Butterflies in the stomach I guess, happens to everyone I would imagine. Nothing measures up to a sumptuous breakfast of Hong Kong Dim Sum to quench these negativity. INTRODUCTION H

umans have always used the color of a food to form judgments about its desirability. The act of eating (and deciding what to eat) is a multi-sensory experience, synthesizing perceptions of sight, taste, smell, and touch. Color provides visual information about a food’s quality and condition, and influences the perception of its flavor. Ancient Egyptians colored food yellow with saffron. Wealthy Romans ate white bread that had been whitened by adding alum to the flour. In the early Renaissance, eating sweet red grapes produced full rich blood, black food like pepper or fungi induced melancholy, and coloring foods golden promoted divine solar healing. The cuisine of the late Gothic period was informed by rich and ornate color. Dishes, jewel-toned cordials, and shimmering jellies were colored red, purple, blue, green, and yellow. This book aims to showcase the intricate relationship between Color in food, and everyday life, often ignored or un-realized by the hurried city dwellers of our times. In this edition, the color feature is Yellow, and the hope is such that after reading, one would pause for a moment once in a while, and reflect and relish in this beautiful world that we reside in.

材料 INGREDIENTS 240 g Fresh shrimps, well minced 240 g Fatty pork, minced 120 g Crabmeat, cooked 150 g Wontan skins or wrappers 2 pieces Dried Chinese mushrooms, soaked and minced 3 pieces Water chestnuts, minced 1 stalk Spring onion (scallion), thinly sliced 1 tbsp Crab roe, cooked 1 tsp Salt 1/2 Sesame oil 1 Egg white Pepper, Cornflour and vegetable oil

Place all the minced shrimps, fatty pork and crabmeat in a large mixing bowl. Using a large wooden or a pair of hands, mix the ingredients well.

Add in the salt, sesame oil, pepper and egg white and work into the mixture evenly, then add in the oil and sprinkle a generous amount of cornflour, then drizzle a little oil over the mixture and continue to work mix.

Add in the mushrooms, water chestnuts and spring onions, work these into the mixture and mix well. Now the filling is complete. Set aside in a refrigerator for approx. an hour.

Stamp wontan skins into 7 cm rounds with a biscuit cutter. Spoon two teaspoons of the filling into the center and gather the edge of the wrapper to the top. Let it pleat naturally. Continue for the rest of the filling. When done each siew mai should look like little cylinders, the height a little more than the diameter (approx. 2 1/2 cm by 2 cm). For each siew mai, add a bit of the crab roe on the top. Rub a little oil in a sizeable bamboo steamer basket and place the siew mais in it, cover the top, and steam over rapidly boiling water for approx 20 - 30 minutes or until cooked. Serve on a plate with some sweet sauce and chili paste sauce for variety.

Here I am in the city, where the streets are paved with time. Time moves in its own special way here. Everything seems so unfamiliar, yet familiar at the same time. The places, the people. Like a silent film with a single leaf bobbing on gentle waves in the sunset, those yellow sodium lights bounced in off the rain drizzled glass panels of the vehicle I was in, like eyes made of stars. And I lost myself in that moment, for a while.

材料 INGREDIENTS Noodles (mee kia) 1 Lb ground pork 10-15 Caps shiitake mushrooms, julienned 2 Tablespoons olive oil 1 Tablespoon red chili pepper flakes 3 Garlic cloves, finely minced Chinese black vinegar, to taste Dark soy sauce, to taste Salt and black pepper, to taste Fried shallots, garnish

Bring a large pot of water to boil, add noodle and a large pince of salt, return to boil and cook.

Meanwhile, heat oil over medium heat in large frying pan, fry shallots till light brown.

Remove shallots from pan, leaving oil in pan. Add minced meat, fry for 3-4 mins, add dark soy sauce, stirring and breaking up the meat till browned and fragrant. Add shitake mushrooms, lightly fry for 1-2 minutes. Add vinegar. If mixture looks dry, add chicken broth/ water and let it simmer 2-3 minutes. When cooked in pan, transfer to a bowl. Add olive oil, chilli and garlic to another pan, lightly fry for 1-2 minutes. When noodles is done, drain well and pour into frying pan containing olive oil, chilli and garlic. Add portions of meat, mushroom, some vinegar, salt and peper, and toss well. When serving, garnish with shallots and top with remaining portions of meat and mushroom.

MID–WEEK! Crazy lunch crowds at the famed Maxwell Food market. We queued for what seemed like eons before we got our hands on that particular Hokkien Mee. The fragrant chilli and the prawn stock, blew us away. 午餐时,整个熟食餐厅挤得水泄不通。我们大家都想吃著名那一 摊所卖的福建炒虾面。谁知排队排了接近半个小时,大家都饿坏 了!可是,吃进口里的那一瞬间,虾汁陪上诱人的辣椒浆,大家 都一致认同,等待是值得的!

材料 INGREDIENTS 1/2lb yellow Hokkien noodles 1/4lb fine rice-flour noodles 1/2lb boiled squid 1/4lb cooked prawns/shrimps 1/2lb belly pork finely diced and deep fried until crisp 1/4lb bean sprouts 2 eggs beaten 2 cloves garlic, finely minced 2 spring onoins finely sliced 1 1/2 tsps salt 1 tbsp light Soy sauce 1 tbsp oyster or Hoi sin sauce 2 tspns lard 2 red chillies sliced(optional)

1/2lb黄色福建面 1/4lb细米粉 1/2lb煮鱿鱼 1/4lb熟虾/虾 1/2lb肚子猪肉精细肉丁和油炸至酥脆 1/4lb豆芽 鸡蛋2个打 2瓣大蒜,剁碎 2春季onoins精细切片 1 1 / 2茶匙盐 一汤匙轻酱油 1汤匙蚝油酱或海罪 2 tspns猪油 2红辣椒切片(可选)

I n a deep frying pan, toss the Hoklkien noodles and the rice-flour noodles (which have been soaked in boiling water and drained), with the cleaned bean sprouts and about 1 tbsp water.

在一个油炸锅,抛的福建面条,米粉(已在开水 浸泡, 沥干) 与清洗豆芽,约1汤匙水。

Stir the contents continuously for about 30 seconds, then cover the pan with a lid and continue cooking for a few more seconds. Remove cover and add the eggs, 1 teaspoon of the pork lard, salt, oyster or Hoi sin sauce and Soya sauce. Sitr over high heat for a few seconds then add garlic, spring onions, and another tbsp water. Cook a further 5 seconds then add the prawns, chopped squid, deep fried pork, chillies and other tsp of lard. Cover with lid and cook for a few more seconds until everything is thoroughly heated, then serve immediately.

I bought some Goreng Pisang from the stall I patronized since I was a little kid. You’d never get bored of such stuff. That fragrance and texture never fails to lift one’s mood. 路上走着,遇见了熟悉的马来阿姨,向她 买了两条炸香蕉。吃在嘴里,芳香散入口 中,外稣内软,热腾腾的,这就是幸福的 滋味!


Make sure not to overcook! 记得要看火,否则就烧碱了!

材料 INGREDIENTS 1/2 cup Flour 1/4 cup Rice flour 1 teaspoons Baking powder 1/4 teaspoon Salt 1 cup Water 1 Egg Oil for deep frying 6 Ripe bananas,peeled and cut in two pieces

Mix the flour, rice flour, baking powder and salt well in a bowl. Beat the water and egg into the flour mixture until batter is smooth. Set batter aside to rest for anywhere from 15 minutes to an hour.

Heat the oil in a deep skillet or deep fryer to between 350° and 375°. Working in batches, using a fork to dip pieces of banana in batter to cover. Let any excess batter drip off and drop in the hot oil to deep fry, turning until well browned on all sides.

This great tasting tea cleanses your body and reduces internal heat. In summer, when it is very hot, people run the risk of getting sunstroke. The chrysanthemum teas can help prevent and treat mild sunstroke.

Wash and drain chrysanthemum flowers.

Add 1 - 3 teaspoon of honey or rock sugar.

We had dinner at this swanky Thai restaurant at Marina Square. The food so-so, below our expectations, but the highlight of the meal was their signature mango sticky rice desert. The rice fragrant and soft, and the mango was complimentarily sweet to the taste buds. Great way to end the meal.

晚餐,我和大学的一斑好朋友在一家泰式 料理餐馆用餐。虽然食物水准平凡,甜品 可是出乎预料地美味!尤其是那泰式芒果 饭,让人流连忘返。


Ripe mango Sticky Rice Coconut milk Salt Sugar

芒果 糯米 椰奶 盐 糖

You can find mango in most of grocery stores. Choose the one which is ripe, but not too soft to make sure that it’s sweet. You only need half of a mango for 1 serving.

你可以在杂货店找到芒果。选择一个有成熟,但 不要太软,以确保它的甜美。你只需要一服刑芒 果的一半。

Peel mango and cut them into small pieces, about 3x4 inches. Don’t cut them into small pieces, it does not look good and the juice comes out. Set the mango aside on the serving dish.

Get 2 cup of sticky rice (for 1 serving) and add water just 3/4 inch above the sticky rice in a rice cooker. Sticky rice will taste better if you soak it for about 30 min or so because it will absorb water and be cooked evenly. Stirring the rice after it’s boiled also ensures it’s cooked evenly, but do not do that often since you need to keep the heat inside to cook the rice. You can also use a microwave to cook sticky rice. Soaking the sticky rice in water, the longer the faster it will be cooked. The only thing different is you need to stir the sticky rice every 2-3 minutes to make sure sticky rice cooked evenly.

Get a small pan, add a few spoons of coconut milk depending how much coconut milk you like to eat. Boil it over medium heat. Add salt and sugar to taste. Wait for coconut milk to simmer (about 5 min), turn it off. Serve hot sticky rice into serving dish, pour half of coconut milk on the sticky rice and let the rice absorb the milk. Pour the other half when it’s ready to serve. Enjoy!

Friday Secured my first business deal since joining this firm! The lads brought me out to celebrate at this small bar beside the office after work. We all got so drunk and I had so much trouble stumbling home. But it was great fun nevertheless.

材料 INGREDIENTS 8 pounds, crushed pale malt 1/2 pound, crushed crystal malt 1 teaspoon, CaSO4 1 teaspoon, Irish moss 3 ounces, Goldings (60 minutes) 1/2 ounce, Goldings (10 minutes) 1/2 ounce, Goldings (steep) 1/4 ounce, Goldings (dry hop in secondary) Edme ale yeast

3 cups cubed butternut squash 1 cup vegetable stock 1/2 cups skim milk Pinch of nutmeg Pinch of cayenne pepper Salt and pepper, to taste 1 pound small, shaped pasta 1 cup grated cheddar cheese 1/2 cup ricotta cheese 4 tablespoons grated Parmesan, divided 2 tablespoons breadcrumbs 1 teaspoon olive oil Olive-oil cooking spray Preheat the oven to 375 degrees. In a large saucepan, combine the butternut squash, stock and milk. Bring to a boil, then simmer for twenty minutes or until the squash is tender. Transfer the mixture to a food processor and pulse until smooth. Pour into a large bowl and season with the nutmeg, cayenne pepper, salt and black pepper. Push the ricotta through a mesh sieve, then add the egg. Whisk to combine then season with freshly ground salt and white pepper.
