Meet the Mixologist Marko Tomovic, Head Mixologist at Faena Hotel Miami Beach, gives some clues on what’s behind Faena’s cocktail menus.
What’s the most exceptional wine/spirit you have ever tasted? It has to be the incredible 50-year-old Single Malt from Yamazaki. They only release 150 bottles at the time, so it was an honor to be invited to the tasting. The overripe fruits and woody aromas were so sharp it gave me chills.
How would you describe your style of mixing? My style is customized to my guest and their level of interest in a cocktail’s flavors and notes. I can easily do the classics, but by putting a personal spin on them, I want my guests to walk away with an understanding and appreciation for the love of our craft.
What influences your cocktails of the month? Much like chefs who cook based on what is in season, my cocktail menu is usually dictated by what is locally obtainable. And then there are times when I just want to think outside the box and experiment. This can produce some fine moments.
In commemoration of David Bowie’s passing in January, Seu Jorge—one of Brazil’s most popular singers—has created a special tribute to David Bowie based on his performance in The Life Aquatic, a 2004 film by Wes Anderson. On Sunday the 27th, Faena Art invites all to experience Tide by Side, a processional performance directed by Claire Tancons, in collaboration with Gia Wolff and Arto Lindsay. Artists including Los Carpinteros, Marinella Senatore, Miralda, Carlos Betancourt, Carnival Arts, and Ernesto Neto join forces with more than 30 local Miami cultural groups in a large-scale artistic processional performance that will bring to life the urban environment along the vital artery of Collins Avenue. Tide by Side’s veil will be lifted to showcase a series of multi-disciplinary works presented by a roster of global artists. First up; Carlos Betancourt and his monumental The Pelican Passage, a piñata that invites attendees to congregate under its body, a symbol of the importance of a community’s bond. Cuban artistic collective Los Carpinteros will bring their backwards performance Conga Irreversible, a conventional conga performed unconventionally—in reverse—for the first time in the United States, raising a debate over traditions and public acts. Miami Global Banquet, the succulent and intricate culinary ceremony designed by Miralda was conceived by exploring seven of South Florida’s historic crops (maize, sweet potato, pineapple, avocado, palm cabbage, conch, turkey, alligator). The foodstuff will be used to create dishes made available for tasting, in what will be a surreal parade of food trucks.
The School of Narrative Dance is a multidisciplinary and itinerant dance school based on the power of the communal creative process developed by Marinella Senatore. It will be their second performance in North America, but now the troupe will be significantly larger, amplifying the platform’s pedagogical philosophy. Established in 2007, Carnival Arts promotes the Caribbean and Latin American traditions of drumming, dance and masquerading. Under the artistic direction of Celeste Fraser Delgado and Damián Rojo, in collaboration with musical director Brian Potts, the organization has prepared Siren Song, a whimsical portray of luxury through the eyes of youths from diverse backgrounds. Last but not least, the intricate Jibóia by Ernesto Neto is an amorphous rhizome of interwoven nets that addresses concerns and starts conversations around global warming and the power of mindful engagement. On November 28th, we will inaugurate Faena Forum with an exclusive presentation of choreographer Pam Tanowitz’s dance commission Once With Me, Once Without Me, created in collaboration with architect Sho Shigematsu from OMA. A space conceived for ultimate flexibility in the production and commissioning of performative expressions, the Forum calls for embodied exploration to fully grasp the potential it holds.
Argentinean artist Graciela Hasper’s Untitled, a site-specific monumental mural which covers the north interior wall on all four levels of the Faena Forum will be unveiled, and Iranian thinker Reza Negarestani -author of the pioneering work of theory-fiction Cyclonopediawill be at the first intimate presentation of Soledades program. Negarestani’s current line of inquiry concerns investigations into rationalist universalism, beginning with the evolution of the modern system of knowledge and advancing toward contemporary philosophies of rationalism. Curated in collaboration with Argentine philosopher Florencio Noceti, Soledades is a series of one-time-only solo performances by cultural practitioners across philosophy, science, music, poetry, and other disciplines. Furthermore and keeping in-line with Faena Art’s pledge to present immersive and multidisciplinary works, we will build Time Capsule, a geodesic dome on Faena Beach—designed by Juan Gatti, responsible for the murals seen at the Faena Hotel’s Cathedral—where 360-degree videos from local producers will be projected. ISTVÁN VÁRDAI A symphony for solo cello At only 30 years old, Hungarian virtuoso István Várdai is the recipient of numerous international awards and is the only cellist in the world to have won the International Cello Competition in Geneva (2008) and the ARD Competition in Munich (2014). This performance of the Bach Suites marks not only his first in Miami Beach, and is considered a “symphony for solo cello”, which requires an almost athletic agility. Várdai plays a Montagnana instrument from 1720. In collaboration with Faena Art, Várdai will also offer a master class with fellows from the New World Symphony.

Power of Wellness Speaker Series As part of the Tierra Santa Healing House philosophy we have organized a series of sessions with wellness specialists who will share the keys to revitalizing mind and body. Here, a quick Q&A with Dr. Rivera ahead of his talk, where he will share everything you need to know about keeping a healthy heart, starting from the inside.
On November 15th, we welcome Dr. Juan Rivera, a certified Internist and Cardiologist trained at John Hopkins University Hospital and Director of Cardiovascular Prevention of Mount Sinai Hospital in Miami Beach. If you haven’t read his monthly column in People en Español or watched his series Strange Medicine on Univision, this is a great opportunity to get acquainted with him. And on December 13th we welcome Carlos Gomez, a Mexican healer who has studied indigenous curative methods and holistic medicine for over 30 years. He will share his knowledge on finding cures through natural techniques.
What is your approach to healing and wellbeing? I work everyday helping my patients prevent a heart attack or stroke using advanced cholesterol testing and arterial plaque imaging to understand their risk. I also pay a lot of attention to the mind/body connection. We can’t take care of our bodies without paying attention to the mind. What can we learn from our ancestors and their medicinal techniques? Western medicine focuses primarily on alleviating symptoms as opposed to getting to the root of the problem. We have created a system that, in my view, relies too much on medications and surgical interventions. When I did my show, Strange Medicine, I got in touch with the way Mayans approach
health. They incorporate a strong spiritual component. I think that modern medicine is lacking that. So many medical problems have to do with an emotional imbalance that leads to physical symptoms. Emotional distress leads to poor eating habits, poor sleeping patterns, use of addictive substances—all of which directly affects a person’s health. Our ancestors understood that how we feel inside largely impacts how we look on the outside. NOV

On why thanking is an action that strengthens the best of humanity Being grateful is very good, philosophy and science say so. From the philosophical and metaphysical point of view, existence is considered from the notion of a lacking. When one considers that living is really surviving, this implies that we are not wholly autonomous and self-sufficient beings, and that we often need something that we do not have in order to save our lives. Food, the place we live in, affection, knowledge; almost anything we think of was obtained from someone else. This circumstance has various implications for our lives, but one of these that we rarely contemplate is gratitude, that gesture that acknowledged both our own limitations and, on the other hand, how it is that we find in other people the means with which to go beyond our own limitations. Octavio Paz, upon receiving the Nobel Prize in Literature in 1990, said: “I begin with two words that all men have uttered since the dawn of humanity: thank you. The word gratitude has equivalents in every language and in each tongue the range of meanings is abundant. In the Romance languages this breadth spans the spiritual and the physical, from the divine grace conceded to men to save them from error and death, to the bodily grace of the dancing girl or the feline leaping through the undergrowth. Grace means pardon, forgiveness, favour, benefice, inspiration; it is a form of address, a pleasing style of speaking or painting, a gesture expressing politeness, and, in short, an act that reveals spiritual goodness. Grace is gratuitous; it is a gift. The person who receives it, the favoured one, is grateful for it; if he is not base, he expresses gratitude.” Gratitude, in this sense, has a deep symbolic dimension. Its meaning moves in that symbolic field where we can understand it, reproduce it and, if the best comes to the best, fill it with meaning. To thank, and be grateful, taking into account the gratitude of another: all of these are situations in

which our empathetic qualities are revealed, that strength of our species that is also linked to cooperation and collective living. In contemporary neuroscience, gratitude has been revealed as a connection between different areas of the brain that appear to strengthen our human nature. According to research led by Glenn R. Fox, expressing gratitude activates the cerebral regions associated with moral cognition, the judgments of value and abstraction, that is the cingulate cortex, pre-fontal and middle cortex. At the same time, in a second instance zones intervene that are related to reward, satisfaction and positive emotions, spe-
cifically by perceiving that we can do good to another person. And lastly, it is worth mentioning that, according to that same research, gratitude leaves people another benefit: a deep, sensitive understanding, of a tragic event. Being grateful, then, is a kind of habit inscribed in our existence, the master of its own poetry but also based on our most concrete physiological structure, a trait that, as we exercise it, strengthens the best of our humanity.
