Ingredients For the buns 500g strong white bread flour ½ tsp salt 2 heaped tsp mixed spice 50g caster sugar 50g butter, chopped into cubes 200g mixed dried fruits 7g sachet easy-blend dried yeast 200ml milk 2 eggs For the crosses & glaze 3 tbsp plain flour honey or golden syrup, for brushing
1. Tip the flour into a bowl and stir in the salt, mixed spice and sugar. 2. Rub in the butter with your fingertips. Stir in the dried fruit, then sprinkle over the yeast and stir in. Gently warm the milk so it is hot, but still cool enough to put your finger in for a couple of seconds. Beat with the eggs, then pour into the dried ingredients. 3. Using a blunt knife, mix the ingredients to a moist dough, then leave to soak for 5 mins. Take out of the bowl and cut the dough into 8 equal pieces. 4. Shape the dough into buns on a floured surface. Space apart on a baking sheet, cover loosely with cling film, then leave in a warm place until half again in size. This will take 45 mins-1 hr 15 mins, depending on how warm the room is. 5. When the buns are risen, heat oven to 220C/fan 200C/gas 7. Mix the flour with 2 tbsp water to make a paste. Pour into a plastic food bag and make a nick in one of the corners. Pipe crosses on top of each bun. 6. Bake for 12-15 mins until risen and golden. Trim the excess cross mixture from the buns , then brush all over with honey or golden syrup. The buns will keep fresh for a day. After that they are best toasted and served with butter.

Ingredients Pie of choice Potato x1 Peas Gravy Granules Butter
1. Place pie on oven tray and put in oven at appropriate temperature according to pie instructions. 2. Put water on the boil and add chopped potato. 3. Poke potato to see if cooked all the way through. Then drain and place back in pan. 4. Add peas to water and boil. Can also use green peas. 5. Using a masher, mash the potato to a texture of your choice, I myself am not a fan of lumps. Add butter and other seasoning to your taste. 6. Plate up and add optional gravy.

Ingredients Fish *your choice. Chips Optional Vinegar Salt Ketchup Mayonnaise
1. Find a fish & chip establishment (likely to be found in most highstreets or by the seaside) 2. Choose your fish. Normal variations that are available include: Cod, Haddock, Pollock, Coley, Plaice or Skate. This will be fried in batter. 3. Choose portion size of chips. A small is normally enough to feed a small family. Don’t underestimate the love of chips. 4. Add condiments, popular choices being: vinegar, salt and ketchup.

Ingredients 46g plain flour 1 egg 35ml milk 1/2 tbsp vegetable oil 2 Cumberland sausages 1/2 onion Mixed herbs
1. Heat oven to 240C/220C fan/gas 9. In a food processor, combine the flour, eggs, milk, mustard and some salt and pepper, blitz until smooth, then leave to rest for 30 mins. 2. Pour the oil into a metal roasting tin about 30 x 23cm and 7.5cm deep. Brush the oil all over the sides and bottom, then place in the oven. When the roasting tin is very hot and smoking, place the sausages inside, evenly spread out, and cook for 5 mins. 3. Give the rested batter a stir and pour into the really hot tin – take care as it may spit. Quickly sprinkle over the sage leaves and rosemary, then place in the middle of the oven. Do not open the door for 25 mins, then check – if needed, cook for a further 5-10 mins. Cook until puffed up and brown and the batter is completely cooked through. Serve straight from the dish.

Ingredients 35 g rolled oats 35 g wholemeal flour 20 g caster sugar 35 g margarine or butter 400 g cooking apples, peeled, cored and quartered 50 g sugar, to sweeten Cinnamon (optional) 1 tablespoon water Custard
1. Preheat the oven to 190째C/375째F/gas 5. Peel and core the apples, quarter and cut in to chunks. 2. Put the apples into a pan with the sugar and water. Cook over a low heat until nearly stewed and add cinnamon and more sugar to taste. Place in a small ovenproof dish. 3. Place the flour and oats in a bowl and mix well. Cut the margarine or butter into small cubes and add this to the oats and flour. Mix with your fingertips until it resembles an even crumb texture. Add the sugar and mix through. 4. Cover the fruit with the crumble mixture. Bake for approximately 20 minutes until the crumble is golden and the apple hot. Serve with custard.

Ingredients 225g very soft butter, plus extra for greasing 225g caster sugar 225g self-raising flour 4 large eggs, beaten 2 tbsp milk 3 tbsp cocoa powder, sifted 1 large orange, zest and 1 tbsp orange juice 50g orange chocolate
1. Heat oven to 180C/fan 160C/gas 4. Grease and line the base of a tin (8 x 21cm/ 2lb) with baking parchment. Beat the butter, sugar, eggs and flour together in a large bowl until lump free. 2. Split the mixture into two bowls, beat the milk, followed by the cocoa powder into one. Beat the orange juice, zest into the other. Spoon alternate dollops of the mixture into the cake tin, then use a skewer to create a marble pattern by dragging it through the mixture in swirls. Make sure you don’t overmix or you won’t see the pattern. 3. Bake the cake for 45 - 55 mins until golden and risen, and a skewer poked in comes out clean. 4. Leave the cake in the tin to cool, then turn out. Make up butter icing for the middle with left over zest and sprinkle icing sugar over.

Ingredients 4oz Butter/Marg (plus some for greasing the bowl) 4oz Sugar/Caster Sugar 4oz S/R Flour 2 Medium Eggs For The Topping: - Pick any (or choose your own) 2-3 tbsp Jam (any jam)
1. In a bowl cream the Butter and Sugar together until smooth. 2. Add in the Eggs, and beat quickly so that it does not curdle. 3. Once the Eggs are combined, add in all of the Flour, and combine together, try to get as much air in the mixture as possible. 4. Grease a separate bowl with a little butter. In the bottom of the bowl. 5. Cover with cling film or a plate and microwave for about 6-8 minutes 6. Once cooked remove the cling film or plate Place a large plate over the top of the bowl - holding the bowl and plate together - flip the bowl upside down and the sponge should land on the plate and put on topping.
