Creating Magic on Mana

Mana Island Resort & Spa in the Mamanuca group of islands has embarked on an ambitious project to change the perception of island cuisine in Fiji, with a multi-million dollar investment in their food and beverage operations. It is being led by multi-award winning chef Lance Seeto who shares the news in this feature.

I

sland cuisine is often seen as secondary to a resorts accommodation and watersports facilities but food has become such an integral part of the cultural experience, especially in countries rich in culture like Fiji. Food tourism provides the traveller the opportunity to experience and connect to a country’s diversity through culinary exploration of produce, unique flavours and artisan technique not seen elsewhere in the world. Why come all the way to Fiji to dine on foods that we can find back in our home countries, often cooked much better by professional chefs with decades of experience in the culinary arts. It is something I learned on Castaway Island, but a cryptic phone message earlier this year was to convince me to make the move from my island home of nearly six years to join one of the most ambitious culinary projects the Fiji islands has ever seen. The Japanese-owned Mana Island Resort and Spa has thrown down the gauntlet and challenged 8

itself to become the first island dedicated to the palate of gourmet travellers with 10, yes 10, cafés and restaurants inspired by Fijian produce, Fijian flavour and Fijian cooking technique. The dream: to transform the family island resort, not previously known for the best food, into a gourmet foodie’s paradise. It is a challenge I just couldn’t refuse! The resort is nearing completion of an FJ$10 million refurbishment of its main food complex and poolside dining with live buffet stations; an Asian bistro; a live kitchen; and a café dedicated to children under 12 years of age. Within the Mamanuca complex is a wine cellar called Latitude which will stock the best imported wines paired with a matching canapé menu of aromatics, herbs and textures, as well as the exclusive Nasu Teppanyaki restaurant, featuring a Fijian-Japanese fusion menu that will tantalise and surprise even the most discerning Japanese clientele. But it is the smaller eateries dotted around the island


that will showcase my travels to the farthest remote islands in Fiji. They include Kura, an a la carte cafe of restorative foods inspired by Fijian medicine and organic produce and WAR, my new signature cultural restaurant. An acronym for Wild And Raw, WAR also pays homage to the internecine tribal wars throughout Fiji’s pre-European history. The period is 18th Century Fiji, the height of the sandalwood boom and the fierce bloody infighting between the clans and with the

Tongans, often dominated by cannibalism and the ancestral Gods. WAR’s kitchen uses no technology of gas or electricity, only fire, and its menu is based on the ancestral diet of the Fijians, one that was not only gluten free and dairy free but medicinal and nutritional. But the best experience of WAR is the sunset. Located on Mana’s northern point, the WAR experience begins as soon as the sun sets directly in front of the restaurant cabanas. For the lucky guests

able to dine at this premier venue, at least they can say they have been to war in Fiji. WAR is expected to open in September 2015. and even closer to our hearts is the development of our own community here on the Coral Coast (of Viti Levu),” Powell explained. Innovation, Powell believes, is crucial for the industry with its robust competition and offerings from newer hotels and cheaper holiday destinations. “The Fiji tourism industry is diverse and growing and we are constantly having to reinvent ourselves in order to stand out, explore new opportunities and aligning our marketing plans to position ourselves in the best possible way.”


“Having said that, we must not lose sight of the fact that we do have social responsibilities in terms of the environment and empowering the communities we live in to be able to enjoy the benefits and potential of the industry, not just through direct employment but also in related industries,” he added. Technology may have changed the way the resort works, but guests can also enjoy more tangible things such as the natural beauty that blesses the island of Yanuca and its easy access to the mainland. The resort offers a number of unique experiences including its residential CHI, The Spa and its own Shangri-La Marine Education Centre - the only centre of its kind in Fiji. For the ultimate indulgence, CHI offers signature therapies drawn from local and Asian traditions, enjoyed in the privacy and luxury of the largest spa villas in Fiji. The Shangri-La Marine Education Centre is a key initiative under the Sanctuary project, Shangri-La’s CSR program for resorts. The centre was developed to promote awareness of the regions marine ecosystems and allows guests to take part in fish house building, coral planting, nature walks and Earthday Thursdays. Shangri-La Fijian Resort & Spa offers a blue lagoon teeming with coral and sea life, palm-fringed

Here are two tropical cocktail recipes that feature rums by the award-winning Fiji Rum Co. COCONUT LIME DAIQUIRI Ingredients: 30ml Fiji White Rum 15ml Fiji Coconut Rum 15ml Fresh coconut water 15ml Lime juice 5ml Sugar syrup 2 Kaffir lime leaves

Method: Add all ingredients to cocktail shaker with ice and shake. Fine strain into a chilled cocktail glass. Garnish: Kaffir lime leaf.

Natadola Bay Championship Golf Course

Hole 1 – Par 4

Hole 4 – Par 3

A great starting hole that plays far harder than it might seem from the tee. Playing downhill, this hole challenges all players with a prevailing wind blowing left to right with bunkers on either side of the fairway. If you manage to leave the green with a par you’ve done very well.

The hardest and most scenic par 3 on the course. A solid mid iron for most players, this hole is protected by the ocean to the left and hazard to the right and a lightning fast, undulating green. This picturesque golf hole offers spectacular views of the ocean from both the tee and the green.

Hole 2 – Par 4

Hole 5 –Par 5

Playing uphill and into the wind, this is a strong par 4 and only the longest hitters will be playing their approach shot with a short iron. A tee shot to left side of the fairway provides the best angle into a well-protected green.

This strong uphill par 5 demands 3 solid shots to reach the green in regulation. An accurate tee shot threaded between a bunker on the left and rough on the right will setup an equally difficult second shot with fairway bunkers threatening. If you’ve made it this far without penalty you’ve done well. The approach to the green is uphill to an obscured green. If you’ve already lost a few balls, we recommend buying some from the local villagers just past the tee.

Hole 3 – Par 4 A wonderful driving hole with a generous fairway, the third hole will challenge all golfers with one of the most difficult approach shots on the entire course. The hole plays slightly downhill, right to left and features a narrow green that you will not want to overshoot.

Hole 6 – Par 5 After the first 5 holes most players will be looking to catch their breath. Once you arrive at the 6th tee

you’re confronted with a magnificent tee box at the top of a cliff with views across the pacific and well above the fairway. Longer players will salivate at the chance to cut the corner and reach the green in two, but with deep bunkering and an awkward green, this is truly a risk/reward hole with birdies on offer for the bold.

Hole 7 – Par 3 Choose your club wisely; missing the green is not an option if you want to escape with par. This hole requires an accurate tee shot from an elevated tee to a seemingly large and flat green, surrounded by deep bunkers positioned to collect errant shots. Be warned, 3-putts are frequent on this slippery green.

Hole 8 – Par 4 After a long and windy commute uphill to the tee, you’ll be faced with a dramatic tee shot that plays severely downhill to a receptive valley-shaped fairway. The prevailing winds are left-to-right and will try to push even the straightest shots into the hazard. A well placed tee shot should will leave a short iron into a receptive green and a birdie opportunity.

Hole 9 – Par 4 From the tee you’ll need a straight shot to the corner of the dogleg, but don’t be greedy. When you arrive at your ball you’ll be faced with arguably the hardest approach shot on the course, and often playing less than 100m. Choose your club wisely, a deep ravine and creek encircling the green will catch any stray shots.

Hole 10 – Par 4 An imposing way to start the back nine. A strong tee shot to a wide landing zone will leave most players a mid to long iron to the green. If you’re lucky enough to play a front pin position your task will be much easier. The green is long, winding and makes a difficult up-and-down.

Hole 11 – Par 5 The strongest of the par fives, only the very longest of players in the right conditions will be able to consider reaching this green in two. Normally playing into the prevailing winds, it can feel like you’ll never reach the long, narrow green. One you do, a severe ridge will make 3-putting a possibility with an errant approach.

Hole 12 – Par 4

Hole 16 – Par 4

This short par 4 is drivable from the tee but it’s fraught with danger. With thick rough down the left and water on the right, laying up from the tee is the smart play, even if it’s only a mid iron.

This hole demands a perfect tee shot over a lake to an extremely narrow landing area. Another difficult uphill approach shot to a flat green will provide players with a good scoring opportunity. For the long and the brave, the green is reachable.

Hole 13 – Par 3 This is the longest par 3 on the golf course and a test for most players. Bunkering runs from tee to green and will punish anything short and left. A beautiful yet potentially disastrous hole that generally plays downwind to a very difficult putting surface.

Hole 14 – Par 4 A dramatic and demanding tee shot to a narrow fairway with bunkers on the right and water to the left. A very precise approach shot is required to hold the elevated green. If you’re tentative on your approach, anything short of the green will be punished heavily.

Hole 15 – Par 3 If you’re a strong wedge player this hole will provide a good birdie opportunity but again, choose your club wisely. An elevated tee that plays downwind will see many players who land their tee shot anywhere past the middle of the green watch their ball disappear over the back and into the hazard.

Hole 17 – Par 5 Playing as the easiest hole on the course, this hole can easily penalise those players who relax and don’t take caution with their second shot. Playing downwind, longer hitters will be able to reach the crest of the fairway and this presents a real opportunity to reach the green in two.

Hole 18 – Par 4 A terrific finishing hole with the iconic clubhouse framing the hole from the tee. The fairway is well protected with bunkers and hazard to the left, with a prevailing wind that pushes balls from right to left. The Great Race - Aug 8th O

ver 600 runners, including competitors from abroad, will hit the road in the annual Suva Marathon in Fiji’s capital city. Marathon organisers aim to put Suva on the map as a must-see city destination and the birthplace of the South Pacific’s greatest road race. August 8th will see the city come together for a community event like no other where runners, cheerers and volunteers will converge along the iconic Suva seawall before sunrise, with the start and finish lines at My Suva Park. Just over a year ago, a group of Suva runners pursued the idea of creating a platform to promote marathon running for Pacific Islanders, as well as use it to encourage healthy living practices. So at its very core, the 2015 Island Chill Suva Marathon is about promoting wellness and healthy lifestyle habits. This is significant for a country where 82% of deaths are caused by NCDs. The event is inclusive and open to everyone. There are various distance categories for every type of runner, walker or wheelchair user. There is the Full Marathon (42.2 km), Half Marathon (21.1 km), Team Marathon (10.55 km each for a team of 4 running together or in a relay) and the community-based Fun Run (10 km). People from all walks of life can enter, from international to local runners, from families to people with disabilities, from corporate groups to sports teams, from private institutions and charity organisations. There’s also partnerships the charity 34

organisations: Vatu-i-Ra Seascape, Children’s Heart Foundation and Nature Fiji-MareqetiViti and participants are invited to run or walk for them to raise funds. This year’s event promises to be bigger, better and more exciting with the addition of training programmes before the event, the pre-race expo on August 7th (Friday) at Holiday Inn Suva and a mini-festival on August 8th (Saturday) at My Suva Park. At the pre-race expo participants can pick up their numbers and information packets, get premarathon race massages, enjoy discounted running, health and wellness products and services, as well as purchase event-related merchandise. BIG live music & dance fest

he Corona Extra Uprising Festival of Music, Dance & Lights is regarded as Fiji’s largest live music and contemporary dance event on the annual calendar. From fairly small beginnings, it has grown to become one of the country’s most significant cultural events.

As a way of recognising local performers, both musicians and contemporary dancers, plus international artists, the show is dedicated to varying art forms. WEATHER Fiji can be enjoyed all year round because of its mild tropical climate. The dry season is from May to October. This is when the temperatures are cooler and there is less rainfall and humidity. The wet season is from November to April. Daytime temperatures average around 25oC (77oF), and humidity is generally high.

Local dress in Fiji varies. Decent casual, light clothing is recommended. Often you will hear people refer to “Bula” attire, which is Fiji’s equivalent to Hawaii’s “Aloha” dress code. Visitors are asked to be careful not to offend local sensibilities. Bikini and ultra-brief swim wear is acceptable at hotels/resorts but not when shopping in towns/cities and visiting villages.

ETIQUETTE

There are a few places in the world where visitors are as warmly welcomed as they are in Fiji. But there is a protocol to follow. In a Fijian village, a house is a home and visitors aren’t expected to poke their heads inside. If invited inside a bure (local cottage), it is considered polite to stoop, to take off your shoes, keep your voice down and sit cross-legged on the floor. Shorts, swim wear, caps or hats aren’t normally worn inside a village. If offered a bowl of kava, drink it, unless you have been advised not to for medical reasons. Kava drinking is an important ceremony and a past time. If you intent to visit a Hindu temple or Muslim mosque, ask a local adherent first. It is offensive to walk into a mosque with shoes on.

A Value Added Tax (VAT) of 15% is applied on the cost of goods and services in Fiji.

Tourist VAT Refund Scheme

The Fiji Islands Revenue and Customs Authority operate counters at the Nadi Int. Airport and the Suva wharf where tourists can claim refunds. To qualify, a visitor must spend FJ$500 (VAT inclusive) in any of the registered VAT refund outlets and must take the goods out of Fiji within two months from the date of purchase. Present goods for inspection along with the refund form, original tax invoice, passport and int. boarding pass to a customs officer at the Tourist VAT Refund Inspection Counter.

Telecom Fiji Ltd (TFL) customer care centers are located in major regional centers on Viti Levu and Vanua Levu. Card-operated phones are everywhere. Pre-paid phonecards are sold at post offices, shops and service stations. TransTel (subsidiary of TFL) also offers international calling plans for calls to and from Fiji. Local and international calls made from hotel and resorts generally cost more as rates and surcharges apply.

MOBILE (CELL) SERVICES

Several international mobile phone operators offer cellular phone services in Fiji. Mobile phone and sim card rentals services are also available. Recharge cards can be purchased from airports, post offices, shops, supermarkets and service stations.

INTERNET SERVICES Internet access is available at most hotels and resorts across Fiji. Wi-Fi is also available at select locations. If you bring your laptop or ‘tablet’ you may consider dial-up access or wireless connection. Cybercafés are available in major centres such as Suva, Nadi and Savusavu. AIRPORTS Two international gateways - Nadi International Airport in the Western Division and Nausori International Airport, outside Suva. DEPARTURE TAX $F200.00 departure tax.
