HOMEMADE ICE CREAM BAKED POTATO AND FUDGE CUPCAKES

HOMEMADE ICE CREAM
Recipe by Gene & Dolores Tjarks
INGREDIENTS:
• 4 eggs or egg substitute • 1¾ cups sugar • 1/8 teaspoon saltINGREDIENTS: •• 1 Tablespoon vanilla 5 large russet potatoes skins on, cut into quarters •• 1 quart half & half 1 cup Cheddar or Colby Jack cheese diced • Whole milk to fill can to within• 1 tablespoon unsalted butter an inch of the top •• Ice 3 large eggs beaten •• Rock salt ¼ teaspoon black pepper DIRECTIONS: • ¼ teaspoon salt • Cooking spray
Mix eggs, sugar, salt, vanilla well. Add half & half. Pour mixture into can of ice cream freezer. Fill can to within one inch of the top. Follow directions on the ice cream maker to freeze. Be sure to sprinkle rock salt on the ice to help keep it as cold as possible. DIRECTIONS: 1. Place cut potatoes in a large pot and just cover with MOM’S EXCELLENT FUDGE SAUCE water. Bring to a boil, then gently boil until potatoes are tender, about 15-20 minutes. Drain. Recipe by Dolores Tjarks 2. Preheat oven to 350°F. INGREDIENTS: 3. Add potatoes to a large bowl and mash well. Mix in • 4 Tablespoons margarine or butter cheese and butter. Add in eggs, pepper and salt; mix • 4 Tablespoons cocoa until thoroughly incorporated. • 4 Tablespoons white corn syrup4. Spray muffin tins with cooking spray. Divide potato mix • 1 cup sugar among 15 muffins cups, filling them as high as you would like them to be when they are baked because • Dash of salt they will not rise in the oven. •5.1 teaspoon vanilla Bake until golden brown on top, about 40-45 minutes. • ¾ cup evaporated milk Remove from oven and cool on rack for 10 minutes before removing from pan. Serve with your favorite DIRECTIONS:baked potato toppings (diced bacon, light sour cream Melt margarine, add cocoa, sugar, syrup and salt. Add milk. and/or chopped chives). Bring to boil. Lower heat. Stir until smooth. Stir in vanilla.
