fter the supreme success of our first foray into publishing 12 months ago, I am genuinely thrilled to welcome you to the second edition of our Exclusive Magazine.

This is a chance for you, our cherished guests, to get to know us a little better – after all, there’s so much to tell you. So I invite you to take some time out of your busy schedules and indulge in a spot of armchair travel as we take you on a journey around Exclusive Hotels and Venues.

We launched our new and exciting website earlier this year and I would encourage you to spend a few minutes browsing the site as it really showcases all our properties wonderfully – even though I say so myself.

There’s lots to discuss...

Our new cookery school, SEASON celebrated its birthday in July 2016 and has been enjoying great success with classes hosted by the likes of Edd Kimber, winner of the very first series of the now iconic Great British Bake Off, as well as the UK’s Chocolate Master 2006-2010, Mark Tilling, recent winner on BBC2’s Bake Off Creme de la Creme. So if you’re looking for the perfect gift for a loved one, why not buy a voucher for one of the many classes on offer? Or book a class for yourself of course!

This year we have teamed up with Taittinger to bring you a new house pour Champagne – see page 13. And 2016 also sees a new era of chefs at Exclusive – see page 48 - as we welcome Matt Worswick to The Latymer at Pennyhill Park, Rob Potter as Executive Chef of The Bybrook at The Manor House and Ian Swainson at The Pass down at South Lodge. All three chefs bring a wealth of experience having worked at a number of critically acclaimed hotels and restaurants across the UK. We very much hope you enjoy the results of their creative skills.

Lastly, there’s just time for me to quietly mention that we are celebrating our 35th anniversary throughout 2016, something we’re all rather proud of. We hope you will be able to come and celebrate with us.

Rest, relaxation and a

good read When it came to choosing a stunning country house hotel for one of her novels, author Jill Mansell chose The Manor House. So we caught up with the writer to discuss her journey from NHS worker to Sunday Times Bestseller, and why, after 27 stories, she is still striking a chord with readers worldwide

S

tay at any Exclusive property and you quickly realise we want to make you feel rested and relaxed. From the exquisite beds and large tubs to the luxury lounges where you can sink into a sofa for the afternoon, we provide guests with a home away from home.

And for most people, indulging in some well-deserved ‘me time’ involves a good book, which is why we spoke to one of The Manor House’s biggest fans – author Jill Mansell.

Not content with simply visiting the hotel (on numerous occasions), Jill has even based one of her books there, which we think is high praise indeed. The story, titled Staying at Daisy’s, follows Daisy MacLean, a young woman who is re-united with an old flame when he gets married at the Castle Combe country house hotel where she works. Staying at Daisy’s is one of 27 published novels written by Jill, who has sold more than 10 million books to date.

The author also has a Sunday Times Number One Bestseller to her name.

When asked about the impressive sales and success of her work, Jill told Exclusive Magazine it’s down to a combination of reality and sheer escapism. “I think people read my books to be transported somewhere new. Many of my novels are based in a rural, idyllic setting such as Castle Combe, Cornwall or the Cotswolds.

It’s a way for people to explore somewhere they either love or have never been to.

But equally the stories revolve around nice people with real lives. So I make a connection with my readers, who can relate to many of the characters. I describe my books as ‘realistically lovely’. As well as being lovely, Jill’s books also touch on some hard-hitting topics, which it seems has only added to the writer’s popularity.

Tackling issues such as organ donation and Cystic Fibrosis, these stories can be as important as they are entertaining.

Jill started her working life with the NHS, in clinical neurophysiology. When she picked up a magazine article about writing a novel, the budding writer put pen to paper – literally. “I write all my books by hand, which people are often surprised about. It’s just the way I’ve always done it. No laptop or typewriter. My daughter now transcribes everything I write to the computer for me.”

Much like many first-time novelists, it took Jill a few attempts before an agent would sign her to help promote book number one. The author approached a third and final agent with her first book and the rest is history. “I thought to myself, this will be my third and final submission. If it doesn’t work out I’ll go back to the day job. And the agent told me she loved it and knew she could sell it to publishers. So that was the beginning of it all.”

Hello, my dearest darling girl, and, happy birthday! You’re twenty-five and I wish you all the love and happiness in the world I wonder if you look like me? Is your hair still long and madly curly? It’s so hard to imagine what you’re like now, but I do know for sure that you are kind, thoughtful, loving and beautiful on the inside and out. I hope your life is as happy as it deserves to be. Have you found a wonderful partner yet? Are you married? Maybe you have a child … wow, that’s an incredible thought! I could be a grandma by now! Well if I am, I bet you’re a fantastic mother. (And if you aren’t, you’re still fantastic anyway.)

I didn’t know how long to continue writing to you on your birthday, sweetheart. A part of me wanted to carry on until you were a hundred! But it looks as if the decision has been made for me, as the last few days haven’t been great. I’m writing this in the hospital (hence the less than glamorous paper) and it’s becoming harder to concentrate. They’re upping my morphine so I’m going to be sleeping a lot more from now on. And I don’t want to start scribbling gibberish, so this is another reason to make this the last letter…

Thank you for being the light of my life, the very best thing that ever happened to me. I wish you nothing but love, health and happiness.

The Manor

First mentioned in the Domesday Book in 1086, Nyetimber, or ‘Nitimbreha’ as it was then written, means ‘new timbered’ house. The estate later became part of the largest monastery in southern England and, following the dissolution of the monasteries in 1536, was owned by King Henry VIII himself! The King then gifted it to Anne of Cleves, his fourth wife. Today, the Manor House is a family home for the Heeremas, surrounded by these centuries of history.

The Perfect Setting

The south of England has the perfect conditions for producing the finest sparkling wines, with a relatively cool climate and good soils. Nyetimber has eight vineyards in West Sussex and Hampshire, all sitting on the very same chalk and sand soil that runs under the vines in Champagne. Each Nyetimber vineyard was carefully selected to ensure the ideal conditions for the slow ripening of the grapes to give the optimum level of acidity and the complexity and finesse that Nyetimber strives for.

Pennyhill Park The Windlesham Walk – 2km Windlesham Walk recommended by Windlesham Parish Council From Pennyhill Park, drive a short distance to the slip road next to St. John’s Church, where you can park. From the church, cross the road by Cedars Court and enter Bridleway 31. Birch Hall will be on your left. The bridleway, which can be muddy at times, veers left and passes a Dutch barn with stables beyond on your right. It then runs slightly downhill beneath a canopy of holly trees, eventually passing a field to your left with wide views across farmland to the M3 and High Curley beyond. The bridleway then meets Footpath 65a. Continue straight ahead along the bridleway, which runs between gardens and eventually emerges into New Road.

Turn right, cross over by the ‘Keep Left’ bollards and head for a tarmac path leading to Curzon House. If the main gate is closed you can go through the kissing gate. Continue ahead through another kissing gate onto a wide, pleasant, grassy

path between posts and rail fencing with horses in the paddocks beyond. Go through the next kissing gate, the path now runs straight ahead along the edge of the field with a fence on your right, rises slightly then drops down to another kissing gate and a junction of tracks. The path ahead crosses a plank bridge over a deep ditch and enters Windlesham golf course. Go through the kissing gate, do not cross the bridge but turn right on to a wide grassy track keeping the ditch, bordered by willows, on your left.

Head towards the waymark post you can see straight ahead, near the entrance to a culvert, then turn right along a well-defined path which curves round to the left, rising to emerge at School Road via another kissing gate.

On reaching School Road, cross over to take advantage of the pavement and turn right. At the junction with Church Road bear left into Kennel Lane. Cross over to enter the footpath via a staggered metal barrier.

The narrow path runs between hedges before widening to pass the entrance to the extension to Windlesham Cemetery, then swings right on a broad track to take you back to Windlesham Church.

Walks and wellies | EXCLUSIVE HOTELS AND VENUES

SOUTH LODGE BUTTERFLY WALK – 5KM NEWTIMBER HILL, POYNINGS

South Downs National Park

WELL-Y I NEVER The plastic buckle on a Hunter welly is thought to have been requested by a Yorkshire farmer – who kept waking his wife up in the early hours when the metal version rattled

Walk recommended by The National Trust Hop into your car and take a right out of South Lodge heading south along the A281. Follow the road all the way to a small roundabout at Poynings, which you go straight over. Shortly after, park on the right at the public car park/lay-by. Walk up the chalk track that leads to a stile. Climb over and head diagonally and gradually upslope and left, aiming to the left of a prominent clump of ash trees on the summit. Pick up the main cattle track that skirts below this clump. Use this cattle track to head above the field terraces down the slope, through an area of myriad ant hills, towards the far upper slope. This track will lead you into a corridor through woodland, by an old post. But on windy days, from the stile, hug the lower path that runs along the slope bottom, through two belts of trees, eventually reaching the top of some steps on your left. You then need to ascend a very steep slope to join the cattle track mentioned above.

Follow the main cattle track into the ash woodland, into a large open glade. There you’ll find a dark brick building base (originally a milking stand). Here, after admiring the view, turn right and uphill, through a narrow path across a belt of scrub and out on to open short turf. Cross this turf, aiming straight ahead towards the old dew ponds.

Turn right down a vehicle track by the main dew pond. This runs through hawthorn scrub out on to open downland in the saddle between two hills. Here, bear left and down along the scrub edge, turning near a lone ash tree on your right.

Head down and slightly left, past old field terraces. Then cut left and up to meander along the lower slope of the south-facing combe, continuing until you see a fence line in front of you. Then aim for the gate in the bottom right corner of the fence.

After the gate, walk along cattle tracks running along the lower slopes. Avoid the bottom track as that runs through rather flowerless and butterfly-free terrain.

Eventually come down to the track, to leave the slope by a field gate.

Now turn right on to the farm lane, through another gate and follow the track through the farm. You can visit the old donkey wheel and some of the old farm buildings. The tea shack is in the furthest of the small farmyards, just off the main track. Carry on along the lane, continuing straight on and going through a field gate back on to the down. Aim to the left and downslope of the old chalk quarry, before aiming right upslope a bit, keeping the ash tree belt on your left. Follow a cattle track along the lower downland slope back to the stile by the lay-by.

Walk recommended by BBC Countryfile Take this walk with family and friends and explore the setting of Agatha Christie’s novel, The Murder of Roger Ackroyd. From the free car park north of the village, turn right and walk downhill. Take a left at the Market Cross and walk down The Street.

You’ll then cross a packhorse bridge, where you’ll spot an amazing photo opportunity to capture some memories of your trip.

Next, pick up a path running left, signed Long Dean. The path goes over a stile and alongside and above the brook, with views opening up as you get higher. Cut through woodland and climb several stone stiles.

When you reach a junction of paths and a lane at Long Dean, turn right on a bridleway signed to Ford. Carry on along the main path and, when you come to a mill, pick up a path to the right under some trees. Then, go through a gate and keep on the upper path above a paddock. When the track goes right, turn left over a stile, and follow the path through a field. Climb a stile to the

road and walk left towards Ford.

Turn right at the main road, and then right along Park Lane, following a track past Church Farm House and a series of cottages. Turn left at a new build in Cotswold stone, go through a wooden stile and carry on into a wooded avenue. You will soon reach an open meadow called Danks Down, a botanically rich limestone grassland and area of Special Scientific Interest. Continue along the path and cross a stream. Head right, uphill on a clear track.

As you climb, views open up over the valley to your left side. Carry on alongside the fence. Pick up a path following the contour, and keep to the lower path, walking along a grassy bank above trees. Climb a stile and follow the path as it passes through the trees.

When you come to a road, stay on a path that runs parallel then, after 30m, turn right over a stile and cross the road. Don’t take the stile opposite, instead walk left up the road for a further 10m and take the next path right. After this, follow a footpath through trees. When you reach a Y-junction, turn right and descend towards the road.

Finally, take a left and follow the road back to Castle Combe.

LAINSTON HOUSE THE KINGFISHER TRAIL – 10KM TWYFORD DOWN Walk recommended by the Hampshire and Isle of Wight Wildlife Trust Make your way to Compton Lock, (please ask at Reception for directions) where the walk begins. Go through the right hand gate into the water meadows and follow the path heading southeast. Head through the next gate and keep to the left, walking along the edge of the field. When you come to river, cross the bridge and continue.

Walk up Berry Lane, past Twyford Parish Church. Cross Twyford Road and carry on to Bourne Lane. Then, at Bourne Field take the footpath straight ahead. At the end of the path, turn left and follow the road to the waterworks. Before you actually get to the waterworks, turn right onto the track under a vehicle barrier. Turn left onto Mare Lane and then at the t-junction cross the road and join the footpath to the motorway.

Cross the bridge over the motorway and take the path around the left hand side of St. Catherine’s Hill. When you reach the Itchen Navigation, turn left and follow the towpath south to the motorway. Cross the road at the level crossing and follow the pavement along the Twyford Road for a short distance until the footpath turns right off the road. Follow the Itchen Navigation south.

WHERE DID WELLIES COME FROM? Officially called the Wellington Boot, a similar version of the wellies we wear today were commissioned by Arthur Wellesley, 1st Duke of Wellington in the early 19th century.

The Duke asked shoemaker George Hoby of St. James’ Street, Mayfair, to adapt the Hessian boot and make it in calfskin leather.

During the 1840s and 50s, the boots were treated with wax, making them shiny and more hard-wearing. They soon became the mark of a distinguished gentleman.

Meanwhile, Charles Goodyear (of the tire company fame) had invented the vulcanisation process and some American boot makers began making footwear in rubber. Soon after, a French company called La Compagnie du Caoutchouc Souple (The Flexible Rubber Company) filed a patent for new rubber boots in the shape of the Wellington Boot, and they became so popular the company was hand making thousands of pairs a day by 1857. The

company is now called Aigle and still makes high quality boots and clothing today.

Henry Lee Norris, an American Entrepreneur, moved to Scotland in 1856 and began producing rubber boots, which he thought would be lucrative given the amount of rain in the region. Then, during the first and second world wars, orders for the rubber boots skyrocketed. Combine this with the rise in production and farming postwar and the welly boot was very much a part of British culture.

Throughout the 1900s, the British Rubber Company continued producing the boots for the mass market. Several variations followed, including more colourful and comfortable styles. Shortly after the Millennium, the company rebranded its boot making division to Hunter Boot Ltd. And the Hunter brand is now synonymous with expertly made, durable (and somewhat trendy) wellies.

ally Gunnell is most well known for being a national treasure. Her first and probably most prominent role was as a track and field athlete who won Gold for Great Britain at the 1992 Olympic Games. A myriad of medals and titles followed, but these days Sussex resident Sally can be found helping businesses instil the importance of healthy living in their employees.

It’s not something you immediately associate with big business – a commitment to giving staff members the impetus or time to take care of themselves, especially if it affects the bottom line. But as we discovered during our chat with the Olympian, a happy workforce is a productive workforce. “These days people spend a lot of time at work, and it can be tiring and stressful juggling everything. So staying healthy, being active and eating well leads to more energy and allows us to be more resilient. This has a positive effect on the individual as well as the organisation that employs them, because they end up dealing with less illness and absenteeism in the workplace”, Sally told Exclusive Magazine.

As Sally explained to Exclusive Magazine, an employer that shows an interest in the wellbeing of its staff is one people will want to work for. “Companies have offered gym memberships and health insurance for years. But what this says about a business is we’re committed to your ongoing health and wellbeing. It’s a great way of attracting new staff.”

Such perks must be long-term however, as a week-long fitness ‘camp’ is not going to create lasting change within an organisation and will only provide a fleeting burst of motivation for its team members. For a company to see benefits of corporate

wellbeing, it requires cultural change from the top and a belief that the health of its staff is paramount. Sally added: “The work we do and the change we make in businesses is often developed over time.

A healthy living week won’t get much return on investment for a company. But if you encourage smaller changes within the business, people begin to change their habits and lifestyle. And demonstrating a commitment to the programme is crucial.

For example, in this very fast paced working culture, employees need to know it’s okay to go outside for a walk at lunch time.”

From Hudson Hawk to Hotel Secrets, discover more about one of the world’s greatest stars of stage and screen

H

e’s the talented performer from Swaziland who became a British export, well known for roles in films such as Withnail and I, Dracula and a host of other Hollywood hits.

Yet, with a TV, stage and film career that spans more than 30 years, there’s plenty you might not know about producer, director, actor, writer and now perfumier, Richard E. Grant. In an ‘Exclusive’ interview, Mr Grant answers a few of our questions about his life, career and, of course, his love of hotels.

Q. You’ve appeared or starred in over 80 films and television programmes.

Do you have a favourite memory throughout your career as an actor?

Q. You act, direct, produce, write – even created a fragrance! What do you enjoy spending your time on most?

I was born with ants in my pants, so always have multiple projects on the go, and each one proves stimulating and an interesting challenge.

Q. YouR diversity as an actor is impressive – from Camelot to Spice World. Do you have a favourite genre when working in television and film?

Playing comedy with deadpan seriousness is enormously enjoyable.

Writing and directing my autobiographical film WAH-WAH, released in 2006, was the most creatively challenging and fulfilling experience I’ve had.

Q. HOW DO YOU LIKE TO SPEND YOUR LEISURE TIME?

Checking into a hotel always feels like stepping into a movie for real. Being looked after and enjoying great service is one of the great luxuries of life.

I regularly go to the theatre, ballet and opera, and like junk shops and antique markets as there is always something to discover that I never realised I wanted!

Q. WHAT IS YOUR FAVOURITE PART OF THE UK? London. Ever since emigrating here in 1982 from Swaziland, I’ve considered it home and have never tired of its incredible variety and history. THE greatest city on the planet.

Q. WHAT IS YOUR PASSION IN LIFE? Scent. I have obsessively ‘missiled’ my nose at everything in sight ever since I can remember. Sniffing the world is one of my greatest pleasures.

Q. WHY DID YOU DECIDE TO CREATE A FRAGRANCE? I tried to make perfume out of rose and gardenia petals boiled up in sugared jam jars when I was 12 years old in order to impress a girl I had a crush on. It took me another four decades to actually create a fragrance, with the encouragement of Anya Hindmarch, who gave me the courage to pursue this lifelong secret dream.

Q. WHAT IS THE REASON FOR THE NAME JACK? I wanted a quintessentially British name to match the pillar box red packaging and vintage style Union Jack bag that ‘sleeves’ the perfume bottle. So Dylan Jones, editor of GQ Magazine, suggested I call it JACK, which I did.

Q. TELL US A BIT ABOUT THE FRAGRANCE – ITS INGREDIENTS AND WHAT MAKES IT SPECIAL The original JACK launched at Liberty in April 2014 has top notes of lime, marijuana

and mandarin, as well as nutmeg, pepper, frankincense, musk and tobacco absolute, which are my favourite ingredients. My intention was to make an addictive, lickably more-ish scent that was ‘unisexy’ and quintessentially British and individual. Which is why on the back of the packaging in small letters, it says ‘JACK is my ‘signature’ in scent’.

It won Best New Independent Fragrance last year, which enabled me to finance a second scent called JACK, COVENT GARDEN, which launched spring 2015. Top notes of orange, rose, carrot and iris in homage to the fruit, flower and vegetable market that used to exist in the heart of London’s theatre land.

Q. WE LOVED YOUR SHOW RICHARD E GRANT’S HOTEL SECRETS. WHAT WAS THE MOST SURPRISING SECRET YOU UNCOVERED? That there was a bespoke railway station built for President Roosevelt in the basement of The Waldolf Astoria, New York, below the ballroom where the official enquiry about the Titanic disaster took place.

Q. WHAT DO YOU THINK MAKES STAYING IN A HOTEL SO MAGICAL / ENJOYABLE? Freedom from any domestic responsibility, being able to order room service and the total anonymity of sleeping in a strange bed. Our new cookery school, SEASON, welcomes guests who want to develop their skills in the kitchen. But as our editor James Hood discovered, a day being taught by one of our talented chefs is about experiencing, enjoying (and eating) food as well as preparing it

W

hen you think about cookery schools, you might have a particular image in your mind of what they will be like. I expected mine to look similar to BBC’s Masterchef - sterile stainless steel surfaces, echoing grey walls, cold concrete floors and an even colder stare from an experienced judge (AKA the teacher). So I was pleasantly surprised on arrival at SEASON, Exclusive’s new cookery school, to discover that I instantly felt at home. Set within the grounds of beautiful Lainston House, with a stylish, warm interior design scheme, dining area and state of the art kitchen, it’s clear as soon as you set foot in the door that this is a venue just perfect for learning, whatever your skill level.

And as someone who rarely spends time whipping up a masterpiece in my own kitchen, there was a certain amount of trepidation prior to parking up at SEASON. Fortunately, I was instantly put at ease by friendly faces, and the chance to relax, chatting to fellow classmates over coffee and a croissant. They (thankfully) had a varied range of abilities when it comes to sautéing, sifting and sugar spinning. While some had very little experience hovering over the hob, others loved spending evenings prepping a meal for their family, and were there to hone their skills. Either way, it didn’t matter, because SEASON is open to all and is more about enjoying the day than passing any exam. With an earthy feel, emphasised by exposed brickwork,

wooden flooring, nearby forests and the sounds of the resident duck family quacking on the lawns outside, you get a sense that SEASON is committed to all things fresh and natural. A kitchen garden a stone’s throw away supplies, whenever possible, the kitchens to Lainston House and SEASON with ingredients, meaning their carbon footprint is often zero and the food is fresh as can be.

Gordan Ramsay once said, “If you want to become a great chef, you have to work with great chefs”. So it’s good to know Exclusive has gathered some of the brightest, most talented chefs from across the group as well as a few skilled trainers from elsewhere to impart their experience and knowledge.

The teaching talent you can expect from your course includes the likes of Executive Chef at Fanhams Hall Paul Bray, former Head Chef at The Camellia restaurant at South Lodge and Masterchef: The Professionals winner Steven Edwards, and Great British Bake Off winner Edd Kimber.

On this occasion, for my course, Olly Rouse, the Head Chef at Lainston House is the pro leading us all to culinary excellence.

Today’s class is ‘Hosting a Seasonal Dinner Party’ and on the menu – scallops with pancetta, porcini mushrooms and a basil/pea puree, followed by beef fillet with beetroot, broccoli, corn and pomme duchesse, finishing with a deconstructed cheesecake, consisting of white chocolate mousse, crunchy oats, caramelised banana, peanuts and passion fruit. While learning how to prepare and cook all of this food is the priority, our class also focuses on how you can enjoy a dinner party, spending as much time hosting and chatting with your guests as you do hidden in the kitchen. Olly guided us through each stage, starting with any preparation that can be carried out long before the day of your dinner. That includes mixing and refrigerating your mousse, oats and prepping your pea puree, for example.

Next it’s on to the jobs you need to do before your guests arrive, such as seasoning your beef fillet and baking.

The format of our lesson at SEASON was simple and easy to follow. Our host Olly gave a demonstration of what needed to be done for each stage, passing on helpful and practical advice, before all the necessary ingredients (perfectly pre-prepared for us by the SEASON team) were distributed to the class. Then it was our chance to show off what we’d learnt. Using our own state of the art cooking stations, we followed Olly’s guidance as well as helpful recipes provided to create something special. And

if you’re wondering whether you get to enjoy the fruits of your labour, the answer is absolutely! What you eat at SEASON will depend on the class you’ve chosen and how long it runs for. Today, on our full day course, we sit down as a group to enjoy our scallop starter followed later by the main course of beef along with a beautifully paired glass of red wine.

In addition to the superstar chefs showing you how to create delicious dishes at home, the kitchen facilities and equipment at SEASON area also what makes this school so special. from its students, some of who have returned numerous times. “It’s been going very well so far. People really get the wow factor when they walk in. Then they get a second wow with the kitchen. And another when they eat their food! The classes are never too big, so they can enjoy the demos and then get to have a go themselves as the chef walks around helping them learn.”

I was curious to know why Exclusive decided to open a cookery school. Sylvain told me it’s all about immersing guests in everything food-related. “We live and breathe great food at Exclusive. Our chefs are truly passionate about what they do and we aim to ensure all our ingredients are as good and fresh as can be. So it made sense for us to open a cookery school. It’s not just about delivering food to food lovers. It’s about showing them how it’s done, bringing it to life. We like to create experiences.”

There have been some changes in our kitchens recently, with an intake of accomplished new chefs. Allow us to introduce you to the chaps keeping things fresh when it comes to dining at Exclusive Hotels and Venues Matt Worswick Head Chef Matt Worswick at The Latymer A familiar face to fans of foodie TV, Matt has appeared on BBC1’s MasterChef: The Professionals, securing his place as a semi-finalist in the 2010 competition. Most recently he reached the North West regional finals of the BBC2’s Great British Menu 2015 for which he designed dishes inspired by the Women’s Institute.

Matt describes his dishes as bold and says his food has masculine flavours that pack a powerful punch on the palate. “I’m big and Northern, and I think that comes through in the style of my food”, Matt told Exclusive Magazine. The star chef’s philosophy towards food is simple – “eat well.” Using

locally sourced ingredients to create dishes inspired, if not dictated, by the seasons is important for Matt. By using the forgotten cuts, including offal and sweetbreads, the chance to be creative and gain maximum flavour is an aspect of cooking that really excites him. Taking the best ingredients through complicated processes is a method Matt adopts to create phenomenal yet simple dishes.

Matt’s career began with a ‘no experience required’ apprenticeship at The Crofters Hotel in Lancashire, where he enjoyed his first taste of working in a kitchen. He quickly advanced with a move to The Isles of Scilly as an apprentice chef at St. Martins-onthe-Isle, an award-winning 3 AA Rosette restaurant. It was under the supervision of head chef Kenny Atkinson that Matt learned the foundations of what would become a Michelin level culinary skill set and where he was officially recognised as a Michelin Rising Star in 2007. Matt went on to be sous chef at the Relais and Chateaux Gravetye Manor in West Sussex followed by head chef at the 3 AA Rosette, 5 Red Star Glenapp Castle where he was awarded a Michelin star at just 26 years old. Matt then went on to enjoy his Executive Head Chef position at the 4 AA Star Hotel and 3 AA Rosette Thornton Hall Hotel & Spa in the Wirral leading a team of 29 chefs across its busy banqueting, brasserie and fine dining restaurant and joined The Latymer at Pennyhill Park in early 2016.

OLLY ROUSE HEAD CHEF Lainston House Olly Rouse is the Head Chef at Lainston House. Olly oversees all of Lainston’s food and beverage including the award-winning Avenue restaurant, where he has introduced a menu focused on preserving and cooking methods that date back hundreds of years.

Meat and fish come from local suppliers that Olly has established relationships with throughout his career.

Olly was previously head chef at Coworth Park in Ascot, where he helped achieve a

series of accolades including a Michelin Star in its first year of opening and 3 AA Rosettes. His other experience includes The Vineyard at Stockcross as sous chef and Pétrus under Gordon Ramsay as well as stages at Le Meurice and The Fat Duck.

The Lainston House chef works with some of the UK’s best suppliers including Vicars Game in Ashampstead for meat, and Flying Fish in Cornwall. Seafood is caught from day boats, to ensure the freshest fish possible is served at our restaurant. Main courses on the à la carte menu include veal rump with goat’s curd, lemon and braised cheek; braised lamb shoulder, with tomato, courgette and gremolata and turbot with winter cabbage, salsify and potato purée.

Robert Potter Executive Chef The Manor House Growing up in the West Midlands, Robert knew from a young age he’d one day have a career in the kitchen. At secondary school, Food Technology was his favoured subject and he continued his training at Walsall College where he obtained NVA level 3.

After college, Robert secured a position as commis chef at The Bay Tree in Birmingham, under Michelin starred head chef Andy Waters, one of Robert’s most influential peers to this day. He went on to work as sous chef to Dominic Chapman at The Royal Oak Paley Street, where he had the opportunity to develop his technique.

As a true advocate for seasonal, locally sourced produce, Robert has a passion for serving fresh dishes, simply presented

Ian Swainson Head Chef The Pass, South Lodge Ian Swainson, is our new Head Chef at The Pass at South Lodge. Ian joins the Exclusive family from luxury country house hotel, the Samling, in Cumbria where he earned the restaurant 3 AA Rosettes and a Michelin Star.

Ian’s food has been described as modern fine dining with fabulous flavour. He has been cooking Michelin-starred cuisine for over 15 years in hotels and restaurants including L’Ortolan in Reading, Seaham Hall in County Durham, Le Becasse in Ludlow and Chewton Glen in Hampshire.

The chef told us: “I am delighted to be joining The Pass and the wider team within the Exclusive Hotels and Venues group that share my creative vision and support my ambition to deliver the very best – I am really looking forward to developing my food within such an established restaurant and I am really enjoying developing my menus within this fantastically equipped kitchen.”

Working alongside these great teachers and mentors, Robert gained his own unique style and confidence, not only in his food but on a management level which he now brings to The Manor House.

t’s a relatively new attraction, having opened in 2014, but the Bombay Sapphire Distillery is already winning awards.

The venue, which you will find just 20 minutes from Lainston House, achieved ‘Gold’ from Visit England 2016 Awards For Excellence in the Small Visitor Attraction category. The accolade is a testament to how much effort has gone into making this a fully immersive experience for guests and explains why 60,000 people chose to explore the site in its first year of opening.

Unveiling the secrets (or at least some of them) that distillers use to create our

favourite tipple is not a new concept. For years visitors to vineyards, breweries and distilleries have been able to lift the lid on where beverages originated, how they are infused with various ingredients and, of course, how they come to taste so good. But at the Bombay Sapphire Distillery, guests are taken way beyond simply listening and tasting. And it’s an event that can be enjoyed not only by gin lovers, but historians too. There are two main options at the distillery. Visitors are welcome to take a map and tour specific areas of the grounds on their own. That includes viewing the museum, where you’ll discover the history of

the gins made by Bombay Sapphire and why they differ. You will also have access to the botanicals room – a place to see and sniff all the ingredients used to create Bombay Sapphire gin, including the juniper berry, angelica, coriander and lemon peel.

The second option, a full tour, offers all of the above and more. Making it a unique experience unlike most others, the Bombay Sapphire Distillery guide will take you through the history of the gin and the the old paper mill buildings within the grounds, which date as far back as 903 AD. Perhaps the most impressive moment of the tour is something that is rarely accessible to the public – a hot house where visitors can walk amongst the plants used to grow the botanicals that make up their favourite Bombay Sapphire gin. These greenhouses look as impressive from the outside as they do from the inside, encased in a striking sculptured structure; a creation by world famous designer Thomas Heatherwick and commissioned especially by Bombay Sapphire.

Tour Bombay Sapphire’s distillery and you quickly realise how much effort goes into creating the botanical blends we drink when we order a G&T. It’s clear that Bombay Sapphire’s team are all passionate about producing the finest gin possible; which is why the process of producing their gin is truly unique. While other gin makers may boil their botanicals directly in the spirit to achieve their flavour, the taste of Bombay Sapphire is created through a Vapour Infusion process. The 10 precious botanicals used in Bombay Sapphire gin are held separately from the spirit in perforated copper baskets, and when the heated vapours rise, the distinctive flavour of the botanicals are released. The result? It’s a complex aromatic liquid that delivers a broader, more balanced flavour.

Although a walk around the distillery will give you plenty of information about the ingredients used in Bombay Sapphire gins and the vapour process, only four people in the world know the final recipe. A brief history of gin It is believed that the first gin was produced in the early 17th century in Holland, although there have been claims it was made before that in Italy.

The term gin is thought to be an abbreviation of the word Geneva, which is the Dutch name for the main ingredient in the drink - Juniper. During the Thirty Years War in the 1600s, British soldiers shared what was called ‘Dutch Courage’ before battle and as a medicinal drink. Gradually they started bringing it back to England.

With production simple, cheap and unlicensed the drink’s popularity grew, accelerated by William of Orange who took the British throne in 1689 and banned expensive imports of French brandy and rum. People were encouraged to distil gin at home, making the drink popular with the

poor who suffered ill health and delirium as a result. With a national gin-induced crisis imminent and after the death toll exceeded the birth rates in London, a tax was introduced in the mid 18th century along with a licence that meant it could be sold in public houses.

Gradually gin went from a medicinal beverage drunk by the poor to one that was enjoyed in moderation by the middle classes. It is thought (although difficult to confirm) that British soldiers and officers in India mixed gin into tonic in the early 19th century. Tonic had already been made into a drink with high levels of quinine, an antimalaria ingredient. With soldiers given gin rations, mixing it with their tonic not only made the taste better, but helped the drink go further.

t’s thought that Anna Russell, the 7th Duchess of Bedford, was one of the first to ‘take tea’ in England as far back as the 1830s. It’s been said that the Duchess complained about ‘a sinking feeling’ in the late afternoon, referring to her hunger. At that time, it was common to only have two meals a day – one at breakfast and another at dinnertime (around eight o’clock). To satisfy her craving, Anna would request a pot of tea and a light snack, which would be delivered to her private boudoir in the afternoons.

Over time, Anna invited friends to join her and hosted afternoon tea in rooms at Woburn Abbey (which is not too far from

our venue Fanhams Hall if you’re visiting).

It was such an enjoyable way for the ladies to socialise that the Duchess continued the engagements when she moved back to London. Invitations would be sent by messenger asking friends to join her for ‘tea and a walk in the fields’.

Other socialites and hostesses soon followed the trend, either returning the favour or inviting their own friends for tea, too. It wasn’t long before tea in the afternoon was taking place throughout every fashionable society. And ladies everywhere were dressing up for chat, sipping tea and nibbling on sandwiches.

Over time, and throughout the 1900s, tea

rooms became all the rage and were a popular place to meet friends and share gossip.

Unlike many places, it was considered acceptable to attend tea with girlfriends rather than a male chaperone. But later, stylish hotels would incorporate tea ‘dances’ at which fashionable men and women would attend together.

Today, almost 200 years after the Duchess of Bedford introduced her delightful way to enjoy an afternoon treat, we’re still treating ourselves to a little tea (or glass of bubbly), some delicious sandwiches and delectable cake. Fortunately, corsets are no longer the fashion!

The phrase ‘high tea’ became widely used after the lower and middle classes adopted a later, more supper-like tea at around 5pm. This was instead of dinner and was referred to as ‘high’ because the tea was served at the dining table as opposed to the lower tables and more comfortable setting used for afternoon tea.

Make our scones at home Recipe by Harriet Mitchell, Chef de Partie at The Bakery at Pennyhill Park INGREDIENTS 500g plain flour 36g baking powder 2g fine salt 100g caster sugar 75g unsalted butter 165g whole milk 2 medium sized eggs 150g golden sultanas (optional)

METHOD Sieve your flour and baking powder into a mixing bowl and add the sugar and salt. Add the soft butter and mix it in with a wooden spoon until it looks like fine breadcrumbs. Make sure that your milk and eggs are at room temperature and then add to the mix and work it all into a dough. If you are including sultanas, split your dough into two equal halves and knead them into one half. Roll out the dough to 20mm thickness and cut out your scones using a circular pastry cutter approximately 6cms in diameter. Egg wash your scones, place them onto a baking tray and leave to prove in a warm place until they have ‘puffed up’ in size. Bake in the oven for 20 minutes at 180°C / gas mark 6. Then pop the kettle on!

Serve with lashings of jam and clotted cream, or whatever you prefer.

yms around the world have evolved significantly over the last couple of decades. What started out typically as a room with a few treadmills, bikes and weights has turned into a billion-pound business – and it’s not showing any sign of slowing down.

These days, we can choose from a range of machines that target any muscle group or attend an array of classes that get us a step (or should that be 10,000 steps?) closer to our goal weight. But now new technology is helping to improve our health and fitness even further, with equipment, apps and wearable kit that monitor our activity, both in and out of the gym.

At our state of the art gym at Pennyhill Park, you’ll find the very latest Technogym® equipment to help you get more out of your workouts. And as our Fitness Manager Greg Strong explains, a corresponding app for your smartphone will help you maximise the results. “The way I work is much like most other gym trainers. I meet with clients who want personal training or advice and I can set a programme of exercise that will help them achieve their objectives. Sometimes that’s about weight loss, others want to bulk up and some simply want to increase the amount of exercise they do for health reasons. The difference now comes from our unbelievable Technogym equipment, which feeds data to and from a smartphone using an app called MyWellness. What this means is you can track every part of your day in terms of the activity you participate in – whether that’s mowing the lawn or doing a 30 minute run. This information is then stored, so together we can see how much work has been done between sessions.”

The Technogym equipment and MyWellness app is part of a trend that is helping people monitor their fitness round the clock – from the amount of hours they sleep to the calories they consume. The app means that Greg’s clients can work out in the gym without his supervision and upload that information to help him tailor their next training session together. “People can easily load the information from their workout onto the app. And the beauty of the Technogym equipment is that it can automatically tell the app what has been done – for how long and at what pace, for example. This gives me as a trainer really valuable information when I’m planning a programme. Equally, I can actually set a programme up, so my clients know exactly what exercises or circuits they should do, even when I’m not there”, Greg added.

many of Greg’s clients to focus on wellbeing while they travel. He added: “Some of the people I train travel away either on holiday or for business. It can be tricky to keep track of what you do in the form of exercise or what you eat while you’re not in a typical routine. MyWellness makes it easy, as they can manually enter the information whenever they choose, which gives us both a really good idea of how healthy they are on the road.”

If you’re new to the gym, or something of a technophobe, you’ll be pleased to know the MyWellness app has been designed to be user friendly. Once Greg has set a plan, it is sent to your smartphone, which remotely connects directly to the machine you’ll be using. So there’s no number crunching, entering speeds or distances – the app and equipment does everything for you.

In addition, videos are available instantly to demonstrate how to do particular exercises correctly, if you’re unsure.

Rather than replacing a personal trainer, the latest Technogym equipment and MyWellness app enhance the results you can expect. As Greg explains, when it comes to improving your health, knowledge is power. “The more information we can share back and forth about my client’s activities and abilities, the easier it is to plan a health and fitness programme. Everything counts – the walking you might do to catch a train or the calories you consume. It’s a great motivator, too. We can book a training session and the app will remind my clients, so they never forget. I say it’s like having me in their pocket.”

Whether you’re just starting out or a seasoned pro, when it comes to golf there is always room for improvement. So with advice to accompany every hole on the course, our Golf Coach at The Manor House, Michael Walters, passes on 18 handy tips for playing at your peak 1. Be prepared

3. Hydrate

Make sure you arrive at the course in plenty of time to be tuned in to the environment.

Allow some time to practice. And be down at the tee in plenty of time, so you don’t have to rush.

Make sure you have enough fluids in your system before you tee off, and then drink plenty of water or electrolyte based drinks on the way round. It might sound incredibly obvious, but the hotter the day, the more you need to drink.

2. Got everything you need?

Don’t carry more than you have to around a golf course. Many golfers take too many balls, bottles and other unnecessary weight.

And if you won’t need your waterproofs, don’t take them with you.

4. Wash Wash your golf clubs and grips regularly.

Keeping the heads free from dirt and grime is a no brainer. What a lot of golfers don’t think about is their grips. Wash them regularly with soap and water, and it will make them last longer and easier to hold.

5. Recalibrate Recalibrate your distances. In the winter we hit the ball shorter distances, and as summer appears and the warmer weather starts to arrive, the ball flies further through the air and travels further after landing.

Spend time on the practice ground working out how far each iron travels and start applying that when you hit the golf course.

6. Avoid distractions Avoid distractions on the course. Turn your mobile phone off - it will only take your mind off the task at hand. And annoy your playing partners!

7. Practice makes perfect Regular practice with correct thoughts will improve your game.

8. Dress for the conditions Check the weather forecast on the morning of play, and try to dress accordingly.

9. Consider lessons Take lessons with a PGA Professional. If you look at the top of the leaderboard at your club over the course of the year and see how it relates to those people taking regular tuition, you may be surprised just how many actually do have lessons. Even the best golfers are always training and learning.

10. Plan the hole in reverse When on the tee, plan the hole in reverse. Work out where on the green you want to be putting from, the best approach from the fairway to play it there and how you want the tee shot to go to get you there.

11. Practice swings Take practice swings before you hit the shot.

If only to tune your body in to the feeling you want it to have when you play the shot for real.

12. Focus on the hole at hand Don’t look too far back or forward. The shots that you have already played, (good or bad) and shots still to come can do nothing to help you on the hole you are playing now.

13. Watch the wind direction Know where the wind is coming from.

Sometimes you are sheltered on the course and can’t feel the wind, but that doesn’t mean it isn’t there.

14. Play your own game Play within your capabilities. A glory shot is called that for a reason.

15. Be particular about putting Don’t attack every putt that you have.

Sometimes a defensive play is called for. A two putt shot isn’t always a bad thing.

16. Accept bad shots and move on You will play bad shots. Golf is not an easy game. So accept these shots for what they are, take a sip of water and work out how to rectify your error.

17. Swing from the ground up Build a firm and stable base in the lower body, and keep that firm foundation throughout your swing. Swing from the ground up.

18. Enjoy!
