Ingredients

180g Hammour fillet

50g Green bell pepper

50g Red Bell Pepper

50g White onion

50g Fresh Tomato

15g Black olives

10g Fresh coriander

1x Clove Garlic

1x Fresh Lemon

1tbs Olive oil

1x Sheet of pastry dough

Salt & Pepper

Directions:

Heat the clay pot in the oven at 190°C for at least 15 minutes before putting the mix into it. Cut the hammour into cubes, season with the salt and pepper and pan-fry it until almost fully cooked. Heat the olive oil and sauté all the onions, garlic and peppers. Dice the fresh tomatoes and add to the pan, allow to cook for 5 minutes. Add the coriander and olives, then squeeze the fresh lemon over it. Get your hot clay pot from the oven and pour the mix into it. Add the pan-fried fish on the top. Cover the pot with a layer of pastry to seal in the flavour and put back into the oven at 190°C for 8 minutes. Cut it open in front of your guests and pour it into a deep plate. Serve with saffron or cumin rice.
