With the South Beach Wine & Food Festival taking place at the end of February, it’s an exciting time for our monthly culinary series Chef Collective. This month, Faena has chosen prominent Miami-based Chef Michael Pirolo to collaborate on a menu with Pao’s Chef Paul Qui. Pirolo is the chef owner of Macchialina, a South Beach trattoria with rustic yet sophisticated Italian fare that’s been praised by critics and spawned a loyal following of locals and in-the-know travelers. The casual neighborhood eatery was named Best Restaurant in 2013 by the Miami New Times and garnered a 3½ star Excellent rating from The Miami Herald. The decorated chef was also a 2016 James Beard Semifinalist in the Best Chef South category. Born in New York, but raised in Italy, Pirolo comes from a fiercely passionate food family. “The dishes that resonate with me from my childhood have had a profound effect on how I cook today,” he says.

It might be difficult to believe, but it’s been 16 years since the South Beach Wine & Food Festival first started.
MEET OUR PEOPLE
Back in 2001, the Florida International University teamed up with Southern Wine & Spirits of Florida to create a festival that would gather the best chefs and food-connoisseurs from around the country to host a unique gastronomy fest that would help raise funds for the Chaplin School of Hospitality and Tourism Management. Since then, the event has attracted foodies the world over, raising $18 million for the school, and most importantly, putting Miami on the map as a culinary capital. What started as a small gathering of only 7,000 people has grown to become an event that greets over 65,000 people per year. This garnered the attention of the Food Network, the official media partner that has been supporting the festival since 2007, which resulted in some of the most important celebrity chefs participating in conferences and workshops during this four-day happening. Some of the
regulars include Emeril Lagasse, Bobby Flay, Rachel Ray, Martha Stewart and Guy Fieri. TOP EVENTS THIS YEAR OYSTER BASH A wine and seafood pairing presented by Island Creek Oysters, hosted by Josh Capon and Jeremy Sewall. SOUTHERN KITCHEN BRUNCH Not for the faint of heart, this event is for those who like to start the day with fried chicken and waffles, crawfish grits and apple pie. GRAND TASTING VILLAGE Don’t want to commit to a single food? No problem. This foodie’s marketplace has something for everyone, including live culinary demonstrations on the beach.
Our head bartender, Marko Tomovic, might be only 26-years-old but his experience is that of a seasoned mixologist. Having worked in some of the best bars in Chicago and NYC, the Yugoslavia-born cocktail wizard has been running our bars with impressive accolades and recognitions. One might think that concocting a drink is about just mixing a bunch of spirits, but the truth is, it is a very serious job. “When I am not working, I spend much of my time doing research and experimenting with the alcohol I will be using in my menu, understanding its flavor profiles and learning how to balance them with other ingredients,” says Tomovic. His latest menu for The Living Room and Tree of Life includes produce from local Florida growers, including tropical fruits and herbs.

I come from a family of artists; my father was a circus performer and my mother a ballet dancer. I took my first steps into this world in Havana and continued when I moved to Spain with my family. I have been performing in Europe at various festivals and venues over the past 15 years. It all started when I was 13 yearsold. I saw a vintage video of a juggler called Francis Brunn that inspired me to create my own act, which is mixed with dance. What’s most difficult in juggling has nothing to do with the objects you’re using—it’s about creating beautiful moving visuals for the audience with whatever you’re working. My biggest accomplishment to date has been traveling the world and joining the team at C’est Rouge! in Faena, which involved passing a very strict audition. Our Theater is beautiful, an exotic place like no other, dreamed and developed by Alan Faena. I’m very lucky to work with a top-class team every night.

SOUNDS OF BRAZIL: PAULA TOLLER PRESENTED BY M2 CONNECTIONS AT FAENA THEATER The 150-seat Faena Theater is a proverbial temple dedicated to artistic creation from fantastical cabarets and experimental gypsy jazz to legendary musical giants. Last April, famed Brazilian musicians Gilberto Gil and Caetano Veloso took center stage at Faena Theater to celebrate 50 years of friendship. The pair have a long history of brotherhood, which includes leading the Tropicalia movement: a musical revolution that allied with the political unrest of the 60s combining psychedelic rock, avant-garde, samba, funk and soul. In this spirit, Faena Theater has partnered with M2 Connections to present Sounds of Brazil, a new series of premier acoustic shows from Brazil’s top artists with both national and international followings. Singer and songwriter Paula Toller will kick off the series. Toller, who was born and raised in Rio de Janeiro, is most widely known as the lead singer of the band Kid Abelha; however, she has been performing as a solo artist since 1998. Her two solo albums have sealed her status as one of the country’s leading rock female voices and one of the best female lyricists of Brazilian music.

According to this myth, everyone’s pinky finger is tied to an invisible red string that will lead him or her to another person with whom they will make history. For the Japanese, who know so much and intuit more, human relations are predestined by a red string that the gods tie to the pinky fingers of those who find each other in life. Legend has it that the two people connected by this thread will have an important story, regardless of the time, place or circumstances. The red string might get tangled, contracted or stretched, as surely often happens, but it can never break. This legend, so much more aesthetic than that of the twin souls, occurs when it is discovered that the ulnar artery connects the heart with the pinky finger (which is the same reason why in many cultures promises are made by two people crossing their pinkies). The thin vein running from heart to hand extends through the invisible world, to end its course in someone else’s heart. But unlike other amorous superstitions, the Japanese one isn’t limited to couples, or a single person who one is destined to find. It speaks of a type of arterial ramification that emerges from a finger toward all those with whom we will make history and all those whom we will help in one way or another. For the ontological imagination, the myth of the red string is a way to understand our itinerary of encounters as a predetermined plot where couples’ relationships, the intimate brushes against someone, and all the little stories we crisscross with others are neither random triumphs nor accidents, but part of a scarlet tapestry whose threads were given to us when we were born but which we knit ourselves. One Japanese legend tells of an old man who lives in the moon and comes out every night to search among kin spirits to reunite them on Earth, who have something to learn from each other, and when he finds them he ties a red thread to them so they find their paths. Thus, our red strings end in someone else. Accepting this, or at least considering it, is a secret consolation: it is as if our steps—stubborn as they may sometimes seem—knew the route and geography of
our multiple amorous destinations, and therefore there were no “slips” or poor decisions. There are two memorable moments in cinema that pay tribute to the subtle and mysterious aesthetic of this conductive read string: the first is the film Dolls by Takeshi Kitano, and the second Sayonara, by Joshua Logan. In both we find out at the end that the couples were united by the red string of destiny, and that everything that occurred before was nothing more than a plot through the route of string that would end up reuniting them. “Journeys end in lovers meeting,” William Shakespeare said. All cultures have pondered what it is that governs the individual path of each person, and among them many have conceived an astronomical thread that predicts their paths. Think of the Moirai of the Greeks, who hold a thread of gold for each person on earth and cut it suddenly when his or her death is due, or in the thread, also red by the way, of the Cabala which connects the believers to the holy land of Jerusalem. It’s logical to think that if life is conceived as a great text (from the Latin textus: knitting, connection), the strings are the main material of men to rasterize their daily lives. To “lose the thread” is now a universal expression to refer to practical or even existential deviation. Thus, the legend of the red thread tells us that within the labyrinth of encounters and shared stories there is a predesigned and perfect path, a scarlet string which, like that of Ariadne, connects us with our irrevocable destination placed at the edge of another string that will also lead to us. Dr. Roberta Del Campo is a Board Certified dermatologist who is in private practice at South Beach Dermatology. She is now accepting patients and consultations at Tierra Santa Healing House on Tuesdays. Dr. Del Campo received her medical degree from Boston University School of Medicine, where she graduated Magna Cum Laude and completed her dermatology residency at the University of Michigan, one of the top five dermatology programs in the country, recognized internationally. As she was particularly interested in the world of aesthetics, she completed a fellowship in Cosmetic Dermatology and Laser Treatments. In addition to practicing in the Miami area, she is also heavily involved in dermatologic research and various dermatologic organizations. To date, she has published more than a dozen articles in her specialty and currently serves as a consultant and trainer for aesthetic companies. Below, a conversation with Dr. Del Campo. How did you first get into skincare/ aesthetics? I would say that my attraction to skin and the science behind it is something that was inherent even at a young age. What was a turning point in your career? I value artistry, shapes, contours and have always had an eye for faces and beauty. What has changed over time is my ability to understand how to best apply my talents with the available products and technology. Biennale of Moving Images

Following the exhibition of the Biennale de l’Image en Mouvement happening in Geneva from November 10, 2016 through January 29, 2017, Faena Art brings the biennial to Miami Beach. The biennial is a one-of-a-kind hybrid situated somewhere between a cinema festival, a constellation of solo exhibitions and a site for research and experimentation. Twentyseven emerging international artists have been commissioned with no specific curatorial theme to respond to. The result is a wide array of never-before-seen works and multimedia installations, from live performances to 5minute films and hour-long documentaries that push the boundaries of traditional media. Works include artist Bertille Bak’s
three-channel video installation, Usine À Divertissement, which explores the effects of mass tourism while Aria by Emilie Jouvet is a 60-minute movie about gay parents, identity and family constructions shot entirely on smartphones. Artist Salomé Lamas captures a dystopian world of haunting beauty in his cinematic triptych video installation The Burial of The Dead, in contrast to Alessio Di Zio’s two highly improvised fantasy short films featuring glimpses of his own fantasies and dreams. The exhibition also includes an hour-
long performance collaboration from visual artist John M. Armleder and musician Stephan Eicher. Additionally, the biennial will award a $10,000 prize to one student from Faena’s collaborating educational institutions for the production of a new commission in the Biennial of Moving Images 2018 exhibition. Faena Prize for the Arts Faena Art is proud to present Tropos, a new exhibition from 2015 Faena Prize winner Cayetano Ferrer. Tropos will be open to the public from February 10 through February 26, 2017 at the Faena Art Center Buenos Aires.
4-MOVIE CYCLE BY JAIE LA PLANTE This February, Faena’s Screening Room cinema cycle is inspired by Richard Gere and his upcoming title role in filmmaker Joseph Cedar’s Norman: The Moderate Rise and Tragic Fall of a New York Fixer.
Faena Art is proud to present Tropos, a new exhibition from 2015 Faena Prize winner Cayetano Ferrer. Tropos will be open to the public from February 10 through February 26, 2017 at the Faena Arts Center Buenos Aires. The Faena Prize for the Arts is a biennial international juried prize that recognizes artistic experimentation, encourages post-disciplinary and temporal exploration and promotes inquiry of the infinite links among art, technology, and design. Ferrer was awarded $75,000 for the creation of the new installation that involves the use of borrowed architectural forms, structures and surface ornaments that reference various historical époques. The palimpsest of visual identities contained within urban art and architecture is acknowledged along with the ephemeral nature of these forms that seem to slip away as they are fabricated, destroyed and refabricated to occupy new forms. Ximena Caminos commented on the exhibition, “Ultimately, the process is itself the work—an alchemical reaction to the urban landscape and the historical narratives maintained there.” Ferrer’s project transforms the arts center into a factory-like environment for the processing of the past, and ultimately a depository for the ornamentation of a new visual language. He achieves this with the production of gelatin molds, an energetic, time-based and ever-changing situation that is never fully realized
but is rather in a continuous state of becoming. Nearby styrene and plaster casts are reminiscent of classically decorated carved reliefs, hand-crafted objects and industrial artifacts that reference a multitude of symbols from antiquity to present day—iconography that exists within the urban landscape but are repurposed here within the formal confines of the art viewing space. The opening of the exhibition is entirely different than its final days after the accumulation of the organic and mechanical processes have followed their course. The darkened space is eerily illuminated by the sculptural elements (known as melting units) that give off heat and light, which affect the processing of the gelatin molds. Alan Faena remarked, “We always seek to support the most innovative and contemporary in artistic creation and aim to help promote artists’ work to an international audience. The 4-film retrospective, curated by Jaie Laplante, director of programming, Miami Dade College’s Miami Film Festival, looks at Gere’s impact and evolution as an actor since his first major role opposite Diane Keaton in Oscar winner Richard Brooks’ 1977 drama Looking for Mr. Goodbar. Laplante has selected a broad range of movies across the span of his prominent career from Gere’s lead role as a hot-headed farm laborer in Days of Heaven (USA, 1978) to his more recent role in Arbitrage (USA, 2012), as well as Rob Marshall’s Academy-award winning Chicago (USA, 2002), which took Gere back to his Broadway roots. However, no retrospective on Richard Gere would be complete without An Officer and a Gentleman (USA, 1982), a film that made the actor an unequivocal star.

I have dreamed of you so much that you are no longer real. Is there still time for me to reach your breathing body, to kiss your mouth and make your dear voice come alive again? I have dreamed of you so much that my arms, grown used to being crossed on my chest as I hugged your shadow, would perhaps not bend to the shape of your body. For faced with the real form of what has haunted me and governed me for so many days and years, I would surely become a shadow. O scales of feeling. I have dreamed of you so much that surely there is no more time for me to wake up. I sleep on my feet prey to all the forms of life and love, and you, the only one who counts for me today, I can no more touch your face and lips than touch the lips and face of some passerby. I have dreamed of you so much, have walked so much, talked so much, slept so much with your phantom, that perhaps the only thing left for me is to become a phantom among phantoms, a shadow a hundred times more shadow than the shadow that moves and goes on moving, brightly, over the sundial of your life.
One of the most influential Surrealist poets, Robert Desnos was born on July 4, 1900 in Paris. From a young age he developed a passion for writing, working as a literary columnist for the Paris-Soir newspaper for a few years, while regularly posting poetry in the Dadaist magazine LittĂŠrature.
