MIRALDA & MONTSE GUILLÉN EL INTERNACIONAL

Faena Art is pleased to announce El Internacional Archaeological Sandwich, an immersive, site-specific installation and culinary experience conceived by world-renowned Catalan artist Miralda and restaurateur Montse Guillén. The weekend-long pop-up will be open at the Faena Art Center Buenos Aires from July 27 to 29 featuring historic objects and new works by Miralda, in addition to a menu of international flavors and ingredients designed in collaboration with James Beard award-winning chef Paul Qui.

El Internacional is a reimagination of El Internacional Tapas Bar & Restaurant, an artistic project and social experiment in the Tribeca neighborhood of Manhattan, New York City from 1984 to 1986. During this time, the restaurant served as a space for the daring exploration of cross-cultural, trans-disciplinary aesthetics, merging the cultural contexts of contemporary art and cuisine.
BY FLORENCIO NOCETI
Throughout his artistic career, Antoni Miralda (Spain, 1942) has harnessed the power of food through rituals, ceremonials and processionals for over five decades. "The wealth of those societies in which the capitalist mode of production prevails, presents itself as an immense accumulation of commodities." The first sentence of Karl Marx's Capital —and the whole theory it implies—is considered for revisions today in light of a major shift that currently redefines our economies. A shift that applies not only to economy as production, distribution, consumption and management of resources, but also—and maybe more importantly—to the economy of desire. A shift, finally, that can be understood as a break, away from the accumulation of material goods, and towards the exchange of human experiences. Marx’s first definition of commodity reads "an object outside us". Yet since the dawn of the 21st century, societies that have prevailed through these capitalist modes of production seem to have lost interest in objects as such. Maybe it is the sheer immensity of their accu-
mulation that has rendered them unattractive and ordinary. What is certain is that wealth, instead, tends to present itself as an ever-increasing variety of ephemeral events, of shows and joys to be experienced. Visual arts have not remained unchanged by the paradigm shift. Seemingly everywhere, paintings and sculptures give way to performances and site-specific installations. Yet the connection between the work of artists and the transition towards an economy of experience does not end there, in a simple reaction. Decades ago, in the second half of the last century, a few clairvoyant artists appear to have foreseen—albeit through a mist of sorts—the changes that were coming. And, in many ways, they have also fostered those changes. One of these visionary and influential figures was, and very much still is, Antoni Miralda. For almost 50 years now, Miralda has been
traveling the world, immersing audiences in participatory performances. His greatest creations are not lasting objects, but transient (even if unforgettable) experiences. And although he is prolific in many fields, Miralda’s name has become a household word in the rapidly expanding realms where gastronomy and visual arts meet. Within them, he is the ultimate pioneer. His Food Cultura is a beacon for any newcomer acclimating to the a lay of the land. And his legendary New York restaurant, El Internacional, is the laboratory to which increasing numbers of artists and chefs, performers and bartenders, look back in search for inspiration.

Delicious Seasonal Dishes
JULY 2018
Edible Art Faena’s Executive Pastry Chef, Frederic Monnet, is an expert at bringing imaginative culinary creations to life for special events, romantic surprises, weddings and personalized treats.
Epicurean adventures await at Faena Hotel’s award-winning restaurants.
A CULINARY COLLABORATION On July 26, Pao Chef de Cuisine Benjamin Murray will welcome Chef Giorgio Rapicavoli, favored for his fun and funky twists on comfort food, to the kitchen for the next installment of Pao’s Chef Collective series. Rapicavoli has a rap sheet that will impress most: he’s the owner of two acclaimed establishments, including Glass & Vine in Coconut Grove, which was just named to Miami New Times 2018 Best Restaurants list, and Eating House, a Coral Gables haunt with an eclectic, ever-changing menu. He’s also a two-time winner of Chopped, a James Beard Rising Star semifinalist, and made the Forbes 30 Under 30 list.
For one suite guest, the chef and his team fashioned an edible replica of Damien Hirst’s iconic Gone but not Forgotten golden mammoth by crafting each bone by hand from sugar paste and painting them with comestible gold leaf. For the launch of Faena Forum, he carved a 50-pound cake covered in white fondant by hand and used black gum paste to recreate the event building’s 400 unique windows, which his team applied one by one. Hailing from the countryside in France, Monnet has been honing his craft since he was 15 years old, and his decadent desserts can be enjoyed at both Pao by Paul Qui and Los Fuegos by Francis Mallmann. Keep an eye out for his signature chocolate and hazelnut creations, and his latest culinary focus: mastering the art of vegan and gluten-free confections.
In-house guests may dial the Concierge at 4037 for more information.
At innovative Asian eatery Pao by Paul Qui, Chef de Cuisine Benjamin Murray is delighting diners with his creative cuisine, offering a season-inspired menu rolled out just in time for summer. Start your experience with a selection of crudos and “perfect bites” like Wagyu Beef Tongue Nigiri or a Russian Osetra caviar sandwich. For those eager to experience Pao’s full culinary selection, the three-course prix fixe summer menu offers a veritable treasure trove of the restaurant’s most popular dishes. Start your meal with Qui’s famous fried chicken with sweet chili sauce, roasted banana ketchup, and jalapeño; enjoy a choice of Wagyu beef or roasted fish for your entrée; and round out your experience with a delicious dessert of either Semifreddo with local honey, strawberries, and Thai basil, or a crispy Goat’s Milk Cheesecake topped with fruit and chocolate foam.
Guests who love flame-kissed fare can enjoy a similarly indulgent summer menu at Francis Mallmann’s Los Fuegos restaurant with a range of newly-debuted dishes from fresh specialties like seared Atlantic salmon with horseradish cream and trout roe to chilled beet soup with goat cheese, charred leeks and mint. Warm starters feature mouthwatering classics like oven-baked empanadas, roasted sweetbreads and grilled octopus, and new must-eat main courses including Maine lobster tail tagliatelle with roasted tomato sauce, Fresno chili peppers, and fresh herbs, or lunchtime favorite, roasted eggplant milanesa with Romesco sauce, cherry tomatoes and fragrant herbs. In-house guests may dial the Concierge at 4037 for more information. Reservations can be made at 786 655 5600.
The Miami-bred wunderkind is known for his ingenuity and culinary verve, always surprising diners with his improvisational prowess in the kitchen. It’s a sure bet that Rapicavoli will not bore diners with recreations of what they can already experience at his other Miami outposts, but will play off Murray’s skill set to create something entirely new, and entirely vegetarian. With a strong focus on local and ethically-sourced produce, the chefs are taking special care to design a culinary procession that outsizes any vegetarian-led experience of the past.
In-house guests may dial the Concierge at 4037 for more information. Reservations can be made at 786 655 5600 JUL

5 Books on Birds for the Summer INDEPENDENCE DAY A LA CRIOLLA Argentina celebrates two national holidays tied to the country’s independence: the first falls on May 25, which commemorates the date Argentina’s provinces voted to govern themselves in lieu of the Spanish crown falling under Napoleon’s rule; and the second is July 9, the country’s official Independence Day, when delegates from each province traveled to Tucuman in 1816 and together formally decreed themselves liberated from Spanish rule. Faena Hotel Buenos Aires invites guests to celebrate with patriotic pride at El Mercado restaurant with a brunch menu featuring traditional Argentine dishes. Hearty bowls of locro—a steaming stew of squash, sweet potato, meat and hominy—will be served, as well as succulent cuts of grilled sirloin, rib-eye and strip steak paired with velvety Malbec wines. For dessert, typical pastelitos filled with quince jam and sugar-dusted churros served with hot chocolate warm up a winter afternoon spent celebrating family, friends and freedom.

PRANIC HEALING
Día del Amigo “Friends are the family we choose for ourselves.” — Edna Buchanan A popular holiday in Argentina, Dia del Amigo, or "Friends Day," is celebrated with as much gusto as lovers do on Valentine's Day in the United States. . Barbecues are arranged and restaurants and bars are booked out weeks in advance with groups of friends coming together to honor the depth and longevity of their ties that bind. While the actual holiday, July 20, is re-
served for one’s closest inner circle, the celebration tends to spill over to the rest of the week, celebrating friendships formed at university, work, hobbies, and other walks of life. It’s a beautiful sentiment and one that truly reflects the importance Argentines place on maintaining friendships. As for Friend’s Day being an official holiday, the country has one man to thank: Dr. Enrique Ernesto Feb-
braro, who, as the story goes, was so moved by the feeling of global communion that swept the world in 1969 when Apollo 11 landed on the moon that he wrote and sent 1,000 postcards around the world petitioning for an international friend’s day. Argentina legitimized the celebration in 1972, and Uruguay, Brazil and Paraguay followed suit, as did the United Nations, but no one does it with quite as much
verve as Argentina. Which is why on July 20, you’ll find groups of reveling friends clinking drinks and belting out nostalgic tunes at Faena Hotel Buenos Aires’ Library Lounge as a live band and DJ play the soundtrack of their youth.
Reservations can be made at +54 11 4010 9200 or at reservasuniverse@faenahotels.com.
Learn to connect to your body’s energetic healing system with a course in Pranic Healing this month at Faena Hotel Buenos Aires. This month Faena Spa welcomes instructor Sebastian Bonta of Pranic Healing Argentina, who will lead a two-day course introducing guests to the basics of this ancestral healing modality developed by Master Choa Kok Sui, a Filipino entrepreneur and philanthropist of Chinese descent, which is practiced all over the world by doctors, therapists, acupuncturists and healers. During the course, participants will learn to explore their energy fields, cleanse blocked energy and energize areas of the body. Bonta will guide guests through the first steps of understanding the transformative power of energetic body work and how to best apply it to their individual journey. The course will touch on "aura" diagnosing, chakras, and how to accelerate the healing of chronic conditions from asthma and migraines to ulcers and arthritis.
Reservations can be made at the Spa or at reservasuniverse@faenahotels.com. For more information on Faena Buenos Aires, visit www.faena.com/buenos-aires.
Both familiar and mysterious, birds remain a prominent presence in literary works around the world. Among all the animals large and small to make any appearance in literature, birds have a definite charm. With impressive plumage, innate sense of direction, melodious sequences and beyond, these creatures continue to align with the poetic thought of writers worldwide. Could there be an inherent fascination with all things avian? An answer is as elusive as the animal itself, but there’s something in birds so symbolically linked to the rhythms of life (and death) that you need only see them, think about them, and suddenly the unconscious is awake. This season, asks that we once again recall them. We’ve asked previously, in these pages, how to attract them to a garden; here we recommend five reads in which birds, as subsidiary characters, symbols or metaphors, articulate a geometry that we share with them. 1. CROW, TED HUGHES A captivating collection of poems in which the crow plays the lead role, multifaceted as are all birds of the genus Corvus. Hughes appropriates from all of the diverse tales and myths in which the birds have appeared, and plays with all of their symbolic facets. 2. O CALEDONIA, ELSPETH BARKER A charming Scottish gothic novel presents a jackdaw (Corvus monedula) who accompanies the
protagonist until after death. A bleak and beautiful work like few others of its kind in all literature. 3. H IS FOR HAWK, HELEN MACDONALD Standing out like a rare stone, this is a beautiful novel difficult to classify. A true story written in first person, Macdonald's work tells the story of Mabel, the novel's protagonist, who finds solace by training a female goshawk (a falcon-like bird of prey) after a painful event. 4. VENETZIA IL BESTIARIO, JAN MORRIS A lovely little book on the original Venetians: creatures of the air. It was the miraculous flight of birds which led the first people to their sedentary existence within the lagoons. The work combines Morris’s love for and knowledge of birds and other animals, in earth and in art. 5. IN THE COMPANY OF CROWS AND RAVENS, JOHN M MARZLUFF AND TONY ANGELL Marzluff, a prominent biologist, joined together with naturalist and artist Angell to create the most comprehensive book on corvids. Simultaneously academic and humorous, the book is splendidly illustrated. In the Company of Crows is a small gem among all the literature to have included birds.

Faena Activities Calendar
Faena Rose is our art- and culture-based private members club, which brings together a dynamic community of like-minded individuals through a robust, year-round calendar of the most engaging and transformative cultural experiences. As part of its diverse program of culturally enriching experiences, Faena Rose hosts a guest chef dinner series featuring the world’s top culinary masters, curated by Rose Founding Member and SOBEWFF® Founder, Lee Brian Schrager. This fall, recent James Beard Award winner and Top Chef alum, Chef Nina Compton (3), will create an exclusive dinner for Faena Rose members that brilliantly mixes the indigenous ingredients and rich culinary heritage of New Orleans with those of her Caribbean roots, classical French culinary training, and deep experience with Italian cuisine. Compton's culinary fare has been hailed as a “one-dish history lesson in the global spice routes” and her New Orleans restaurant, Compère Lapin, was named one of Eater’s Best Restaurants in America. Previous Faena Rose guest chef dinners featured James Beard Award-winner, Chef Marcus Samuelsson (1), who delighted members with his Harlem-inspired dishes; a six-course dinner by four-time James Beard Award winner, Chef Michael Solomonov, who brilliantly showcased the melting-pot of Israeli cooking; and a homestyle feast by Chef Alex Guarnaschelli (2), the beloved Executive Chef of NYC’s Butter and a regular fixture on the Food Network.
