SPRING FEVER Last week, I did my annual winter trip to NYC to see what’s new in the stores and showrooms. I lined up 26, including old favourites like Garrow Kedigian Gracious Home and ABC Carpet, and a crop of looking dapper new ones — mostly in Brooklyn — where some at the opera. of the most creative storefronts are located. At first it was depressing. My favourites are a shadow of their former selves. Gracious Home is just one store with sheets, towels and tabletop, plus a few accessories. ABC has consolidated into one building, with a shiny new glass elevator, one floor of carpets and very little furniture. The famous bedding and bath floor is now on the basement level and is smaller. The ground floor is still a great emporium of tabletop and accessories, but it feels dominated by incense and ashram-inspired textiles, and Inherited painted natural lines of body care. furniture at our I roamed around, dismayed at the changes, lakehouse, circa-1930. trying to focus on the good stuff like the brilliant displays of towels in mineral colours, plus deep aubergine, chocolate and saffron. But the bath towels at US$100 each I found high. ABC has always been expensive, but US$200 for a mug? I stopped to admire a three-drawer painted dresser that had been stripped and refinished, leaving bits of paint in the cracks, for a mere US$8,800! I recognized the technique perfectly because, when I bought my first fixer upper back in the early ’80s, we were stripping everything. This dresser looked exactly like the painted LET’S CONNECT furniture I scraped using Polystrippa, heavy @houseandhome rubber gloves and miles of fine steel wool. @lyndareevesdesign The rest of the store tours flew by with a few @lyndareeves highlights like the gorgeous new showroom of Plain English, the U.K. cabinetmakers known 14 H&H APRIL 2020

for bespoke kitchens with beautiful detailing. I visited One Kings Lane’s retail store that had interesting accessories, area rugs and bits of furniture, and the best fake florals around. It’s interesting to see online retailers opening brick-and-mortar stores. The best merchants, like Casper and 1stdibs, understand that you really do need both. There was Jung Lee, where I saw hundreds of china patterns under one roof, including hard-to-find ones. Crate & Barrel had some wonderful new patterns for dishes and linens and, as always, in the best colours. Coral with teal is a big combo this year. Some 500-plus photos later, on the ride home, it was that dresser at ABC that was still on my mind. It made me recall all those hours spent scraping down doors and mouldings, and learning how to drywall, tape and sand the walls of my beloved Victorian semi. I felt a spark of joy recalling the thrill of renovation, renewal and discovering what lay beneath all those layers of paint. Now I feel excited about the collection of circa-1930 painted dressers and tables that came with the lakehouse we’re renovating and the prospect of a few weekends spent stripping and sanding again! As you marvel at the transformations in this issue, you’ll read that, in each case, the owners of these wonderful houses had to buy something odd or unexpected, and see the potential. Barbara Purdy’s clients salvaged a dowdy little ’60s bungalow (page 60), a Montreal couple admitted that they bought a “woefully dated” 1947 brick house that was not at all what they expected to buy (page 68), and Quinn Cooper’s traditional stone and stucco home was modernized for family living with an eclectic vibe (page 76). My time in New York was capped off by a visit to the Met Museum to see Toronto artist Kent Monkman’s glorious Welcoming the Newcomers and Resurgence of the People, plus a night at the opera. One of our favourite designers, Garrow Kedigian, and I agreed that the sets and the costumes of the new production of La Traviata were over-the-top and just what we needed to beat the winter blahs. Welcome, spring!

It’s a small world! We have a stone Loyalist-style house near Perth, Ont., on land that was first deeded in the Perth Military Settlement to James Baby, a forebear, in 1799. Her unique designs reinterpret traditional motifs in a contemporary way, juxtaposing old and new for an alluring alternative to massproduced designs. “Mezari Atelier is playful and unapologetically maximalist,” she says. SHOP TALK: Her storefront boutique and atelier carries her collection of wall coverings, botanical throw pillows, cityscape tea towels and cotton napkins, as well as jewelry, ceramics and accessories made by local artisans. BACK TO BASICS: Each of Stephanie’s patterns starts as an original drawing, often inspired by her affection for William Morris. She insists on using India ink with a quill pen — despite the constant stained hands and aprons — to dream up every design. While she silk-screens all the textiles by hand in her studio, her wallpaper is silk-screened by artisans in

Chicago who have been perfecting their craft since the 1960s. “I do everything the long, hard way, but it’s worth it,” she says. “The layering and richness of silkscreened ink on paper and fabric can’t be reproduced digitally.” BUDDING BLOOMS: Rather than trapping florals in a stagnant state, Stephanie’s Snip Floral print is animated by mischievous hands busily snipping golden lilies with scissors. “My work may appear prim and proper at first glance, but it’s full of surprises,” she says. When Athena Calderone, the blogger behind EyeSwoon, revealed her newly renovated Brooklyn townhouse in 2018, it launched her into the social media stratosphere. Athena’s Cobble Hill home became emblematic of the cool Brooklyn zeitgeist, with huge windows, high ceilings and statement furnishings. In her new book, Live Beautiful, she interviews 19 creatives, including Jenna Lyons, Pamela Shamshiri, and the husband and wife duo behind design firm Roman and Williams, and reveals their homes, as well as sharing her own. Abrams, 2020, $50. H&H: Why do you think the Cobble Hill project resonated with people so much? AC: I think it was because I brought my followers on the renovation journey with me, and shared the choices I was making in real time. H&H: You’re an accomplished cook. Does that affect your kitchen design? AC: Since I shoot photography and video in my kitchen, I needed southern side light. I designed a seven-foot-square island — a rectangular one would have placed me too far in front of the windows. H&H: What’s the next big thing? AC: Colours like terracotta, green, ochre and navy — or marble with splashes of vibrant colour. Warm materials like burled-wood, African mahogany and raw plywood. Shapes reminiscent of the ’70s: curved, voluminous furniture, round pillows and sculptural ceramics feel both sexy and cosy.

Designer Young Huh unleashes her passion for bold colour and pattern. Text by WENDY JACOB

T

here’s always one room in a showhouse that has everyone buzzing and, in the prestigious 2019 Kips Bay Show House on Manhattan’s Upper East Side, that room was the work of NYC designer Young Huh. She took a tricky third-floor attic full of weird angles and created an otherworldly artist’s studio that made visitors feel like they had stepped into a giant painting. Designed to spark creativity and reflect the imaginary female artist who inhabits it, the studio illustrates just how daring Young is in her own right. A former student of the Cranbrook Schools in Michigan — a hotbed for creatives — Young then went to law school at the urging of her parents. She clerked at the Supreme Court in New York, but couldn’t ignore the nagging feeling that she was meant for something else. An internship in 2003 with Brooklyn designer Jarret Yoshida, whose work has a clean, Japanese aesthetic, was the first step toward a career in design. Since then, Young has been on a mission to buck the trend for minimalist spaces in favour of joyful, exuberant interiors where colours with names like Paradise Peach and floral chintzes are right at home.

Q&A HOUSE & HOME: You made a big U-turn in your career when you gave up law. What attracted you to the design world? YOUNG HUH: I grew up not thinking about art; it was considered frivolous by my parents. Being a good Korean daughter, I never questioned that thinking, and I went to law school. My husband was the first one to tell me that law might not be my calling. He said, “Don’t let your education be a burden.” SEE SHOPPING LIST

I wanted to do something creative that I felt passionate about. I met designer Jarret Yoshida at a cocktail party and offered to intern for him. I took classes at Parsons, and friends asked me to work on their homes. In 2007, when I had more experience, I struck out on my own with Young Huh Interior Design.

This mansion had incredible proportions, and I got a freight hallway. It was a terrible space, but I made the most of it. Designer Matthew Patrick Smyth gave me the most wonderful advice: “Don’t look left and don’t look right. Look to your own vision. If you don’t have a unique vision, you have nothing.”

H&H: Do you have a design philosophy? YH: I think a space should be about joy and pretty things — a celebration of art. For a while, it wasn’t cool to be joyful: design had to be edgy and restrained, taking away decoration, and pretty was a bad word. I think art can be expressed in a sophisticated way and be calm and curated and deliberate, not just flouncy. I’m really excited that so many younger people are getting interested in traditional decorating: pattern, passementerie, pretty things, linen, entertaining at home, pillows with pattern and colour. It’s happy.

H&H: Tell us about the studio you created for the 2019 Show House. YH: It was a crazy room: a giant loft space with a bathroom suite attached. People thought I was nuts to take it. The mansion had character, but this was a bad ’80s loft with no architectural details that we had to overhaul in three weeks. I was looking for a wallpaper, and Fromental suggested its collage-like Braque pattern, which was perfect. I had the concept to make it an artist’s loft with a background inspired by Jean Cocteau; I’m a huge fan because he bridged the gap between modernism and romanticism.

H&H: How did you get involved with the Kips Bay Show House? YH: It’s a very rigorous selection process requiring portfolio submissions. My first Kips Bay Show House was in 2014. When you’re new, they give you the worst room!

H&H: You’re always so positive; do you have a design-related pet peeve? YH: What makes me crazy is when there’s an iconic room on the internet that other designers just copy. If a room is popular, don’t copy it — listen to your own voice! SEE SHOPPING LIST

RESTORATION DRAMA

The hidden niche.

When you walk into a house with a historical plaque, you expect to see plaster, panelling and plenty of pretty. But there were some surprises behind the walls of this house, particularly in the living room. When we removed the nonoriginal panelling, we found a fireplace opposite the existing one. I had suspected as much, given that the big double room was so symmetrical, but I was surprised to discover that, at some point (probably during a 1930s reno), the fireplace had become a niche! I restored the fireplace and decided to replicate the original mantel with the help of one of the best carvers in the world, Mary May, who teaches wood carving all over the U.S. (and on marymaycarving.com). The resulting 450-square-foot room is pleasingly balanced with a mantel on each side. And the replica (above, left) would fool even the squintiest scrutineer! SEE SHOPPING LIST

If it weren’t for a couple of beloved clients and their acquisition of a circa-1798 Georgian rowhouse badly in need of renovation, I might have never known the powerful charm of Charleston, S.C. Over the past two years, I, along with Lindsay Mens Craig and our team at Sarah Richardson Design, have fallen in love with the house and its city. Renovating and restoring can be a delicate balance. It’s all about retaining visual cues, such as the fireplace mantels and original window profiles, while adding (and hiding) the essential elements of modern life. For this project, that meant a complex renovation involving an architect who’s a member of the local historic preservation association, a top-notch contractor and some of the most skilled trades I have ever encountered. The results are a lot more about what you don’t see, rather than what you do. State of the art electrical and audio visual? It’s tucked away more discreetly than a Southern belle with an unplanned baby bump. Most old houses lack storage: we’ve got plenty, but you’d have to be in the know to find it. 0 Tradd St. is half on My Charleston project has given me two Tradd and half on Rainbow years of exploration and education, but Row — hence the zero! any visitor can sign on for a guided tour of this beautiful and very walkable city. The lime white, scrubbed-up version of the South that usually comes to mind isn’t what you’ll find here. Charleston’s Rainbow Row is as famously Instagramworthy as Hugh Grant’s Notting Hill ’hood — and it’s a shorter flight away. It’s the longest cluster of Georgian rowhouses in the U.S. and, although they date back to the 1700 and 1800s, the houses were only painted their famous pastel hues in the 1930s. Some of the best house museums I have seen anywhere in the world are in Charleston — don’t miss the Nathaniel Russell, the Heyward-Washington or the Aiken-Rhett. Patrick Biller, whose photographs you see here, summed up Charleston well: “It’s pretty and historic like New Orleans, but smaller, and without all the drunk people.”

PICK A COLOUR: This look requires commitment — choose a colour you’ve been in love with for years (keep a paint chip handy to match tones when shopping for furniture). A monochromatic treatment can work in any room, but smaller scale spaces such as a bedroom, sitting room or powder room lend themselves to a more dramatic look like this one.

DO IT RIGHT: Incorporate different textures and tones so the room doesn’t feel flat. Take natural light into account when choosing a hue; note that a northern exposure casts a cool light, so try sample boards at various points during the day and night to see how the colour changes. DO IT ON A BUDGET: Paint is a great way to adapt furniture or accessories to a new colour scheme. Repainting a thrift store find or lampshade is an economical DIY that can deliver a custom monochromatic effect.

HOUSE & HOME: What were your goals around space planning? MARYLYNNE MESCHINO: Besides maximum functionality, I wanted to create an attractive sight line from the dining area. I placed the prep, cook and wash zones on the wall not visible from the dining table. On the other side, I designed a bar zone with open shelving, a place to serve drinks and party food, and the large wine fridge. H&H: Was an island ever part of the design? MM: The kitchen is only 11 feet wide, so an island wasn’t practical — plus the clients wanted to be able to move freely from one side of the kitchen to the other. Stackable barstools are stored in a utility cabinet and pulled out for a quick bite at the bar. I perched on a stool, sipping wine and chatting, while the owners prepared our reno celebration dinner for firsthand confirmation that it works!

H&H: Why did you choose this cabinet combo? MM: My clients requested dark cabinets, but they were also drawn to rustic elements so I interspersed the dark paint finish with light wood for contrast and visual relief. All the door fronts are flat panels for unity. H&H: Why are open shelves key — even in a small kitchen? MM: Open shelves can be styled with framed art and small sculptures to help personalize the kitchen and take it beyond everyday function. H&H: How did you decide on the rug? MM: I wanted to break up the floor area with a punch of lively colour and, from a practical standpoint, the rug gives the floor some protection since the kitchen is the main passageway from the living area to the back deck.

THE WINNERS “It was a hodgepodge of stuff and a mix of styles,” says Kelly Martin of her principal bedroom. Moving in with her partner, Phillip Hemans, in 2015 meant blending their two families and three houses (including a cottage) full of furniture. With busy careers in finance and three kids, the couple needed their bedroom to be a sanctuary. But it felt uncoordinated, boring and “more functional than restful,” says Kelly.

HERE’S SOMETHING POSITIVE and life-affirming about moving. The very idea of closing one door and opening another requires a resilient sense of hope and optimism — especially when you’re leaving behind the legacy home you and your family have lived in and loved for 17 years. This was the mindset of empty-nesters Liz and Ian Grant when their grand old Belleville, Ont., century home sold in March 2016. With a clear sense of who they are now and how they wanted to live, they decided to downsize, keeping just half of the antique furniture they had carefully collected over the years. “We had a big, formal house with beautiful stained glass windows, foot-high baseboards and a large, lovely garden,” says Liz. “But we were spending a lot of our free time just maintaining it. Raking leaves. Mowing the lawn. We both wanted more time to cycle, play golf and travel.” When their house sold more quickly than anticipated, the couple rented a friend’s summer home overlooking the harbour in downtown Picton, Ont. The picturesque town on the Bay of Quinte is filled with boutiques and trendy restaurants, and surrounded by wineries, beaches and bike trails. The couple became enamoured with the quiet

neighbourhood, so when the house next door to their rental came up for sale, they were quick to nab it for the spectacular waterfront view they had also grown to cherish. Some might have dismissed the 2,300-square-foot, ’60s-era bungalow as a dowdy little two bedroom full of the relics of that period: thin oak floors and an awkward honey pine–panelled addition propped up on concrete columns at the back. Instead, the Grants saw it as an opportunity to embrace a new aesthetic and create a home that matched their lifestyle. “This was not the house we were looking for,” admits Liz, “but with some help, we knew we could turn it into the modern, clean-lined, lightfilled home we wanted.” The couple found their ideal collaborators in Toronto: architect Brad Abbott and designer Barbara Purdy, Liz’s longtime friend. “Their goal was to create a warm, contemporary rustic look,” says Barbara. “As much as we wanted it light and airy in the summer, we knew that, come winter, the home’s snowy white views would have a big impact on the space. We brought in a lot of warm tones in the furniture to balance it.” 64 H&H APRIL 2020

Beyond style, both Liz and Ian had specific wish lists: he wanted each of their three grown children to have a bedroom to come home to, and she craved a sunny, open-concept space built for entertaining with a kitchen designed to make the cook part of the party. “We like to entertain,” says Liz, “but in our old house, I missed out on a lot of dinner parties because I was stuck in the kitchen, away from the dining room and family room.” The 18-month-long renovation added 1,000 square feet of living space, taking the house up to three bedrooms, three bathrooms and a home office with a Murphy bed. It also included some gulpworthy challenges. Rather than build an upper storey, Liz and Ian decided to add a lower level at the back of the house to take advantage of the home’s spectacular perch on a steep hill above the lip of Picton Harbour. But they hit bedrock, which took months to dig out; since construction machinery was difficult to move in and out, much of the rock had to be dug out by hand. Today, the stress of those challenges is long gone. What remains is a welcoming home that greets you like a relaxed host. “We both love the view out the back window and turning on the gas fireplace, sitting on our comfy sofas and looking out to the water,” says Liz, who is certain the best is still to come. “We haven’t had a summer here yet, but I can just imagine drinks on the terrace, then dinner up on the porch with the doors flung open and a summer breeze wafting in off the water. It’s a slower pace of life here, for sure, but we’re ready for that.” Happily, their house is ready now, too.

5 KEY MOVES that gave this dated exterior a fabulous facelift. STREAMLINED LOOK Charcoal grey wood siding, installed vertically and horizontally, straps the entire house, erasing the bungalow’s hodgepodge of angelstone veneer and brick. “Since the house sits close to the road, we chose a colour that helps the home nestle into the setting rather than stick out,” says Barbara.

NEW ROOF “We wanted a clean, modern look,” says Barbara. “The industrial Galvalume metal roof is a great juxtaposition to the rough, farm-like wood siding.” BETTER SYMMETRY AND SIGHT LINES The entrance was moved a few feet to the centre of the home to give the exterior more balance, and to allow for a direct view out to the harbour when entering the house. COVERED ENTRANCE The new peaked portico adds height and architectural drama. Its framed-in cedar pillars will be stained grey this summer to help them blend in. UPDATED LANDSCAPING A lowmaintenance, no-mow garden featuring ornamental grasses, groundcover and stone is in sync with the home’s new minimalist look.

YAN WILNER AND DINAH WELDON weren’t exactly looking for a new house, but they did dream of living closer to their daughters’ west end Montreal school. So, when they saw a sign go up in front of the most charming house on the block, it stopped them in their tracks. “We walked in, looked at each other and realized that we both loved it,” says Dinah. “After we left, we just sat in our car across the street. We hadn’t seen any other houses and we hadn’t made any plans.” It was meant to be. The two-storey 1947 brick home was long and lean with a storybook mansard roof. Inside, though, was another story: it had a good energy but was woefully dated. There was even a swimming pool in the basement that had been long forgotten (now covered by hardwood flooring). Ryan, who co-owns Renwil, a manufacturer and wholesaler of decorative accessories, and Dinah, who worked in e-commerce and is now at home with the kids, thought about taking on the overhaul of the 3,000-square-foot home themselves. The design-savvy pair have a keen interest in the process and know what they like. However, the idea to bring in a designer “was our best yet,” says Ryan. The couple found themselves continually going back to the Instagram feed of Ottawa firm Leclair Decor, run by husband and wife team Melissa and Sacha Leclair. Something about their refined yet edgy designs resonated with the couple. Along with lead designer Grace Doyle, the Leclairs were equally excited about reviving this grand old Montreal home. “It looked so charming and sweet,” says Melissa. Ryan, Dinah and their twin girls, Alice and Hazel, 8, wanted their forever home to be unequivocally inviting and family-friendly. “We wanted it to be light and bright but also warm and comfortable — not too overdone,” says Dinah. “Somewhere you can hang out and relax with friends,” adds Ryan. In response to this brief, the designers focused on harnessing the home’s ample light and creating rooms with unique elements. The kitchen was the only room in the house that had been recently renovated when the family moved in. With a classic black and white scheme, raised-panel cabinet doors and ample storage, it was easy to embrace the space as is. formal,” says Sacha. The family uses them all, especially the breakfast room, where they eat most of their meals, play board games, do homework and host friends for card nights. Most of the makeover was cosmetic except for the principal bedroom and ensuite, where more substantial renovations were done. Some of those changes actually fixed past mistakes; after finding the home’s original blueprints, the designers realized their plan moved the bathroom doorway back to its original position. “They would rather have more closet space and a spacious bathroom than a large bedroom,” says Melissa. “We basically gutted it and closed in a doorway on one side. In doing that, we opened up the space more.” A gorgeous octagonal window was uncovered, too. For the girls’ bedrooms, Dinah had the idea of a secret door between the two rooms, giving them both private and communal space. The designers and contractor eagerly embraced this fun assignment, as well as the challenge. Such creative details fill the whole house with a sense of contentment and joy. “We say almost every day that we can’t believe this is our house,” says Ryan. For Dinah, the location turned out to be even better than she imagined. “It’s more central. We walk to things now instead of driving,” she says. “It’s much more social, and I love that.”

AFTER LIVING IN MANHATTAN FOR 12 YEARS, former model Quinn Cooper and her entrepreneur husband, Mike Baker, were ready to move back to Toronto to be closer to friends and family. They had 18-month-old daughter Ryan in tow and another, Cleo, on the way, but they were in no rush — first, they wanted a comfortable home to move in to. Sooner than expected, they found and purchased the perfect place, a stone and stucco house in Forest Hill, a sought-after neighbourhood just above midtown. Andrew Hill and Jennifer Kudlats of StudioAC led the design with Quinn weighing in from New York, with the goal of transforming the dated and drab interiors into modern and airy spaces. Ten months later, the job was done. Today, the home’s now cleaner and more contemporary architecture artfully dovetails with Quinn’s eclectic, playful decorating — which she’s parlayed into an interior decorating business all her own.

Q&A HOUSE & HOME: How did you find your new home in Toronto? QUINN COOPER: It was one of the first houses I saw. Mike wasn’t with me, but I knew it was everything he wanted — a detached house, a driveway that wasn’t shared — and we needed four bedrooms. Even though I had wanted to live downtown, I saw the potential. It also happened to be on the street where Mike’s family lived when he was born. I thought, Oh no, this is the house! I ended up cancelling all my other viewings.

H&H: When did StudioAC get involved in the renovation? QC: Jennifer Kudlats and I have been friends since high school. She had just left a huge architecture firm to start her own business with co-founder Andrew Hill when we bought our house, so the timing was serendipitous. She was on board from the very beginning. H&H: Was it difficult to do a reno long distance? QC: When you’re in the city where you’re renovating, you’re going to the site often, and you can fixate on things that don’t really matter in the end. Because I was only coming to Toronto once a month, I was free from all that. It actually made it easier for everyone. SEE SOURCE GUIDE

Before H&H: Did you have any design must-haves? QC: I wanted a big family room, and I wanted to be able to see it from the kitchen. I also wanted a big principal bedroom where our kids could come in and we could all hang out in a space that felt super inviting. H&H: Did you design with your kids in mind? QC: I wanted a home where the girls felt like they could go into every room 80 H&H APRIL 2020

and touch everything. Life is short and I want to live in a space where I feel good, but I don’t want my kids to feel like I’m on top of them all the time, either. Of course, there’s stuff that gets broken, and that’s OK. I tell myself that it’s served us well. H&H: Tell us more about the cool balance of timeless and quirky here that translates to calm, comfortable rooms full of personality. QC: My style is modern eclectic with

vintage flair. When you look at the shell of my house, it’s minimalist; the furniture and art add character. I have an obsession with vintage portraits, and we have modern portraits, too. I find those pieces are conversation starters — people tend to gravitate toward them. I want friends to come into a room and say, “Whoa… that’s so interesting!” The portraits in the living room were found at flea markets and reframed, and the wallpaper depicts eyes. H&H: Did you incorporate elements of your New York life here, or does the house represent a fresh start? QC: Going from a 1,400-square-foot apartment to an almost 3,600-squarefoot house was exciting. We were, like, Wow! We can spread out! We definitely brought a mix of stuff from New York, mostly our vintage pieces. The new pieces we bought. H&H: Did this reno inspire you to start your own interior decorating business? QC: The project pushed me to do it for sure. That and having people come to our house all the time and say, “Why aren’t you doing this for a living?” H&H: How do you adapt your style to your clients’ needs? QC: It’s a balancing act between keeping my design true to my own style but also making sure the client is happy. I feel really strongly about making sure designer and client are on the same page before embarking on a project together. Neither party will be happy with the final product if your styles are polar opposites. H&H: What are you working on now? QC: I’ve wrapped up all of my projects because I’m giving birth to our third child in May! I’ll give myself time to enjoy the new baby and my family before I dive back into work again.

THE COOK

JISUN YOON grew up making dumplings with her family in Seoul, South Korea. She immigrated to Canada in 2020 and started a YouTube channel, Jisun’s Kitchen, to share her love of Korean cooking.

Step 1: Use a chopstick to compress filling as needed.

Step 2: Start by making and pinching two pleats together at base.

Step 3: Create pleats by gathering and folding, first on one side of the dumpling and then on the other, until sealed.

Korean Kimchi Mandu MAKES 50 DUMPLINGS

PREP TIME: 50 minutes TOTAL TIME: 60 minutes

Mandu are usually made with strongtasting kimchi. If you want your storebought kimchi to ferment more, Jisun suggests leaving it out of the refrigerator for a day or two before making. Dumplings 40 g glass or bean thread noodles (1 cup when cooked and chopped) 160 g firm tofu (about 1 cup crumbled) 220 g kimchi (juice squeezed out), minced (about 1⅓ cups) 160 g ground pork ⅔ cup finely chopped green onion 2 large eggs, separated 2 tbsp perilla powder 2 tbsp Korean red pepper powder 2 tbsp oyster sauce 2 tbsp sesame oil 1 tbsp soy sauce 1 tbsp finely chopped garlic 4 tsp sugar ½ tsp salt 1 pkg. store-bought round dumpling or gyoza wrappers Dipping Sauce 3 tbsp soy sauce 2 tbsp white vinegar 1 tbsp sugar 1½ tsp chicken broth 1½ tsp Korean red pepper powder MAKE FILLING AND DUMPLINGS 1. Bring medium pot of water to a boil over high heat. Add glass noodles and cook for 6 minutes, or until fully hydrated. Remove noodles from pot and set aside. 2. Add tofu to pot and boil for 10 minutes, or until it has become slightly firmer. Drain and cool tofu; blot dry with paper towels and crumble. 3. Chop cooled noodles. In bowl, mix noodles, tofu, kimchi, pork, green onion, egg yolks, perilla and red pepper powders, oyster sauce, sesame oil, soy sauce, garlic, sugar and salt, and stir. 4. Place about 1 tbsp of filling in each dumpling wrapper, using reserved egg 96 H&H APRIL 2020

whites to seal edges closed. Be sure to squeeze out any air pockets. 5. Pleat as desired and place on tray. Cover lightly with plastic wrap and reserve while filling remaining wrappers. COOK DUMPLINGS 1. Fill pot with about 5 cm of water and bring to a boil over high heat. Line steamer basket with parchment and fill with single layer of dumplings. 2. Place basket over boiling water, turn heat down to medium-low and steam for 8 to 10 minutes, or until dumpling skins are translucent and filling is cooked. MAKE DIPPING SAUCE AND SERVE 1. In small bowl, combine soy sauce, vinegar, sugar, chicken broth and red pepper powder, and whisk until uniform. Serve with mandu.

Turkish Manti SERVES 4

PREP TIME: 60 minutes TOTAL TIME: 70 minutes

Traditionally, manti are made very small, though you can make larger versions — they’re just as delicious and will take less time to pull together! Dough 250 g (2 cups minus 2 tbsp) all-purpose flour 1 tsp salt 1 large egg, whisked 95 g (100 mL) water Filling 300 g ground lamb or beef ⅓ cup very finely chopped onion ¼ tsp salt ⅛ tsp black pepper

2 tsp dried spearmint, 1 tsp chili flakes, 1 tsp ground sumac (optional), for garnish MAKE DOUGH 1. In large bowl or bowl of stand mixer, combine flour and salt. Make well in middle, add egg and water, and mix using dough hook or by hand, kneading until dough is uniform. Divide into 2 equal parts, cover with damp dish towel and let rest for 15 minutes. 2. Working with one piece of dough at a time and using rolling pin, sprinkle countertop with flour and roll each piece out to a circle 30 cm in diameter. 3. Using knife, cut into 2½ cm x 2½ cm squares, or larger squares if desired. Reserve. MAKE FILLING AND DUMPLINGS 1. In medium bowl, combine lamb and onion, season with salt and pepper, and mix until well combined. 2. Divide filling mixture equally amongst squares of dough, and enclose each square to make pockets, pinching them to seal. 3. Bring large pot of salted water to a boil. Add dumplings and cook for 5 minutes, stirring to ensure they don’t stick together. Drain and transfer to platter. MAKE SAUCES AND SERVE 1. In bowl, whisk together yogurt and garlic, and season with salt. Reserve. 2. Heat butter in saucepan on medium heat. Add tomato paste and cook, stirring for 1 minute, or until flavours have combined. 3. Spoon Garlic Yogurt over dumplings, followed by hot Butter Sauce. Sprinkle with dried spearmint, chili flakes and sumac. Serve immediately.

Chinese Chicken Dumplings Garlic Yogurt 500 g plain yogurt (2 cups) 2 tsp finely chopped garlic Salt Butter Sauce 7 tbsp unsalted butter 1 tbsp Turkish tomato paste (or Italian version, sold in tube)

cooked dumplings with a bit of crispy lattice on the bottom. Dumplings 2 cups finely chopped Savoy or Napa cabbage 1¼ tsp kosher salt, divided 450 g ground chicken (ideally half dark meat, half light meat) 1 large egg, lightly beaten 1 tbsp oyster sauce 1 tbsp Chinese Shaoxing wine 1 tbsp sesame oil 1½ tsp light soy sauce 1½ tsp grated ginger 1 tsp Chinese five-spice powder ¼ tsp pepper ½ cup finely chopped canned water chestnuts ⅓ cup finely chopped green onion ¼ cup finely chopped, peeled carrot 1 pkg. store-bought round dumpling or gyoza wrappers 2 tbsp each flour and water combined to seal edges Vegetable oil, for frying ½ cup water mixed with 1½ tbsp cornstarch, for lattice Chopped green onion, toasted sesame seeds, spicy chili crisp in oil, as optional garnishes Apricot Dipping Sauce ½ cup good-quality apricot jam or preserves (finely chop any large fruit pieces) 2 tsp fresh lime juice 2 tsp light soy sauce 1 tsp Dijon mustard ¼ tsp finely chopped garlic ¼ tsp finely chopped ginger 1–3 tbsp warm water Black Vinegar Dipping Sauce 2 tbsp Chinese black vinegar 2 tbsp light soy sauce 1 tsp sesame oil 1 tsp chili oil Honey, to taste MAKE FILLING AND DUMPLINGS 1. In colander set over another bowl, add cabbage and sprinkle with 1 tsp of salt. Let sit for at least 20 minutes, then

squeeze out excess water. 2. Combine ground chicken, egg, oyster sauce, Shaoxing wine, sesame oil, soy sauce, ginger, five-spice powder, remaining ¼ tsp of salt and pepper, and stir until uniform. 3. Add reserved cabbage, water chestnuts, green onion and carrot. Cover and refrigerate for 30 minutes to allow flavours to combine. 4. Cook small piece of filling to taste, and adjust seasoning as needed. 5. Place about 1 tbsp of filling in each dumpling wrapper, working with one wrapper at a time and keeping remaining wrappers covered under plastic wrap. 6. Use mix of flour and water to seal edges closed. Be sure to squeeze out any air pockets. 7. Pleat as desired and place on tray. Cover lightly with plastic wrap and reserve while filling remaining wrappers. COOK DUMPLINGS 1. Heat about 1 tbsp of oil in nonstick skillet over medium-high heat. Arrange as many dumplings as you’d like to cook in skillet, flat-side down. 2. Cook without moving for 4 minutes, or until bottoms are lightly brown. 3. To create lattice, in bowl, combine water and cornstarch, reduce heat to low, pour carefully into skillet, and cover. 4. Cook, covered, for 6 minutes, or until most of water is absorbed. Uncover pan, let water evaporate and cook until dumpling bottoms are crisp and cornstarch mixture forms into a crispy lattice, about 3 to 4 more minutes. MAKE DIPPING SAUCES AND SERVE 1. In bowl, stir together jam, lime juice, soy sauce, mustard, garlic and ginger until uniform. Add enough water to achieve dipping sauce consistency. 2. In another bowl, stir together black vinegar, soy sauce, sesame oil and chili oil. Add honey, to taste. 3. Place dumplings crispy side facing up on platter to show off lattice. Garnish and serve with dipping sauces.

Eastern European Meat and Cabbage Pierogies MAKES 50 PIEROGIES

PLAN AHEAD: Filling needs to chill

overnight, and dough needs to rest for 60 minutes PREP TIME: 60 minutes TOTAL TIME: 80 minutes This is the Geisler family pierogi recipe. The dough used is different than a traditional pierogi dough, resulting in a lighter and more ravioli-like dumpling. Filling 2 tbsp olive oil, divided 1 cup chopped onion 450 mL sauerkraut 3 cups chopped kale 2 tbsp butter 250 g portobello mushroom caps, chopped (3½ cups) 1 tbsp red wine or port or dry sherry Salt and freshly ground pepper, to taste 250 g lean ground beef 250 g ground pork ¼ tsp dried thyme ¼ tsp dried sage Dough 3½ cups (460 g) unbleached all-purpose flour 1 tsp salt 5 large eggs 2 tbsp extra-virgin olive oil 1–2 tbsp water Vegetable oil or butter, for frying Chives and sour cream, for serving MAKE FILLING 1. Heat 1 tbsp of oil in large heavybottomed pot over medium heat. Add onions and sauté for 2 minutes. 2. Add sauerkraut and cook over medium heat for 10 minutes, stirring, or until cabbage is soft, liquid has evaporated and flavour has intensified. Add kale and cook for 3 minutes, or until wilted. 3. Scrape into food processer and pulse until uniformly chopped (but not too fine). Set aside. 4. Return pot to high heat. Add butter and swirl to coat. Add mushrooms and H&H APRIL 2020 97

Add thyme, sage and reserved sauerkraut mixture to meat and cook over medium heat for 10 minutes, or until flavours have combined. Season well with salt and pepper, to taste. 7. Add mushroom mixture and cook for 2 more minutes. Scrape into large bowl, cover and chill in refrigerator overnight.

MAKE DOUGH AND PIEROGIES 1. In large bowl or bowl of stand mixer, combine flour and salt. Make well in middle, add eggs and oil, and mix using dough hook or by hand, kneading until dough is uniform (sprinkle in enough water to bring dough together, but it should be stiff like a pasta dough). Divide into 4 equal parts, cover with damp dish towel and let rest for 60 minutes. 2. Working with one piece of dough at a time, dust with flour and use pasta roller to roll out dough to about 2 mm thick. 3. Transfer to floured surface and use 4" round cookie cutter to cut out wrappers. Place about 2 tbsp of filling in middle of each circle of dough, moistening inside edge with water if needed, to seal. Be sure to squeeze out any air pockets. 4. Pleat as desired and place on lightly floured tray. Cover lightly with plastic wrap and reserve while you roll out remaining dough and fill all dumplings, gathering any scraps and rerolling as needed. COOK PIEROGIES AND SERVE 1. Bring large pot of salted water to a boil over high heat. Working in batches to avoid overcrowding, cook pierogies for 5 minutes, or until they are just cooked through. Transfer to oiled tray. 2. Heat a little oil in frying pan on medium heat and fry pierogies for 2 minutes, or until lightly browned (if you plan on freezing), or add a little butter and fry until golden brown for eating right away. Sprinkle with chives and serve with sour cream for dipping. 98 H&H APRIL 2020

⅓ cup bone marrow, removed from bone (about 100 g), or canola oil ½ cup chopped onion ½ cup peeled, coarsely grated carrot ½ cup coarsely grated celery 2 tsp finely chopped garlic 1 tbsp tomato paste 100 g ground beef 100 g ground pork 100 g ground or finely chopped mortadella ½ tsp finely chopped rosemary ¼ cup red wine 796 mL can Italian plum tomatoes, puréed Salt and pepper, to taste 1 tbsp finely chopped oregano 454 g rigatoni Parmesan and extra-virgin olive oil, for serving MAKE SAUCE 1. In large sauté pan over medium heat, melt bone marrow. Add onion, carrot, celery and garlic, and sauté for 8 minutes, or until vegetables are softened and lightly browned. 2. Add tomato paste and stir to coat vegetables. Cook for 2 minutes, or until tomato paste has darkened and lost its harsh acidity. 3. Turn heat to medium-high, add beef, pork and mortadella, and sauté for 6 minutes. Stir in rosemary. 4. Add wine and stir to dissolve browned bits on bottom of pan. Cook for 1 minute, or until almost fully evaporated. Add tomatoes, turn heat to low and cook, partially covered, for 80 minutes, stirring frequently near the end, or until sauce is reduced to about 3 cups. Season with salt and pepper, and stir in oregano. COOK RIGATONI AND SERVE 1. Bring large pot of salted water to a boil. Add pasta and cook until al dente. Drain, reserving a bit of pasta water. 2. Toss pasta in sauce, loosening with pasta cooking water as needed. Top with Parmesan and olive oil and serve.

How do I lay out my narrow family room? Should I do built-ins on either side of the fireplace? I’ve already ordered a sofa and I’m looking for a coffee table — what else do I need to make the space great? — S.S., Toronto

Since your family room is adjacent to the kitchen with its eating counter, and you have a separate dining room, I suggest you ditch your small round table and chairs. Then you’ll have room for a conversation area that includes two new armchairs in a fabric that complements your new sofa. They’ll look great placed side by side to the left of the fireplace. Thanks for sharing your choice of sofa (shown top left); I love how sleek and modern it is. Opt for a round or square coffee table (instead of a rectangle) for the best fit.

I recommend adding a larger rug that runs the length of the room. It should be big enough that the sofa and armchairs sit on it, but not so big that it interferes with the counter stools. To keep the look airy, I would forgo built-ins. Instead, replace your current mirrored chest with a larger, more robust piece and move it over to the left side of the fireplace, and place a generously sized potted plant on the right side. For colour and personality, lean a couple of pieces of art on the chest (they should stop short of the window above) and, to soften the look of the windows flanking the fireplace, consider having slouchy roman blinds made in natural linen. Few things rival the romance of traditional English gardens. Their curated chaos of lavish blooms, at once considered and carefree, have just the balance we’re craving this spring. Giambattista Valli’s playful mini dress, sprinkled with peony pinks and vibrant oranges, nods to this year’s trend for throwback florals. For home, bring the garden indoors with a pot of Lady Grey, served up in Royal Albert’s Miranda Kerr Friendship tea set — scones and clotted cream optional (but not really). Add notes of lavender to a personal fragrance with Gucci’s Acqua Profumata, and fill rooms with the scent of tuberose courtesy of Aerin Lauder’s enchanting candle. This revival of old prints continues with a vintage ’60s embroidered velvet– upholstered armchair steeped in mid-century attitude.
