Hi Friends! I am super excited to present the Geomyra Lewis Weddings and Events Holiday Baking & Gift Guide 2015! Last year, my little guy made an earlier appearance into the world and put plans on hold for the 2014 edition. This holiday season, our Guide is back, and better than ever! As a girl that loves to shop and bake, I couldn’t be more thrilled to share brand new recipes and my favorite picks for the upcoming holiday season. Ingredients: ¾ cups Patron® Silver Tequila ¾ cups fresh lime juice (or you may use Rose’s Lime Juice concentrate) ½ cups Cointreau orange liqueur 1 ½ cups Cranberry Juice Ice Cranberries and limes for garnish Salt or sugar for the rim (optional) Directions: Shake to mix all ingredients together over ice in a cocktail shaker. Pour beverage in a salt or sugar rimmed glass. Garnish with lime wedges and fresh cranberries.

1 ½ cups self-rising flour 1 ¼ cups all-purpose flour 1 cup (2 sticks) unsalted butter, softened 2 cups sugar 4 large eggs, at room temperature 1 cup milk

Buttercream Frosting Ingredients: 9.

1 cup unsalted butter (2 sticks or 1/2 pound), softened (but not melted) Ideal texture should be like ice cream. 3-4 cups confectioners (powdered) sugar, SIFTED ¼ teaspoon table salt 1 tablespoon vanilla extract Up to 4 tablespoons milk or heavy cream

Buttercream Frosting Directions:
Beat butter for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn’t blow everywhere) until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.

Preheat oven to 350 degrees F. Spray pans with non-stick cooking spray. In a small bowl, combine the flours. Set aside. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended. Divide the batter evenly based on the number of layers and colors you select. Use your choice of food coloring and color the batter for each layer to reach desired colors. Place batter in prepared pans. Bake for 20 to 25 minutes, or until a cake tester inserted into the center of the cake comes out clean. While the cakes are baking, prepare the frosting. Cool the cakes completely before frosting. To assemble the cake, cover the first layer with frosting, only covering the top. Add a layer of cake. Top the cake with frosting. Repeat steps until all layers are covering in frosting. Leave the sides uncovered.

Pretzel Layer Ingredients
½ cup al-purpose flour 1 cup crushed pretzels ½ cup packed brown sugar ¼ teaspoon baking soda ½ cup butter, melted
Brownie Layer Ingredients:
4 oz. dark chocolate (approximately 80% cocoa, or use half unsweetened and half bittersweet) 1 ¼ cups sugar 1 teaspoon vanilla 2 large eggs ¾ cup all-purpose flour ¼ teaspoon salt
Caramel Sauce Ingredients
1 cup of sugar 6 tablespoons of butter ½ cup heavy whipping cream
Directions: Pretzel Layer 1. Preheat oven to 350 degrees F. Prepare an 8”x8” (or 9”x9”) square baking pan by lining parchment paper across the bottom and sides of the pan, like a sling. You can use a little butter on the pan to help the paper stay in place. 2. Stir together crushed pretzels, flour, brown sugar, and baking soda. 3. Stir in the melted butter. 4. Pat mixture into the bottom of an ungreased baking pan 5. Bake at 350 degree F for 10 minutes.
Brownie Layer 1. In a stainless steel bowl over a pan of simmering water (or double boiler), melt the butter and chocolate. 2. Once melted, remove from heat and stir in the sugar and vanilla. 3. Add eggs, one at a time, beating well with a spoon. 4. Stir in flour and salt and beat with a spoon until the batter is smooth and glossy (about 1 minute). 5. Pour the brownie batter evenly over the pretzel layer. 6. Bake in preheated oven for 25-30 minutes, or until brownies start to pull away from the sides and a toothpick inserted in the center comes out almost clean. Remove pan from oven and place on a wire rack to cool completely.
Caramel Sauce 1. Heat sugar on moderately high heat in a heavy-bottomed 2-quart or 3-quart saucepan. As the sugar begins to melt, stir vigorously with a whisk or wooden spoon. As soon as the sugar comes to a boil, stop stirring. 2. As soon as all of the sugar crystals have melted (the liquid sugar should be dark amber in color), immediately add the butter to the pan. Whisk until the butter has melted. 3. Once the butter has melted, take the pan off the heat. Count to three, then slowly add the cream to the pan and continue to whisk to incorporate. Note than when you add the butter and the cream, the mixture will foam up considerably. Let caramel cool before serving. 4. Drizzle cooled caramel over brownies.

Ingredients:
2 packages refrigerated unbaked pie crusts 3 cups diced preachers 2 tablespoons cornstarch ¼ cup sugar ¼ cup brown sugar ¼ teaspoon salt 1 teaspoon vanilla ½ teaspoon ginger 2 dashes of ginger 1 tablespoon fresh lemon juice 1 large egg Sprinkling sugar for dusting

Preheat oven to 375 degrees F. In a bowl, mix cornstarch, sugars, salt, vanilla, cinnamon, ginger and lemon juice. Let peaches marinate while you work on cutting out the pie crust. On work surface, unfold 1 dough round; cut into 5 inch circles. Spoon 2 tablespoons filling and fold dough over filling. With fork, press edges together to seal. Transfer pies to ungreased cookie sheet, placing one inch apart. Repeat with remaining dough and filling. Brush tops of pies with egg; sprinkle with remaining sugar. With knife, cut 1-inch slit in top of each pie to allow steam to escape during baking. Place cookie sheets on 2 oven racks. Bake 18 to 20 minutes or until golden brown. Transfer pies to wire racks to cool. 12. Serve warm with vanilla ice-cream or at room temperature.

A kid friendly dessert and activity using your favorite sugar cookie recipe! Ingredients
Pillsbury Sugar cookie dough or your favorite sugar cookie recipe Whipped Vanilla frosting (I prefer Betty Crocker brand) Bag of marshmallows Sprinkles Decorative icing
Directions 1. 2. 3. 4. 5. 6.
Follow directions to bake sugar cookies. Frost sugar cookies with vanilla frosting. Decorate marshmallow using decorative icing an sprinkles to make facial features. Place decorated marshmallow on the frosted sugar cookie. Use the sprinkles and decorative icing to add personality to your snowmen. Enjoy!

Cheesecake Ingredients
4 (8 oz) packages cream cheese, softened 1 ¼ cups sugar ½ cup sour cream 2 teaspoons vanilla extract 5 large eggs, room temperature
Directions: Crust Layer 1. Preheat oven to 475 degrees F. Place a large pan filled with ½ inch water in oven. 2. Mix graham cracker crumbs and cinnamon; add margarine. Press crust onto bottom and 2/3 of the way up a 9-inch springform pan lined with parchment. Wrap a large piece of foil around bottom of pan. Freeze until filling is prepared.
Cheesecake Layer Crust Ingredients
1 ½ cups graham cracker crumbs ¼ teaspoon ground cinnamon 1/3 cup melted margarine Heath English Toffee bits
Topping Ingredients
½ cup sour cream 2 teaspoons sugar
Caramel Sauce Ingredients
1 cup of sugar 6 tablespoons of butter ½ cup heavy whipping cream
1. Use an electric mixer to mix cream cheese, sugar, sour cream and vanilla. Blend until smooth and creamy. Scrape down sides of bowl. Whisk eggs in a bowl; add to cream cheese mixture. Blend just until eggs are incorporated. 2. Remove crust from freezer and cover with Heath Toffee nits. Pour in filling. Carefully place cheesecake into preheated water bath. Bake for 12 minutes; turn oven to 350 degrees F and bake until top of cheesecake turns golden, 50 to 60 minutes. Remove cake to a wire rack to cool.
Topping Layer 1. Combine sour cream and sugar; spread over cake. Place in refrigerator for 30 minutest to harden before drizzling with caramel.
Caramel Layer 1. Make caramel according to directions on page 7. 2. Drizzle cooled caramel over cheesecake, sprinkle additional Heath bits and sprinkle with a dash of sea salt. Cover and refrigerate at least 4 hours prior to serving. “O Holy Night” Martina McBride

Recipe adapted from Gimme Some Oven 2 ½ cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 2 teaspoons ground cinnamon ½ teaspoon ground nutmeg ½ teaspoon ground ginger ½ teaspoon salt 1 (15 ounce) can pumpkin puree (I use Libby’s pure pumpkin) ¾ cups well-shaken buttermilk 1 teaspoon vanilla extract 2 sticks (1 cup) unsalted butter, softened 1 ½ cups granulated sugar 3 large eggs, at room temperature
Cinnamon Glaze Icing Ingredients:
1 cup confectioners (powdered) sugar ½ teaspoon vanilla extract ½ teaspoon ground cinnamon 1 tablespoon milk
1. Preheat oven to 350 degrees F. Grease a bundt pan with cooking spray or butter, then sprinkle the entire surface with flour (or granulated sugar) and shake off the excess. 2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger and salt until combined. 3. In a separate bowl, stir together pumpkin, buttermilk and vanilla extract until combined. 4. Using an electric mixer, beat butter and granulated sugar on medium-high speed until pale and fluffy, about 3 minutes. 5. Add eggs and beat 1 minute, using a rubber spatula to scrape the bottom of the bowl so that everything is combined. 6. Reduce speed to low and add flour and pumpkin mixtures alternately in batches, beginning and ending with flour mixture and mixing until batter is just smooth. Do not overbeat. 7. Transfer batter into pan, and smooth the top of the batter with a spatula so that it is smooth. Bake until a wooden toothpick or skewer inserted in center of cake comes out clean, 45 to 50 minutes. Cool cake in pan on a cooling rack for at least 20 minutes. Then invert cake onto a cooling rack or a cake platter. 8. Top with cinnamon glaze icing when cooled, or dust with powdered sugar.
Cinnamon Glaze Icing Directions:
Mix all ingredients together Fill sandwich bag with glaze cut small hole in corner of sandwich bag and lightly drizzle onto cake.
Note: I used a mini bundt cake pan; however you may use a regular sized bundt cake pan. Be sure to check cake periodically and insert toothpick to check for readiness.

Cider Ingredients:
59 oz Simply Apple Pure Pressed Juice ½ cup Brown Sugar 2 teaspoons Allspice, whole 3 teaspoons Cloves, whole 2 dashes of Nutmeg 1 Orange cut in half 4 sticks of Cinnamon
Directions: Recipe adapted from Tasty Kitchen
1. In a large slow cooker, combine apple juice and brown sugar. 2. Place orange slices face down into the mixture. 3. In a coffee filter or cheesecloth, place the cinnamon, allspice, cloves, and nutmeg. Carefully bring up the edges and secure spices inside using baker twine. 4. Place spice satchel into the cider mixture. 5. Cover and heat on low for 3-4 hours or high for 1-2 hours until cider is hot and fragrant. 6. To serve, reduce heat to warm and ladle into mugs. 7. Garnish with a cinnamon stick, if desired Cider may also be served chilled or wit brandy or dark rum!

Preheat oven to 350 degrees F. Prepare an 8”x8” (or 9”x9”) square baking pan by lining parchment paper across the bottom and sides of the pan, like a sling. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time Stir in the vanilla and almond extracts Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the macadamia nuts and white chocolate chips. Spread dough mixture in prepared pan. Bake for 30-35 minutes in the preheated oven, or until golden brown.

Ingredients
1 box Devil’s Food cake mix, plus ingredients as specified on package Peppermint Extract 16 oz Cool Whip whipped topping 3.9 oz box chocolate pudding mix, plus ingredients specified on package Peppermints or chocolate to garnish
Directions 1. Follow directions on cake box and bake and cool cakes. You may bake (2) 8” or 9” cakes. If making individual servings (pictured), use a cup to cut small cakes from the layers once baked. 2. While cake is baking, prepare the chocolate pudding as specified on package. 3. Flavor Cool Whip whipped topping with a few drops of peppermint extract to taste.

Place a few spoonfuls of Cool Whip in bottom of trifle bowl. Next, layer with chocolate cake. Layer with a few spoonfuls of Cool Whip. Layer with a few spoonfuls of chocolate pudding. Layer with cake, Cool Whip, and then pudding. Top with Cool Whip and garnish with crush peppermint and/or chocolate candies.
