A GRILLING MASTERCLASS INTRODUCING CHEF DE CUISINE CRISTIAN MENENDEZ This spring and summer, guests of Faena Miami Beach can channel their inner culinary master with outdoor grilling classes helmed by Argentine Chef de Cuisine Cristian Menendez. During the epicurean experience, a small group of culinary enthusiasts will learn the time-honored techniques that have made Los Fuegos a celebrated asado eatery serving sophisticated wood-fire cuisine. Using fresh, seasonal ingredients, Chef Menendez will guide participants step-by-step on how to prepare the restaurant’s signature fiery fare in the style of James Beard Award-wining Executive Chef Francis Mallmann.
A graduate of Johnson & Wales University’s culinary arts program with positions at Miami’s Zuma, Area 31, and Azul under his belt, Chef Murray’s dynamic and globally inspired approach—heavily influenced by his mother’s Japanese heritage—made him a natural fit to helm Pao’s innovative kitchen. The restaurant’s new spring menu is awash in Murray’s artful culinary creations and features six new dishes, including the zesty Honeydew Aguachile crudo.
“The melon, flavored with a spicy sauce, mimics the texture of tender raw fish and is paired with avocado, serrano chili, sea cress and green strawberry, which is locally sourced,” he says. Other additions to Pao’s lineup include a rich, risotto-style bamboo rice with black truffles, burrata, five variations of peas and shitake, and a Binchotan-grilled toro served with shiso and green strawberry gazpacho. “I’m really excited about what farms in Florida are producing right now, especially unique finds like Australian finger limes, strains of Hawaiian ginger and fermented honey,” the chef reveals. “Spring is my favorite season, abundant with vibrant produce and delicious vegetables, all of which were a major inspiration for the new dishes.” In-house guests may dial the Concierge at 4037 for more information. As guests face off with the flame, they’ll learn how to cook with a parrilla (wood-fire grill) and a la plancha (flat griddle), infuse food with a smoky flavor by grilling directly over embers, and even salt-crust a whole fish. We’re all witches now: magic and ritual as part of being human
Incarnated, as witches, shamans, healers, and sorcerers, in talismans, potions and enchantments, magic is one of the most mysterious expressions of human interiority and our relationship with the divine. Some argue not only for the existence of magic, but that we’re all capable of practicing it, even unconsciously. Art, to name but one example, is in its own way a form of magic. Regardless of our belief in it, it’s one of humanity’s oldest practices and, for that alone, the recognition of magic is nothing short of indispensable. These practices continue to inspire all kinds of art and creativity around the world. In English, the very idea of “witchcraft” speaks of the implicit possibility of learning and perfecting this craft, an invisible discipline.
to which we’ve assigned powers of protection or good fortune. It’s also common to use language as a form of enchantment: how often do we surprise ourselves repeating a word or phrase in the hope that it will change some course of events? Ritual—among the most beautiful of human acts—accompanies the great majority of us, even during our most intimate moments and can also be considered a form of witchcraft. Finally, the simple, powerful adoration of nature in its many forces has also characterized witches since time immemorial. This too connects us with the inexplicable, with the magical, with that which is bigger than us and which feeds us even when we can neither see nor substantiate it. We all do magic in some way, even if it is done so unconsciously. And we live fascinated by magic, maybe for the simple fact that we’ll never know quite how it works.
Noche de Brujas The role of the witch, the woman with supernatural powers, is prominently featured in ancient mythologies and folklore, of multiple religions and cosmogonies. An archetype who understands or sees more than others (perhaps because of her powerful intuition), she’s also an expression of the feminine divinity in its life-giving dimension. For some, this is itself a spectacular form of magic. Even the word “witch” bears an obscure meaning: for centuries, it was used in reference to women who used magic for evil purposes and those who simply lived outside of the social standards of their times. Lamentably, this has justified all kinds of atrocities throughout history. In any case, the witches who’ve trod the planet even until now, have held preponderant roles in the metaphysical imagination. Their practices (always replete with an inexplicable magnetism) are expressed in rituals that today preserve treasures of a millenary and traditional wisdom.

Ancient cultures were known to entrust the March winds to carry their wishes to the divine, a tradition that Faena Miami Beach honored last month, as mystical artists and guests gathered for Noche de Brujas at Faena Forum, a communal invocation of the esoteric and the spiritual featuring musical, auditory and visual creations. Dubbed the ‘anti-concert’ during Miami Music Week, the night was dedicated to the exploration of the gray areas between music and art, the scared and the profane, and the traditional and the futuristic. The event–a complimentary experience open to the public–transformed Faena Forum into a con-
temporary temple for multidisciplinary magic, where artists were celebrated as modern shamans ushering the broader public into higher consciousness. Producer Suzi Analogue’s blown-out and off-kilter beats captured the audience while Carlos Betancourt’s presentation stirred questions of beauty, identity and communication. Poorgrrrl’s vocals melted in and out of musical landscapes, while Virgo blended space-age synthesis and crystalline vocals for introspective dance tracks. Other mind-blowing performances came from Voila Snow, Georgia Wall, Sandflower, Kalup Linzy, Jen DeNike, and Juliana Huxtable.

Dream Big Faena Forum is coveted canvas for Miami’s most visionary designers like Guerdy Abraira, owner of Ocean Flowers & Events, who has worked with stars like Diana Ross and Flo Rida, and athletes Chris Bosh, Andre Agassi and Mike Piazza. “I love the layout. The space is so raw that your design options are endless,” says Guerdy. For a recent wedding that she styled, the notable designer transformed Faena Forum into a modern Moroccan oasis featuring a massive multidimensional ceiling installation of geometric cubes that played off the custom mandala she created for the dance floor. Unlike a typical ballroom, the space allows for Guerdy to control what guests see and when they see it, partitioning the space with beautiful draping to separate areas for dining and dancing. “You can create a singular event design here that can never be replicated in other venues,” she says. The fact that the Faena Forum is detached from the hotel is an upside for her high-profile clients because it allows for maximum privacy. May is Skin Cancer Awareness Month. With 5.4 million cases in more than 3.3 million people diagnosed annually, skin cancer is the most common form of cancer in the United States. With this in mind, I would like to dedicate the next two monthly columns to this topic. This month, I will focus on the more common type of skin cancer—nonmelanoma skin cancer—which includes basal and squamous cell carcinomas. These skin cancers are typically localized to the skin with little risk of metastases. Below are some additional facts and statistics to know about. • More people are diagnosed with skin cancer each year in the U.S. than all other cancers combined. • One in five Americans will develop skin cancer by the age of 70. • The diagnosis and treatment of nonmelanoma skin cancers in the U.S. increased by 77 percent between 1994 and 2014. • About 90 percent of nonmelanoma skin cancers are associated with exposure to ultraviolet (UV) radiation from the sun. • Basal cell carcinoma (BCC) is the most common form of skin cancer. An estimated 4.3 million cases of BCC are diagnosed in the U.S. each year, resulting in more than 3,000 deaths. • Squamous cell carcinoma (SCC) is the second most common form of skin cancer. More than 1 million cases of SCC are diagnosed in the U.S. each year, resulting in more than 15,000 deaths. • Daily use of an SPF 15 or higher sunscreen reduces the risk of developing squamous cell carcinoma by about 40 percent. • The Skin Cancer Foundation recommends that everyone practice monthly head-to -toe self-examination of their skin, so that they can find any new or changing lesions that might be cancerous or precancerous. Skin cancers found and removed early are almost always curable. • A baseline skin exam followed by repeat annual exams (more frequent if diagnosed with a skin cancer) by a board certified dermatologist is important to help diagnose and treat these skin cancers early, which in turns saves lives and improves cancer outcomes.

Faena Rose Faena Rose is our art- and culture-based private members club, which brings together a dynamic community of like-minded individuals through a robust, year-round calendar of the most engaging and transformative cultural experiences. This month, Rose members will journey to Havana, Cuba for an insider exploration of the city's rich cultural and historical offerings as part of Faena Rose’s cultural excursion series. A city frozen in time, Havana captures the imagination like no other. Our immersive itinerary celebrates the vibrant soul of this unique city with diverse experiences across all areas of the arts. Internationally renowned Cuban artists, Los Carpinteros and Wilfredo Prieto, will welcome Rose members into their studios for conversations on their inspirations, processes, and careers. Members will enjoy an exclusive viewing of a National Ballet rehearsal, a visit to the Habana Compas Dance & Music Company, and a presentation of African Roots Rumba, all followed by discussions with the dancers. Vibrant nighttime escapades feature the world-famous Cabaret Tropicana, latin jazz at La Zorra y el Cuervo Club, and an evening of live music at the artist-run Fabrica de Arte. Historical highlights include the baroque and Gaudi-inspired architectural masterpieces within Havana’s UNESCO-protected Old
Town such as the National Theater, Inglaterra Hotel, El Capitolio, Plaza de la Revolución and the Bacardi Building; as well as ride on classic Americans cars for a Hemingway tour featuring the picturesque fishing village of Cojimar and a stop at El Morro, a fortress built in 1589. Members will also escape the city with a day trip to the stunning tobacco growing region of Viñales, where they’ll visit the Casa del Veguero tobacco plantation and share a guarapo with local farmers at Finca Agroecologica in the picturesque valley. Previous destinations in Faena Rose’s cultural excursion series include Mexico City and Buenos Aires, where Rose members enjoyed various curated experiences including visits to top collector's homes, personalized dinners and tastings, private tours of the top cultural institutions, and studio visits with the most sought after contemporary artists. It Takes Two To Tango Feel the heartbeat of Rojo Tango at El Cabaret in Faena Hotel Buenos Aires.
