CHICKEN STIR-FRY

Ingredients

ȩ 2 tbsp peanut or canola oil ȩ 3 chicken breasts (trimmed, cut across the grain into thin strips) ȩ 1 brown onion (cut into thin wedges) ȩ 1 red capsicum (seeds removed and cut into thin strips) ȩ 250g button mushrooms or mushroom caps (sliced) ȩ 1 bunch brocollini (cut into 4cm lengths)

Steps

ȩ 2cm piece fresh ginger (peeled, finely grated or chopped) ȩ 2 garlic cloves (finely chopped) ȩ 2 fresh birdseye chillies (remove seeds if desired, thinly sliced) ȩ 2 tbsp salt-reduced soy sauce ȩ 1 ½ tbsp oyster sauce ȩ 1 tbsp water ȩ Cooked white rice or noodles (to serve)
