the turkey. Shiny side out. It should only cover the breast. Remove the foil and spray the inside of the foil with Pam and reserve the foil until later. Massage room temp butter into the skin of the turkey. 4 to 6 oz should do it. Really rub it in.


Good Eats Place the vegetables into the turkey (where you used to put the stuffing) add a few sprigs of rosemary, thyme and sage. All fresh please. Place the turkey into a roaster with a rack so the bird is elevated off the bottom of the pan. Place the turkey into the 500-degree oven, (do not put the foil on until later in the recipe )neck first and set a timer for 30 minutes. ❑ Remove the bird from the oven. The breast should have a nice golden color. (If not, return him to the oven for another 10 minutes) ❑ Place the foil breastplate on the turkey. Remember to spray the inside of the foil with Pam so it will not stick to the turkey and pull off that beautiful skin. ❑ Place the probe of the thermometer into the thickest part of the breast. ❑ Reduce the oven temperature to 350 and replace the now “armor plated turkey” back in the oven. ❑ Set the alarm (if the thermometer has one) for 161 Degrees. Make sure the thickest part of the breast is at this temp. (The dark meat will be at about 180) ❑ Remove the bird from the oven and cover completely with foil, making a tightly sealed pup tent over the bird. Place it in a warm place and let him rest for 30 minutes. This will finish the cooking and allow the juices to redistribute thru the protein. ❑ Your turkey is done !!

Gravy If you insist on making gravy from the drippings, add 1 cup of water, 1 cup of low sodium chicken broth and thicken with cornstarch slurry. Add a little of the Kitchen Bouquet for color. You can even boil the giblets and mince them up to add to the gravy for texture…

CRANBERRY CITRUS RELISH ​INGREDIENTS: • 2 cups CRANBERRY SAUCE w/ BERRIES​​​ ​ • ¼ cup ORANGE JUICE CONCENTRATE​​ • ​½ cup CHOPPED BREAD & BUTTER PICKLES​​ • 2 Tbl (or to taste) MINCED JALAPENO​​​ • 1 tsp GRATED ORANGE OR LIME ZEST ​¼ cup KEY LIME JUICE​​​ This recipe will yield about 4 cups DIRECTIONS: 1. Zest orange or lime until 1 tsp is obtained. Reserve. 2. Remove seeds from jalapeno pepper and mince. Reserve. 3. Chop “bread & butter” pickles until desired quantity is obtained. Reserve. 4. In SS mixing bowl, combine all ingredients and stir with wire whip until combined. 5. Refrigerate until ready to use. BONUS RECIPE!!! ​This recipe makes a great sauce for turkey sandwiches the next day! Just add mayo to the left over until you reach the desired consistency. Spread on your favorite sandwich and enjoy. To make “ cranberry citrus sauce” from the beginning add equal amounts of mayo and cranberry.

Good Eats INGREDIENTS: -3/4 lb. fresh green beans -2-3 cloves fresh garlic minced by hand -Extra virgin Spanish olive oil -Salt to taste -1 lemon and 2 TBL’s lemon juice DIRECTIONS: 1. Snap the ends off of the green beans. 2. Bring a large pot of water to boil over medium-high heat.(add a pinch of salt) 3. Add green beans, and cook for 3- 5 minutes, until crisp-tender. 4. Meanwhile, prepare an ice water bath by placing ice cubes in a large bowl and filling with water. 5. Drain green beans, and immediately plunge into ice water bath. 6. Heat olive oil in a large skillet. 7. Add garlic and cook 1 minute. (optional, add chopped onion and sauté for a minute or two before adding garlic) 8. Pour olive oil into a heavy bottom frying pan and heat to medium heat. 9. Add minced garlic and briefly sauté for 1-2 minutes. Add green beans and “toss” in the frying pan to coat with the olive oil and garlic. (optional) add chopped bacon or ham and continue to sauté until hot. Add fresh lemon juice. 10. Lightly salt to taste and serve your Alubias Verdes con Ajo. Garnish with sliced lemon wheels or grated lemon peel.

SMASHED POTATOES INGREDIENTS: -2 Lbs Red Potatoes -1 Lbs Yucon Gold Potato -4oz Butter -4oz Diced ham or bacon -1½ tsp Kosher salt -4oz Shredded cheese

-1 Cup Sour cream -Dash of Hot sauce DIRECTIONS: 1. Rinse the potatoes and remove any eyes or imperfections. Cut them into roughly 2 inch chunks, but do not peel them. This adds to the texture and the flavor. INSTRUCTIONS 2. Dice the ham or bacon into small pieces, and have the rest of the ingredients measured and ready. 3. Boil or steam the potatoes with the skin on. 4. In a sauté pan, sauté the ham in the butter until hot. 5. Drain the hot potato chunks and immediately add the salt, pepper, cheese and sour cream plus a dash of hot sauce. 6. Add the cooked ham and butter. 7. Smash the mixture with a potato masher or large sturdy spoon just until combined.

PUMPKIN PIE COBBLER WITH PECANS YIELD: 8 SERVINGS PREP TIME: 10 MINUTES COOK TIME: 40 MINUTES TOTAL TIME: 50 MINUTES INGREDIENTS: -1 cup + 3 tablespoons all purpose flour -2 teaspoons baking powder -1/2 teaspoon salt -3/4 cup granulated sugar -1 teaspoon cinnamon -1 teaspoon Pumpkin pie spice -1/2 cup pumpkin puree -1/4 cup milk -1/4 cup melted butter or vegetable oil -2 teaspoons vanilla Cobbler topping: -1/2 cup granulated sugar -1/2 cup brown sugar -1/4 cup chopped pecans -1 1/2 cups very hot water DIRECTIONS: Preheat oven to 350 degrees. In a medium sized bowl, stir together flour, baking powder, salt, sugar and spices. Reserve. In a bowl, stir pumpkin, milk, melted butter and vanilla together to combine. Pour wet ingredients into dry ingredients and mix to create a thick batter. Pour into a small 8-inch casserole dish with high sides. In a separate bowl, stir sugar, brown sugar and pecans together. Spread over the top of the batter

evenly. Pour hot water over the entire thing (DO NOT STIR) Place casserole on cookie sheet and bake for 40 minutes or until the middle is set. Cool 5-10 minutes before serving. Serve with more pecans and vanilla ice cream. CORNBREAD CASSEROLE This is one of most requested side items at my BBQ restaurants. I believe its popularity lies in its simplicity and blending of familiar flavors and ingredients. The hot sauce gives the dish a little spark to balance the sweetness. Ingredients: -2 eggs, slightly beaten -1 cup sour cream -1 -17 oz can of cream style corn -1 -17 oz can of whole kernel corn, drained -4 oz ( ½ cup) melted butter (Plus a little for the casserole dish) -½ cup granulated sugar -Pinch of salt -1 or 2 Tablespoons of your favorite hot sauce -1- 8.5 oz package Jiffy Corn Muffin mix Directions: 1. Butter a 2 qt casserole dish and set aside. 2. In a mixing bowl, combine the first 8 ingredients. 3. Sprinkle the Jiffy mix over the combined ingredients and fold in with a spatula. Do not beat the mixture. 4. Bake at 350 degrees for approximately 50 minutes or until a toothpick inserted into the center comes out clean. 5. Allow casserole to rest 10 minutes before serving.
